You don’t have to be Clark Griswold from “National Lampoon’s Christmas Vacation” when it comes to decorating the exterior of your home! Nick Schriver, a decorator with Decorating Elves, and his team have seen a renaissance of sorts back to the traditional holiday colors outside the home instead of white lights. “Not everyone’s doing it,” said Schriver, “but it’s along the lines of we’ve seen a lot more of it.” Schriver credits the resurgence of color to clients wanting to get back to the youthfulness about what the holidays are all about. The elves use bigger, multicolor bulbs to achieve the colorful effect, without any gaudiness coming into play. 24 www.duPontREGISTRY.com/TampaBay

At the same time, Schriver notes that Christmas is a very traditional time of year, and that traditional items are always a mainstay. Some of these traditional decorating ideas include outlining roof lines, wreaths on windows, wrapping trees and bushes, and character displays in the yard. Even icicle lighting, which was a fad just a few years, has become a staple in lit decorations. Decorating Elves is making the conversion to LED lights, “the best new thing on the market,” said Schriver. “In Tampa, with the high humidity and proximity to the water and salt air, LEDs are far more weather resistant,” he said. Not only that, but clients see up to 80 percent savings off the holiday lighting portion of their electricity bills. Mary Peterson, owner of Signature Landscape Lighting, takes a different look at lighting the exterior of the home. For instance, Peterson likes to wrap a tree in a very wide red velvet ribbon, and highlight the decoration with a spotlight on the tree. “I like to be different, to go against the norm,” she said. “We make it different so that you stand out a little bit more.”

Peterson also notes that holiday lighting can be used year-round, not just during the season. “We stress that you can have that festive look year-round,” she said. “Enjoy that party atmosphere, that look, throughout the year.” Peterson carries the festive feel of the holidays throughout the year by creating a complete lighting package, tailored to each client’s needs, that may include a combination of holiday lighting, up lighting

and architectural lighting. Inside the home, Judy Miller, owner, Limited Edition Interiors, advises that less is more, whatever your taste. “One of the things I recommend people do is, if they’re purchasing things, to purchase big things for their trees,” said Miller. Or, if you have a lot of smaller things, cluster them together. She likes to cluster a group of smaller balls together using a hot glue gun or wire, tying them together with a bow on top. Themed and color-coordinated Christmas trees are also big with Miller’s clients. “For a color-themed tree, look for things that match the colors that you already have in your home,” she advised. “Gold and silver goes with everything!” Looking for a Florida tree? She suggests finding big white sand dollars or other sea life objects, and tropical flowers (such as silk orchids) and foliage, and voila—a Florida tree! For those with family heirloom trees (like yours truly!), Miller suggests adding red balls or bows to anchor the tree, while still showing off those handmade ornaments you’re so proud of. Don’t have a lot of time to decorate during the holiday season? Miller likes to find slim, or pencil, trees that don’t have

the girth of regular trees. Once decorated to your liking, they can simply be rolled up in a sheet and stored in the back of a closet or in the attic until you’re ready to use them the next season. Simply unwrap, and you’ve got a decorated tree, all ready to go! One of the ways to make your home cozy during the holidays is to light a fire in the fireplace. A Dolphinâ&#x20AC;&#x2122;s Tale

From Rescue to the Big Screen

ive years ago, a small, threemonth old dolphin found herself with a crab trap wrapped around her tail. Fortunately, some fishermen came upon her and worked with others to rescue her. Fortunately for her,

she made her way to the Clearwater Marine Aquarium (CMA), where she was cared for 24/7 by staff and volunteers (yours truly, included!)â&#x20AC;&#x201D;and named Winter. As a result of the entanglement, Winter lost her tail; survival from such a dramatic injury was virtually unheard of.

