S

pring is the season of eternal optimism, and perhaps one of my most favorite times of the year. Everything changes and reflects a renewed sense of hope and promise. With the changing of the seasons, comes a change in fashion. Many designers are playing with an experimental approach to the typical threads we normally see. Ready-to-wear designs are showing bright pastels and blues, as profiled on pages 33 and 34, by our resident Style Editor, Steve Galindo. I’m particularly fond of the cuts and clean lines of the current Cynthia Rowley collection. It seems as though many of us turn our attention to our homes and gardens once winter has dissipated. It’s time to embrace casual entertaining, high drama with eclectic design and eye-popping colors to give our indoor and outdoor living spaces a breath of fresh air. I am so happy to introduce our new Interiors Editor, Mike Ragan, with the release of our current edition. Mike is a welcome addition to the CVLUX team and you can see his handiwork, beginning on page 72. Another new face is internationallyrenowned photographer, Jim Jordan, who shot this issue’s cover. Lisa Edelstein shines in fresh metallic looks and clean modern lines. “I got married the day before I started shooting Girlfriends’ Guide to Divorce. Sort of hilarious, really.”

L

isa Edelstein is no stranger to transforming herself. Formerly a New York City native with a reputation as a girl about town, this doubledecade west coast resident and star of Girlfriends’ Guide to Divorce has certainly changed a lot about her surroundings and herself. In fact, it’s Lisa’s breezy and upbeat attitude about the many transitions in her life that makes her so inspiring. “All I ever wanted to do was act,” says Lisa. “I still get a tingle walking onto a studio lot.” But it took some real introspection and brave choices to get her onto those lots. Originally living in the quiet suburbs of New Jersey with a father in pediatrics and a mother in social work, Lisa’s aspirations of performing fell far outside her family’s realm of experience. But that didn’t deter Lisa. Bolstered by her acting dreams without any means to realize them, teenage Lisa got pictures made and visited agencies all on her own. “I met … all kinds of incredibly creepy people one would imagine a 14-yearold would meet when walking around Manhattan with just her pictures and a smile,” she remembers. Realizing this might not be the way to go, Lisa attended NYU’s Tisch School for the Arts in order to get some professional training. Of course this is an achievement for anyone, but Lisa didn’t stop there. “By the time I started college I knew that there was a lot to learn about life and business and I wanted to know it all. But that’s not what they taught in school. So, while I spent my days rolling around the classroom floors doing imagination exercises with my fellow acting students, becoming cows, or trying to re-experience a hot cup of coffee with our minds, or doing monologues, I spent my nights out and about exploring the incredible world we were in,” she recalls. Translation? At 20 years old Lisa Edelstein began frequenting Gotham’s hippest nightclubs, charming other scenesters with her beauty and energy. She became so notorious she was even featured in the New York Times, but all that attention came with some realizations for the driven actress. “People’s opinions of me swayed like the breeze,” she realizes, “and none of it had anything to do with me or anything I’d done. I recalled then that fame is not a goal. Fame is, in fact, in many ways, a hinderance to work.” At the same time, Lisa’s undergraduate experience was filled with its own epiphanies. As her affection for her studies at NYU began to wane, she took a course taught by playwright Elizabeth Suedos in which she was asked to write a satirical political song. From that song came another, and from there came an entire musical inspired by her experiences as part of New York nightlife.

