ften coupled with its neighboring city, Washington, D.C., Baltimore is certainly a destination in its own right. A city rich in history, culture and cuisine, not to mention the picturesque Inner Harbor, there is much to see and do—and eat! Upon arriving in Baltimore, take a sightseeing tour to get your bearings. A knowledgeable—and often-entertaining— guide will take you through the city, highlighting points of interest as you make your way through the different neighborhoods that make up the whole. You’ll even get a glimpse of Edgar Allen Poe’s grave and the building in which Mary Pickersgill stitched together a very famous flag. Civil War history abounds throughout Baltimore. Set out on the Discover Heritage Walk and meander along just over three miles of history, through the Inner Harbor, Little Italy, Historic Jonestown and City Center neighborhoods. There are twenty historic sites and museums along the route—choose those that interest you most, or visit them all!

A few miles outside downtown Baltimore is Fort McHenry—the first fort built by the United States. It is here that the flag flew during the War of 1812, inspiring Francis Scott Key to pen the Star-Spangled Banner. A new visitor center opened at Fort McHenry this month in anticipation of the bicentennial of the
War of 1812. Fort McHenry is a definite stop when visiting Baltimore. History isn’t the only thing alive in Baltimore, though! A thriving art scene makes the city alive with culture. Check out the American Visionary Art Museum (AVAM)—this is not your mother’s museum. Featuring works of self-taught artists,
the museum has more than 4,000 pieces of art in its permanent collection, of which approximately fifty will be on exhibit in its Permanent Collection Gallery. Through September 15, in celebration of its fifteenth anniversary, AVAM is featuring What Makes Us Smile?, co-curated by Matt Groening, creator of The Simpsons, and artist Gary Panter and museum founder Rebecca Hoffberger. On May 7, the museum hosts its Baltimore’s Almost Famous (13th) Annual East Coast National Championship Kinetic Sculpture Race—that will be a sight to see! Maybe FiFi, the giant pink poodle, will make an appearance! In addition to the AVAM, Baltimore is home to so many museums, you’ll sure to be find one that suits your tastes!
All of this art and history is sure to make you hungry! Well, you’re in luck! Baltimore is a city filled with restaurants serving delicious fare, many with blue crab from the nearby Chesapeake Bay, not to mention all types of ethnicities. Start with breakfast and head to Spoons Coffee Café in the Federal Hill neighborhood for a cup of delicious joe and a fresh baked goodie. Or, for something more substantial, try the Blue Crab and Artichoke Omelet. That is the way to start the day! Or, if you’re in Fells Point, go to Alexander’s Tavern for brunch and the Smothered Tots or Crab Mac-N-Cheese accompanied by a mimosa, or two. Rich, yes. Filling, yes. Incredible—YES! For lunch, ask for a window seat at the Lebanese Taverna and prepare for a feast
for the senses. The Mediterranean fare is just what you need to give you energy to continue exploring all afternoon! But save room for dinner and make your way to Woodberry Kitchen, a farm-totable restaurant that combines flavors that will leave your mouth watering for days. The menu changes according to what’s in season, but know that everything that comes from the kitchen is grounded in the Chesapeake region’s ingredients and traditions. And, if C.M.P. is on the dessert menu, do yourself a favor—order it! After a day of exploring—and eating— it’s time to relax at one of the convenient hotels located in downtown Baltimore, just off the Inner Harbor. courtesy of: Executive Chef Chad Gauss, City CafĂŠ 6 ounces bacon, diced 2 cups onion, diced 1-1/2 cups carrots, diced 1 cup celery, diced 1 clove garlic, minced 24 ounces beef stock 1 quart crab stock 2 cups water 2 bay leaves 3 tablespoons Old Bay Seasoning 1 ounce Worcestershire 1 quart potatoes, diced 1/4 head green cabbage, shredded 1 pound frozen vegetables (corn, green beans, lima beans) 1 pound Maryland Jumbo Lump Crabmeat 1 tablespoon dried oregano 1 tablespoon dried basil 7 dashes Tabasco 28 ounce can diced tomatoes 3 tablespoons tomato paste Render diced bacon in your soup pot.
Add garlic, celery, onion, carrots. Sauté until soft and translucent. Whip in tomato paste, spices, bay leaf and add everything else except crab. Bring to a boil and then reduce to simmer. Let cook until cabbage and potatoes are tender. Add half of the crabmeat to the soup. Garnish the bowl with the remaining crabmeat.
CRAB IMPERIAL courtesy of: Chef John Shields, Gertrude’s ½ stick butter 2 tablespoons green bell pepper, diced 2 tablespoons red bell pepper or pimento, diced ½ cup mushrooms, chopped ¾ cup mayonnaise 1 tablespoon Dijon mustard 1 tablespoon Worcestershire sauce ¼ teaspoon Tabasco sauce 1 teaspoon capers, drained and chopped ½ teaspoon freshly ground black pepper 1 teaspoon Chesapeake seasoning 1 pound jumbo lump crabmeat, picked over Preheat oven to 350 degrees. Melt butter
in a small skillet and sauté the bell peppers and mushrooms until soft. Set aside. Combine the mayonnaise, mustard, Worcestershire, Tabasco, capers, ground pepper and Chesapeake seasoning in a small bowl and mix well. Add the sautéed peppers and mushrooms. Place the crabmeat in a mixing bowl and pour the mixture over it. Toss gently, careful to avoid breaking up the lumps of crab. Spoon the crab mixture into four individual gratin dishes or well-cleaned crab shells. (Place filled shells on a baking sheet.) Bake for 20–25 minutes. Meanwhile, prepare the topping. Remove the casseroles from the oven. Preheat the broiler.