After all, how could a dolphin swim or even survive without a tail?! CMA staff and volunteers had faith and continued to work with her and, against all odds, she survived! Obstacles remained, however. What could be done about a tail? The only

answer anyone could come up with, a prosthetic tail. A lot of concerns surrounded that concept, though—how would the tail stay on? What effect would saltwater have? And, since Winter was a juvenile, there would need to be several prosthetics to fit her as she grew. CMA staff worked extensively with a team of experts to develop the prosthetic tails for Winter. The consortium consists of Clearwater Marine Aquarium and Hanger Orthopedic Group, Inc., and was advised by Mike Walsh, DVM, former Director of Veterinary Services at SeaWorld; Steve McCulloch, Director of Dolphin Research and Conservation at Harbor Branch Oceanographic Institution; and Juli D. Goldstein, DVM and marine mammal specialist. All of the work was done pro bono, and Winter received her first tail in September 2007, nearly two years after she was rescued. According to David Yates, chief executive officer, Clearwater Marine Aquarium, Winter will continue to get a new tail every three months or so for the next three to four years as she grows into adulthood. As word spread about Winter’s incredible story of survival, she became a worldwide sensation. She became quite the celebrity and the subject of many features, from articles in The St. Petersburg Times to The Today Show to television and newspapers around the world. Nearly three and a half years ago, Yates knew that a movie was in the works. “There’s a long way to go until you get close to a green light,” he said.

Dolphin Tale, a 3-D movie, began filming in Clearwater in late September, and stars Morgan Freeman, Ashley Judd, Harry Connick, Jr. and Kris Kristofferson—and, of course, Winter! To get a feel for Winter and her natural behaviors, director Charles Martin Smith spent time with her to get to know her, and to see what could be worked into the film. Mid-summer, Winter’s trainers and CMA staff started working with her to desensitize her to what would be new surroundings. “We built a fake movie set with a lot of the things she’d see during filming,” said Yates. “Things like cameras, lights and booms.” “A lot of what she’s doing in the movie, she’s already doing—it’s her. The best thing is that with her, it’s a lot of fun. She enjoys it. Dolphins need to be stimulated, and Winter’s having a blast right now.” Though Smith is directing the film, Winter’s trainers and CMA staff are in and around the water with her, though out of frame, queuing her. And other aquarium residents will be in the movie, too. “Panama, the dolphin Winter lives with, will play herself,” jokes Yates. She, Indy and Nicholas—all rescued dolphins— will be a part of a mock release scene.

“From day one, we knew the only way that we could do the movie is for everyone to understand that the animal care continues for all our animals,” said Yates. “The movie is going to be huge; it’s going to be life-changing for the aquarium,” he said. “We’re going to tell Winter’s story and it’s going to be seen around the world. The attendance, the revenue and the donations will enable us to grow in our work and to rescue more animals. “This is the ultimate life-changing event that rarely comes around for an organization,” Yates continued. While the CMA team is excited about the movie and telling Winter’s story of survival, Yates understands the impact that it will have not only on the aquarium, but for the area. He believes the making of the movie is the biggest tourism promotion ever for Pinellas County. Dolphin Tale is being filmed at the aquarium, which will be known as Clearwater Marine Hospital in the movie, in addition to spots in and around Clearwater. The landscape isn’t the only local perspective, though. “Out of the nearly 150-person production team, a vast majority are Floridabased,” said Yates. “Of those who are

Florida-based, a majority of them are Tampa-based.” On screen, there will be a scene in the movie, Save Winter Day, which will include about 500 extras, all local. The production of the movie taking place in Clearwater and Pinellas County is generating a lot of money for the area, including hotel rooms, restaurants and the hospitality industry in general, according to Yates. Filming is scheduled to wrap in early December, and a tentative release date for Dolphin Tale is set for mid-September 2011. Though the major premiers will be in L.A. or New York, Yates is confident Clearwater will see its own red carpet premier. “The only thing guaranteed is that the schedule changes. We’re taking it one day at a time,” said Yates. Though she wasn’t expected to survive, Winter continued her fight and defied the odds and survived her seemingly insurmountable obstacles. Five years ago I had a chance to be a part of her life and took away a gentle, friendly reminder that all of us can survive anything if we try. Soon the whole world will be able to take away that same message. dR

