FROM THE PUBLISHER SEPTEMBER/OCTOBER 2014
Dear Reader, Home is a special place that reflects our style, tastes, interests and pastimes. Whether you have one or several homes, here or tucked away on a mountain, on a beach or in a city, this issue brings you the latest trends in luxury home design and furnishings. We interviewed international designer, Tui Pranich, who shared his global influences and how he works with celebrity clients, and then our local experts gave us their insights for virtually every room in the house. For those of you whose favorite place is the kitchen, we talked with Wolfgang Puck about his newest creation and his focus on healthy eating and living. If herbs are on your menu, dR GARDEN gives you tips on how to grow a lush garden to compliment your culinary talents. For the fitness fanatics, dR HEALTH explores the latest technology in high-end home gyms, from cardio machines to the proper flooring for yoga or Pilates. Distinctive pieces often make a room, and fine rugs can be an exquisite focal point. dR HOME focuses on how to protect your investment in exotic and oriental rugs and local experts at Tinney Rug give us inside tips on caring for these pieces in the Florida environment. As the event season begins, we hosted our first annual Posh Picks awards ceremony here at duPont REGISTRYTM headquarters. Many of you voted for your favorites in each category, and we were delighted to see over 150,000 votes. Those Readers’ Choice Awards were given at our September 4th event. We thank each of you for your enthusiasm in selecting our area’s elite businesses and services, as well as our sponsors and partners who made this a night to remember. If you couldn’t join us, you can peruse the photos in dR PARTY or go to www.dupontregistrytampabay.com for the full gallery.

TRAVEL
By Susan B. Barnes
CABO—WHERE THE STARS SHINE Admittedly, the only thing I knew about Los Cabos and Cabo San Lucas, Mexico, before a recent visit, was the destination’s party reputation. What I found during a recent trip to the sunny western Mexican coast is a vibe that’s chill—everyone’s there for the same reasons: to relax, soak in the sun and have a good time.
CAPELLA PEDREGAL
▲
Guests who make their way through a tunnel carved into a mountain will find their way to Capella Pedregal (5 stars), a luxury resort with 96 rooms and nearly 400 employees dedicated to ensuring guests enjoy their stays. The four signature treatments at Capella’s Auriga Spa are unique in that they change with the moon’s cycle to align guests with the rhythms of nature and enhanced wellbeing: new moon—time for renewal and introspection; waxing moon—period to refocus energy and embody visions; full moon—full potential is achieved; waning moon—perfect time for cleansing.
www.duPontREGISTRYtampabay.com 23
ESPERANZA An Auberge Resort, Esperanza (4.5 stars) is tucked cliffside over the Pacific Ocean, with waves crashing fiercely below. With just 57 rooms, a total occupancy of 120 and staff of more than 800, Esperanza takes guest service to an entirely different level. Dining under the stars is a memorable occasion at Esperanza, too. For the most dramatic sunset views, reserve a table on the point and toast the day with a pineapple and basil margarita. Oh, and if Fido is traveling with you, he’s more than welcome and will be treated to amenities, too, such as a special bed and customized menu.
LAS VENTANAS al PARAISO Meaning “the windows,” Las Ventanas al Paraiso (5 stars) certainly does offer a window to the luxe side of Los Cabos. The accommodation options are sublime—choose from one of the 71 guestrooms or 12 oceanfront villas, the most luxurious of which start at 4,500 square feet and feature their own pools and private beaches. For the most discerning guests, Las Ventanas is building a new, three-bedroom, 22,000-square-foot villa that will have its own putting green, spa and glass-bottom lap pool.
Previous page: Capella Pedregal’s dramatic cliffs add to the ambience at this elegant resort. Above top: Indulge in a seaside massage at Esperanza. Above: Las Ventanas’ luxury villa with private infinity pool. 24 www.duPontREGISTRYtampabay.com
PUEBLO BONITO PACIFICA GOLF & SPA RESORT An adults-only, 154-room all-inclusive resort on two and a half miles of white-sand beach makes Pueblo Bonito Pacifica (4.5 stars) stand out from the rest. The all-inclusive aspect at Pueblo Bonito Pacifica is just that—unlimited food and beverage at its five acclaimed restaurants, daily wellness activities, and wine and tequila tastings. Additional amenities include a wellness-inspired spa, and private beach privileges complete with beach beds, to name a few. For an authentic Mexican experience, book a Temazcal ceremony at the resort’s spa—a traditional Mexican sweat bath led by a shaman, a practice that has roots as far back as the Aztecs.
ONE&ONLY PALMILLA After only a few moments at One&Only Palmilla (4.5 stars), there’s little question as to why it’s favored by George Clooney, Jennifer Aniston and Courtney Cox, to name just a few of the 55-acre resort’s celebrity guests. With a staff of 940—45 of whom are butlers—and a maximum occupancy of 350, guests’ experiences are of the utmost priority. Spend the day in a private cabana, featuring swinging beds over the water below and a private waiter, or at the spa in one of the treatment rooms with private sitting area and plunge pool. Dining at One&Only matches all of the other amenities, and is available any place within the resort: on the beach, in a cabana, in-room. The views from Agua are spectacular, not to mention the food and drinks. Be sure to make a selection from the wine list—the resort boasts the second largest wine cellar in all of Mexico.

