dR PUBLISHER’S LETTER
Happy Holidays Dear Reader, I hope this issue finds you, your family and friends, preparing to enjoy a bountiful Holiday Season. This is a special time of the year when we all should pause and enjoy ourselves and the fruits of our labor. It is also a time of the year we should take stock of our good fortune and actively express our happiness by reaching out to others less fortunate. We do that here, at the duPont REGISTRYTM, by participating in many holiday activities with our families and co-workers. One of our favorites is “Toys for Tots.” The U.S. Marines do a great job leading the annual campaign, and we come up with an unusual amount of bikes, model cars and other new toys for those less fortunate. Thank you for whatever it is that you do for others during the holidays. The world is a better place because of it. This issue has many tips for entertaining during the holidays, as you might expect. In dR GARDEN we provide Helpful Hints for your Holiday Plants from different professionals in the Tampa Bay area. For things-to-do during the Holiday Season, see the article in dR HOLIDAY HAPPENINGS. You will see quite a variety of events listed, from art shows and parades to music and ice shows, see pages 86 and 88 for dates and times. Our dR TRAVEL section highlights New Orleans for the holidays. New Orleans is the place you want to be any time of the year if you are into culinary experiences. Read about how they dress up the city for the holidays with greenery, lights and special events, then they top it off with the food, for a truly unique experience. Speaking of food, your mouth will water when you read about Alessi Bakery in our dR DISH feature. The Nicolo Alessi family provides recipes and great ideas in this issue. Then, Chef Daniel Goldich from the Renaissance International Plaza Tampa Hotel is featured in dR CULINARY MASTERS. He also shares his recipe for Seafood Pasta with Saffron Tagliatelle, Lemon Cello and Lobster Broth. And at your next family gathering try out one of our sparkling wines or Champagne choices from dR WINE, and you are sure to be a big hit. It may be a little early, but this is my last opportunity to send you holiday greetings in a Publisher’s letter. Please accept my best wishes for a very Merry Christmas and a Happy New Year. Enjoy!

The Archery Shop Archery enthusiasts will find top-brand bows, supplies and accessories at the Archery Shop in Tampa, which opened this summer to give both hunters and hobbyists access to everything they could possibly need, including a 20-yard indoor range, perfect when the weather is too hot or the bugs too intense. Owner Vance McCullers has a passion for the sport, which he says is growing in popularity. “If you’re into it, you’re hooked,” says McCullers. Archery takes concentration, patience, eye-hand coordination, skill and lots of practice to stay consistent. In medieval England, learning archery was compulsory for boys and men. It’s been an Olympic sport since the 1972 games in Munich, Germany. 14520 North Florida Avenue, Tampa. 813-963-2222. www.tampaarcheryshop.com.
Boost Your Golf Performance Improving your golf swing and lengthening your drive requires more than power. Barry Hubbard, the owner of Body Balance for Performance, puts the emphasis on flexibility, balance and range of motion. “The body is the most important equipment in golf,” says Hubbard, who has a 7 handicap and has been a professional caddy since 1991. At his new fitness center in Tampa, Hubbard and his staff incorporate fitness training, physical therapy and technology to boost performance and reduce injury. “It’s very beneficial for golfers, but we can help anyone playing a rotational sport, such as tennis, badminton and hockey,” says Hubbard. The first step is a professional evaluation. 14506 North Florida Avenue, Tampa. 813-963-0201. www.tampabay.fitgolf.com
Transforming the Garage Picture your garage in its current condition and imagine it after Ron Hennings of American Garage has stepped in to take charge, cleaning it up, organizing everything and rolling out high-shine flooring that resists gasoline, oil and brake fluid. American Garage can help design a space to fill multiple needs, from housing the car or motorcycle, to storage for tools, sports equipment and a place to work-out or enjoy a hobby. This is the garage as an extension of the home; a place where you wouldn’t mind hanging out. “We don’t have basements in Florida, so garages can fill that need,” says Hennings. In addition to custom garage designs, you’ll find cabinets, storage systems and commercialgrade flooring in a variety of colors and styles 8080 Ulmerton Road, Suite A, Largo. 727-386-4000. www.americangarage.com