Helpful Hints for your Holiday Plants By Cathleen McCann

eautiful plants like amaryllis, poinsettias, and fresh Christmas trees and greenery are among the many things that herald in the holiday season. Alas, the holiday season is over too quickly and many are left in a quandary about what to do with these beautiful seasonal plants and trees. A few helpful hints from some experts will help you extend the holiday season by taking these indoor plants outside to make dramatic impact in your garden. Big, showy flowers are a distinctive feature of the amaryllis plant, a native of tropical and subtropical parts of the Americas. A popular holiday plant, amaryllis makes a dramatic statement with its colorful blooms. “Purchase amaryllis in bulbs and plant them in pots in the house,” says outdoor living space designer Kim Levell of Levell Design in Tampa. “Once the holidays are over, you can replant amaryllis outside and it will come back every year.” For the best results, plant amaryllis in light shade and well-drained soil. Large groupings of ten or more plants in the same color create the biggest impact in the garden. “This burst of color in a landscape is breathtaking,” says Lynn Berber, Florida Yards & Neighborhoods Agent with the Hillsborough County Extension in Seffner. Poinsettias are tropical plants, which make them a perfect houseplant during the holidays. “Replant poinsettias outside once there is no chance of frost,” says Berber. For the best results, plant poinsettias in a sunny spot and moist, well-drained soil. Artificial light can interfere with the plant’s flowering. Certainly, nothing can compare to the wonderful aroma and look of a fresh Christmas tree. Make a fresh cut in the trunk before placing live Christmas trees in the stand. Keep tree watered, away from heat sources, and out of direct sunlight. Options after the holidays include recycling the tree at a yard waste processing facility that accepts Christmas trees, or putting it outside for curbside pick-up on your yard waste collection day. Evergreen hollies such as Ilex ‘Nellie R. Stevens’, Ilex ‘Conif’, and Ilex ‘Opaca’, or Elaeocarpus decipiens provide an alternative to the traditional live Christmas tree and can be replanted in your yard after the holidays. “These plants can be ordered through a specialty nursery,” says Levell. “A twenty-five-gallon container is the minimum you need for a six-foot tree.” She advises keeping plants moist and in bright light while in the home, and planting in shade to part-shade in the yard. Water daily for two weeks until plants are established. “Make sure to select the site in your yard carefully as these plants can become full-sized trees,” she advises. Wreaths and fresh greenery displayed in the home require some care, as well. Keep out of direct sunlight and away from heat sources to avoid drying out. Make sure to mist daily. Inspect holiday items, like wreaths and potpourri, closely for insects. “Wood-boring beetles carry diseases that can damage Florida’s tree canopy,” says Denise Feiber, public information director of Florida’s Department of Agriculture & Consumer Services. Fieber recommends doublebagging the infested product and disposing in the dR household trash.

ugust was fast approaching and Chef Daniel Goldich looked forward to having the month off. The senior banquet chef for the Renaissance International Plaza Tampa Hotel was awaiting the arrival of soon-to-be-born daughter Gabriela as well as taking a break before the busy banquet season began. But the vacation was cut short when then Pelagia Executive Chef Fabrizio Schenardi announced he was moving to St. Louis to join the Four Seasons Hotel and needed to start right away. The 31-year-old Goldich, who arrived in Tampa six years ago to work side-by-side with Schenardi to open the Renaissance Hotel’s signature restaurant, was needed back in the kitchen. Within weeks, Goldich was named Schenardi’s successor. Because Pelagia is part of the AAA Four Diamond Renaissance Hotel, its executive chef supervises not only a restaurant that serves breakfast, lunch and dinner daily but also room service for all 293 guest rooms and on-site catering for weddings, fund-raising events and corporate meetings to ensure the quality, consistency and creativity does not lag at any level. What might seem overwhelming to others is familiar territory to Goldich who previously worked at leading resorts and restaurants coast-to-coast, from Atlantic City, N.J. to Southern California. But it was his childhood spent on the 40-acre family farm in southern New Jersey and the catering business started by his grandmother late in life that first interested Goldich in learning to cook professionally. “I had five sisters so we didn’t go out to eat much. Everyone would help cook,” Goldich recalled. “After my grandparents retired, my grandmother was always entertaining family and friends so I would 64 www.duPontREGISTRY.com/TampaBay

