How many servings will I get from my ham? We give an approximate number of servings alongside each ham, based on a couple of generous slices per person; my best advice, however, is always to buy a larger ham than you think you’ll need.
What do I do with leftovers? Traditional curing methods mean that our hams can keep longer; and with a ham in the fridge you never need fret about the next meal or an unexpected guest. They also freeze remarkably well! There are so many ways to use up any leftovers, from simple sandwiches and soups to hearty meals. Wiltshire Ham Our bestselling ham has a proud history. In 1841 Elizabeth Harris, the matriarch of a ham curing dynasty based in Calne in Wiltshire, perfected a way of curing pork other than by simply applying dry salt, immersing the pork legs in brine instead. The result was ham that is milder in flavour than the distinctly saltier dry cured hams of yore. Dukeshill Wiltshire Hams are cured by immersing the whole pork legs for several days in brine, to which we add unrefined brown sugar to give a subtle sweetness to this mild and delicious ham. York Ham If you are looking for the most traditional and iconic ham to grace your table, look no further than the York. This most quintessential English ham is produced using curing methods that have remained largely unchanged for centuries. We carefully select the best legs of British pork we can find, dress each with a pinch of saltpetre and then cover with a generous layer of salt. The process is repeated over a number of weeks before the hams are left to mature for several months in our drying rooms. This results in a beautiful ham with an unparalleled depth of flavour and firmer texture, and is the source of our coveted Royal Warrant. Shropshire Black Ham This flavoursome ham is a direct descendent of the historic Bradenham Ham, which originated in the kitchens of Bradenham Manor, Buckinghamshire in 1781. Thus the Bradenham Ham Company was born, and continued to manufacture delicious hams for almost 100 years. Sadly, the company’s fortunes waned, and the recipe was passed from business to business until production ceased. Though we weren’t able to acquire the name, we were able to recreate the recipe, and so the Shropshire Black was born. Like the York, this is a dry cured ham with a robust flavour and firm texture that develops during several months of maturation. What sets it apart, however, and gives the ham its distinctive black rind, is a fortnight spent wallowing in a special marinade of molasses, juniper berries and spices. A favourite of connoisseurs seeking the ultimate taste experience! Available in various sizes as both a bone-in option, or boneless for ease of carving. Here’s one of our favourite ways of preparing a spectacular festive ham to grace any Christmas table using our uncooked ham. Absolutely delicious served still warm after glazing or cold the following day.
Christmas Ham
Serves 35+ | Prep 10 mins | Cook 3hrs 20mins | Surprisingly easy!
INGREDIENTS 1 whole uncooked bone in or boneless Wiltshire ham, min 5kg 8 tbsp black treacle 3 bay leaves 8 whole cloves 10 black peppercorns 10 whole allspice berries (or 1 tsp ground allspice) 3 star anise Glaze 300g plum jam 100g brown sugar 3 tbsp English mustard powder 2 tbsp rum decorate with cloves and star anise (optional)
METHOD • As we’re using the Wiltshire ham for this there is no need to soak prior to cooking. • Pop the ham in a pot big enough to allow the ham to be covered with liquid (or cooking bag). • Add the bay leaves, peppercorns, allspice berries, star anise, black treacle and cloves to the pot and cover with water. Ensure the ham is covered but don’t worry if part sticks out as you need to rotate it during cooking anyway. • Pop the lid on and bring to a gentle simmer over a medium to low heat, skimming off any scum. Simmer for 3 hours or until the internal temperature of the ham reaches 70°C. • Rotate the ham halfway through the cooking time to ensure even cooking of the ham and top up with water if necessary. • Lift the ham out of the cooking liquid and leave to cool slightly. Alternatively, you can leave the ham to cool completely if not eating straightaway and glaze the day you want to eat it. • Heat the oven to 220°C / 200°C fan. • Place the ham on a foil lined roasting tray and gently remove the skin carefully with your fingers or a sharp knife leaving a covering of fat. Criss-cross the fat using your knife to create a diamond pattern if so desired. • Decorate the ham with the cloves and star anise. Mix all the glaze ingredients together and spoon over the ham. Pop in the oven for 15-20 mins. • Remove from oven and spoon any residual glaze from the bottom of the tray over the ham. Serve whilst warm or leave to cool. Most so called “dry cured” bacon is made using a process called “cure in the bag”. This prevents weight loss by locking water in the bacon resulting in the nasty goo you get during cooking inferior bacon. Not ours!

Instead we use traditional curing methods and allow the bacon to dry naturally in our drying rooms. This not only means there is no excess water and hence no white goo, but more importantly the flavour is second to none. It freezes perfectly too.

