RECONNECT AT MOUNTAIN TREK
W
alking through the secluded forest, the only sounds heard are birds chirping overhead, and the thudding of hiking boots and poles as they make contact with the ground below. All around, trees soar up to the sky, delicate flowers bloom in the most unlikely places and creeks rush down the mountainside. Looking up to the treetops, blue sky peeks above and the sun’s dappled light streams through the branches.
...THE HIKING, AND THE ENTIRE MOUNTAIN TREK PROGRAM, IS ANYTHING BUT A CASUAL WALK IN THE PARK. That is but just one scenario when hiking with Mountain Trek in British Columbia, Canada. And though it sounds serene, the hiking, and the entire Mountain Trek program, is anything but a casual walk in the park. The one- and two-week all-inclusive hiking retreat programs — the only mountain-based hiking, fitness and weight loss program in all of North America — are intense yet intimate, limited to 16 guests per week, with a 4:1 staff-to-guest ratio. Days at Mountain Trek begin with a soft knock on your bedroom door and a cheery “good morning” at 6 a.m. —there aren’t any TVs or radios in the lodge’s bedrooms or common areas, and just a few strategically-placed clocks — and the program flows effortlessly through the day. After the wakeup knock, mornings typically include a restorative yoga class, followed by breakfast and a talk with one of the experienced staff members who share their expertise in the five steps of the program, the Mountain Trek Way: nutrition, fitness, detoxification, sleep health and stress management. Afterwards, it’s to the mountain trails for three to four hours of hiking, enjoying lunch mid-way with a fabulous view, whether on a lakeside beach, perched atop a mountaintop, or any place that looks inviting. Back at the lodge in the afternoons, another talk may be presented, or perhaps time for a quick soak in the hot tub before dinner, which is then followed by a workout class. When 7 o’clock rolls around, everyone’s favorite part of the program begins: massages. Each guest enjoys three hour-long massages included with their stay, and there’s always the option to add-on more, or even reflexology, acupuncture, or cranial sacral therapy sessions, to name a few more. The incredibly attentive Mountain Trek staff makes sure everything is done for you once you arrive so that all you have to do is focus on you, which is somewhat easy since all aspects of the program are individualized for each guest. From preparing delicious, clean meals and snacks that cater to every eating regimen, to customizing fitness routines and hiking groups to be sure you get the best workout for you, to preparing your room for your return, to doing your laundry. Yes, laundry – the staff is constantly washing and folding to make sure you have what you need to make the most of your stay. But it’s more than your stay – the Mountain Trek team ensures you have the tools to take home so that you can continue to take advantage of all that you’ve learned during your program and continue your journey. In fact, an app for Mountain Trek alumnae is soon launching as another tool to help keep on track. After all, as Mountain Trek guide Cathy says, “Little steps get you up the mountain.” 18

LET YOUR SPIRIT SOAR WITH AERIAL YOGA

oga studios throughout the Tampa Bay area offer myriad classes to meet every interest and level of practice, from beginner to advanced, and the studios themselves are often as varied as the classes offered. One yoga practice that has taken off over the past few years is aerial, or swing, yoga, which takes traditional yoga positions and puts them up in the air using the same type of silks and swings as those used in the aerial arts (think Cirque du Soleil).

THE NUMBER ONE REASON PEOPLE WANT TO TRY SWING YOGA IS BECAUSE IT’S FUN...
“The number one reason people want to try swing yoga is because it’s fun,” explained Francine Messano, owner of Yoga Downtown Tampa. “They see that it’s so beautiful, acrobatic and athletic looking, but it’s surprisingly attainable for people. Swing yoga increases flexibility and strength, relieves stress and tension in the neck, and decompresses the spine.” Francine went on to mention that professionals who sit behind desks all day are looking to let loose and relax, and, “what better way than to hang upside down?” She also said that swing yoga classes are approached with a sense of humor, and that her students return because the people in the classes are supportive and that they enjoy the company. “Laughter and approaching anything with a fun attitude is the first way to release stress,” Fran noted. South of the bay area, Kerry Tice, owner of Circusoul Yoga, fell in love with the circus arts and flying trapeze while growing up in Sarasota. Instead of pursuing a medical career as planned, he felt called to return to the trapeze and discovered aerial yoga when he sustained an injury. “I found so much power and healing in the release I felt in my back,” said Kerry. Shortly thereafter, he created an hour sequence for classes that were offered in South Florida in 2009. Later that year he moved back to Sarasota and opened Circusoul Yoga. “I wanted to create an original program here in Sarasota,” said Kerry. “Aerial yoga is an answer to problems that so many people have with their bodies, and they’re seeing results from taking classes just a few times a week.” Today, Circusoul Yoga offers yoga classes to compliment aerial yoga, as well as aerial dance class and aerial yoga teacher training, registered with Yoga Alliance. Kerry also developed his own hammocks that are used in the aerial yoga classes; the hammocks are made in-studio and sold around the world. “Swing yoga is a wonderful, fun introduction to possibly finding the deeper meaning of yoga,” said Fran.

