Even if you never consider setting up a bar during the year, chances are that your holiday entertaining will call for a space dedicated for drinks. Where and how you use this bar really depends on your own personal style. If you have the room and the inclination, you can have a bar ready to entertain at all times. In other words, think of this as a “dedicated bar.” Others cannot devote the space to a bar or do not want this to be the focal point of a room. For those is this category, there are two schools of thought about how to make room for a bar. One is that the bar should be seen only when it is in use. I call that the “hideaway bar”—the bar looks like another piece of furniture when closed. When open, it is ready for entertaining. The second idea is to have a temporary area, which becomes a short-term bar. The “on-display bar,” as I call this category, can be placed wherever you want and can be mobile if it has wheels. 6 cups carrots ¼ cup brown sugar ½ gallon chicken stock ¼ gallon water

Preheat oven to 375 degrees

Yield: 1 gallon

1 quart cream salt, pepper, curry powder to taste

Cut 2 pounds of butternut squash in half. Roast face down on a sheet pan with a little water and olive oil for 40 minutes at 375 degrees. Scoop out meat and reserve ½ for blending. Peel and cut into large cubes 1 pound of butternut squash and the Idaho potatoes, sweat onions and carrots then add to potatoes and all but ½ the roasted squash. Add brown sugar and cook for 3 minutes. Add stock, water, cream and salt, white pepper and curry powder to taste. Simmer for 1 hour, buerre mix then blend in drink mixer, strain through small china cap. Serve in a shallow large white bowl or soup cup.

Porcini Rubbed Filet

6 6-oz Filet Mignon 1-½ tbsps Kosher salt 1-½ tbsps black pepper, coarse 1-½ tsps dried Porcini mushroom dust 18 pieces medium-sized

asparagus 3 ozs Gorgonzola Cream sauce (recipe follows) 1-½ tsps parsley, chopped Gorgonzola Cream Sauce 1 cup heavy cream

Yield: 6 filets and 1 cup Gorgonzola Sauce Combine the Kosher salt and black pepper then season both sides of each filet with 1 teaspoon of the seasoning. Place on a very hot grill (600-plus degrees) and cook to desired temperature. Grind the dry porcini mushrooms in a clean spice grinder to a powder and reserve. Cut the top part of each asparagus spear to 4-inches long. Season with 1 teaspoon salt and pepper seasoning. Grill the asparagus until tender turning often for 4-5 minutes. Place 3 asparagus in a triangle overlapping the tips and ends in the middle of each warm plate. Set 1 filet resting on top of the asparagus. Ladle ½ ounce of Gorgonzola sauce over 1 side of each filet. Sprinkle ¼ teaspoon porcini dust over the top of each filet. Garnish the plate with chopped parsley. Gorgonzola Cream Sauce: Bring heavy cream, Kosher salt, and white pepper to a low boil in a sauce pot. Combine the cornstarch and water, then whip into the cream, cooking until thick (1-½ to 2 minutes). Pull the pan off the heat, and whip in the Gorgonzola Cheese, mixing until the cheese is melted. Salted Caramel Sauce 2 cups sugar, granulated ½ pound butter 2 cups heavy cream 1 tbsp sea salt, coarse

Carefully remove the seed and core from all pears. Leave intact and do not remove stem. In a sauce pot, add juices and all spices along with cored pears. Bring to gentle boil, cover pot and simmer for 25-35 minutes until pears are soft (cooking time may vary with variety of pear used). Remove from heat and gently place pears, spices and cooking liquid in sealable container. Cool quickly. Salted Caramel Sauce: Melt sugar and butter together over medium heat until sugar is fully caramelized but not quite beginning to smoke. Remove from flame and add half of the cream. The caramel will quickly react by immediately boiling up. *Be very careful, as liquid caramel is very dangerous and capable of serious burn injuries! Using a long whisk, stir until boiling slows. Add remaining cream. If chunky, keep stirring until chunks dissolve. Cool sauce and serve over pears.

1.5 pounds ground pork 1 baking potato, large 1 onion, large, minced ½ tsp salt ½ tsp pepper

½ cup water 1 egg 1 9-inch double crust deep dish pie dough fresh

Preheat oven to 350 degrees Bake potato in the oven for 45 minutes or until fully cooked; peel and mash. Place potato, pork, onions, spices and water into deep saute pan and simmer until it becomes very thick—for about an hour. Meanwhile line a deep-dish pie plate or mold with your pastry dough, as you would a traditional pie shell. Spoon the cooked filling into the pastry and spread evenly. Top with an upper crust, and crimp the edges. Brush with whipped egg and bake in oven for 50 minutes at 350 degrees. If edges brown too fast, cover with foil. Serve warm.