From the peephole that slides open in the front door to the password required for entry and the dramatically dimmed lights inside, everything about Ciro’s Speakeasy & Supper Club recreates this colorful era. The restaurant is tiny, which gives it the intimate feel of a private party. Spice Heaven The sheer number of spices and herbs at the new Savory Spice Shop in downtown St. Petersburg is a heady experience. Waterfront Tour on a Segway Chances are you’ve seen them—a meandering line of people motoring down the sidewalk on a strange looking contraption called a Segway. T
he samples arrived today. Five cardboard boxes, battered and bruised from their journey across the Mediterranean and over the Atlantic. Their heft is substantial; I groan picking them up, careful of the fraying seams. It doesn’t take much to open. Just one puncture and the packing tape gasps, exhaling an intoxicating aroma of styrofoam peanuts, musty cardboard, stale humidity and fennel. Ahhh... Sicily. I am probably the only person ever to visit this complex island without seeing its Greek and Roman ruins, but I was too busy eating. Gorging myself actually, but what else would you expect from a chef on a two-week buyer’s binge? The heart and soul of Sicilian foods— is humbly grounded in the home. Indeed, every cook, farmer and artisan I encountered described a dish as "something my mother used to make." There's nothing new about this concept, of course, but it seems stronger to me here as if you can feel the roots of family, generation upon generation, in the sun-drenched soil. Indeed, lying at the very heart of the Mediterranean, Sicily is a veritable culinary and historical crossroad, an intricate ‘mpanata (a Sicilian, multi-layered pie) if you will. The various elements come not just from Phoenicians and Arabs (pasta, grains) but also from Greeks (olives, almonds) and Romans, Byzantines, Normans, Germans, Aragonese, French and Spanish. It was the

