RETURNS TO COACH THE TEAM Meet Kevin Cash, Tampa Bay Rays Manager

K

evin Cash says he grew up practically living at the baseball field near his house in North Tampa. “You hear about kids whose dads force them to play, well my brother and I never had to be pushed,” says Cash. “We got home from school, did our homework and couldn’t wait to get to the ball field to hang out with our buddies. We loved the game.” Now decades later, Cash is completing his first year as manager of the Tampa Bay Rays, a dream job he could never have imagined back in his Little League days. It’s made even sweeter because the job is right here in his own hometown. “I have received unbelievable support from the community,” says Cash. “Aunts, uncles, friends and people I haven’t seen in years have all leaned over the dugout to say hello. It’s been a very special season.” Before the Rays, Cash was in Ohio, where he managed the bull pen for the Cleveland Indians. Cleveland was great, he says, but Tampa Bay is home. Besides, this past winter, while his buddies in Cleveland were snowed in, Cash took pleasure in texting that he was out on the patio and it was 75 degrees. When he’s not focused on baseball, Cash enjoys family time at his home in Westchase. He and his wife Emily have three young children—daughters Camden, 9 and Ella, 8, and son J.D., 3. The girls aren’t that into baseball, says Cash, but J.D. is never without either a fishing pole or a baseball in his hand. It just might be in the family DNA. baseball, first in high school and college, then later in the pros. “Growing up in that type of environment really helped me enjoy the game at a young age,” says Cash. “I was a kid who loved to practice. I liked being in the batting cage just as much as I liked the game.” Cash went from Little League to the baseball team at Gaither High School in Tampa, and then Florida State University. After college he had stints with the Red Sox, Yankees, Toronto Blue Jays, Houston Astros, Texas Rangers and Tampa Bay Rays. He played with the Rays in 2005, back when the team was still called the Devil Rays. In 2011, he stopped playing ball and moved into management.

Was it tough to follow in Joe Madden’s footsteps? Not at all, says Cash, who at 38, is also the youngest manager in the league. “Often when a new manager comes in, it’s because something bad happened, but what an opportunity it has been for me to come into such a great culture with a great group of players,” says Cash. What can fans expect from this year’s upcoming season? Cash says he’s excited and optimistic. “Last year was a learning experience for me, but we have a solid foundation. And at the end of the day, the Tampa Bay Rays are a very competitive team.”

aking care of our hearts in natural, nonmedical ways is easier than ever in today’s health-conscious society. From vegan cheese to exotic grains, our supermarket shelves are stocked to the rafters with products claiming to lower our chances of a heart attack. But does this really work? What do the doctors say we should do? It turns out that one program supporting a clean chemical-free lifestyle has made its way into Florida as part of a lifestyle approach to reversing heart disease at Sarasota Memorial Health Care System. The Dr. Dean Ornish Program for Reversing Heart Disease, which Sarasota Memorial refers to as the Ornish Reversal Program, takes a rigorous, but drug-free approach to reversing clogged arteries. Founded more than 30 years ago, the Ornish Program promotes five simple but challenging tenants to arresting heart disease. First, follow a strict diet with less than 10 percent of calories derived from fat. Even avocados are banned. It is not a vegan diet though, says Meredith Cleveland, team leader for Sarasota Memorial cardio pulmonary department and exercise physiologist. Instead, whole and plant based foods, beans, and fat-free dairies, including yogurts, cheeses, and egg whites, are emphasized. Second, moderate exercise. The Ornish Program encourages heart patients to walk while Sarasota Memorial monitors its patients in a clinical setting. Third, attend group support or psychological counseling. “This is my favorite part of the program,” Cleveland says. Led by a licensed social worker, these traditionally Type A patients learn to share feelings and open up to a support system. Fourth, use stress management and relaxation techniques daily. Meditation, breathing exercises, and yoga have long sat at the fringes of the medical community; its holistic practices sidelined to the barrage of lipid lowering drugs prescribed to heart patients. In the Ornish Program though, mindfulness is emphasized as it provides an awareness of our capacity to control what is happening within us, allowing us to better recognize the signs of stress. Finally stop smoking. The independently run Smoking Cessation Retreat Program held at the Safety Harbor Resort & Spa makes this critical step possible through licensed clinicians who help dismantle the routines holding smokers hostage. Founder and clinical program director Yvonne Testa says the Cessation program identifies the rituals and patterns smokers follow and replaces them with healthier coping mechanisms. The four-week program includes in a one-week retreat at the spa where the former smokers learn deep breathing skills, Reiki therapy, and meditation techniques in a supportive small group setting. The Ornish Program is considered rigorous and demanding and is now prescribed by major insurance providers, including Medicare. However, it is not for everyone and not everyone succeeds at reversing heart disease. In the end though, its tenants are good news for health evangelists everywhere: Stop smoking, eat clean, keep good friends close, exercise regularly, and strive for a peaceful mind. Taken together, they add up to a healthy heart. Now that’s a diet worth following. 26 www.duPontREGISTRYtampabay.com

