Spiced Mackerel with an Avocado & Tomato Raita Serves 2 | Prep 20 min | Cook 1 min | Easy

RECIPE of the MONTH

180g smoked mackerel fillets

1 green chillies, sliced thinly

pinch dried red chilli flakes

5g fresh coriander leaves, finely chopped

½ tsp garam masala ¼ tsp turmeric

1 tbsp coriander leaves, chopped 1 tbsp butter, softened

¼ red onion, peeled and finely chopped 150g yoghurt

freshly ground black pepper ½ tsp salt

Avocado & Tomato Raita

¼ tsp cumin seeds, toasted and crushed

1 medium tomato, skinned, de-seeded and chopped into small cubes

2 flatbreads (or chapatis)

½ avocado pear, chopped into small cubes

pinch of chilli powder

The smoked mackerel can either be grilled or BBQed. Make sure the grill or BBQ is nice and hot before cooking. Begin by softening the butter, then mixing with the garam masala, turmeric and chilli flakes. Rub the spiced butter liberally all over the smoked mackerel fillets then place on a foil sheet. Close the foil to create a sealed foil parcel and put to one side whilst you prepare the raita. For the raita mix all the ingredients together except the toasted, crushed cumin seeds and chilli powder. Mix well then sprinkle with the crushed cumin and chilli. Preheat the grill to high and line a baking tray with kitchen foil or if bbq’ing then fire up the BBQ. If grilling place the foil wrapped fillets on a baking tray. Grill for 1 minute, or until the butter melts, soaking the spices into the warm fish. If bbq’ing then pop on the BBQ for 1 minute. Meanwhile warm the flatbreads or chapatis according to their instructions. Serve the mackerel immediately with the raita and warmed flatbreads or chapatis on the side.

It is naturally produced using animal rennet and unpasteurised milk from a mixed herd of Friesians, Ayrshire, Jersey and Brown Swiss cows.There is some variation throughout the year depending on the seasons but this adds to the interest. An unpasteurised ewe’s milk cheese from White Lake Cheese in Somerset. Named after street cobbles, it won the accolade of Supreme Champion at the British Cheese Awards in 2017. Dusted in a faint coating of ash, it has a superb sweet, lactic flavour with a melt in the mouth mousse-like texture.

Lemon Possets One of our oldest British puddings Lemon Posset deserves a revival. In medieval times Posset was a milky drink with alcohol or citrus added which resulted in the milk curdling and thickening. Over the centuries posset became more of a dessert with the addition of ground almonds, egg yolks etc. Ours is simply made with cream, sugar and lemon and is pure lemony heaven. Delicious on its own or served with a square of our melt in the mouth shortbread on the side.

Panna Cotta Panna Cotta meaning "cooked cream" in Italian is an Italian dessert which hails from the Piedmont region of Italy. It's basically sweetened cooked cream. Ours is made using organic double cream, sugar and vanilla with a little gelatine which results in a loose set. Sometimes it’s better to make it yourself and that’s why we hand make these dense, lemony drizzle cakes here at Dukeshill just like you would at home, but to our own recipe. We use the very best ingredients with lots of lemon zest, lemon juice, ground almonds, free range eggs and English butter. Pass it off as your own - we won’t tell!

Sarah’s grandfather (a rather good pastry chef!) used to make a delicious, light fruitcake. This cake, exclusive to Dukeshill, was inspired by his original recipe. Made with free range eggs, English butter, almonds, cherries, vine fruits and mixed spices it makes the perfect tea time treat.
