There’s something rather special about late summer; my garden is looking a little past its best but this is more than made up for by the glut of tomatoes and other produce that fills me with renewed enthusiasm to get busy in the kitchen. Nothing, but nothing, comes close to a ripe tomato plucked straight from the vine. However, I appreciate that not everyone has the time or inclination to spend hours in the kitchen, let alone months waiting for their food to grow in the first place and that’s where Dukeshill comes in! We take time creating delicious foods (and finding other producers who share our values) so you don’t have to! So, if your idea of time well spent is more likely to involve a deck chair and “Test Match Special” or a good book, rest assured we’re happy to take the strain when it comes to delivering the finest foods fresh to your door.

... Inspire me Effie's Tart Serves 4-6 | Prep 20 mins | Cook 1 hr 20 mins | Moderately Easy
METHOD • Pre heat oven to 200oC/180oC fan.
INGREDIENTS 100ml olive oil 1 red pepper, diced 1 yellow pepper, diced 1 medium aubergine, diced 1 small sweet potato, peeled and diced 1 small courgette, sliced 300g shortcrust pastry 200g pancetta, diced splash olive oil 2 medium onions, thinly sliced 2 bay leaves 8 thyme sprigs, remove leaves & discard stalks 120g ricotta 120g feta cheese 8 cherry tomatoes, halved 2 medium eggs 200ml double cream ½ tsp sea salt freshly ground black pepper
• Put all the vegetables (except the onion and tomatoes) in a roasting tray with the olive oil, toss and roast for 40 minutes. • Take a 12”/30cm wide quiche tin and roll out the pastry to line, curling the pastry over the edge. Line with greaseproof and tip some cooking beans onto the greaseproof to hold the pastry down during cooking. Pop into the oven for 10 mins. • Remove the beans and the greaseproof and push the pastry back into shape if it has shrunk down too much. Pop back into the oven and bake blind for a further 10 mins. • Meanwhile dry fry the pancetta in a heavy based pan over a medium high heat for 5 mins until crisp and golden.Transfer to the pastry case. • Using the same pan reduce to the lowest heat, add a splash of olive oil, the onions and bay leaves and very gently sauté for 10-15 mins. • Discard the bay leaves and scatter the onion over the pastry, top with the roasted vegetables, thyme and tomato halves, crumble the feta and spoon the ricotta over the top.

• Whisk the eggs with the cream and seasoning and slowly pour into the tart case.
Pancetta
• Pop back in the oven and bake for 35-45 minutes until the filling sets.

Our Wiltshire cured gammon steaks are made using the finest British pork, cured the traditional way. They are cut quite thin which makes them tenderer and also quicker to cook.
We use British boneless pork backs, and dry cure them using either our traditional bacon cure or our sweet cure, before slicing into medium-thick, rindless slices. Each pack contains two bacon chops.

INGREDIENTS 300g pack smoked back bacon 25g butter 1 onion, finely chopped small handful of sage leaves, chopped 250g plain flour 1 tbsp baking powder 100g cheddar cheese, grated 3 sprigs thyme, leaves removed 1 sprig rosemary, leaves removed and chopped finely pinch of salt 2 eggs 250ml milk METHOD • Cook the bacon in oven for 10 mins at 220oC / 200oC fan until crispy. • Allow to cool. Reduce oven temperature to 180’C / 160oC fan. • Melt the butter in a pan over a gentle heat and gently sauté the onion and sage for approximately 5-7 mins or until the onion is translucent and soft. • In a bowl mix the flour, baking powder, salt, cheese, rosemary and thyme. • Break the bacon into small pieces (5mm) and add to the bowl along with the sage and onion. • Mix together the milk and eggs and add to the bowl. Mix thoroughly. • Put a small blob of butter in the bottom of each muffin pocket and place the tin in the oven for 1 min to melt the butter, then spoon large spoonfuls of the mixture into each pocket.

Dukeshill Bacon
Most so called “dry cured” bacon is made using a process called “cure in the bag”. This prevents weight loss by locking water in the bacon resulting in the nasty goo you get during cooking inferior bacon. Not ours! Instead we use traditional curing methods and allow the bacon to dry naturally in our drying rooms. This not only means there is no excess water and hence no white goo, but more importantly the flavour is second to none. It freezes perfectly too. METHOD • Pre-heat oven to 220oC/200oC fan. • Bring the ale and milk to a simmer in a pan with the onion, garlic, bay leaves, nutmeg and cloves. Remove from the heat and allow to infuse for 30 minutes.
