Our version of this classic comfort fare, perfect for a Sunday evening supper or brunch or any meal for that matter. Our Creamed Corned Beef Hash is made using Swaledale beef which is brined then slowly braised until it falls apart. Cream is then added to give it a lovely rich, creamy consistency. It comes ready to cook by emptying into a non stick pan and dry frying over a medium heat until browned and crispy. Delicious topped with an egg and a big dollop of brown sauce on the side.

Isle of Mull Cheddar
This fabulously tasty, well rounded Scottish cheddar is made on the Isle of Mull by the Reade family. It is naturally produced using animal rennet and unpasteurised milk from a mixed herd of Friesians, Ayrshire, Jersey and Brown Swiss cows.There is some variation throughout the year depending on the seasons but this adds to the interest. In winter the lack of organic grass is supplemented by hay and whisky grains, hence the cheddar appears a little whiter, and occasionally there is some blue veining.

One of our oldest British puddings Lemon Posset deserves a revival. In medieval times Posset was a milky drink with alcohol or citrus added which resulted in the milk curdling and thickening. 1 tbsp vegetable oil
200g dry cured streaky bacon, chopped (page 8) 1 onion, chopped
330ml dry cider
300ml vegetable stock 3 thyme sprigs
200g chestnut mushrooms, sliced
500g pork confit (page 5), diced (plus all the juices, herbs and spices in its bag)
freshly ground black pepper
2 tbsp freshly chopped parsley
2 carrots, peeled and chopped 2 tbsp plain flour
150 ml double cream

Heat the vegetable oil in a large casserole dish and fry the bacon over a medium heat until crispy, about three minutes. Add the onion and cook for 5 minutes. Add the mushrooms and carrots and cook for a further two minutes. Sprinkle over the pepper and flour and cook for a further minute before adding the cider and stock. Bring to a rolling simmer. Stir through the diced pork confit with all its juices, cover the casserole dish with a lid and transfer to the oven for 40 mins. Remove from the oven and stir through the cream. Serve with mash and seasonal vegetables with the parsley sprinkled over the top.
