IN THE SUMMER OF 1999, Chef Jim Denevan came up with the idea of setting a table on a farm and inviting diners to an open-air meal in celebration of the farmer and the gifts of the land. He called it Outstanding in the Field, and soon he took his novel idea on the road, traveling to farms across America and around the world. Outstanding in the Field is a roving culinary adventure – a restaurant without walls that pops up, then moves on when the meal is over. In the 15 years since Denevan did his first farm feast in Santa Cruz, California, Outstanding in the Field has staged table-tofarm dinners in all 50 states across the US and visited nine countries. OITF has set its long iconic table at farms and urban gardens, ranches and orchards, on mountain tops and in sea caves from Walla Walla to Washington DC, Maine to Memphis, Decatur to Dallas. Occasionally the table is set indoors in a rustic barn or greenhouse. Wherever the location, the consistent theme of an Outstanding event is to honor the people whose good work brings nourishment to the table. Outstanding in the Field's communal table inspires conversation about food, community and the meaning of place. Ingredients for the meal are almost all local (sometimes sourced within inches of your chair!) and generally prepared by a celebrated chef of the region. After a tour of the host site, diners take their seats alongside farmers, cheesemakers, ranchers, foragers, fisherfolk, brewers, winemakers and other local food artisans, coming together in delicious communion to break bread and share stories.