“I met the most extraordinary, talented, f&*^ed up, imaginative, impulsive group of superstars, many of whom would not survive the AIDS crisis. I dropped out of college and took a year to write Positive Me, a musical play about sex, drugs, love and AIDS,” Lisa explains. Her foray into theater ended up changing her life. She was able to experience other actors reading her words, she got to perform her own work herself, and she finally became known for her talent, as opposed to her frequency in gossip columns. Positive Me blossomed into an entire acting career, with experiences Lisa found both rewarding and regrettable. In the latter category was a brief stint on MTV’s Awake on the Wild Side. After that appearance, she became a fixture on television with parts in Mad About You, Wings, The Larry Sanders Show, Seinfeld, Ally McBeal, Frasier—the list goes on and on. Then came her iconic role as Dr. Lisa Cuddy on the award-winning medical drama, House. “Being on House was fantastic!” Lisa recalls, “What a great show; how amazing to be on something so incredibly popular and known worldwide!” But of course, a woman with as many talents as Lisa took more away from the show than her experience in front of the camera. “I’m still quite close with a number of the writers from that crew,” she says. “The dark, twisted humor that was tossed around that writers’ room was truly something to behold.” Her next role allowed her to further explore the fine line between tragedy and comedy. Cast as the lead in Girlfriends’ Guide to Divorce, Lisa plays Abby McCarthy, a self-help author suddenly needing a lot of help and humor as her marriage falls apart. “Playing Abby is the most fun I’ve had to date and certainly the job that has asked the most of me,” Lisa admits. “She’s so vulnerable and confused, and tries so hard and means so well, and just can’t get it quite right. Poor Abby!” The critically acclaimed show was BRAVO’s first foray into scripted television, making it a bold move for Lisa. But clearly, Lisa is no stranger to bold moves. In addition to acting, Lisa still gets to write, a process she greatly enjoys. “I co-wrote episode three of this season on Girlfriends’ Guide to Divorce with my boss, Marti Noxon,” she tells us. “It was really exciting for me to be able to express myself that way after all these years.”

Combine Lisa’s recent reentry into writing with her marriage to oil painter, Robert Russell, and it’s safe to say that Lisa is living an artful life. “I got married the day before I started shooting Girlfriends’ Guide to Divorce. Sort of hilarious, really,” she explains. When asked how her recent nuptials influence her work, Lisa is equal parts romantic and introspective: “[Robert and I] influence each other in many ways, but more importantly we encourage and support each other and love each other’s work. We both intrinsically understand the somewhat obsessive nature it takes to do what we each do.” With a full life carved out for her in California, Lisa still hasn’t let go of the New York City girl inside. “25 years later, I suppose I’m a genuine member of Los Angeles culture. I even married a local. That said, I still have my apartment in New York, some of my closest friends still live there, and some of my other closest friends who live in Los Angeles are from New York originally. So, I guess you can’t wash it off. And who’d want to?” Lisa asks with her usual humor. Who would want to, indeed? The great thing about Lisa is her ability to take all of her choices in stride, allowing them to enrich her life, as opposed to maybe regretting them or questioning her past self. She continues to be grateful for her profession, celebrating each high with the enthusiasm of a far greener actress. “Seriously, the level of disappointment that riddles even the most successful seeming careers can be so dispiriting that every little moment of achievement comes with lots of CAPITAL LETTERS and EXCLAMATION POINTS,” says this exuberant actress. From a childhood in the suburbs of Jersey to a bi-coastal life filled with opportunities, Lisa is thrilled to have gotten what she yearned for from day one. “I still pinch myself. It’s such an incredible thing to be living the life you dreamed of.”

resno native, David Fansler, owner of Yosemite Ranch, Pismo’s Coastal Grill and Westwoods BBQ & Spice Co., is a talented restauranteur and gifted entrepreneur. Creative, witty, handsome and charming, this former San Joaquin Memorial student is well-loved by friends and family alike, known not just for his business savvy but also for his sense of humor and karaoke skills. Dave Fansler was born on December 1, 1953, and was part of the first graduating 8th grade class of St. Anthony’s in 1967. According to his childhood friend, Owen Sullivan, now President of Northwest Home Company, Dave was not just intelligent, but also “the teacher’s pet,” and considered a charmer ... even by the nuns! In order to attend San Joaquin Memorial High School, Dave and his classmates had to take an aptitude test, and, true to form, Dave scored higher than anyone else taking the test. As a high school student at SJM, Dave’s talents were already varied. He was the Social Chairman who organized all the dances and sports rallies, was one of a few young men in the drama class and had the lead role in “Sunday Costs Five Pesos,” and played football and tennis as a senior. Dave wasn’t just active in extra-curricular activities, but also worked odd jobs through high school. His first job was a soda jerk for his Aunt Roma at Airways Coffee Shop. He went on to sling hamburgers at Lesterburger and worked as a cashier at Country Boy Market, proving that even as a youth, food was a common theme with Dave. According to his friends, Dave could eat legendary quantities of food at the speed of light.