For example, the traditional surgical face-lift may one day be replaced by stem cell treatments that regenerate tired tissue. The idea of stem cells – those embryonic keys to our longevity – is gaining momentum in the plastic surgery world and may eventually offer remarkable results with minimal downtime. However, science has to answer critical questions, such as what happens when stem cell regeneration is concentrated in specific areas, such as breast tissue Dr. Naidu explains. Additionally, research is currently underway to artificially manufacture the signaling proteins used by stem cells to communicate, which could potentially eliminate the need to harvest stem cells. Right now, he says, we are on the edge of a stem cell revolution and still in the rich terrain of neurotoxins, fillers, injections, and, of course, machine-based skin rejuvenation for nonsurgical methods to turn back the clock.

TELEMEDICINE PROGRAM ARRIVES IN TAMPA BAY
W
hat if you could access a doctor regardless of your location? You could be at your home, school, office or traveling with family, the list is endless. Tampa General Hospital and American Well have made that idea a reality. You can now access a doctor with your smartphone, tablet or computer. Tampa General Hospital is providing urgent medical services to patients using online video in partnership with American Well. TGH Virtual Care allows patients suffering from non-emergent medical conditions to link to board-certified doctors from Online Care Group, American Well’s nationwide medical affiliate. The interactive service employs high definition video that is available 24 hours a day, seven days a week through a mobile app on electronic devices using the web. TGH Virtual Care users will interact with board-certified physicians using secure, live video while at home, work or on the road. Doctors will review the patient’s clinical information, devise a treatment plan, prescribe medications as needed and suggest follow-up care.

“We want to expand ways people can access medical services quickly, conveniently and at a lower cost than a trip to the hospital,” said Jim Burkhart, President and CEO of Tampa General. “It offers medical care after regular business hours and over the weekend from anywhere with an internet connection.” TGH Virtual Care is set up to treat non-emergencies including upper respiratory conditions like bad colds, the flu, bronchitis and sore throats. Doctors will also virtually treat earaches, eye infections and body aches and pains, to name just a few conditions. A Harris Poll of about 2,000 adults conducted for American Well in 2015 found that 64 percent of American consumers were willing to visit a doctor using video telehealth. The poll also found that 21 percent of consumers would select a video visit over a trip to the emergency room. That number rises to 30 percent for parents of children under 18. The poll also concluded that 70 percent of people surveyed would rather have an online video visit than go to a doctor’s office to get their common primary care prescriptions. “Patients are using technology every day to access services on-demand and TGH Virtual Care is yet another new example. The idea of bringing care to the patient—wherever they may be—is especially appealing to consumers. With TGH Virtual Care, Tampa General Hospital is continuing to offer word-class healthcare by bringing it deeper into the communities it serves,” said Danielle Russella, President, of client solutions, at American Well. tevie Morgan started her company to help her father. The busy executive ate badly and had gained weight. Today, Morgan’s Cater Me Fit delivers chef-prepared meals to him several times a week and is among the trend of companies catering “clean foods” to health conscious individuals. For the uninitiated, "eating clean" is a catch phrase for enjoying food that is as near to its natural or "whole" state as possible. For example, frozen sweet potato fries are a good choice but not as healthy as a freshly baked sweet potato. lack stainless appliances, cool new wallpaper designs and exotic countertops. Tampa Bay’s design experts share what’s hot in luxury home décor for 2016.
Not Your Grandmother’s Wallpaper: Enrique Crespo of Crespo Design is crazy about wallpaper. “Wallpaper can add a subtle layer of texture and color that you just can’t get from paint,” says Crespo. Traditional toile wallpaper is still beautiful, he says, but it’s the new wallcoverings that are catching attention with their interesting combinations, such as mother-of-pearl, amethyst or recycled newspaper. For families with young children, Crespo suggests commercial grade wallpaper. “It’s virtually indestructible and easy to care for,” he says. Variety is the Spice: Brigette Pina of Ethan Allen reports that for the first time, this summer Ethan Allen is introducing several distinctly different product lines all at the same time. The new “South of France” features an old-world distressed look with beautiful carved pieces. Buckhead, named after the affluent suburb of Atlanta, showcases bright pinks, rich greens and blues. Santa Monica features California chic, while Brooklyn mixes up metal with stone and heavy wood, or shiny reflective surfaces with a brick wall as a backdrop. “Brooklyn is very hot right now with millennials, who love the idea of taking older classic designs and creating a totally updated look,” says Pina.