Sleek, Stylish & Eco-Friendly Shelly Meadows of Urban Concepts has partnered with Profusion Design to create a stunning new showroom of ultra-modern fireplaces, furniture and accessories, all crafted from stainless steel, a material she says offers clean lines, is built to last a lifetime and can be crafted into incredible designs. “You will not find anything like it in this area,” says Meadows. Fireplaces are Meadows’ passion; the majority of her work is custom-design. One of her latest: a long, narrow nine-foot ribbon of flame that makes a bold statement. The fireplaces hold “eco-smart burners” which use ethanol alcohol, a clean-burning, non-toxic fuel with no smoke, no gas lines and no electricity. That makes them perfect for indoor or outdoor use. 3245 Tyrone Blvd. N., St. Petersburg. 813-374-2131. www.myurbanconcepts.com
The Chart House The Chart House restaurant comes to Tampa Bay for the first time and the location in Rocky Point couldn’t be better. It’s the perfect spot for a franchise noted for its great steaks and seafood, along with superb waterfront venues. A large outdoor patio allows diners to sit outside and take advantage of the spectacular views in cooler weather. The menu features a large selection of fresh fish, including signature Chart House entrees like Macadmia Crusted Mahi; Bronzed Swordfish with jumbo lump crab; and Spiced Yellowfin Ahi with ginger soy sauce and wasabi cream. Leave room for the deserts – hot chocolate lava cake and a Grand Mariner soufflé with chocolate, raspberry or crème anglaise sauce. 7616 W. Courtney Campbell Causeway, Tampa. 813-289-7773. www.chart-house.com
The Club at Treasure Island Lou Graham, former lead singer of Foreigner, and Joe Piscopo, comedian/actor, are among entertainment planned for The Club at Treasure Island, a private venue that entrepreneur Bill Edwards bought in 2009 and spent a year renovating and upgrading. The new upscale club offers concierge services, a first-rate culinary team and an intimate, cabaret-style second floor ballroom for the great line-up of entertainers Edwards is bringing to town. “It’s a totally different tempo and atmosphere for the club,” says Scott Pinsker, director of marketing and sales. Members have access to six clay tennis courts, a marina and heated pool. Ten percent of membership dues are donated to All Children’s Hospital, along with proceeds from special events, some of which are open to the public. 400 Treasure Island Causeway, Treasure Island. 727-367-4511. www.theclubti.com dR

he holiday season is upon us, and because we oftentimes have balmy temperatures and sunny skies, it’s sometimes hard to get into the spirit. Well, believe it or not, it’s time once again to light and decorate our homes for all the festivities in the upcoming weeks! We spoke with several Bay area decorators on ways to jumpstart your decorating, just in time for the celebrations to begin! You don’t have to be Clark Griswold from “National Lampoon’s Christmas Vacation” when it comes to decorating the exterior of your home! Nick Schriver, a decorator with Decorating Elves, and his team have seen a renaissance of sorts back to the traditional holiday colors outside the home instead of white lights. “Not everyone’s doing it,” said Schriver, “but it’s along the lines of we’ve seen a lot more of it.” Schriver credits the resurgence of color to clients wanting to get back to the youthfulness about what the holidays are all about. The elves use bigger, multicolor bulbs to achieve the colorful effect, without any gaudiness coming into play. 24 www.duPontREGISTRY.com/TampaBay
Season
At the same time, Schriver notes that Christmas is a very traditional time of year, and that traditional items are always a mainstay. Some of these traditional decorating ideas include outlining roof lines, wreaths on windows, wrapping trees and bushes, and character displays in the yard. Even icicle lighting, which was a fad just a few years, has become a staple in lit decorations. Decorating Elves is making the conversion to LED lights, “the best new thing on the market,” said Schriver. “In Tampa, with the high humidity and proximity to the water and salt air, LEDs are far more weather resistant,” he said. Not only that, but clients see up to 80 percent savings off the holiday lighting portion of their electricity bills. Mary Peterson, owner of Signature Landscape Lighting, takes a different look at lighting the exterior of the home. For instance, Peterson likes to wrap a tree in a very wide red velvet ribbon, and highlight the decoration with a spotlight on the tree. “I like to be different, to go against the norm,” she said. “We make it different so that you stand out a little bit more.”
By Susan B. Barnes
Peterson also notes that holiday lighting can be used year-round, not just during the season. “We stress that you can have that festive look year-round,” she said. “Enjoy that party atmosphere, that look, throughout the year.” Peterson carries the festive feel of the holidays throughout the year by creating a complete lighting package, tailored to each client’s needs, that may include a combination of holiday lighting, up lighting
and architectural lighting. Inside the home, Judy Miller, owner, Limited Edition Interiors, advises that less is more, whatever your taste. “One of the things I recommend people do is, if they’re purchasing things, to purchase big things for their trees,” said Miller. Or, if you have a lot of smaller things, cluster them together. She likes to cluster a group of smaller balls together using a hot glue gun or wire, tying them together with a bow on top. Themed and color-coordinated Christmas trees are also big with Miller’s clients. “For a color-themed tree, look for things that match the colors that you already have in your home,” she advised. “Gold and silver goes with everything!” Looking for a Florida tree? She suggests finding big white sand dollars or other sea life objects, and tropical flowers (such as silk orchids) and foliage, and voila—a Florida tree! For those with family heirloom trees (like yours truly!), Miller suggests adding red balls or bows to anchor the tree, while still showing off those handmade ornaments you’re so proud of. Don’t have a lot of time to decorate during the holiday season? Miller likes to find slim, or pencil, trees that don’t have
the girth of regular trees. Once decorated to your liking, they can simply be rolled up in a sheet and stored in the back of a closet or in the attic until you’re ready to use them the next season. Simply unwrap, and you’ve got a decorated tree, all ready to go! One of the ways to make your home cozy during the holidays is to light a fire in the fireplace. Urban Concepts offers both indoor and outdoor fireplaces, but with an edge. Shelly Meadows with Urban Concepts works in homes not usually associated with fireplaces—
condos and apartments. She has even put burners into coffee tables, “for an indoor fire pit.” The fireplaces that Meadows works with burn ethanol, an alternative fuel that is clean burning and doesn’t smoke. “We have the perfect Florida fireplace,” said Meadows. “They put off low heat, and all of that heat goes throughout the room, instead of a vent.” With all of these decorating ideas, whatever your idea of decorating for the holidays, make it festive and most of all—you! dR