Dave joined the SAE Fraternity in college, graduating from San Diego State with a Bachelor of Science Degree and a major in Accounting. He returned to Fresno after college, where he worked as a junior accountant at DeMera, DeMera & Cameron, and then at Hills, Renaut, Homen & MeCormick. In spite of this, the very day he received word that he had passed the CPA exam and could now call himself a CPA, Dave quit his job and went into the restaurant business.

all of his restaurants for the last 20 years. His investors have never received less than an 8% annual return and have made as high as 20%. Not only that, they have all made steady returns for the last 80 quarters. In 2008, when the economy had tanked and banks were giving no loans for any kind of project, Dave expanded with Pismo’s using his financing model. When Pismo’s broke ground in late 2008, there were only a handful of other buildings under construction in all of Fresno.

Paul Fansler, Dave’s father, owned Piccadilly Inn at Shaw and Van Ness. He was converting the Airport Marina Hotel at the airport to a Piccadilly Inn. Disappointed that Dave was not going to pursue a CPA career, his father pushed Dave to refurbish and begin operating the food and beverage side of the new airport location. This was December 1979 when the prime lending rate was a whopping 18% and Dave was only 26. Thus The Steak and Anchor was started and Dave’s career as a restauranteur began.

In talking with Dave about his business, he explained that he has two very important customers: his dining customers and his investor customers. Jerry Cook of Cook Land Company, who has been involved with Dave since the beginning, told Dave that if his investment went well, he would continue to support and invest with him.

A few years later, Stanley’s Armenian Cuisine at Cedar and Shaw was selling out; Dave extensively remodeled the whole restaurant and re-opened it as Wiliker’s. The new restaurant was a huge hit, and there were often lines around the building. After 12 years, Dave grew weary of the college bar business and wanted to get more respect for his food, so he made the decision to sell it; 20 years later people still talk about the fun times they had at Wiliker’s. During this same time, Cask ‘n Cleaver restaurant, located at Marks and Shaw, had closed its doors. While Dave was securing the lease, he took note that the landscaping around the Cask ‘n Cleaver was dominated by redwood pine trees. He capitalized on the theme and after remodeling the restaurant, opened it as “Tahoe Joe’s Famous Steakhouse.” Dave was meticulous in the detail of Tahoe Joe’s décor, personally going over every detail, even going to swap meets, consignment shops, historical archives, and art galleries, looking for Lake Tahoe memorabilia to use in his restaurant. Business took off like a rocket. Seven months later Dave took over the lease on a bankrupt Sizzler at Cedar and Herndon to develop his second Tahoe Joe’s. Soon after, Dave opened Tahoe Joe’s locales in Roseville, Bakersfield, Folsom, San Luis Obispo and Vacaville. “I have known Dave for over 40 years ... he continues to amaze all of his old friends with his constant creativity, high food quality and ability to communicate with his patrons how important it is to him that they have a great dining experience. While he was a big man on campus at SJM High School, it is safe to say none of us ever saw this level of success coming!” says Linda Penner, Chair of the Board of State and Community Probations, and one of Dave’s SJM classmates. Dave’s hands-on approach and personalized atmosphere was received well by the public. Not only did they feel they got a great meal, but the dining experience he created was unprecedented: he was often on-site, personally overseeing every aspect of the business and even mingling with his customers. In 2001, Dave sold his interest in Tahoe Joe’s to Buffets International and agreed to work a five year management contract. “Dave is a very focused and driven person. He focuses on the small things most people overlook and he is driven to make sure that everything he is associated with is nothing but the best,” says Owen Sullivan. Having signed a non-compete agreement with Buffets Inc., Dave had to wait a couple years before lunging back into the businesses with the creation of Yosemite Ranch at Cedar and Shepherd. Dave uses a creative financing model of convertible notes that he has used to attract local investors to help finance

