All of Tampa Bay has been buzzing with the grand opening on 1-11-11 of the spectacular new Salvador Dali Museum. The iconic venue on the downtown St. Petersburg waterfront is stunning inside and out, from the 900-panel glass “enigma” that appears to grow organically from the front of the building, to the interior spiral staircase designed to resemble a strand of DNA. Home to the increasingly popular South by Southwest (March) and Austin City Limits (September) music festivals, it’s no wonder that Austin, Texas, is known as the Live Music Capital of the World. But the city has so much more to offer, throughout the year! Don’t get me wrong—music is a passion that lives within most everyone in Austin, and there are some fantastic venues in which to see a show. On a recent visit, we were fortunate to catch one at the Paramount Theatre. Reminiscent of the Tampa Theatre—in fact, they were both designed by John Eberson—the Paramount features a balcony and has been in the heart of Austin’s arts scene since 1915. Music isn’t the only art form alive and well in the city, though. Austin boasts a number of fine museums, including the Blanton Museum of Art on the University of Texas—Austin campus. The museum houses the largest university-owned art collection in the country! Also at the UTAustin campus is the Harry Ransom Center. Fans of “Gone With the Wind” will delight in seeing the original cos-
The Lyndon B. Johnson Library & Museum—also found on the UT Austin campus is the Lyndon B. Johnson Library & Museum—is a fantastic, up-close look at the 36th U.S. president’s era. The replica of Johnson’s oval office is quite impressive, and there’s a lovely exhibit dedicated to Lady Bird Johnson. On the other side of town, the Umlauf Sculpture Garden is a hidden gem of more than 130 sculptures by Charles Umlauf, who is known for his artwork depicting animals, families, religious figures and mythological creatures.
The architecture in Austin is incredibly impressive as well. Walking through the downtown streets, you can just imagine stagecoaches waiting outside the stone buildings built in the late 1800s. It’s as if the Old West still thrives amongst the modern buildings that have sprung up. One incredible edifice is the Texas State Capitol itself. Completed in 1888, the capitol building was the tallest in the country—surpassing even the U.S. capitol in Washington, D.C.—until an addition was recently built onto the Louisiana State Capitol. Take a guided tour of the capitol for a deeper look at the majestic building. During the tour, our guide talked about the founding and the history of the city and the building, as well as how the State House and Senate operate. Walking into the chambers, it’s amazing to see the more than 180 antique desks dating from 1889 that the congressmen and congresswomen still use today, if modernized. Another impressive building in downtown Austin is the historic Driskill Hotel (ca. 1886), built by cattle baron Jesse

Lincoln Driskill. Even if you don’t stay at the Driskill, take a walk through its impressive lobby and maybe even sip a drink in the bar—it’s a real architectural gem! But it’s not only its arts scene that Austin is known for. Ask anyone their favorite restaurant in Austin, and you’re sure to get a diverse list. For Tex-Mex, the locals suggested Chuy’s, and they weren’t wrong! The Gospel Brunch at Threadgill’s was a hit, too, and the 30-minute drive and subsequent 30-minute wait at The Salt Lick BBQ was definitely worth it. Take note—the Salt Lick is cash only and BYOB, so stock your cooler before you get there! Austinites head outdoors every chance they get, and it’s no wonder! Ten miles of hiking and bike trails circumnavigate Lady Bird Lake in downtown Austin, and the area is a favorite among locals. Take a walk around the lake, and pay tribute to Stevie Ray Vaughan at his lakeside memorial. Just down the road is Zilker Park (home of the aforementioned Austin City Limits music festival), 361 acres of playgrounds, picnic grounds, the Zilker Zephyr train (great for kids!) and a disc golf course, not to mention Barton Springs Pool. In the summertime, cool off at the spring-fed pool—temperature averages 68 degrees year round! About 20 minutes outside of town is the Lady Bird Johnson Wildflower Center. Here, native plants and flowers bloom throughout the year, and it’s a chance to witness the beauty deep in the heart of Texas. After all the exploring you’re bound to do in Austin, take some time to relax and pamper yourself. One of the best places in the city to do just that is The Spa at Four Seasons. Book a massage and prepare to melt away. These are just a few of the reasons that Austin is a great vacation destination throughout the year! dR

TIPS FOR VISITING AUSTIN Direct flights to New Orleans are available on Southwest Airlines; other major carriers also fly into the city, with a layover. Even if staying in the very pedestrian-friendly downtown area, rent a car to get to the outlying areas. Make the most of your visit to Austin and stay downtown. Transform Your Outdoor Space Today’s high-end fire designs rarely use wood. Instead, they require a gas or electric line hook-up, or in the case of the new EcoSmart™ products, they use denatured ethanol, a liquid fuel that has a clean-burning, non-toxic, smokeless flame that doesn’t need to be vented. pan it sits in to double as an ice bucket when it’s too hot for a fire. “Fire pits are definitely a new trend for the backyard,” says Doug Driscoll of Just Grillin, whose custom pieces tie into a gas or electric line and are part of an entire outdoor living plan. He starts with brick or pre-cast structures molded into just about any size or style, from octagons, squares and ovals, to rectangles and kidney shapes. Then he adds an aesthetic finish like tile, travertine, glass, stucco, stone, river rocks, even sea shells, or for one client, bottle caps the family collected on vacation in France. Driscoll likes using high-tech programmable electronics in his designs, such as a remote control system that allows the client to light the fire with the push of a button. The fire pit can even be tied into the pool’s electronic system for the ultimate in convenience and comfort, he says. Imagine walking in the door after a stressful day and within seconds, the pool lights are glowing, the fire is lit and the surround sound comes on. Welcome home. dR

The holiday decorations were barely put away before red hearts and boxes of candy appeared on the store shelves – Valentine’s Day is just around the corner. How do you define romance?

