HANCOCK BANK, ROOTING FOR THE HOME TEAM Peanuts, Cracker Jacks and a Side of Luxury at the Rebranded Hancock Bank Club By Erika Vidal Holmes f you’ve taken yourself out to the ball game this year, you may have noticed a bit of a changeup. Earlier this year, the Tampa Bay Rays made a slight tweak to its 2012 sponsorship lineup: The Hancock Bank Club—formerly the Whitney Bank Club—was unveiled to fans at Tropicana Field on April 6, opening day. The rebranding of this upscale lounge overlooking the first base line came in the wake of the $1.6 billion purchase of Whitney Holding Co. by Hancock Holding Company. Hancock Bank may be new to the Bay area, but much like baseball, its name has a long history rooted in American tradition. Founded in 1899 in Bay St. Louis, Mississippi, the original Hancock County Bank opened amid a national recession and with $10,000 in capital. Despite lessthan-ideal conditions, its founders stepped up to the plate, determined to help others achieve the American dream. Today, after surviving the Depression, 22 recessions and the turn of the century, Hancock Holding Company operates nearly 300 fullservice branches and nearly 400 ATM locations across Florida, Mississippi, Alabama, Louisiana and Texas. Throughout its existence, Hancock has maintained strong community ties, and its commitment to Tampa Bay is no different. That’s why, when the Hancock-Whitney merger began to take shape in 2011, there was never any doubt about continuing the institution’s longstanding partnership with the Rays’ organization (Whitney had been a sponsor since 2006).

I
’m wandering around the cobblestone streets of Rome enjoying my second strawberry gelato of the day. After a four-hour lunch at the outdoor Café Rosati overlooking the Piazza del Popolo, my girlfriend Deb is pointing out locations near the Spanish Steps where the movie Eat, Pray, Love was filmed. Once again I rejoice at the decision to have finally fulfilled my vacation “bucket list.” I found a seven-day cruise starting in Nice and ending in Rome offering a first-class taste of the most desirable Mediterranean ports. The small Sea Dream II yacht is best known for their “Ritz-Carlton” style of pampering, and a courteous staff easily outnumbered the 50 couples from all over the world. Ah, la dolce vita! THURSDAY: TAMPA TO NICE The Nice Cote d’Azur airport is located between the sea and the mountains. After a short taxi drive, I check in to the Art Deco Palais de la Mediterranean overlooking the Promenade des Anglais. Trendy clothing boutiques with labels from Louis Vuitton to Hermes and Chanel call my name.
Built in the 1920s, the hotel offers a balcony overlooking the sea where bathing beauties stretch out along rocky beaches, starting at 8:00 a.m. Hundreds of cafes in town are filled to the brim, well after midnight. We dined at the outdoor al fresco café, the Beef House, located at 4 Cours Saleya. A fantastic regional Vin Blanc wine complemented our meal. FRIDAY: NICE TO MONACO Just an hour from Nice, the Principality of Monaco is an upscale oasis with four palaces, deluxe hotels, and five casinos. We walk the streets of the famous Grand Prix Formula One Motor Race and check out the Casino de Monte-Carlo and ogle the luxury cars at the Hermitage. We are happy to relax inside the formal Le Bar Americain at the award-winning Hotel de Paris and sip mojitos. This fashionable crowd knows to make reservations well in advance for the Alain Ducasse restaurant on the top floor with a retractable roof and a three Michelin Star dining experience. SATURDAY/SUNDAY: SEA DREAM II VOYAGE FROM NICE TO PORTOFINO Portofino is a short 96-nautical miles away from Nice. After a quick tender ride, we arrive in the renowned village to find massive stage equipment prepping for an evening outdoor concert. Chris Botti was rehearsing and rumors of Sting and Celine Dion arriving soon are swirling around town. We indulge in a lavish luncheon at the glamorous Hotel Splendido and sit overlooking the Med with our table next to the famous tenor Andrea Bocelli dining with his family. We’re all enjoying the bruschetta with garlic, olive oil and tomatoes, pasta with pesto sauce, baked filets of sea bass with pinenuts and black olives.
