P.S. Unfortunately in our last issue the holiday recipe for Cranberry Walnut Pie from Luna omitted the amount of cranberries required. While we regret the error, we were absolutely overwhelmed by the number of emails and calls from readers. Just to set the record straight..........it's four cups. P.S.S. The first person to email me at tldupont@dupontregistry.com with the number of acres that compose Necker Island will win a free one-year subscription to this magazine.

ISLAND OF DREAMS By Susan B. Barnes Have you ever dreamt of living like a media mogul, jet setting across the world to exotic destinations? Dining in world-class restaurants? Enjoying the privacy and seclusion often afforded to the elite? Is this a dream of yours? It certainly is of mine! But it doesn’t have to be a dream. Necker Island—Sir Richard Branson’s private island paradise—is 74 acres of pure heaven in the British Virgin Islands and can be yours, either exclusively or on an individual basis. If you’re really looking to wow your crowd, hire the entire island—accommodations can be made for between 16 and 28 people. Or, experience the island during Celebration Weeks, when individual rooms can be booked by singles or couples to enjoy the island “house party” style. However you choose to visit Necker Island, the staff will work with you to best accommodate you and your group. The six Bali Houses are built in authen-

32 www.duPontREGISTRY.com/TampaBay

Necker Island tic Balinese style, three of which sit atop a cliff in order to maximize stunning views, sea breezes and the sounds of the ocean. Another overlooks the beach, and the last two are in the middle of the island, overlooking a large, private pool. Temple House was built to Richard Branson’s specifications and features a freshwater pool. The house sits in the middle of the island with incredible panoramic views. Nearby is Love Temple, a private and amazing room with a covered but open air bathroom. A truly unique option is one of the four main cabins aboard the Necker Belle, a 105-foot luxury catamaran: the master suite, two double VIP guest cabins, and a double guest cabin. All cabins are fully air conditioned and have the latest in entertainment technology. After you’ve settled in, it’s time to explore the island, and there’s much to see

and do! As you can imagine, the island paradise offers plenty of ways to enjoy the Caribbean Sea. Necker Island is a water sports enthusiast’s dream come true, offering myriad adventures, including kite-surfing, sailing, windsurfing, waterskiing, kayaking, power boat trips, snorkeling and more. Even if you’re not an avid waterman or waterwoman, give it a go and try something new! On-site, highly qualified instructors are ready to show you the ropes near Main Beach. The island also features four pools: the freeform infinity pool at Pool Pavilion in Main Beach with a swim-up bar; a freshwater infinity pool at Temple House; a private pool at Bali Lo & Bali Buah; and a plunge pool at Bali Hi, Bali Cliff and Bali Beach. Plenty to choose from! Back on solid ground, play tennis under the lights in the Main Beach area. If

you’re looking to improve your game or perfect your serve, a pro tennis coach is more than willing and able to take you to the next level. And if you forget your racket, equipment is available and ready for your use. Or, if you choose, take a twohour walk around the island, taking in the various flowers and wildlife. When it comes to dining on Necker Island, you certainly won’t go hungry! Whether you choose formal or informal,

inside or out, themed or traditional, the island’s chefs are ready to prepare your favorites, from a Sunday roast to lobster and caviar! To wash it all down, choose from a wide variety of international wines, beers, spirits and house champagne is ready for the pour. You’re encouraged to make yourself at home on-island— cheers! Dreams really do come true on Necker Island. Don’t wait to make yours a reality! dR

When you go: Ready to make your jet setting dreams reality? Getting to Necker Island can take some time, but it’s well worth it! The closest international airport is on Virgin Tortola, a 35-minute flight from San Juan. AirTran and JetBlue fly direct from Tampa to San Juan. The most popular routes to the BVI within the Caribbean are via San Juan, Antigua and St. Thomas. Necker Island is an approximate 30minute boat ride from Tortola, or 10 minutes from Virgin Gorda. Yachts are also able to anchor off Necker Island. Necker Island www.neckerisland.virgin.com

WOW FACTOR

Improve Your Home’s Curb Appeal By Erika Vidal Holmes

Curb appeal. You know it when you see it. It’s that idyllic home that makes you go, “Wow, I wish my house looked like that,” or “I’d like to live there,” even though you’ve never set foot inside. That’s the beauty of curb appeal—it makes a big impression. “A

house should look inviting when you’re just standing in front of it looking at it from the street,” says Kim Levell, owner of Exterior Design and Decorating. “It should have that cozy warmth before you even walk inside.” She believes the trick to achieving stop-

them-in-their-tracks curb appeal is proper planning and research. Whether you’re looking to get the full asking price for your home or you just want to give the neighbors a run for their money, here are several ways to give your curb appeal a boost.

