Beef Fillet and Gorgonzola Sauce

My beef fillet and Gorgonzola sauce is perfect for using those tail bits of fillet and magically transforming them into a rich and decadent supper dish. This is such an easy recipe to make and is my take on a classic beef stroganoff involving the addition of Gorgonzola to create a fabulously rich and luxurious meal. Perfect served on a bed of linguine or rice. 440g beef fillet (25% OFF see below)

Marinade the piece of beef fillet in the Balsamic vinegar with the brown sugar and seasoning and leave for one hour.

1 tsp brown sugar

Gently sauté the onion in the butter for 10 mins until softened.

Ground black pepper 1 tbsp vegetable oil

Meanwhile, heat the oil in a frying pan until smoking hot, sear the fillet for about 2 mins on each side until well browned, then set aside and keep warm.

2 onions, peeled and roughly sliced

Add the cream, stock and Gorgonzola to the onions and stir in for 2 mins.

2 tbsp dark Balsamic vinegar 1/2 tbsp salt

30g butter

250g double cream

85g Gorgonzola, crumbled

150ml beef or vegetable stock

Linguine pasta or rice to serve

Cook the pasta or rice according to the instructions.

Slice the fillet into 1cm thick slices and add to the onion mixture and cook over a gentle heat for 2 mins. Remove from the heat and season to taste. Serve with the linguine or rice.

Bacon

Most so called “dry cured” bacon is made using a process called “cure in the bag”. This prevents weight loss by locking water in the bacon resulting in the nasty goo you get during cooking inferior bacon. Not ours! Instead we use traditional curing methods and allow the bacon to dry naturally in our drying rooms. This not only means there is no excess water and hence no white goo, but more importantly the flavour is second to none. It freezes perfectly too.

Our Hogget & Pea Pudding is made especially for us using hogget meat. Hogget is an older lamb aged between one and two years. This extra ageing gives the meat a fuller and better flavour with the tenderness of lamb. The hoggets come from farms in the Yorkshire Dales where they are free to graze on the stunning landscapes all year round. Encased in a suet crust these puddings are unbelievably good. No accompaniment is needed although they are delicious served with some buttered cabbage alongside. A great British classic and the ultimate comfort food.

Isle of Mull Cheddar This fabulously tasty, well rounded Scottish cheddar is made on the Isle of Mull by the Reade family. It is naturally produced using animal rennet and unpasteurised milk from a mixed herd of Friesians, Ayrshire, Jersey and Brown Swiss cows.There is some variation throughout the year depending on the seasons but this adds to the interest. In winter the lack of organic grass is supplemented by hay and whisky grains, hence the cheddar appears a little whiter, and occasionally there is some blue veining.

Pork Chops with Mackerel Mayo

1 tsp coriander seeds

1 tsp flaky salt

1 tsp fennel seeds black pepper salt

1 fresh mackerel

1 heaped tsp Dijon mustard freshly ground black pepper juice of 1 lemon 50ml olive oil

150ml sunflower oil

Preheat oven to 190°c/170°C fan/ gas mark 5.

Drizzle the gutted mackerel with a dash of olive oil, then bake for 10 mins. Remove from baking tray and allow to cool. Put the chops into the same, fishy tray, sprinkle with a pinch of salt – especially the fat. Grind fennel and coriander in pestle & mortar and sprinkle onto the chops along with a good grind of black pepper. Bake for about 30 minutes – until preferably still just off-pink. Allow to rest for 5 mins. Meanwhile make the mayonnaise in a food processor. Whisk the egg yolks, lemon juice, mustard, salt & black pepper. Slowly drizzle in the olive oil and the sunflower oil until fully emulsified. Skin the cooled mackerel and remove the flesh carefully from the bones. Flake the fish into the mayonnaise and mix in gently. Serve the pork chops with the fishy mayo dolloped alongside.