Spaniards, rulers of Sicily for a half century, who brought capsicum peppers, Aztec chocolate and the tomato. Together, those vast influences have blended together, giving Sicilian cuisine it’s own personality. The pasta dishes are richer, saltier, more varied and more intense in flavor. The wild fruits and vegetables, used in everyday dishes, are brighter and deeper in flavor. And the desserts of Sicily? Sweeter and denser than all of Italy combined, much like it's people. For me, remembering Sicily will be easy. All I need is what’s in this box, a quick trip to the market, a bottle or two of Insolnia or Nero d’Avola, a few good friends and Perfetto!
DOLCE: A dolce (or sweet) ends a traditional Italian meal, and sicilian desserts—colorful, precious and extremely sweet—reflect history very well, which is why I'm choosing to start my meal here. Much has been written about gelato, cassata and cannoli, so there's no need to expound on them here. More impressive, to me, was the chocolate of Modica. (Plus, I've been waiting not-sopatiently for this chocolate to arrive!) A town impossibly built into two sides of a ravine, medieval Modica is legendary for its chocolate (it was used in the Bronze Age to preserve meat). There is chocolate ice cream, chocolate granita, chocolate cannolo, chocolate liqueur, hot chocolate and even a mincemeat and chocolate pastry called mpanatigghi that tastes far better than anyone can imagine. The most renowned of the shops is Antica Dolceria Bonajuto, a family-run operation since 1880, hidden down a small cul-desac off the main street, Corso Umberto. Stepping inside the first thing that hits you is the smell: a wonderful waft of spices, fruits, nuts and chocolate. The chocolate recipe used by Antica Dolceria Bonajuto has its roots in the 13th to 16th century when the Spanish conquistadors conquered the New World and brought back the local Aztec recipe for xocoàtl, a chocolate made from ground cocoa seeds mixed with spices. Bonajuto makes chocolate according to the Aztec method, using semiground cocoa containing cocoa butter, castor sugar and spices. The result is a chocolate that
contains no butter, vegetable fats, milk derivatives or lecithin, and has a granular texture because the sugar crystals do not melt. It’s a completely novel experience if you’ve never tasted it before and a must for any real chocolate lover.
ANTIPASTI: A traditional Italian meal starts with something to nibble on, called an antipasto, which translates into English as “before the meal.” It can be as basic as a few slices of proscuitto or salami by themselves, a plate of olives drizzled with olive oil, or this simple dish of pecorino, Sulla honey and hazelnuts. Pecorino with Honey and Hazelnuts 1 pound pecorino 1 cup skinless hazelnuts, toasted 3 T La Nonna Sulla Honey* Pull the cheese out of the refrigerator at least one1 hour before serving—it should be served at room temperature. Chop the hazelnuts coarsely. Break pecorino into large bite-size chunks. Place on plate and drizzle with sulla honey. Top with chopped hazelnuts. PRIMO: In Italy, pasta is a first course, or primo, served as an appetizer, not as the main event. This is often pasta con le sarde. SECONDO: The main course is called il secondo, or the second course. Chicken, meat, or fish are the usual choices, and portions are generally small. These main courses are fairly simple, and are sometimes skipped all together in favor of contorno.
CONTORNO: A selection of contorno often accompanies the main course, but these flavorful side dishes are the secondo. The word contorno loosely translates as “contours” and refers to the fact that the vegetable course helps shape and define the meal. Caponata The most telling example of Sicily's complexity—culinary, historical and otherwise— is caponata. Extra virgin olive oil 2 purple eggplant, cut into large chunks 1 teaspoon fresh oregano sea salt and freshly ground black pepper 1 small onion, peeled and chopped 2 cloves of garlic, peeled and finely sliced flat-leaf parsley, small bunch of fresh leaves picked and stalks finely chopped 2 tablespoons salted capers, rinsed, soaked and drained green olives, handful, pits removed, sliced 1 red bell pepper, roasted, peeled, seeded and thinly sliced 2–3 tablespoons best-quality herb vinegar* 5 large ripe tomatoes, roughly chopped 2 tablespoons slivered almonds, toasted Put eggplant into a colander over a large bowl; toss with one tablespoon of salt and let drain for one hour. Rinse eggplant and pat dry with paper towels. In a large saute pan over medium heat, drizzle some extra virgin olive oil. Add eggplant and oregano, season with a salt and toss to evenly coat eggplant with oil. Cook for 4 or 5 minutes. When the eggplants are nice and golden on each side, remove from the heat and place in a bowl. Add more olive oil to the pan, then saute the onion, garlic and parsley for a couple of minutes. Add more oil to the pan if you feel it's getting too dry. Add the eggplant, capers, olives and peppers to the pan and drizzle with the herb vinegar (adjust the recipe here with Condiaroma or traditional balsamic vinegar). When the vinegar has evaporated, add the tomatoes and simmer for 15 minutes or until tender. Taste before serving and season with salt, pepper and a little more vinegar, if needed. Drizzle with some good olive oil and serve sprinkled
with the chopped parsley leaves and the almonds. Can be served hot or cold.
Bacon Wrapped Scallions (Cipollate con Pancetta) 24 large scallions, trimmed 8 strips bacon or pancetta Kosher salt and freshly ground black pepper, to taste Extra virgin olive oil 1/4 cup CondiAroma 33 Wrap three scallions together with 1 strip of bacon. Repeat with remaining scallions and bacon and season with salt and pepper. Heat oil in a 12-inch skillet over medium-high heat. Working in batches, add bacon-wrapped scallion bunches, and cook, turning as needed, until browned. Drizzle with CondiAroma 33 and place in an 350-degree oven for 10 minutes, or until crisp. Serve hot.

cut the fennel down the middle and shave into very thin slices. Place in a bowl and toss with the lemon juice and olive oil. To cut your orange segments, slice the stem and blossom ends off the blood oranges. Stand the blood oranges on one end and following the contour of the fruit with your knife, remove the peel and white cottony pith. Work from top to bottom, rotating the fruit as you go. Then slice the oranges into thin pinwheel slices. Add the oranges and fennel fronds and toss with salt and pepper. Using a vegetable peeler shave the pecorino over the plated salad. ABOUT SULLA HONEY Down a dusty little side street in a quiet part of Trapani is a hidden treasure of a shop that sells only honey. Shy, yet full of knowledge about all aspects of apiculture, Beekeeper Vultaggio Agnese is more interested in his hives and their occupants than in the company of other people. ket honeys are extracted. Heat extraction is quicker and less expensive and makes the honey smooth and clear, but it also destroys some of the delicate and distinctive flavors, as well as the beneficial amino acids and enzymes. Raw, virgin honey like La Nonna will naturally crystallize over time. He produces the loveliest Sulla honey, a wild legume native to Italy—light in color with a delicate and delicious floral flavor. ABOUT CONDIAROMA 33 To understand what CondiAroma is, you first have to understand what it is not. It is not balsamic vinegar. By law, balsamic vinegar is a product solely of Modena, in the north. It is also not really a true vinegar— under 6%, which is the standard by which Italian vinegar is judged. That said, Condiaroma is a sweetand-savory by-product of the Sicilian Marsala winemaking process, where concentrated must is combined with an ancient vinegar “mother” and then aged in oak barrels for 33 years. Its heavenly flavor is the epitome of Sicilian agrodolce, and a perfect condiment for virtually anything, sweet or savory.