Plant the seed.

recommends travertine. “It’ll truly add value to the home,” Ryan says. “If you make a $5,000 investment in travertine, you’re getting a true monetary value there.” According to Sachs, one of the benefits of using natural stone like travertine is that during the scorching Florida summers, your driveway and pool decks will stay relatively cool, rather than burning your feet. If you’re looking for a simple, weekend do-it-yourself project for a

quick curb-appeal boost, design a simple walkway made of pavers. Sachs says it’s a relatively simple project most homeowners can take on themselves.

The first rule of curb appeal is quality landscaping. Levell suggests starting with your home’s structure and location and using that as a jumping off point for design inspiration. “Let’s say (a house) has Mediterranean bones, then I might decide we’re going to take a real authentic, traditional Mediterranean feel.” Her goal when designing a landscape? Getting people driving by to slow down and look. According to Levell, many people are opting for classic designs, versus more elaborate, high-maintenance tropical themes because they’re easier to maintain and tend to stand the test of time. The best thing to do, she advises, is to find inspiration in magazines and online so you can articulate what you’re looking for.

Walk this way. The path to your front door should be intuitive, well-defined and inviting. Ideally, the walkway should extend from the front sidewalk to the front door, rather than from the driveway, says Levell. Choose a material that complements your home and the general landscape design. For added flair, frame the walkway with greenery, large stones, fencing, flowers or potted plants. Light the way. For a dramatic kick to your curb appeal, explore the limitless possibilities of outdoor lighting. Nick Schriver, owner of Decorating Elves, says that if you’re going to choose one element to highlight, make it

the entryway. “Whether it’s a porch, portico or columns, it’s always very warm and welcoming to have a lit entryway,” he says. “It’s really the number one thing on the list when it comes to outdoor lighting.” From there, you may want to decide to highlight key architectural features

such as columns, windows or a decorative exterior wall. You can also choose to focus on your landscaping by spotlighting palm trees, oak trees and other vertical landscape elements. For that “postcard effect,” as Schriver likes to call it, make sure you add a little light on the ground

to show off key lower features such as elaborate flower beds or pavers and other walking surfaces. And here’s a tip: If you have steps on your walkway, add lights— not just for aesthetics, but also for safety. Lastly, for a truly low-maintenance lighting design, opt for an automated system

that turns on when it gets dark and shuts off as day breaks.

Open-and-shut case. A new or updated front door can do wonders for your curb appeal and it can increase resale value. “It’s an invitation into your home,” says Ed Bailey, owner of Artistic Doors, a Bay-area company specializing in custom entryways. “It’s the very first thing people see, and it makes a statement about your life.” Bailey recommends choosing a door style that reflects the architectural structure of your home, whether it’s traditional, contemporary or more ornate. A leaded beveled art glass door is a classic, timeless choice, he says. Sidelight panels and glass door

inserts can also add a unique, more decorative accent to your entryway. If a brand new door isn’t in your budget, consider refinishing and painting it for a pop of color. Go bold with bright red or yellow, or choose a white or wood finish for a more classic look. Mark and Dianna Leek of DoorPro entryways, specializing in exterior doors and entryways, offer another a simple solution for homeowners looking for a simple update on a budget: If you have a fiberglass or steel door that’s in good condition, you may be able to add glass panels for a quick, affordable upgrade that can completely change the look of your entryway. Wrought iron is another trend that’s coming back in full force

according to these 25-year industry veterans.

Park it. Speaking of doors, don’t neglect your garage door(s) and driveway. Most garages are unavoidable, so put the same amount of thought into its appearance as you would your front door and entryway. If you want to minimize your garage, paint it so it blends in with the home and let any lighting scheme focus on the entryway. Consider adding architectural features to play the garage up or revamp your driveway with a unique paver design. And don’t forget the inside of your garage—yep, this can impact your curb appeal, too. If it’s been a while since you used your garage to actually park your vehicle, you may want to revisit your organization system. Freestanding shelving, peg boards and storage bins can help consolidate items and make things easier to find.

