Kahwa Coffee Opens in Tampa Kahwa makes a perfect cup of coffee and its comfortable space in St. Petersburg invites lingering. It’s no surprise that the small entrepreneurial company, KAHWA COFFEE, was top choice for the Rivergate building in downtown Tampa, where it’s close to both offices and the University of Tampa. Becki Duke, design consultant with Patio Land (1913 E Bearss Ave., Tampa) says that fire pits have really gained in popularity over the past year. “We can’t keep them on the floor at this point,” she said. Patio Land’s clients tend to lean towards the gas fire pits because of the ease in which they operate—with a small propane tank much like that of a BBQ—but Patio

Land offers wood burning versions as well. Becki attributes the gas version’s popularity to the choices in decorative glass and marble tops, essentially making them customizable. o you know what it means to taste New Orleans? Rick Parsons does and that’s what drives the menu at his newest restaurant—Ricky P’s Orleans Bistro in St. Petersburg. Having grown up in New Orleans, Rick learned the craft of making a fine roux for his gumbo at an early age and after a thirty-five-year career in marketing and advertising, felt it was time to put those skills to work. It started at the Saturday Morning Market and then Ricky P’s PoBoy Shop on 4th Street opened in January 2009. It was an immediate hit with the lunch crowd but with only five tables, the common cry was “you need a bigger place!” It took a little while but Rick was determined to find the right place to showcase his expanded menu and when the location on Central became available, Rick’s search was over. “This was an existing restaurant before; formerly known as Savannah’s,” Rick explains. “My wife Lisa and I had dined here before and would visit before and after Rays games. We

were always impressed with it’s architecture and look. It reminded both of us of New Orleans with the high ceilings and old tiled floor. We actually daydreamed what it would be like to have our style of food served in a place that captured the spirit of New Orleans. And now it seems that dream has come true.” Ricky P’s Orleans Bistro features a varied menu of some of his favorite New Orleans dishes like seafood gumbo, creole jambalaya, fried shrimp platters and of course—oysters. New Orleans is famous for it’s oyster bars that serve the saltiest, plumpest oysters along the Gulf coast. World famous po boys and appetizers like Oysters Rockefeller and Oysters Bienville were invented in New Orleans restaurants and are proudly served at Ricky P’s Orleans Bistro. And if you’re craving a dozen cold ones, check out the Oyster Deck in the loft overlooking the main dining room and wash ‘em down with an ice cold Abita Beer. Another favorite from New Orleans is a little


delicacy known as beignets—French-style donuts covered with powdered sugar and best served with a café au lait. (half coffee with chicory and half hot milk). Ricky P’s has a Jazz brunch on Sundays and to the delight of many, features beignets with café au lait that really reminds you of Café du Monde but without the wait in line. Other brunch items include Crab Cake Benedict and Omelette Rockefeller. And of course great Bloody Marys and mimosas make the brunch complete. Rick’s passion for food is emblematic of what most people love about New Orleans because when you combine good food, a festive atmosphere and good friends, you’re bound to have a great time. Creole Jambalaya 2 cups uncooked parboiled rice 2 cups water 1 lb medium shrimp, peeled 1 lb smoked sausage, sliced 1 lb chicken thigh meat, cut up 1 large white onion, chopped 4 stalks celery, chopped 1 medium green pepper, chopped 1 medium red pepper, chopped 1 tbsp fresh garlic, diced 4 bay leaves 1 tbsp Cajun seasoning ½ tsp cayenne pepper 2 tsps salt 1 stick of butter 1 16 oz can diced tomatoes 1 bunch green onions, chopped ½ bunch parsley, chopped 1 tsp balsamic vinegar ½ tsp cumin

Spread sausage, chicken and shrimp on large cookie sheet and cover lightly with cajun seasoning. Cook in 400degree oven for 15 minutes. Set aside. Melt butter in large dutch oven and sautee onions, celery, peppers, bay leaves and garlic until soft. Add salt, cayenne, vinegar, cumin, tomatoes and simmer for 15 minutes, stirring often. Add cooked sausage and chicken, simmer for 10 minutes. Taste for seasoning, add additional cajun seasoning and/or salt and pepper to taste. Add 2 cups of water and 2 cups of uncooked rice, stir well. Bring to a boil, then cover and simmer on low for 10 minutes. Stir in shrimp, green onions and parsley. Cover and simmer on low for 15 minutes. Once rice is cooked, stir well and serve with hot french bread and butter and your favorite hot sauce! dR

3 cups bananas (about 6), mashed medium very ripe 1 cup walnuts, chopped toasted Dulce De Leche Ice Cream 3 ⁄4 cup Dulce de Leche 2 cups heavy cream 1 cup milk 1 ⁄2 cup sugar

