he holiday season is upon us, which means it’s time to send heartfelt greetings to family and friends, and invitations to join in the festivities. Soosie Lazenby, owner of URBANcoast in Dunedin, also offers customized design in her couture studio, as well as individual appointments to offer the best personalized service possible. This season, Soosie is noticing a big trend in the pieces she’s designing with her clients—donation cards. “In lieu of grand cards and invitations, people are channeling their energies and money into doing something more philanthropic, which I think is wonderful,” she said. “It’s probably one of my favorite trends that I’ve seen.”

This year, let’s change how we handle holiday weight gain by taking advice from a person whose salesmanship is only outweighed by her moxie. Forbes Riley makes her living promoting health, fitness and vitality as an actress, infomercial superstar and celebrity spokesperson. Known internationally for her globally broadcasted infomercials for the Jack LaLanne Power Juicer and Montel’s Living Well HealthMaster blender as well as pitchperson for FitTV and Body By Jake, Riley’s lived the life of, well, Riley, as she’s shown America how to stay fit through proper nutrition and exercise. Today, she is host and executive producer of her own television show Forbes Living, a platform to promote fledgling inventors and innovators whose ideas need a little attention to catch fire. As well as promoter of her own product, the SpinGym®, a pocket-sized tornado that tightens muscles and builds cardio within a few fiveminute sessions a day. “I think the holidays are really sad for most people. Fortunately or unfortunately, we’ve pre-programed what the holidays should be and it is a house full of presents, and food and people who love them,” this lifestyle guru explains. If you’re an emotional eater, she says, it is important to satisfy your hunger before a big event. It will help you remember why you’re going and give you the strength to make better choices. That simple decision—to understand how the season affects you and then act on it before the ride begins—is the underlying message within Forbes’ health mantra. We make decisions about our health, weight and diet throughout this time of year. Unfortunately, few of us make conscious decisions —instead we allow other people’s expectations to drive our actions. “I don’t need to eat your pie to know you love me,” she says. That image of food as love creates an emotional roller coaster. “Take stock of what the holidays mean to you. Emotionally meet them before they crush you,” she explains.
Decide ahead of time to salvage your waistline. 1. Head for the protein. It’s usually not covered in a sauce and is a safe place to start. 2. Tote your own food. “When I walk in I bring a big cookie tray full of grilled vegetables. That way I can eat something,” she says. 3. Try to avoid alcohol: “At some point, you are drinking a cup of sugar and sugar will trigger you to eat more sugar.” 4. Give back. Last Thanksgiving, Riley and her family were on opposite coasts of the United States. Instead of eating her way through the day—which the admitted emotional overeater knew could happen—she fed the homeless. “I know what is like to be in a really dark space where food is your friend,” she continues. Volunteering puts lives in perspective. 5. Move throughout the season. Burn calories regularly instead of waiting for the January health club specials. Riley touts her Spin Gym® as the perfect everyday exercise. 6. Find an anchor—a memory or idea that makes you happy and go to it when sadness creeps. Odds are you will be unhappy at some point in the season. Uncover that happy trigger and reclaim your emotions, she urges. 7. Stop the hysteria—Don’t comment on family and friends weight. It feeds into the notion that we are only valuable when we’re thin. Stop sizing others up. If Riley is anything, she is the master of her own success and a consummate survivor. AMAZING FISH TALES Not very knowledgeable about fishing but eager to learn? Experienced, Coast Guard-licensed Alaska fishing guides oversee all the details and offer instruction in the “Alaskan” style of fishing for trophy-sized salmon and halibut. As you explore the inlets, bays and open water around the Inside Passage, you’ll also be watching for the wildlife—humpback whales, black bears, bald eagles, otters and sea lions are abundant in the area. It’s even possible to see an orca in the wild here. On a typical day, a hearty breakfast is served at 5 a.m., with boats departing at 6:30 a.m. for a full day of fishing. Lunch is served on board and boats return to the dock by 4:30 p.m., in time for photos of anglers with their catch, followed by dinner. Meals are prepared fresh daily by a professional chef. Accommodations range from the renovated historic boardwalk cabins, originally built in 1912 to house Waterfall Cannery employees, to lodge rooms, executive Egg House suites and family-sized townhouse condos. Perks unique to the resort include the services of a professional staff to filet, process and flash freeze each day’s catch for shipping home. In addition, on the day of departure, guests receive Alaska Airline check-in services—seat assignment, boarding pass and luggage claim checks—onsite at the resort, making the flight from Ketchikan back to Seattle much simpler. The 2015 calendar has already been planned and reservations are now being taken. The King Salmon Jackpot Challenge kicks off the season with a three-day tournament June 12-15.

