This Valentine’s Day, Cupid Takes Aim and Gets a Bull’s-Eye! By Susan B. Barnes
The holiday decorations were barely put away before red hearts and boxes of candy appeared on the store shelves – Valentine’s Day is just around the corner. How do you define romance?

? recently asked some friends what they find to be the most romantic spots in the Tampa Bay area; their answers included the point on Davis Island and a proposal; a favorite restaurant from a honeymoon on Siesta Key; the top deck of the parking garage at Tampa International Airport at sunset; canoeing the Hillsborough River; and walking along Bayshore Boulevard.
Following are a few ideas to get you in the mood. For many (yours truly, included!) spending the day at a spa is the definition of luxury. Why not make it a spa day for two? Qualifying for a Mortgage Loan The three Cs determine if you are qualified and the interest rate you are quoted: CREDIT REPUTATION—everything from the borrower’s credit score and history of mortgage or credit delinquencies, to the status of credit card accounts. CAPACITY—includes monthly debt payment to income ratio, cash reserves, whether you’re salaried or self-employed and the type of loan product – fixed or adjustable rate, along with 30-year, 20-year or 15-year terms. COLLATERAL—takes into consideration the amount of down payment, property type, such as single family home, condo or multi-family, and property use.
Some real estate experts are predicting that 2012 will be a year of opportunity for homebuyers. But is that true? As banks develop stricter rules on credit eligibility, many people are finding it more difficult to qualify for a loan. According to the Florida Realtors Association, trouble securing a mortgage was one of the prime factors in limiting a customer from purchasing a new home. And what about refinancing? Even with interest rates at record lows, does it really make sense to refinance? In these challenging financial times, it can be difficult to know which direction to turn for advice on home mortgages. According to Cathy Pirtle, vice president and sales manager for SunTrust

Mortgage, the outlook for the housing market in 2012 is definitely a little more positive. With interest rates as low as they are and real estate both available and affordably priced, Pirtle says the timing
might be excellent for qualified individuals to purchase a home. But in today’s economy, who is qualified? It all comes down to “the three Cs,”
says Pirtle. That’s credit reputation, capacity and collateral. All three factors not only determine if you’re qualified for the loan, but also the interest rate you are quoted. Credit reputation refers to everything from the borrower’s credit score and history of mortgage or credit delinquencies, to the status of credit card accounts. Capacity includes monthly debt payment to income ratio, cash reserves, whether you’re salaried or self-employed and the type of loan product – fixed or adjustable rate, along with 30-year, 20-year or 15year terms. Collateral takes into consideration the amount of down payment, property type, such as single family home, condo or multi-family, and property use. The type of loan you are seeking will also play a role in any discussion about qualification. Conventional loans, FHA loans and VA loans all have their own variables in requirements, says Pirtle. “There is no one rule of thumb.” When it comes to refinancing, there
are just as many factors to consider. It is never a one-size fits-all approach. “We work one on one with people to review their current mortgage and help them determine the true benefit to refinancing,” says Pirtle. That includes looking at how long the homeowner expects to retain the home, whether there is an opportunity to reduce the term of the loan and where they can get the most significant savings. If refinancing doesn’t make sense, Pirtle suggests the option of making an extra payment each year or setting up a bi-weekly payment plan if the lender offers that type of program. When Lisa Langer, of BB&T Private Wealth Management, advises her clients, she looks at the big picture, taking into consideration all of their financial needs, not just their current mortgage situation. For example, she says, a client may be paying over four percent interest on their mortgage right now, but it may not make sense to refinance, depending on their personal and professional goals. And for
some people, it might make more sense not to refinance, but to liquidate some of their investment holdings and pay off the mortgage altogether. But before any of those decisions are made, she advises clients to consider issues ranging from how much cash will be required at the closing, to what the appreciation of the home will be over the period of the loan versus the interest they could earn by investing that money instead. Cash flow is one of the biggest determining factors, says Langer. “Someone who is very entrepreneurial may need access to immediate cash for new business ventures that come up,” says Langer. “Maintaining a mortgage on their home may be more practical rather than paying it off because having available cash is more important to them.” The bottom line is every financial situation and every client is unique, says Langer. Before making any decision on refinancing or obtaining a new mortgage consult a trusted advisor. dR