Amazing Baths: Olde World Cabinetry is pleased to announce that this summer they will become the exclusive showroom in the area for Crosswater Bathrooms, a leading bathroom design firm that is headquartered in England. “They’re very European in their approach to design and innovation, but also offer a wide range of styles, from traditional and elegant to very contemporary,” says Braamse. “Their products are quite distinctive.” Ferguson Bath, Kitchen & Lighting Gallery is also an expert in luxury baths. And Marc Hammar, showroom manager, says new trends in bath design are showcasing innovative technology, such as electronic showering and steam generators integrating with your smartphone or tablet, or bath ventilation with Bluetooth capabilities. In addition, he says that manufacturers are developing shower drains that mount to the bottom of the wall as opposed to the floor, creating a seamless installation. Hammar also notes that gold lighting fixtures that vary in hue from soft rose gold to a deep burnished gold are “all the rage” right now. In addition, he says designers are incorporating linear LED light strips into the ceiling, as opposed to recessed can fixtures.

Gorgeous Woods & Exotic Countertops: Wired-brushed oak and ash are hot as shelving and accents for kitchens and baths, says Ralph Mills of Artisan Design. “Wire brushing raises the grain and gives the wood a textured look without the feel,” says Mills. Also popular are high-gloss acrylic finishes and a blend of stains, such as an earth-tone base complemented with a transparent grey or white on top. In addition, he reports that countertops and back splashes are going exotic with black, gold and silver combinations. Quartzite adds a pop of interest. The Little Details Count: Suzan Decker Ross of Decker Ross Interiors points out that unusual ceiling details are gaining in popularity. For example, she and her design team recently created a curved ceiling detail for a client whose living room has panoramic views of the water. “We dropped the soffit down about eight-to-ten inches and then backlit everything with a ring of LEDs so the light flows over the ceiling almost like a waterfall,” says Decker Ross. The end result adds drama and ambience to the space. Other new trends? Decker Ross says she is seeing a growing interest in black stainless steel kitchen appliances (they don’t show all the fingerprints like more traditional stainless), a second set of chandeliers in the dining room, especially over a long rectangular table, and color shades of taupe, gray and silver metallic with highlights of blue. Whatever new trends for 2016 speak to your sense of style, creating a beautiful interior design is all about good taste and attention to details.