MONDAY: PORTOVENERE (CINQUE TERRE ADVENTURE) A private walking and boat tour arranged by the cruiseline with an English speaking guide was the perfect way to explore five isolated villages hidden along eleven miles of sheer rocky coastline. Only cliffs separate these hidden jewels, known as the “Cinque Terre.” Walking miles, we’re trying to decide which of their dozens of famous and delicious pesto sauces to bring home—it is impossible. TUESDAY: VIAREGGIO (FLORENCE) We’re so happy we decided to take the hour-and-half bus ride from the port of Viareggio to explore Florence. Even though it’s extremely crowded, the Plaza Signoria and Via del Calzaiuli were perfect streets for shopping. I bargain www.duPontREGISTRY.com/TampaBay 37
successfully for the sky-blue handbag at a leather factory called DAVID at the via Ricasoli, 55 in Florence…for only $15! For sure we would see this for over $50 back home. We enjoyed a three-hour lunch at Piazza della Repubblica with the Piazza di S. Croce providing our daily gelato fix. WEDNESDAY: ELBA What fun to wake up docked in Portoferraio with a chance to explore Elba on foot. This town is best known for Napoleon Bonaparte visiting in 1814 with his sister Paullina and amazing vistas, known for years as “the” place to escape the heat of summer. THURSDAY/FRIDAY: BONIFACIO, CORSICA Bonifacio is the number one celebrity rendezvous spot in season offering a kind of “watery” stage to show off mega million dollar yachts in the over crowded harbour. We explore oh-so-chic outdoor cafes, clothing boutiques, and gawk at hundreds of boats from all over the globe from high atop the 200 foot cliffs. We shop in the grand choix de chapeaux on 19 rue saint Dominiuqe trying on elegant hats and Les Terrasses d’Aragon on 8 Rue Doria checking out the famous knives made in Corscia. Our private tour includes exploring the famous grottos and caves. SATURDAY/SUNDAY: ROME It’s a short train ride from the port of Civitavecchia to the city of ancient Rome. Getting around the city of Rome was easy. Map in hand, we walked from the Coliseum and the Forum to the Spanish Steps by day and Trevi Fountain at night. Deb reminds me that exploring Rome is always highlighted by four hour delicious meals. A spectacular luncheon at the family owned Trattoria Otello alla Concordia was found inside a hidden café on Via della Croce. My last evening in Rome, I feel I’ve only just begun to explore and sad to think of leaving. I’m enjoying the city at sunset at the rooftop bar of the Grand Hotel de la Minerve. Pure bliss. With a perfect bottle of regional wine and listening to live jazz I say “bon voyage” to my taste of the Med and my personal “indulge, enjoy, explore” vacation. dR 38 www.duPontREGISTRY.com/TampaBay

One, for St. Leo University in Dade City, includes a waterfall, a coral reef tank and a predator tank with sharks, stingray and lionfish. Another, for downtown Tampa’s Tropical Smoothie Café, resembles a giant smoothie cup with a red plastic straw.
“Elevators are almost a necessity these days when we’re talking about carrying groceries, luggage or even just walking up the steps from the ground floor to the master suite in a three-story home,” says John Scranton of Precision Elevator Services of Florida. Comfort is well defined in the dictionary, but most of us have a hard time explaining what we mean by comfort.