INTERNATIONAL DESIGNER HAS DESIGNS ON SARASOTA
The son of an international banker and styleconscious, Swiss-educated mother, international designer Tui Pranich was born in Thailand and schooled in Switzerland and Paris, and earned his degree in architecture at Cornell University here in the U.S. With a keen eye for aesthetics, Tui worked with architectural and design firms in Boston, New York City and Palm Beach before opening his own firm, Pranich & Associates, in Palm Beach in 1983. Over his more than 30-year career, Tui has worked with billionaires, pop and movie stars, and royalty; his client list includes Jennifer Lopez, Shakira and Francis Ford Coppola. Now, he’s looking into bringing his designs to the Sarasota area, complementing his locations in Miami, New York City, Las Vegas, Chicago and Paris. We caught up with Tui when he was in Sarasota this summer to announce an 8,000-square-foot home design project with Rinehart Elite Homes, to find out more about this highly sought-after designer.

dRTB: You have design locations around the world. What drew you to Sarasota? TP: Every area has its own character, and I think the nice thing about the Sarasota area is that it is a mixture of Palm Beach, Coconut Grove and Miami all in one, on a smaller scale. Just like any city in Florida, there’s a lot of growth potential here—people in bigger cities want to get away to smaller communities where they can relax. Sarasota offers that, with museums, ballet and different types of art and culture. dRTB: What can Tampa Bay area homeowners expect when working with you? TP: When clients interview me, I’m interviewing them, too; not every client is going to fit with my design style. If we don’t connect, I won’t take the project—there has to be a mutual understanding, because when you do big projects, they can take up to a year, and you’re almost married to the client. I see what designs, ideas and styles my clients like and cater to them by creating different styles and looks, taking their ideas and interpreting them into my designs. In the end, I am giving my clients a lifestyle, not selling them a design or furniture. dRTB: Where do you find your inspiration? TP: My dad worked for the United Nations and World Bank, and I traveled around the world when I was young; my taste and design evolved from traveling and seeing different things. The more you see, the more you learn. You’re learning every day in life, and I’m learning design and new ideas every day. I like the challenge of creating different designs for different clients—it keeps me going and inspires me, and that’s what my clients like. The whole way of designing also changes, and with new technology you have to grow and change with the times. Tui Lifestyle is revolutionary, because no one’s done anything like it. People are working and on the move, and now they can get a design in 72 hours with Tui Lifestyle. And when they move from city to city, they can change their design packages as they change styles, while knowing exactly what they’re getting.
dRTB: Tui Lifestyle is high-style room packages assembled and delivered within 72 hours. How do you personalize packages for each client? TP: Personal touches are incorporated into the design—the most important thing in design is the last 10 percent, pretty much accessories and artwork. That’s what’s going to make up the entire look and ambience of the design. In Tui Lifestyle, we furnish down to the sheets, linens and dishes, and give a more complete look. dRTB: You’re on your way to the airport; where are you jetting off to next?
TP: I just got back from Las Vegas, and next is a meeting in Miami and then off to New York. I’m traveling constantly and always meeting new clients. For more on Tui Pranich and Tui Lifestyle, please visit: www.tuipranichdesign.com and www.tuilifestyle.com 40

DESIGNING THE BEST GYM IN THE WORLD . . . YOURS! By Catherine S. Mitseas
If you could ‘have it all’ in a home gym, what would it include? Do you dream of a sauna and steam room awash in sunlight and music, or imagine training on commercial grade fitness equipment? How about a half court to play hoops with the kids? Your choices are endless as the field explodes with companies refining commercial products for the home market. From the floor up, if you have the cash and the space, you can have it all. BEAUTIFUL FLOORS MAKE A ROOM Dean Bauer of ATS Fitness in Dunedin is a professional gym designer. “A home gym is more about aesthetics than function,” he explains. Clients don’t have to install thick ugly flooring, but the floors do need to withstand heavy equipment and absorb sound. That eliminates all cork and most wood surfaces, but surprisingly, not carpet. It’s a good sound absorber and a great way to bring warmth into sterile rooms, Baur suggests. 42 www/duPontREGISTRYtampabay.com
A great overall choice is colorful rolled rubber flooring by Regupol. The company’s 4 mm, 95-percent EPM color chip rolled rubber gives rooms a beautiful hue without the nasty recycled rubber smell. Sports fans might want to try Junckers Hardwood, Inc. (pronounced “Yonkers”) wood flooring, an international company with offices in New York and California. This Danish company creates some of the hardest wood on the planet by compressing 1 1/4-inch thick Beech pieces down to 1-inch thick planks. This makes the Beech

wood dense, stable and excellent for sports flooring, explains John Safarik, Junckers’ sports sales manager. Indoor basketball courts start at about $12 per square foot, but also require 20-foot ceiling heights and a sophisticated acoustics system designed to keep the sound of bouncing balls from ricocheting throughout the house, Bauer says.

