Dear Reader, Although health is something we often take for granted, most of us strive to improve our state of well being. Our reasons may differ, as well as the paths we take to achieve our goals and the sacrifices we are willing to make to attain them. This annual Health and Beauty issue brings you the latest from holistic approaches to technological and medical procedures for self improvement. Be it quick fixes or long term regimes, you can find a plan that helps you turn back the hands of time. This issue, dR HEALTH explores the gamut from relaxing spa treatments to simple surgeries to improve your look. And if physical health is your focus, we visited three new elite facilities where you can work on high-tech Pilates or try your hand at the new “spoxing” craze. Eating healthy is often a common denominator in fitness, so dR DISH focuses on Fresh Kitchen in south Tampa. Their menu starts with clean foods and fresh quality ingredients, without sacrificing on taste. Be sure to try their chef’s recipe for oven roasted Brussels sprouts. And although good health is something we can appreciate, I urge you to look around and find ways to help others who may not have a choice in the matter. Our local chapter of the Pediatric Cancer Foundation is in its sixth year of the Cut for the Cure charity challenge. Learn how to donate or get involved in dR CLOSE-UP, where we talk to Team Quantum Leap Farm about how they serve local children battling cancer. You can also go to www.pcfcutforacure.org for more information. As always, I invite you to join us the third Saturday of every month at our headquarters for Cars and Coffee from 7 to 9 am. Take a peek at the new Lamborghini Aventador SV in dR AUTO this issue, or come out and see these exotics and classics alike in person. Enjoy!

ADVANCED AGE REVERSAL METHODS Believe it! There are methods that are guaranteed to stop aging in its tracks. The aesthetics industry has gone high tech and the results are better than ever. From computerized weight loss programs to lasers that eliminate years of sun damage, the advancements have created guaranteed methods to stop aging in its tracks.

Losing weight is one of the first ways to reverse aging, explains Dr. Jay J. Garcia, owner of Jay J. Garcia Weight Loss and Wellness Centers. When an individual sheds as little as five to 10 percent of their body weight, they decrease their chances of getting chronic diseases by more than 50 percent. Once the initial weight is off, he explains, the body starts realigning and balancing its hormone levels, allowing for a healthier lifestyle, including decreased needs for insulin in diabetics. Knowing this, and having spent the last eleven years examining patients across thousands of office visits, Dr. Garcia created a software program entitled Vivaliti Weight Loss System that builds a uniquely intuitive weight loss program for each patient. The software uses dozens of pieces of patient information, called “data points” to create an initial nutrition and activity program. These data points consider the obvious ones, such as age and gender, as well as not so common ones as sleep patterns and medications. Together, the software builds a program that allows the patient to start losing weight immediately, but not sacrifice muscle or stall metabolic rates. Instead, patients meet with Dr. Garcia weekly and based on the results, the software “adjusts” the nutritional program, increasing or decreasing calories and activity levels to continue weight loss. The software considers every activity from house cleaning to gardening in its estimation of calories burned and counts that in its program. “It gives the weight loss patient more up to the minute analysis than one that dumps them into a grouping that will not meet their needs,” he says.

Dr. Adam Scheiner is a Laser Eyelid and Facial Cosmetic Surgeon whose RESET® Skin Resurfacing service offers remarkable results by literally wiping away years of sun damage and, through a specific healing protocol, “regrowing” the skin’s top level, re-establishing baby soft, clear skin. An expert in advanced laser resurfacing, Dr. Scheiner uses the precision Dual Pulsed Erbium laser by Sciton to plane away layers of skin corrupted by sun; removing brown spots, facial lines, and wrinkles. While using the laser, which is specifically made for deep tissue resurfacing, he frequently eliminates early actinic keratosis and irregular basal cells, which can develop into cancers. The process works 30 www.duPontREGISTRYtampabay.com

similar to other laser skin treatments through removing surface damage while internally stimulating the skins collagen production to firm the skin and add resilience. However, the Dual Pulsed Laser’s ability to reach deep into the tissue bed without causing extraneous wounding to the skin allows for a faster recovery and more dramatic, longterm results. Dr.Scheiner’s finesse with lasers—and his expertise in removing festoons—has brought him international acclaim with 80 percent of his patients flying in to see him from various corners of the world.

DR. FITZGERALD, PURELIFE MEDI-SPA WELLNESS AND SKINCARE

DR. BRUCE LANDON, LANDON PLASTIC SURGERY AND SPA BOUTIQUE For board certified plastic surgeon Dr. Bruce Landon, of Landon Plastic Surgery and Spa Boutique, one of the best ways to address two of the most common issues in facial aging—loss of volume and quality of skin—is through fat transfers and laser resurfacing. The first harvests fat, which is removed from the patient’s lower tummy wall, washed and put through a centrifuge to remove impurities. It is then most commonly injected along thinned brow arches and hollowed cheekbones to restore volume. Similar to fillers—but more appealing to holistic patients unwilling to inject synthetic materials into their bodies—the fat must be meticulously harvested and injected carefully as to allow the living cells to garner fresh blood supplies. “Taken in conjunction with aggressive fractionated CO2 laser treatments which smooth fine lines and wrinkles, the results are a time stopping combination of beautiful,” he says.