Whether you simply place a wreath on the front door and light the candles on the table, or put together an extravagant holiday-themed design, it’s helpful to spark your imagination with new ideas. Noted home and style expert Svitlana Flom, the author of the décor blog, Art de Fete, creates the right ambience for the holidays with a special emphasis on table decorations. After all, aren’t family and friends gathered around the dinner table what many of us love best about the holidays? Flom collaborated with floral designer Olga Gerasimenko to create a lavish red and gold “tablescape” that uses a huge mass of red carnations as the centerpiece. The two took a dozen carnations and formed them into lush floral spheres, then gift wrapped them with a festive gold bow and placed them on a clear glass cake plate. Red crystal candle sticks with gold candles, gold-rimmed holiday plates and a red table runner add the finishing touches to the table. It might be over the top, but certainly glamorous. Flom also likes to incorporate elements of nature in all of her décor concepts by dressing up the mantle or a long console table in the foyer with fresh magnolia branches instead of the traditional fir. She inserts pine cones and simple red bulb ornaments along the length of the magnolia display, and groups white candles in varying heights and sizes to complete the look. Designer and business coach Tobi Fairley likes to use citrus, both lemons and oranges, in her holiday designs. She attaches the citrus to wreaths using hot glue, or places them within the greenery on the mantle. For a stronger, holiday-scent, she suggests studding the fruit with cloves.
SIMPLE AND CLASSIC In St. Petersburg’s Old Northeast Neighborhood, you’ll find homes decorated with traditional arrangements of gingerbread collections, boughs of fir and candles on the mantle, as well as chalk-

board displays in the kitchen, all of which lend a classic look to this neighborhood, which is noted for its many historic homes from the 1920s. This is the seventeenth year for the neighborhood’s Candlelight Home Tour, which donates a portion of its proceeds to a different nonprofit organization each year. This year’s charity is CASA. A classic, “retro” style for the holidays is also very fitting for Bok Tower Garden’s Holiday Home Tour at Pinewood Estates. Each of the rooms in the 1930-era Mediterranean-style estate is decorated by a different local designer. Hallways and entrances are decorated by Pinewood volunteers. The most unusual holiday design last year featured striking blue, purple and green accents and peacock feathers to give one of the historic bedrooms an old Hollywood-style glamour. This year’s holiday tour is the twentieth for the estate.
NEED MORE IDEAS? Don’t forget to add a little holiday cheer to your outdoor kitchen and pool area with lights, wreaths, poinsettias and candles. Or how about extending the holiday décor all the way down to the dock by decorating the boat? What could be more unique to Florida than the many area holiday lighted boat parades! f you’re passionate about fine wine, you will want to make sure that your collection is properly stored and protected. Showcasing the bottles on an open wine rack or keeping them in the kitchen refrigerator is not the answer and can actually damage the integrity of the wine over time. Instead, specially designed wine coolers, refrigerators, cabinets and wine rooms are the hottest trend and the perfect solution. These high-tech storage units come with a number of features that today’s oenophiles or wine connoisseurs will appreciate. They guard against the three factors that can do the most harm to your investment: excessive light, fluctuations in temperature and humidity that is either too high or too low. Several top-of-the-line brands, including Sub-Zero Wolf, Miele and Liebherr make wine cabinets that not only serve as a freestanding “appliance” in the kitchen, but in many cases, can also blend perfectly with the style of your cabinets, says Lynn Kislin, of Appliance Gallery. And rather than a solid door, which blocks the view, the units have full-view glass doors to display your collection.

