Inside, a spiral staircase resembling a strand of DNA will anchor the lobby.

Dunedin Fine Art Center. A recent $1 million donation will help expand gallery and classroom space at this wellknown arts education organization offering dozens of classes for children and adults. The center is also known for its provocative Wearable ART Fashion Show, held every November.

By Jeffrey DiMaio, CSW 1 More than anything, wine consumers are looking for high value per dollar wines (more bang for the buck). With the economy on shaky grounds, even seasoned collectors are seeking out bargains. Wines that retail for less than ten dollars are the fastest growing sector of the market. 2 South American varietals are in with Malbec leading the charge, but also gaining acceptance are wines like Torrontes and Carmeñe. Argentina made Malbec famous. Now it’s so hot that California growers are ripping out their syrah to plant it. Carmeñe is the displaced red Bordeaux varietal that landed in Chile and has thrived on largely ungrafted vines. Torrontes is the native aromatic grape that is becoming the latest in alternative whites. 3 Unoaked Chardonnay: The trend is away from big, heavy, flabby, oaky and buttery toward cleaner and more balanced, food-friendly wines. Using Chablis as a model and dubbed with sexy nicknames like Virgin and Naked, these wines are increasingly appealing. 4 Prosecco is more in fashion than ever, coinciding with its recent promotion to D.O.C.G. (guaranteed) status by the Italian government. Prosecco is still the most popular sparkler in Italy and has proven itself as a more affordable, everyday alternative to Champagne. 5 Spanish wines especially Tempranillo and Albariño represent some of the greatest values on the market and are starting to come into their own as far as consumer awareness. Thanks to importers like Jorge Ordonez, these wines are getting high scores from critics and benefiting from sharp packaging. 6 Organic Wines, whether they’re labeled certified organic, biodynamic, or sustainable agriculture, are all viewed as a step in the right direction. They're more requested and more available. The trouble is so many producers don’t put any information on the label! 7 Rosé has finally reached a moderate level of acceptance. Much progress has been made in overcoming negative stereotypes as sweet and cheaply-made wines. Sommeliers and retailers have been beating their heads against the wall for years trying to preach the merits of these often overlooked gems. 8 Sardinian and Sicilian Reds: People have begun to recognize these Islands’ potential for the production of quality wines, especially Sicilian Nero d'Avola and Sardinian Canonau. Sardinian wines have been given an overall boost by a lot of heart-healthy press they've been receiving.
9 Multi-Varietal Red Blends: After years of drinking every wine but varietal, many consumers feel they are more than ready for the challenge of blended wines. It may have all started with simpler wines like Folie a Deux's Menage-a-Trois and continues now with big, complex wines like Orin Swift’s The Prisoner soaring in popularity, it seems everyone is looking for something apart from their old trusty, crusty cabernet. 10 Wines with screw caps are no longer being shunned. With the majority of Australian and New Zealand wines going to screw cap bottles regardless of price, and even inexpensive white Burgundies, wine lovers have been forced to confront bottles with these closures and realize that the quality of the wine is not compromised. dR

The road taken into the restaurant industry reflects these memorable childhood experiences as well as a restless personality, unsatisfied with a nine-to-five desk job. “The best thing about this profession is the instant gratification; people react immediately. I like being able to make people happy that night,” he explains. Uzzillia began his career at the prestigious Culinary Institute of America, in Hyde Park New York, where he was encouraged to approach cooking creatively, allowing the ingredients to provide inspiration. He went on to work in New York City training under chefs in

Lobster Martini Cooking the Lobster Whole lobsters, as many as needed 1 gallon water, to cover lobster 1 quart white wine 3 lemons with juice 3 bay leaves 4 sprigs of thyme 10 peppercorns 10 corriander leaves Twist the tails from lobsters and reserve. Remove claws (whole) and set to the side separate from the lobster tails. Using skewers, slightly off center, pierce lobster tail from end through the top to hold it straight. Steam claws 10 minutes. Ice immediately. Steam tails 8 minutes. Ice immediately. Gently crack claws with back of a knife, on both sides to remove claw meat from the shell in one piece. Keep for salad garnish. Using kitchen shears remove knuckle meat.
Lobster Salad 3 cups knuckle lobster meat 1/4 cup red onion, *brunoise 1/2 cup red pepper, *brunoise 1 tablespoon jalapeno, minced 2 tablespoons mint, **chiffonade 2 tablespoons cilantro **chiffonade 2 tablespoons scallion, thinly sliced 1 tablespoon lime juice 1 tablespoon mayonnaise, optional salt and pepper to taste 1/4 avocado, 1/8 inch to order Saute red onion and red pepper in butter until transparent. Toss cleaned knuckle lobster meat with vegetable, herbs, lime and mayonnaise. Season with salt and pepper and set to the side. Before adding lime emulsion, toss in avocado to serve.
Lime Dressing 1 cup lime juice (from real limes) 2 tablespoons mustard powder 3 shallots, minced