All in the details. Curb appeal is all in the details. Little things like a new mailbox, updated hardware and house numbers, paint touch-ups and potted plants can go a long way. Dress your door up with a seasonal wreath or add a few hanging plants and replace any outdated light fixtures. Most importantly, maintain your home exterior with regular lawn maintenance and general upkeep such as pressure washing, raking and sweeping any leaves or other dirt off walkways and driveways. dR

SOPHISTICATED SOFAS Your big screen TV needs a friend. What about a new sofa? By Gale Steves

A LARGER THAN LIFE EXPERIENCE The Samsung Electronics America’s introduction of the best-in-class ES9000 ramps up the demand for extra-large screen TVs. The 75-inch TV features a built-in camera, usable for video calling applications such as Skype, hidden within the top of the bezel, rendering it invisible and disabled when not in use; when in use, the built-in camera pops up. The ES9000 also comes with four pairs of 3D glasses, ensuring the whole family can enjoy an immersive experience. $9,999. www.samsung.com

ringing a large screen TV into your home starts the domino theory of redecorating. Suddenly the nearby upholstery doesn’t seem to work. The sofa needs replacing or no longer fits in balance with the new home entertainment area. If you have not been in the market for a sofa or even a sectional, there are few pointers to ponder. Michael Bush of Home Resource in Sarasota suggests, “The successful sofa purchase involves making sure it answers the comfort, and functionality needs as well as the color, and design of the piece. All these elements need to be considered.” Patti Newman of PJ Newman Fine Furniture feels, “The first consideration in choosing a sofa is the size. Most people take the width into consideration but forget that the depth is equally important. The sofa needs to be in ‘scale and balance’ within the space. Know the dimensions your space can handle before you start looking.” Sherri Johns of Annabelle’s Fine Furniture in Odessa adds further thought. “You should carefully measure your space, allowing 10-12 feet from the TV to the back of the sofa for the placement of your seating. Make sure you have 36 inches around the sofa for clear passage.” “Color and type of material can affect the long-term wear of your new sofa,” says Sophia Ivanov of Scan Design, Tampa. “White is perfect for Florida but consider a darker tone or a neutral shade or grey/beige if you are sharing the space with children or four-legged friends.” This good advice should help you make a better decision in your sofa purchase. Then sit back and enjoy your new TV!

CREATING BACKYARD APPEAL By Erika Vidal Holmes Backyard appeal can be just as important as curb appeal, and with spring and summer on the horizon, it’s not too early to start envisioning and planning for your backyard’s makeover. Neal Fiske of TriplePoint Design Build, says a successful outdoor living addition is all about “integrating with the architecture and structure of the house. Another crucial factor? Thinking about how you realistically plan to use the space. Think about whether you want a pool for exercise or relaxation. If you’re considering an outdoor kitchen—a major trend right now— think about its placement. It should be adjacent to a gathering space, similar to your indoor kitchen. “You’ve got to match selections, shape, style and architecture,

Neal says, “so it looks like it was part of the original design. BRING IN THE SUNSHINE. A Floridahome staple, a sunroom allows you to enjoy the Florida sunshine while escaping the heat, bugs and occasional cold. HomePro, a premier custom sunroom builder since 1998, offers patio enclosures, solariums, screen rooms and more. The familyowned and operated business designs a range of sunrooms and styles designed to meet your needs, whether you’re looking for a traditional, energy-efďŹ cient sunroom, a more contemporary space with high ceilings or a detached structure for a “home away from home.â€? Sunrooms add value, bring the outside in

and add extra living space to your home. SIMPLE TO ELABORATE HARDSCAPES. The right hardscape design can instantly add character and value to your home. Whether you want a small patio or an elaborate one that extends to a pool deck, designing your space depends on how you plan to use it. If you entertain a lot and enjoy cooking, consider an outdoor kitchen or large screened-in patio. When selecting your material, the experts at Marble Florida, a local company that distributes natural stone from Turkey, recommend natural stone, which is weatherresistant, durable, adds value and is easy to maintain. If you’re planning a pool deck, Marble Florida owner Ali Uyar recom-

mends tumbled pavers and copings or ones with a brushed finish for safety reasons—products with a polished or honed surface can become slippery when wet, posing a slip-and-fall danger to you and your family. Marble Florida suggests using darker color natural stones for your pool decks, which are easy to keep clean and maintain and won’t cause a glare. MAKE IT YOUR PLAYGROUND. Adults aren’t the only ones who enjoy outdoor spaces. A playset will make your backyard the most popular house in the neighborhood. It also gives your kids a great excuse to take a break from the video games and electronics and get some fresh air. Todd Boulanger, owner of Play Tampa Bay, says the first step to selecting a playset is knowing how much space you have to work with. Next is evaluating the number of kids you have and what their interests are. “A family with one or two kids needs a different playset than someone with five kids,” says Todd. Typically, “boys just want to climb; they don’t want swing sets. They want fire poles and ladders. The girls always want a swing,” he says. Other considerations to take into account when researching sets are weight limit, mainte-

