Seasonally Inspired Cuisine The first Seasons 52 restaurant on Florida’s west coast has opened near Tampa’s WestShore Plaza. The “casually sophisiticated” restaurant has a seasonally inspired menu that showcases fresh, nat-ural flavors, rather than the use of heavy sauces. Look for entrees like Cedar Plank Salmon, Grilled Rack of New Zealand Lamb, Caramelized Sea Scallops, and Char Crust Filet Mignon year-round, with other items changing with the season. Enjoy live music at the piano bar and some 60 wines by the glass. For those who can’t resist, but want to watch their diet, Seasons 52 has a unique idea: tiny portions of dessert served in an oversize shot glass. Art Unveiled The long-anticipated Tampa Museum of Art is now open at downtown Tampa’s Curtis Hixon Park, where it is one of the jewels along the two-mile Riverwalk on the Hillsborough River. The 66,000square-foot museum makes quite a statement with its striking modern design featuring an aluminum exterior that “shimmers” when the sun hits it. Inside is equally dazzling: a three-story lobby and atrium with lots of natural light; polished stone floors and open display galleries for the art collections. LOCAL HEROES IN OUR MIDST MacDill’s 6th Operations Group

J

ust four miles south of Tampa on 5,700 acres of prime waterfront land, MacDill Air Force Base has been a strong presence in Tampa Bay since the 1940s. Yet much of what goes on there is cloaked in mystery. This bustling, self-contained “city within a city” has its own grocery and department stores, residential neighborhoods, fire station, restaurants, community and fitness centers, chapel, day care center and kindergarten through fifth grade public school. From their MacDill headquarters, U.S. Central Command and U.S. Special Operations Command direct U.S. military activities around the globe, including the war on terrorism, conflicts in the Middle East and humanitarian missions in Haiti. MacDill is also the assigned base for some 12,000 military and civilian personnel and their families, as well as more than 1,000 civilian personnel who report to work there every day. Add to that number an estimated 65,000 military retirees who continue to count on the base for support and live nearby. The economic impact of all this on Tampa Bay reaches nearly $5.6 billion annually. Recently Colonel James “Slim” Morgan gave the duPont REGISTRY™ a fascinating behind-the-scenes tour of the base. As commander of the 6th Operations Group of the 6th Air Mobility Wing, his division supports the many important missions underway there. Here is an inside look at what goes on day to day.

Timing is Everything One of Col. Morgan’s major areas of responsibility is aerial refueling—a task that extends the global reach of U.S. military power and almost makes NASCAR racing seem tame. and women in the 91st Air Refueling Squadron stationed at MacDill have a mission-critical job: delivering fuel to our nation’s military aircraft anywhere in the world, at any time of day or night, and in any type of situation. “Five planes and five crews from MacDill are deployed overseas at all times,” says Col. Morgan. The crews might be assigned to refuel planes in a combat hot zone in support of Operation Enduring Freedom (Afghanistan) and Operation Iraqi Freedom. Or they might assist in training and humanitarian missions—whatever is called for at the time. “We do some fancy flying that can sometimes take us in harm’s way,” says Col. Morgan. "We've even taken our planes down low during an attack so we can get the fighters refueled quickly and

back in the action.” The KC-135 tankers serve as a sort of flying gas station and make it possible for fight-

er jets, cargo aircraft, and other planes to remain on task and in operation as long as needed, all without having to stop to refuel. www.duPontREGISTRY.com/TampaBay 25


That means the refueling takes place in midair, no small feat while you’re flying at speeds ranging from 200 to nearly 400 miles per hour. This is a maneuver that not only requires years of training, it demands nerves of steel. During the fuel exchange, a “boom operator” lies down in the rear of the KC135 and deftly maneuvers a long rigid tube or “boom” that extends from the tanker into a receptacle nozzle on the receiving aircraft. This is accomplished while both pilots keep their planes steady. “We stabilize, accelerate a little and actually touch the receiving aircraft,” says Col. Morgan. “All it takes to disengage is too much power, air turbulence, or mis-judgment and everything can go wrong.” Fighter jets can be fully “gassed up” in a matter of six minutes—critical when there is no time to waste in getting them back on the job as fast as possible. Heavier aircraft can take up to 30 or 40 minutes to fill says Col. Morgan. It’s almost

mind-boggling to realize that 1,000 pounds of gas can be exchanged between the two planes in about a minute. But it’s not just the transfer of fuel that is dramatic. There is also the matter of precision timing to make sure that the tanker loaded with fuel and the other aircraft in need of refueling arrive in mid-air at the same time and the same altitude. “It’s a matter of calculating where we need to be right down to the second,” says Col. Morgan.