BRING A SENSE OF STYLE HOME FOR THE HOLIDAYS WITH A FEW NEW ADDITIONS TO COMPLIMENT YOUR WELL-DRESSED TABLE.
H
By Gale Steves Home for the holidays usually means pulling out all those posh plates, glittering glassware and shining silver you have saved for this occasion. Tis the season to celebrate, and what better way than a fine table display. However, you may need to go shopping because this year’s design trend is for putting on the glitz, not the holly or snowmen. “The new elegant holiday table is a combination of gold, silver and deep reds or blues”, say Winnie Magnon Marvel of Alvin Magnon Jewelers. “And the good news is that these pieces (sans Santa) can be used for stylish entertaining throughout the year, not just relegated to the months of December and January.” 26 www.duPontREGISTRY.com/TampaBay
The trick is that you do not have to invest in a whole new set of anything. Try adding a fresh look with new salad or accent plates. They can change the whole look of a table. The same is true of new stemware. A touch of gold or color can add drama to a meal. And gleaming silver serving pieces makes a table feel dressed for dinner. This is a secret that fashionable hostesses have been practicing forever. So dust off your stored china and crystal, and create this year’s seasonal settings with a few new additions. Here are some inspirations to bring glad tidings to your holiday table.
Table Mate The simple lines of Christofle Silver’s Malmaison gravy boat give your sauces distinction, whether they are homemade or made by others. Treasure this piece on your table. ($1,750.) Available at Christofle store in Pelican Bay, Naples or by special order from Robb & Stucky, Tampa. www.RobbStuckey.com
Dressed in Red Red is definitely an attention getter, and it will give a special glow to your table with these outstanding accent plates in Syracuse Rose pattern by Robert Haviland for Mottahedeh. ($190.00 each or 5-piece place setting, $990.) Alvin Magnon Jewelers, Tampa
Precious Metals China for a gracious table needs to be a chameleon. It should be able to dress up or dress down depending on the occasion. The Palladium bone china from Tiffany features a radiating pattern of gold and platinum pinstripes. $225 and up. Tiffany & Co., International Plaza, Tampa. www.tiffany.com
Regal Setting This china pattern is multi-layered and can change personality accordingly. Renaissance Gold china by Wedgwood makes a holiday table gleam or a regular dinner a festive occasion. The bold blue and intricate gold detail makes this a favorite. $215 for 5-piece place setting. $990. Macy’s Westshore Plaza, Tampa.
Raise a Glass Crystal stemware adds glass distinction to your holiday table. Get in the party spirit with this exquisite Mille Nuits Flutissimo in Ruby by Baccarat. Your champagne will taste even better than before in these flutes. $220 each—boxed in set of two. Neiman Marcus, International Plaza, Tampa. www.neimanmarcus.com dR

A Dolphin’s Tale
From Rescue to the Big Screen
By Susan B. Barnes
F
ive years ago, a small, threemonth old dolphin found herself with a crab trap wrapped around her tail. Fortunately, some fishermen came upon her and worked with others to rescue her. Fortunately for her,
30 www.duPontREGISTRY.com/TampaBay
she made her way to the Clearwater Marine Aquarium (CMA), where she was cared for 24/7 by staff and volunteers (yours truly, included!)—and named Winter. As a result of the entanglement, Winter lost her tail; survival from such a dramatic injury was virtually unheard of.
After all, how could a dolphin swim or even survive without a tail?! CMA staff and volunteers had faith and continued to work with her and, against all odds, she survived! Obstacles remained, however. What could be done about a tail? The only
answer anyone could come up with, a prosthetic tail. A lot of concerns surrounded that concept, though—how would the tail stay on? What effect would saltwater have? And, since Winter was a juvenile, there would need to be several prosthetics to fit her as she grew. CMA staff worked extensively with a team of experts to develop the prosthetic tails for Winter. The consortium consists of Clearwater Marine Aquarium and Hanger Orthopedic Group, Inc., and was advised by Mike Walsh, DVM, former Director of Veterinary Services at SeaWorld; Steve McCulloch, Director of Dolphin Research and Conservation at Harbor Branch Oceanographic Institution; and Juli D. Goldstein, DVM and marine mammal specialist. All of the work was done pro bono, and Winter received her first tail in September 2007, nearly two years after she was rescued. According to David Yates, chief executive officer, Clearwater Marine Aquarium, Winter will continue to get a new tail every three months or so for the next three to four years as she grows into adulthood. As word spread about Winter’s incredible story of survival, she became a worldwide sensation. She became quite the celebrity and the subject of many features, from articles in The St. Petersburg Times to The Today Show to television and newspapers around the world. Nearly three and a half years ago, Yates knew that a movie was in the works. “There’s a long way to go until you get close to a green light,” he said.