? recently asked some friends what they find to be the most romantic spots in the Tampa Bay area; their answers included the point on Davis Island and a proposal; a favorite restaurant from a honeymoon on Siesta Key; the top deck of the parking garage at Tampa International Airport at sunset; canoeing the Hillsborough River; and walking along Bayshore Boulevard.
Following are a few ideas to get you in the mood. For many (yours truly, included!), spending the day at a spa is the definition of luxury. Why not make it a spa day for two? sprinkling of holidays falls in February and March. No time to steal away to New Orleans, Acapulco or even South Beach? Don’t despair. Capture a little fun and adventure right here in town. Here are a few ideas to consider.
FEBRUARY 14th VALENTINE’S DAY Valentine’s Day falls on a Monday so stretch it out and add the weekends on either end. Start with the quirky “Wild at Heart,” a tour and progressive dinner at Lowry Park Zoo, where you’ll learn about courtship rituals and other “over-21 secrets” related to the local residents – who knew that Siamang apes serenade one another with elaborate songs or that scorpions dance? Then on Valentine’s Day, make a reservation at Clearwater’s Café Ponte, an elegant restaurant with white-tablecloth ambience and European flair. The following weekend, surprise her with tickets to the Straz Center for a steamy exhibition of tango in a performance of “Tango Fire.” Afterwards, check into Ybor’s historic Don Vincente Inn, built in 1895 as a private home for the “Don” himself.
FEBRUARY 21st PRESIDENT’S DAY Launch a double kayak from Clam Bayou Nature Park in Gulfport and spend the day paddling through the 160-acre mangrove estuary, courtesy of Kurt Zuelsdorf and Kayak Nature Adventures. Look for dolphins, egrets, otters, osprey and rays, while you bask in the silence and enjoy a little exercise and fresh air. MARCH 8th MARDI GRAS With its Scottish heritage, Dunedin might seem like an unlikely destination for a wild and crazy celebration of Fat Tuesday, but the town goes all out with a downtown street party and parade. From five to eleven p.m., make your way through food booths set up by local restaurants, artists selling crafts, and a beer garden, while listening to the bluesy vibe of New Orleans music. Catch beads tossed from the cast of characters in the parade, including the City of Dunedin Pipe Band and a female impersonator named queen of the Mardi Gras. Having too much fun to go home? Stay at the quaint waterfront Beso Del Sol Resort and spend the next day recuperating at nearby Caladessi Island, rated one of the top beaches in the nation.
MARCH 17th ST. PATRICK’S DAY Here in downtown Tampa, not far from the University of Tampa, is a quaint one-story white cottage with an authentic thatched roof that looks like it might have been plucked straight from the hills of Ireland. Step inside and it might sound like it too, from the brogue of the staff to the traditional ballads sung by Irish musicians. On St. Paddy’s Day, the music, the beer and the food at Four Green Fields start at noon and go until the wee hours. Fish and chips, corned beef and cabbage and Shepherd’s Pie are on the menu. Wash it down with pints of Harp, Guinness, Smithwick’s and Kilkenny. The pub showcases the history of Ireland, but has an interesting local history, too. lorida’s beautiful this time of year and it is the perfect season to add some fun to your exercise routine with an outdoor fitness class. Throughout Tampa Bay, boot camp classes are inspiring women and men to get up early, get outside the gym, and get going in a decidedly down-to-earth kind of way. The classes are packed with basic exercises such as jumping jacks, squats, and running drills as well as training focused on building balance and flexibility. The groups are usually small, with fewer than ten people, and are frequently held in the early morning at a local park. The overall experience is completely different from traditional indoor- gym classes, argue the instructors. Sarah Liakos, owner of Sarah’s Boot Camp with classes in both Clearwater and Brandon, explains, “for one thing, we get to be outside, right on the water overlooking the bridges that lead to Clearwater Beach.” Beyond awesome Florida vistas, every workout is different and often focuses on functional fitness, a training style where athletes use their own body weight to build strength, flexibility and balance. Most importantly, she says, members become accountable to each other, supporting and pushing each other to do their best. Many boot camps are run by professional personal trainers and most instructors test each new participant for body fat percentages, muscle strength levels and endurance capacity, says Marilyn Moss, owner of Kick it Up Boot Camp in Tampa. Monthly progress tests such as timed one mile runs, keep people pumped up and excited, she says. Jim Horning, owner of Tampa Boot Camp, says members enjoy personalized attention. He, and the other trainers, modifies exercises for individual participants. “Everyone knows (in my class) that they are not going to mess everyone up if they can’t do something. That said, these are hard classes, with instructors continuously pushing individuals from one drill to another. Yet between the individualized goal plans, personalized exercises, and diverse training, boot camps are much like hiring a personal trainer, except without the contracts,