nance requirements and the durability of the material. Also, make sure there’s enough space around the set so kids aren’t sliding into walls, fences or trees. Another important recommendation? “Buy something your kids can grow into,” Todd says. If you have young kids, start with a basic starter set, then add onto it as the years go by and kids’ interests and capabilities change. A clubhouse addition could make a great holiday gift from Grandma and Grandpa. A SWIMMING IDEA. Pools are great for relaxing, exercising and entertaining. They also add beauty to any outdoor living space. With pools, options are endless … literally. From endless pools and lazy-river pools to waterfall pools, spools, eco pools and rock pools, local companies such as Phillips Pool and Landscape, Natural Springs Pools and Spas or Landmark Pools can bring your vision of a pool or elaborate pool deck to fruition. Hot trends right now include lazy-river pools and no-edge pools, according to Pat O’Connell of Landmark Pools. Gas and water features and fire pits are also on the rise, says Pat, as are pools with a beach entry. Experts estimate a pool will add roughly $60 to your monthly

electric bill, so be sure to take that into account when budgeting. When looking for a pool builder, be sure to check with MyFloridaLicense.com and the Better Business Bureau. Also, ask friends and neighbors for referrals—there’s nothing stronger than word of mouth. BRING IT ALL TOGETHER. Nothing completes an outdoor living space like the right landscape design. Browse magazines and the internet for inspiration, then hit the nursery and stock up on supplies. Wesley Chapel Nursery and Landscape Supply Co. acts as a “one stop landscaping shop.” Choose from a wide selection of plants, landscape stones, water features, pond supplies and accessories, and more than 50 varieties and one million pounds of landscape rock, flagstone and boulders. The latest landscaping trends include vegetable and fruit gardens, fragrant flowers and nostalgic throwback flowers such as hydrangeas, lavender and Russian sage. Natural materials such as stone and rocks are also playing a large role in today’s landscaping trends. dR

RE/MAX Metro Reaching Tampa Bay

Tampa Bay’s real estate market is making a strong come back. 2013 has already begun with a roar! There has been no slow start to the New Year. Sellers are receiving multiple offers on homes that are in good condition and priced correctly, and as a result, sellers are often enjoying sales prices above their asking price. The Pinellas Realtor Organization statistics show that single-family homes sales from November 2011 to November 2012 increased by 34.6 percent, and the total average sales price increased by 10.06 percent. However, single-family active listings are down 30.75 percent. The lack of inventory is pushing the average sales price higher, but Realtors are struggling to find properties for their clients. As the market shifts from a buyer’s market, buyers are at risk of losing out on their perfect home if they waste time submitting their offer, or “low-ball” a property that is priced correctly. Buyers and sellers will have an edge over their competition by working with an experienced, professional Realtor, serving as their advocate in navigating this rapidly changing market. RE/MAX Metro, with three offices in the Tampa Bay area, showed a strong 30-percent increase in closed volume and welcomed 23 new agents, closing over $359 million in 2012. They will open their fourth office early in 2013.

The luxury home market has also seen a remarkable turn-around, indicates Bonnie Davis, Managing Broker with RE/MAX Metro’s Downtown St. Petersburg office. Luxury homes no longer sit on the market with few showings. RE/MAX Metro’s listings priced over $1 million are receiving amazing buyer activity. The successful luxury agents with RE/MAX Metro often find homes not even listed on the market to show their clients - all a part of being connected and knowing the luxury market. Corporations are once again hiring and expanding, relocating executives in and out of our market. Tampa Bay’s luxury home market is seeing an influx of professionals ready to both buy and sell. The Johns Hopkins merger with All Children’s Hospital is bringing in many new doctors to the area with the goal of creating a world-class children’s hospital in St. Petersburg. RE/MAX Metro’s Luxelist Council of Agents consists of 28 agents who have all received the prestigious Certified Luxury Home Marketing Specialist (CLHMS) designation, achieved by less than 1 percent of Realtors nationally.

As we begin our “season” here in Tampa Bay, you don’t want to be left behind. Whether you are buying or selling, now is the time! Bonnie Davis, Managing Broker • RE/MAX Metro • (727) 896-1800 ext. 110 • bonnie@metroagents.net 74

WATER WORLD Five Things to Consider When Buying Waterfront Property By Erika Vidal Holmes