Dolphin Tale, a 3-D movie, began filming in Clearwater in late September, and stars Morgan Freeman, Ashley Judd, Harry Connick, Jr. and Kris Kristofferson—and, of course, Winter! To get a feel for Winter and her natural behaviors, director Charles Martin Smith spent time with her to get to know her, and to see what could be worked into the film. Mid-summer, Winter’s trainers and CMA staff started working with her to desensitize her to what would be new surroundings. “We built a fake movie set with a lot of the things she’d see during filming,” said Yates. “Things like cameras, lights and booms.” “A lot of what she’s doing in the movie, she’s already doing—it’s her. The best thing is that with her, it’s a lot of fun. She enjoys it. Dolphins need to be stimulated, and Winter’s having a blast right now.” Though Smith is directing the film, Winter’s trainers and CMA staff are in and around the water with her, though out of frame, queuing her. And other aquarium residents will be in the movie, too. “Panama, the dolphin Winter lives with, will play herself,” jokes Yates. She, Indy and Nicholas—all rescued dolphins— will be a part of a mock release scene.
32 www.duPontREGISTRY.com/TampaBay
“From day one, we knew the only way that we could do the movie is for everyone to understand that the animal care continues for all our animals,” said Yates. “The movie is going to be huge; it’s going to be life-changing for the aquarium,” he said. “We’re going to tell Winter’s story and it’s going to be seen around the world. The attendance, the revenue and the donations will enable us to grow in our work and to rescue more animals. “This is the ultimate life-changing event that rarely comes around for an organization,” Yates continued. While the CMA team is excited about the movie and telling Winter’s story of survival, Yates understands the impact that it will have not only on the aquarium, but for the area. He believes the making of the movie is the biggest tourism promotion ever for Pinellas County. Dolphin Tale is being filmed at the aquarium, which will be known as Clearwater Marine Hospital in the movie, in addition to spots in and around Clearwater. The landscape isn’t the only local perspective, though. “Out of the nearly 150-person production team, a vast majority are Floridabased,” said Yates. “Of those who are
Florida-based, a majority of them are Tampa-based.” On screen, there will be a scene in the movie, Save Winter Day, which will include about 500 extras, all local. The production of the movie taking place in Clearwater and Pinellas County is generating a lot of money for the area, including hotel rooms, restaurants and the hospitality industry in general, according to Yates. Filming is scheduled to wrap in early December, and a tentative release date for Dolphin Tale is set for mid-September 2011. Though the major premiers will be in L.A. or New York, Yates is confident Clearwater will see its own red carpet premier. “The only thing guaranteed is that the schedule changes. We’re taking it one day at a time,” said Yates. Though she wasn’t expected to survive, Winter continued her fight and defied the odds and survived her seemingly insurmountable obstacles. Five years ago I had a chance to be a part of her life and took away a gentle, friendly reminder that all of us can survive anything if we try. Soon the whole world will be able to take away that same message. dR

Helpful Hints for your Holiday Plants By Cathleen McCann
B
eautiful plants like amaryllis, poinsettias, and fresh Christmas trees and greenery are among the many things that herald in the holiday season. Alas, the holiday season is over too quickly and many are left in a quandary about what to do with these beautiful seasonal plants and trees. A few helpful hints from some experts will help you extend the holiday season by taking these indoor plants outside to make dramatic impact in your garden. Big, showy flowers are a distinctive feature of the amaryllis plant, a native of tropical and subtropical parts of the Americas. A popular holiday plant, amaryllis makes a dramatic statement with its colorful blooms. “Purchase amaryllis in bulbs and plant them in pots in the house,” says outdoor living space designer Kim Levell of Levell Design in Tampa. “Once the holidays are over, you can replant amaryllis outside and it will come back every year.” For the best results, plant amaryllis in light shade and well-drained soil. Large groupings of ten or more plants in the same color create the biggest impact in the garden. “This burst of color in a landscape is breathtaking,” says Lynn Berber, Florida Yards & Neighborhoods Agent with the Hillsborough County Extension in Seffner. Poinsettias are tropical plants, which make them a perfect houseplant during the holidays. “Replant poinsettias outside once there is no chance of frost,” says Berber. For the best results, plant poinsettias in a sunny spot and moist, well-drained soil. Artificial light can interfere with the plant’s flowering. Certainly, nothing can compare to the wonderful aroma and look of a fresh Christmas tree. Make a fresh cut in the trunk before placing live Christmas trees in the stand. Keep tree watered, away from heat sources, and out of direct sunlight. Options after the holidays include recycling the tree at a yard waste processing facility that accepts Christmas trees, or putting it outside for curbside pick-up on your yard waste collection day. Evergreen hollies such as Ilex ‘Nellie R. Stevens’, Ilex ‘Conif’, and Ilex ‘Opaca’, or Elaeocarpus decipiens provide an alternative to the traditional live Christmas tree and can be replanted in your yard after the holidays. “These plants can be ordered through a specialty nursery,” says Levell. “A twenty-five-gallon container is the minimum you need for a six-foot tree.” She advises keeping plants moist and in bright light while in the home, and planting in shade to part-shade in the yard. Water daily for two weeks until plants are established. “Make sure to select the site in your yard carefully as these plants can become full-sized trees,” she advises. Wreaths and fresh greenery displayed in the home require some care, as well. Keep out of direct sunlight and away from heat sources to avoid drying out. Make sure to mist daily. Inspect holiday items, like wreaths and potpourri, closely for insects. “Wood-boring beetles carry diseases that can damage Florida’s tree canopy,” says Denise Feiber, public information director of Florida’s Department of Agriculture & Consumer Services. Fieber recommends doublebagging the infested product and disposing in the dR household trash.