BEHIND CLOSED DOORS An Intro to the Annual Historic Hyde Park Home Tour

O
n Saturday, March 5, the doors will open to some of the most beautiful homes found within Historic Hyde Park through the 9th Annual Historic Hyde Park Home Tour. For those of us who stroll the canopied streets, wondering what characteristics and nuances lie behind those doors, it will be a chance to peek inside and be inspired. “We have a mix of historic (from 1919) and newer homes on this year’s tour, as well as some houses that were newly renovated,” said Kathy Durdin, co-chair of the 9th Annual Historic Hyde Park Home Tour, sponsored by the Historic Hyde Park Neighborhood Association (HHPNA). “One of the homeowners did most of the work himself on one of the newer homes, and you can tell it was obviously a labor of love.” The tour, themed “Then and Now,” was developed to showcase how the Hyde Park neighborhood has evolved, and to share how historic homes can be modernized for 21st century living while maintaining their charm. “Generally, in the older homes found in Hyde Park, you may not realize just how spacious they can be, especially those that have been renovated,” said Durdin. Leaving from Bern’s Steak House (1209 S. Howard Ave., Tampa), the selfguided tour meanders through Old Hyde Park, stopping at homes on Morrison, Albany, Dekle and Rome, as well as Marjory and Jetton, which have not been featured on previous home tours. “There are some interesting nuances in this year’s tour,” said Durdin. She suggests
people on the tour pay attention to “particular gems within certain houses,” including stained glass elements, original wood inlays and one home that features a kitchen with an overlooking loft! “Hopefully, my home can serve as an inspiration to others as past home tours have inspired and motivated me by sharing and revealing the rewards of inconvenience, time and of course, money in the restoration and renovation of our wonderful neighborhood’s historic homes,” said homeowner Jerry Stanley, Jr., whose home is featured on the tour. In addition to the inspiring homes, one of the most unique stops on this year’s tour is a backyard garden on Marjorie. “I think it’s one of those hidden treas-
ures you don’t typically see,” said Durdin. Funds raised through tickets sold for the home tour are dedicated to various enhancements of cultural assets in the neighborhood. This year’s signature project is the restoration of the original “school house” doors of the Old Hyde Park Art Center, built in 1899. ucked just south of the city of Clearwater and north of Belleair Bluffs on the Intracoastal Waterway is Belleair, a three-squaremile area with a small town feel within the bustling Bay Area metropolis. With a population of just 4,057, there’s a true sense of community. “I think what attracts people is that Belleair is its own city and governs itself, it’s not a subdivision of a bigger entity,” said Martha Thorn, realtor, The Thorn Collection (Coldwell Banker). Thorn should know; she’s lived in the area for 35 years. “People who move here see the community spirit in Belleair,” continued Thorn. Indeed, Belleair is its own entity, with its own mayor and commissioners who govern the city through a councilmanager government. “We’re a quiet, small town with access to everything that is important to people,” said Lenore Sabala, realtor, Prudential Tropical Realty. “We’re less than 30 minutes to Tampa International Airport and 20 minutes to the St. Pete airport, not to mention all of the local attractions, including the beaches on Sand Key.” Sabala also notes the accessibility to fine dining and boutique shopping in the area. She has lived in Belleair for 33 years.
“I wouldn’t live anywhere else,” she said. Belleair is not a recent find, however. There’s a rich history in the area, thanks to railroad tycoon Henry Plant. More than 100 years ago, Plant selected the area to build a resort for his family, friends and business associates from the north to enjoy during the winter months. His railroad brought guests—oftentimes in their private railcars—directly to the
Belleview Biltmore Hotel and Country Club. Guests from an era gone by included the Studebakers, the duPonts, the Vanderbilts and Babe Ruth, to name a few. Upon arrival, Plant’s guests enjoyed playing golf on the country’s first course, six holes built in 1897. The original course grew over time, and a second course was added to the grounds. In the 1940s, the Belleview Biltmore was completely self-sufficient and housed its own post office (with the manager acting as postmaster), and police and fire departments that also served the Town of Belleair. The hotel, which is currently closed for renovations and expected to reopen in January 2012 for its 115th anniversary, remains one of the largest wooden structures in the world. It is also one of the three grand dame hotels in the area, in addition to the Don CeSar Beach Resort in St. Pete Beach and the Vinoy Resort in downtown St. Pete. Throughout all of the changes to the hotel itself, the country club has thrived. Today, nearly 1,100 families are members of the Belleair Country Club.
Members’ ages range from 18—100 years old, literally, with an average age of about 61. The club is open to members and guests of members, and the occasional reciprocity for those visiting from out of town who belong to other clubs. “As far as clubs go, it’s very unusual to find one with two golf courses (of the three found in Belleair)—one the first golf course in the county, a marina, spa, pool, fitness center, croquet, tennis and fine dining, all in one place and on the Gulf,” said Ed Shaunessy, general manager, Belleair Country Club. “All of the amenities are in one place, and we have a team of talented staff members that is second to none, setting us apart from other country clubs” he continued. Shaunessy also notes that many club members have multiple homes, and estimates that 50 percent of its members are in the area 50 percent of the year. “Our members don’t have to be local,” said Shaunessy. “We’re worth the drive.” As far as the golf courses found at Belleair Country Club, today’s layouts are essentially the same as when Donald