Even though Americans are keenly aware that insurance plays an important role in asset protection, people are often willing to sacrifice important coverage to save a few dollars in premium. When buying insurance, it’s easy to see it as an intangible purchase with a need-based value. Everyone feels like situations such as property damage and health issues could never happen to them, and, unfortunately, this could not be further from the truth. To make sure any additional coverage needed in a portfolio is purchased, everyone should also complete an assessment of his or her lifestyle. “For example, if a client has domestic staff working at his or her home, then adding employment practices liability insurance to the portfolio is a must,” said Parker. “If sued for harassment or wrongful termination, this coverage will be helpful in fighting or paying those claims.” Someone on a charitable board or
association should also be cognizant of liability circumstances. A board officer can be held liable for any issues that may arise as a result of a decision the board makes. While these organizations typically have liability coverage, they often fall short in coverage and leave the volunteer officers open for litigation. Many umbrella policies offer directors and officers coverage for those types of exposures, and they will protect the individual not the organization. All insurance carriers are not the same and neither are the agents that represent them. By Melinda Tam Orlando There is a good chance that if you don’t have a membership at the Tampa Club, you might not have had the pleasure of dining on Chef Joseph Van Bemmel’s delicious cuisine. Well, make one of your New Year’s resolutions to get that membership, because these dishes can’t be missed. “It’s all about flavor,” Bemmel says. “It’s not about appearances; it’s about using the correct ingredients within the ethnicity of the food.” And Bemmel knows what he’s talking about, considering he has been at the Tampa Club for 22 years and counting.

But it doesn’t stop there. His food passion dates back to his childhood, when he used to cook with his dad in his home state of Wyoming. “My dad was really my inspiration to cook, but I didn’t know that until later,” Bemmel explains. After attending culinary school, making his way to Florida and landing a few culinary positions, Bemmel found a home at the Tampa Club, and has been making mouthwatering creations every since. “You can move from place to place, and new ideas and new ways will be presented to you,” Bemmel says. “But
what’s more difficult is to continue to reinvent yourself, and that is what I have done. You have to keep things interesting and fresh, and learn from the people around you. I draw from my team as much as they draw from me. Food is really an evolution of your time and experience.” Menu staples include crab cakes, filets, Chilean sea bass and fresh grouper. But with 30 to 40 percent of the menu changing every three to four months to stay aligned with the seasons, members are constantly able to explore something new. “We are constantly evolving the cuisine, but the menu is only the base of what we do,” Bemmel says. “In a privateclub environment, we do wine dinners, themed events and more.” And even with all the raving reviews of the Tampa Club’s fine food, Bemmel stays quite humble and grounded, thanks not only to his down-to-earth personality but also to his wife and children. “I don’t like being in the limelight too much,“ Bemmel says. “I just want to be the guy that did a great job for the members of his club.” But even a chef needs to have some downtime. When Bemmel isn’t at the club, he is home relaxing with his family … out of the kitchen.
“After working in the kitchen all day, that’s the last place I want to be when I get home. But I do cook for special occasions. During the holidays, I like to surprise my family. We have had kangaroo and ostrich to name a few,” Bemmel boasts. “I even had Grandma in the kitchen rolling sushi for the first time one year.” And with that, this chef makes it into an elite club of his own: culinary perfection.
Grouper Monte Carlo Ingredients 15 6-oz portions of fresh gulf grouper 8 tbsp clarified butter Kosher salt to taste Black pepper to taste 2 tbsp extra virgin olive oil 2 cups fresh shiitake mushrooms, sliced
2 cups fresh vine-ripe tomatoes, diced ½ pound jumbo lump crabmeat 1 cup scallions, finely sliced 1 pound beurre blanc Directions Sear grouper in clarified butter, and reserve for service. Add olive oil to a very hot pan, and sauté mushrooms. Gently toss sautéed mushrooms with crabmeat, tomatoes, scallions and beurre blanc just before serving. Top the grouper liberally with Monte Carlo sauce, and serve hot.
Monte Carlo Sauce Ingredients 1 lemon, Juice and zest 3 shallots, minced 1 bay leaf 1 cup dry white wine
1/4 cup white-wine vinegar 1 pound unsalted butter, cut into half inch cubes Kosher salt and white pepper to taste Directions Put the first five ingredients in nonreactive saucepot, and reduce slowly until almost dry. Using a wire whisk, incorporate butter over medium heat until well-emulsified. Season and hold for serving at 160 degrees. Serves 15