“I am excited about playing the Copperhead Course,” Spieth continued. “I think the tougher courses play in my favor, and I thoroughly enjoy playing there with great memories going back to 2013.” Asked to further expound upon the Copperhead Course, Spieth explained, “It’s a tremendous challenge. In the course of a season, there aren’t many courses that present the challenge the Copperhead Course does. “It’s fair, but you have to hit the ball in both directions,” he continued. “You have to control the ball in swirling winds, and then you have to control your speed on the greens—they get sneaky quick. “I really do enjoy it because it is such a challenge, but a fair challenge.” It’s hard to remember, with all of his successes and insight, that Spieth is just 22 years old.

ast year was a very good year (to put it modestly) for professional golfer Jordan Spieth, and this year is shaping up to be just as spectacular—at press time he was ranked World Number 1, won the 2016 Hyundai Tournament of Champions with a 30-under-par performance, and just finished competing in The Valspar Championship earlier this month. Spieth is very familiar with The Valspar Championship, as it turns out: his first win of 2015 came at the tournament, and he did so with a 30-foot birdie putt during a playoff with Patrick Reed and Sean O’Hair. “It was huge,” said Spieth when asked about the importance of winning The 2015 Valspar Championship. “It was the first time I had ever made a putt to win a professional tournament.” The Valspar Championship win was just the beginning of Spieth’s 2015 trajectory in the golf world. He went on to win his first major, the 2015 Masters Tournament, nonetheless, and tied the 72-hole record set by Tiger Woods in 1997; he also became the second youngest to win the Masters, behind Woods. When Spieth won the 2015 U.S. Open, he was the youngest champion since Bobby Jones’ win in 1923, and only the sixth golfer to win the Masters and U.S. Open in the same year, the first male to have done so since Gene Sarazen in 1922. Additional 2015 wins include the John Deere Classic and The TOUR Championship, and he had very strong showings at the British Open and the PGA Championship. Spieth’s successes on the greens garnered him the 2015 FedEx Cup and 2015 PGA TOUR Player of the Year honors. During a press conference prior to the start of The Valspar Championship, Spieth was asked about defending his title and playing on the Copperhead Course at Innisbrook Resort. “It would be spectacular [to repeat as champion],” he said. “I think it’s a challenge. The thing that’s toughest about it is getting over where you were the previous year, and just forgetting about it.

A New Gem on Clearwater Beach

W

alking into a beach resort, guests may not expect to see exquisite and custom-designed works of art all around, but that’s just what they’ll find when visiting Opal Sands Resort. The resort opened last month on Clearwater Beach, recently named the Number One Beach in the U.S. in the TripAdvisor 2016 Travelers’ Choice Awards. Outside, Opal Sands may be called a work of art in its design, overseen by Design Duncan Miller Ullmann: the concave, classically modern 15-story building features floor-to-ceiling windows on each of its levels, affording panoramic views of the Gulf of Mexico and Clearwater Bay not only from every one of its 230 guestrooms, but from the lobby, restaurants and meeting spaces as well. A Beautiful Way to Complete Your Home