Left Top:Garcia's patients enjoying life after weight loss. Left Bottom: Scheiner's patient experiences remarkable results through RESET. Above: PureLife Medi-Spa Medical Director Dr. Joseph Fitzgerald demonstrates Plasma Rich Platelet (PRP) microneedling treatment on patient Tim Goewey, a local TV personality.

Platelet-rich plasma (PRP) with microneedling is PureLife Medi-Spa Wellness and Skincare’s cutting-edge, anti-aging procedure. The microneedling creates little channels into the skin. Then PRP is either topically applied or injected deeply in the dermis layer of the skin. PRP uses the patient’s own blood and thus poses no risk of allergy. The treatment has the effect of enhancing your innate natural healing power and tissue-reorganization potential to build further collagen. After a few treatments (usually three), patients see improved skin texture, smaller pore size and overall glowing appearance within four weeks post-treatment. Improvement of skin texture and tone can be noticeable within three weeks and improvement continues for the next eight months as more collagen and keratin is laid under skin. The results typically last two years or longer. The most common conditions for PRP therapy include: fine lines and wrinkles on/around the eyes, face, neck and decollete; acne;

surgical scars; stretch marks (loose and saggy skin); and thinning hair on the scalp.

HEALTH

By Catherine S. Mitseas

THE NEWEST MOVES IN FITNESS ARE EXCITING club out there. From the soothing designer colors to the full-length cherry stained gym lockers, there is not a detail that has been missed in the 55,000-square-foot facility. Life Time boasts a full café equipped with all-natural foods and meals-to-go services, full-service spa and beauty salon, generous business center, and a Kid’s Academy that hosts events, offers tutoring, and holds zumba classes for the little ones. Interestingly, from the hair tech to the personal trainers, everyone on property is on staff. Every instructor holds the highest level of certifications in the industry and most are college trained in a corresponding field. There are two cardio fitness rooms, one Pilates studio, an enchantingly warm yoga studio, sixty spin bikes, and of course, a full program of cardio and weight resistance equipment. Nothing underperforms. Even the treadmills are Woodway, the industry standard for awesome.

It is an exciting time to love fitness in Tampa Bay. Just last year, Life Time Athletic and LifeSpa opened in the International Plaza & Bay Street in Tampa. The Minnesota-based company’s dictum wraps stellar customer service around state-of-the-art technology and a corporate commitment to helping clients reach their fitness goals. Andrea Bolender, member services department head, explains that every member can undergo a series of tests to determine their exact health status. The tests include heart rate zones, full blood work (including cholesterol and sugar levels) and a personalized “Move It Session” where the information is interpreted by a certified metabolic specialist in a one hour one-on-one session and then built into a program unique to the member. The information then is synched with Life Time’s proprietary “LT Connect” software so the athletes can keep track of their performance at any time. The “Diamond Level” fitness center is as beautiful as any health

movements are slow yet forceful, heart rates rise to allow constant fat burning. Importantly, the long resistance-based stretches activate slowtwitch muscle fibers, which lengthen and strengthen muscles without creating big, bulky bulges. “It’s a different look,” that clients’ bodies develop than they would from the more traditional weightlifting supplemented with cardio, says Maloy.

The entire facility, Bolender says, is driven by always being “on detail,” trying to meet or exceed customer expectations. Near the University of Tampa, there is a studio taking two favorite exercises and wrapping them into one body-shaping workout. Jaye Maddon and Esther Solano founded Epic Boxing & Fitness on Kennedy. Together, they have created a spin-boxing hybrid: “Spoxing” as Solano dubs it, follows the boxing protocol of 12 rounds broken into three minute, 30-second rest intervals. The program’s first two intervals are on spin bikes, allowing the body’s largest muscle groups to warm up and prepare the athlete for boxing. Then, the member starts boxing; speed work, hooks, upper cuts, broken up by jumping jacks, floor work and burpees. Each workout, Solano says, is a form of cross training focused on a particular body part. On Saturdays, members receive full-body workouts. “It’s a cardio workout no matter what you do—It’s amazing how peoples’ bodies are changing—the bikes completely intensify everything we do,” Solano explains. Mantra Fitness in South Tampa on South Dale Mabry brings a West Coast workout to the Bay area. The Sarasota-based fitness company run by Kathy Maloy and Jeannie Abreau feature patented workouts on the Megaformer, a Pilates-inspired machine reengineered to provide full body workouts. The Megaformer is licensed through Legree Fitness in California. The machine first gained notoriety as the go-to tool of the stars. The intense 50-minute workouts offering sweat-inducing cardio training that build muscle strength and tone without producing bulk attracted the likes of Kim Kardashian and Modern Family’s Sofia Vergara. The secret, says Maloy, is in the slow intensity of the movements. Certified Lagree Fitness instructors lead the class, which maxes out at 12 people. Like a personal trainer, the instructor cues exercises, corrects form, and keeps the class moving from one position to the next without allowing rest. The machine stabilizes the core and encourages balance and flexibility while targeting specific muscle groups but because the