Its motto “to serve the best quality product at a good value” has not changed since Frenchy’s first opened its doors in 1981. The only changes Frenchy’s has undergone have been those of expansion. Canadian-born Mike “Frenchy” Preston, who got his nickname from his middle school friends who often heard him speaking French with his mother, has turned Frenchy’s into an empire all its own with four restaurants along Clearwater Beach--Frenchy’s Original Cafe, Frenchy’s Saltwater Cafe, Frenchy’s Rockaway Grill, and Frenchy’s South Beach Cafe--along Clearwater Beach as well as Frenchy’s Off the Hook Gift Shop, Frenchy’s Seafood Co., Frenchy’s Stone Crab Company, and Frenchy’s Oasis Motel.

“All the grouper and other fish served in our four restaurants are line caught from our own fleet of fishing boats, delivered fresh from the boats at our dock to the fish house at Frenchy’s Seafood Company,” Restaurant Operations Manager Alan Ebbert says. “Each daily catch is then prepped for same day delivery to each of the restaurants for use in that day’s service to our patrons. Although the seafood comes in off the same boats, according to Ebbert, as far as the four restaurants go, “the décor and ambiance of each Frenchy’s is different. The idea is to offer a little variety in the menu at each too.” Many of the “original” menu items, such as the Smoked Fish Spread, Boiled Shrimp served Greek style, Seafood Gumbo, and, of course, the famous Super Grouper Sandwich made with special seasonings and batter, are still featured at Frenchy’s Original Cafe making it a favorite for the locals 30 years running.
Frenchy’s Saltwater Cafe, originator of the Grouper Reuben Sandwich, offers a family-friendly and dog-friendly atmosphere with dining options inside as well as outside on a wraparound porch. Octopus dishes, specialty salads, Buffalo Shrimp, and Conch Fritters, a traditional Island-style recipe served with a homemade Bahamian sauce that Frenchy created, are a few of the specialities listed on Saltwater’s menu. “It’s across the street from the docks at our Seafood Company, so boaters love to tie up and come over for a bite,” Ebbert says. Overlooking the Gulf of Mexico with open-air beachfront dining, Frenchy’s Rockaway Grill is the largest Frenchy’s venue. “Rockaway serves up a variety of fresh seafood, their famous She Crab Soup and other Floribbean-style dishes, along with the best Rum Runners on the beach,” Ebbert says. “It’s an energetic atmosphere that features live music daily
and has a lounge area with games and a pool table.” Also offering beautiful views of the Gulf--it extends right up to Beach Walk--is Frenchy’s South Beach Cafe. As the newest addition to Frenchy’s restaurant chain, South Beach Cafe boasts a Key West bistro vibe and is sure to be another success for Frenchy. As the Frenchy brand has evolved to include more restaurants, a seafood company, a gift shop, and even a motel, so have the menu options. However, Ebbert says the staple items that Frenchy first created for the Original Cafe remain precise, consistent, and still on the menu. Among the original recipes is the Seafood Gumbo which Frenchy wanted to share with you.
Frenchy's Cafe Seafood Gumbo 1/4 lb butter 1 medium onion, chopped 1 large green pepper, chopped 4 ribs celery, chopped 1/8 cup celery, chopped (leaves only) 1 green onion, chopped 1–1/2 tbsp minced garlic 1/2 cup flour 1/2 tbsp oregano 1/2 tbsp basil 1/2 tbsp thyme 1–1/2 tsp cayenne 1 bay leaf 1–1/2 tbsp paprika 1/2 tsp black pepper 3-1/4 tbsp gumbo file 1/2 cup burgundy wine
6–1/4 cups canned tomatoes, diced and with juice 1–1/4 cups water 1–1/2 ozs ham base 2 cups frozen okra 2 cups frozen corn 1/2 lb crabmeat 1/2 lb shrimp (110-130) 1/2 lb scallops 1/2 lb grouper Melt butter. Add all chopped veggies and sauté for 10 minutes. Add all seasonings and flour; sauté for 15 minutes. Add burgundy wine. Add diced tomatoes, water. Bring to boil, turn down to simmer. Add seafood—simmer for 1–1/2 hours. Let stand for 10 minutes. Remove bay leaf before serving. Serves 10–12