J. Ross designed them in 1915, though the sequence of holes has changed over the years. The club’s two golf courses are certainly a draw for those passionate about the game, but all of the club’s amenities are utilized by its members. “There’s really something for the entire family at Belleair Country Club,” said Shaunessy. “We have a very friendly women’s program, and 150 of our members are a part of the Women’s Golf Association.” That sense of family is evident throughout the city of Belleair. Sabala and Thorn tout the city’s recently built recreation area that offers activities for everyone, “a real plus for families.” Both Thorn and Sabala also note that Belleair’s sense of community is so strong that families tend to stay in the area. “Traditionally in Belleair, people rarely leave. They move up from house to house, children move back,” explained Thorn. “Very few people leave the area totally.” Sabala noted that home prices are staying fairly consistent, even in this difficult economic climate and housing market. “I’ve seen the market go up and down, but our market in Belleair—the prices are not fluctuating as they are in other areas,” added Sabala. ave Tampa Bay’s home values hit the bottom? No one can say for sure, but the roller coaster ride that the local market has been enduring is still operating. The sales of homes at the high end, according to Brian D. Holtz of Holtz Appraisal Services, Inc., in Bel Air, now reflect that price correction. People are assessing their needs versus their wants more than they did previously. “Think of this as a reality check,” adds Holtz, who has been appraising homes in the Tampa Bay area for over twenty-five years. “Five years ago people were chasing prices, not values.” The median price for a single-family home has fallen almost in half since their 2005 peak, according to Florida Realtors, a statewide industry association. Much depends, however, on the price level of the homes. The super-luxury category of homes over $2 million is holding its own. Scarce land supply and lower inventory levels in the most desirable areas are the reasons. Owners have held prices because there was less speculative buying at this price range. Madeline Olster of Prudential Tropical Real Estate in St Petersburg predicts that there are deals to be had and that there is a phenomenal time to buy. She points to the luxury category of $750,000 to $2 million homes, where values are to be found in prime water-oriented condos or club communities. It still is about location. Beachfront condominium developments, many with inland golf amenities are still selling to buyers with several million dollars to spend on a second home. Martha Thorn of Coldwell Banker in Belleair Bluffs finds more motivated sellers who are “pricing it right.” They are looking at serious offers, instead of sitting and waiting for better times.” As a result, homes in the Tampa Bay area have more
realistic prices. Houses that are priced too high are sitting on the market for longer periods of time; their owners may still have an inflated vision of what their home is really worth.
Sell, Sell, Sell If you are a seller, make sure you connect with the right broker. You should look for one whom you feel comfortable with and who also has the knowledge and experience you require. She or he should be constantly monitoring the real estate market and should readily know the comparative prices in your neighborhood or community. This should help you determine what your house is really worth. Avoid an agent who pitches an unrealistic home price says Thorn. Select a broker who embraces the new online technology as one of the many tools to get your home sold. Think of this professional as a neutral voice when it comes to assessing how to present your home to potential buyers. If you want a second opinion, arrange a home inspection, and then fix problems, such as deferred repairs, that could thwart the sale. You may not be the best judge of how your home looks, as you probably have a strong attachment to the place. Olster suggests to her clients that they think of it as “their house, not their home.” It puts decisions to fix it up in a less emotional level. Other suggestions from agents include hiring a stager, who will refresh the house, or a professional organizer, who will help remove clutter that you may not be able to see.
Buy, Buy, Buy Conversely, if you are a buyer, you should not rush right into the market without guidance, even if you feel you know the market. Holtz strongly recommends that you “be patient, be selective, and be edu-

cated.” This advice is echoed by Thorn, who advocates you really get to know the market by sorting through listings. This should give you a feel for what price ranges various neighborhoods are valued. While the internet can help you cull through what’s on the market, it may also help you determine what your requirements are when explaining to an agent. Again, seek out a real estate broker who is knowledgeable and experienced, reminds Olster. This person should really understand your needs, your price range, and how you plan to live in the house. Is it a second home or a primary home? Will you want to entertain a lot? How do you entertain? What are your storage requirements, if this is to be a primary residence? Actually drive by the neighborhood before you fall in love with the “perfect” house. Buying a house based on your emotional reaction to it may blind you to a bad financial decision. Remember it is an investment first, and then a house. Check out not only property taxes, utilities and homeowner association fees, but budget for potential property tax increases, repairs and maintenance. Be sure to ask your real estate professional for tax records, sales histories and prices of comparables. That is homes in the area similar to the one you are interested in. And get an unbiased third—party opinion from a home inspector. If he does find problems, you can use it as a bargaining tool for lowering the price of the home. Better to find out upfront what you may have to face in repairs than discover it later when you are living there. The time is perfect right now to dip your toes into the Tampa Bay real estate market. The prices have stabilized which is good news for the buyer and seller alike. dR

