Isle of Mull Cheddar
This fabulously tasty, well rounded Scottish cheddar is made on the Isle of Mull by the Reade family. It is naturally produced using animal rennet and unpasteurised milk from a mixed herd of Friesians, Ayrshire, Jersey and Brown Swiss cows. There is some variation throughout the year depending on the seasons but this adds to the interest. In winter the lack of organic grass is supplemented by hay and whisky grains, hence the cheddar appears a little whiter, and occasionally there is some blue veining.

Jonny Crickmore imported his herd of red and white Montbeliarde cow's from small French alpine farms, and they now graze the lush meadows of Stow Fen where Jonny makes this fabulous cheese in small batches from raw milk. The delicious result is the only traditional raw milk Brie-de-Meaux style cheese produced in the UK. The cheese has a smooth, delicate and silky texture and complex, long lasting flavours that bounce around the mouth.

Pavé Cobble An unpasteurised ewe’s milk cheese from White Lake Cheese in Somerset. Named after street cobbles, it won the accolade of Supreme Champion at the British Cheese Awards in 2017. Ham Hock, Beetroot & Fennel Smørrebrød
Serves 3-4 | Prep 15 min | Cook 50 min | Fairly Easy
1 ham hock (or 300g ham) stripped and cut into chunks or shredded 2 tsp olive oil 400g fresh beetroot, peeled and cut into wedges ½ tsp caraway seeds
½ small red onion, thinly sliced 1 tsp red wine vinegar 2 tsp crème fraiche 1 tsp freshly grated horseradish (or 1 tsp strong horseradish sauce)
½ tsp salt
finely grated zest and juice 1 orange
freshly ground black pepper
75g watercress
250g waxy salad potatoes, halved if small or cut into 1” chunks
5g dill, stalks discarded and chopped
1 small fennel bulb, thinly sliced

Pre heat the oven to 200°C/180°C fan/gas mark 6.
Place the wedges of beetroot in a roasting tray with the caraway seed, half the orange juice and olive oil. Sprinkle generously with salt and freshly ground black pepper. Toss to mix it all up then cover with foil and bake for approximately 40 minutes until tender. Meanwhile cook the potatoes in boiling salted water for 12 minutes until tender. Drain then when cool slice into thick slices.
In a bowl mix the beetroot with the potato, fennel, radishes, ham hock, red onion, horseradish, remaining orange juice and vinegar. Mix together and adjust seasoning to taste. Fold through the crème fraiche and pile on top of the watercress.
Garnish with the dill and orange zest and serve on slices of buttered rye bread.