Preheat oven to 325 degrees Filling: Cream together 1 egg and ½ cup brown sugar. Add next 6 filling ingredients. Stir to incorporate. Pour into pie crust shell. 1 large Portobello mushroom, chopped ¼ cup walnuts toasted, chopped 1 oz crème fraiche 2 ozs sundried tomatoes, Salt, pepper to taste Chicken & Chicken Brine 4 chicken breasts

15 ozs water 3 ozs salt Fresh herbs 4 cloves garlic 1 small onion, sliced 1 lemon, halved 2 bay leaves 2 tsps whole black peppercorns

Risotto: Heat olive oil and sweat garlic and shallots. Add rice and stock. Cook until rice is al dente. Finish with the cheeses. In a separate pan sauté asparagus, mushrooms, tomatoes and shrimp. Once shrimp is cooked add to the cooked rice and season with salt and pepper. Chicken & Chicken Brine: Add all ingredients and bring to a boil. Refrigerate until cold. Once chilled add chicken breast and let stand for 3 to 4 hours in refrigerator. Remove chicken and pat dry with paper towels. Season chicken with a small amount of salt and pepper and sauté in a hot skillet or pan. Once you have a nice golden brown color place in pre-heated 400-degree oven skin side up until chicken is cooked.

2 tablespoons brandy 1 tbsp dark rum, or more 2 4-serving pkgs vanilla Instant Pudding & Pie filling

1½ cup liquid heavy cream or 2½ cups thawed nondairy whipped topping

Yield: 8 servings Combine eggnog, whole milk, nutmeg, vanilla, brandy and rum. Stir well. Add the 2 packages of instant pudding and pie filling, whisking 2 minutes until well mixed and thickened. Gently fold into eggnog mix 1½ cups of either the fresh whipped cream or non-dairy topping until totally combined. Pour into 8 dessert cups and refrigerate at least two hours before serving. When ready to serve, garnish with remaining 1 cup of whipped cream or non-dairy topping. Top with your choice of a champagne flavored gumdrop, a mini peppermint stick or crushed peppermint stick pieces. Option: For a plated dessert, mix 1½ cups of gingersnap cookie crumbs with 6 tablespoons melted butter until well blended. Press into bottom of dessert dish. Pour in eggnog mousse and decorate as above.

Angus Filet 1 Angus tenderlion, cut into 2-inch pieces Salt and pepper to taste

Steak Sauce 3 cups extra virgin olive oil 1 cup garlic, chopped ½ cup black olives, chopped

1 cup soy sauce 2 tsps black pepper 4 tsps dried oregano

Steak Sauce: Simmer garlic in olive oil until golden brown. Add oregano, black pepper and olives and continue to simmer for 2 minutes. Add soy and remove from heat. Reserve half. Preheat broiler to high and place oven rack in middle position. Place cast-iron pan in oven. Cut angus tenderlion into 2inch pieces. Season filets with salt and pepper. Place steaks in skillet and baste heavily with sauce. Broil for 7 to 10 minutes medium-rare. Make sure to baste steaks with sauce frequently. Remove the steaks from oven and let rest for 5 minutes. Preheat oven to 350 degrees

1 cup sugar Ed Barry

1 tsp vanilla extract or beans 1–2 quarts heavy cream, 40% 8 sheets Puff pastry

Yield: 8 slices

Lightly flour baking sheets. Roll the pastry sheets out until they are very thin. With a fork or a dough knocker lightly poke holes throughout the entire puff pastry sheet. This keeps the dough from rising or getting too thick. Slide puff pastry onto baking pan. Put in oven at 350 degrees for about 20 minutes or until light brown. Once done, remove from oven and let cool. Once cool take 8-inch round template and cut out 4 to 8 round circles of puff pastry. Save the puff pastry not used and crumple up by hand to use later. Filling: With an electric mixer, take 1 quart of heavy cream and add to mixing bowl. Add one cup of granulated sugar, one pound of powdered sugar, one teaspoon of real vanilla extract or vanilla beans. I like to add ½ cup of Kalhua liquor. Mix on high until the cream makes nice heavy peaks. Do not mix too much or you will break the cream. Assembly: Take your first puff pastry circle and layer the cream on it to reach about ¼-inch thick. Spread crumbled Heath bar on top of filling. Now take another puff pastry circle a set it on top of the one you just layered. Do the same process. Once you have a 4 high stack, take the remainder of your filling and ice the sides of your Napoleon. Take the crumbles of leftover puff pastry and push them on to the sides of your Napoleon. To really snazz it up, you could put filling on the top of your Napoleon and shave chocolate over the top. Let the Napoleon rest in the fridge for an hour. Enjoy!