E
veryone’s perception of what makes a chair comfortable is diverse and quite personal. If you are long-legged or height challenged, how you sit may be totally different. If you have back or neck problems, you will look for a chair that supports you where it hurts. A laid-back chair meant for lounging or TV watching is not the same as a more upright one you might use for reading. Issues with mobility might require a firmer bottom chair with secure arms. Is the chair easy to get up from or will you need help? The comfort issues as well as the choices are endless, and you have not even considered fabric or leather selection. Sophia Ivanov of Scan Design advises that you select a chair suited for your own personal preferences, not based on all family members. “That way you will get the chair that really works for you.” Mary Jo Polo of Design Interiors suggests a small chair that sits bigger than it looks. This makes great sense particularly if your living space is tight. She adds, “An armless chair may be a good “looker,” but a chair with arms is a better “sitter”.” John Matter of Matter Brothers Furniture suggests you consider a new updated version of the swivel glider chair—great for reading and just lounging. Michael Berg of Home Resource leads his customers to a classic design created in 1948 that is still comfortable by today’s standards. Stephanie Bullock of Z Gallerie reminds us that comfort needs style as well. She counsels that a swivel chair may serve both purposes. Enrique Crespo of Casa Nova likes moveable chairs whose mechanism is not visible. He also adds that the first and foremost requirement is that you sit in the chair to feel its comfort, but do not give up fashion for comfort. And we took his advice: we did a little bottom-testing locally to find the 6 most comfortable chairs for you.

Countertops are getting bolder and more colorful. “It’s truly about turning your kitchen into a work of art,” says Dan O’Donnell of Cutting Edge Granite. “You’re only limited by your imagination.” Quartz countertops are being engineered with more of the natural movement, color variety and veining of granite, while glass and semi-precious stone have emerged as the newest sensation. lot of thought and hard work is put into landscaping your home—from the design to the flowers planted and the trees selected to provide shade. But what happens when the sun goes down—is all that work hidden in the dark, literally? We talked to local landscaping and lighting experts to show how you can put your gardens in the spotlight from day into night. When it comes to outdoor lighting, there are myriad options. Garden Light (gardenlightled .com) designs and manufactures its own LED lighting for outdoors right here in Tampa, of which owner Reto Mueller is very proud. “Accent lighting and low-voltage LED lighting is the up-and-coming trend, and the colored LEDs are making a big comeback, too” says Reto. “LED lights are much more energy-efficient and cleaner, and put off a brilliant light.” A popular feature for those living on the water are LED dock lights, which are also manufactured by Garden Light. “Dock design and lighting is definitely a new trend,” says Reto. “The lights not only beautify the docks, but attract fish.” Ron Litts and Mike Palermo and their team at Outside Interests (oiofla.com) take lighting to a different level. “We enjoy the wow factor of lighting certain plants, and really highlighting the shadows they throw at night that you can’t get during the day,” says Litts. “You end up with two different landscapes, really—daytime and nighttime, which can be more intimate and dramatic.” Decorating Elves takes that night lighting a step further and designs schemes to dim lighting through the night. “We might dim the lights from 60—40% at 11 p.m., then down to 20% at

As far as landscaping designs, Tuan Ho with Stone-Mart (stone mart.com) suggests using light colored pavers that reflect light at night. A popular option is a French design using Travertine or natural stones, available in a variety of colors. Best to reflect light, of course, are the lighter colors. Kim Levell with Levell Design (exteriordecorating.com) takes into account plants used that will easily make the transition from daytime into night, and still shine bright. She suggests using white varieties of flowering plants that will show up better under the moonlight, including white ginger, peace lilies and gardenias, and even crepe myrtle. John Harris
Executive Chef at the Sheraton Sand Key Resort By Melinda Tam Orlando
T
