Isle of Mull Cheddar This fabulously tasty, well rounded Scottish cheddar is made on the Isle of Mull by the Reade family. It is naturally produced using animal rennet and unpasteurised milk from a mixed herd of Friesians, Ayrshire, Jersey and Brown Swiss cows. There is some variation throughout the year depending on the seasons but this adds to the interest. In winter, the lack of organic grass is supplemented by hay and whisky grains, hence the cheddar appears a little whiter, and occasionally there is even some blue veining.

Jonny Crickmore imported his herd of red and white Montbeliarde cow's from small French alpine farms, and they now graze the lush meadows of Stow Fen where Jonny makes this fabulous cheese in small batches from raw milk. The delicious result is the only traditional raw milk Brie-deMeaux style cheese produced in the UK. The cheese has a smooth, delicate and silky texture and complex, long lasting flavours that bounce around the mouth.
Similar in style to the French Epoisses this is a sticky, strong, washed-rind cheese made in Oxfordshire. Named after the alternative name for the River Thames in Oxfordshire this full fat, creamy soft, pasteurised cows milk cheese is washed in honey mead to give it a tangy pungent rind.
The Padfield family make this cheese by hand to the traditional 19th Century recipe (of which reputedly Admiral Lord Nelson was a fan), using the pasteurised, creamy organic milk from their Somerset herd. This square cheese has a soft and creamy texture with a white bloomy rind. Once cut into, it reveals an ivory-coloured interior. The flavour is mushroomy with a hint of lemons. A superb soft cheese awarded Super Gold at The World Cheese Awards 2019.

One of our oldest British puddings, Lemon Posset deserves a revival. In medieval times, Posset was a milky drink with alcohol or citrus added, which resulted in the milk curdling and thickening. Pork Confit Pad Thai Serves 4-6 | Prep 15 min | Cook 10 min | Easy
500g pork belly confit, sliced thinly
40g peanuts, toasted and chopped
2 - 3 tbsp vegetable oil
juice of ½ lime
½ onion sliced
1 tbsp chopped coriander leaves
2 garlic cloves, sliced 1 red pepper, sliced thinly 2 carrots, sliced thinly
soy sauce to serve (optional)
Sauce
1 ½ tbsp tamarind puree
300g thread fine noodles (ready to use)
3 tbsp dark brown sugar 2 tbsp fish sauce
3 spring onions, chopped
1 ½ tbsp oyster sauce
2 eggs, lightly whisked
90g peanut butter
Mix the sauce ingredients together in a bowl. Heat 1 tbsp oil in a large heavy based pan or wok over a high heat. Pour the whisked egg in and swirl to cover the base like a pancake. Cook for 1 minute until set. Remove and allow to cool before slicing into thin strips. Add the remaining 1 tbsp oil and add the garlic and onion, cook for 30 seconds. Add the pork confit, pepper and carrots and cook for 3 minutes. Add the bean sprouts, spring onions, noodles and the sauce. Toss gently for about 2 minutes. Serve immediately, sprinkled with the toasted peanuts, strips of egg pancake and the coriander. Squeeze over the lime juice to taste before eating. Add soy sauce if required.