Columbia Restaurant’s Red Sangria 1 bottle Spanish red wine 1/4 cup Spanish brandy 2 tablespoons lemon juice 2 tablespoons orange juice 1 tablespoon sugar 1 cup club soda 1 sliced lemon 1 sliced orange 2-3 whole cherries Mix all ingredients in a large pitcher. Stir with a wooden spoon until well mixed. Pour into large wine glasses. Garnish with orange slices and cherries. Add ice to pitcher. Serves 4.

n the third Saturday of every month, the duPont REGISTRY™
hosts Cars and Coffee at its headquarters in St. Petersburg from 7 a.m. to 9 a.m. But for the month of November, the leading monthly auto show in the Tampa Bay area relocated to Innisbrook Golf Resort and Spa in Palm Harbor for the first annual Weekend of Exotic Luxuries—a 2-day charity event composed of Cars and Coffee, a gala dinner with a silent auction, and a golf tournament, all to benefit the Ronald McDonald House Charities of Tampa Bay.
“We had been partnering with Innisbrook Resort for advertising for several months, and discussed the possibility of holding an event that would raise some funds for a local charity,” Tom duPont, publisher and chairman of duPont Publishing, Inc., said. “We thought of Ronald McDonald House and determined that it would be advantageous for everyone involved, and so it came to be.” The Concours d’Elegance-styled event attracted 850 people on the morning and early afternoon of Saturday, November 19 to see 230 cars of different years, makes and models parked on the 17th hole of the North Course. Additionally, 50 Corvettes were parked for show in an adjacent parking lot, and 200 cars
were on display at Edinburgh Hall. Many Tampa Bay area luxury automotive enterprises, including Ambassador Limousine, PJ’s Auto World Classics, Ferrari of Tampa Bay, Dimmitt Automotive Group, Reeves Import Motorcars, Lamborghini Sarasota, and Elder Automotive, displayed prized automobiles that are currently for sale. Of all the cars at the show, the biggest hit was the Mercedes-Benz SLS Roadster—the first one to hit U.S. soil that duPont Publishing, Inc. CEO Steve Chapman won at auction during the Boca Raton Concours d’Elegance. The No. 40 and No. 43 Richard Petty race cars, provided by Todd Werner, were popular among classic and race car enthusiasts, and the Fisker Karma, a hybrid luxury sports sedan brought by Elder Automotive, was a crowd-pleaser. But the car that stole the show was a 1955 Olds Starfire Red Convertible owned by Cars and Coffee regular Gale McFarland of Seminole. McFarland’s classic car won Best in Class for the 1950-1959 class, as well as Best in Show—not a bad day for McFarland and his Starfire, as it was the first time he entered this car into a show. “It [The Starfire] has been sitting in storage for 25 years,” McFarland said. “I’ve got 26 other cars, and we—my wife and I—only got around to restoring it four years ago. It was a ground-up restoration that we finished about a year ago, and it’s only gone 75 miles since then.” Awards were given to the top three cars from each class, which was based on what decade the car was made in, as well as to the top three Ferraris, Corvettes, Hondas, and Mustangs. The Publisher’s Choice was awarded to a 1992 Acura NSX, which had 148,000 miles on it. In addition to the car show, a gala dinner with a silent auction and a golf tournament was held. The golf tournament has been a charity event for the Ronald McDonald House for 23 years, but Cars and Coffee and the dinner were new to the weekend. “I was excited about adding a car component to the golf tournament we’ve been
doing so successfully for 23 years,” Janice Davis, the executive director and CEO of the Ronald McDonald House of Tampa Bay, said. “The expanded concept brought in new people passionate about cars and passionate about kids. CLEARWATER BEACH UNCORKED AT THE HYATT REGENCY CLEARWATER BEACH RESORT & SPA The inaugural Clearwater Beach Uncorked—A Food & Wine Adventure, made its spectacular debut at the über seductive Urban Splash VIP Party poolside at the Hyatt Regency Clearwater Beach Resort & Spa. The combination of urban cool meets South Beach chic rocked the party with impromptu performances by NYC street musicians, break dancers, graffiti painted models, prickly pear or blackberry cabernet designer Bellini cocktails, sinfully delicious nibbles courtesy of SHOR, and the ultimate ‘wall of fame’ where guests signed in on a staged graffiti wall. This event was unlike anything the Bay area has ever seen.