he month of September marks another milestone for John Harris, executive chef at the Sheraton Sand Key Resort. He’ll celebrate the start of his 23rd year at his first and only Florida position. A pillar in the community, Harris is one of Tampa Bay’s most well-known chefs, delivering stellar cuisine time and time again at all three restaurants in Sheraton Sand Key Resort. His success is apparent with the critically acclaimed Rusty’s Bistro, the resort’s fine-dining restaurant. And to think it all started with a few live lobsters. “The first thing I remember cooking was a dinner when I was in college,” Harris says. “I lived off campus my junior year, and I decided to have some friends over. I lived in Maine, and I got some live lobsters from a local fish monger. So, we had cooked lobsters with rice pilaf.” Born and raised in Pennsylvania, Harris made his way to the Sunshine State after a six-year detour through Utah's picturesque ski resorts. While enjoying the Rocky Mountains, Harris refined his culinary skills, training under the expertise of Bernhard Gotz, a classically trained, wellknown German chef. He also had the distinct privilege to work with some of the great chefs of the world, including Charlie Trotter, Norman Van Aken and Mark Franz. But now those in the kitchen are looking to Harris for inspiration with his 23 years of culinary distinction. “I always want to try to provide the best meal that I possibly can to the customers, and to do that I try to buy the best ingredients—sometimes local if I can, sometimes sustainable if I can,” says 90 www.duPontREGISTRY.com/TampaBay
Harris of his food philosophy. “I want to use the freshest, best ingredients that I can and prepare them with foods and spices that help enhance the natural flavors of what I’m cooking.” And you could think working the same kitchen for more than 20 years would lose its luster—but Harris would say differently. “There are a few conferences that I go to every year that really light my fire,” Harris explains. These food-focused conferences in Denver and Vegas, along with lots of magazine and cookbook reading, keeps Harris on the cusp of culinary trends. In addition, Harris has two small herb gardens on the property where he grows thyme and cinnamon basil among others for inventive dishes. The restaurant’s loyal patrons certainly notice all the extra effort. The blue crab cake and parmesan-crusted humboldt calamari are the most often-ordered appetizers with the six-ounce filet ranked as the most popular entrée. Close seconds go to the grouper piccata as well as the sea bass with lentils and fennel. But Harris’ favorite meal at Rusty’s Bistro would be the shrimp risotto for the appetizer and the roast New Zealand lamb rack as the entrée.

Chef Harris' accomplishments have not come without recognition. In 2003 he was inducted into the prestigious international culinary society—The Chaine des Rotisseurs—and was also named 2003's Chef of the Year by the Suncoast Cooks and Chefs Association. But Harris’ food is not the only thing that has the Tampa Bay area taking notice. His extensive charity work for UPARC, the Abilities Foundation, the Ryan Wells Foundation and others also has people talking. In 2008, he was the featured chef of the Great Chefs of Tampa Bay event that raised more than $100,000 for the Family Resources Center. However, the event closest to Harris is his involvement in creating “An Evening with the Chefs;” an event which gives high-school culinary students the opportunity to cook and work alongside notable area chefs while raising funds for culinary scholarships for the same students. “I think a lot of chefs want to give back to the community because the community gives to us,” Harris explains. “They give us their business. They could give their business to anyone but they chose us. So I want to give back to say thank you for giving us your business in the first place.” But there is one student that gets the greatest gift of all, and that would be Harris’ daughter, a student in the culinary program at Osceola High School. “We cook together at home,” Harris gushes. “She likes to cook fish, so we cook a lot of seafood together. We try different sauces and seasonings. We usually do pan-seared but we also like fish on the grill.”

THE KEY TO CULINARY SUCCESS
4 six-ounce portions of sea bass 3 ounces clarified butter 6 ounces orange fennel sauce (recipe below) 8 ounces lentils, cooked (recipe below) 4 ounces fennel bulb, thinly sliced (shaved) 16 pieces orange sections 1 tablespoon chives, finely chopped Kosher salt and pepper to taste Season both sides of sea bass with salt and pepper. In sauté pan over medium heat, sear sea bass in 2 ounces of clarified butter until light golden brown. Flip and finish cooking until just cooked through. Keep warm and set aside. In another pan, cook fennel in butter until it starts to soften. To serve, put 2 ounces of cooked lentils in center of plate or shallow bowl, put fennel next to lentils, and place
fish on lentils and fennel. Divide sauce between four plates, and drizzle around lentils and fennel. Place four orange sections on sea bass, and garnish with chopped chives. Adjust seasoning to taste with salt and pepper.
Lentils ¼ cup carrots, celery and onion, finely diced (equal amounts) 1 tablespoon olive oil 1 cup chicken stock ½ cup French lentils Kosher salt and pepper to taste Sauté vegetables in olive oil until they just start to caramelize. Then, add stock, bring to a boil, add lentils and cook until tender. Adjust seasoning to taste with salt and pepper.