WHAT’S HOT IN HOME STUDIOS? The quality of gym equipment itself has increased notably, with buyers
demanding the same commercial-grade quality they expect from their kitchen appliances. Ron Batca, president of Batca Fitness Systems USA, started out designing fitness equipment for the commercial and medical market, but soon found a niche in high-end homes. Batca creates multi-station fitness equipment that feels and looks like single-station pieces. “Get on any part of any of our gyms, and if you close your eyes, it should feel like a single-station piece,” explains Batca. Currently, Batca’s two most popular products are the Fusion

One product line, the Expresso HD by Interactive Fitness, features oversized—up to 23-inch—LED backlit LCD monitors that provide a virtual reality riding experience powered by gaming company Giada. Users steer, shift and navigate past other riders while battling real terrain resistance across 40 virtual tours. The dashboard keeps and compares statistics, and biometric feedback allows riders to pace themselves throughout the workout. More importantly, the Fusion 4 is front-loaded and can be placed against a wall, saving space without sacrificing training. He’s found that it’s easier for clients to stay mentally engaged during workouts when using higher-end cardiovascular equipment.

WHAT DOES AN AWESOME GYM NEED? Forethought—Consider hiring an expert before building a gym. Air conditioning and humidity control is important. If the room cools too quickly, moisture builds up on the machines, leading to rust. Many cardiovascular machines offer individual fans and cooling devices—an easy way to keep everyone comfortable without dropping temperatures. Yoga and Pilates sessions are made serene with full-spectrum adjustable lighting, while strategically placed skylights create beautiful natural light anywhere—even in a sauna or a refurbished room. A fully integrated surround sound system can pump music into nearby master baths or balconies. Most importantly, good design means everyone in the family can use the gym—from CrossFit addicts, to old-school barbell fans. Space—Every single-station machine requires 40-square-feet. The Fusion 4, compact as it is, requires nearly 100-square-feet. Functional fitness exercises demand room for lunges and squats. Cardiovascular machines, no matter how attractive, eat square-footage. Motivation—Martin trains athletes who are the best in the world. Yet, it is at their home gyms, on equipment they feel comfortable using, that these athletes continue conditioning. Ultimately, being at home surrounded by what makes you happy is the best motivation of all.

TRANSFORM YOUR MASTER BEDROOM Into a Luxurious Retreat

Everyone deserves a peaceful refuge to escape from the day-to-day pressures of life. A beautiful master bedroom is the perfect place to relax, unwind and forget about the world. Here’s how to make it happen.
S
“The bedroom is the most intimate space of your home, so it makes sense that it should be comfortable and personal,” says Eric Cross, general manger of Home Resource in Sarasota. Start with a beautiful bed and the best quality mattress you can select, perhaps one that offers both a soft and firm side to make you and your significant other happy, suggests Cross. www/duPontREGISTRYtampabay.com

Choose natural fiber bed linens in soothing colors, add throw pillows in different sizes and textures, and for a little extra luxury, place a cashmere throw at the end of the bed. To complete the picture, photos of loved ones in interesting frames and small decorative objects look great arranged on the bedside table or in a seating area. Brigette Pina, manager of the Brandon Ethan Allen, agrees that the bed is the “star” of the room and should be the first item selected. “Whether it’s a classic poster, sleigh or modern, low-profile bed, it will set the tone for the entire space,” says Pina. Pina also suggests that nothing says luxury quite like fine bed linens, especially Italian and Egyptian cotton linens. Ethan Allen’s Luxury Threads collection includes duvet covers, bed skirts, quilts, shams and decorative pillows that can be customized in the color and texture of your choice. The bedding can also be monogrammed for an added touch of elegance, says Pina. Window treatments are another important consideration. The right window treatments can add warmth, texture and privacy, and can help block excess light. Layer the window by starting with a shade, and then finish with a top treatment, such as a cornice or valance, or even full-length drapery to add warmth and visual interest, suggests Pina. Customized tape, cording and other dressmaker trim details can create a one-of-a-kind look. For Suzan Decker Ross and Jen Kravchuk of Decker Ross Interiors, designing the ideal master bedroom starts with an inventory of the client’s needs and preferences. After that, it’s all about creating a custom look that has the “Wow” factor. For example, to meet the needs of a newly engaged couple, Kravchuk added feminine touches to a previously masculine bedroom by applying decorative trim on pillows and using embroidered linens and bedding with velvet fabric and decorative trim. To “warm up” a wood floor, she added a beautiful white area rug with silk threads that give it a slight sheen. Another client wanted a full-length mirror with a jewelry box hidden behind it, says Decker Ross. She also customized a room to include a bench at the end of the bed, which doubled as a storage space and a place to sit while getting dressed in the morning. For a couple whose master bedroom included a small sitting area, Decker Ross strategically placed a comfortable, extra wide chair for reading, watching TV or listening to music. Often one of the hardest decisions clients face about the master bedroom is about color selection. “We’re seeing a lot of gray-toned hues, such as sea glass, soft amethyst and mineral blue being used throughout the home. These colors are especially good for bedrooms where mellow hues will promote a restful environment,” says Pina. Cross suggests Griege, a trendy new blend of colors that is a combination of the grey and beige families. “It offers a nice balance between warm and cool,” says Cross, “and looks great combined with accessories that have a metal patina finish in copper, bronze and brass. Lamps and tables in these finishes were featured prominently at the Cologne and Milan furniture fairs.” With the right colors, furniture, accessories, window treatments and lighting, you can transform an average bedroom into a sumptuous get-away worthy of a first-class resort.