Preheat oven to 350 degrees

Butter a 9-by-5-by-3-inch (2-quart) loaf pan; set aside. Whisk together flour, baking powder, salt, and baking soda; set aside. In the bowl of an electric mixer, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. With mixer on low speed, add flour mixture in three additions, alternating with two additions of banana; mix until just combined. Stir in walnuts, if desired. Pour batter into prepared pan. Bake until a toothpick inserted in center comes out with only a few moist crumbs attached, 60—70 minutes. Let cool 10 minutes in pan, then turn out of pan and let cool completely on a wire rack. Dulce De Leche Ice Cream: In a medium saucepan, combine 34⁄ cup of the dulce de leche, the cream, milk, and sugar. Bring to a gentle boil over medium heat. Remove from the heat. Beat the egg yolks in a medium bowl. Whisk 1 cup of the hot cream mixture into the egg yolks. Gradually add the egg mixture in a slow, steady stream, to the hot cream. Cook over medium-low heat, stirring occasionally, until the mixture thickens enough to coat the back of a spoon. Remove from the heat and strain through a fine mesh strainer into a clean container. Cover with plastic wrap, pressing down against the surface to keep a skin from forming. Refrigerate until well chilled, about 2 hours. Remove from the refrigerator and pour into the bowl of an ice cream machine. Freeze according to the manufacturer's instructions. When the ice cream is nearly completely thickened, pour in the remaining 14⁄ cup dulce de leche to create a swirl in the ice cream. Transfer to an airtight container and freeze until ready to serve. Caramel Sauce: Mix the water and sugar in a large saucepan. Cover and cook over low heat until the sugar dissolves. Increase heat and boil uncovered until sugar turns a medium brown, about 5 to 7 minutes, stirring occasionally with a wooden spoon. Gradually add the cream and the seeds scraped from the vanilla bean. Simmer until the caramel dissolves and the sauce is smooth and thick, about 2 minutes. Assembly: Cut banana bread in 1-12⁄ inch slices. Place 12⁄ cup of ice cream on bottom of one slice. Pour caramel on top of ice cream (as much as desired). Place a pinch of sea salt on caramel. Top with other slice of banana bread.

Preheat oven to 350 degrees Shuck the oysters and carefully slide the sliced ham under the meat trying not to lose any of the liquid from the oyster. Bake for 7 minutes. Sabayon: Fill a one-quart saucepan half full with water over medium heat and bring to a simmer. Place all ingredients in a medium stainless-steel bowl and whisk until well combined. Place the bowl over the saucepan and continue to whisk until the sauce is thick and doubled in volume, 3 to 5 minutes. Top the oysters with the Sabayon and micro greens. Enjoy!

Tarragon Aioli: Combine all ingredients in a blender and puree on low until blended. Candied Tomatoes: Combine all ingredients into a sauce pot and simmer. Stir often until tomatoes reach a jam-like consistency. Once most of the liquid has evaporated, monitor mixture so it does not burn. Assembly: Place tarragon aioli on plate using squeeze bottle or spoon to create design. Garnish center of plate with a tablespoon of candied tomatoes. Servings: 1 Season grouper with salt and pepper. In a sauté pan, heat olive oil to smoke point. Add grouper and sear until golden brown on bottom. Turn over and cook briefly. Top with the black bean glaze and place entire pan in the broiler to finish. In a separate sauté pan, heat garlic and butter. Sauté mushrooms and deglaze with chicken stock as needed. Season with salt and white pepper to taste. In another sauté pan, heat olive oil to smoke point. Add garlic and lightly caramelize. Add bok choy and sauté briefly. Deglaze with fish sauce and chicken stock to taste. Heat the udon noodles in the lemongrass broth. To plate: Place the udon noodles in the center of the bowl. Place the glazed grouper on top. Surround the grouper with the bok choy as ying/yang and surround with sautéed mushrooms. Drizzle cilantro-wasabi oil on top of the broth. Garnish with cilantro leaves. Black Bean Sweet Chili Glaze: Mix all ingredients. Do not cook. *Mae Ploy Chili Glaze can be found in Asian food stores. Lemongrass Broth: In saucepan, combine all ingredients except herbs, lime juice, palm sugar, fish sauce and soy sauce. Add water to barely cover. Let simmer for 40 minutes. Steep in herbs. At the end, strain through a china cap then once more through cheese cloth. Finish to taste. Cilantro-Wasabi Oil: Add parsley and oil. Puree in blender for 25-30 seconds. Add cilantro at very end. Season with wasabi powder and salt to taste. Heat mixture in a pot and wait for raft to form. Let it sit for 30 minutes. Strain through chinios and white linen. Refrigerate.

