CLEARWATER MARINE AQUARIUM Winter, the now-famous dolphin that lost her tail after being tangled in a crab-pot line, has put a public face on the Clearwater Marine Aquarium and brought this small “working animal hospital” into the national spotlight. Located not far from Clearwater Beach, the aquarium’s mission is to rescue marine animals, nurse them back to health and release
them to the wild. Not only does the Clearwater Aquarium protect the marine animals, it also protects the environment. “We recently underwent an energy audit by Progress Energy and have received proposals from two energysaving companies on actions we can take at our facility to reduce energy costs,” says Public Relations Director Jeni Hatter. “We will be moving forward with those in the near future.”

In addition to the aquarium’s future plans to go “green,” the aquarium currently uses “green” detergent and cleaning supplies, recycles plastics and paper, and is in the process of installing energysaving light bulbs throughout the facility and motion sensor lights that do not stay on when people are not near them. During this year’s cold snap, phones rang off the hook from people calling about the thousands of loggerhead sea
turtles that washed up on shore due to colder-than-usual water temperatures. The aquarium rehabilitated more than 100. “To watch a 120-pound turtle get healthy and walk back into the ocean because we helped her survive is a true testament to our work,” Hatter says. “It doesn’t get much better than that.” Visit the rehab areas that are set aside for injured or sick turtles, dolphins, otters, and other marine life and the tanks that are permanent homes for animals like Winter who can no longer survive in the wild. A major fundraising drive is underway to expand the aquarium’s rescue and rehab program.

FLORIDA AQUARIUM Aquariums have come a long way since they were merely big saltwater fish tanks —especially at the Florida Aquarium, a cutting-edge facility that takes interac-
tive to the next level and is in the process of converting the entire building into a green facility. “Our engineering team installed a water softening system to make use of
recycling A/C condensate water for cooling towers and to reduce the amount of tap water needed to maintain cooling towers and chillers,” says Public Relations Manager Tom Wagner.

“This project saves over 5 million gallons of water annually. Our condensate water has also brought our beautiful Barnett Fountain back to life in ExploreA-Shore.” As far as attractions go, learn more about sharks by actually diving right into a 93,000-gallon tank for an exhilarating upclose-and-personal encounter. You must be scuba certified and at least fifteen years old to enjoy the experience. For a tamer but equally extraordinary adventure, strap on a small air tank, regulator and flotation device that allows you to hover at the surface of a 500,000-gallon tank and peer into an amazing replica of a coral reef teeming with thousands of colorful fish, eels, turtles, coral and sponges.
Visitors can also interact with penguins, touch the rays and walk through simulated Florida ecosystem displays. Behind the scenes, the Florida Aquarium is a first-class educational, conservation and scientific research center. Coral reef restoration is the priority at the aquarium’s Coral Reef Institute. Another program studies the health of captive seahorses, and an underwater archeology “dig” is exploring Tampa Bay’s Civil War-era shipwrecks. From an educational standpoint the aquarium has various programs and events throughout the year to educate the public about conservation, such as the rain barrels decorated by Hillsborough County students which collect rainwater and use it for watering plants. “Our Green Team is active in the community,” Wagner says. “We participate regularly in Coastal Clean-up events throughout the Tampa Bay area.” dR