The Oaks at City Park
T
The holiday season is nearly here, and you can feel the change in the air. Get togethers with friends and families are planned; gifts are bought and wrapped (maybe!); and happiness abounds. New Orleans is seemingly made for the holidays. The architecture and ironworks found throughout the city are magically strewn with greens, garlands and twinkling lights, setting just the right scene to celebrate the holidays. To really immerse yourself in the holidays—New Orleans style, take advantage of some of the many events the city has planned. One holiday favorite is to

take a stroll through the Celebration in the Oaks at City Park, a dazzling display of nearly two million lights strung throughout 100-year-old oak trees. On December 11, take the trolley to the historic Garden District and stroll through the 35th Annual Holiday Home Tour. Seven beautifully decorated homes will be featured, as well as a bonus—the Opera Guild Home. If you’re visiting over December 19, stop by St. Louis Cathedral’s Annual Holiday Concert, and afterwards, take a song sheet and lit candle and join in on your favorite carols during Caroling in Jackson Square,
right in the heart of the French Quarter. Eating, of course, is part of the New Orleans experience. With restaurant after restaurant offering the finest meals, you really can’t go wrong with whichever you choose in the Big Easy. For a true culinary delight, make reservations for breakfast at Brennan’s Restaurant. Plan on spending an hour or two to enjoy a decadent, three-course breakfast. Yes, a three-course breakfast. My recommendation: start with the baked apple, followed by either the Eggs Sardou, with artichoke bottoms and creamed spinach, or Eggs Nouvelle

traditional meal stretches for hours over four or five courses, offering ample time to enjoy not on the food, but the company you’re with. 5 Fifty 5 Restaurant is one that does it right—this year’s menu features a five-course meal, starting with artichoke parmesan bisque, a foie gras hop ‘n john, gulf snapper and a lamb chop, finishing off with a decadent dessert. A nightcap at the Davenport Lounge inside the Ritz-Carlton, New Orleans, featuring the musical stylings of jazz great Jeremy Davenport and his band is the perfect way to end a night in the Crescent City. For many, the holiday season brings with it the spirit of giving. The New Orleans
Orléans, with melt-in-your-mouth lump crabmeat. For dessert—yes, dessert with breakfast—made-to-order Bananas Foster, a Brennan’s creation. Wash it all down with a classic Brandy Milk Punch or a Mr. Funk of New Orleans, a delicious blend of champagne, cranberry juice and peach schnapps, and you’ve had breakfast at Brennan’s. During the holidays, one meal not to be missed is a Reveillon dinner. This Creole
Marriott offers a special package for those looking to give back, called Spirit to Serve. Guests who book the Spirit to Serve Package (available certain weekends throughout the winter) have the option to either work on a Habitat for Humanity house to help rebuild the neighborhoods of New Orleans hardest hit by Hurricane Katrina, or volunteer at Second Harvest Food Bank of Greater New Orleans to help those families impacted by the Gulf oil spill. Deluxe accommodations; transportation to and from the volunteer site; and a dedicated concierge to coordinate volunteer efforts are included in the package. This year, start your holidays off right with a trip to New Orleans. The city is ready to welcome you with open arms. dR

CHAMPAGNE FOR THE HOLIDAYS Apropos and Festive
By Jeffrey DiMaio, CSW
WHEN IT COMES TO THE HOLIDAYS, CHAMPAGNE AND SPARKLING WINES HAVE ALWAYS BEEN THE STANDARD. NOWADAYS, THERE ARE MORE CHOICES THAN EVER. HERE’S A GUIDE TO PICKING THE RIGHT BOTTLE FOR ANY OCCASION. The Gift

Giving the Very Best
Whenever possible, it’s best to go with a true Champagne (that means something that comes only from the Champagne region in France). For something special, skip the usual suspects and go with a small-production grower Champagne like Vilmart or Pierre Peters. Chances are the recipient will love you for turning them on to something new and unique.
Moscato d’Asti, a lightly fizzy and refined version of Asti Spumante, is enjoying tremendous exposure and success recently. It’s perfect with simple desserts like panettone or holiday cookies. For a similarly-styled red, try Brachetto d’Acqui. Other options include demi-sec versions of Champagne or sparkling Vouvray.
Everybody’s heard about Moët and Chandon’s “Dom Perignon” or Roederer’s “Cristal.” These are called Tête de Cuvée or Prestige Cuvée. Every Champagne house has at least one and they represent it’s the top of the line. You really can’t go wrong with any of them. To impress a connoisseur, older vintages of Bollinger R.D. and Dom Perignon (Oenotheque) are often available or try anything from impeccable producers Krug or Salon.
The Party Toast Prosecco is at the height of its popularity. It’s easily affordable and fun, just what you need when you’re buying multiple bottles for a party. For the ultimate party, get yourself a large format like a Magnum or Jeroboam (3-liter bottle). Nothing kicks off the festivities like popping one of these big daddies!
The Holiday Punch Bowl Spanish Cava has a crisp, full flavor and represents a great value in traditional-method sparkling wine. They make great mixers for your Holiday punch or any Champagnebased cocktails.
The Holiday Dinner For that special moment, break out a vintage Champagne from a top house like Billecart-Salmon or Gosset. For a more casual meal try an American classic like Schamsberg, Handley or “J.”