TAMPA BAY—SUP CAPITAL? “The basic, year-round clement weather; the diversity of water types; and the sometimes difficult-to-access, really beautiful natural areas that we have [here in the Bay area] are all a combination of getting people hooked,” said Klemawesch. He went on to add that you may have lived in St. Pete forever, gone to Davis Island or Fort DeSoto hundreds of times, but going out on a paddleboard is a different experience from a sixfoot vantage from the water. “There’s splendor and beauty around us that can be accessed with minimal difficulty,” Klemawesch noted.

ou may have seen them gliding atop the waters of the Bay area—in downtown Tampa, along the Intercoastal, out in the Gulf. They’re not surfing; they’re not windsurfing; they’re not kiteboarding. What is it that they’re doing? They’re stand up paddling, or SUP! Though it’s hard to tell when stand up paddling evolved from surfing, or vice versa, it’s often credited to Duke Kahanamoku—a 1912, 1920 and 1924 Hawaiian Olympic medalist and “the father of modern surfing”—and the Waikiki Beach Boys. These beach boys didn’t sing of California girls, though— they taught visitors to surf and oftentimes paddled out into the waters to take photos of surfers. On surfboards. With paddles. Stand up paddling. Dr. Patrick Klemawesch of St. Petersburg first got involved in stand up paddling when in Malibu interviewing for a residency position in 2005. He went into a local surf shop to rent a board, hoping to catch a few waves. “It was my one chance to surf Malibu and it was flat,” recalled Klemawesch. “Not only flat, but unseasonably cold and rainy. I paddled out, and was the only person out at Malibu.” It was then that big wave surfer and surfing pioneer Laird Hamilton came out to do a paddle workout with his training partners. Klemawesch struck up a conversation with Hamilton, asked him about what he was doing and got hooked. “It looked like so much fun,” said Klemawesch. “They were even catching two-inch waves and riding them in.” He ordered a board as soon as he got back to Florida and has been stand up paddling since. And he’s not the only one. SUP has been increasing in popularity over the years—yours truly even tried it last summer. Klemawesch isn’t surprised in the interest in the sport.

Brody Welte, owner of Stand Up Fitness and Kahuna Kai Paddle Shop, agrees. Relocating from Hawaii where he was raised, he stopped in the area to visit friends on his way to an interview in South Florida. “[We were] crossing the Howard Frankland Bridge and I looked around,” Welte said. “There was water everywhere, and flat water, which is conducive to the sport.” He stayed a few days and explored the area. When he didn’t get the job in South Florida—a sign—he started his stand up paddling business. According to Welte, no other place outside the state of Hawaii has the year-round temperatures, access to water and culture based around water like the Bay area does. He foresees the area being the top two or three places in the U.S. to paddle—if not the top—when it’s all said and done. The water culture Welte refers to is key to the growth of the sport. “We have such a community of fitness enthusiasts that are eager to get into it,” said Klemawesch. “Once they’ve had their first taste and how subtlety challenging it can be, they’re in.” www.duPontREGISTRY.com/TampaBay 25

Klemawesch notes that some of the most devoted paddlers around the area are in their 50s and 60s. “My dad paddles several times a week,” he said. “I got him hooked on it, and he races locally. He’s radical!”

SUP—IT DOES A BODY GOOD With all the fun to be had with stand up paddling, it may be easy to forget that it is a workout at the same time, developing core strength and balance.
“You get out of it what you put into it,” said Klemawesch. “It’s possible to do a paddleboard workout where you’re working mostly upper body, or a leg workout.” He also notes that several area outfitters offer fitness classes with a boot camp mentality—train on land and in water, incorporate yoga and even Pilates into the workout and try to focus on the goal of the day. For the more experienced paddlers, as far as distance paddling/race training, SUP is the supreme total body workout, according to Klemawesch. And he should know—he’s the first person from the gulf to successfully stand up paddle solo across the Ka’iwi Channel, and he’s training for the 32-Mile Molokai-Oahu Paddleboard Race in July. Welte echoes the total body workout benefit, noting that most people feel it in their legs (quads, calves and feet) and core due to constant stabilizing, but that the power of propulsion primarily comes from the core.