“Dave has met and far exceeded my greatest expectations many times over ... he is truly one of the smartest, multi-faceted and multi-dimensional people that I know. Some people know a little bit about a lot, but with Dave one can discuss at great length anything from architecture, to finance, to great cuisine, and he is knowledgeable about it all. He has great passion in what he does and has so many unique skills that are very rare. He is the ‘Entrepreneur’s Entrepreneur,’” says Jerry Cook. Also important and key to the success of his restaurants is having great and loyal employees. Dave has enabled his managers to own an interest in his restaurants. He also has purchased homes, refurbished them and “bonused” employees with the down payment funds out of gratitude for their loyalty. He continually encourages research and development and strives to keep his employees up to date on new and innovative developments in the restaurant world. The Fansler Restaurant Group now employs over 350 people and intends to do over $24 million this year in business. In addition to being a talented restauranteur, Dave is known for his singing skills. His karaoke career began in the ‘90’s at the Plaza Ventana Restaurant on West Shaw, and Owen Sullivan remembers Dave dragging him there every other week when he was down from Sacramento so that he could listen to his childhood friend sing Frank Sinatra, Dean Martin and Harry Connick Jr. He can definitely hold his own with a microphone. Dave, who is currently rebuilding a cabin in Bass Lake as a legacy for his family, is father to his only child, Savonna, and grandfather to Savonna and her husband, Mark Coelho’s twins, Charles and Colette, who he affectionately calls, “Charlie and CoCo.” Dave lives with girlfriend, Roxanne Santiago, and her daughter, Cierra. “Rox is a partner in my restaurants, as well as my life,” Dave says. “She nourishes my soul, keeps me grounded and even helps select most of my clothing.” Savonna calls Rox “the baby whisperer,” because of how well CoCo and Charlie respond to her. Joey Valdivia, of Commercial Real Estate Fortune Associates, who also graduated with Dave at SJM in 1971, says, “Most people are not aware of Dave’s loyalty, his generosity and the soft side he has for his family, his friends and his employees.” All along this Central Valley native has aspired to have the best restaurant, serve the best food and deliver the best dining experience a patron could ask for, as well as keeping his investors just as pleased and more than satisfied. He has definitely succeeded on all counts.

There’s nothing like Australia. Between vast expanses of seemingly nothing but arid land, there are world-class cities, as well as many amazing World Heritage Listed Sites. Australia is physically the size of the United States, but has a population equivalent to that of Los Angeles County. There’s a lot there, but not a lot of people. The two main islands of New Zealand are lush, mountainous and volcanic. The cities are compact and have an easy pace to them. Distances are reasonable—you can travel from Auckland to Rotorua in a few hours, and still have time to go to the spa. New Zealand has an easy-going sophistication, and a physical beauty to the landscape that dominates every aspect. AUSTRALIA Australia’s cities have everything you want, and Sydney is the largest with the most beautiful natural harbor in the world. Iconic features like the Sydney Opera House and Harbour Bridge are easy to love. Melbourne is filled with lovely hidden passages with cafés and designers. Adelaide is one mile square, and as a city, really lives for the Arts. Hobart, Perth, Darwin, Cairns and Brisbane all have charm and appeal, and I could wax poetic on every one of these cities. But my heart is in the unique, remote places that are worth the effort to experience. Emirates One & Only Wolgan Valley, The Blue Mountains, New South Wales (an AHC property) Emirates One & Only Wolgan Valley Resort is about 2 ½ hours outside of Sydney, located in the Blue Mountains. The resort is on 7000 acres of a conservation and wildlife reserve and is 100% carbon-neutral. There are 40 free-standing suites that all overlook this native bushland, surrounded by towering escarpments. Everything about the resort feels like part of the land. They offer a variety of engaging activities and have an amazing spa as well. But the real experience is in wildlife spotting, and a well-known, endangered tree. Albino animals are rare in the wild. In Wolgan Valley, there are six albino wallabies and one albino wombat. The Valley reminds me a bit of the Ngorongoro Crater in Tanzania where animals never leave because there is ample water and food. Wolgan Valley, while not a crater, creates a similar set of conditions, with plenty of resources. While I was out on safari, I saw three of the six albino wallabies; the wombat remained elusive. The tree, the Wollemi Pine, was presumed extinct, but a little over 16 years ago, a bushwalker discovered a grove not far from where the resort is located. The actual location is kept secret and used for research only. The rediscovery of this grove led to the Greater Blue Mountains National Park being listed as a UNESCO World Heritage Site. As part of the recovery program, a few groves have been planted around the 7000 acres that make up the grounds of the resort. The tree is beautiful and ancient and seeing it for the first time was like stepping into the Jurassic period. In the original grove, there are trees 130 feet high with trunks 3 ½ feet around. Rare and beautiful. The resort has the feel of an historic station, but in all the most important ways, clearly 21st century. The suites are comfortable, cozy and elegant. Native timbers and dark tones make up the interiors, soothing and local. They all have a private pool, double-sided fireplaces, a deck, and views into the natural beauty that surround the property. The dining room and spa are in the main house. This remote section of The Blue Mountains is the perfect place to begin your trip in Australia. Get off the plane, transfer by car or helicopter to a place of nature and be restored for a few days.