O

wning a waterfront home is on just about everyone’s bucket list—and with Tampa Bay, the Hillsborough River and the Gulf of Mexico staring us in the face on a daily basis, it’s nearly impossible not to aspire to a life on the water. Because these properties are so in demand, it’s a solid investment—one that goes far beyond financial if it’s where you plan to retire or vacation—it’s also significantly more expensive than landlocked property. But there’s one big benefit to shopping for a waterfront home today, according to Jane Floyd of Diversified Home Mortgage: historically low interest rates. Today’s rates have made buying a home on the water much more accessible, depending on the location. While living with a view has its undeniable perks, it’s important to be an educated buyer, whether you’re looking for a primary residence, a vacation home or investment property. Here are five things to consider when buying waterfront property. 1. Va va value. While more expensive, beachfront properties are typically the least affected in the roller coaster ride that is the property market, they’re also usually the first to start bouncing back. Waterfront homes are in high demand,

and “the bottom line is, they’re not going to make any more water,” jokes Floyd, who also happens to own a waterfront property. 2. Rental investments. Vacationers and snowbirds are willing to pay top dollar for homes or condos on the water. With the right business plan, you can make a notable return on investment before retiring in the home of your dreams. Be sure your rental rates are comparable to those around you. If you plan to use your new property as a rental, just know your interest rate may be a little higher and you’ll need a bigger down payment. 3. Water, water everywhere. Buying waterfront property can often mean greater flood risk, which means a larger investment when it comes to insurance. Before putting in an offer, research the area’s flood history and risk. Depending on where you’re buying, you may need to purchase other insurance plans in addition to flood insurance, such as a wind insurance policy and a general hazard insurance policy. Have your Realtor ask the seller if they have a recent elevation certificate, which you’ll need for insurance quotes.

4. Private property … or is it? It’s common for beachfront property to have an easement that allows others, such as beach-goers, to access part of the property. As part of your homework, find out if the land is all yours up to the water or if it’s open to the public. Your Realtor should be able to assist with this. 5. Dock dreams. If you want a dock, boathouse or slip but the property doesn’t come with one, make sure it’s something you’ll be able to add in the future. Do your due diligence and find out about any rules, guidelines or necessary permits. The last thing you want to do is have big plans you can’t bring to fruition. As you start to shop the market for waterfront properties, you may want to enlist a Realtor who understands the bay area in addition to waterfront property and all of its intricacies. While purchasing waterfront property may require a bit more research, money and patience, there’s nothing quite like having your own ocean, lake or bay view. From swimming and boating, to fishing and water sports, you’re sure to love your new playground. As Floyd says, “the view is just to die for.” dR

ONLY THE BEST Meet Tyson Grant

Executive Chef

at St. Petersburgʼs Parkshore Grill By Melinda Tam Orlando The food industry can be very damaging to the environment, so it’s refreshing to meet Tyson Grant, executive chef of Parkshore Grill in St. Petersburg. Grant can’t talk about the restaurant without talking about his sustainability initiatives — and they are quite extensive. “My food philosophy revolves around sourcing the best products, and that means they must be sustainably raised,” Grant explains. Grant strives to use only the finest ingredients in creating the dishes at Parkshore Grill. He serves Niman Ranch beef, pork and lamb, all-natural chicken from Springer Mountain Farms and Ashley Farms along with organic salmon and sustainably fished seafood. In addition, he sources organic produce from local farms whenever possible. It’s this forward thinking about green practices that have locals taking notice, but Grant grew up knowing the importance of giving the finest things to your customers. It was a lesson he learned from his father. “My father owned a men’s clothing store on Beach Drive for 40 years,” Grant says. “And once he passed on, I knew it was my time to take over the downtown legacy so here I am.” A St. Pete native, Grant found a passion in the food industry early on by working in a gourmet market and learning about finer foods. “I think the first thing I remember cooking was probably chicken breasts stuffed with four cheeses,” Grant remembers. “A friend of mine and I would tear up our friends’ kitchens and just get creative.” And that kitchen creativity is not a thing of the past. Grant is always thinking of new, innovative ideas to bring to Parkshore Grill and his loyal clientele. For instance, Grant is working on adding the perfect square 80 www.duPontREGISTRY.com/TampaBay

meal to the menu soon. “It would be four ounces of really good protein, two vegetables and a type of starch,” Grant explains. “Customers can get really high-quality food for a reasonable price while still being health-conscious.” But until that’s added to the menu, there are certainly lots of contemporary American selections to choose from like the Filet Mignon and the Fresh Catch, the freshest fish available that day. But if it is your first time dining at Parkshore, Grant suggests you try the Mixed Grill, which features filet mignon, Berkshire pork belly and lamb chop. “There is a little bit of everything on that one plate,” Grant says. The dishes you’ll find on the menu have something in common with the dishes Grant chooses to make at home: simplicity in its finest form. Most dishes have two or three main components, and Grant’s kitchen skills help bring out those distinct flavors. “At home, I make things even easier,” Grant explains. “Anything on the grill is great, but I also make a lot of one-pot meals. I try to keep it easy, and I stay within my culinary style.”