hether you have a passion for plants and an eye for good design like Harry Teasley, Jr., or you leave it to the experts at Argentine Landscaping, a landscape plan that complements your home adds considerably to its aesthetic appeal. Scale, color, balance, size and placement are a few of the elements to consider. “Plants can serve many functions in the landscape, from providing shade, privacy screening, wind and noise abatement, to wayfinding and security,” say Joe Argentine, owner of Argentine Landscaping, and head designer Bart Beck. Elements, such as lighting, walkways and irrigations are also important considerations and “can provide the framework or bones that the rest of the plan can build upon,” says Argentine. Lighting makes the space more functional for both day and evening, provides safe passage and adds a level of security. Irrigation sustains the plants’ health, making sure adequate water is delivered with minimal waste. Drainage goes hand in hand with irrigation, preventing problems that could later cause extensive property damage.

HARMONY INSIDE AND OUT Argentine also points out that the best landscape plans make it possible for a seamless flow between the interior and exterior of the home. He says this is accomplished by schematically designing indoor and outdoor “rooms.” Harry Teasley, Jr., would agree with that idea. His beautiful 2.6acre property in South Tampa, has a half-dozen outdoor spaces, each with a different eco-system. It’s fun to watch the occasional heron land next to realistic looking statues along the banks of the pond, which is lined with Water Oak, Jacaranda, Royal Poinciana, Hong Kong Orchid, cycads and much more. So much lush foliage fills the yard that it provides a nice barrier both visually and for sound. Standing inside, you would never know the property fronts busy Bayshore Boulevard. Around the side of the house, you’ll find fruit trees, including mango, star fruit, pink grapefruit, bananas, Surinam cherries, macadamia and oranges. By the pool, there are huge gardenia and croton bushes shaped like giant balls.

A LABOR OF LOVE “I’ve probably tripled the biomass of this place in the last 25 years,” says Teasley, who has a gardening crew of three to help him with the grounds. Near the house, bougainvillea leans against the wall in the French knot garden. A conservatory is filled with bonsai and orchids. And next to a walkway, African lily, calla lilies, hibiscus and birds of paradise are lined up in a row—“my Florida version of an English perennial garden,” says Teasley. His gardening secret? He prefers a natural look and he has an appreciation for texture, color and water elements. “I simply bought plants and figured out what I could do with them one at a time,” he says. “I like the idea of looking around 360 degrees and always seeing something beautiful and different in every season. It’s a lot of work, but I love it.”

W

hen Keith Overton of TradeWinds Island Resort partnered with world-famous artist and marine conservationist Guy Harvey on the new Guy Harvey Outpost Resort, they turned to the stars of Animal Planet’s “Tanked” to create an over-the-top, exotic marine aquarium experience for visitors. And they certainly have. A 33,500 gallon saltwater aquarium is filled with some 30 different species of Gulf of Mexico sport fish. It covers one entire wall at RumFish Grill, the themed restaurant at the new resort. The tank holds about 130 fish and is 42-foot-long, 12-foot deep – big enough that cleaning it takes two scuba divers about an hourand-half every week, says Zach Ostroff, curator of Secrets of the Sea, the marine education and conservation organization overseeing the aquarium operation. There are actually five saltwater aquariums at the resort. A smaller “juvenile” tank filled with colorful blue tangs, angel fish and parrot fish is also located in the restaurant. In the bar, you’ll find the predator tank with trigger fish, puffers and lion fish, the beautiful foreign invasive species with the bad reputation. Across the way in the gift shop area are two additional tanks, a “middle school” tank with mid-sized red drum and other natives, and a touch tank with critters like sea urchins, chocolate chip sea stars and a green brittle star with long spindly legs. But the big tank takes center stage. A massive acrylic display window is 30 feet long, 10 feet tall and six inches thick. Diners watch as redfish, black drum, snook, grouper, tarpon and snapper swim back and forth in a realistic marine environment that includes handmade coral and mangroves. A six-foot reclusive green moray eel slinks in the corner. Building the aquarium was one of the largest and most challenging projects that Acrylic Tank Manufacturing has undertaken. On one side of the tank, a unique “J” panel curves up and overhead to form a “see-through ceiling. It’s uncanny to look up to see fish swimming above your head.