READY TO DIVE IN? If you’re ready to give it a go, Klemawesch suggests first determining your level of comfort in the water, and your level of fitness. As far as conditioning, he first suggests yoga; then any board sport (i.e. surf, snow, skate); and finally anything involving the water to affirm comfort and respect. For people who are total novices— who have never surfed or skateboarded or done any board sport—he suggests contacting one of the local shops to take an introductory lesson. “If you’re a little more comfortable, the really great thing about the sport is, either
borrow, or rent, or buy a board and a paddle and go out and learn,” Klemawesch said. “As with any new sport, try it out first with a friend or renting a board.” After your first foray into stand up paddling, if it’s something you’re interested in learning more about, Welte suggests taking a lesson to learn correct form and paddle stroke. “If taught by a qualified instructor on the right equipment, I believe that everyone can have a great time, and that is the whole goal,” said Welte. Once you become hooked, buying the equipment is as easy as one, two… well,
that’s it. Boards range from a couple of hundred dollars to just under $2,000, and paddles around $200 and up. When ready to buy, Welte suggests talking with a local retailer to determine which board and paddle will work best for what you want to do. Much like bicycling, a casual rider wouldn’t want to buy a bike built for racing. If you’re looking to switch up your workout routine, try something new, or just go out for a day on the water, try stand up paddling. It’ll give you a whole new perspective of the waters and natural beauty that surround us. dR

ith our ever-present digital devices, we’re bombarded with information nearly every minute of the day. It can be difficult to disconnect. Yet it’s critical for our well being to take some time away from all the external dialogue, says Laura Tillinghast Hine, the owner of Inspire Yoga. “Yoga lets you leave everything outside the door for the sixty to ninety minutes of practice,” says Tillinghast Hine. “It’s about clearing the mind, focusing the breath and creating space to gain a sense of being more open, free and calm.” Yoga’s health benefits are well-documented, from reducing blood pressure and heart rate to improving flexibility and balance. It can also increase peak performance and brain function. And unlike many sports, it’s not about pushing harder to reach the next level, it’s about easing up and letting go—perhaps the perfect antidote to our driven, competitive culture. Tillinghast Hine can certainly speak to the effect yoga has on type A personalities. A graduate of the Naval Academy, she served several tours of duty in the Middle East and came home to Tampa to work in commercial construction. Now she owns a yoga studio that offers classes in a unique setting—the Dali Museum in St. Petersburg and the Tampa Art Museum. “Yoga can help develop a sense of living in the present moment in a nonjudgmental way without worrying if you are doing it right or wrong,” says John Allen Gibel, an instructor at the Dali. “Over the years, I’ve seen a transformational change in people.” Look for yoga classes at local gyms, studios and recreation centers. Tillinghast Hine offers beginners this advice: experience a variety of styles, instructors and studios before you make up your mind. And remember, it's not about being able to touch your toes. Tai Chi, like yoga, is a non-competitive mind-body exercise that promotes wellness. But unlike yoga, which emphasizes stationary postures, Tai Chi is a series of slow, scripted movements that involve continuous stretching and turning, says Cythnia Zarling, a spokesperson for the Taoist Tai Chi Society St. Petersburg affiliate. Tai Chi strengthens the muscles and spinal cord, improves balance and posture, stimulates the immune system and benefits the heart. Rejuvenating Face & Body The Latest Trends in Cosmetic Procedures By Janan Talafer