SIMPLE SOLUTIONS THAT GIVE YOU BACK THAT “WOW” FACTOR! W

e don’t always have to sacrifice days to improve our looks. There are many easy procedures that can make a huge difference without long downtimes. Some of the simplest are the most powerful: straightening a crooked nose, lifting droopy eyelids, and refreshing damaged skin. Dr. Adam Scheiner, a Laser Eyelid and Facial Cosmetic Surgeon, offers the 5 Minute Nose Job™ in which soft tissue fillers are injected into precise locations in a person’s nose to make it straighter, less prominent, and improve fit. It is terrific, he says, for patients with nose bumps, crooked or wide noses, or who received less than ideal results from a rhinoplasty. Results last up to a year, he says Dr. Geoffrey M. Kwitco is a Cosmetic and Reconstructive Oculoplastic surgeon as well as an Orbital and Neuro-Opthalmic surgeon. An Oculoplastic surgeon is an ophthalmotogist who has received extensive post residency training in plastic and reconstructive surgery of the tissue surrounding the eyes, including eyelids, eyebrows, cheeks, orbit, and lacrimal (tear) system. Cosmetic eye surgery is one of the simplest ways to look refreshed and more rested, he says. As we age, skin loosens above and below our eyes. Fat deposits cause puffiness in the upper eyelids and excess skin and wrinkles accumulate around the lower eyelid. Blepharoplasty, or an “eye lift” is a 30-to-60 minute procedure that removes excess fat, muscle, and skin from both upper and lower eyelids as well as bags from under the eyes. It requires little more than twilight anesthesia in an outpatient setting, ice and ointment for ensuing swelling, and about a week to heal. Results can last up to 20 years, he says. He suggests prospective patients search out a fellowship trained oculoplastic surgeon, as they are the best trained doctors for eyelid surgery. Beyond surgery, there are many tools available to perk up and revitalize the skin. Dr. Scheiner uses Broad Based Light (BBL) to help individuals with difficult skin problems. It is a technology that has been scientifically proven to not only improve the appearance of the skin but its health as well. BBL is an advanced form of Intense Pulsed Light and treats a variety of conditions including acne, red spots, sun spots, skin tightening, and depending on the laser, hair removal in people with dark skin types, toe nail fungus, rosacea and certain deep leg veins. Results depend on the condition but simple brown spots will stay away with good sun protection. At SkinNV in Tampa, the newest look is nonsurgical, gentle, and works immediately. The Liquid Facelift restores facial volume lost to

aging and reduces the evidence of fine lines and wrinkles. The secret is in the combination of fillers and neurotoxins that, when used together by highly trained professionals such as those at SkinNV, create a result commensurate with a traditional facelift,” explains Kaisa Marshall, medical aesthetician with SkinNV. Typically, longer lasting fillers such as Radisse, Sculptra® Aesthetic and JUVÉDERM VOLUMA® XC are used to “lift up” sagging skin while neurotoxins such as Botox® Xeomin® and Dysport® soften and reduce fine lines. “This is a wonderful procedure for people who don’t want to have surgery,” she says. SkinNV uses fillers that can last up to two years; the procedure takes less than an hour and there is very little recovery time. Although the Liquid Facelift can seem simple to undergo, Marshall urges interested candidates to fully understand the level of expertise and experience of their technician: “SkinNV has three national trainers on staff who train doctors and nurse practitioners all over the country on the latest esthetic techniques. We see people all the time that have wanted "a bargain" and the results are nothing like what they had hoped or were promised.”

CASA DE CAMPO IN THE DOMINICAN REPUBLIC

44 www.duPontREGISTRYtampabay.com

Casa de Campo La Romana | Dominican Republic 800-877-3643 | www.casadecampo.com.do When it comes to all-inclusive resorts in the Caribbean, there are plenty to choose from, but few can hold a candle to luxurious Casa de Campo in the Dominican Republic; celebrities are already in the know. In the past couple of years, Jay-Z and Beyoncé visited twice with their daughter Blue Ivy, as have Michael Jordan, Drake, Rihanna, Alicia Keys, Jason Mraz, Naomi Watts and Richard Branson. U.S. presidents have discovered the exclusive hideaway, too—Bill Clinton and George W. Bush are both fans of the resort’s golf courses. Just what makes Casa de Campo a popular destination for the world’s financial moguls, politicos and Hollywood’s elite? For one, its aforementioned exclusivity. Situated on 7,000 acres on the southeastern coast of the Dominican Republic, the resort is bordered by the Caribbean Sea on one side, and the meandering Chavon River 300 feet below on the other side. Inspired by a 16th-century Mediterranean village, Casa de Campo is also home to artists’ studios, craft workshops, art galleries, restaurants and boutiques. Artists in residence happily teach their crafts to those visiting, and world-class performances are often held within the property’s 5,000-seat Grecian-style amphitheater. Frank Sinatra’s performance in 1982 inaugurated the amphitheater, and such stars as Andrea Bocceli, Julio Iglesias, Sting and Carlos Santana have performed. Aside from arts and culture, Casa de Campo embraces the “Sporting Life,” taking full advantage of its Caribbean setting. Elite sport clubs dot the property, including three Pete Dye golf courses— which draw Clinton and Bush—a 245-acre shooting center, a polo and equestrian center, myriad water sports, La Terraza Tennis Center, which is known as “Wimbledon of the Caribbean,” and much more. Or, simply choose a beach on which to spend the day: the resort’s own exclusive beach, or its own island; a nearby island teeming with wildlife such as loggerhead turtles and green parrots; a beach accessible by advance reservation only so that just one couple or family is on the private island; or join an in-season yacht party. Time at the Casa de Campo Spa is yet another level of secluded luxury at the resort. Each of the seven treatment rooms is its own destination, with plunge pools and patio gardens. The on-site Spa Pharmacy incorporates edible local ingredients, including sugar cane and Dominican coffee beans, into each of the treatments for truly indigenous experiences. Accommodations at Casa de Campo range from guest rooms and suites to multi-bedroom “villa” homes. The 50 villas, which are more like sprawling haciendas, include private pools, expansive terraces, and private butlers, maids and gardeners—even a private chef. Dining at Casa de Campo is just as indulgent, with seven restaurants within the resort ranging from Cantonese to Italian to seafood and tapas, and more than 10 others on the grounds. Getting around the resort is easy, too—each guest room and villa is provided with a four-passenger touring cart for exploring. If you’re looking for an exclusive vacation destination, look no further than Casa de Campo.