But beyond the private pool cabanas and world-class spa, patrons are raving about the work of one man: Brad Gillespie, Executive Chef of the resort. You could say that Chef Gillespie was destined to be a leader in the culinary world. He grew up in the restaurant his father owned in Alberta, washing dishes and helping out where he could starting at age ten. After graduating with honors from Southern Alberta Institute of Technology, Chef Gillespie took a job at an affluent private club and later made his way into the Hyatt chain, starting in Calgary, moving on to Chicago, then Connecticut and finally Florida. “The experience to come down here

and open a brand-new hotel is amazing,” Chef Gillespie explains. “It was so much work, but it was so worth it at the same time.” And the shining jewel of the resort is SHOR American Seafood Grill, serving delightful, coastal-American dishes during breakfast, lunch and dinner. Inside or out on the patio, guests gush over the oversized windows, giving everyone a breathtaking view of the Gulf waters. “It doesn’t matter how stressful or crazy my day is, I can go anywhere in the restaurant and see the Gulf of Mexico, and it’s amazing,” Chef Gillespie says. While those beautiful views may attract patrons at first, it’s the quality of the food that keeps them coming back time and time again. SHOR uses the finest ingredients, including local produce whenever available. Fish selections, like the delicious grouper, come right out of the gulf and served to guests within 24 hours. “My food philosophy is a simple one,” Chef Gillespie explains. “You don’t have to get fancy just for the sake of being fancy. Do really good food and do it really well, but don’t get complicated with it.” And one trip to SHOR is likely to be different from the next trip as this restaurant revamps its menu a few times a year. And the entire kitchen staff is always exploring new ingredients and new combinations to keep things fresh and exciting. Sometimes it’s a new wine or vinegar that inspires a whole new dish to the menu. But if you were sitting at the table with Chef Gillespie, he would have the perfect order in mind. For him, that

would consist of the American Blue Crab Cakes, one of the most popular items on the menu and made in the traditional Maryland way. His black-grouper entrée with roasted chorizo potatoes would be served with a tropical salsa. Finally, he would finish it off with the Strawberry and Orange Trifle, a light and very-Florida dessert. More than the menu, Chef Gillespie has a vision for the SHOR for many years to come. Pan-Seared Black Grouper 7 ounces black-grouper fillet 4 ounces black lentils 1/2 ounce tomato concasse 1/4 ounce tarragon, chopped 1/2 ounce zucchini squash, diced 1/2 ounce red onion, diced
1 1/2 ounces tarragon vinegar 1 Tablespoon salt and pepper 4 green zucchini slices 2 ounces preserved lemons, sliced Cook lentils in seasoned water until cooked. Remove and allow to cool. Add in diced tomato, tarragon, squash and red onion. Season with vinegar, salt and pepper. Place mix in the bottom of a pasta bowl. Slice green zucchini length-wise on a slicer (keep very thin). Season with vinegar, salt and paper. Place ribbons on top of lentil salad. Season grouper with salt and pepper, and pan-sear. Cook to an internal temperature of 140°F. Place cooked fish on top of zucchini ribbons. Remove lemon confit from sugar syrup, and place on top of the fish.

4 ounces hearts of palm, cut battonett 4 each fresh orange segments 1/4 avocado, cut into 3 slices 4 ounces sspring mix, refreshed 2 ounces passion fruit-mango dressing 1 teaspoon or too taste salt and black pepper In a stainless steel bowl, add all ingredients minus the greens and toss with
the dressing until evenly coated and seasoned to taste. Once the ingredients in step one have been seasoned, add neatly to the center of the bowl. Then add the refreshed greens to the same stainless steel bowl with remaining dressing and place on top of the other ingredients. Garnish the salad with the remaining mangos left over in the mixing bowl from the dressing.

The rage in LA and London, Popup Dining is coming to Tampa

hef Jeannie Pierola has always kept Tampa Bay foodies guessing. When Pierola parted ways with Bern’s and Sidebern’s in South Tampa nine years ago, local patrons waited to see what this culinary master would teach them next. After some consulting work around the world, Pierola is ready to reveal her next delicacy, a new restaurant concept featuring world cuisine that she is testing it out around the Bay area in a popup-dining format.