MAINTAINING YOUR HOME’S LUXURY RUGS F

inding the right rug for the right space in your home can be a daunting task. Once you find the perfect one, you want to learn how to maintain it correctly so you can continue to enjoy it for years to come. We sat down with Preston Van Gorder, the owner of Tinney Rug Cleaners in St. Petersburg, to find out the ins and outs of rug preservation. Besides regular vacuuming, Preston recommends routine professional cleaning. “If the rug is used on a daily basis, it should be cleaned every 9 to 12 months,” he explained. “If it’s used in a dining room that only sees three settings a year, you could go a few years between cleanings.” Professional cleaning involves several steps that return your rug to its former vibrant glory. Preston and his team start with an air duster, followed by a rug beater to remove any dry soil. Then, they wet the rug with cold water to break the surface tension. Any visible spots are pre-treated with gentle chemicals, specific to the stain source. The rug’s fringe and pre-treated spots are cleaned with a pressure system followed by a soft brush to agitate the cleaning agents. A coldwater rinse with air removes any loose soil and cleaning agents while rejuvenating the yarn and bringing out luster in the rug. Another rinse and wring dries the rug fairly well, but Preston’s team continues to take it to another level by blowing the fringe dry, setting the nap on the rug and hanging it to dry completely for 15 hours in the climatecontrol drying room. “These rugs can be really expensive,” Preston said. “So, it’s really a wise investment to take care of it and stay on top of cleanings.” Homeowners should also consider the rug’s placement before purchasing one. “First, you have to decide where you are going to put it and how much traffic it is going to be exposed to,” Preston states. “If you have a formal living room, you can get one in a light color because you’ll have less traffic there. If you have a family room and have an animal prone to accidents, you might want a synthetic line and a machine-made rug for your home.” How can you tell the difference between a handmade rug and a machine-made rug? Flip the rug over and take a good look at the fringe. If the fringe comes out of the body of the rug, it’s handmade. If the fringe has been attached to the rug and you can see a seam, it’s most likely machine-made. Machine-made rugs aren’t as delicate as handmade rugs, so these are the perfect choice for high-trafficked areas in your home. Looking for a new rug to add to your collection? Appalachian rugs are popular now, mostly in white. Animal skins are also in, especially zebra or spotted prints. For those rooms with extremely low traffic, you can also consider a silk rug. For emergency maintenance, Preston recommends plain old white vinegar. “Use white vinegar—undiluted, full strength—and a white towel that you can use to blot,” he recommended. The white towel will allow you to see what you’re getting up. Tinney Rug Cleaners has been in the business since 1920, not only specializing in rug cleaning, but also repairs and specialized stain