GETTING THERE

Casa de Campo is accessible by three airports, all serviced by major U.S. airlines. The closest to the resort, however—just five minutes away, is La Romana International Airport (LRM), into which American Airlines flies twice daily from Miami. Or, sail by yacht and moor in one of the 50 slips available at the Casa de Campo Marina.

DESIGNING YOUR DREAM LUXURY KITCHEN

Discriminating homeowners are paying just as much attention to detail, design and style in the kitchen as they would in a living room or the master bedroom. Kitchens are the heartbeat of the home so why not make them the focal point. Here are some suggestions to help you create your own signature look.

BEAUTIFUL BACKSPLASHES AND FLOORS

WALK-IN PANTRIES

“Backsplashes are hot,” says Worth Turner of Hollingsworth Decorative Tile & Plumbing. “Instead of spending on high-end tile for the bathroom, the new trend is to focus on the kitchen backsplash. It’s a small area, so people are going for something really expensive and fabulous.” Think hand-painted terra cotta tiles, geometric patterns and beautiful mosaics that blend glass, stone, metal, porcelain or wood. “The sky’s the limit when it comes to putting together a really different, unique look,” says Turner. Natural stone will never go out of style and always makes a dramatic statement for both the backsplash and kitchen floor, says Eric Barthelemy of Stone-Mart. Stone-Mart’s extensive collection of superb imported travertine and marble makes it easy to select the perfect product, whether your taste runs to bold and modern or earth-tone and traditional.

“Walk-in pantries are great organizers and almost all new high-end kitchens have them,” says Wayne Smith of Southern Closets. He recommends three different depths of shelving to make it easy to find everything quickly. A deep space is ideal for big appliances that take up too much space on a kitchen countertop. A medium-depth shelf works for items like cereal boxes or bulk paper towels, while a narrow shelf is a must for mustard and ketchup, olive oils, vinegars and similar items. Add hanging baskets for potatoes, onions and garlic and you’re all set.

HIGH-TECH OVENS ▲

‘Induction cooktops and convection steam ovens are the latest, most innovative appliances for the kitchen,” says Julian Exclusa, of Ferguson Enterprises. The induction cooktop is 85 percent more efficient than

TABLES AND CHAIRS Look to Home Resource for striking contemporary designs for the kitchen. Eric Cross suggests the 60th Anniversary Edition of the iconic Series 7 chair. “The deep dark blue and pale pink chair has 24-karat gold-plated legs and is all about the contrast in materials and colors, which is a key item in interior design right now,” says Cross. He also recommends the Drop chair, originally designed by Arne Jacobsen in 1958, and recently re-launched. “It’s a small chair that has a big personality and offers a surprising level of comfort,” says Cross. For a contemporary table, consider the Analog table, which has an interesting shape that is a blend of an oval and a rectangle. The table top comes in white laminate, oak or walnut and the base can be black colored oak, oak or walnut.

COUNTERTOPS AND CABINETS Jeff Downing of Downing Designs elevates the kitchen to a work of art with the use of glass and highly polished concrete to create a sleek, elegant and modern look that is anything but austere. His specialty is custom countertops with ultra clear glass slabs that have a perfect side edge, smooth surface and fabulous swirled designs etched into the glass underneath. The swirls resemble waves or even a “category five hurricane” and can be highlighted with colorful LED lighting for

Long gone are the days when the kitchen was a small, clearly defined space with walls and cute curtains on the windows. “Today’s kitchens are open, spacious and integrated into the rest of the home,” says Brigette Pina of Ethan Allen. “The design needs to flow from the front door all the way to the kitchen. Everything should work together for a coordinated look, including the flooring. Wood floors for the kitchen

is popular right now and so is a grey or silver finish or even a rough texture added to traditional furniture to give an exotic look,” says Pina.