Popup dining is a culinary trend in which chefs take up temporary residency in existing restaurants or buildings for a short period of time. Patrons find out about the latest location by word of mouth and being in-the-know. The idea came to Pierola after some worldly reading. “I read about popup dining in LA and in London, and I thought I want to cook, and I want to get this food in front of the guests again,” Pierola explains. In that thought, KitchenBar was born. But instead of opening KitchenBar as a fullfledge restaurant right out of the door,

Pierola is hosting popup-dining experiences around the Bay area, keeping guests guessing where the next location might be. And KitchenBar’s Facebook page shows just how excited food fans are to find out the exclusive details. “The response from the first one was pretty overwhelming,” Pierola gushes. “It was awesome and it is why I love Tampa so much.” With Tampa’s warm reception, Pierola is excited to host the next temporary stint. Find out where the next popup event will be held by visiting KitchenBar’s Facebook page. But for Pierola, it is more about the pursuit of world cuisine, the passion of sharing her love of food with others and expanding her culinary repertoire that has her most excited about KitchenBar. She describes the restaurant’s concept as every restaurant and the anti-restaurant all in one. The menu is designed to be dialed up or dialed down with small plates to major meals. It’s a restaurant that will have movement and flow from the menu to the layout. So, when will the concept turn into a permanent establishment? Pierola is looking to her foodie fans for the answer. “The guests will dictate that,” Pierola says. “They will tell us when it is right.” And just like that, Pierola’s face relaxes and you can see the joy she has for sharing her cuisine with Tampa once again. Her passion seems to be leading her from one successful career venture to the next. “Chefs become chefs because they love food and they love to share that love,” Pierola explains. “It is just amazing
what happens at a table with great food and great wine, shared with great company, and I love being part of that.” So, until KitchenBar has a place to call home, Tampa Bay diners will just have to keep guessing and keep tracking down Pierola’s delicious worldly cuisine from one stop to the next. Black Mole Braised Duck Leg Ingredients 2–3 ounces sesame oil 2 whole shallots, mined 1 whole small yellow onion, diced 5 cloves garlic, minced 3 whole tomatoes, rough chopped 6 ounces mulato chilies, dried 3 ounces pasilla chilies, dried 1 ounce guajillo chilies, dried 1 chipotle chile, dried 2 fresh corn tortillas 1/3 cup pecans 1/3 cup peanuts 1/3 cup almonds 2 tablespoons tahini paste 1 tablespoon peanut butter 1/4 teaspoon ground clove 1 teaspoon black pepper 1/2 teaspoon cinnamon 1 teaspoon oregano, minced 1/2 teaspoon thyme, minced 1/3 cup raisins 1/2 banana 1 1/2 quarts chicken stock
Serves 10-12 Directions Preheat oven to 350 degrees. Toss shal-
lots, onions, garlic and tomatoes in sesame oil in large bowl. Place on baking sheet and roast in oven until caramelized and fragrant. Remove from oven and set aside. Stem and seed all the chilies. Set up a deep pot with enough oil to fry the chilies in and place over medium-high heat. When oil is hot, fry chilies in batches until crisp. Drain well on paper towels. Set aside. Char the tortillas on an open flame until dark. When cool, tear into pieces and add to the chilies. Working in batches, toast each nut individually in oven on baking sheets until fragrant. Combine all toasted nuts with chile mixture. In a large, heavy bottom pot over medium heat, combine all spices and toast until fragrant; add tomato mixture, chile nut mixture and raisins. Stir to com-
bine, add chicken stock and bring to a boil. Stir in tahini, peanut butter and banana. Slowly puree in batches in blender. Season to taste with salt and pepper. Return mole to a large Dutch oven, bring to a simmer and nestle dugs legs in mole. Cover with foil and return to oven. Let cool three hours or until duck is falling off bone. Once cooked, remove legs from sauce and let cool enough to handle. Remove meat from bone and shred back into mole. Keep warm. In a large mixing bowl, toss together the jicama, pineapple, figs, scallions, cilantro, lime juice, olive oil and season to taste with salt and pepper. Heat your sopes or corn tortillas, and serve filled with duck mole and top with salad. dR

Apple Onion Pork Tenderloin Ingredients 1 pork tenderloin cleaned and divided in half 1 red onion, thinly sliced 2 Granny Smith apples, peeled, seeded and cut into 8 wedges 1/2 cup scallions, finely chopped 2 cups apple cider 1/2 cup apple sauce 1 1/4 cups sauterne wine 1/2 teaspoon cayenne pepper 2 tablespoons unsalted butter (cut into small cubes) 1/2 cup chicken stock 8 whole cloves 2 tablespoons brown sugar 1/4 cup all purpose seasoning 1 tablespoon black cracked pepper 1 tablespoon vegetable oil Sauce Combine apple cider, 1 cup of wine, cloves, cayenne pepper, brown sugar and chicken stock in 1 1/2 quart sauce pan, cook on medium high heat and reduce by half. Remove from heat and set aside. Preparation Coat pork tenderloin well with all purpose seasoning and press cracked pepper into meat until it is thoroughly coated. Pre-heat small skillet on medium heat (flame not touching pan). When hot,