Southern Ocean Lodge, Kangaroo Island, South Australia (an AHC Property)

Southern Ocean Lodge sits on Kangaroo Island’s limestone cliffs overlooking the Southern Ocean. There is nothing else between the lodge and Antarctica. Each of the 21 suites has breathtaking ocean views and, in season, of Southern Right Whales as they migrate past. Kangaroo Island is effectively Australia’s Galapagos.

Bamurru Plains is on the Mary River Flood Plains, a permanent wetlands and mecca for birdwatching and fishing. The vast savannah reminds me of Botswana’s Okavango Delta. The lodge is also part of a large working station which has water buffalo. It’s close to Arnhem Land and Kakadu National Park, and private tours to view rock art and learn about the Australia’s indigenous people can be arranged. There is plenty to do on the property with daily safaris, air boat touring on the wetlands, or a cruise on the Mary River.

A magical place, Kangaroo Island is Australia’s third largest island and has a diverse landscape: hardy farmers who have ventured into vineyards and wineries, some of the best cheeses and honey in Australia, former whaling villages and an artist colony. Seal Beach is home to a colony of sea lions and you can walk out on the beach among the animals. Admiral’s Arch, a windswept, sea-carved limestone arch, is home to a colony of New Zealand fur seals. Kangaroo Island kangaroos are an endemic species, and can be seen lazing about in grasslands. There are healthy koalas, Tamar Valley wallabies, echidnas and more. Remarkable Rocks are a feature of large sandstone boulders that have been eroded by the elements into fantastical sculptures of great beauty. Walking out on Seal Beach in a ranger-led, small group is like entering another world altogether. The Sea Lion Colony is large and healthy. They normally ignore humans, but one juvenile male seemed to take a liking to my curly hair. He kept looking for me. We would move in a group and he’d adjust for a better view. When I finally hid behind the tallest person in the group, the sea lion snorted a big harrumph, turned, and waddled out for a swim. After a day of exploring, coming back to the open and minimalist structures of Southern Ocean Lodge is like coming back to a sanctuary. They use windows to their best advantage, walls are all white and wood is light-colored and made from local material. The lodge is Kangaroo Island.