Cadillac The success of Cadillac’s entry-level CTS sedan and its sporty -V performance package led to the development of the sleek twodoor CTS Coupe and cargo-ready CTS Sport Wagon and their respective -V counterparts. Like the sedan that started it all, the CTS-V Coupe features a larger grille to double the consumption of air and a raised hood to fit a supercharger to then feed that air into the engine. The resulting 556 hp and 551 lb-ft of torque from the 6.2-liter V8 equals a blazingly fast acceleration time of just 3.9 seconds. Power is available at every prod of the gas pedal, making the swapping of gears in the six-speed manual or optional six-speed automatic a mild delay during the acceleration rush. We have tested all three of the CTS-V
variants, and the coupe seems to handle the corners the best. This must be due in part to the coupe’s nearly one-inch wider rear track, lighter weight, and standard Magnetic Ride Control system, which includes electronic sensors at all four wheels to literally adjust its damping for the road conditions every millisecond. We would also consider the coupe to be the best-looking CTS. From the sharp rake of the rear window, modest fender flares over the back wheels, flush door handles, and a trunk-lid light that comes to a sharp peak, the CTS-V Coupe’s styling is both cutting edge and classy; it can be mesmerizing to the eyes. The best part is the optional Recaro performance seats, which did a fantastic job of making us comfortable and holding us tight. One particularly tasteful option is the Saffron color accents, which provides a contrasting color on the seats’ insert and stitching on the center console, seats, and door trim. Pierre-Yves Cousteau, youngest son of legendary Jacques-Yves Cousteau, was flown by Air France last month for his first St. Pete visit. "Tradewinds Beach Resort was an excellent place to stay and enjoy the view of the Gulf of Mexico," remarked Cousteau as he launched his nonprofit global platform for marine conservation in the U.S. "Divers and snorkelers are the only people in the world who witness the state of the oceans on a daily basis. Cousteau Divers is a worldwide community of ocean lovers united to become active protectors of marine life.” The whirlwind week included a Dali Museum press conference hosted by Director Hank Hine and private tour with Yann Weymouth, HOK Architects. The host committee, Weymouth, Peter Betzer, St. Pete Downtown Partnership; Howard Rutherford, Pier Aquarium; and Maryann Ferenc, Mise en Place, and SONO Cafe, organized meetings for Cousteau with community leaders and VIPs, and hosted two receptions. Cousteau is looking to establish the first Cousteau Divers Center for North and South America in St. Pete. dR