Executive Chef Andrew Basch and Chef Brett Gardiner Pastry Cream 1 quart whole milk 8 ozs sugar 1 vanilla bean split 4 egg yolks 2 whole eggs 3 ozs corn starch

2 ozs butter 1 tsp vanilla extract Pumpkin 1 cooking pumpkin 1 tbsp ground cinnamon 1 ½ tsp ground nutmeg 1 tsp ground allspice

Preheat oven to 350 degrees

Souffle 5 egg whites ½ cup pastry cream ¼ cup roasted pumpkin 2 tbsps softened butter ½ cup sugar

Yield: 2 to 4 ramekins

Pastry Cream: Mix milk with 4 ounces of sugar and the vanilla bean. Bring to a simmer. Be careful not to burn. In a metal mixing bowl, combine egg yolks, whole eggs, corn starch and the remaining 4 ounces of sugar. Whisk until all ingredients are combined. Slowly add heated milk mixture into egg mixture while whisking constantly so as to not scramble the eggs. Return mix back into the pot used to heat the milk mixture. Cook over medium heat while whisking for approximately 4 minutes or until pastry cream thickens. Finish by adding butter and vanilla extract. Place in desired container and chill. Note: Mixture will last up to 5 days refrigerated. Pumpkin: Carefully cut pumpkin in halves and place flesh side down on a sheet pan or cookie sheet. Roast pumpkin for 45 minutes or until tender. Let cool, scrape flesh out and portion 1 cup of the cooked pumpkin. In a mixing bowl combine the cup of cooked pumpkin and spices. Souffle: Lightly grease sides of a ramekin with softened butter then coat with sugar. Whisk pastry cream and roasted pumpkin in metal bowl until combined. Use electric mixer with whisk attachment to beat the egg whites until they form soft peaks.Gently fold the egg whites into the pastry cream with a rubber spatula until all is incorporated. Do not over mix. Pour soufflé mixture into prepared ramekins and bake in center of oven for 15 minutes or until soufflé has stopped rising and starts to turn golden brown. Carefully remove from oven and serve immediately. Notes: A sauce for the soufflé can be made by heating 1 cup of heavy cream and adding the pumpkin and pastry cream to the desired consistency. Note: If you cannot find pumpkin or wish to skip the step of roasting a whole pumpkin you can substitute canned pumpkin puree. Just reduce the amount added to the pastry cream to 2 tablespoons of pumpkin puree.

Filling 1 lb chestnuts peeled, roasted 1 tbsp sour cream ½ tsp ground allspice 3 ozs heavy cream

Sauce ¼ lb butter 3 ozs maple syrup 1 tsp ground black pepper ½ cup butternut squash, diced

Yield: 4 servings Pasta Dough: Make a well in the center of flour. Mix all wet ingredients and pour into center of the well. Begin slowly pulling flour into center to form dough. Knead for 3 minutes, allow to rest for 1 hour before using. Filling: Place all ingredients except cream in a food processor, pulse until a coarse paste. Pour cream into processor and continue to pulse until texture of chunky peanut butter. Sauce: Place butter and squash in a pan over medium heat. Cook squash and butter until squash is tender and butter begins to brown. Add maple and black pepper. Continue to cook for 30 seconds to bloom spice. Assembly: After boiling ravioli, add to pan with brown butter and stir to coat pasta. Place ravioli in the center of plate and pour remaining sauce over them. Garnish with a drizzle of pomegranate molasses and sage.

Yield: 10 cups In a large sauce pot lightly brown onions and celery in butter. Add remaining ingredients except for cream and bring to a boil. Cut back the heat, cover and simmer for 20 minutes. Add cream and puree using an emersion blender. This soup is great garnished with sour cream or cream.

