Wiltshire Cured Back Bacon Our award-winning traditional Wiltshire Cure recipe dates back to the 1840s and is a "wet-cure" which means that the bacon is immersed in a liquid brine (a salt and saltpetre solution containing useful salt tolerant bacteria) for 3 to 4 days. This is a much milder form of curing than dry cure and does not require so much salt. We do not pump liquid into the bacon to speed up the process as happens with so many modern bacons, rather we take our time - as with everything we produce - and the result is a delight; naturally moist, tender and packed with flavour. The Shropshire Black Ham Story This most flavoursome of hams is the direct descendant of the historic Bradenham Ham. The Bradenham didn’t begin its life in Shropshire, or Wiltshire for that matter; it was invented by Lord Bradenham in 1781, and migrated from Bradenham Manor in Buckinghamshire in the 19th Century. The story is that the butler there fell out with his employer, moved to Wiltshire and took the recipe with him. He set up the Bradenham Ham Company in 1781, and continued to manufacture on that site for almost 100 years. Sadly, the unstoppable march of big business took its toll, acquisition after acquisition took place, and before long the manufacture of so-called Bradenhams was a very unimportant part of a big corporation. Eventually, the management decided to stop production. Fortunately we were able to recreate the recipe and although we are unable to use the name "Bradenham Ham", this wonderful ham lives on as our Shropshire Black.

Steaming Good Puddings Reminiscent of those steam-cooked puddings my mother used to make, these puddings were recreated by Sarah in our own kitchen using only the very best ingredients and absolutely nothing artificial. We use only English butter, free-range eggs, Belgian chocolate and lots of time and care when making these puds. By the way, good news for any vegetarians amongst us, we don’t use suet. Ready-cooked, all you need to do is to steam or microwave them. By the way, these puddings will keep in your pantry or cool cupboard for up to four weeks and will freeze beautifully. All our puddings will serve between four and six, depending on appetites.
