Isle of Mull Cheddar

This fabulously tasty, well rounded Scottish cheddar is made on the Isle of Mull by the Reade family. It is naturally produced using animal rennet and unpasteurised milk from a mixed herd of Friesians, Ayrshire, Jersey and Brown Swiss cows.There is some variation throughout the year depending on the seasons but this adds to the interest. In winter the lack of organic grass is supplemented by hay and whisky grains, hence the cheddar appears a little whiter, and occasionally there is some blue veining.

Bacon & White Bean Stew Serves 2 | Prep 10 min | Cook 35 min | Very Easy

15g butter

thin strips

1 x 720g jar haricot beans (buy online)

10g flat leaf parsley, leaves and stalks chopped finely

3 shallots, peeled and finely sliced

50ml white wine

250ml vegetable stock

½ tsp salt

freshly ground black pepper drizzle of walnut oil (or olive oil)

Melt the butter in a heavy based casserole pot over a low to medium heat. Fry the shallot in the butter for 3 mins until softened. Tip in the beans followed by the wine and stir through for 2 mins before adding 150ml of the stock, salt and pepper. Mix together the bacon with the crushed garlic and parsley and add to the pan. Stir through and partially cover. Allow to bubble away for 20 minutes adding the remaining 100ml of stock for the last 5 minutes. Serve in bowls with a generous drizzle of the walnut oil.