REAL ESTATE
By Janan Talafer
Every luxury brand in the world, from Lexus and BMW, to Tiffany and Rolex, spends tremendous time and talent on creative marketing campaigns that deliver the perfect message—one that appeals to their clientele’s sense of distinction, good taste and demand for quality. An innovative California firm is applying that concept to the high-end residential real estate market.
DESTINATION MARKETING A New Option For the World’s Luxury Real Estate? Mark Fitzpatrick, CEO of RUHM, a destination-marketing firm, uses traditional marketing concepts like market research, positioning, branding, packaging and promotion. His team includes copywriters, videographers, photographers and public relations professionals. Rather than selling cars, yachts, clothing or jewelry, RUHM is turning its expertise to the most expensive residential properties around the world: homes starting at $3 million and going up to $30 million and more.
A NEW PARADIGM IN REAL ESTATE SALES Why would a spectacular multi-million-dollar property need a marketing firm? Technology is one reason, says Fitzpatrick. Traditionally, real estate agents have had exclusive access to property listings. Buyers needed to go through the agent to find homes that met their expectations for price, location, size and amenities. But that’s no longer the case, says Fitzpatrick. Technology has shifted more of the power to the buyer. Now, from the comfort of their home or office, buyers can search the three major websites, Zillow, Trulia and Realtor.com, for home listings anywhere in the world at any time of the day or night. Time zones aren’t a concern. 64 www/duPontREGISTRYtampabay.com
“Surveys show more than 90 percent of people are searching online themselves and then either directing their agent to the property or contacting the listing agent themselves,” says Fitzpatrick. “And they’re shopping from Europe, Asia, South America, Russia and throughout the U.S.” But the downside of technology is competition. Today, sellers and agents have to determine the best way to show their property online so it will stand out from the crowd. The solution, says Fitzpatrick, is to market the home with the same attention to detail as you would in marketing a luxury brand. And it’s all about the presentation. “When you go to a five-star restaurant, you would never expect the server to just put a plate of food in front of you,” says Fitzpatrick. “You expect the food to be artistically arranged by the chef and for the restaurant lighting and décor to be first-class. It’s the same when selling a multi-million dollar property. You need to create a sense of high value.” To show off the home to its advantage, RUHM photographs and videotapes the property. But that’s just the tip of the iceberg. “We

market the property in such a way that the potential buyer becomes emotionally invested in the experience,” says Fitzpatrick. For Hale Ali’i, a $26 million property on Maui, RUHM flew a 10-person crew, including professional actors, to the property for 12 days. The crew captured footage of the spectacular home, the lush Hawaiian landscape and beautiful surrounding community. “We put together a package that pulls on the heart strings; a story that gives potential buyers an understanding of the lifestyle,” says Fitzpatrick. “We help the buyer imagine what it would be like to enjoy everything the locale has to offer.” A series of short compelling videos tells a story and creates a slice of life that wows the viewer. You can practically smell the salty ocean breezes coming in off the Pacific.
The first step in the process is to conduct research to determine who the potential buyer might be and how best to reach that buyer, says Fitzpatrick. Next, the team develops storyboards and writes the script, goes on location to film the property and then comes back to the studio to edit the footage. The finished presentation is posted online. In addition, RUHM’s public relations department reaches out to newspapers, magazines, bloggers and other media outlets to help spread the word and gain greater attention for the properties. “Because we have a gorgeous presentation combined with a great story, media outlets have been very receptive to us,” says Fitzpatrick. “People always love watching shows about fabulous properties around the world.”

GARDEN
By Janan Talafer
BACKYARD GARDENS

Yetta Jaworski has a small herb garden in her backyard and an enormous patch of lavender growing near the boat dock. A long-term member and past vice president of the Florida Herb Society in Clearwater, Jaworski agrees that herbs are not fussy and they’re very forgiving—the perfect plant for first-time gardeners or those with a less than green thumb.
74
www.duPontREGISTRYtampabay.com
“Some herbs, like rosemary, thrive in the sandy Florida soil,” says Jaworski. “Don’t be afraid to experiment. Herbs can be planted directly into the ground or into garden soil purchased from the local garden center. But remember to buy organic soil only,” says Jaworski. “You’re going to be eating the herbs and want to be conscious of what chemicals and pesticides are in the soil, since it will be absorbed by the plant,” she says.
“There’s nothing like stepping out the door and clipping a few fresh herbs...” Jaworski grows oregano, rosemary and basil, as well as the more unusual arugula, lemon grass, lavender, star anise and even vanilla bean, a climbing tropical vine related to the orchid family. Growing vanilla beans is definitely a labor of love, she says, as the flowers bloom only for a short period of time and the plant has to be hand-pollinated. But it’s worth it, says Jaworski. To get her many herbs ready for use in recipes, teas and infusions with olive oil, vinegar or alcohol, she dries them outside in the sun or bakes them in her convection oven. “There’s nothing like stepping out the door and clipping a few fresh herbs,” says Jaworski. “Herbs thrive when they’re cut back. And they’re fun to share with friends. People love going home with them.” No time to plant a backyard garden? A few small containers of herbs by a kitchen window can work just as well.