Chef Daniel Goldich Senior Banquet Chef to Executive Chef in the Blink of an Eye
A
ugust was fast approaching and Chef Daniel Goldich looked forward to having the month off. The senior banquet chef for the Renaissance International Plaza Tampa Hotel was awaiting the arrival of soon-to-be-born daughter Gabriela as well as taking a break before the busy banquet season began. But the vacation was cut short when then Pelagia Executive Chef Fabrizio Schenardi announced he was moving to St. Louis to join the Four Seasons Hotel and needed to start right away. The 31-year-old Goldich, who arrived in Tampa six years ago to work side-by-side with Schenardi to open the Renaissance Hotel’s signature restaurant, was needed back in the kitchen. Within weeks, Goldich was named Schenardi’s successor. Because Pelagia is part of the AAA Four Diamond Renaissance Hotel, its executive chef supervises not only a restaurant that serves breakfast, lunch and dinner daily but also room service for all 293 guest rooms and on-site catering for weddings, fund-raising events and corporate meetings to ensure the quality, consistency and creativity does not lag at any level. What might seem overwhelming to others is familiar territory to Goldich who previously worked at leading resorts and restaurants coast-to-coast, from Atlantic City, N.J. to Southern California. But it was his childhood spent on the 40-acre family farm in southern New Jersey and the catering business started by his grandmother late in life that first interested Goldich in learning to cook professionally. “I had five sisters so we didn’t go out to eat much. Everyone would help cook,” Goldich recalled. “After my grandparents retired, my grandmother was always entertaining family and friends so I would 64 www.duPontREGISTRY.com/TampaBay
help with her catering business.” Formal training in the culinary arts followed at vocational school and continued until graduation from the acclaimed Academy of Culinary Arts in Atlantic City in 1999. Next stop was the French Alps where Goldich worked as an apprentice under the eight-month tutelage of a chef in Chambery whose restaurant boasted a much coveted Michelin star. “What you put into it is what you get out of it,” Goldich said of his culinary education. “I wanted to learn the proper techniques and a professor had a contact with a revered chef so I went to southeast France to learn the basics of classic French cuisine.” Upon returning to the U.S., Goldich joined the Sheraton Convention Center Hotel in Atlantic City before making another off-shore career jump, this time to focus on fusion cuisine at the W Hotel’s Diamond Head Grill in Honolulu, Hawaii. It was 2001 when Goldich returned to the mainland and the dine-amic duo of Goldich and Schenardi first teamed up to open the Five Star, Five Diamond St. Regis Monarch Beach Resort and Spa in Dana Point, CA. Five years later, when Schenardi opted to made a cross-country career move to Tampa to open Pelagia, he encouraged Goldich to join him and launch what has consistently been a critically acclaimed restaurant lauded for its fresh flavors, inviting presentations and inventive dishes. Now that Goldich has stepped up to Pelagia’s top spot, he knows all will be watching and waiting to see what changes he makes, what direction the menu takes and how the pressures of this pressurecooker position will be handled. and, yes, confident, Goldich and one would never know there are any stresses related to juggling the new job, a growing family and the day-to-day demands of the restaurant, room service and banquets. As he finalizes the fall/winter and holiday menus, helps his wife, Lynnette, raise their seven-week-old daughter, and 18-month-old son Liam, Goldich is building partnerships with local sources for foods that will meet the quality and quantity demands of Pelagia. “I can’t change it all at once but I want to incorporate more foods that are grown locally, purchase seafood that is fresh from the docks and use more of what is in season and fresh,” he said.
Seafood Pasta with Saffron Tagliatelle, Lemon Cello and Lobster Broth 2 ounces semolina flour 7 ounces all purpose flour 2 eggs 1 tablespoon hot white wine 1 teaspoon chopped saffron 1 pinch salt 1 teaspoon oil 6 pieces scallops (u-10) 12 pieces mussels 12 pieces shrimp (16/20) 6 ounces grouper, diced 1/4 cup tomato, diced 2 cloves garlic, minced 1 tablespoon shallots, chopped 1/4 cup white wine 1 ounce butter 1/4 cup lobster stock
Mix the two flours together then add eggs, saffron previously steeped with the wine (save wine for sautéing seafood), salt and mix in mixer with a dough hook. Work the dough for 10 minutes and let rest for 30 minutes then pass it through the pasta machine until you reach the number 1.25. Let dry for two minutes and cut into Tagliatelle shapes. Place on tray with semolina and, when ready, cook in boiling salted water. In a hot sauté pan with a little oil, add seasoned scallop and sear. Once scallop is seared well add mussels, white fish, and shrimp, diced tomatoes, shallots and garlic then deglaze with white wine. Once reduced, add lobster stock, reduce and finish with a tab of butter. Then toss with cooked pasta.
Lobster Stock
Sauté vegetables, cut up lobsters then add to vegetables. Roast well until bright red. Add tomato paste, paprika and let caramelize. Add garlic, peppercorns, thyme and bay leaves. Deglaze with brandy and lemon cello flame and burn off alcohol. Add water to cover by two inches. Bring to a boil, lower temperature and let simmer for two hours. Strain and cool in ice bath. Should be reduced to 1/2 gallon of liquid. Refrigerate remainder up to a week or freeze up to six months. Serves 6 dR