¼ cup pure maple syrup 1-½ cup olive oil ¼ pound dry goats milk cheese Kosher salt and freshly ground black pepper to taste

Preheat oven to 475 degrees Yield: 2 servings Cut the squash in half lengthwise and remove seeds. Place the squash cut side down on a cutting board. Remove peel. Slice squash lengthwise into ½-inch thick wedges. Toss squash with ¼-cup olive oil, 2 teaspoons salt, some freshly ground black pepper and thyme. Place squash flat on a baking sheet and roast in oven about 20 minutes, until tender when pierced. Cut the bacon into 3/8-inch thick slices and stack them on top of each other in two piles, then cut crosswise into 3/8-inch “lardons.” Should be nice, even-sided rectangular shapes. In a small bowl whisk together orange juice, vinegar, maple syrup and olive oil. Add salt and pepper to taste. Heat a large sauté pan over high heat. Add bacon. Cook, stirring occasionally, about 5 minutes, until the bacon just begins to brown, but is still tender and chewy. Discard all but 2 tablespoons of fat from pan. Lower heat to medium, add shallots and toss to combine. Remove from heat and swirl in vinaigrette to warm. Toss roasted squash and arugula with warm dressing. Whoopie pies: Cream butter with brown sugar. Add egg and buttermilk. Mix briefly. Add dry ingredients. Mix briefly. Scoop or pipe the whoopie pie batter into round shapes. Sprinkle with crushed peppermint. Bake at 300 degrees until top is dry to the touch. Peppermint meringue filling: Cook sugar and water together to 250 degrees. Pour over egg whites while they are whipping. Whip until fluffy. Stir in crushed peppermints to taste. Fill the whoopie pies with peppermint meringue. White chocolate peppermint mousse: Whip the cup of heavy cream lightly, and set aside. Melt white chocolate. Heat ¼ cup cream, and combine with white chocolate. Whisk egg yolks and sugar in a bowl, over hot water until sugar is dissolved and egg mixture is fluffy. Whip egg mixture with mixer until cool and fluffy. Fold egg mixture into white chocolate-cream mixture. Last, fold in whipped cream. Add crushed peppermints to taste. Chill.

Pulse fennel, onion and garlic in food processor until coarsely chopped. Heat oil in heavy pot. Stir in vegetables, bay leaves, chili flakes, and season with salt and pepper. Cook until vegetables become translucent (about 4 minutes). Add tomatoes, water, wine, clam juice. Bring to a boil. Cover and cook for about 20 minutes. Saute group cheeks. from the kitchen of Chef Gino Tiozzo 4 1st cut veal shanks, 2-1/2 to 3 inches thick 1 Spanish onion, large 2 carrots

3 stalks celery (equal parts of the 3 vegetables)

1 #10 can whole peeled San Marsano tomatoes

3 rosemary sprigs 3 sage sprigs 1 cup white wine Salt and white pepper to taste

Preheat oven to 350 degrees Place veal shanks in pan (so they fit loosely). Salt and white pepper to taste. Place in preheated oven at 350 for 20-30 minutes. Puree vegetable and herb mixture. Heat separate sauce pan over medium heat. Cover bottom with olive oil and add vegetable herb mix. Sauté until lightly browned. Add white wine. Allow to reduce 5 minutes. Add puréed tomatoes. Salt and white pepper to taste. Simmer 20 minutes while shanks are in oven. Shanks and sauce should be ready about same time. Remove shanks from oven and add sauce. Sauce should almost cover the tops of the veal shanks. Place back in oven with tight fitting lid. Check after 1-1/2 hours. May take up to 2-2 1/2 hours to fully cook. scraped ½ pound whole salted butter Macadamia Mint Crust ¼ cup mint, finely chopped 1-½ cup Macadamia nuts 1-½ cup Panko breadcrumbs Hawaiian Pink Sea Salt to taste

Lamb 2 racks New Zealand Lamb, 8 bones each 2 cups Macadamia Crust, (recipe follows) 6 ozs Kona Zinfandel Sauce, (recipe follows) 2 ozs clarified butter or EVOO

Preheat oven to 325 degrees

Yield: 4 servings

1 vanilla bean, split, seeds

Lamb: Heat butter or oil in sauté pan over medium heat. Season lamb with salt. Cook in pan until there is a nice sear on the meat. Remove and cool. Macadamia Mint Crust: In food processor, chop nuts to same consistency as breadcrumbs. Remove from processor and blend all ingredients together. Rub over lamb rack. Kona Zinfandel Sauce: Reduce wine, coffee beans, demi glace, and vanilla bean and seeds for 15 minutes over medium heat. Strain out coffee beans, return liquid to pot and reduce until it is almost syrupy consistency. Remove from heat and whisk butter in slowly. When finished, strain through chinois and keep warm. Coat lamb racks with Macadamia crust. Cook in 325-degree oven until internal temperature reaches 120 degrees. Remove, transfer to carving board, and let rest for 6-8 minutes. Cut each rack between the bones. Fan out 4 chops on each plate. Drizzle Kona sauce over and around the lamb. Garnish with a sprig of mint, Macadamia nuts and coffee beans. dR