Sylvia and Artie Tzekas, who have owned the restaurant for the past twenty years, apply this quote as they search for the finest produce and best ingredients to create their signature dishes. After more than just good food: they are after memorable fellowship with their customers. Foregoing the recent restaurant trend to quickly construct a franchise and succeed at all costs, the couple believes their life’s work should supersede survival to achieve the pride of providing the best cuisine possible. New Florida in an Old Florida Atmosphere,” implies an awareness of heritage and the resolve to consider the past while continuing with the present. Built in 1903, the throwback beach house was restored and converted into a restaurant. As old Florida qualifies the dining experience, the setting’s significance became its ability to remain nostalgic and historically-sensitive, acting as a preservative of the original character and motifs. The atmosphere cultivates a casual and relaxed environment reminiscent of the aged Sunshine State as by resisting anything posh or modern. It revels in a homelike comfort that reverts back in time. “The structure of the building makes you feel like you are in Key West,” Sylvia states. It mimics the easygoing essence of the beach and its
respite from daily chaos. The dream evoked by the location is where the sand meets the sea, time stands still, and the soul finds peace. This soul appreciates fine food, which Sea Sea’s strives to provide. Chef Chris Lyons employs local ingredients while combining Caribbean spices and fresh Florida seasonings to create a new Florida cuisine. The culinary emphasis is seafood but includes steak and chicken for variety. Sylvia explains that the mantra behind the menu is to “bring the flavors of the Caribbean and Florida together.” The goal is to marry the two geographic personalities by uniting the spirit of Florida’s past with the tastes of Florida’s present. 7–8 ounces fresh grouper fillet 2 ounces coconut curry sauce 1 slice grilled pineapple 1 piece macadamia nut brittle 1/2 ounce vanilla rum glaze 3 ounces Timbale of wild rice medley Grill fish until cooked. Season with salt and pepper. Place timbale of rice on plate. Nap plate with 2 ounces coconut curry sauce, squiggle 1/2 ounce vanilla rum glaze over curry sauce with squirt bottle. Plate fish to the side of the sauces and garnish with brittle and pineapple.

Coconut Curry Sauce 1 piece lemongrass 2 each Kaffir lime leaf 3/4 cup rice wine vinegar 1/2 cup sugar 1/4 cup Mirin 2 cans coconut milk 1 tablespoon red curry paste 1 lime, juiced Make a gastrique* with first 5 ingredients. Strain gastrique and add coconut milk and curry. Reduce until thickened. Add juice of one lime.
Vanilla Rum Glaze 1/2 cup water 4 cups rum 2/3 cup brown sugar 1/2 cup white sugar 1/2 vanilla bean, cut lengthwise, scraped 1/4 cup corn syrup 1 lime, juiced Add all but lime and reduce to about 3/4 cup of liquid. Contributions from the Caribbean arrive in Jamaican Jerk Chicken, a chicken breast char-grilled and jerk marinated beside crispy plantains accompanied by pigeon peas and rice. Along with seafood, pasta dishes are popular. A house favorite is Sea Sea’s gulf shrimp and bay scallops splashed with white wine, garlic, and olive oil, then sprinkled with pesto, feta cheese, and sun-dried tomatoes served over linguini. The daily specials consistently attract attention. The regulars, who have remained numerous over the years, look forward to these changing specials. They welcome new entrées in anticipation of enjoying another masterpiece from their favorite restaurant. A famed special now a regular on the menu is the Vanilla Rum Glazed Grouper. T
he Mercedes-Benz E-Class Cabriolet should come with an optional bench seat for across the front, so you could sit with one hand on the wheel and the other wrapped around your favorite girl. No need to worry about things like cold air temperatures or turbulent winds with the fabric convertible top down, so long as the Mercedes has its Air Scarf and Air Cap systems in place. The former sits in what is normally the open space between the top of the seat and the bottom of the head rest and gently blows warm air on the occupants’ necks. The latter is a wind deflector that pops out from the top of the windshield frame. In conjunction with a mesh screen that connects the two rear headrests, the Air Cap system is designed to literally put a cap over the occupants of the car by orchestrating air flow over the cabin. Of course, Mercedes-Benz says the system really only works when the windows are up. With parts borrowed from both the C-Class and E-Class, the E-Class Cabriolet only completely shares its plat-