Wild Bush Luxury best describes the experience. The main lodge is a combination living room/dining room. An infinity pool looks out over the savannah. On either side of the main building, there are five stand-alone permanent tents. The tents are open on three sides, covered only by a fine mesh to keep out the bugs, giving unobstructed views over the savannah. Guests are instructed to not walk in front of the line of structures for both privacy and safety. The ensuite bathrooms are charming: the rain shower head is held up by a tree sapling. No internet connection, no cell service and no television. It’s a long drive from Darwin, or a fairly short private plane ride that lands on a dirt airstrip. My first night I was awakened by snuffling, munching and hopping. Looking out the screened side, I saw the buffalo grazing next to my tent on both sides. Hopping amongst them were Agile Wallabies, also grazing. As dawn broke, I dressed and went outside to watch them all walk past me, across the savannah to the wetlands to graze in the heat of the day. On a sundowner cruise on the Mary River I saw a huge saltwater crocodile leap out and take a bird—it happened so fast, only about four people on the boat saw it. Another morning, just before breakfast, wallabies started stampeding toward the main building. Later I saw two healthy looking dingoes loping across the grass, hunting. This area is truly wild and incredibly beautiful. The birds alone are remarkable. I saw two jabiru, misnamed now as black and white storks; they aren’t actually black and white. Their dark plumage is iridescent teal blue, and their eyes look like jewels. This part of the Northern Territory has my heart and soul. Hamilton Island, in the Whitsunday Islands, is a lovely island with several options for accommodation; qualia is the jewel in the crown. Guests get their own golf cart and have full priority access to everything on the island including the Hamilton Island Golf Course. But only qualia guests have access to this resort and spa.

Tasmania, Australia’s Island State, is gorgeous. It has a sad history as a penal colony. The British had convicts build their own prison at Port Arthur, but the convicts also cut stone and built beautiful bridges around the island. Tasmania has beautiful walking tracks, incredible mountains, gorgeous beaches and rugged coastlines. There are wonderful vineyards, boutique places that produce delicious wines in such small quantities that they don’t export. Tasmania has some of the cleanest air in the world. What Tasmania lacked was a true luxury lodge until Saffire-Freycinet opened a few years ago.

It was my first stop on a whirlwind trip. I flew from Los Angeles to Sydney, and then connected to Hamilton Island where I was met by a golf cart and someone who took my luggage. Check-in is in the main building, over tea and nibbles, and then I was whisked to my windward pavilion with a private plunge pool. Everything here is designed toward mindfulness and relaxation. Dinner was in the main dining room, and delicious. This is a place of mindful indulgence, a place to treat your senses to the best. After a delightful evening meal and conversation, I returned to my pavilion and went to bed. Early morning “alarm clock” was a small wallaby that had hopped onto my deck, and I spotted another in the native bush surrounding my suite. A helicopter flight over Whitehaven Beach and Heart Reef was wonderful. The beach is pure white—miles and miles of pure, talcum powder white. Picnics can be arranged; they can drop you by boat or helicopter, and at a specific time, return for you. Sunscreen is mandatory. It is one of the most perfect beaches in the world, and scuba and snorkeling trips to the outer reef can also be arranged. There is a small town on Hamilton Island, with a few restaurant options for those who want to try something else. Three quarters of the island is set aside as national park land, with ample hiking trails and a healthy variety of wildlife.

Saffire is an architectural beauty. From the air, it looks like a sting-ray with wings spread. Gorgeous. From within, it makes brilliant use of warm wood tones and glass, embracing the light and the view over Great Oyster Bay. Set amongst the Hazards Mountains, the Freycinet Peninsula and the bay, the lodge feels like a part of the landscape. All 20 suites are alike, overlooking native bushland toward the bay. The head chef has created brilliance out of local produce: seafood, fruits and veggies, poultry and beef. Guests can enjoy the spa, bushwalking, kayaking, or visiting the deserted islands. One of their included experiences is great fun: after getting fitted out in hip waders early in the morning, guests go out to the oyster beds and harvest oysters. Next you get to eat your just-caught feast at a table set with a white tablecloth and a selection of wine, while standing in the water. Nothing fresher. Tasmania is home to the endangered Tasmanian Devil. Saffire offers a wonderful experience to see these animals in their natural habitat. They have an open-range enclosure where you can observe them without risk of transmitting disease to them, and your guide talks about the efforts to find a cure for the Tasmanian Devil Facial Tumor Disease which has brought them to the brink of extinction.