gas, easy to clean and offers greater temperature control. It works on a unique design principle. Instead of gas or electricity heating up the burner, electricity flows through a coil to generate a magnetic field under the cooktop surface. Place a metal induction-compatible pan on the surface and it creates instant heat. The pan heats up, not the burner or the kitchen. Lynn Kislin of Appliance Gallery has high praise for the Wolf convection steam oven. “The oven combines the benefits of steam cooking with convection technology,” says Kislin. “It's very efficient and helps me have more confidence in the kitchen, especially with the Wolf Gourmet programs that assist me in slow roasting, braising meat, baking bread or whatever I am cooking.” What are the benefits of steam cooking? “It keeps in the moisture, which does a better job of retaining the vitamins and nutrients, as well as the texture and flavor of the food,” says Exclusa. “Even reheating leftovers is amazing as the technology ensures the food stays fresh.”

additional star power. The glass is very durable, easy to clean and perfect for a high-top bar or countertop with bar stools, says Downing, who with his team of skilled craftsmen fabricates everything onsite at the firm’s downtown Tampa location. “We have one standing order— make it beautiful,” says Downing. Nancy Braamse of Olde World Cabinetry finds that exotic wood countertops in American Cherry, Black Walnut, Wenge and reclaimed woods are in high demand right now. “They give the kitchen a warm, inviting look and it’s more comfortable to pull up a barstool and lean against a wood surface than granite,” says Braamse. A Waterlox resin varnish ensures that the wood is protected.

The Galley is the new “multi-tasking” sink everyone is talking about. “It’s a really different setup that can be up to six feet long to accommodate a variety of options, including cutting board, colanders, condiment trays, and ice buckets, in addition to the sink,” says Nancy Braamse of Old World Cabinetry. “It’s the perfect solution for two people who enjoy cooking together and want to be working at the sink at the same time.”

ART FOR THE HOME Beauty Is in the Eye of the Beholder

Photo courtesy of Michael Murphy Gallery

Michael Murphy Gallery | 2701 S. MacDill Avenue | Tampa | 813-902-1414 | www.michaelmurphygallery.com

As the saying goes, “beauty is in the eye of the beholder,” and that may not be more true than it is when it comes to art. Whether you prefer classic pieces, or those that are more contemporary, it truly is all about what you prefer, especially when it comes to art in your home. We recently talked with Michael Murphy, owner of Michael Murphy Gallery, about the ever-evolving art scene, and how to make the most of it for your home. While traditional art collecting still exists, for example people buying pieces for investment or academic reasons, commercial art is becoming more popular—think Peter Max and Thomas Kinkade. And the two worlds are blending. “The world of art collecting for investments or even status still exists,” said Michael. “There’s an overlap between that and commercial art, which is what we are a part of, as are most galleries that people go into across the country.” With this blending, one thing that has become more evident is that “people want art pieces that they can relate to,” said Michael. “Art has been in our environment since the beginning of time, since the cave paintings.” 64 www.duPontREGISTRYtampabay.com

Far from cave paintings, today’s technology is playing an increasingly larger role in the art world, and not just in graphic design. A trend that’s gaining more momentum is electronic art, 2- by 3-foot digital screens are being displayed in homes and art enthusiasts can “rent” works of art to be displayed on the screens, making it easy to switch out pieces on a whim. “Generations are changing, and what they’re looking for is changing,” said Michael. “We can do things we couldn’t do five years ago. With the trend towards digital, though, we don’t see the quality, depth and craftsmanship that goes into the art.” Whether traditional or more contemporary—another growing trend is painted skateboards—working with clients to find just the right pieces for their homes is what inspires Michael and his team at the gallery. “Our clients want to enjoy what’s in their homes, and we are a source to them,” said Michael. “We feel very strongly that what they put into their homes influences their environments, and it’s important to live in an environment that you enjoy.” Typically, clients will visit the gallery to look at the works displayed from local artists in different mediums. Once a few pieces have been

selected for consideration, Michael and his team will make an in-home presentation to see what ďŹ ts best. “The color of the lighting reecting off the walls and the furniture can completely change the environment,â€? said Michael. “As a decorative element, art can change the whole feel of a space.â€? Even something as simple as changing out a frame on an heirloom piece, such as an oil painting, can completely change the feel of the piece, and the space. Or, adding contemporary art to a more traditional dĂŠcor. “We have a client who inherited a home ďŹ lled with antiques,â€? said Michael. “They changed the colors of the walls and added contemporary art in framing that ďŹ ts with the antiques. The result is elegant and updated.â€? Custom work is on the gallery’s palette, too. After some time looking, clients of the gallery who moved into a new home couldn’t ďŹ nd a piece of art that spoke to them for a particular space. Instead, Michael commissioned a local artist to create a painting that doesn’t exactly exist; rather, it’s a compilation of the clients’ favorite aspects of Tampa that combine to create an original piece of art that means something to them. “The piece that was created evokes memories and feelings, which is what art should do,â€? said Michael.

Left: The client commissioned a portrait of their children, which was painted by Jonathan Linton and procured through Emerson-Robbins Portraits. Right: The mixed media on canvas “Chaos Again by London Amara gives this elegant, modern dining room an urban sophistication.