ging gracefully has never been easier thanks to advances in technology that make it possible to augment, lift, tighten, correct and finetune what nature has bestowed. The American Society of Plastic Surgeons reports that last year more than 1.5 million people gave themselves the gift of looking healthier, more attractive and shapelier with everything from breast augmentation to facelifts, tummy tucks and dermabrasion. Tampa Bay’s many skilled plastic surgeons blend artistry and expertise to sculpt a head-to-toe makeover that can result in what St. Petersburg plastic surgeon Jeremy Benedetti, M.D. calls that “Wow” factor. Natural is the key to looking and feeling better about our appearance. It’s all about balance, proportion and adding volume lost with aging, childbirth and other factors. PUT YOUR BEST FACE FORWARD “There has been a huge difference in the way we look at rejuvenating the face,” says Tampa plastic surgeon Abraham Marcadis, M.D. With age, both the skin surface and underlying structure begin to change. The ligaments get lax; the skin stretches and becomes thinner, loosing collagen and elasticity. We also lose volume, which makes our cheeks look hollow. Correcting each of these issues often requires a multilayered approach to treatment. To stop the clock and reverse obvious signs of aging, sun damage and cigarette smoking, anti-aging skin rejuvenations techniques such as pulsed light therapy, laser skin resurfacing, chemical peels and dermabrasion are popular, safe and effective. These procedures shrink pores, eliminate tiny broken blood vessels, acne scars and dark spots, and smooth out fine lines and wrinkles. The result is a
healthy glow and younger looking skin. Treatments at a physician-supervised medical spa are different from a day spa, says Dr. Benedetti. The difference is in the results. More intensive peels and lasers at medi spas don’t just touch up the epidermal surface, they reach down to the dermal layer where they get to work actually changing the tissue, says Dr. Marcadis. But it’s not just about achieving smooth skin. It’s vital to tackle the challenge of the face losing volume. Injectible fillers such as Juvederm, Restylane, Sculptra and Botox can add a little plumpness and contour to cheeks, as well as fill in wrinkles and enhance the lips, which also thin with age. Some doctors are also using the patient’s own fat cells as filler. The fat cells are removed usually from the abdomen during liposuction, purified and injected back into the areas where it’s needed.
Tampa plastic surgeon Bart Rademaker, M.D. of Rejuva Plastic Surgery Center is a pioneer in what he calls regenerative medicine for natural aesthetic rejuvenation. He is one of the first surgeons in the area to take the body’s own fat cells, stem cells and tissue regenerative growth factors and then reinsert the solution into crow’s feet around the eyes, wrinkles around the mouth and hollowness in the cheeks. “It is really next generation medicine that brings about a completely natural restoration of form and function using the patient’s own cells,” says Dr. Rademaker. Currently the process can be used for the face and for a natural breast enhancement, but Dr. Rademaker anticipates other medical uses in the future. BODY BEAUTIFUL Many people, no matter how much they exercise, may still be genetically inclined toward
stubborn areas of fat on the abdomen, thighs, back and hips. Fortunately, a variety of procedures can help. The least invasive include Accent and Thermage, which use radiofrequency heat for contouring. For the best results, many plastic surgeons recommend liposuction, a tummy tuck—or both. Liposuction, which removes fat through a minimally invasive suction process, is one of the most common procedures we do, says Dr. Marcadis. However, he cautions that it is not a weight loss procedure. “Liposuction is good for removing fat directly under the skin,” says the doctor. “Think of it as reducing the amount of tissue when you pinch the skin and fat on the body.” A tummy tuck, however, not only addresses abdominal fat, but wrinkled, stretched and excess skin due to pregnancy or major weight loss. “This is a powerful procedure that can accomplish things that
liposuction can’t, says Dr. Marcadis. “The key to a successful tummy tuck,” says Dr. Benedetti, “is perfect placement of the belly button. F
or diehard exercise junkies, going to the gym use to mean slinging weights on a stationary machine, pumping out twelve reps, and waiting an interminable 30 seconds until theycould, again, push the poundage. In today’s gym though, the fittest are taking their training to another level: one that honors minimalism and mimics childhood play while intensifying the exactness of every movement. Minimalist training, which also is referred to as “cross-training” or “athletic-training,” can include slapping heavy 50-foot tsunami ropes repeatedly against a floor, slamming weighted balls against a wall, and pull-ups done on gymnastic rings. Athletes might engage in such simple moves as triceps-dips, sprints across open fields, or chest presses using only ones’ own weight and two black straps. Over at the Fight Factory in Tampa, general manager Johnathan Ordway is a former NFL, AFL, and CFL cornerback. His hybrid performance classes combine high intensity training with such raw athletics as dragging “sled” weights and “suicides,” an explosive method of agility training. The Fight Factory is owned by former NFL Super Bowl champion Yo Murphy. Among its offerings is CrossFit, a nationally-franchised training program that incorporates free weights with an extreme cardio development program. Jon Orebaugh, co-owner of CrossFit 813, says CrossFit blends gymnastics, metabolic conditioning, and Olympic weight lifting techniques to create classes that constantly vary movements while performing each exercise at its maximum power. “We drive the intensity piece—it is the hardest piece of it to teach. Ninety-nine percent of people are not comfortable with uncomfortable—that’s what we try to get across. We will push you and get you to another level.” The United States military originally developed cross fit training techniques for its first responder units. The training is inherently designed to increase an individual’s functionality—that is their ability to move heavy loads over distances quickly and safely, Orebaugh says. Mathew Midyett, co-owner of Powerhouse Gym in Tampa’s Channel District says, his gym members are exposed to some of the most cutting edge cross-training equipment in Tampa Bay. TRX Suspension Training uses an adjustable strap system to build an athletes’ whole body. The straps’ inherent instability forces the core muscles to provide balance and stability, resulting in a stronger overall physique rather than simply a bulkier one. The “Gauntlet” is a non air-conditioned, 1,000-square-foot playyard complete with a monkey bar set, oversized truck tires, sledgehammers, and beer kegs—all of which sit on a gradually sloped floor covered in Astroturf.
Tucked deep within Powerhouse is a narrow, 10-yard sand pit. Exercise physiologist Mark Gochneour of Speed Source Athletics, says sand training recruits small muscle fibers within the hips, knees, and ankles as the body’s larger muscles cannot respond effectively to the sand’s instability. As a result, exercisers strengthen seldom-used muscle groups and gain better balance and agility. Even personal training’s gone from building might to optimizing individual exercises. Jay Signorelli, a strength conditioning coach for the New York Yankees organization, also trains everyday people. Signorelli aspires to apply “human performance training” techniques to every client. The fancy phrase boils down to the simple dynamics of stabilizing muscle groups and improving overall posture in order to maximize every move—a critical first step— whether it’s a girl looking to firm her backside or a pitcher needing to refine his fast ball. He says, once clients understand why they move the way they do, he can help them begin to correct weaknesses and start building power, strength and tone. hen the hectic pace catches up with us, the stress is a bit too much and we’re harried beyond belief, we’re fortunate to have a number of spas to turn to in the Tampa Bay area to melt our cares away. For the past several years, the trend amongst spas throughout the U.S. has been to go more organic, with an increased use of

natural products. The same rings true of spas in our area. The ‘green’ movement is more than the products, but includes the building and fixtures themselves.