Combatant Commander Airlift When our nation’s top military leaders need to travel to special assignments or theaters of operation around the world, Col. Morgan makes sure they get there safely. “We need extra security for these individuals just like we do for the President of the United States,” says Col. Morgan. “We are flying them to the front lines and high threat areas.” MacDill’s 310th Airlift Squadron, a crew of highly experienced Airmen, are

assigned to this task. Three sleek C-37 Gulfstream aircraft are kept waiting at all times to support what Col. Morgan calls “D.V.s or distinguished visitors. These are the “combatant commanders”—the four-star generals assigned to U.S. Central Command, Southern Command, Special Operations Command, Joint Forces Command, Strategic Command, and Northern Command and Transportation Command. In addition to a pilot, co-pilot, flight engineer, and communications support officer, the crew of the C-37s includes a flight attendant who is trained to prepare meals from scratch to suit the preferences of their distinguished visitors on board.

Around-the-Clock Airfield Operations On the ground, Col. Morgan is focused on keeping everything efficient and orderly at the MacDill airfield. He also oversees the annual MacDill Air Show and requests for flyovers at special community events.

Air traffic control at MacDill presents some interesting challenges, he says, because of the airfield’s close proximity to downtown Tampa, as well as to four active civilian airports—Tampa International Airport, Peter Knight Airport, St. Petersburg-Clearwater Airport and Alfred Whitted Airport. Military, commercial, and private planes all share Tampa Bay’s busy skies. The relatively tight air space requires that Airmen controllers remain vigilant On the ground, the runway is just as busy, with frequent landings from Air Force, Navy, and Marine Corps aircraft coming in from other bases, as well as MacDill’s own fleet of aircraft taking off for mission-related flights. MacDill’s tropical landscape presents other unique demands. Unlike air bases in other parts of the country, Tampa’s airfield is located in a former mangrove swamp. In fact, some 906 acres on the base are still preserved as wetlands. Numerous water retention ponds attract Osprey and other large birds. MacDill is home to more than 20 protected or

endangered species including the bald eagle. As attractive as that might be, an abundance of wildlife can be hazardous to planes, says Col. Morgan. You don’t want birds near the runway. Strict guidelines keep vegetation low and away from the runway and grass maintained at the proper height.

High Praise for MacDill’s Airmen and Women Col. Morgan can’t say enough to recognize the men and women under his supervision. “We have an outstanding volunteer military,” he says. What does he look for in a recruit? The job description might read: strong work ethic, mentally sharp, assertive, confident, self-aware, and team player. To become a military pilot also requires someone who will not falter and who can give 100-percent focus to the task at hand says Col. Morgan. A graduate of the U.S. Air Force Academy, Col. Morgan says he’s known from the time he was nine years old and flew in his brother-in-law’s Cessna that he wanted to be a pilot. “I feel blessed to know what I wanted to do with my life from a very young age,” he says. “I still get a thrill every time I go up.” Col. Morgan has been everything from a test pilot to the first commander of the 319th Expeditionary Air Refueling Squadron. During the first night of Operation Enduring Freedom, he was right in the middle of the action in Afghanistan. But he is also acutely aware of the sacrifices that MacDill’s Airmen—and their families—make daily. Missions may take anywhere from a few days to a few months. Often there is only a short time at home in-between assignments, he says. Loved ones are continually saying goodbye. Moving frequently can take its toll on children, who must change schools and learn to adapt to new environments, sometimes every year or two.