GARDEN

By Catherine S. Mitseas

ORCHIDS: EXOTIC BEAUTIES

Orchids are one of the most prolific plants on Earth, found on every continent except Antarctica, yet their exotic looks intimidate many gardeners. To quell our fears regarding these beauties, we spoke with a local grower Paul Phelps of Phelps Farm Orchids and with Dr. Antonio Toscano de Brito of Marie Selby Botanical Gardens in Sarasota who’s research specialty is pleurothallid orchids. 66 www.duPontREGISTRYtampabay.com

What varieties grow best in Hillsborough and Pinellas County? Just about any warm to intermediate growing orchid will do well in the various microclimates around the home in Tampa Bay.

What is the best way to care for an orchid? The care differs between the types of orchids. Some require full sun; some bright shade. The hardest orchid there is to grow and flower is the one you are trying to grow in the wrong spot.

Do all orchids need the same kind of environment to thrive? Most orchids like high humidity (65-75%), good air movement, and filtered sun. Good quality water that is free from saltwater intrusion or high rust content. How to water is as important as water quality. Water the growing medium thoroughly and then let medium dry to between 80-100% depending on the type of orchid. A regular fertilizing schedule is essential to growing quality plants. At Phelps, we fertilize at every watering with 20-10-20 at the rate of one-half teaspoon per gallon of water. But any fertilizer you have around the home should work as long as you take it out of the cabinet.

In your opinion, what makes orchids' special? Diversity! According to Dr. de Brito, with an estimated 25,000 species, orchids are the largest group of flowering plants worldwide. The colors, fragrances and shapes of the flowers are intriguing and appealing.

Where is the best place to buy orchids? The best place to buy an orchid is at your local orchid nursery. You will see a much more diverse selection and you will get the added benefit of speaking to an experienced orchid grower.

Photo courtesy of Marie Selby Botanical Gardens

Which ones work in landscape settings? Crucifix Orchid (Epidendrum radicans) enjoy full sun applications; Nun’s-hood (Phaius tankervilleae), allied genera and its’ hybrids prefer shadier locations. Cymbidiums do well if installed in a well-drained area that is shaded in the summer and sunny in the winter.

Phelps Farm Orchids, Inc. maintains more than 8,600 squarefeet of greenhouse growing space. Phelps specializes in Cattleyas, creating more than 800 hybrids. However, other varieties can be found including Bulbophyllum, Coelogyne, Dendrobium, Oncidium, Paphiopedilum, Phragmipedium, Phalaenopsis, Vandaceous Orchids and assorted species and hybrids of other genera. (www.phelpsfarm.com)

Are most orchids best grown in pots? If so, any tips in caring for them? The type of container, medium or lack thereof will be dictated by your personal watering habits. If you are negligent in your watering, grow in a plastic pot. If you are pretty good about watering, use a clay orchid pot or basket with coarse mix. If you are a hose-aholic, grow your plants hanging in an empty basket or on a piece of driftwood. Basically you can grow most orchids on a stick as long as you water and fertilize enough.

Can you tell me a little about the varieties found in Florida? A couple of species native to the Tampa Bay Area are the Florida Butterfly Orchid (Encyclia tampensis) and The Green Fly Orchid (Epidendrum conopseum). The state of Florida has 106 native orchid species. Marie Selby Botanical Gardens welcomes more than 130,000 visitors who come to Selby Gardens annually to learn and explore the plants and programs available 364 days a year. A 15-acre botanical and children’s rainforest wonderland in an urban setting on the shores of Sarasota Bay, Selby Gardens specializes in epiphytes (which include orchids). It is home to the world’s largest living collection of epiphytes and other tropical plants. Scientific research is integral to the Gardens’ mission. www.selby.org www.duPontREGISTRYtampabay.com 67

CULINARY MASTERS

By Janan Talafer

FROM ITALY WITH LOVE Photo courtesy of Villa Belini Restaurant & Lounge

Meet Ciro Mancini Chef and Owner of Villa Bellini “We want people to feel like they are being treated to something special and unique, but also very comfortable, as if they were guests in our home and we are cooking a meal just for them.”

For Chef Ciro Mancini, cooking the perfect meal with the freshest, top quality ingredients is an art form that is just as serious as composing a piece of beautiful music or creating a striking painting. Villa Bellini, his new restaurant in the former Tio Pepe’s location in Clearwater, represents the culmination of a long-time dream to create a classic, full-sensory, romantic Italian experience for his guests. A native of Napoli in southern Italy, Mancini learned his appreciation for good food and good wine at a young age. For as long as he can remember, he had a love for cooking. His family owned a bakery and he grew up immersed in that world, but it was the idea of combining the local ingredients to create a wonderful meal that interested him most. He came to the U.S. in 2003 to be with his wife Clarita, who is originally from Columbia, but lived in Tampa. How the two met is quite the love story. Mancini was on vacation in Positano, a city on the spectacular Amalfi Coast in Italy. Clarita was also on vacation there. The two met completely by chance. “I heard the most lovely sound—a woman’s voice speaking in a language I had never heard before,” says Mancini. “I turned around and there was Clarita. I was quite smitten.” Despite their language barrier—Mancini only spoke Italian, and Clarita was fluent only in Spanish and English, the two managed to communicate. And in 2003, after many trips back and forth to each other’s homes, Mancini decided to pack his bags and move here fulltime to be with her. He arrived not knowing any English and has managed to gain a fair level of fluency, but is most comfortable speaking Italian. Villa Bellini is his third restaurant in Tampa Bay. Serena Williams, the tennis player, enjoyed practicing her Italian with him when she frequented his first restaurant in Tampa’s Harbour Island. Then from 2004-2011, he owned Bellini’s in Dunedin. But he says neither can 82 www.duPontREGISTRYtampabay.com