Servings: 4 Place heavy cream and taleggio in a pan over low heat and whisk until smooth in consistency. Add lemon zest, truffle oil, and remove from heat. Keep warm. Roast asparagus spears over medium heat in butter until just slightly firm in the center. Warm pre-poached quail eggs in acidulated water. For assembly: Spoon 2 ounces of the taleggio sauce in the center of the plate. Place roasted asparagus on top of the cheese sauce. Place quail eggs around the asparagus. Garnish plate with a dusting of grated parmesan, sorrel leaves, and shaved black truffles.

Preheat oven to 500 degrees Servings: 4 Wet Rub. Chop four cloves of garlic, and one sprig of rosemary. Put in bowl and add a 14⁄ cup of olive oil to the bowl. Then season each chop with salt and pepper. Put chops in bowl with garlic and rosemary sprigs. Season and marinade lamb for 24 hours. To Prepare: You must move pretty quickly while making this dish. The key to good pan-sauces is to use the same pan and not to burn your butter or ingredients. Slice portebellos and mushrooms and reserve. Chop half a shallot then reserve. When ready to cook, heat sautee pan add lamb to pan and put a golden sear on each side (about 30-45 seconds). Then push chops to top of pan and add 1 tablespoon butter, mushrooms and shallots. Sautee then deglaze pan with a cup of cabernet wine. Let flame up. Add cranberries, then add stock and put into oven for 3-4 minutes. Once cooked plate lamb chops over your favorite starch or vegatable (if your diet calls for no carbs, you can use some steamed aspargus or sauteed organic spinach). Save pan with sauce and put it back on burner, add 2 tablespoons butter and let reduce to desired thickness, season to taste as needed, then pour over lamb chops and enjoy. www.duPontREGISTRY.com/TampaBay 89

Red Wine Braised Lamb Cake & Stuff Calamari Preheat oven to 450 degrees

2 lbs lamb shoulder 1 medium onion, diced 1 carrot, diced 3 stalks celery, diced 1 leek, white part only, diced 4 cloves garlic, smashed Sachet ( 3 sprigs Thyme, 4 sprigs Italian parsley, 2 tsps peppercorn, 1 stick cinnamon) 1 ⁄2 cup all purpose flour 2 tbsps sea salt 1 tsp fresh ground black pepper

1 bottle Cab Sauvignon 1-1⁄2 gallons lamb stock 1 whole egg 2 sheets parchment paper Breading for Lamb 2 eggs 1 cup milk 3 cups Panko bread crumbs 2 cups all purpose flour 1 tsp sea salt 1 ⁄2 tsp fresh ground black pepper 1 tbsp chopped flat leaf parsley

2 tsps chives, minced 2 tsps thyme, minced Calamari and Stuffing 1 medium sized calamari (tubes and tentacles) 1 tbsp shallot, minced 1 tsp garlic, minced 1 4 ⁄ pound white clamshell mushroom 1 4⁄ pound brown clamshell mushroom 2 pieces trumpet royale

⁄ pound Hedgehog mushroom 1 pound asparagus, (1" biased cut) 1 tsp sea salt 1 ⁄2 tsp fresh cracked black pepper micro arugala 1 4

Season lamb with sea salt and black pepper and dust with flour. Sear lamb shoulder off until golden brown in 1-gallon stock pot. Sweat the mire poix (carrot, onion, celery, garlic) and leek in olive oil. Deglaze with the red wine and reduce the wine by half. Add the lamb back into the pot and cover with stock. Bring to boil—cover with parchment paper or loosely covered lid and reduce heat to simmer for about 2 hours. Add herbs (sachet) to pot in the last 1⁄2 hour. Pull from heat, letting meat cool in the stock to incorporate more of the flavor. When cooled enough to touch by hand, pull meat from stock and start shredding lamb by hand. Strain vegetables from stock and reduce to sauce consistency. When the meat has been pulled, add whole egg, 1⁄2 cup sauce and adjust flavor with salt and pepper. Place meat on parchment paper and roll meat tightly into log, using the paper to form the log to your desired thickness. Chill in refrigerator until log is cool and meat is bound together. Cut to desired thickness, and refrigerate. Breading for Lamb: Combine milk and eggs together to make an egg wash. Add herbs to Panko and salt and pepper to season. Dust cut lamb cakes with flour, dip in egg wash, and dredge in herbed Panko mixture to finish. Place on sheet tray and refrigerate. Cooking procedure for lamb cake: Heat Canola oil in pan. (Enough oil to cover the cakes half way so that the sides get crisped.) Cook to golden brown, then flip and finish cooking until golden brown on both sides. Calamari and Stuffing: Chop 1⁄2 of each amount of mushroom to a small dice for stuffing (medium dice on the rest for plate presentation). Saute small diced mushrooms in extra virgin olive oil with the shallot, garlic and tentacles, seasoning with salt and pepper. After the mushrooms have been cooked place in piping bag. Cut a hole just large enough to fit piping bag inside of the calamari tube. Pipe the mushroom mixture into the tube, leaving some room so that the tube can shrink and your mixture will not fall out. Lightly coat the tube in EVOO and season with salt and pepper placing on a baking sheet and bake at 450 degrees for approximately 10 minutes or until hot all the way through. Final steps for presentation: Saute medium diced mushrooms with shallot and garlic until partially cooked, add asparagus to finish. Place lamb cake in center of plate, top with stuffed calamari tube. Place medium diced mushroom mixture and asparagus around the plate. Drizzle with lamb sauce and top with micro arugala.