Sticky Cocktail Sausages take some beating when it comes to canapés so here are some tips for making them using our condiments. Amounts are for 24 cocktail sausages (1 pack). Festive Sausage Wellington Serves 10 | Prep 30 mins | Cook 40 mins | Moderately Easy
INGREDIENTS 500g all butter puff pastry plain flour, for dusting 3 egg yolks, beaten
METHOD • Pre-heat oven to 200°C/180°fan.
Filling 2tbsp olive oil 2 onions, roughly chopped 4 sticks celery, chopped 125g streaky bacon, finely chopped 800g pork & cranberry sausage meat (or 800g pork sausage meat + 75g dried cranberries) 3 tbsp maple syrup 100g white breadcrumbs 2 eggs 30g fresh parsley, chopped ½ tsp salt ground black pepper
• Put the sausage meat in a bowl and add the cooled onion, celery and bacon, along with the maple syrup, breadcrumbs, egg and parsley and seasoning. Mix thoroughly and shape into a large roll shape, wrap tightly in clingfilm and refrigerate for a min 4 hours.
• Heat the oil in a pan and add the chopped onion and celery. Sauté gently for 5 minutes until soft then transfer to a dish to cool. Turn up the heat and add the finely chopped bacon for a further 5 mins until crispy then leave to cool.
• Roll the pastry out on a lightly floured surface so it is a quarter bigger than the roll of filling. Take the filling out of the clingfilm and place in the centre. Brush some beaten egg all around the edge of the pastry before rolling up and sealing the edges. Crimp the edges to seal and transfer to a lined baking sheet positioning the roll so it is resting on the long sealed edge. Brush with the rest of the beaten egg and score the surface with little cuts. • Bake in the pre-heated oven for 40-45 mins until golden brown. Remove from the oven and allow to cool on a wire rack for 15 mins before serving with winter salads.

Serves 6 | Prep 15 mins | Cook 25 mins | Easy
INGREDIENTS 50g butter 2 medium onions, sliced 400g potato, peeled and sliced thickly 3-4mm 300g ham or ham hock meat, torn or chopped into bite size pieces 500ml double cream 140g Comté cheese, grated ½ tsp salt (reduce to ¼ tsp if using York or Shropshire Black ham) freshly ground black pepper 8 sage leaves, finely chopped a generous grating of nutmeg METHOD • Pre heat the oven to 200°C/180°C fan. • Melt the butter in a heavy based pan and sauté the onions for 10 minutes over a gentle heat until translucent. • Meanwhile bring a pan of salted water to the boil and par boil the potato slices for 5-7 minutes. Drain. • Butter a gratin/baking dish and put the onions in the bottom, followed by the ham and then the par boiled potato. No need to arrange the potato slices, just lob them in. • In a jug mix the cream with the sage leaves, Comté cheese, nutmeg and seasoning and pour over the dish. • Pop in the oven for 25 minutes until golden and bubbling.

Pork Confit with Pears & Borlotti Beans Serves 6 | Prep 20 mins | Cooking 1hr | Easy
INGREDIENTS 2 tbsp olive oil 10g butter 2 onions, chopped 2 parsnips, peeled and diced small 25g plain flour 500ml cider 500ml chicken stock 500g pork confit, diced into 2cm cubes 1 x 400g tin Borlotti beans 2 pears, peeled, cored and diced 3 sprigs thyme, leaves removed 3 sage leaves, finely chopped ¼ tsp salt freshly ground black pepper METHOD • Pre heat the oven to 200°C/ 180°C fan. • Heat the oil and butter over a medium heat in a heavy based casserole dish. Saute the onions for 5 minutes then add the diced parsnips and cook for a further 5 mins. • Sprinkle over the flour and stir through for 1 minute. Pour in the cider and allow to come to a rolling simmer. Allow the cider to reduce a little for about 5 minutes then add the stock. Again, allow to come to simmering point and place a lid on.

• Reduce the heat a little and simmer gently for 20 minutes to allow the parsnip to soften.

Serves 4 | Prep 15 mins | Cook 12 mins | Easy
INGREDIENTS 2 tbsp olive oil 1 onion, finely chopped 350g ham (any leftover ham or hock) 400g canned cannellini beans, rinsed, drained 3 garlic cloves, finely chopped 2 tablespoon chopped flat-leaf parsley 3 teaspoons Dijon mustard 100g plain flour 2 eggs, lightly beaten 400g white breadcrumbs 4-6 tbsp olive oil for frying METHOD • Heat 2 tablespoons oil in a pan over medium heat. Cook onion for 2-3 minutes until softened but not browned. Cool slightly.

• Pulse the ham, beans, garlic, parsley, mustard and onion in a food processor until you have a coarse patty mixture, then form into 8 rissoles about 8cm across. • Chill for 30 minutes. Place flour, egg and breadcrumbs in 3 shallow dishes. Dip each rissole first in the flour, then egg, followed by the breadcrumbs. • Heat the oil in a large pan over medium-high heat. Cook the rissoles in 2 batches, for 2-3 minutes on each side until golden and crisp all over. Add more oil if necessary. • Serve 2 on each plate with lemon wedges and a rocket, tomato and red onion salad.

in various ways. Unless specifically stated otherwise, your ham will arrive unglazed ready for you to dress with breadcrumbs (not supplied) or glaze as you prefer.
OUR QUALITY COMMITMENT AND GUARANTEE TO YOU Our aim is always to exceed your expectations in terms of product quality, value for money and service. If we have fallen short of that standard, please let us know and we will be happy to send you a replacement or to refund your payment as appropriate.
• The photographs throughout this brochure show serving suggestions. • All our products are sent to you fresh and securely packed by next working
day delivery, except for smaller items and those going to more remote destinations. Delivery is not guaranteed for any particular time during the day. Please let us know as soon as possible if your order has not arrived.
• Smaller items are sent by 1st Class Post and although next day delivery is
usual, it cannot be guaranteed particularly as Christmas approaches.
• If your order is for a specific date, please arrange for delivery at least a
few days before you need it. Remember, all our hams keep for at least three weeks after delivery; it is far better that it sit for a day or two in your refrigerator than not arrive in time!