Now, in my mid-60s, luxury to me is not a material achievement but a personal one: having the time to enjoy the company of the people I love—my wife Gelila, our sons Oliver and Alexander, and my two grown sons Cameron and Byron. What do you love to splurge on? My personal philosophy of good cooking,
a concept I teach in every single video recipe class in my new Wolfgang Puck Online Cooking School, is that you always start with the best-quality ingredients and then cook them in ways that highlight and intensify their natural flavor, aroma, color and texture. So, in general, I’d have to say that I like to spend money on good-quality ingredients, especially if they offer pleasures I can share with my family, my friends, and the guests in my restaurants. What does your travel schedule look like up ahead? I do a lot of travel for my businesses, with new restaurants opening up all the time around the world. I’ve found it fascinating to visit the new locations of our restaurants in Dubai, and Istanbul and Singapore. We have a new Wolfgang Puck restaurant opening soon in the Disneytown district of the new Shanghai Disney Resort, and I can’t wait to visit there. What is your favorite dish and who cooks it? My all-time favorite dishes were ones that my mother and grandmother cooked for us when I was growing up. One of them was my grandmother’s giant Austrian-style ravioli filled with potato, cheese, and fresh herbs, served topped with freshly grated cheese and brown butter. She made it for us almost every single week. When I recently filmed a lesson in how to make that dish for my online cooking school, I actually got choked up, reminiscing about how she made as I recorded the dish for the members who watch online. Good food has that kind of power to bring back memories. What is your best tip for living fabulously? More and more, I’m aware how important it is to eat healthfully and to exercise. Healthy food and delicious food aren’t mutually exclusive, and I certainly teach ways to achieve both goals at once in my online cooking school. As I mentioned before, even though I may now have more of the material success I had dreamed of when I was a young chef just starting out, the greatest luxury to me today is not material things but the time I get to spend with the people I love. And I think that cooking great food at home every day, as I love to teach people how they can do so easily through my online cooking school, is one of the secrets to achieving that goal. You’d be surprised by the effect a delicious home cooked meal—in which the home cook has learned through the simple tricks I share to easily turn ordinary everyday recipes into something extraordinary —can transform a family’s life by gathering everyone around the table. What is the one luxury you would have the hardest time giving up? I’d have a very hard time giving up good food and good wine, especially when I’m enjoying them both in the company of the people I love. Are there any wardrobe items you can’t do without? Most of my days and evenings I spend dressed in a classic white double-breasted chef’s jacket, personalized with my initials, WP. But, being a chef, I find really comfortable shoes are a must. The make may vary, but it’s got to offer good support while also being made with soft leather that is easy on my feet.

WOLFGANG PUCK’S FAMOUS "Chinois" Asian Chicken Salad
Ingredients: 1 cup raw cashews 6 wonton wrappers peanut oil for drizzling 3 green onions, trimmed and cut diagonally into thin slices 2 medium heads napa cabbage, several large leaves reserved, remaining leaves cut into thin strips 10 pods snow peas, trimmed, blanched briefly in boiling water, cooled in ice water, and cut into thin strips 1/2 small head radicchio, leaves cut into thin strips 1/2 small head romaine lettuce, or iceberg lettuce, leaves cut into thin strips 1 carrot, peeled, trimmed, and cut into thin strips 1 red bell pepper, quartered, stemmed, seeded, deveined, and cut into thin strips 1 whole roast or rotisserie chicken, about 4 1/2 pounds, for about 4 cups shredded cooked chicken meat 1/4 cup unseasoned rice vinegar 2 teaspoons dry Chinese mustard, or English (Colman’s) mustard 1 teaspoon soy sauce 1 tablespoon pickled sushi ginger, chopped, plus 1/2 teaspoon of its juice 1/2 teaspoon Asian-style toasted sesame oil 1/2 cup peanut oil 1 pasteurized egg yolk kosher salt freshly ground black pepper 1 teaspoon honey Directions Toasting the cashews: Preheat the oven to 450°F. Spread the cashews on a baking sheet. Toast in the oven until deep golden brown, stirring occasionally, about 10 minutes. Set aside to cool. With the bottom of a heavy pan, or with a meat pounder or other heavy object, gently press down on the cooled cashews in the baking sheet to crush them coarsely. Baking the wonton strips: Stack the wonton wrappers and, with a sharp knife, cut them into strips about 1/2 inch wide. Toss them on a baking sheet to separate them. Drizzle with a little peanut oil and toss again. Bake in the 450°F oven until deep golden brown, about 15 minutes. Set aside to cool. Crisping the vegetables: Fill a mixing bowl halfway with ice cubes and water. Add the strips of Napa cabbage, snow peas, radicchio, Romaine, carrots, and bell pepper. Leave to crisp in the ice water for about 30 minutes. Spinning the vegetables dry: Lift out the vegetables from the ice water and transfer to the basket of a salad spinner. Spin the vegetables to remove excess water. Transfer the vegetables to a large salad bowl. Discard the water from the spinner. Cutting up the chicken: Remove any skin from the cooked chicken and pull out and discard any bones. With a sharp knife, cut the meat into bite-sized slices or strips; or shred it by hand. Add the chicken to the salad bowl. Blending the vinaigrette: In a measuring cup, combine the rice vinegar, mustard, soy sauce, pickled ginger and its vinegar, sesame and peanut oils, and egg yolk. Insert an immersion blender, positioning it over the yolk. Blend, gradually moving the blender up and down the cup, until the dressing is emulsified, smooth and creamy. Season to taste with salt, pepper, and a little honey, briefly blending them in.