J

ean-Charles Boisset grew up in vineyards as the son of the founders of the largest winemaking business in Burgundy. Boisset Family Estates is a family-owned producer and importer of fine wines with its roots in Burgundy, France. Boisset, La Famille des Grands Vins was founded there in 1961. And it was during Boisset’s upbringing that he developed a love for the family industry. “My parents fell in love and started the wine business together in Burgundy,” Boisset explains through his beautiful French accent. “My sister and I were really fortunate to live right in the vineyards and be a part of it right from the beginning.” Boisset, who now serves as President of Boisset Family Estates, employed some adventurous marketing tactics to shake up the wine world. His vision led to pioneering efforts in sustainability, and he

By Melinda Tam Orlando has implemented sustainable, organic and biodynamic farming practices at the family’s vineyards, while introducing alternative packaging innovations that reduce a wine’s environmental impact and carbon footprint. “The real challenge was people’s perceptions,” Boisset says. “The wine industry is quite traditional, but people are very positive and they are interested to try and taste new things.” Another industry venture for the company is Napa Valley’s first dog tasting room and dog-themed wines. Frenchie Winery, named for and inspired by the beloved French bulldog of Boisset, debuted last May to great fanfare. For every bottle of Frenchie Wine sold, one dollar is donated to the ASPCA. “They always say that the best friends of humans are dogs, so why not make a winery that people can bring their dogs to and they are welcomed,” Boisset explains. But it is the JCB wines that Boisset really wants to talk about. This collection of 12 wines boast Boisset’s initials and

each is labeled with a number, with his favorite —at least for the moment—being No. 3. “It is an homage to my twin girls and my beloved wife,” Boisset gushes. “This wine is a marriage of two wine worlds that came together to create something grander.” And with more than 20 wine properties and even a vodka made from wine under the estate’s umbrella, you might wonder what this legendary family could still have up their sleeve. “My mind goes a million miles a minute, and I have so many ideas,” Boisset boasts while leaving the details a mystery. “There are a ton of exciting things to come.” Fine wines from the Boisset Family Estates at Southern Wine & Spirits. From the Red Carpet entrance to the projected historical video images of Salvador Dali on the outside entrance wall as guests departed and the Moon Pies that were handed out by the valet company. Merry Mint Spice 1.5 ounces Gentleman Jack 1 ounce Domaine De Canton 2 ounces POM juice 5 ounces Simple Syrup 8 fresh mint leaves In a Boston shaker, muddle 8 fresh mint leaves with the simple syrup to release the mint aromas. Add ice and add Gentlemen Jack, Canton, and POM juice. Shake vigorously. Strain into a bucket and pour into glass over ice. Garnish with mint sprig.

175 Years of Tiffany The iconic jeweler’s future looks brighter than ever

There’s only one kind of “blue Christmas” guaranteed to make just about any woman smile: Tiffany blue. After 175 years of sitting pretty at the top of the fine-jewelry food chain, the Tiffany & Co. brand hasn’t lost its luster. The famed jewelry and silverware designer is celebrating its 175th anniversary by paying tribute to its storied history and nodding to an even brighter future. Founded by Charles Lewis Tiffany and John B. Young, Tiffany & Co. opened its doors as a stationery and fancy goods store in 1837 in New York. In 1878, Tiffany purchased one of the world's largest fancy yellow diamonds from the Kimberley diamond mines in South Africa. That piece became the company icon: the 128.54-carat Tiffany diamond. While the diamond’s permanent home is the Main Floor of Tiffany’s Fifth Avenue store, Tiffany & Co. decided to make the stunner part of its milestone celebration. “For the fourth time in its history, we set (the Tiffany diamond) in a necklace,” says Henry Gonzalez, group director for Tiffany & Co. The diamond also traveled to Tokyo, Beijing and Dubai for anniversary events. As part of this milestone year, Tiffany is also touting a new precious metal— a mixture of gold, silver and copper—trademarked as Rubedo. “It’s something we’ve done before, but we haven’t done it in a long time,” says Gonzalez. The new collection is available at Tiffany & Co.’s Tampa store, located inside International Plaza. The Tampa store, which opened in September 2001, is bracing itself for the holiday season. Gonzalez is betting Tiffany will be on many a wish list this commemorative year. “I have gentlemen coming in and asking if they can just buy the blue box,” he says. “Because of the legacy of the highest quality and rarity, that blue box just enhances the message.” Gems of Wisdom 5 Things You May Not Know about Tiffany