made of bamboo, a sustainable resource. “Finding what’s unique about themselves” helps spas find a sense of self, said Beverly Fox-Crismond, spa director at Sandava Spa. She notes that massage is always the most popular treatment at pretty much any spa, but it’s how spas make the treatments “their own” that set them apart. A visit to Sandava Spa is a complete sensory experience. The relaxation room, with near-floor to ceiling windows overlooking the Intercoastal, features a waterfall wall that is soothing and “super inviting,” according to Beverly. Complimentary spa bites are offered with all services; morning spreads are breakfast fare, including mini-muffins, miniparfaits, coffee and herbal teas, and afternoons bring hors d’oeuvres and wine. Led from the relaxation room, each treatment room is a suite—no need to go from one room to the next if multiple treatments are scheduled. “More likely than not, guests will have the same therapist for all services,” said Beverly. This “keeps you connected with what you’re there to do—relax.” Prior to each treatment, therapists offer guests a sand ritual: using sand from the beach right outside, guests choose an intention card and place card in the sand. The card is returned to the guests when it’s time to go, bringing them back to the time and place where they were most relaxed. On a recent visit to Sandava Spa, I opted for the Endless Wave massage— organic oils suspended in pure sea algae

Glow—From the Inside Out
As a model, Wesley Winer, owner of Glow—A Couture Day Spa in South Tampa, had been in and out of different types of spas—those that were more medical and sterile, and those that were full of fluff and without substance. When she opened Glow seven years ago, she knew just what she wanted. On a recent visit, I found a boutique filled with fun items to browse through as

were slowly dropped along my spine, with the intent on calming and centering me. “Most people are out within five minutes,” Beverly warned, and right she was. I was instantly quieted, my whirling mind turned off and tuned in. Cassie, the masseuse, did an incredible job easing away the knots and crunches that had taken over my back and neck.
I made my way into a cozy relaxation lounge, complete with tempting treats and ambrosia water to satiate my appetite. Because each appointment is made just for each person, I glimpsed only one other lucky guest as I made my way back to the treatment room for my facial. At the start of the treatment, Wesley gave me the choice of several different aromatherapies; I chose the one that would bring inspiration. After all, who couldn’t be inspired? Over the next hour, Wesley cleansed, buffed, polished and massaged my face using a French technique called effleurage, something like “taking your face out for a jog.” I felt slightly guilty that my face was jogging while my body was melting into the table. I’ve had facials before, but this one was exquisite. Not to mention the soothing yet invigorating neck and shoulder massage, and arm and hand exfoliation. The grand tradition of Belleair Country Club golf began over a hundred years ago when Henry Bradley Plant, founder of the Plant system of railroads and steamboats selected this site to construct a winter golf resort in 1897. He had six holes built with elevated greens, the surfaces of which were crushed seashells. At that time, the fairways were rough with indigenous grass, as it was assumed that sophisticated grasses could not be grown in Florida. On June 23, 1899, Henry Plant died, leaving his son, Morton F. Plant, to complete the dream he had started. Morton Plant succeeded in completing his father’s dream, and more. Morton began experimenting with topsoil, grasses and fertilizers, refusing to accept the notion that better golf course grasses could not be grown successfully in Florida. He went so far as to have several railroad cars full of rich Indiana topsoil brought to Belleair. Morton Plant laid the foundation for the rich and lush appearance of the Belleair Country Club’s golf courses as they are today. In fact, it has been observed that the Club’s grass greens were the first in the South.
During 1909, the West Golf Course grew to eighteen holes and by 1915, to thirty-six holes, implementing the design of the popular and brilliant golf course arch-itect, Donald J. Ross. Today’s layouts are essentially as Ross designed them, although the sequence of holes has changed. Elegant and spacious, the 51,000square-foot Clubhouse of Belleair Country Club is a masterpiece of stone, brick and glass. In a saucepan over medium-high heat, combine chicken with a quarter cup of BBQ sauce, a handful of garlic and a handful of red onion. Bring to a boil. Spread uncooked BBQ sauce evenly over the pizza crust. Top pizza crust evenly with shredded cheese. Top pizza crust with chicken mixture with onions and garlic, and spread out evenly across pizza. had is the regular comment,” Chef Poulakis explains. “The crab cakes are also a big hit, and our stellar service.” Watercolour’s extensive menus offer something for everyone. The dinner menu’s certified angus-beef steaks are prepared under an infra-red broiler at approximately 1600 degrees to lock in all the delicious flavors and juices. And Chef Poulakis says they cut like butter. It’s a must-try on the menu. All the dishes are made using only the finest ingredients (local when possible) and the best cuts of meat and fish. The large portions encourage you to enjoy a family-style dining experience. Looking for something not listed on the menu? remember on one occasion, I had a request from a guest for a particular fish, and he literally went out on his boat that day to catch it.” And that’s not the only time that the Marriott team did something special for a guest. The crew regularly provides special services to the restaurant’s patrons. “We like to add special touches to such guests like knife sets with their names engraved on the box,” Chef Poulakis explains. “We anticipate their needs and know their expectations. We also offer frequent diner incentives. For our hotel guests, I send personal invitations as well as lobby cooking demonstrations. It gives people an opportunity to sample our product.” With such attention to detail, it is no wonder that large parties often come to Watercolour to celebrate special birthdays, anniversaries and more. The outdoor dining space is a wonderful dining area for parties up to forty. Chef Poulakis will even customize the menu to suit your party’s needs. Lobster Spaghetti 1/3 cup extra-virgin olive oil 2 Tablespoon garlic 1 cup red, yellow and green bell pepper, diced 1 cup red onion, diced 1 cup Roma tomato, diced 2 Tablespoon basil, chopped 3/4 cup white wine 2 Tablespoons lobster stock 3 cups heavy cream 1.5 pounds lobster meat 1 pound spaghetti Shaved Parmesan
Add garlic, peppers and onions. Then, add tomatoes, basil, wine, lobster stock and cream, and reduce by half. Add lobster meat, and heat thoroughly. Toss with pasta, and top with Parmesan cheese. dR