Form into 2-inch cakes and sear in frying pan with oil or butter to a nice golden brown. Finish in oven until thoroughly heated—3-4 minutes. Lemon Thyme Aioli: Mix ingredients of mayonnaise, Old Bay seasoning, lemon, and thyme together and drizzle over warm crab cakes. dR

The middle leg of the Triple Crown of Carriage Driving is held in Florida and is an international qualifying event for a spot on TEAM USA in the World Championships! The other two phases are dressage, which tests the grace and obedience of the horses, and cones, which tests the precision and athleticism of the horse and the skill of the driver. FUNDING RESEARCH THROUGH FASHION The 9th Annual Bright House Networks Fashion Funds the Cure presented by Neiman Marcus and Mercedes-Benz drew a crowd of more than 700 people and raised nearly $800,000 for pediatric cancer research. Celebrity stylist and former Dancing with the Stars contestant, Carson Kressley, hosted the fashion show for the fourth year in a row. Professional models walked the runway in the season’s best, followed by 12 brave young models battling pediatric cancer. Each girl was escorted by a local celebrity including players from the Tampa Bay Buccaneers, Tampa Bay Rays, and Tampa Bay Lightning. The Pediatric Cancer Foundation is dedicated to finding less toxic, more targeted therapies by partnering with leading hospitals nationwide. dR

It is exhilarating. It is beautiful. It is the new 991. By Benjamin Greene The 3.8-liter flat-six engine holds a monstrous wail that invades the cabin as the rpm needle stretches into the upper echelons of the center pod. We are putting down all of the new, round 400-hp figure as the digital display surpasses 130 mph. It is after we, without drama, exceed 135 mph that we become suddenly aware that we are doing nearly double the posted speed limit on the long stretch of open highway. We snap off the throttle, but the new 991 generation of the 911 doesn’t slow down in a dramatic fashion. The seven-speed PDK transmission holds the engine’s rpms near the boiling point as it waits for our next input; it is ready to conquer the next stretch of highway. Forced to withdraw to the congesting traffic

ahead, we slow and slide mundanely into line as our heart rate reduces. The 991 redesign is the most significant since the 993 was replaced with the 996 in 1998. Although the iconic 911 silhouette has been retained, its wheelbase has been stretched nearly four inches while overall length has only grown by one. The result is more interior room without making the newest 911 that much bigger than its predecessor. The increase does not make the 991 as roomy as a sedan, but it does significantly increase legroom for the front two chairs. Headroom was also plentiful, leaving room above that can’t be found in many other sports cars. The changes also mean a complete overhaul of the interior, although

A Passion For Cars By Janan Talafer

Automotography perfectly describes the art form that David Caldevilla has developed to fulfill his love of hot cars and combine it with his talent for photography. A self-described gear head since his teen years, when he bought his first 1969 Camaro, Caldevilla has most likely never met a muscle car from the ‘60s and early ‘70s that he didn’t like—and want to photograph. With the use of digital software, Caldevilla uses a little magic to blur the lines between photography and painting, allowing an image to emerge that is evocative, creative and stylized. “I like to exaggerate the colors, put in different backgrounds and stretch the image,” says Caldevilla, a Tampa native whose day job is an appellate lawyer with the firm of de la Parte & Gilbert (dgfirm.com). He also photographs boats, dogs and architectural features on interesting buildings like the Avalon Hotel in South Beach. But muscle cars are

definitely his favorite. What does he love about them? “They are so artistic—not many cars today have the attitude, with lots of chrome, a big engine and a big sound,” says Caldevilla. “It was part of a unique time in our culture—full of confidence and optimism.”