You can also order a custom wine “room” which can double as a nice centerpiece for the dining room or family room, says Nancy Braamse, of Olde World Cabinetry. Custom display units can be created in any style, from traditional to modern, and can hold several hundred bottles. Some of the more high-end wine cellars can be built to hold thousands of bottles. Whichever type of storage you prefer, one of the most important considerations is to include specialized UV-resistant glass to protect the wine from light and temperature changes, says Marc Hammar, of Ferguson. UV rays from sunlight damages the integrity of the wine by contributing to accelerated aging, browning and overall color instability. Dramatic temperature swings are also harmful, as wine is very susceptible to temperature fluctuations, which can cause a chemical reaction that changes the taste. The ideal temperature for red wine is a steady, balanced 65 degrees, or lower for higher-alcohol wines, says Kislin. On the other hand, white wine is best maintained between 49 and 55 degrees. Many people are surprised to learn that humidity can be a problem for wine, says Kislin. But air that is too dry can cause oxidation, which can ruin the taste, while too much humidity can cause corks to mold and even damage the wine labels. Vibration-control is another special feature of today’s high-end wine storage units, says Hammar. Vibration of the bottles, from a noisy compressor or other factors, can agitate sediment, which can alter the wine’s taste. There is one final factor to consider for your collection: security. Connecting your wine storage system into your home’s security system makes sense for several reasons, says Kislin. It will protect you against theft, which is especially important for a large, valuable collection. But it will also monitor for any possible changes to the environment, such as power outages, changes in temperature or humidity and light exposure, all of which could damage the wine. Any breach to the system sends an alert to your mobile device. Whether you enjoy a glass of Cab or Merlot, Chardonnay or Riesling, it makes sense to protect your investment with one of the many high-end wine cabinets available today.

Roasted Sweet Potato Salad Preheat oven to 300 degrees
Serves: 4–8 Salad 2 lbs sweet potatoes, large, diced ½ cup cranberries, dried ½ cup red onion, diced 1 cup walnut halves

¼ cup chiffonade basil, fresh 2 tbsps honey
Salad: Boil sweet potatoes for six to seven minutes until they are just tender. Remove and cool on baking pan. Mix syrup and brown sugar together. Toss with cooled potatoes. Let the excess mixture drain off. Put potatoes in a 300-degree oven and roast until they start to brown up and are completely tender. Remove, cool and place in large mixing bowl. Add the onion, cranberries and walnuts to the cooled potatoes. Dressing: Mix balsamic vinegar and honey in small bowl. Slowly whisk in the olive oil. Add the basil after the oil is incorporated. Pour enough of the balsamic dressing to dress the salad.

Whip eggs and sugar on high speed for 3-5 minutes until light and fluffy. Stop machine. Add pumpkin and mix on low speed then high speed for 3 minutes. Sift dry ingredients and fold into the above mixture. Spread on a greased sheet pan (18 x 26 or two 9 x 13). Bake at 350 until it springs back when touched. Then cool. Remove from pan and place on parchment paper. Spread whipped cream and crystalized walnuts on top, then roll as a jelly roll. Refrigerate. Decorate with either whipped cream, buttercream or white chocolate ganache. Sprinkle with cinnamon/sugar.

Sauce 1 ½ cups merlot wine 1 shallot, sliced 2 tsps oregano, chopped 4 ozs dried black cherries 8 ozs butter
Season shrimp with salt and dried sage. Set aside. Roast squash with salt, pepper, and oil in 325-degree oven for 10 minutes. Boil water and whisk in polenta. Cook 7 minutes on low heat, stirring occasionally. While polenta is cooking, heat medium pan and add oil. Sauté shrimp for 2 minutes on each side then set aside. Take squash from oven and fold into poleta. Add milk and oregano and let stand for 1 minute. Reduce merlot by 2/3 with shallots, cherries and oregano added. Remove from heat. Slowly whisk in butter to preferred thickness.

Filling: Add all ingredients and cook on low heat stirring often. Simmer until liquid has a carmel-like texture. Cool for 30 minutes. Assembling pie: Place parchment paper in pie tin with 1 inch hanging over tin. Spray with cooking spray. Walnut Mixture: Mix walnuts, brown sugar and butter together. Spread walnut mixture over parchment paper, bottom and sides. Place pie crust on top. Pour in apple mixture and top with second pie crust. Bake 375 degrees for 1± hour or crust is browned. Lamb Shanks and Lentils Preheat oven to 375 degrees
Serves: 2 2 lamb shanks 1 yellow onion, peeled and diced into large pieces 2 carrots, peeled and diced into large pieces 1 tbsp olive oil