H
erbs are decorative, wonderfully fragrant and a great addition to any cuisine. What would pesto be without basil or salsa without cilantro? Herbs are also easy to care for, whether they’re sprouting from a beautiful ceramic pot, planted in a small outdoor garden or growing in some unexpected places, like the Dalí Museum on the St. Petersburg waterfront. Oregano, rosemary, sage, tarragon, thyme, several kinds of basil and mint in flavors of chocolate, spearmint and lemon flourish along the sidewalk leading from the parking lot to the Dalí Museum’s front entrance. The long linear garden almost feels like a secret, as many people don’t even realize it’s there, unlike the more dazzling garden wall of bromeliads and epiphytes, or the podocarpus labyrinth. “The gardens and the building itself are another way of understanding and amplifying the experience of visiting the Dalí,” says Dr. Hank Hine, museum director. “Having herbs along the walkway also raises the intriguing question of just exactly what is a landscape plant.” Basil is the plant most visitors to the museum will stop and talk to her about, says Dalí Horticulturist Nicole Matwijczyk. “I have heard the word for basil in dozens of languages,” she says. “It seems to evoke memories of herb gardens from people’s childhoods.” Although a few of the herbs, like cilantro and thyme, are struggling with the Florida heat and sun, most of the Dalí’s herbs surprisingly are lush and healthy. What’s her secret? “Don’t over love them,” says Matwijczyk. “Herbs are very hardy and can withstand harsh conditions. They prefer to dry out rather than be kept too wet.”

WOLFGANG PUCK CELEBRITY CHEF PRODUCT PITCHMAN TV PERSONALITY If world-renowned Chef Wolfgang Puck feels pressure from running a global empire of restaurants, catering ultra lavish, celebrity-packed events and managing a namesake, branded product line he has personally tested and approved, he shows no signs of stress.
The 65-year-old cookbook author, broadcast peronality, professional chef, whose honors include a lifetime achievement award from the James Beard Foundation, seems to relish the round-theclock and round-the-world demands of his many faceted career. With his latest innovation expected to revolutionize consumer kitchens, Puck is poised to launch the most successful product release of his career. The Wolfgang Puck Pressure Oven is the latest addition and highest-priced product in an extensive line-up of cookware, cookbooks and cooking utensils that the Austrian chef promotes on-air at St. Petersburg’s Home Shopping Network (HSN). This time-saving, multi-tasking tool toasts, roasts, bakes, broils, re-heats and rotisseries, all of that up to 70 percent faster than traditional oven. (Note: See Publisher’s Picks in this issue for product information.) 76

By Mary Lou Janson
Puck has been a fixture on the “interactive multichannel retailer’s” broadcasts for 17 years, regularly visiting the HSN campus. Whether returning from vacation via London to arrive in time for a late night segment, the first of four two-hour sessions packed into a two-day stay or commuting from his home in Los Angeles for his six yearly trips to HSN, the youthful-looking Puck proves he is as adept at selling as he is at cooking. Fresh from vacation, Puck spoke with us about walking daily along a rocky coastline in Italy to keep in shape. Looking quite spry for his age, he has lately become an advocate for healthy living through food and fitness, a philosophy he extols in his Wolfgang Puck Makes It Healthy cookbook. He vigorously demonstrated knives, highlighted recipes and exercise routines featured in his latest book and enthusiastically extolled the virtues of a cheese grater. They are all part of a signature product line launched in 1995 that now ranges from utensils and appliances to bakeware and mixing bowls. “If you want people to cook at home, you want them to be successful,” said Puck, who expertly seasons and garnishes dishes during a live broadcast prior to placing them in or retrieving them from the backdrop of eight on-set ovens all simultaneously cooking turkeys, pizzas, pies and prime rib. “If people are disappointed, not only are they not buying something from you any more, they are not going to your restaurant.” Puck monitors the prep and production of each dish featured on the set, occasionally samples a succulent bit of chicken or forkful of fish, tracks real time sales transactions that coincide with his on-camera appearances and still manages to keep the conversation flowing smoothly between himself, the on-air host and any caller
fortunate enough to chat him up on air. It’s all in a day’s work and he seems to relish it. When Puck, who put the Los Angeles restaurant Spago on the culinary map, isn’t encouraging consumers to cook like a pro at home with help from his merchandise, he is busy enticing those same fans to frequent one of the growing number of 22 upscale restaurants and 45 cafes he oversees worldwide. It’s more than Puck’s name that becomes attached to his various ventures. He was deeply involved in the more than two-year long research and product development that preceded the launch of his new pressure oven. He also insists on promoting chefs from within his organization for coveted kitchen posts rather than hiring from outside. “I don’t endorse products,” said Puck. “If I am not happy with an item, I don’t do it.” Similarly, he maintains an active role in the development and operation of his restaurants. “Chefs work with us for many years before we put them into our restaurants.” Always on the lookout for that next great idea, Puck seems to seriously ponder an idea offered to him while talking to a caller, who is also a customer, during the live HSN broadcast. The caller is intent on convincing Puck to take his pressure cooker idea one step further and create a pressure fryer. It seems to be only a passing comment until later that same day when the cameras are off and Puck, wearing a heavily stained, less-than-pristine chef’s jacket, entertains questions from visiting media. When asked what’s currently in development, he doesn’t even miss a beat when he responds. “There was a caller who suggested I develop a pressure fryer. That could be what’s next.”