come close the vision he has for Villa Bellini. With the backing of three partners (one of whom is the wellknown Italian actor and comedian Marco Marzocca), Mancini oversaw many months of renovation on the building that once housed the popular, iconic Tio Pepe’s. In its place, he has created a showpiece that is a testament to old world Italian elegance—a grand villa with dark wood floors, Italianesque statues and artwork, rounded archways, chandeliers, several fireplaces and three wine cellars. He managed to salvage the old wood from Tio Pepe’s, which has been sanded, refinished and used throughout the new restaurant, including in the wine cellars.

Pappardelle with wild boar ragu is a robust first Tuscan origin, specifically in the area of Grosseto.

Pappardelle al ragu di cinghiale (Pappardelle Pasta with Wild Boar Ragu) Marinade 2 cups red wine, robust ½ cup onions, diced 1 pinch rosemary powder 1 pinch Salvia powder 1 pinch bay leaf powder

Sauce 5-½ cups white onions, diced 5-½ stalks celery, diced 5-½ cups carrots, diced 4 cups tomatoes, strained 2 tbsps tomato concentrate 1 cup hot pepper 1 pinch salt 2-½ cups wild boar meat diced ½ cup extra virgin olive oil 1 cup milk 2 cloves garlic ground black pepper to taste Parmesan cheese, grated for sprinkling Marinate boar meat for 24 hours. Thinly slice and dice marinated boar meat. Sauté diced onions, garlic, carrots, and celery with spices. After five to ten minutes, add drained, finely diced wild boar. Sauté for an additional minute adding a pinch of salt while stirring. Add the red wine and strained tomatoes and bring to a boil. Lower the temperature and boil it all for an hour-and-a-half. When it is completely brownish in color add tomato concentrate. Cook on low, stirring constantly, until sauce is not very dense. If it is necessary, add hot water to the sauce to finish cooking which should be around 1-1/2 to 2 hours (this depends on the tenderness of the meat). Fifteen minutes before end of cooking time, add the milk. Stir well and let finish cooking. Recommendation: Barolo - A full-bodied red wine is an excellent companion for this delicious dish Serves 4

Photo courtesy of Villa Belini Restaurant & Lounge

His future plans for the restaurant include opening a private dining room with a chef’s table. He also plans to rent wine “boxes” so guests can store their own collections onsite and have them available when they come to dinner. In addition, plans are underway for a large outdoor patio area with pizza oven. His philosophy about cooking is actually quite simple. Simple, ultrafresh ingredients, whether it’s locally grown produce or cheeses, salami, prosciutto and other items imported directly from Italy. Quality is the key to success, he says. He also believes in making sure the guest has a wonderful experience. “We want people to feel like they are being treated to something special and unique, but also very comfortable, as if they were guests in our home and we are cooking a meal just for them,” says Mancini. He definitely means what he says. If a guest has a favorite Italian dish that’s not on the menu, the kitchen will prepare it from scratch. Want to enjoy the traditional Italian way of eating with multiple courses of small dishes spread over many hours? Just ask.

TAMPA’S FK Fresh Kitchen Don’t let the concept fool you. Yes, FK—also known as “Fresh Kitchen”—does serve fresh, clean food with high-quality ingredients, but that doesn’t mean the restaurant sacrifices on taste.

By Melinda Tam Orlando

“A lot of people think we are a restaurant that you only come to if you eat healthy,” explains Steve Lanza, a partner at Ciccio Restaurant Group, which owns the FK concept along with Daily Eats, The Lodge and more. “It is healthy but it’s very flavorful. It’s not only for people who want to eat really healthy. It’s really for everyone!”

1350 South Howard Avenue | Tampa | 813-280-0515 | www.cicciorestaurantgroup.com

FK prides itself in serving only non-processed, gluten-free foods, including hormone- and antibiotic-free protein. A popular menu selection is the wide variety of fresh bowls, with a base, veggies, protein and cold-pressed dressing made daily. Other must-tries include cold-pressed juices, infused teas, almond-butter rice crispy treats and zucchini brownies. Lanza explains that the restaurant’s concept was really a labor of love. “It’s the way we like to live and the way we like to eat. It’s the simple foods, the veggies, the fresh ingredients. That’s how we want to live our lifestyle, so we create it for ourselves. We knew that if we created something we loved so much, we would find a way to make it successful.” Since opening in September 2014, the response has been overwhelmingly positive. The restaurant welcomes a wide variety of patrons, like health-conscious locals, high school students, families and more. 84 www.duPontREGISTRYtampabay.com

