Welcome to the Easter issue I walked my dogs in the park at the weekend, and blinked in surprise at a sea of daffodils already in bloom - hopefully harbingers of Spring just around the corner. Easter comes quite early this year, but whenever it falls it feels like a special time to spend with family and friends; good food is such an important part of any get-together, and what better reason does one need to celebrate than new growth in the garden and hedgerows, lengthening days, and (hopefully!) a bit of warmth as the sun climbs a little higher each day.

Inspire me... Mediterranean Lamb

Serves 8 | Prep 20 mins | Cook 3 hrs | Moderately Easy

2 – 2 ½ kg leg of lamb on the bone Tomato Confit 400g cherry tomatoes 1 bay leaf ½ tsp dried Provencal herbs (or 1 thyme sprig) 1 garlic clove, peeled 200ml olive oil

1 ½ kg large potatoes (Maris Piper work well), peeled and cut into thick wedges 1 red onion, peeled and quar tered 1 whole garlic bulb, separate into cloves but keep skin on 3 peeled garlic cloves, crushed 1 bay leaf 4 rosemary sprigs 6 thyme sprigs 2 tsp dried oregano 1 ½ tsp salt freshly ground black pepper juice of 1 lemon 300ml water

• Pre-heat the oven to 190°C/170’C fan. • Star t by making the tomato confit. • Heat the olive oil in a saucepan over a medium heat for 2 minutes, then lower the heat to its lowest setting and add the remaining tomato confit ingredients and shake the pan to mix it all. Turn the heat off as soon as the tomatoes star t to split, approximately 8 mins. • Remove at once from the heat and transfer to a Pyrex bowl or jug and allow to cool.

Whole Bone-in Leg of Lamb The perfect roasting joint for any occasion, whether a traditional family Sunday lunch or a celebratory dinner.

• Mix 30ml of the tomato confit olive oil with ½ tsp salt, crushed garlic and dried oregano to form a paste and rub over the lamb. • Put the potatoes, red onion, rosemary, thyme, bay leaf and unpeeled garlic cloves in the bottom of a roasting tin or a large lidded casserole pot and season with the remaining 1 tsp salt and some

freshly ground pepper. Pour over the lemon juice and 40ml tomato confit olive oil. Place the leg of lamb on top of the vegetables and pour the water round the side of the lamb. Cover tightly with a tent of foil. • Cook in the oven for 2½ - 3 hours until the meat is falling off the bone, adding a little more water, if necessary, halfway through to keep the vegetables moist. • Remove the foil (or lid), pop the confit tomatoes around the lamb, and baste with the juices in the tin. Return to the oven for 15 more minutes uncovered to warm the tomatoes through. • Serve the meat in chunks or thick slices with the vegetables and juices.

Inspire me... Roast Pork with Apples & Cider

Serves 8 | Prep 1 hr 15 mins | Cook 2 hrs 50 mins | Easy

1.75kg rolled shoulder of pork 50-75g table salt 1 tbsp fennel seeds 1 tbsp sea salt flakes 100g pancetta, diced into 1cm cubes (or streaky bacon) 12 shallots, peeled 4 apples, with a 1 cm deep cut around the equator, this will stop them bursting and losing their shape when roasted 8 sage leaves 400 ml cider • Preheat the oven to 250’ C/230’C fan. • One hour before cooking remove the pork from its packaging and rub dry with kitchen roll. Cake the rind in a layer of table salt. Leave for one hour minimum then brush the salt off. • Rub the rind with the sea salt flakes and fennel seeds, pushing both into the scoured cracks. • Roast the pork for 35 minutes, until the crackling is golden and bubbled. Remove from oven and lower the temperature to 170’C/150’C fan. Leave the oven door open for a minute to help the heat drop down. • Put the diced pancetta, whole shallots, apples and sage leaves in another roasting tray or heavy based, deep sided casserole pot. Pour over the cider and then place the pork over the top of the apples and onions, using them as a trivet. • Pop back in the oven and roast the pork for approximately 2 hours at the lower temperature, until the onions and apples have softened and you have a sweet porky jus at the bottom of the pot. • Serve slices of the pork, with some apple, the pancetta and shallots and the delicious juices over a cannellini bean puree or mashed potatoes with some greens.

Inspire me... Roast Chicken with Chorizo Stuffing Serves 4-6 | Prep 20 mins | Cook 2 hrs | Easy

1 whole chicken (2.2 – 2.4kg) 2 tbsp olive oil 1 tsp flaked sea salt 1tsp smoked paprika 2 thyme sprigs, leaves removed Stuffing 180g Dukeshill chorizo (sausage meat squeezed from skins) 1 tbsp olive oil 2 onions, peeled and roughly chopped zest and juice of half a lemon 125g fresh white breadcrumbs 100g soft dried apricots, halved 15g flat leaf parsley 2 thyme sprigs, leaves removed 1 large egg ¼ tsp salt freshly ground black pepper • Pre-heat your oven to 190’C/ 170’C fan. • To make the stuffing use a food processor to make the breadcrumbs. Then add all the other ingredients to the processor bowl and chop until like a sausage meat consistency. Push down into the cavity of the chicken. • Mix the olive oil with the paprika, sea salt and leaves from the thyme sprigs and rub all over the chicken. Place on a roasting tray and roast for approximately 2 hours. • Allow the chicken to rest for 10 mins then serve with roasted vegetables and sautéed, diced potatoes.