Tradition
By Melinda Tam Orlando
olidays are synonymous with special traditions, spending time with loved ones and delicious meals. And what better way to start the season out right than a visit to the legendary Tampa establishment that was founded on those same principles: Alessi Bakery & Deli. When Nicolo Alessi arrived in Tampa from Italy in 1912, he put his baking knowledge to good use and opened the first Alessi Bakery on Cherry Street. In 1925, he moved the bakery to the corner of North Howard Avenue and Chestnut Street. Now, nearly 100 years later, Alessi Bakery & Deli continues to fill Tampa Bay bellies with delicious Italian delicacies made with the finest ingredients. The current West Cypress Street, green-roofed location boasts an Old World charm with rows of sweet treats, make-to-order sandwiches, specialty coffees and friendly smiles, no doubt in part by the family management, Phil Alessi Jr., the great-grandson of Nicola Alessi. Phil Jr. serves as Alessi Bakery &
H
Deli’s President and CEO, but he will be the first one to showcase a more laidback attitude. “I’m not one for titles,” Phil Jr. explains. “We are very personable here. We are on a first-name basis with many of our customers.” And the landmark’s busiest time of year is no different. Italian and gingerbread cookies, Yule logs, biscotti, specialty cakes and more are freshly made every day and sent out with customers to enjoy during their holiday parties and seasonal gatherings. Regulars as well as new visitors bustle their families right into the restaurant to nibble and chat in the outdoor-seating area. Others reach out to the Alessi Bakery & Deli to take over the entire holiday-meal planning through the catering service, which can help a hostess with any party stress. In the end, Phil Jr. takes great pride knowing that Tampa Bay families will be taking Alessi Bakery & Deli along in all their holiday traditions. “It’s a dream come true to bring the bakery to the next generation,” Phil Jr.
says. “I feel very fortunate to be a part of something my family started so long ago and I want to help carry on that tradition.” Alessi Bakery & Deli will celebrate that great honor by decorating for the holidays and making more than 20,000 pounds of Italian cookies during the season. Perhaps you’ll end up with a holiday spread much like the Alessi family at family gatherings. “We are a very close-knit family and we keep things pretty low-key, but we do have any amazing spread,” Phil Jr. boasts. And as always, the bakery’s reputation for quality, consistency and customer service will keep you coming back for more, long after the twinkle lights are packed up and the last candy cane is gone. Aside from the winter offerings, Alessi Bakery & Deli will still have those must-have items that patrons have come to love like stuffed potatoes, Cuban sandwiches, deviled crabs, fresh salads, unbelievably delicious bakery goods and more. Be sure to try the famous “Scachatta,” which was originally created by Nicolo Alessi in Italy. Alessi Bakery & Deli still makes this best-selling item with that same recipe today—and that’s a family tradition.

ampa’s Glazer Children’s Museum isn’t a typical museum. This handson experience actually encourages children and their families to explore and discover all it has to offer. The museum is specifically designed for children through age 10 and their families with educationally programmed exhibits, designed to meet the needs of the young visitors. The 53,000square-foot space features 12 themed areas including 170 “Interactivities” that are accessible, bilingual, safe and interactive. Alan Mock, the museum’s VP of Development & Marketing, says a visitor’s note that the museum received explains it best. “I didn’t have to tell my son ‘no’ or ‘don’t touch that’ all day. All I kept saying was ‘keep going and have fun.’” But the most amazing part of the Glazer Children’s Museum is how it brings
families closer together. “It offers a unique environment that is safe, stimulating and playful, where children and families can
learn about themselves, each other and the world they live in through exploration and role-playing,” Mock explains. The museum’s three floors offers