“It seems like we really hit it right,” Lanza says. “There’s nowhere you can really get a healthy meal around here. We have parents saying that this is the only healthy meals their children will eat, and they are coming in thanking us!” Lanza certainly knows what he’s talking about when it comes to the restaurant business. His family owned 12+ restaurant concepts in Manhattan before moving to Florida. Working his way up from busboy to server and then eventually to management, Lanza knows what it takes to make a restaurant successful. “We travel a lot to California, New York and Miami to get inspiration,” Lanza explains. “Plus, we work with great chefs that always come up with great ideas and dishes. It really is a group effort to come up with the menu.” Each week, the menu changes slightly introducing a new fifth vegetable to the lineup, something customers have really loved. But some of

Lanza’s favorite menu items are staples: almond-crusted baked chicken tenders, sweet potato noodles, kale slaw and roasted brussel sprouts. FK will be expanding its reach with two additional locations soon: A St. Pete location in October and a Sarasota spot in the November/ December timeframe. And what’s next for the Ciccio Restaurant Group? “We have our hands full right now expanding our Fresh Kitchen and Daily Eats concepts. But, you never know!”

CUT FOR A CURE

Sixth annual charity challenge to benefit the Pediatric Cancer Foundation

A

haircut can make a world of difference, especially when it comes to raising money for the Pediatric Cancer Foundation and select nonprofit organizations. From March through May, an all-star team of men, women and children shaved their heads for the 6th annual Veredus Hays Cut for a Cure Charity Challenge presented by Carrabba's Italian Grill. This unique online fundraiser helps fund an entire Phase 1 Clinical Trial each year for the Pediatric Cancer Foundation and enables the foundation to partner with other great charities. It challenges men, women, children and professional athletes to step out of their comfort zone and shave their heads for a good cause. Several head-shaving events took place throughout the campaign with the main head-shaving event being held at TPepin’s Hospitality Centre in Tampa in late April. “Kids battling cancer help to shave heads and I'm always amazed at the strong bonds that are formed between these children and the

participants,” says Nancy Crane, PCF’s Executive Director. “Most of all, I love the laughter and big smiles during each shave.” Team Quantum Leap Farm, just one of 19 teams and 14 individuals who participated this year, included one of our own, Tom duPont. "Tom duPont has shaved his head for the past three years to support Quantum Leap Farm and PCF,” Crane explains. “We are grateful for his compassion, dedication and leadership. Quantum Leap serves many of our local children who are currently battling cancer or have battled in the past. They love the farm, the horses, and the wonderful caring staff.” Sponsors included Veredus Hays, Carrabba’s Italian Grill, Tampa Bay Lightning, Tampa Bay Rays, Tampa Bay Buccaneers, Moffitt Cancer Center, USAmeriBank, Sport Clips Haircuts and WTSP Channel 10 News. These efforts helped raise more than $380,000 this year. 813-269-0955 or pcfcutforacure.org

LAMBORGHINI AVENTADOR SV

L

amborghini's most reactive car is here and it's the new Aventador LP 750-4 Superveloce or the Aventador SV. This supercar from Lamborghini has a revitalized 6.5-liter V-12 engine that produces 750 horsepower and 509 lb-ft. To get this new power, the Variable Valve Timing and Variable Intake System have been optimized. A new lightweight exhaust system lowers back pressure and delivers a heart-stopping soundtrack. Mated to the engine is a 7speed transmission which delivers the power to all four of the wheels. These numbers now get the Aventador SV from 0-62 mph in just 2.8 seconds, 0-124 in 8.6 and it will top out at over 217 mph. This is the fastest series production Lamborghini ever. The changes made to the Aventador SV's exterior are apparent and functional. Necessary downforce was created through the expertise of the aerodynamic engineers and the designers at Lamborghini

Centro Stile. Overall, the car’s aerodynamics have been optimized by 150 percent and it has gained 170 percent more downforce over the standard Aventador. The most obvious aerodynamic and exterior modification is the large rear wing. It can be manually adjusted to three different positions. In the front is a more open fascia with two front wings—one in carbon fiber and one in the color of the car. The rear of the car, along with the new large wing, has been redesigned and crafted with exposed carbon fiber. Along its sides are new sills that are also composed of carbon fiber. The Lamborghini Aventador Superveloce will be available in further colors, but the launch model is made specifically in Rosso Bia with a black Alcantara interior. It will arrive in markets come late spring this year.

Racing fans rejoice……….your penchant for adrenaline can now benefit local families in need. Nicodemus Inc. is a 501c3 that was founded in 2009 by Ed James, a racing enthusiast and former U.S. Marine. With a mission to aid and support families facing catastrophic loss, whether financial, medical or psychological, the ultimate goal is to help local families in crisis. The organization provides public access at fundraising events, and for a charitable donation anyone can have a photo taken with an original Winston Sprint Cup race car, or ride along with a professional driver. More serious aficionados can take the wheel at one of the four Florida racetracks (Daytona, Homestead, Palm Beach or Sebring) and experience top speeds on the track solo after professional instruction. Some of the more memorable cars in the Nicodemus stable include a #33 Skoal Bandit Lumina and an #88 National Guard car, and #3 Goodwrench Chevrolet Monte Carlo. And Lightning McQueen is always a favorite for the younger enthusiasts. With an end goal of “paying it forward”, Nicodemus is working to expand the fundraising efforts beyond their current local focus to help families in further regions.