All in a Day’s Work Writer Janan Talafer | Photography Tress Eveleth Airmen of the 310th Airlift and 91st Air Refueling Squadrons at Tampa’s MacDill Air Force Base are motivated, resourceful and highly trained. There is no doubt they’re committed to excelling at whatever tasks they undertake. Lt. Col. Jennifer Uptmor is the commander of the 310th Airlift Squadron. Both a pilot and a flight instructor, she has been in the Air Force for 18 years, three of them at MacDill. Her husband is a career military officer, too, and is assigned to Seymour Johnson Air Force Base in North Carolina. She is also the mother of three children ages twelve, ten and three. To say she juggles a busy life is an understatement. Uptmor and Don Axlund, the squadron’s operation’s officer, oversee a unit force of 70 personnel and a fleet of three planes. Their job is vital: ensuring the safety of the country’s top generals— the combatant commanders—as they travel the globe to commitments ranging from sites of natural disaster and homeland security, to peacekeeping summits or combat arenas. “We support the generals who are conducting our nation’s business,” says Uptmor. MacDill houses one of the country’s premier Combatant Commander Airlift Squadrons charged with providing safe, comfortable and reliable worldwide airlift for top military personnel or “distinguished visitors (DVs)” that each crew supports. The Airmen assigned to this mission are “elite, experienced and seasoned,” says Uptmor.
rest of MacDill’s C-37 fleet is more nondescript, just white with no color. That was a decision made after 9-11. Inside, the plane is set up to function as a traveling executive office. There are two satellite systems and high-speed data ports at all passenger seats, giving the general and staff access to all of the communications technology they require, from Internet, email and phone, to Fax and printing. “This is definitely a working plane,” says Uptmor. As communications system operator, Technical Sergeant Kenny Kalian serves as the airborne information operator responsible for keeping everyone connected. That means uninterrupted access to data, including secure connections for sharing confidential, classified information. “It’s exciting to be right in the middle of high-level decisions being made,” says Kalian. He’s required to have the skill-set to quickly trouble shoot any communications disruptions, backed up by the team on the ground at MacDill when needed. “The general may be talking with the President, the Secretary of Defense or other high-level individuals and everything must function perfectly,” says Lt. Col. Axlund.
Technical Sergeant Matt Wallace trouble shoots problems of a different nature. As the flight engineer he tackles plane-
related maintenance problems, whether it’s a relatively minor issue with air conditioning and cabin comfort, or a more serious situation such as a window shattering in mid-flight or a hydraulic malfunction. “Anything that breaks, we fix it,” says Wallace. “We handle the unexpected.”
MEALS TO GO Imagine preparing a first-rate meal for the company president in a tiny kitchen not much bigger than a closet. Master Sergeant Sean Donahue has had plenty of experience at it. He’s been a flight attendant for much of his 25-year Air Force career, first at Andrews Air Force Base in Maryland and now at MacDill. Preparing meals is just one of his duties, says Donahue. His first job is the safety and comfort of the passengers. For example, he’s certified in first aid and CPR, trained in emergency evacuation and serves as the fire-fighter on board. All the meals prepared on board are fresh. Donahue does the grocery shopping before each flight, making sure he has everything that might be needed to prepare breakfast, lunch or dinner. “It’s a matter of ensuring the safety of the food no matter where we are in the world,” says Donahue. “We’re completely self-contained.”

REFUELING THE FIGHTERS The job performed by the crew members of the 91st Air Refueling Squadron is just as mission critical. In fact, this is the team responsible for extending U.S. global air power anywhere in the world. The squadron’s primary task is to make sure that fuel gets to where it’s needed on time, in any weather and in any situation. But this isn’t simply fuel transport. We’re talking about air-to-air refueling, which means topping off the tank of other military planes while flying at speeds averaging 400 miles per hour. It’s a just before 12:00 p.m. and Captain Tony Ewers, the pilot, and Captain Josh Payne, the co-pilot, are checking and double-checking everything as they start up the engines on the KC-135 Strato-tanker. At 12:30 p.m., the air traffic controllers at MacDill clear them for take-off and Bolt Zero Five, the plane’s call letters, begins its journey down the runway with Ewers at the helm. Unlike the newer model aircraft, the KC-135 tanker is “old school,” says Ewers. “We’re flying manually here.” The dashboard in front of the two pilots looks mind-boggling to the uninitiated; rows and rows of dials and screens and monitors. That doesn’t even count the overhead panel of instruments. “One of the first things you learn as a pilot is to trust your instruments,” says Ewers.

High-performance fighter jets may be made for speed and maneuverability, but the Stratotankers are big and utilitarian. This is a no-frills plane with 10 fuel tanks, three in each wing and a reserve in the rear. Total fuel capacity is about 200,000 pounds. The plane is hollowed out inside to allow for cargo transport or medical evacuation. It can hold up to 200 military personnel seated side by side on the floor. Today there are three pilots on board— Ewers, Payne and Captain Matt Sasser, who is along as an added set of hands for our media tour. Master Sergeant Bert Fristad is the boom operator. At 12:50 p.m., the plane has reached an altitude of 34,000 feet and the cloud cover is thick. We’ll rendezvous north of Baton Rouge, LA in mid-air with two Thunderbird F16 fighter jets on their way from Dallas to an air show at Eglin Air Force Base in Florida’s Panhandle. “The computer tells us we are two minutes ahead of schedule,” says Payne. “We can go faster or slower to pace ourselves so we appear in the right place at the exact same time as the Thunderbirds, but we’d rather be a little early than late.” There is no room for error here. Timing is critical. At 2:15 p.m., the tanker drops to 22,000 feet and the Thunderbirds can be seen approaching from the east. Fristad
is already in place at the rear of the plane, laying flat on his stomach, with a wide, unobstructed view out the window. When the first jet comes into view it’s so close you can look down into the cockpit and see the pilot inside. “They’re using the yellow stripe on the bottom of our plane as a mid-line and following the green, yellow and red lights to guide them into position,” says Fristad. With a practiced hand he steadies the boom, a 28-foot long rigid hose that extends from the back of the tanker to a receiving receptacle on the top of the jet. The fuel—731 gallons—is transferred in about four minutes. The first pilot gives a wave and moves off to allow the second jet to step in for a fill-up. Another four minutes and 522 gallons and it’s all over. The Thunderbirds are on their way. By 4:00 p.m., the crew is back in Tampa at the MacDill air field, almost ready to call it a day. It’s hard to fathom the aerial maneuvering I just witnessed. Everyone on the crew, from the pilots up front to the boom operator in the rear made it look so easy. “I’m grateful to have such an amazing job that I can also enjoy,” says Payne, echoing a sentiment I’ve heard several times that day. Every airman I’ve met feels privileged to be on the team and to play a role in keeping our country safe. dR