HOLIDAY BOAT PARADES Nothing is quite as magical—or so tropical— as watching a flotilla of boats glide by in the dark, festively illuminated with holiday lights. Don’t miss this annual tradition held everywhere from Tierra Verde, St. Pete Beach and Treasure Island to Indian Shores, Redington Beach, Madeira Beach, Dunedin, Tampa, St. Petersburg and Clearwater Beach. Both The Club at Treasure Island and St. Petersburg will hold parades on Saturday evening, December 11.
SANTA, SNOW AND SKATING St. Petersburg kicks off the holidays with a downtown tree lighting ceremony on November 26; then on December 11, the annual Santa Parade takes place along the waterfront starting at 10 a.m., followed by Snowfest, an afternoon children’s event. For a personal visit with Santa, stop by North Straub Park, various evenings throughout December. MIRACLE ON CLEVELAND STREET Downtown Clearwater’s Cleveland Street district transforms into a winter wonderland on Saturday, December 4 with snow, a tree lighting ceremony, the arrival of Santa, carolers, vendors, entertainment by a national recording artist, the Deck the District wreath contest—and the announcement of the winning wreaths.
Miracle on Cleveland Street
SANTA COMES TO TAMPA Bring the family for a holiday parade through downtown Tampa streets starting at 10 a.m. on Saturday, December 4, followed by, live entertainment, arts and crafts, a visit with Santa and skating on an actual ice rink at Curtis Hixon Park until 4 p.m.
Christmas on the Mall in downtown St. Petersburg
VICTORIAN CHRISTMAS For a retro look at the holidays, don’t miss the University of Tampa’s Victorian Stroll, held at the Henry Plant Museum, the former opulent hotel built in 1891 by railroad magnate Henry Plant. Known for its fabulous Moorish architecture and distinctive “onion” dome minarets, the museum is filled with authentic furniture and accessories from the Victorian age and decorated for the holidays with an 18-foot tree, antique toys, and carolers.
HOLIDAY DANCE What would the holidays be without the Nutcracker? Enjoy Moscow Ballet’s Classic Russian Nutcracker at Ruth Eckerd Hall in Clearwater (December 18–19); the Straz Center for the Performing Arts in Tampa (December 22–23) and Mahaffey Theater in St. Petersburg (December 28). Or for a modern-day twist on the Nutcracker story, see Cirque Dreams Holidaze, where ornaments come to life, performing Cirque de Soleil-type feats at the Straz Center (December 17–19).
CHRISTMAS ON ICE Bush Gardens hosts several popular holiday attractions during December, including Christmas on Ice with professional skaters, holiday-themed gospel and spiritual songs with a live choir, and a music extravaganza with tap-dancing toy soldiers. The entire park is decorated for the holidays, plus a New Year’s Eve show features fireworks and a concert by the Guess Who. FINE ARTS & CRAFTS HOLIDAY SHOWS Two Tampa Bay landmark venues, The Florida Craftsmen Gallery in St. Petersburg and the Dunedin Fine Arts Center, hold their annual holiday sale and show throughout the month. For high-end arts and crafts items, these galleries are the places to visit. CLASSIC HOLIDAY MOVIES If you love Miracle on 34th Street, White Christmas or It’s a Wonderful Life, don’t miss the annual holiday movie series in December at the historic Tampa Theatre in downtown Tampa. This spectacular 1920era movie palace is well worth a visit.

eaving the technological convertible mechanisms for the competition, Audi has donned the A5 Cabriolet with a cloth top because of the panache, texture, and style that it adds. BMW, Lexus, and Infiniti have switched to hardtop apparatuses; however, soft-tops do have their advantages: they typically weigh less, cost less, use less trunk space, open faster, and, in Audi’s case and thanks to its special Acoustics Roof, offer noise levels at or near that of a conventional coupe. Hard-tops can also make the car look a little bulbous when up. With its flattering lines, one of the quietest soft-tops in the

business, and a new powerful supercharged 333-hp V-6 shared with the Audi S4 under its bonnet, the sportier version of the A5 Cabriolet, the S5 Cabriolet, offers its owner few compromises. It is powerful, sporty, and luxurious and comes with adequate backseat space for two full-size adults. The optional $1,400 Comfort Package expands the opportunities for top-down motoring thanks to front seats that are capable of sending cool air through its perforated leather and to the front occupants’ backsides in the warmer months. Also included in the package is Audi’s neck-level warming system, which keeps its occupants comfortable once the winter season hits. The optional $2,450 MMI Navigation system adds a seven-inch LCD screen and includes a 40GB hard drive; real-time traffic, navigation, and tele-
phone functions; and a rear-view camera and ultrasonic parking sensors for both visual and audible parking assistance. The 333-hp Audi S5 Cabriolet starts at $58,450, on par with the $58,700 320-hp BMW 335is and the $56,850 268-hp Mercedes-Benz E350 Cabriolet; however, it may win customers’ hearts with a more balanced package offering brisk performance combined with decent fuel economy, good looks, advantageous room and storage, and the reassurance of standard all-wheel drive. dR

JEWELRY
HAUTURE
With inspired designs, immaculate stones and a vivacious personality, Suzanne Perry’s Jewelry Hauture captures the imagination and allure of the red carpet. What, or whom, encouraged you to strike out on your own as a private jeweler? I’ve always had an artistic side to me, but what I could imagine in my head, I couldn’t really do with my bare hands... so I learned early on to be an advocate for other artists. I love beautiful things and I wanted to be able to share that experience with others. Plus, the idea of working a nine-to-five job has never appealed to the entrepreneurial blood that flows through my veins. My time is my own. Where do you find inspiration for your pieces? On the red carpet, where else? Ever since I was a little girl, I’ve been enamored with glamour and luxury. Elizabeth Taylor, Ava Gardner, Jackie Kennedy Onassis, Princess Diana... they were inspirational icons for me... uber-feminine, yet strong personalities. And their jewelry! Elegant, enduring, tasteful, sophisticated, sparkly... what’s not to love? How do you decide which pieces to invest in? First and foremost, it has to be one of a kind. What woman likes to show up to an event in a gown that everyone else is wearing? Personal taste is just that... personal. It shouldn’t be replicated. What do you see for the Jewelry Hauture brand in the future? Honestly, I don’t see much changing. This is fun for me. My clients are discerning and extremely private. It’s an intensely personal relationship and I like it that way. You’ve lived all over the world. Why call South Tampa home? South Tampa has a unique, up-and-coming flavor to it. It’s home to a lot of designers and artists, but is still developing its own style. I like that. I also love being surrounded by water, it’s soothing. But mostly, it’s a great place to raise a family. My son loves it here.