Our bestselling ham has a proud history. In 1841 Elizabeth Harris, the matriarch of a ham curing dynasty based in Calne in Wiltshire, perfected a way of curing pork other than by simply applying dry salt, immersing the pork legs in brine instead. The result was ham that is milder in flavour than the distinctly saltier dry cured hams of yore. Dukeshill Wiltshire Hams are cured by immersing the whole pork legs for several days in brine, to which we add unrefined brown sugar to give a subtle sweetness to this mild and delicious ham. We simmer the Wiltshire cured ham hocks in stock, onions, carrots, celery, black pepper and a dash of brandy – for more than 12 hours. While cooling, the natural release of gelatin from the hock bones sets the stock into delicious jelly. Pure pleasure on a plate.

The finest British turkey breast is brined for two days to enhance its natural flavour, and then smoked slowly whilst cooking over oak chips to retain the moist and tender texture.

Most so called “dry cured” bacon is made using a process called “cure in the bag”. This prevents weight loss by locking water in the bacon resulting in the nasty goo you get during cooking inferior bacon. Not ours! Instead we use traditional curing methods and allow the bacon to dry naturally in our drying rooms. This not only means there is no excess water and hence no white goo, but more importantly the flavour is second to none. It freezes perfectly too.

Serves 4-6 | Prep 20 mins | Cook 20 mins | Some Effort

Tomato Confit 12 cherry tomatoes 1 bay leaf ½ tsp dried Provencal herbs (or 1 thyme sprig) 1 garlic clove, peeled 200ml olive oil Tomato Sauce 170ml tomato confit olive oil (drained) 5tbsp double concentrate tomato puree 150g Ricotta cheese 100g Ragstone, remove skin and cut into small pieces 1 garlic clove, peeled and roughly chopped 30ml tomato confit oil (remaining confit oil drained) ½ onion, finely chopped 4tbsp red wine vinegar 500g pork belly confit 30g sultanas ½ apple, peeled and finely chopped 10 sage leaves, chopped 400g Pappardelle pasta 12 confit cherry tomatoes (drained) 50g crumbled goats cheese such as Ragstone, remove skin before crumbling

• Star t by making the tomato confit. • Heat the olive oil in a saucepan over a medium heat for 2 minutes, then lower the heat to its lowest setting and add the remaining tomato confit ingredients and shake the pan to mix it all. Turn the heat off as soon as the tomatoes start to split, approximately 8 mins. • Remove at once from the heat and transfer to a Pyrex bowl or jug and allow to cool. • To make the tomato sauce strain 170ml of the tomato confit oil into a blender or food processor and add the remaining sauce ingredients. Whizz for a few minutes until smooth and put to one side. • Heat the remaining 30ml of the strained tomato confit oil into a large heavy based pan over a low to medium heat.

Pork Confit with Tomatoes and Pappardelle

• Add the onion and sauté for a few minutes, then add the red wine vinegar and let reduce by half (2-3 mins). • Turn the heat down low and remove the pork confit from its packaging and dice or tear into chunks. Add to the pan along with all the juices from the bag. • Add the sultanas, tomato sauce, apple and sage and continue cooking for 5 mins. Ignore the fact it looks curdled, it won’t in the end! • Meanwhile heat the Pappardelle pasta according to the instructions, approx. 7 mins until al dente. Drain and add to the pan and turn the heat off. • Re-heat the confit tomatoes and gently place on top and crumble over 50g goats cheese. • Serve straight from the pan, allowing everyone to help themselves.

An unpasteurised cow’s milk cheddar made at Westcombe Dairy in the Batcombe Vale of Somerset by Tom Calver. The cheddar has been honoured with both European PDO status and the Artisan Somerset Cheddar designation from Slow Food. Aged for a minimum 11 months to produce a hard, slightly crumbly cheddar with a lingering flavour.

A stunning Leicestershire cheese handmade by Jo and David Clarke from the unpasteurised milk produced by their own dairy cows who graze the lush Leicestershire pastures near Market Bosworth. Nutty, sweet with a citrus finish. Cloth bound and matured for 6 months on beech shelves.

Sarah’s grandfather (a rather good pastry chef!) used to make a delicious, light fruitcake. This cake exclusive to Dukeshill was inspired by his original recipe. Made with free range eggs, English butter, almonds, cherries, vine fruits and mixed spices.

Traditional Scottish shortbread made by hand for us at the southern end of Loch Lomond. Using the finest possible ingredients this is the best and shortest shortbread by a country mile. Presented in our lovely keepsake tin it makes a perfect gift too.