Orange Fennel Sauce 1 lemongrass (bulb and stalk) 2 garlic cloves
1 ounce fresh ginger 1 bay leaf 1 teaspoon clarified butter 16 ounces white wine Pinch of saffron ½ gallon vegetable stock 4 ounces fresh orange juice 1 fennel bulb, sliced 4 ounces equal parts water and cornstarch Crush lemongrass, clove and ginger. Then, add bay leaves and sauté in butter over medium heat for 2–3 minutes. Don’t brown. Deglaze with wine and add saffron. Reduce until almost dry; then add vegetable stock, orange juice and sliced fennel bulb. Simmer for about 45 minutes and strain. Adjust seasoning to taste with salt and pepper. Add a little of the cornstarch slurry until just thickened. Serves four

building, which was originally used as the cantina. Built in the 1912, the architecture is a beautiful combination of French Renaissance Revival, with heavy Spanish and Moorish influences. But even with all the charm, why would Fernandez be interested in another restaurant venture? It’s quite simple. “Being at the front of the restaurants at Bernini and Green Iguana for 17 years, visitors in Ybor were always asking if there was a steakhouse nearby. I said, ‘Why aren’t we opening a steakhouse,’ and here we are,” Fernandez explains. The experienced chefs at Carne developed the menu, which offers a selection of
steaks, chops, seafood. The bone-in ribeye, trout almandine and the prime rib are certainly menu standouts, but locals love the restaurant’s signature dishes like the Palios Brothers Fried Chicken. A South Tampa favorite since the 1940s, this dish can now be found at Carne. “We also have several signature entrees that I’m proud of like the fried chicken and waffles,” Fernandez gushes. “Palios fed my grandparents, parents and me before closing a few years ago. They were kind enough to share their recipe, their equipment, everything, and I’m so happy we can have it on our menu now.” To accompany those delicious entrees,

TROUT ALMONDINE 4 8-ounce trout filet, fresh skin on, bone out 2 ounces canola oil All-purpose flour, for dusting as needed Kosher salt to taste Ground black pepper to taste Sauce 1 pound unsalted butter 2 ounces Madeira wine 2 ounces lemon juice 2 tablespoon honey ½ cup almonds, blanched, sliced, toastedSauce instructions Preheat oven to 220-degrees. Spread almonds on a cookie sheet so they are completely flat and not overlapping. Place in preheated oven and toast until golden brown. Remove almonds and set aside to cool. In a heavy, small saucepan, cook 1 pound of butter until it turns dark amber
in color and has a slightly nutty aroma. Set to the side and cool completely. In a small saucepan, combine Madeira, lemon juice and honey. Reduce mixture over medium-high heat by quarter of the original volume. Set aside and cool completely. Once brown butter is completely cooled, strain through a fine mesh strainer into the saucepan with the wine mixture. Bring sauce to a simmer over medium heat and add almonds. Trout instructions In large skillet, heat 2 ounces of canola oil over medium heat until hot. Season trout with salt and pepper; then dredge in flour. Shake off excess flour and place skin side up in skillet. Once flesh is golden brown, flip the trout over and repeat for the skin side (about two minutes per side). Once all of the trout has been seared, completely drain all of the excess oil out of the skillet and return the fish to the pan. Ladle 4 ounces of sauce into the skillet and cook briefly. CIRQUE DU SOLEIL PRESENTS KOOZA

even years have elapsed since the last tent village magically appeared, majestically staking its ground in downtown St. Petersburg and signaling the arrival of another Cirque du Soleil production. It was Quidam that began the tradition of tents setting up in the parking lot of Tropicana Field to create a climate-controlled, 2,500-seat performance venue for a Cirque du Soleil troupe along with training facilities, a kitchen capable of feeding cast and crew members and areas for wardrobe maintenance and make-up applications. Alegria arrived two years later in 2004 and Varekai followed in 2005. Now another title is about to be added to that growing list when KOOZA opens for a limited engagement November 8. place, it heralds the arrival of a show that has never before been performed locally. The name KOOZA is inspired by the Sanskrit word “koza” that means box, chest or treasure. More than five years ago KOOZA made its world debut in Montreal before embarking on a globe-trotting tour that has delighted and dazzled millions in 33 cities to date, stretching from Tokyo and now to Tampa Bay. When the multi-week engagement in St. Petersburg ends, KOOZA crosses the Atlantic, landing next in London where it will be performed in the Royal Albert Hall. In KOOZA, a character known only as “The Innocent” embarks on a journey defined by themes dealing with identity, recognition and power. He must travel through an electrifying and exotic visual world that contrasts moments of slapstick humor with feats of fantastic strength. “This show definitely goes back to the
