As a Royal Warrant Holder, we are overjoyed to celebrate Her Majesty the Queen’s 70-year reign, and in honour of Her Majesty and The Platinum Jubilee, we have created a wonderful and unique Platinum Jubilee Ham. Our Jubilee Ham is truly moreish, having been expertly cured by our master curers and dressed by hand with a Coronation & Rosemary Glaze. To go alongside this delectable ham, we are very proud to also introduce our Platinum Jubilee Carving Set. Our team has been working closely with an artisan British knifemaker, Savernake, to create a limited edition handcrafted carving set using the highest quality British Steel and stained English Walnut, with the Platinum Jubilee Emblem delicately engraved into the blade. You will also be pleased to know that our team has been working tirelessly to prepare for BBQ Season and with the weather warming up, we are delighted share our new BBQ Selections including a host of new goodies for you to sample. From Garlic Butter Chicken Thighs and Spicy Chicken Wings to Honey & Chilli Sausages and Bacon Burgers, there is something for everyone to enjoy. For those true British Beef lovers, we have sourced the most succulent Grass Fed Aberdeen Angus Beef Rib which is expertly butchered and slow cooked for 12 hours by our team until the meat has reached its
peak tenderness and is ready to fall off the bone. This is the perfect centrepiece for any BBQ and has become a favourite of the Dukeshill Team. This boneless joint is the very best part of the lamb leg with the shank, chump and bone removed. Delicious simply roasted ‘Low n Slow’ or barbecued, it cooks beautifully and quickly. The joint comes as a minimum 600g joint and serves 2-3. For a delicious meal try marinating in fresh herbs, sea salt and olive oil before cooking.

Trimmed Rack of Lamb Few cuts of meat hit the sweet spot between looking impressive with extreme ease of cooking as this handsome Rack of Lamb. Cut from the prime part of the loin, our butchers trim this to avoid any waste and to maximise the visual appeal. The fat plays a crucial role in keeping it moist and succulent when cooked (we recommend browning it quickly in a pan, then roast until still just pink in the middle), and also in carrying the wonderful flavour. Panna Cotta meaning "cooked cream" in Italian is an Italian dessert which hails from the Piedmont region of Italy. It's basically sweetened cooked cream. Ours is made using organic double cream, sugar and vanilla with a little gelatine which results in a loose set. This fresh, spring salad is the perfect combination of rich, indulgent steak, on a bed of crisp, tangy salad. For the dresssing add the ingredients to a food processor and blitz. Stop just before the dressing is smooth, leaving some texture in it. Cooking the perfect sirloin is subjective to each person’s tastes, however here are some of our top tips to help you along the way: •

Make sure steak is at room temperature before putting into the pan. We recommend salting beforehand, adding pepper after cooking. In terms of cooking oil, the best option is an oil with a high smoking point such as vegetable oil. Leave the steak to rest for at least 5 minutes before slicing and eating!
The final step is assembling the salad. Mix the salad ingredients together in a bowl with a drizzle of the chimichurri dressing. Divide equally onto plates, top with the sliced steak and then generously top with the remaining dressing.