AQUA By Brooke Palmer

I

n 2009, the Tampa Bay area welcomed a new luxury hotel to the market just in time for the big game here in Tampa. With it, came a restaurant, a down economy, and growing pains one would expect. But in 2011, Impact Properties, the ownership group of the Westin Tampa Bay, decided to take over the restaurant concept, rebrand it, and make something spectacular. AQUA was born. Led by General Manager Marshall Hamilton and accomplished Executive Chef Matthew Mangone, AQUA has reinvented itself as a seafood staple on the Tampa restaurant scene. With inventive menus, exquisite presentation, and delectable results, the restaurant’s rebirth has been nothing short of great. Now considered one of Tampa’s premiere waterfront restaurants it is inspired by the water in every sense. Your visit to the unique modern dining area will be one to remember. Enjoy the sunset and live music on the patio on weekend nights. Bask in the ambiance of their state-of-the-art interior space or kick back for waterside dining on the patio. Enjoy a delicious signature cocktail at the bar or peruse the menu for a

variety of cuisine fit to indulge any taste, from steak, to seafood, to vegetarian and beyond. Open for breakfast, lunch, and dinner, the menu speaks for itself. From flatbreads, mussels, stone crabs, fresh market fish, to osso bucco and filet, there is something for every palate. Using fresh ingredients from all over the country, Mangone has taken this opportunity to expand the culinary envelope when it comes to seafood. Coming from some of the best restaurants in Las Vegas and now here to Tampa Bay, Mangone has set a standard for AQUA that is reaping culinary rewards, including finishing second in the 2012 Dine Tampa Bay Celebrity Cook Off Chef Challenge.

AQUA The Westin Tampa Bay 7627 Courtney Campbell Causeway Tampa, FL 33607 813·675·8700 www.aquatampa.com

According to Hamilton, “We strive to create a memorable dining experience for every single guest. That’s why our food and service must be executed at the highest level.” Hamilton, formerly of the Peabody in Orlando, has made sweeping changes as well. From drink and wine list updates, to a more user friendly-lounge area, AQUA is surging to the top of the culinary charts. More recently, their roof top event space, BluVu reopened with great fanfare earlier this year. BluVu, located on the 16th floor of The Westin Tampa Bay hotel is unlike any event venue in Tampa. Offering 3,800 square feet of event space on the hotel’s rooftop, with a backdrop of stunning vistas of Old Tampa Bay from the floor to ceiling windows. In addition, BluVu also offers an adjacent 1,200-square-foot open-air outdoor terrace with breathtaking views of the downtown Tampa and Westshore skylines, complimented by magnificent water views and the delicious menu offerings of AQUA’s culinary team. AQUA is certainly worth the stop. Whether staying at the Westin, or looking

dR ENTERTAINING

BIG EASY ENTERTAINING

By Melinda Tam Orlando

For this year’s Super Bowl, throw a New Orleans–inspired gathering for family and friends. With New Orleans hosting Super Bowl XLVII, it’s the perfect excuse to bring some Big Easy style to your big-game celebration. So dust off those Marti Gras beads and get ready to host the party of the year.

Send Invitations Let guests know ahead of time that you are throwing a themed party by sending festive purple, green and gold invitations. Some popular invitation themes are masks, jesters, beads and gold coins. If the party includes a costume contest, be sure to let guests know in the invitation.

Set the Mood Get guests into the New Orleans spirit as soon as they arrive by placing a Mardi Gras flag outside—it’ll help people know they’re in the right place when they see the crisp purple, green and gold hanging at your party destination. Continue the colorful decoration inside. Place glass vases filled with Marti Gras beads at the center of your table for some added eye candy. Doubloons, aluminum coin-like objects featuring the insignia of the Mardi Gras float krewes, are also fitting to have on hand.

Create an Inspiring Menu New Orleans is known for its delicious cuisine, so incorporating some of the region’s signature flavors into your Super Bowl menu will set your gathering apart. Crowd-pleasers can include a classic Louisiana po boy sandwich with shrimp, lettuce, tomato and onion, spicy BBQ bacon-wrapped shrimp and voodoo scallops. Complete the menu with delicious sides and desserts like jambalaya or crème brûlée.

Add Entertainment The game will help keep all your guests in the football spirit, but what do you do dur86 www.duPontREGISTRY.com/TampaBay

ing timeouts and halftime? Make your guest feel like they are right in the French Quarter by loading up your iPod with favorite songs by Louis Armstrong and other well-known Louisiana musicians for a jazz interlude. You can also make your own New Orleans–inspired trivia game, and compete in teams. Hire a face painter or a jester if children will be present.