Col. Morgan’s personal experience is the perfect example of the lifestyle military families’ face. He’s moved 15 times in 24 years. He and his wife Myra, son Peter, 22; and daughters Susanna, 20, and Liz, 14, have lived all over the country, from Texas and California to North Dakota, New Jersey, Illinois, and now Tampa. They also lived a year in England. His favorite assignments? He doesn’t hesitate to say that both North Dakota and Tampa are at the top of the list. “The friendliness of the people and the

welcome support from both communities has been terrific,” says Col. Morgan. “My wife and I always thought we would retire to Texas, but now we might consider Tampa.” dR

omeownership has its fair share of obstacles—from figuring out how to make those repairs to what color to paint the kitchen to just the right landscaping to showcase the house. For some, there comes a time to make a bigger decision: remodel or throw in the towel and buy new. “People are requesting remodels in their homes for two reasons,” said Pete Costanza of Costanza Homes. “They are substantially invested in their neighborhoods and have lived in their homes for twenty years or so and don’t want to move; or, their families are changing and they need a mother-in-law suite, or they had more kids and need to add a room.” He also noted that people like the idea of refreshing their homes without having to move away and that the sheer lack of resources motivates remodels. “One of the main reasons people in Pinellas County remodel is that there is very little land available to build new, and they are pretty happy with their location,” added Costanza. When beginning a project, a member of the Costanza Homes team visits the site to take a look at the project and assess the work to be done. Then, the in-house drafting staff develops preliminary designs, which are reviewed and finalized. Finally, the team works within the predetermined budget and builds out the job. Powell Building Contractors, Inc. also sees a lot of renovation work in Pinellas County, which Bob Powell, president, attributes primarily to the tax implications of building a new home. “We’ve recently completed a few whole-house renovations on the beaches, which results in significantly less taxes than if we’d built new homes,” said Powell. “We’ve also been doing a lot of bonus rooms, second floor bonus rooms, and home theaters.” Powell concurred with Costanza. “People don’t want to leave the neighborhood where they’ve been for ten years, their kids are involved in soccer, and they have friends and neighbors that they don’t want to leave. A Tale for Every Meal By Catherine Mitseas

T

om Pritchard is a natural-born story teller. The tales start in his eyes, settle in his smile, and end with a laugh. He loves good food, good company, and a good story. Google Tom Pritchard on the Internet and you will find that in his lifetime, he’s owned three restaurants, lived in 12 states and countries, assumed more than one alias, and known everyone from Janis Joplin to Richard Nixon. Pritchard, 68, is executive chef/partner of the Salt Rock Grill, Island Way Grill, Marlin Darlin, and Rumba Island Bar and Grill in Pinellas County. The four restaurants keep six local fishing captains busy and the Salt Rock boasts wine sales second only to Berns Steakhouse. What you may not know is that when

he goes home, greets his golden retriever, and settles into an easy chair, the only thing he wants to do is learn about food. Under the shaggy appearance and past the funny tales, Pritchard is a man in love with his art. Not in the current new age way where complicated ingredients meet a pompous attitude but in a geeky, engineering kind of way. “One of the great things that gets me curious about food is how flavors and cooking methods have evolved for health reasons,” he explains. Peasants during the Middle Ages used ginger to ward off the plague. Atomic bomb survivors soothed wounds with chilli pepper oil. Stay with Pritchard long enough and not only will you discover new cooking techniques, but also where the world’s

best capers, hottest chillies, and tastiest beets are grown; who writes the most interesting cookbooks; and the density of taste buds within the human mouth necessary to expertly discern flavors. At 14-years-old, he began his career by shucking oysters in Vince Lombardi’s brother’s restaurant. The son of a radio and television broadcaster, Pritchard was born in Rochester, New York and raised in Chicago, Illinois. “I was the world’s only XXX oyster shucker,” he says. The young prankster eventually dropped out of college, spent three years clerking in the army, and then traveled extensively through Europe during the 1960s and 1970s. Never formally trained, Pritchard learned the ropes working for leading


French chefs in New York and in London. Laboring under exacting taskmasters who demanded absolute perfection, Pritchard absorbed the fundamentals through “apprentice programs that were a form of slavery where you worked for almost nothing and they treated you like a dog. They (chefs) were brutal about how to do things, ‘hold a turnip this way, crown a vegetable that way.’ If you didn’t peel a 50-pound bag of carrots correctly, you were made to do it again and again

until you got it right,” he explains. The training paid off and he eventually rose to corporate chef for Specialty Restaurant Corp., overseeing 91 locations. To this day, Pritchard immerses himself in people better informed than he on every subject from wine to spices, relishing in the study of food and in the discoveries unearthed daily through trial and error: “You have to ruin some good food to know where the borders are,” he concludes.