Each of these special ladies has battled pediatric cancer—some are still undergoing treatments and some are no longer battling. Professional models also hit the runway wearing the latest spring fashions. Mini presents The Cooper S Countryman By Benjamin Greene
T
he Countryman is the fourth vehicle in the Mini Cooper lineup, sitting next to the original Hardtop, topless Convertible, and slightly elongated Clubman. Out of the four, the Countryman offers more widespread appeal thanks to its larger dimensions. It sits 15 inches longer, half a foot taller, four inches wider, and 400 pounds heavier than the base Mini Cooper. It is not large by any stretch, but does add enough space to procure the interest of customers that are not fond of the Mini Cooper’s size. The Mini Cooper Countryman comes in three flavors, each with a name that expounds on one before it. You have the base Mini Cooper Countryman, the sportier Mini Cooper S Countryman, and the sportier all-wheeldrive Mini Cooper S Countryman ALL4.
Despite the extra mass, the Countryman retains the original car’s spirit, offering a high quotient of fun. With a little bit of ingenuity from its parent company BMW, the Mini Cooper S Countryman and Cooper S Countryman ALL4 produce 181 hp from a small 1.6-liter turbocharged four-cylinder engine. Acceleration is peppy, requiring only seven seconds to get to 60 mph from a standstill when equipped with the six-speed manual transmission. A six-speed automatic transmission with sporty paddle shifters is available as an option. For extra passing power, the turbocharged motors come with an overboost function, which temporarily raises boost pressure when the gas pedal is pressed to the carpet. Added peace of mind is available with the optional ALL4 package, which is Mini speak for all-wheel drive.

Minis have always been as quirky as their exterior measurements and the Countryman is no exception. A large round dial sits front and center, consuming the top of the center console, and serving as the speedometer. When the Mini Connected option box is checked, a 6.5-inch display is added to the middle of that dial, serving as a menu screen for the car’s audio system or the optional navigation component. Mini Connected also allows iPhone owners to connect their smartphone to Facebook, Twitter, web radio, and Google Local search through the aforementioned display. Another unorthodox feature is an aluminum rail that shoots out from the center console and runs down the length of the car, ending at the rear seats. It provides a chic place for cup holders and other miscellaneous storage areas. dR

Commisioned by the Dalí To coincide with the rebirth of the Dali Museum, Robert Young, reknown jewelry designer in Belleair Bluffs, has been commissioned by the museum to design jewelry for their collection. If you’ve already been to the new Dali Museum in St. Petersburg, you know that as soon as you enter this remarkably dynamic building, you’re in the Museum Store, where intriguing gift items abound. Central to the museum’s architecture is a helical staircase winding up from the ground floor to the second and third floor galleries. The DNA molecule, with its’ double helix form, fascinated Dali and is depicted in many of his paintings. To integrate design aspects found from within Dali’s work with the new building, architect Yann Weymouth has incorporated the helical staircase inside the museum and has utilized the blob-like ‘Enigma’ shapes curling around the exterior. Designing jewelry has been Robert Young’s passion since childhood. For more than thirty-five years he has been making one-of-a-kind treasures at his local studio. The helical spiral staircase at The Dali is the inspiration for these earrings and they are currently available for purchase at the Museum. Architect Weymouth, was the first to purchase Robert’s earrings as a gift for his wife. Robert is in the process of designing more items for the Dali and hopes to have them available there in a few months.