WHAT DOES IT TAKE TO MAINTAIN AN AQUARIUM THIS SIZE? “We use about 2,500 gallons of water a week,” says Ostroff. “We purify the tap water in a reverse osmosis process and then use artificial sea salt to create saltwater. “ Two big storage vats, one for salt water, one fresh water, each hold 3,000 gallons of water. Upstairs in an area just off the parking garage, is the behind-thescenes life support system. There’s a back-up generator in case of a power outage, a heat pump to maintain aquarium temperatures at a constant 77°F, and a filtration system, which moves up to 36,000 gallons of water per hour. A protein fractionator injects air into the water and a biotower gets rid of ammonia buildup. This is also the first stop for wild fish. They’re quarantined and treated prophylactically for disease, and acclimated to life inside a big tank. “We get everyone ready to live together comfortably,” says Ostroff. It’s the ultimate meet and greet.

eing the executive chef for a Tampa Bay restaurant is beyond challenging, given the amount of delicious competition that breeds high expectations from patrons. Now, multiply that pressure by eight, and you have a sneak peek at the responsibility put on Bill Gideon’s shoulders. As the Executive Chef at Tampa’s Seminole Hard Rock Hotel & Casino, he oversees everything for the property’s eight dining options. We sat down with Chef Gideon, who has worked in five-star five-diamond restaurants for the better part of 20 years and who has also owned his own restaurants, to discuss his career, his food philosophy and more. How did you get started in the culinary world? I’ve been cooking professionally since I was 14 years old, so that’s 37 years. I was a vocal and instrumental major in college, and I wanted to go to Broadway. I was in college, and I started working at a four-star restaurant, and quite literally, that’s when I put music on the back burner because I had found my love for cooking. What’s the first thing you remember cooking? Scrambled eggs. By the time I was 8, I could make a pot roast and bake biscuits. My mother and stepfather worked long hours, so I would have dinner ready when they got home from work. My mother’s background was Jewish so her family had tons of recipes, and I would sit and read those and experiment in the kitchen. What’s your food philosophy? You have to cook from your heart. My natural evolution has been to inspire and to teach what good food is and not to be afraid of it. I’m not on the stove every day, but I have a great team of several hundred employees. I have to be an inspiration and live above reproach. You have to walk the talk you talk. I have such a great foundation in my years of experience that I can look at someone’s menu and see what their thoughts and processes are, and I use that as an inspiration tool to lead and inspire my team. Do you cook often at home? I cook at home all the time. I get up at 5 in the morning, and I make my daughter and my fiancée breakfast and lunch so they take it to work and school. I started in the kitchen as a dishwasher, like many chefs do, and still to this day, I find it very therapeutic to wash dishes. You have to remember where you come from and you have to stay grounded, and washing dishes reminds me of that. What are some of your favorite dishes at the casino? Council Oak is our prime steakhouse, and the prime meat we bring in is handselected for our restaurant. Our number 1 seller is the filet, but a close runner-up in my opinion is the long bone cowboy ribeye. We will engrave your name on the bone, so it has a great presence but it also has so much flavor. Fresh Harvest also really blows me away because there are seven different action stations. This is not a buffet with a long line. You can go to each station and taste something and watch is being cooked right in front of you. All the food is cooked to order as much as possible and we try to give you that fresh experience. What do you want to be known for? I want our property and my team to be known for setting the bar for quality and great tasting food. Ninety-five percent of our food is made from scratch. I want people to know we aren’t following anyone, but rather, we are setting the pace.