roots of the circus and the types of traditional acts that a circus would feature,” said Alana Morgan, production manager for KOOZA. Clowns are among the 53 performing artists known worldwide for their ability to execute exciting and energizing combinations of acrobatics, artistry and athleticism. KOOZA’s 10 acts include an unprecedented approach to the High Wire and the truly incredible “Wheel of Death” which has never before been presented under a Big Top. High-flying acts, fantastic costumes, a stunning stage and mesmerizing music are all part of the world contained within this “circus in a box.” Dominating the stage is a moveable tower called the Bataclan, which alters the configuration of the performance space as it travels, moving artists in and out of the spotlight, serving as the bandstand for the musicians and singers and creating dramatic focal points with its pair of curved staircases. “There is no automation but this is a big show with a lot of technical talent and moving parts,” added Morgan who has worked in the entertainment field for 20 years and with Cirque du Soleil since 2009. “The stage is definitely a character within the show. It is really well conceived. It moves and breathes along with the action and mood of the show.” As the production manager, Morgan oversees 30 people and is responsible for lighting, sound systems, rigging, plumbing, power and other vital functions that make the tent village self-contained and fully operational. That means ensuring all of the ropes and pulleys are working seamlessly, the recessed lighting around the perimeter of the stage casts a warm glow similar to the footlights of a 19thcentury theater and the kitchen is capable of flawlessly serving more than 300 meals per day. It’s making certain everything on, over and below the stage functions with precision timing for every performer and each performance. “I just make sure it’s all working, running and humming along,” she added. dR
The twin high wires are suspended 15 and 25 feet above the stage, and the four tightrope walkers add their own tension to the 6,600-pound load on each rope.

he anticipated and heavily-revised 981 generation of the Boxster and Boxster S arrived in showrooms this summer, replacing the 987 generation first introduced for the 2005 model year. With such a long model life span, Porsche has taken great care to modernize the package without screwing up the basic formula that has made the Boxster a success: a pure top-down roadster experience with peerless mid-engine handling. To that end, if the enhancements seen on the new 981 model are somewhat subtle in the engineering department, they are more noticeable in terms of design and comfort. At first glance, the Boxster’s 2.3inch longer wheelbase and inch-larger standard wheels on each model are immediately noticeable: they give the impression of a more mature sports car that draws heavily on the visual cues of the mid-engine Carrera GT supercar of 2004. A flatter windshield is situated nearly four inches further forward, front and rear overhangs shrink, overall width is up and height down. The design suggests a larger and therefore heavier car, but Porsche has gone to great lengths to keep weight lower than the outgoing model. 116 www.duPontREGISTRY.com/TampaBay
The two powertrain choices are 2.7- and 3.4-liter flat sixes; the latter was brought online in a mid-cycle refresh to the previous car in 2009. Both are equipped with direct fuel injection, thermal management and auto start/stop systems, contributing to the 991’s increased power and lower fuel consumption. As before, transmission choices for both Boxsters are a six-speed manual or a seven-speed PDK dual clutch unit. Unsurprisingly, owing to a lighter curb weight and more powerful engines, performance is up: 60mph arrives sooner and top speeds are higher. Handling is for the most part unchanged—a good thing in the Boxster’s case, although handling limits are appreciably higher. One thing is certain: the new Boxster will continue to prove extremely troublesome for competitors looking to replicate Porsche’s magic formula. dR