NEW OWNERS ELEVATING ESTABLISHED OLDSMAR RESTAURANT City Fish Seafood & Chop House
W
alk into the lush, plant-populated, wood floor interior of City Fish Seafood Grill & Chophouse and you’ll feel you’ve been whisked away to an island. The Tommy Bahamainspired, tropical-cool decor lends a classy, casual feel to the large, lofty dining room that carries through to the tiki hut-themed interior bar and patio. Live music adds a festive touch. Don’t mistake this for any sort of tourist trap. This is a seafood and steak place that takes its food seriously, but with a touch of whimsy paired with some impressive culinary skills. The 265-seat Oldsmar restaurant subscribes to a fresh-is-best philosophy that it applies liberally to its house-made sushi rolls, lavish Sunday brunch and specialty seafood dishes, like the whole yellowtail snapper entree. Daily deliveries of fish and beef are filleted and butchered by hand on-site, ensuring beautiful bountiful cuts for the kitchen to season and cook to perfection. While City Fish has been greeting guests and delighting diners for more than a decade, a recent ownership change is guiding it in a new direction, bringing new, and well deserved, recognition to the talented kitchen staff and personable servers who have been a hallmark of City Fish from the start. The original owner first opened the restaurant in 2006, steadily building a business that, to this day, thrives on word-of-mouth recommendations from guests who appreciate its customized approach to cooking and personalized approach to service. Clients voted City Fish North Tampa’s Best Seafood Restaurant in a 2014 readership survey compiled by the Tampa Bay Times. This independent stand-alone restaurant truly stands out among Tampa Bay’s increasingly competitive dining scene. The new ownership group, Oldsmar Social, is comprised of three business partners, including Matt 80 www.duPontREGISTRYtampabay.com
Vario, who is based in New York, Dale Del Bello Jr., a native of Reddington Shores and a third partner who does not want to be identified. Each has extensive restaurant experience. The partners were drawn by the attentive service, diverse menu, appealing atmosphere and well-executed food that have become the restaurant’s signature. Upon taking ownership February 13, 2014, Vario and Del Bello Jr. knew only minor upgrades and additions were needed to keep the restaurant on track for even greater success. An open kitchen overlooking the main dining room keeps the food flowing seven days a week for weekday lunches, breakfast, lunch and dinner on Saturdays, Sunday brunch and nightly dinners. Entrees, sauces, side dishes, salad dressings and almost everything in between are all made from scratch, even accommodating guests’ preferences upon request. The co-executive chefs who have shaped the lunch, dinner and brunch menus from the restaurant’s beginning continue to create exciting specials, expand sushi offerings and have recently added catering to their job descriptions. Dugagjin “Nick” Marku and Keith Dangelo are both former New Yorkers who worked under the same chef while attending the University of Florida before leaving Gainesville to pursue their passion for food and graduating with honors from the Orlando Le Cordon Bleu culinary institute. One of their most popular dishes to date is the Blueberry Filet served with blue cheese crumbles and a blueberry cabernet balsamic vinegar reduction. It’s that sort of culinary ingenuity that Bello is encouraging the chefs to “unleash” and incorporate into nightly specials and new menu items. “These chefs have so much potential. The sky is the limit for them to create new, exciting dishes and expand specials and catering options,” Del Bello Jr. said. “We focus on making the dining experience at City Fish not just a meal, but an actual escape and an amazing experience.”