add vegetable oil to coat pan bottom. Place pork into pan and slowly turn meat as it browns. When browned nicely, remove from pan and place in broiler on 350 degrees and set ten inches from heat. Cook until center is 150 degrees, remove from broiler and let rest. Finish sauce by removing cloves from liquid, return pan to heat and whisk briskly. When mixture just begins to steam (not boil) add apple sauce and brown sugar. Remove from heat and whisk vigorously to blend completely. Using same skillet you cooked the pork in, add 2 tablespoons butter, apples and red onion slices and return to heat. Slowly stir ingredients until apples and onions begin to brown, remove from heat, add 1/4 cup wine and stir well to deglaze the pan. Take pork tenderloins and slice in half-inch medallions. Pool sauce on serving plate and place slices of pork so they slightly overlap each other. Arrange apple and onion mixture around meat. Feel free to pour remaining liquid from skillet over the apples and onion. Serves 2
Visiting the French Quarter for Mardi Gras festivities may not be in your immediate future but foods from that region, or just inspired by France, are always a treat to eat. Cajun cuisine is a specialty of NOLA Cafe in Tampa and one of the best places to enjoy the flavors and wines of France has to be St. Pete Brasserie, or its smaller sibling La Petite Brasserie. Executive Chef J. Ward oversees kitchens at both the downtown St. Petersburg Brasserie and its recently opened Clearwater site. Both focus on French wines and food but add flair while keeping the prices quite fair, including a prix fixed menu available from 4-7 p.m. daily. “My vision is to make classic French cuisine but with a modern twist,” said Ward, who was influenced by global cuisine while growing up overseas. “It’s more of a European-style menu that features foods using seasonal ingredients.” Popular dishes include the Confit of Duck and Rack of Lamb and dishes made from organic, grass fed, hormonefree beef.
Ingredients 4 duck breasts (Scored without going into the meat) Gastrique 1 cup dried cherries 1/3 habanero or Scotch Bonnet pepper (or one whole jalapeno) 12 ounces chicken stock or broth 1 teaspoons cinnamon 1 teaspoons dark chocolate 1 cup granulated sugar 1 cup apple cider vinegar Sauce Combine vinegar and sugar and heat on medium until sugar is dissolved. Add cherries and spices and cook for about five minutes. Add stock and cook for about thirty minutes until sauce looks rich and has thickened a bit. Puree sauce, strain through fine mesh strainer and season with salt to taste. If sauce is too thin cook until it thickens. Rosti 1 celery root shredded 1 Yukon Gold potato shredded 2 ounces mix of red and green peppers and red onion, finely diced 4 ounces grated parmesan 1 ounces bacon, thinly sliced 1 clove garlic, finely diced 1 sprig fresh thyme 1 egg Flour Salt to taste Preparation Combine all ingredients, except the flour, then add the flour as necessary until the mixture has a paste-like consistency and stays together fairly well. Heat a large pan or skillet with vegetable oil. Take the mixture and make into balls slightly smaller than a baseball, then push down gently into discs about an inch thick (don’t pack too tight.) Carefully place rosti’s in pan (make sure it is hot but not smoking.) Move the rosti’s gently to ensure they do not stick. Sear both sides until golden brown and www.duPontREGISTRY.com/TampaBay 79