Give Party Favors Give your guests New Orleans–themed favors at the beginning of the party to add to the theme. Include traditional Mardi Gras masks and colorful Jester hats, and encourage your friends and family to wear them during the game. Additional favors could include feather boas, gold coins, beads, playing cards and themed candy.

Crème Brûlée Courtesy of Besa Grill, Clearwater 1 quart heavy cream 1 vanilla bean, split and scraped 1 cup vanilla sugar, divided 6 large egg yolks 2 quarts hot water Preheat the oven to 325°F. Place the cream, vanilla bean and its pulp into a medium saucepan over medium-high heat, and bring to a boil. Remove from the heat, cover and allow to sit for 15 minutes. Remove the vanilla bean and reserve for another use. In a medium bowl, whisk together ½-cup sugar and the egg yolks until well-blended and it just starts to lighten in color. Add the cream a little at a time, stirring continually. Divide the liquid into 4 parts and add desired flavorings to each then pour each flavor into (2-ounce) ramekins. Place the ramekins into a large cake pan or roasting pan. Pour enough hot water into the pan to come halfway up the sides of the ramekins. Bake just until the crème brûlée is set, but still trembling in the center, approximately 20 to 25 minutes. Remove the ramekins from the roasting pan and refrigerate for at least 2 hours and up to 3 days. Remove the crème brûlée from the refrigerator for at least 30 minutes prior to browning the sugar on top. Divide the remaining ½-cup vanilla sugar equally among the 21 dishes and spread evenly on top. Using a torch, melt the sugar and form a crispy top. Allow the crème brûlée to sit for at least 5 minutes before serving.

1 lb green cherry tomatoes 1/2 lb shrimp 16-20 4 ozs Cajun seasoning 1 cup Anson Mills grits 2 cups half and half 2 cups water 2 cups flour 2 cups egg wash 4 cups panko crumbs Shrimp and grit fritters: In a saucepan, bring water and half and half to a boil and add grits; stir frequently until thick and creamy about ten minutes. Pour into a baking dish and cool in refrigerator. While cooling, toss shrimp into the Cajun spice and sauté in a pan once cooked cut into bit size pieces. Mix shrimp into grits and set up a breading station by placing bowls of flour, egg wash and panko crumbs. Once set up scoop grit mixture using a soup spoon and dip into flour, egg wash than panko crumb and form into mini cakes. Pickled green tomatoes: Pour rice vinegar, sugar and salt into a sauced pan and bring to a simmer; while heating, cut tomatoes into wedges and add to the vinegar mixture. Then, take off the heat. Reserve for plating. Crawfish voodoo butter: In a small mixing bowl, mix crawfish meat, hot sauce and butter together and let sit at room temperature until butter softens. Reserve for later. Scallops: Place scallops on a paper towel, and detach to abductor muscle from each one; it looks like a foot on the side of the scallop and pat dry with more paper towels. Plating: In a large sauté pan add half the blended oil and turn heat on medium; gently sear cakes until golden brown and reserve on a lined sheet pan. Discard oil. Using the same pan, add the other half of the oil and turn heat on medium-high; sear the dry scallops about two minutes on each side. Discard oil and add butter sauce off the heat. First, arrange grit cake on plate and top with scallop and spoon of crawfish sauce. Garnish with pickled green tomatoes.

Add onions and peppers; cook until soft. Add chicken and cook until halfway done, then add sausage and garlic. Cook and stir until chicken is done, about 5 minutes. Add rice and cook, stirring for 3 more minutes. In another pot, mix the chicken stock, tomato sauce, V-8 juice and Worcestershire, heat until simmering. (This can be done while onions are cooking.) POLO: FAST, FUN AND FURIOUS

The Ancient Sport of Kings at Play in Plant City

DI POLO TOUR

Story by Janan Talafer

Think of polo and Palm Beach, home of the International Polo Club, certainly comes to mind. There’s also the Sarasota Polo Club at Lakewood Ranch, started by the Schlitz beer family. But just 25 miles east of Tampa, there’s an equally outstanding, but more low-key experience for players. Since 2004, Dardo Iglesias has been saddling up the polo ponies at his 31-acre farm in Plant City, home of the best-kept secret in the world of polo—the DI Polo Tour, www.dipolotour.com. “There are three keys to successful polo; good horses, good fields and good friends and Dardo has been able to succeed in all three extremely well,” says Michael Batsavage, who has been playing polo since the 1980s and owns the Missing Piece, a high-end furniture consignment in South Tampa, with his wife, Barbara. 92 www.duPontREGISTRY.com/TampaBay