Lamb Shanks: Season shanks with salt and pepper. Add olive oil, brown lamb shanks on all sides over medium heat. Move to plate. Add onions, celery, and carrots. Reduce heat. Sweat vegetables 10 minutes in fat from shanks. Add rosemary and thyme. Cook 3 more minutes, stirring often. Add shanks back to the pot along with juices on plate. Cover with 2 inches of water. Bring to a boil, cover and place in oven. Allow shanks to cook until meat is fork tender and falling off the bone, about 2.5 hours—check after 2 hours. Cool shanks in liquid, remove them. Strain vegetables from liquid (keep liquid). Lentils: Cook the lentils according to package instructions but use reserved cooking liquid. Save 1/2 cup of the liquid for sauce. Sauce: Reduce cooking liquid by half. Stir in room temperature butter. Stir vigorously to emulsify the sauce. Add salt to taste. You might add a little mustard and fresh chopped herbs, mint perhaps. To Serve: Crisp the shanks up in hot pan with olive oil and butter. Serve over the lentils and spoon sauce over the top.

1/2 cup clam juice 1/4 cup Romano cheese, grated 1 tsp olive oil Touch of salt Flour

Cut salmon into 8-ounce portions. Salt one side lightly. Set aside. Coat bottom of 16inch saute pan with olive oil. Bring to a sear heat which is just before oil starts to smoke. Lightly dust both sides of salmon with flour. Lay in saute pan skin side up, and also add scallops to same pan to brown each side as well. Quickly add your shallots and rosemary sprig with a teaspoon of butter to saute them to a light brown, then add brandy (if gas burners be careful, the brandy will flame up). Once flame goes away add artichokes, shrimp, black olives, clam juice and the sprig of rosemary put entire pan in oven. Let cook for 6-8 minutes depending on desired temperature. Once done remove pan from oven. Sauce: Do not throw away juice left in pan! This is where all the flavor comes from. Add your heavy cream and romano cheese, and reduce to desired thickness. Assemby: Plate each salmon on your serving plates with two shrimp and one scallop on top of each piece of salmon. Pour incredible sauce over salmon, shrimp and scallop. Pepper Crusted Duck Breast, Bourbon Vanilla Sauce CHEF LAURA SCHMALHORST 4–8oz duck breast 1 pint prepared demi glace (see below)
2 ozs Buffalo Trace 1 tbsp vanilla 1 tbsp sherry vinegar
Serves: 4 2 tbsps black peppercorns, crushed
With a sharp knife make criss-cross slices through the top skin of each duck breast being careful not to puncture the skin. Salt and generously coat with crushed peppercorns. In a large skillet over medium-high heat, sauté the duck breasts skin side down, pouring off rendered fat if necessary. Sauté until breasts are crispy and brown about 12 minutes. For medium rare you will only cook the other side of the duck for about 3-4 minutes. Remove duck to a plate, keep warm and let the meat rest for about five minutes. Sauce: Use a high quality demi-glace product found in the meat department of grocery store. Follow directions on the demi glace to make 1 pint. In a saucepan over low heat, simmer the demi-glace with the bourbon, vanilla and sherry vinegar until the alcohol has burned off and the sauce has reduced by about 1/3. Add a little salt, if necessary. To Serve: Slice the duck breast on an angle about 1/4-inch thick. Pour the hot sauce over breast.

2 lbs Velveeta, shredded ½ lb unsalted butter, shredded 3 cans evaporated milk 2 lbs bacon, cooked and chopped half and half, as needed Topping 1 tbsp salt
Preheat oven to 350 degrees