But the ultimate creative way for couples to interactively dine has to be over a hot pot of fondue at a Melting Pot restaurant such as its Tampa, Oldsmar, St. Petersburg and Sarasota sites. Shane Schaibly, director of food and beverage for The Melting Pot Restaurants, introduces new dishes, like the wildly popular Bananas Foster Fondue that first debuted in 2008, to Tampa Bay diners before making it a permanent part of the menu at more than 140 Melting Pots throughout North America. “Fondue is such a fun, convivial dish that’s perfect for an evening out when you want to spend time together and not just jump in and out of a restaurant to
transfer to a greased sheet pan. Finish in oven at 320 degrees for around twenty to thirty minutes or until center is cooked though. These may be done in advance and reheated for service. Duck Breast Score each breast, season with salt and black pepper and place in cold pan fat side down with a touch of oil. Sear until fat is crispy, flip, sear other side quickly and finish in oven at 400 degrees for about four to five minutes for medium rare. Bananas Foster Ingredients 4 ounces white chocolate, chopped into small pieces 4 ounces caramel 1/2 banana, peeled and thinly sliced 1 teaspoon banana liqueur 1 teaspoon spiced rum Preparation Melt the chocolate either in the top portion of a double boiler stirring constantly OR in the microwave in thirty to forty-five second increments, stirring after each one, being careful not to scorch the chocolate especially in the corners. Place banana slices in the bottom of fondue bowl. After the chocolate is melted completely, pour into a fondue pot. Blend the caramel with the warm chocolate on top of bananas. OPERATION FEEDING FREEDOM VIII OSI RESTAURANT PARTNERS, LLC
Five local volunteers from Operation Feeding Freedom VIII, sponsored by OSI Restaurant Partners, LLC, have returned from their trip to Afghanistan and Kyrgyzstan. A total of 28 volunteers carried out OSI’s annual mission to bring a taste of home to U.S. and Coalition Forces.This year’s trip represented the largest feeding of the troops to date by OSI—serving 38,000 troops 88,000 pounds of food—and involved volunteers from all five of the Company’s brands: Outback Steakhouse, Carrabba’s Italian Grill, Bonefish Grill, Fleming’s Prime Steakhouse & Wine Bar, and Roy’s Hawaiian Fusion Cuisine. dR
RIBBON CUTTING OF NEW STATE-OF-THE-ART MERCEDES-BENZ OF TAMPA’S FACILITY Mayor Pam Iorio cut the ribbon at the opening of the new state-of-the-art Mercedes Benz of Tampa's new facility on January 14. Mercedes-Benz of Tampa provides employment opportunities for individuals with autism by partnering with Art of Autism. Artistas Café, a coffee bar in the facility, run by the nonprofit Art for Autism will operate during dealership hours and staffed by three full-time artistas (on the Autism Spectrum) provides on-thejob training and a way to learn and practice social skills. Art of Autism's Coffee curator Michael Glisson, praises Mercedes-Benz of Tampa's general manager Frank Cuteri for his vision, which gives back to the community as well as takes care of his customers. On Thursday, Dec. 9, 2010, at the Hyatt Regency Tampa a record-breaking 600 women (and a few brave men) turned out to support the Shimberg Breast Center at St. Joseph’s Women’s Hospital. The runway featured wives of former Tampa Bay Buccaneers players and other local celebrities modeling the latest fashion trends courtesy of Georgette's and The Shoe Salon. The fashion show, chaired by Georgette and Tashia Diaz and emceed by Gayle Sierens, raised nearly $40,000 through sponsorships and live and silent auctions.
THE CHILDREN’S CANCER CENTER BENEFITS FROM SALE OF HANDPAINTED TREE ORNAMENTS Tampa Robb & Stucky Interiors held a very special holiday event benefiting The Children's Cancer Center, a non-profit organization dedicated to providing children who have cancer or chronic blood disorders with the necessary assistance to cope with their life-threatening illnesses. F
ueled by what McLaren has learned on the Formula 1 circuit, the MP4-12C will be the brand’s fourth road car but the first to be designed and built entirely in-house. Bruce McLaren built the one-off M6 GT in 1968 before his death in 1970, his company became infamous after its million-dollar F1 supercar became the world’s fastest production automobile in 1998, and then it helped Mercedes-Benz build the $500,000 SLR in the early 2000s. But it is only now that it has decided to venture out with its own line of exotic car offerings. The McLaren MP4-12C is the first in a three-model car range that is designed to compete with Ferrari and Lamborghini. It hopes to sway buyers from those well-known names with its own notoriety and with performance numbers that will surpass that of its competitors.

To do just that, McLaren started with an extremely lightweight and incredibly strong carbon tub that wraps around and protects the passengers. The McLaren-built V-8 engine utilizes a pair of turbochargers to create Ferrari 458beating power. McLaren says the MP4-12C can accelerate zeroto-60 mph in less than three seconds and on to 124 mph in less than 10 seconds. Impressive numbers that will give any manufacturer in the sports car arena shivers. A seven-speed dualclutch transmission transfers that horsepower to the rear wheels. Through a Proactive Chassis Control system, the owner can dial-in suspension tuning to one of three settings: Normal, Sport, and Track. A McLaren-developed Brake Steer function decelerates certain wheels—like the inside rear wheel in corners—to help reduce understeer and increase the car’s overall handling prowess.
In all, the new MP4-12C has the McLaren name, styling, and specs to put fear in the hearts of some well-known Italian names. McLaren hopes to sell 1,000 cars annually as it rapidly establishes a dealer network. dR

The New Dalí Museum All eyes are on St. Petersburg, Florida with the grand opening of the new Dali Museum on January 11, 2011. A surreal procession departed from the original Dalí museum at 1000 Third Street South and concluded at the new museum at One Dalí Boulevard with Spanish royalty in attendance. The new museum doubled in size and Tress Eveleth
now the amazing works of art by Salvador Dalí finally have a home that allow for more of his work to be on display than ever. The museum also features a theater, classroom and student gallery. The new Dalí will also offer Café Gala—named in honor of Salvador Dali’s wife Gala—a casual eatery offering visitors a café light fare menu with a Spanish theme. Tapas and small plates of appetizers will be a specialty, along with traditional pastries, soups (gazpacho and caldo gallego), salads and sandwiches. Kahwa local roasted coffees will be served including espresso, cappuccino and macchiato. A flan-like dessert—Crema Catalana—tops the pastry selections, along with Tiramisu and Mantecados (Spanish cookies). A select offering of beer and wine will be available, featuring the Café’s signature Cava Rosado (Spanish rosé champagne). Café Gala is designed to create an educational as well as culinary experience by introducing visitors to Spanish food and history—perfect stop for a light breakfast, lunch or mid-afternoon break for coffee and pastries. Visitors do not need to purchase a ticket to visit the Café or the museum store. Diners may choose to eat inside or out on the AvantGarden patio, making a visit to Café Gala a destination in itself. In the lobby is a 1933 Rolls-Royce—a tribute to Dalí’s Rainy Taxi. This version is complete with panels installed in the car’s windows, attached to a water pump to simulate a downpour, much like the effect of the actual shower’s in the original version. This Raining Rolls-Royce is truly a surreal addition to the first floor.