Polo has been described as the fastest game on four legs while the polo ponies are often compared to a fine-tuned, eliteracing car. The horses’ agility, speed, stamina and training are exceptional. The game—and the player’s safety—depends on it. Picture 1,000-pound horses racing across a grassy field at speeds up to 30 miles per hour, ready to turn at a moment’s notice or stop abruptly, while carrying an adrenaline-fueled rider packing a 52-inch long mallet. The mallet is used to drive a small plastic ball on the field into the opposing team’s goalpost. To do that, riders shift their weight and lean over one side of the horse, head down, focused on the ball. It not only takes good eye-hand coordination, but as Batsavage points out, it also requires a lot of trust in the horse.

Photography by www.styxmedia.com

Batsavage used to have his own polo ponies, now he leaves that to Iglesias and the DI Polo Tour. Players can bring their own polo ponies or select from among the 32 polo ponies stabled on the grounds. “You only need to bring a mallet, boots and a helmet,” says Iglesias. Batsavage calls polo at the DI Polo Tour a friendly, gentleman’s game, but he’s also quick to say it’s definitely a competitive contact sport. The rules allow players to come up against each other “saddle to saddle” in order to “ride off” or push the other person’s horse away from the line of the ball. There’s a lot of jostling and the potential to get hit with a mallet. Helmets are mandatory. Goggles are a good idea. But beginners are welcome and Iglesias offers lessons. “It’s all about enjoying the game and having fun,” he says. “You don’t find too many clubs like ours, where it is small, private and relaxed; everyone knows each other.” The public is welcome to come and watch. Practices are held on Wednesdays, polo matches on Saturday and Sunday. After the game on Saturday, there’s a barbecue. Britain’s Princes William and Harry are avid polo players. So was Winston Churchill,

Douglas Fairbanks and Will Rogers, along with dozens of kings and noblemen throughout history. Polo actually dates back to the fifth century B.C. when the ancient Persians invented it as a training exercise for the king’s elite military troops. Some of the best professional players come from Argentina, which also hosts the top-rated polo tournaments in the world. In the U.S., there’s football or golf; in Argentina there’s horses and polo, says Iglesias, who is from Argentina himself. So are two professional polo players on his staff. Iglesias shares the vast acreage for the DI Polo Tour with his wife, Julie, who owns the “sister” farm, Sleepy Oaks, www.sleepyoaksfarm.com, a hunter jumper show horse and boarding facility. Christian Lanham, a Brookdale Senior Living vice president, is a former hunter jumper who fell in love with polo. “It’s a very addictive sport; high stimulation, high speed, high energy,” she says. “Dardo makes it very safe, but it’s a very physical, challenging game. You can’t think of anything else when you’re playing, which is one of things I like about it since I have a busy, stressful job. I can leave the job behind.” John Mangin, a South Tampa trial attorney, is another competitive hunter jumper who switched to polo. “My first time out, Dardo gave me a mallot and showed me the basics of the swing,” says

Mangin. “I missed the ball on the first swing. The second time I hit it. That was the beginning of the end of my plans for a decent retirement fund,” he jokes. What does he love so much about the sport? “The beauty about polo is there are so many things going on,” says Mangin. “There’s an enormous tradition, it’s a team sport so you’re competing against other people, but you’re also competing against yourself. It challenges your horsemanship like nothing else. It’s the original extreme sport, which has a lot of appeal to those of us who are adrenaline junkies. It demands 100 percent of your concentration.” dR

Theresa Woodside presents Isabella Adams Ft. Myers native and longtime Bay Area resident Theresa Woodside’s second act in life has landed her square on top of the design world. This successful entrepreneur and USF graduate co-founded and ran one of the largest bar code technology companies during the 1980s and 90s based in Tampa. After selling the company Theresa was able to embark on an adventure in the world of fashion design in 2005 that resulted in her Isabella Adams (middle and maiden last names) branded designs of Fashion Accessories & Home Décor. The result is exotic python handbags, evening bags and Swarovski crystallized home décor and table-top accessories that cater to “extreme” luxury buyers worldwide that flock to her designs. Isabella Adams’ designs are created and made here in Tampa Bay and have been a staple at The Wynn Las Vegas Retail Stores since 2006, Escape At The Cove (Atlantis) since 2010, Ritz-Carlton Resorts Worldwide (Palm Beach and Naples in Florida) and are a regular feature in the FRONTGATE Holiday Catalog. Her exclusive national retail partner is Neiman Marcus which recently celebrated her one-year anniversary in October.