The many varied options make this factor easier to accomplish than a re-design.” “One of the best reasons for rethinking your pool is new environmental and
energy-saving advancements,” suggests Kirsten Pires of the Association of Pool and Spa Professionals (APSP). She recommends that you contact your local utility company for information about swimming pool rebate incentives but admits that savings will vary on individual pools. For example, you can realize up to 90 percent savings with an energyefficient pump, up to 70 percent savings with a solar-energy pool cover as well as pool-automation equipment, and up to 55 percent savings with an energy-efficient pool heater. And if you needed justification to upgrade your incandescent pool lighting to newer LED lighting, then think about the 90 percent savings as well as saving the environment. n this fast-paced world, it’s hard for many people to balance a healthy lifestyle amongst the chaos. W
ith present-day consumers demanding all things organic and naturally grown, the wine industry, along with the rest of the agriculture world, is taking note and is little by little going green. Among the wineries shifting gears is the St. Francis Winery in Sonoma County. Mirroring its patron namesake—St. Francis of Assisi, who is considered one of history’s first environmentalists—the St. Francis Winery is going back to its roots, or in this case its rootstock, by implementing a pesticide-free farm plan. In addition to using natural and chemical-free agricultural methods, the winery relies heavily on solar power, composts grape by-products for fertilizer, and grows cover crops on the vineyard floor to improve soil health and reduce water requirements. The St. Francis Winery also recently formed a partnership with the Hungry Owl Project, a Marin County-based non-profit that reintroduces natural predators, such as barn owls, into the environment to eliminate the need for pesticides. As the owl population flourishes and the natural farming methods are put into practice, the St. Francis Winery is beginning to produce beautiful wines and beautiful sights. However, green farming is not a completely new chapter in St. Francis Winery’s history. The winery makes an “Old Vines” Zinfandel from vines that are at least 50 years old and some that are up to 120 years old. All of the Zinfandel crops are head-trained, left to be on their own and not connected to other vines by a trellis system, as well as dry-farmed, a farming technique without irrigation by planting drought-resistant crops and mulch to protect the natural moisture of the soil. As a result of old vines and natural farming methods, these Zinfandel plots yield less than two tons per acre of exceptionally concentrated fruit. Appropriately, the wine displays deep aromas of ripe black cherries and boysenberries laced with licorice, shadowed by spicy toasted oak notes that carry into a long, luscious finish. The “Old Vines” Zinfandel pairs exquisitely with roasted farm-raised pork loin accompanied by cherry relish. With their wines winning awards and garnering praise from the critics, being green for St. Francis is proving to be a good practice—for business and for life. dR

THREE NUT CRUSTED GROUPER Grouper 6 to 8 8 ounce grouper filets 1/2 cup pistachios 1 cup walnuts 1/2 cup macadamias 1 cup bread crumbs Heavy cream Salt and pepper to taste Give nuts a rough grind and mix with the bread crumbs. Coat grouper in a thin layer of 40-percent heavy cream and then roll in crust mixture. Place in oven at 350 degrees for 12 to15 minutes until completely cooked through.
Mango Buerre Blanc Sauce 1/2 ounce canola oil 1 shallot, sliced thin 2 ounces white wine—Chablis/Pinot Grigio 6 ounces mango puree 2 ounces Hoy cream 1 stick butter Slice one medium shallot thinly. Saute in canola oil until translucent. Deglaze with white wine, reduce, add mango puree, reduce for three minutes, add cream, reduce for two minutes. Turn heat off. Slice stick of butter into 8 pieces and whisk in one piece of butter at a time with the heat off. The butter should emulsify and create the sauce. Assembly Place grouper on a plate and drizzle with Mango Buerre Blanc. Serves 6 to 8