Dressing & tossing the salad: With clean hands or kitchen tongs, toss together the chicken and vegetables. Drizzle in enough around the side of the salad to coat the ingredients thoroughly but lightly, and toss again. Taste and adjust the seasonings, if necessary, with more salt and pepper. Serving the salad: Arrange the reserved whole cabbage leaves on a chilled large serving platter or individual plates. Mound the salad on top. Garnish with cashews, wonton strips, and green onions. Serve immediately.

But what’s even more fantastic about this place is the way it all began. Dorsey explains, “After opening many restaurants for other owners, I knew it was time to do my own restaurant. One day while looking at another space with a group of guys, I met my now business partner, Jason Griffin. We passed each other our cards and The Mill was born. For years I was searching for the ‘me’ of the front of the house and finally I found him. Combined, we have opened almost 70 restaurants. The Mill was a concept we always wanted to do. Q&A WITH THE SCULPTOR NINA WINTERS
“
...I HAD A DREAM ABOUT A HUGE SCULPTURE IN SPACE AND THAT DREAM PROMPTED ME TO START SCULPTING; I STARTED SCULPTING THAT DAY AND HAVEN’T LOOKED BACK!
N
ew York City-born and raised artist Nina Winters attended the College of Fine Arts and Architecture at Cornell University, and the School of Visual Arts and Parsons School of Design before moving to New Hampshire. Today, Nina splits her time between studios in Clearwater and the backwoods of New Hampshire. We recently caught up with Nina whilst in Clearwater to talk about her career, inspirations and artwork. You began your career in painting. How did you transition to sculpture? I always wanted to be a sculptor, but got caught up in the painting program when I was at Cornell; it was very good and interesting. Much later, I had a dream about a huge sculpture in space and that dream prompted me to start sculpting; I started sculpting that day and haven’t looked back! I sculpt mainly in bronze, sometimes in aluminum, and have just started working with glass, which I’m incorporating into the bronze. Everything is opening up – it’s a very beautiful time for me. From where do you draw inspiration that is reflected in your work? I spend most of my summers in New Hampshire, in a beautiful studio I built a long time ago, overlooking Mount Monadnock, and on the water where I live here in Clearwater. Like a lot of artists, I draw inspiration from wherever I am. I travel a lot as well, and actually just returned from France and Ireland, but also draw inspiration from my travels to South Africa, the Seychelles and South America. A lot of my art reflects those moments when I would just see something – you know, when something hits your heart. I try and take a moment of emotion and passion in a broad sense and turn it into sculpture. What are a few of your favorite pieces, or is that like asking which is your favorite child? No, I do have favorites. “Angel of Peace” is a piece that begs people to consider being bigger than themselves. The sculpture depicts a beautiful young mother with wings wearing all white, holding a child. It’s a very inspirational piece, and I’m hoping to find a partner to a backer for the sculpture so that we can present it as a gift from America to France or Belgium, in light of the recent tragedies in those countries. 80