form with the E-Class Coupe. It replaces the CLK Cabriolet, which replaced the E-Class Cabriolet in the mid-90s; think of it as a way for Mercedes-Benz to trim down on showroom confusion by nixing the CLK (and the CL, which will become the S-Class Coupe). Like the coupe, the cabriolet has two engines available: a 268-hp 3.5-liter V-6 and a 382-hp 5.5-liter V-8. Although both engines are powerful and send power to the rear wheels via a seven-speed auto-
matic, the V-8 offers the sprightly straight-line performance some desire, although neither will see much action on curvy roads. Not that they are incapable— the car is available with a sport package and the V-8 comes with a sport button that tightens up the suspension and the shifting points—but at 4,048 pounds, the car’s weight and overall demeanor call for less spirited and more affable driving; the kind you get when you have your favorite girl sitting next to you. dR

Fifth Anniversary Event

n Saturday morning, May 15, 2010, a special anniversary event was celebrated with over 300 car crazy autofiles. May was the month to celebrate Cars & Coffee’s 5th Anniversary, Boulevard Custom’s 15th Anniversary, and the 25th Anniversary of the duPont REGISTRY A Buyers Gallery of Fine Automobiles®. A special Cars & Coffee pin was handed out to the drivers in attendance. It was a beautiful morning starting at 7:00 a.m., with gallons of coffee flowing from Bay Coffee and Tea Company. One of the highlights of the event was George Mas from Tesla Motors who gave test drives in their “super hot” electric vehicle to those who signed up ahead of time. People were fascinated with this car and stood in line just to get a glimpse of it. As usual, some of the best cars arrive impromptu. Lex Goldenberg brought in a 1955 Mercedes 300SL “Gullwing” that he has only owned for a month. “I love cars and this is a good thing to do on a Saturday morning. Back then there were about 30 great cars. I still come every other month or so because the best cars in the Tampa Bay area are here, and the real car enthusiasts know it is the place to be. It has been great to watch it evolve. Plus, now I can bring my son and his friends to see everything from a 1953 Cadillac to the electric cars,” expressed Jim. Over on the BLVD Customs side, the ramp to their install bays was flanked with a pair of their limited edition “Blvd Camaros,” a fully customized Saleen Extreme Mustang and, the Mercedescommissioned GLK350 “Urban Whip.” Once you made it past the usual assortment of other serious metal collected there, more treats awaited inside. Among the works in progress was a Hummer H2 that was receiving a full interior upgrade in black Alcantara suede with red and black diamondstitched seating, a carbon fiber dash, a matte-black paint job and full exterior blackout with custom logos, rim and tire package, suspension lift, and a full audio/video system. One of the rare

Finally, a Rolls Phantom sitting on 26-inch chrome GFG wheels was carefully having the front doors reworked to conceal a pair of JL Audio 13.5-inch slim-line subwoofers with hand-stitched factory leather as part of a full audio package. Of course, there were some great cars on display in the duPont REGISTRYTM showroom as usual. There was everything from the 1928 and 1929 duPont cars to “Pinky,” a 1959 pink Cadillac, and a large variety of new and used vehicles owned by clients and friends such as the original #1 “General Lee.” You should seriously consider coming to an upcoming Cars & Coffee event. They are held every third Saturday of the month throughout the year, from 7:00 to 9:00 a.m. at the duPont REGISTRYTM headquarters on 3051 Tech Drive, near the intersection of Ulmerton Road and 34th Street North in the Gateway area. It’s early for a weekend morning, but it allows you to get your car out when the roads are less travelled, and you still make it home in time for the kids’ soccer games and to take care of the honey-do list. dR