WAGYU BEEF TARTARE WITH CRISPY LEEKS, CILANTRO, CAPERS, QUAIL EGG AND SMOKED PEPPER AIOLI Ingredients 6 oz. wagyu filet, cubed 1 tsp. capers, Lilliput 1 tsp. shallots, diced 1 tsp. cilantro, chopped .5 tsp. roasted garlic, paste Dash of Worcestershire sauce Dash of extra virgin olive oil Salt and pepper to taste 2 oz. leeks, fired 1 Quail egg 1.5 oz. chipotle mayo Pinch of smoked salt Apple wood smoke Tartare Mixture Directions Trim all fat and silver skin away from the wagyu tenderloin. Cut wagyu into a small dice. In a mixing bowl, add Diced wagyu tenderloin, capers, shallots, cilantro, garlic paste, Worcestershire sauce, olive oil, salt and pepper. Fold in all of these ingredients until everything is evenly mixed. Set aside. Plating Directions Using a round mold, place the tartare mixture into the mold. Place mixture in the center of the plate. Fill to top of the mold and flatten, like you are making a hamburger patty. Place a thumb-size impression into the center of the tartar mixture. Place the raw quail egg into the indent in the mixture. Take the leeks that have been fried previously and make a nest out of them right next to the egg on top of the mixture. Season the egg with smoked salt. On the rim of the plate, place a dot of chipotle mayo and run your spoon through it. Place cloche over top of the tartare

mixture. With a smoking gun, begin to smoke the tartare until the cloche fills up with smoke. Once there is smoke inside, remove the tube from the smoking gun and close the cloche. Remove the cloche tableside and enjoy. Serves 1

ust a little more than a year ago, Sea Salt opened its doors in the heart of St. Pete’s charming downtown area just two blocks from the waterfront. The sophisticated, metropolitan restaurant with unique designer-decorated niches, a soaring wine tower with 5,000 bottles, a lively bar and oyster bar, and a private dining room has been filled ever since. The broad menu leans toward Italian and seafood with items that satisfy all palates and all dishes are distinguished by the freshest ingredients. Ingrid Aielli, owner of Sea Salt with her husband Chef Fabrizio Aielli, describe the menu as “Fresh, from the fresh fish bar at the entrance, to the oyster bar, where we have an oyster sommelier! Sea Salt has the freshest and largest selection of whole fish that I know of. The menu also is heavily influenced by Italian flavors since Fabrizio is Italian. "We thought the restaurant would be a great addition to the downtown area,” Ingrid says. “St. Pete is surrounded by water, which fits our seafood emphasis, and it reminds us of Venice, which speaks to the Italian influence on the menu. LOBSTER RISOTTO WITH ROASTED TOMATO AND WHITE TRUFFLE PERFUME Roasted Tomatoes 2 Medium-size plum tomatoes, halved lengthwise Pinch of salt Pinch of dried oregano Extra-virgin olive oil Garlic-Infused Olive Oil 3 garlic cloves, halved lengthwise


½ cup of extra-virgin olive oil Sea salt, to taste Freshly ground black pepper, to taste Risotto ¾ pound lobster meat, cooked 1 tablespoon Garlic-Infused Olive Oil (see left) ½ white onion, chopped 1 ½ cups Acquerello Carnaroli rice ½ cup dry white wine 4-5 cups lobster stock (or seafood or vegetable stock) ½ cup tomato sauce 10 leaves fresh basil, finely chopped 1/3 cup, plus 2 teaspoons unsalted butter 1 tablespoon Italian parsley, chopped, plus extra for garnish 2 tablespoons white truffle oil Sea salt, to taste Freshly ground pepper, to taste Grated Parmesan cheese (optional) Prepare Roasted Tomatoes (6 hours ahead) Season tomato halves with salt and oregano. Place in colander. Let tomatoes sit four hours to remove moisture and concentrate flavors. Preheat oven to 125 degrees F. Line a baking sheet with aluminum foil. Place tomatoes, cut side down, on foil. Drizzle with olive oil and roast for 3 to 4 hours, until tomatoes are slightly shrunken and cooked but not dry. Remove from oven and cool for 5 minutes before handling. Remove skins if desired. Make Garlic Olive Oil (1 hour ahead) Place garlic and olive oil in a small saucepan over lowest heat. Heat for 1 hour or until garlic becomes very soft and infuses oil. Remove garlic. Season to taste. Prepare Risotto Cut lobster meat into ½-inch cubes. In a heavy-bottomed pot over medium-high heat, place garlic oil. Add onion and sauté, stirring constantly, taking care not to brown. Add rice and cook, stirring for about 2 minutes. Add wine and stir constantly until absorbed. Add stock, about ½ cup at a time, stirring constantly and adding more as liquid is absorbed. Continue process until rice is soft and creamy, but slightly al dente. Note: Some brands of rice may require extra stock to reach desired doneness. Add roasted tomatoes, tomato sauce, basil and lobster meat, continuing to stir. Cook mixture for another 4 minutes. Stir in butter, parsley, truffle oil, salt and pepper. Stir well to combine all ingredients. Serve warm. Garnish with parsley and grated Parmesan, if using. Serves 6