BEHIND THE SCENES WITH EDDIE DEBARTOLO
“
IT FELT LIKE WE WERE ON A TV SHOW,” RECALLS DEBARTOLO. “WE HEARD A KNOCK ON THE DOOR. I KNEW THAT IF IT WASN’T DAVID BAKER, PRESIDENT OF THE HALL OF FAME...
E
ddie DeBartolo and his wife Candy were in their room at the Stanford Park Hotel in San Francisco waiting anxiously for news about one of pro-football’s biggest events of the year – the inductees to the Pro Football Hall of Fame Class of 2016. “It felt like we were on a TV show,” recalls DeBartolo. “We heard a knock on the door. I knew that if it wasn’t David Baker, president of the Hall of Fame, that meant I didn’t make it. “I looked through the peephole and it was Baker. I opened the door and he grabbed me and hugged me. I broke down and Candy broke down. I was honored and humbled beyond words. But, I also felt terrible for all of the finalists who didn’t make it.” It’s that streak of humility and compassion mixed with unerring business acumen that has made DeBartolo the man he is today. Former NFL running back and Hall of Fame recipient Eric Dickerson sums it up best: “Eddie D was one of the best owners that I wish I would have had the opportunity to play for.” In the spring, the DeBartolo’s talked to the duPont REGISTRY™ Luxury Living In Tampa Bay from their home in Avila that they share with Eddie’s beloved dogs - a greyhound, an enormous Great Dane-Saint Bernard mix and a schnoodle, a cross between a schnauzer and a poodle. When he’s not immersed in business, Eddie escapes with the dogs to Montana where he has a second home. Eddie and Candy met in high school and have been married 47 years. They moved to Tampa in 2000, after Eddie retired as the legendary owner of the San Francisco 49ers – the first franchise to win five Super Bowl Championships. In August, he’ll be inducted into the Pro Football Hall of Fame. What was the secret to his team’s success? “Back then it was totally about relationships. We were close to all of the players, more like friends than owners. It was always a mutual admiration society,” says DeBartolo. “I’ve stayed in touch over the years and recently met up with eight of my former players in Las Vegas – we had a great time.”

Today, DeBartolo is focused on philanthropy. He credits his daughters, Lisa, Tiffanie and Nikki, for the remarkable job they do running the DeBartolo Family Foundation, which over the years has donated $13 million dollars to worthwhile causes. “It comes from the heart. We don’t do this for the publicity,” says DeBartolo. “We can’t help cure all of the world’s ills, but it’s our belief that we have to help people in any way we can.” What’s next on his agenda? “After all those years of travel with football, it’s nice to just enjoy myself and spend more time with my family, especially my three grandsons, ages 5, 7 and 12,” says DeBartolo. He’s also continuing the real estate legacy established by his father, Edward DeBartolo, Sr., who built the first enclosed shopping mall in the country back in the 1940s. Recent projects undertaken by DeBartolo Development include Brooks DeBartolo Collegiate High School in Tampa and a new shopping mall on Oahu in Hawaii – the first new project of its kind on the island in 40 years. GIFTS BUILD BRIDGES BETWEEN COUNTRIES
T
he Tampa Bay Rays made history this spring when they became the first professional team to play in Cuba since the Baltimore Orioles took on the Cuban national team in 1999. The exhibition game at Estadio Latinoamericano uniquely showcased our community as both United States President Barack Obama and his counterpart Raul Castro attended. However, it was the team’s philanthropy that brought the two countries closer. In addition to hosting off site 90-minute instructional clinics for about 10 youth league teams, the team’s coaches and players took the opportunity to give back to the Cuban people at the ballpark.

...WE LITERALLY BROUGHT BOXES AND BOXES OF THINGS WE COULD SHARE WITH THE FANS... “We covered our bases pretty well,” quipped Rick Vaughn, vice president of communications for the Rays. “We literally brought boxes and boxes of things we could share with the fans. We only were there for 48 hours and were not sure how much interaction we’d have with them (the fans) outside the ball park.” Former Rays’ catcher Rene Rivera knew a little more about what to expect. The Puerto Rican native traveled throughout the Caribbean while playing winter ball for 15 years. He saw first hand how little access the kids had to everyday educational tools.

Former Tampa Bay Rays Catcher Rene Rivera hands out gift bags to Cuban children who performed in the pre-game ceremonies. Together, he and his wife Mariel Rivera packed 51 gift bags of schools supplies. Not sure how or when they could distribute the more than two-dozen filled boxes and individual gift bags, the team waited for the best opportunity. Turns out, everyone arrives really early when two heads of states visit a ballpark. Although the game started at 2 p.m. the estimated 55,000 fans were in their seats by noon, patiently watching the team’s pre-game drills. It was then that the players and Major League Baseball management brought the boxes on field and started displaying good old fashion American generosity: “Even the commissioner of baseball was tossing stuff to the fans,” Vaughn said. The players then gave the gift bags to the young children participating in the pregame ceremonies. That moment – when Cuban fans connected with players whose names they barely knew and their appreciation rang warmly through the stadium – was the most endearing memory for Vaughn; an expression of love and excitement for the game that would remain forever a part of the team’s history.