help with her catering business.” Formal training in the culinary arts followed at vocational school and continued until graduation from the acclaimed Academy of Culinary Arts in Atlantic City in 1999. Next stop was the French Alps where Goldich worked as an apprentice under the eight-month tutelage of a chef in Chambery whose restaurant boasted a much coveted Michelin star. “What you put into it is what you get out of it,” Goldich said of his culinary education. “I wanted to learn the proper techniques and a professor had a contact with a revered chef so I went to southeast France to learn the basics of classic French cuisine.” Upon returning to the U.S., Goldich joined the Sheraton Convention Center Hotel in Atlantic City before making another off-shore career jump, this time to focus on fusion cuisine at the W Hotel’s Diamond Head Grill in Honolulu, Hawaii. It was 2001 when Goldich returned to the mainland and the dine-amic duo of Goldich and Schenardi first teamed up to open the Five Star, Five Diamond St. Regis Monarch Beach Resort and Spa in Dana Point, CA. Five years later, when Schenardi opted to made a cross-country career move to Tampa to open Pelagia, he encouraged Goldich to join him and launch what has consistently been a critically acclaimed restaurant lauded for its fresh flavors, inviting presentations and inventive dishes. Now that Goldich has stepped up to Pelagia’s top spot, he knows all will be watching and waiting to see what changes he makes, what direction the menu takes and how the pressures of this pressurecooker position will be handled. and, yes, confident, Goldich and one would never know there are any stresses related to juggling the new job, a growing family and the day-to-day demands of the restaurant, room service and banquets. As he finalizes the fall/winter and holiday menus, helps his wife, Lynnette, raise their seven-week-old daughter, and 18-month-old son Liam, Goldich is building partnerships with local sources for foods that will meet the quality and quantity demands of Pelagia. “I can’t change it all at once but I want to incorporate more foods that are grown locally, purchase seafood that is fresh from the docks and use more of what is in season and fresh,” he said.

Seafood Pasta with Saffron Tagliatelle, Lemon Cello and Lobster Broth 2 ounces semolina flour 7 ounces all purpose flour 2 eggs 1 tablespoon hot white wine 1 teaspoon chopped saffron 1 pinch salt 1 teaspoon oil 6 pieces scallops (u-10) 12 pieces mussels 12 pieces shrimp (16/20) 6 ounces grouper, diced 1/4 cup tomato, diced 2 cloves garlic, minced 1 tablespoon shallots, chopped 1/4 cup white wine 1 ounce butter 1/4 cup lobster stock

Mix the two flours together then add eggs, saffron previously steeped with the wine (save wine for sautéing seafood), salt and mix in mixer with a dough hook. Work the dough for 10 minutes and let rest for 30 minutes then pass it through the pasta machine until you reach the number 1.25. Let dry for two minutes and cut into Tagliatelle shapes. Place on tray with semolina and, when ready, cook in boiling salted water. In a hot sauté pan with a little oil, add seasoned scallop and sear. Once scallop is seared well add mussels, white fish, and shrimp, diced tomatoes, shallots and garlic then deglaze with white wine. Once reduced, add lobster stock, reduce and finish with a tab of butter. Then toss with cooked pasta.

Lobster Stock

Sauté vegetables, cut up lobsters then add to vegetables. Roast well until bright red. Add tomato paste, paprika and let caramelize. Add garlic, peppercorns, thyme and bay leaves. Deglaze with brandy and lemon cello flame and burn off alcohol. Add water to cover by two inches. Bring to a boil, lower temperature and let simmer for two hours. Strain and cool in ice bath. Should be reduced to 1/2 gallon of liquid. Refrigerate remainder up to a week or freeze up to six months. Serves 6 dR