t The Sarasota Studio, a division of the Dimmitt Automotive Group that opened in downtown Sarasota late last year, clients won’t find rows and rows of cars from which to choose. In fact, they won’t even find a car lot. “It’s a really cool downtown location with a different type of vibe,” said Todd vanHerwynen of The Sarasota Studio. “We’re not your typical car dealership.” “We’re a very unique, very unusual showroom,” said Liz Manes of The Sarasota Studio. “We’re a beautiful, large, open industrial space with polished concrete floors and exposed beams. The artwork on the walls is from State of the Arts Gallery across the street.” Just as the gallery across the street, Liz likens The Sarasota Studio to a venue in which to look at beautiful pieces of art. “Just art you can drive,” she laughed. In fact, the space is so appealing that Liz and Todd have hosted several small meetings and group events. “We really want to be a part of the community and be a part of the weave of Sarasota,” said Liz. “We’re right in the heart of downtown Sarasota, near the ballet, the museums, the galleries and restaurants,” Liz continued. “We’re so different, but so well-received. We bring a different blend of art to the area.” It’s not only the studio’s appearance that differentiates it from other car dealerships in the area, however; it’s the car buying experience as well. “Liz and I are the only ones at the studio,” explained Todd. “Everyone who walks in is going to be introduced to both of us.” “It’s a very low-pressure, informal type of meeting when someone comes into the studio,” added Liz. “We’re here to change the tone of what it might be to purchase a car.” That low-pressure, informal attitude extends to the car buying experience, too. Todd explained that clients won’t find the typical back

and forth of buying a car, but rather he and Liz try and do what’s best for their clients. Dimmitt Automotive Group is an authorized dealer of Aston Martin, Bentley, Rolls Royce and McLaren. The studio on State Street can display up to 22 ultra-luxury/exotic pre-owned automobiles in the showroom, and Liz and Todd have access to the full inventory of cars available through the Dimmitt Automotive Group.

hen asked why the area is such a hotbed for craft breweries, Green Bench co-owner Nathan Stonecipher cited, “…we have a bit more of an entrepreneurial culture here. There are people willing to take a risk and do something unique, that’s a passion of theirs rather than a traditional career path. “Cigar City set the bar high when they first opened,” said Stonecipher. “There was a home brewing culture here in the area to begin with, and a lot of people were interested in brewing. When Cigar City opened, it was sort of a catalyst to get people thinking, ‘Hey, I can do this, too.” Stonecipher and his business partner Steven Duffy were home brewing hobbyists themselves, as was Green Bench’s head brewer Khris, who learned more about the industry when he worked for Cigar City and Southern Brewing and Winemaking before making his way to St. Pete. “Without a doubt there’s a great camaraderie among the area’s breweries,” said Stonecipher. “Brewers are a sharing, friendly group of people. You get help opening your brewery, and you help out the guy who’s coming up after you. It’s an outstanding industry to be in. “Right now, and it’s true here in Florida as well as in other states, we see it as we’re in this together,” Stonecipher said. “We still have such a small piece of the market share; we’re not going after each other’s customers, just creating more craft brew fans.” According to Stonecipher, “At Green Bench, we’re focused on challenging beers that are unique and push the status quo of flavor profiles.” He went on to say that the brewery uses two custom-built oak

Green Bench Brewing Co., which opened in downtown St. Pete late-2013, was named in tribute to the city’s early–1900s history when it was known as the “City of Green Benches.”