Salmon Croquettes 1 pound Salmon (or trimmed bellies), cleaned; baked, steamed or microwaved until cooked; break into small pieces. 1 tablespoon garlic, minced 1 tablespoon celery, finely chopped 1 tablespoon onions, finely chopped 1 tablespoon chives, chopped 1 tablespoon parsley, chopped 1 tablespoon basil, chopped 2 tablespoons parmesan cheese 1 ounce roasted red peppers 3 tablespoons mayonnaise 1/2 tablespoons Old Bay 1/2 tablespoons Kosher salt 1 tablespoon black pepper, freshly ground 1/4 cup Panko crumbs Mix together all ingredients. Form into hockey puck shape and dust in Panko crumbs. Bake in a 400- to 450-degree oven for about eight to ten minutes OR pan fry in half olive oil and butter, two minutes for each side. Garnish with tarter sauce and lime wheel. Serve with simple side dish. Serves three to four

Macadamia Nut Chicken 8 ounce skinned/deboned chicken breast 1/2 cup macadamia nuts, chopped 1 cups Panko (Japanese breadcrumbs) 1/4 cup flour 1 cup milk 4 eggs Salt and pepper to taste

Shoyu-cream sauce 2 cups heavy whipping cream 1/4 cup soy sauce 2 tablespoons cornstarch 2 tablespoons water

Pineapple-Papaya Marmalade 1 cup chopped fresh papaya 1 cup chopped pineapple (fresh or canned) 1 cup granulated sugar Pinch of chili pepper flakes (optional) For the macademia nut chicken: Salt and pepper the chicken breasts and set aside. In a mixing bowl, combine milk and eggs. Mix well. In another mixing bowl, combine the chopped nuts and panko. Mix well. Flour the already seasoned chicken. Dip the chicken into the egg and milk mixture. Dip chicken into the panko mixture (the chicken should be well coated in this mixture). Heat a large size sauté pan with oil. Once oil is hot, add the chicken and sauté on both

For the pineapple-papaya marmalade: In a medium saucepan, combine pineapple, papaya, and sugar. Bring to a boil and let simmer uncovered, as it will thicken to a syrupy consistency—it will take 45 minutes or less for canned pineapple. Assembling the dish: Slice chicken keeping the shape of the chicken breast. Spoon shoyu-cream sauce over the sliced chicken. Place a dollop of the pineapple-papaya marmalade and black sesame seeds on the plate near chicken. Serves four

FIELD OF DREAMS BENEFITS CHILDREN'S DREAM FUND The 17th Annual Field of Dreams Sports Auction and Dinner was held Saturday, February 13th at Tropicana Field. The evening’s events included the induction of Will Clark into the Ted Williams Museum Hitter’s Hall of Fame. Pitching Wall of Achievement recognition went to Dave Dravecky and Bert Blyleven. Opera Inspired

Grammy-winning soprano Renée Fleming and jewelry designer Lea Davis

Tampa jewelry designer Lea Davis of Lea Veronica Designs presented Grammy-winning soprano Renée Fleming with a necklace from a new line of jewelry benefiting Opera Tampa after Fleming’s January performance at the David A. Straz, Jr. Center for the Performing Arts. The threestrand necklace of petal pearls, oval pearls, and crystals in a pale peach color presented to Fleming is the first of seven in Davis’ opera-inspired series. Two of the limited edition designs were inspired by Fleming, and one by Renata Scotto’s performance in La Traviata. The remaining four necklaces will be released over the next year. Davis is one of the founding members of the Opera Tampa League. Her passion for the arts is longstanding and well-reflected in her new series of limited-edition and one-of-a-kind necklaces and earrings. Her designs are inspired by visits to more than 80 countries and include the finest gemstones, semi-precious stones, and beads from nature along with sterling silver and fourteen-karat gold-plated components.