Cherry Almond Biscotti 2 cups white sugar 1 cup all-purpose shortening 4 eggs 4 1/2 cups cake flour 2 teaspoons baking powder 1/2 teaspoon salt 1/3 cup honey 1 1/2 teaspoons anise extract 1 teaspoon vanilla extract 1 cup almonds, sliced 1 cup dried cherries Preheat oven to 350 degrees. Line two cookie sheets with parchment paper. In large mixing bowl, beat sugar and shortening until light and fluffy. Add eggs one at a time, beating well after each addition. Combine honey, anise extract and

vanilla in a small bowl or measuring cup. In a medium bowl, combine flour, baking powder and salt. Alternately add dry ingredients and honey mixture, beginning and ending with the dry ingredients. Stir in the almonds and cherries. Drop dough by spoonfuls onto prepared sheet, forming two 2- x 13-inch long strips on each sheet. Smooth dough into logs with moistened fingertips. Use flour if needed. Bake about 30 to 35 minutes or until golden and firm to the touch. Place cookie sheets on racks and cool completely. Reduce the oven temperature to 300 degrees. Cut cooled logs on the diagonal into 3/4-inch thick slices using a serrated knife. Place slices on cookie sheets. Bake for about 10 minutes, until dry and slightly brown. Remove to a rack and cool. They can be dipped in chocolate if desired. dR

Egg Wash 1 egg 1 teaspoon water Sift together the flour, baking soda, ginger, nutmeg and cinnamon; set aside. In a medium bowl, mix together the shortening, molasses, brown sugar, water, egg and vanilla until smooth. Gradually stir in the dry ingredients until they are completely absorbed. Divide dough into three pieces, pat down and wrap in plastic. Refrigerate for at least 2 hours. Preheat oven to 350 degrees. On a lightly floured surface, roll the dough out to 1/4-inch thickness. Cut into desired shapes with cookie cutters. Place cookies one-inch apart onto an ungreased cookie sheet. Brush with egg wash. Bake for 10 to 12 minutes in the preheated oven. Remove from the baking sheet to

The gardens are lit nightly beginning November 26 through January 2. Music and entertainment are provided, food is available and vendors sell holiday-related gift items. New this year, a holiday gift and plant sale on Sunday, December 12, 10 a.m. to 4 p.m. REINDEER AT THE PARK Santa’s reindeer drop by Lowry Park Zoo during Wild Wonderland, a holiday attraction that also includes photos with Santa, free rides, a sweets shop, holiday lights and displays. The event is held in the evening from 7–10 p.m. on

With inspired designs, immaculate stones and a vivacious personality, Suzanne Perry’s Jewelry Hauture captures the imagination and allure of the red carpet. What, or whom, encouraged you to strike out on your own as a private jeweler? I’ve always had an artistic side to me, but what I could imagine in my head, I couldn’t really do with my bare hands... so I learned early on to be an advocate for other artists. I love beautiful things and I wanted to be able to share that experience with others. Plus, the idea of working a nine-to-five job has never appealed to the entrepreneurial blood that flows through my veins. My time is my own. Where do you find inspiration for your pieces? On the red carpet, where else? Ever since I was a little girl, I’ve been enamored with glamour and luxury. Elizabeth Taylor, Ava Gardner, Jackie Kennedy Onassis, Princess Diana... they were inspirational icons for me... uber-feminine, yet strong personalities. And their jewelry! Elegant, enduring, tasteful, sophisticated, sparkly... what’s not to love? How do you decide which pieces to invest in? First and foremost, it has to be one of a kind. What woman likes to show up to an event in a gown that everyone else is wearing? Personal taste is just that... personal. It shouldn’t be replicated. What do you see for the Jewelry Hauture brand in the future? Honestly, I don’t see much changing. This is fun for me. My clients are discerning and extremely private. It’s an intensely personal relationship and I like it that way. You’ve lived all over the world. Why call South Tampa home? South Tampa has a unique, up-and-coming flavor to it. It’s home to a lot of designers and artists, but is still developing its own style. I like that. I also love being surrounded by water, it’s soothing. But mostly, it’s a great place to raise a family. My son loves it here.