CULINARY MASTERS
By Melinda Tam Orlando
COOKING WITH PASSION Meet Paul Syms, Corporate Chef of Oldsmar’s FlameStone Grill
“It’s a passion. It’s an adventure. It’s a philosophy...It’s truly an experience. I like to make their dining experiences more like adventures.” Chef Paul Syms incorporates passion and excitement into the dishes he invents and creates at FlameStone Grill, a casually sophisticated American Grill located in Oldsmar. Born in the US, Syms launched his cooking career across the pond in England, where he was raised. Syms trained in culinary college before working at London’s five-star Savoy Hotel for three years, before relocating to Florida. From there, Syms gained experience in both cooking and concepting for luxury hotels, family and fine-dining restaurants, country clubs and even a celebrity establishment—helping to open Wolfgang Puck’s main restaurant in Downtown Disney—in the Tampa and Orlando areas. “I always wanted to be a chef and be involved in food,” Syms says. “It comes so easily and naturally to me that it’s hard to call it work. I can do it with my eyes closed.” When Syms moved back to Clearwater, he joined Besa Grill, FlameStone’s sister restaurant. Just nine months later, the restaurant’s owners extended his title and responsibilities to oversee both Besa Grill and FlameStone as the Corporate Chef. “It’s a passion,” Syms boasts. “It’s an adventure. It’s a philosophy. I use products and ingredients that are around me locally. I like to find things that most people don’t come into contact with in their dayto-day life so that when they dine here, it’s truly an experience. I like to make their dining experiences more like adventures.” Syms continues to learn and stretch his experience by staying on 82 www.duPontREGISTRYtampabay.com
the cusp of culinary trends and techniques, a passion that he credits to his parents for exposing him to interesting and unique meals as a child. “I like practicing at home,” Syms says. “I’ll come up with an idea or a thought, and I’ll source out the ingredients in the strangest places. My father and mother are foodies, and they eat a lot of things that people never see in their lifetime, and I would make up different dishes for them to try. Now, I’ll go to local ethnic markets and find something unique, create something with it, taste it and see how I can incorporate it in the restaurant.” In fact, Syms is looking to change the menu—something they do about three times a year—to offer more seasonally fresh vegetables and dishes, such as the smokey charred Brussels Sprouts, which received rave reviews from guests. But don’t worry; the restaurant’s legendary classics will remain. Fan favorites include the Tableside Guacamole (made just the way you like it), Cedar Plank Salmon, a 28-day-aged Angus Steak, Campfire S’Mores and a flight of four Crème Brulees, to name just a few. “We make everything from scratch,” Syms explains. “Everything’s fresh and cut by hand. All the butchers are done in house. Sauces and dressings are all made from scratch. And I use local ingredients as much as I can.” Unlike most chefs, Syms also has a passion for pastries and desserts—in fact, the first thing he remembers cooking are fresh
pastries from meat-turnover trimmings. And that’s why you’ll find an extensive dessert menu with unique offerings, like the Fried Oreos, Peach Cobbler and the Sticky Toffee Pudding. “The pudding has homemade Nutella ice cream with salted caramel,” Syms says. “I’ve won a lot of people over with that dessert.” FlameStone features an extensive full-liquor menu with high-quality wines by the glass. The restaurant is open for lunch and dinner Monday through Saturday, with Sunday brunch and dinner hours.

BMW i8
C
ompromise is what we’ve been conditioned to accept as gasoline powered cars evolved into hybrids. BMW studied our perceptions of hybrids and decided to change the game. Instead of building a normal car with an additional hybrid system, BMW has delivered a plug-in supercar. Two electric motors and a tiny 1.5-liter turbocharged three-cylinder engine combine to deliver 362 horsepower in a light and sleek new package. As the flagship of a new “i” series, the i8 is styled unlike anything else on the road. We are happy that many of the wild styling features of the concept model made it into production. A low and wide body is accentuated by the “black belt.” Starting at the hood and running over the roof and into the rear fascia is a halo of gloss black. The popularity of two-tone paint liveries seems to be a distant memory, but it makes for a menacing appearance on the i8. Scissor doors serve to pull your attention away from the high door sills, while unique rocker panels channel air under the body. Designed from the outset to be a leader in safety, the cockpit is made almost entirely of Carbon Fiber Reinforced Plastic (CFRP), an incredibly strong and light composite that lends itself to be molded into the complex shapes necessary in auto interiors. Interior materials range from visible carbon fiber to post-consumer recycled plastics, with many grades and shades of leather available. Taking carbon fiber to an extreme we have never seen before, Louis Vuitton provides an accessory luggage set comprised entirely of woven carbon cloth. The unique shapes make great use of the i8’s interior spaces, and would be perfect for an eco-friendly weekend vacation.

Your i8 can be charged using any public charger or extension cord, but in another game changing move, BMW is offering a home charger. The “i Wallbox” offers an 80-percent charge in only two hours. The Wallbox works with the Smart Charging App on your smartphone in order to have your i8 at a comfortable climate when you are ready to go. Pricing starts at $136,650 for the most innovative, purpose built, hybrid sports car to date. With the ability to cruise for 23 miles on battery alone and hit 62 mph in 4.4 seconds, the i8 is your stylish and efficient next car.

Betting the Farm on Giving Back Old McMicky’s Farm, all newly re-built, is back and better than ever thanks to builder Ralph Zuckerman who purchased the property and decided against home development. Located on the historic grounds of Camp Keystone, the farm is part of a 68-year-old tradition in the Tampa Bay area. Tour guides teach children in an interactive, hands-on environment all nestled on a 40acre lake. Dedicated to giving back to the community, Zuckerman started the 1,000 Kids program with a goal of giving 1,000 local kids who are facing challenges a day at the farm free of charge. They hosted 899 kids the first year. The farm’s “Mission I Do” dream wedding gift was just awarded to wounded veteran Jacob Leach and his fiancé Brittany Polinsky. They will have an all inclusive wedding, all expenses covered courtesy of Old McMicky’s Farm and participating sponsors. The farm, with its elegant old Florida charm, is an ideal location for beautiful lakefront barn weddings, company picnics, corporate events, charity eventrs, private parties and more.