t seems that as of late, green has become a state of mind. With all of us trying to find a way to do our part by sorting our trash into the proper recycle bins and driving hybrid cars, it makes one wonder: What about the businesses in my neighborhood? Who out there is taking the time to mirror, on their level, what families are doing at home? Those who are familiar with Treasure Island’s Middle Grounds Grill already know that the restaurant is green on the outside, but few also know that they are also green on the inside? The folks at the Middle Grounds Grill take all of their cardboard, metal, plastic and glass to the recycling center themselves. Chef Brian Drumheller uses 100 percent of the scrap prep food for his compost, and they have switched to using only recycled products whenever possible. “We are now looking at ‘to-go’ containers made of 100-percent corn along with a slew of products that are environmentally friendly. We care about the environment, and we are doing all we can to make our carbon footprint as small as possible,” said Danny Coover, member of the family-owned management team. “We are also moving into organics that will be featured this spring in our specials and in accompaniments for entrees. Look for more organics working their way onto our menu soon.” The restaurant has been in the Coover family on this beach for nearly four decades. Chef Erwin Scheuringer Was taught and now teaches by example—a positive attitude creates a positive attitude By Catherine Mitseas Erwin Scheuringer, part-owner of E&E Stakeout Grill in Belleair Bluffs and Guppy’s On The Beach in Indian Rocks Beach, is a third-generation European chef whose culinary roots date back to the turn of the century when his grandfather cooked for elegant hotels in Vienna prior to World War I. “I kind of grew up in the kitchen with him. He inherited a farm and cooked every day. We made pâté… he grew and dried his own herbs and raised pheasants. He was an incredible cook. As long as I can remember, I was going to be a chef. To this day, it’s remained as much of a hobby as a profession,” he explains. As a young man, Scheuringer trained

at an Austrian cooking school. However, he learned to run an efficient kitchen while working for Holland America Line. There, he developed the discipline required to successfully feed thousands of people daily. Most importantly, he says, he mingled with fellow employees from across the globe, absorbing new flavors and cooking styles that he uses to this day. His destiny would not become clear though until a fateful Bermuda fishing trip with future business partner Eugen Fuhrmann. “We were lousy fisherman,” Scheuringer jokes, but better businessmen. When Fuhrmann asked him to open the Lobster Pot Restaurant in
Florida, the young chef made a quick, but crucial decision. Scheuringer moved to Florida November 1978 and by 1981, the Lobster Pot had won a Silver Spoon award. “I am not a culinary cowboy,” he stresses. “I take a fairly conservative approach. Our food (at E&E) has to remain exciting but down to earth.” Presentation is exceptionally important, but consistency and good service are a successful restaurant’s best ingredients he says. “I like to teach by example. A positive attitude creates a positive attitude, but everybody knows I have certain standards, and I expect them met,” he explains.
GRILLED NEW YORK STRIP STEAKS 4 12-ounce New York strips 2 tablespoons sunflower oil Salt and fresh ground black pepper Rub steak with sunflower oil, salt and fresh ground pepper.
VEGETABLES 4 small Portobello mushrooms 1 red pepper 1 yellow pepper 2 small zucchini Clean Portobello mushrooms. Quarter peppers and zucchini length-wise. 2 tablespoons ketchup 2 tablespoons olive oil 1 teaspoon curry powder 1 teaspoon chili powder 1 tablespoon sugar 1 tablespoon salt 1 teaspoon black pepper Whisk all ingredients together and toss with prepared vegetables
CHILI RANCHERO 3 tablespoons sunflower oil 1 medium onion, diced 1 red pepper, diced Saute in sunflower oil, diced onions and red pepper. Add the following: 1 red tomato Quarter-cut corn 1/2 cup baked beans 1 cup beef broth 1 tablespoon tomato paste 1 tablespoon chili powder 1 tablespoon chipotle paste 1 tablespoon sugar Pinch of cummin Salt to taste Add tomato, corn, beans, beef broth, tomato paste, chili powder, chipotle paste, sugar and salt. Simmer for approximately 20 minutes. Chili Ranchero can be made ahead of time.
2 ounces unsalted butter Salt to taste Nutmeg White pepper 3 ounces sour cream Chives Bacon bits Steam potatoes until fork-tender and whip with milk (add milk gradually), butter, salt, nutmeg and white pepper. Whip until creamy and silky. At serving time, garnish with bacon, sour cream and chives.
FINAL PREPARATION Sear steaks on both sides and move to a high rack to store and pull through. Meanwhile, grill marinated vegetables and also move to high rack and store.
WHIPPED IDAHO POTATOES
Arrange whipped Idaho potatoes on a large serving platter. Top with bacon, sour cream and chives. Ladle Chili Ranchero around potatoes and artfully arrange steaks and grilled vegetables.