½ tbsp pepper 2 cups Parmesan cheese, freshly grated 6 cups panko bread crumbs 3 tbsps unsalted butter, softened
In a medium stock pot or saucepan, add water and salt. Bring to a boil. Add pasta and cook for about 7 minutes or until soft. Remove from heat, strain and add cheese cubes, butter, Velveeta , bacon and evaporated milk. Using a large spoon or spatula, begin to fold ingredients together until cheese begins to melt—the cubes will not entirely melt. The mac and cheese should have a creamy consistency with visible chunks of cheddar cheese throughout. If it is not creamy, add half and half until desired consistency is achieved. For the topping: Place panko bread crumbs, salt, pepper, Parmesan, and softened butter in a food processor. Pulse to combine well. Place the mac and cheese mixture in a casserole dish. Yields: 9x13 pan 1 lb elbow macaroni 1 lb ground beef 3 eggs, beaten 12 ozs Parmesan (or any grated cheese) 1 cup onion
CHEF TINA CONTES 2.5 tbsps garlic, minced 2 tbsps oregano 1 tsp salt 1 tsp pepper 3 ozs red wine ½ tsp nutmeg
White sauce 2 sticks of butter Half-gallon milk 1/2 c flour
Prepare 1 pound elbow macaroni using the instructions on the box. Leave slightly al dente. Sauté onion and minced garlic until soft and translucent. Add the ground beef. Cook till brown. Add salt, pepper, oregano and a splash of red wine. White sauce: Melt butter. Add flour little by little while stirring constantly. Cook the flour thoroughly until the mixture is very thick. Heat milk. Gradually add heated milk to the butter-flour mixture, while whisking. Keep cooking until it thickens. Combine the pasta, beaten eggs and grated cheese together, and set aside. Grease large oven-safe pan. Assembly: Layer the following in pan in this order: Some white sauce on the bottom; half of the pasta mixture; all of the ground beef; the remaining pasta; the remaining cream sauce. Shake the pan to settle the cream sauce. Sprinkle the top with Parmesan cheese. Spray the top with olive oil. Bake at 350 degrees until brown on top, approximately 30 minutes. Remove from oven. Let pan set for 10 minutes. Serve.

Serves 4 1 lb linguine 4 cups of water 2 small lobsters 5 tbsp olive oil 1 glass white wine 1 1/2 cups grape or cherry tomatoes, cut in half
1/2 cup fresh parsley, chopped 2 large garlic clove, diced 1 small chili pepper, pepperoncino or red pepper flakes, to taste Salt to taste
Wash lobsters and chop in half, cut off heads and set them aside. Boil lobsters approximately 12 minutes. Broth: Place small pot of water over medium-high heat. Add lobster heads, 2 tablespoons olive oil, 1 garlic clove and ¼ cup of white wine. Cover and boil for 15 minutes. Sauce: Place the rest of the olive oil in wide bottomed skillet over mediumhigh heat. Add 1 clove garlic, parsley and previously boiled lobsters. Cook over medium heat and stir with a wooden spoon, so lobster doesn’t stick. Add the broth and let it quickly consume until gone but still keeping all ingredients moist. Add cherry tomatoes. Optional: You can garnish with a couple of shrimp, previously cooked in sauce. Linguine: Add salt to pot of boiling water (note: adding salt to cold water slows down the boiling time). Cook linguine to al dente stage. Drain, reserving some of the pasta water. Add linguine to sauce in skillet and stir to completely coat with sauce, adding pasta water as necessary. Assembly: Place Linguine that has been stirred into the sauce in a bowl. Top with lobster and garnish with parsley, cilantro or green herb of choice. 84 www.duPontREGISTRYtampabay.com

Friends of Music A VIP Concert Club For Ruth Eckerd Hall It’s the ultimate, exclusive concert experience for people who love great music and food in a small, intimate setting. Friends of Music, now in its fifth year at Ruth Eckerd Hall, offers members the opportunity to attend three private events with big name stars like Colbie Caillat, Maroon 5, Sheryl Crow, Kid Rock and Hall & Oates. Best of all, the guest list is capped at 300 and you need a personal invitation to attend. “The shows are for Friends of Music members only,” says Maggie Ciadella, who coordinates the program for Ruth Eckerd Hall. “It’s about building memorable events that keep people talking.” It’s also a unique way for Ruth Eckerd Hall, one of Tampa Bay’s leading performing arts organizations, to engage a younger generation of supporters who not only appreciate great entertainment, but also welcome the opportunity to contribute to the community. Membership in Friends of Music benefits the Marcia P. Hoffman Performing Arts Institute at Ruth Eckerd Hall. “Over the last five seasons, we have raised over one-million dollars net, which has gone directly into our educational programs at the Hoffman Performing Arts Institute,” says Ciadella. The Hoffman Institute offers a diverse range of experiences for young children through seniors, including group classes and private lessons in music, dance, theater and theater technology. There are also summer camps for kids, school field trips to the theatre and outreach programs to schools, hospitals and corporations. Thanks to sponsorship by the Hoffman Institute, Tampa Bay was the second venue in the country to host the Grammy Museum’s Music Revolution Project for musically talented young people last year. The institute will also bring nationally known illusionist Kevin Spencer and his “Healing of Magic”
