Welcome to the Spring issue Rarely have I felt as ready for Spring as I do this year! However, the one thing to be said for a winter that seems to have dragged on and on is that the longer warmer days of Spring are anticipated even more keenly. As soon as the clocks have go forward I look to spend as much time outdoors as possible, and taking pleasure in such simple pleasures as a ham sandwich in the garden after a few pleasant hours tatting around the emerging greenery.

Inspire me... Ham and Asparagus Tart
Serves 8-10 | Prep 15 mins | Cook 35 mins | Moderately Easy
500g block shortcrust pastry 100g sliced ham, torn (or ham hock shredded) 100g asparagus tips 75g Comte cheese, grated 1 tbsp olive oil ½ tsp sea salt freshly ground black pepper 3 free range eggs 275ml double cream ¼ tsp grated nutmeg 2 tsp Dijon mustard • Pre heat the oven to 200’C/180’ fan. • Take a 12”/30cm wide quiche tin and roll out the pastry to line, curling the pastry over the edge. Line with greaseproof and tip some cooking beans onto the greaseproof to hold the pastry down during cooking. Pop into the oven for 10 mins. • Remove the beans and the greaseproof and push the pastry back into shape if it has shrunk down too much. Pop back into the oven and bake blind for a further 10 mins. • Meanwhile blanch the asparagus tips for 2 minutes in boiling water. Refresh under the cold tap, drain then toss in the olive oil and ¼ tsp sea salt and some black pepper. • Put the torn or shredded ham over the base, sprinkle the grated Comte cheese over the ham. • Using a fork mix the double cream with the eggs, nutmeg, Dijon mustard and the rest of the seasoning and pour evenly over the cheese. Top with the asparagus tips arranged in whatever pattern you like. • Put back in the oven for a further 15 minutes, then remove and allow to cool for 10 minutes before serving with a side salad.

This most quintessential English ham is produced using curing methods that have remained largely unchanged for centuries. We carefully select the best legs of British pork we can find, dress each with a pinch of saltpetre and then cover with a generous layer of salt. The process is repeated over a number of weeks before the hams are left to mature for several months in our drying rooms. This results in a beautiful ham with an unparalleled depth of flavour and firmer texture, and is the source of our coveted Royal Warrant. 750g potatoes (such as King Edwards, Desiree, Maris Piper), peeled and sliced 3mm thick 200g Dukeshill pancetta (or dry cured streaky bacon), diced 1 tbsp olive oil 2 onions, sliced 400g Perl Wen brie, derinded and sliced 284ml double cream salt and pepper • Par boil the potato slices in boiling, salted water for about 5 minutes, then drain in a colander and refresh with cold water. • Sauté the pancetta in a splash of olive oil until crisp and golden. Add the onions and cook for about 10 mins until the onions are soft. • Butter a gratin dish and arrange layers of potato, onion and bacon and cheese, seasoning as you go but don’t add too much salt. • Pour the cream over and bake for 40 mins at 190°C/ fan 170°C/ top of baking oven in Aga until the top is golden and bubbling. • Serve with some cherry tomatoes, olive oil, sea salt and basil for a wonderful lunch or supper dish.

Dukeshill Bacon
Most so called “dry cured” bacon is made using a process called “cure in the bag”. This prevents weight loss by locking water in the bacon resulting in the nasty goo you get during cooking inferior bacon. Not ours! Instead we use traditional curing methods and allow the bacon to dry naturally in our drying rooms. This not only means there is no excess water and hence no white goo, but more importantly the flavour is second to none. It freezes perfectly too.

400g Dukeshill pork chipolatas 1 tbsp vegetable oil 1 onion, peeled and finely chopped 3 garlic cloves, peeled and finely chopped ½ tsp smoked paprika ½ tsp chilli flakes 1 tbsp double concentrate tomato puree 400g tin chopped tomatoes 100ml water 1 tbsp maple syrup ½ tbsp. apple cider vinegar 2 x 400g tins haricot beans, drained and rinsed 1 tbsp Worcestershire Sauce ¼ tsp English mustard powder ½ -1 tsp salt, according to taste freshly ground black pepper 3 free range eggs • Fry the sausages in the oil over a medium heat for 15 minutes until browned all over. • Add the onion to the sausages and cook for a fur ther 5 minutes. • Then add the garlic and spices and cook for another minute before adding the tomato puree. • Stir the puree in the pan for 30 seconds then add the tinned tomatoes, maple syrup, apple cider vinegar, water and salt and pepper. Bring to the boil then simmer uncovered for 5 minutes. • Add the beans and cook for a further 5 minutes. • Meanwhile fry the eggs in a little vegetable oil. • Serve the sausages and beans mixture with an egg sitting on top and tuck in.

30g butter melted 2 cloves garlic minced 100ml dry white wine 100g Lucy’s Chorizo Jam 200g cooked large prawns 160g linguine pasta Seasoning to taste Rocket and a drizzle of olive oil to serve to serve • Bring a pan of salted water to a rolling boil and add the linguine. Cook according to the packet, about 5-10 minutes. • Melt the butter in a another pan and sauté the garlic for 1-2 minutes. Turn up the heat and add the white wine, leave to simmer for 2 minutes. • Turn the heat down and add the chorizo jam and prawns, stir and cook for a fur ther 2 minutes. • Drain the linguine and add to the prawn mixture. • Serve with a little olive oil drizzled over and a few leaves of rocket.

An unpasteurised cow’s milk cheddar made at Westcombe Dairy in the Batcombe Vale of Somerset by Tom Calver. The cheddar has been honoured with both European PDO status and the Artisan Somerset Cheddar designation from Slow Food. Aged for a minimum 11 months to produce a hard, slightly crumbly cheddar with a lingering flavour.
A stunning Leicestershire cheese handmade by Jo and David Clarke from the unpasteurised milk produced by their own dairy cows who graze the lush Leicestershire pastures near Market Bosworth. Nutty, sweet with a citrus finish. Cloth bound and matured for 6 months on beech shelves.
