In 1841 Elizabeth Harris, the matriarch of a ham curing dynasty based in Calne in Wiltshire, perfected a way of curing pork other than by simply applying dry salt, immersing the pork legs in brine instead. The result was ham that is milder in flavour than the distinctly saltier dry cured hams of yore. Dukeshill Wiltshire Hams are cured by immersing the whole pork legs for several days in brine, to which we add unrefined brown sugar to give a subtle sweetness to this mild and delicious ham. This most quintessential English ham is produced using curing methods that have remained largely unchanged for centuries. We carefully select the best legs of British pork we can find, dress each with a pinch of saltpetre and then cover with a generous layer of salt. The process is repeated over a number of weeks before the hams are left to mature for several months in our drying rooms. Dukeshill’s free range Bronze turkeys are reared exclusively for us by Rosie Wadlow. Rosie’s Great Grandmother started rearing turkeys on her family’s Shropshire farm during the Second World War. This fabulously tasty, well rounded Scottish cheddar is naturally produced using animal rennet and unpasteurised milk from a mixed herd of Friesians, Ayrshire, Jersey and Brown Swiss cows.There is some variation throughout the year depending on the seasons but this adds to the interest. Royal Beluga Caviar Beluga caviar comes from the Huso huso sturgeon which can reach a maximum length of 8 meters and a weight exceeding 1.5 tons! Originally from the Black Sea, the Caspian Sea and the D’Azov Sea, it was also found in the Adriatic and Ionian. It is the rarest and hence the most expensive caviar available and is characterized by large eggs (over 3 mm) which tend to be oval, with a colour ranging from pearl grey to dark grey which are harvested from the sturgeon after an average of 20 years.

Lemon Possets One of our oldest British puddings Lemon Posset deserves a revival. In medieval times Posset was a milky drink with alcohol or citrus added which resulted in the milk curdling and thickening. Important information about your order
Corporate Gifting
As you will see throughout the brochure, we show our hams decorated in various ways. Unless specifically stated otherwise, your ham will arrive unglazed ready for you to dress with breadcrumbs (not supplied) or glaze as you prefer. The photographs throughout this brochure show serving suggestions. All our products are sent to you fresh and securely packed by next working day delivery, except for smaller items and those going to more remote destinations. Delivery is not guaranteed for any particular time during the day. Please let us know as soon as possible if your order has not arrived. Smaller items are sent by 1st Class Post and although next day delivery is usual, it cannot be guaranteed particularly as Christmas approaches. If your order is for a specific date, please arrange for delivery at least a few days before you need it. Remember, all our hams keep well after delivery; it is far better that it sit for a day or two in your refrigerator than not arrive in time! If we are unable to deliver on the specified day due to adverse weather conditions or other circumstances beyond our control, we will endeavour to deliver at the next earliest opportunity and our liability is limited to this. Please bear in mind that if there are heavy snow falls, delivery drivers may not be able to get through to you until the roads are cleared and that heavy snows may result in backlogs at the delivery depots. You must be 18 years old or over to order or receive wines, beers, spirits and knives. By placing an order you confirm that you are at least 18 years old. Sorry, we are not able to deliver on Sundays or Mondays. We cannot deliver to PO Box numbers, or send to overseas destinations. We take payment at the time of order as our products are prepared specifically to your requirement. We will be happy to forward your personal message. If you wish to send your own note or greetings card, please ensure that it is enclosed with your order. Delivery We are able to deliver in bulk to your place of work or send the parcels to individual addresses. Please bear in mind that many of our hampers contain perishable items with relatively short shelf life. If this is likely to be a problem, choose one of our hampers that does not require refrigeration (these are clearly marked).
Bespoke Hampers For large orders our dedicated corporate team would be delighted to work with you to design your own personalised hamper from the full Dukeshill range of foods. This is typically only available for larger orders, where the total value of hampers is over £3,000. Please call our dedicated hamper team to discuss your requirements on 0845 331 2516. Confirmed orders for bespoke hampers are required by 15th November to ensure there is sufficient time to carry out our packaging trials.