NEW ZEALAND New Zealand is a jewel. Visitors can enjoy the volcanic North Island with its active thermal areas and gorgeous bays, the majestic Southern Alps on the South Island, and the sub-tropical rainforests; all contribute to the natural beauty of this country. New Zealand needs to be experienced. The cities are wonderful, and compact. Auckland is the largest city. Wellington, the Capital, is a tiny sophisticate with a great café society and restaurant selection. Christchurch, risen from a devastating earthquake 8 years ago, is quintessentially British in look and feel. Queenstown is a wonderful ski town. But again, my heart is not in the cities, but rather in the remote but exquisite lodges. Huka Lodge, Taupo, North Island (An AHC Property) Huka Lodge has transformed from a gentleman’s fishing lodge into a worldclass retreat. Yes, they still have fishing because the Tongariro River is one of the best in the world for fly fishing, but now they have so much more. The lodge is in a beautifully forested area, and boasts lovingly tended gardens; the setting is idyllic. Just outside of Taupo, ten minutes from Lake Taupo, near volcanoes, and about an hour from the geothermal region of Rotorua, Huka Lodge is close to everything and guests can enjoy hiking, biking, fishing, boating, horseback riding, helicopter flights and kayaking.

Wharekauhau Country Estate, Palliser Bay, North Island (an AHC Property) Wharekauhau is my favorite place in New Zealand. The lodge is set on an active sheep and cattle station of about 5500 acres, with breathtaking views over the bay. The farm itself has a series of natural boundaries that keep the livestock in place. It has been a successful farm since the late 1880’s. The entire concept and feel is that you’re a guest on the farm, where you’re treated as a welcome, invited visitor, rather than a transient client staying in a hotel. It is all personal, without being intrusive. A farm tour with a sheep-shearing demonstration is included. Dinner is in the main house, and it is a gorgeous affair. In fact, the first night was so good, I asked for a recipe. They gave me a cookbook and history of the property! There is horse trekking, golf and clay pigeon shooting, but the real draw of the region, in addition to the farm itself, is the wine region that surrounds the farm. It is the best Pinot Noir region in New Zealand. They also offer cooking classes. The region is food and wine-centric, and everyone dives in. When it was time to go, there were hugs and kisses all around. I felt like I’d gained a family.

I stayed in a Lodge Suite. Three sides are protected by the native bush and the front opens to the Waikato River. Early morning fog rises from the river, surrounding the old growth trees in mist, and casting a meditative quiet over the grounds. A great thrill is the helicopter flight over Mt. Tarawera, which last erupted in 1886 and buried a village. After Mt. Tarawera, I boarded another helicopter where I went on to White Island (Wakaari), which has been erupting constantly since about 2001. I’m fascinated by the power of this earth. cvlux.com @cv_luxury

Blanket Bay is about 45 minutes out of Queenstown toward the town of Glenorchy, on the north tip of Lake Wakatipu. It’s a true alpine resort in the heart of the Southern Alps that define the South Island. Blanket Bay is away from the hustle and bustle of Queenstown, which is always packed with visitors. It gives you a wonderful place to regroup, and still participate in all the activities.

Otahuna Lodge is the loving restoration of New Zealand’s oldest private residence and turned into a small private hotel. It has five suites and two master suites, and a 30-acre botanic garden restored to its original splendor. The owners, Miles Refo and Hall Cannon, did tremendous research when they purchased it, both into the interior of the home, as well as the gardens. The love these gentlemen put into their property shows in every detail.

The region was the backdrop for many of the films in the Lord of the Rings and The Hobbit Trilogies. The rugged high country provides the trailheads for three of New Zealand’s Great Walks: the Routeburn, Greenstone, and Rees/ Dart Tracks. It is also located near the Hollyford Track, as well as the famous Milford Track. There are many one-day hikes that can be experienced, with or without a guide. The Lodge is four kilometers from the country town of Glenorchy, with an assortment of cafés, shops and a General Store. Quaint, unlike the busier city of Queenstown, it’s a logging, gold mining and farming town.

The location is perfect. 20 minutes outside of Christchurch city center, it is the ideal base for exploring the Canterbury region. The region boasts wineries, restaurants, golf, fishing, and, nearby in Akaroa, boat trips to see Hector’s Dolphins, the world’s rarest and smallest. It’s a great place to experience the Tranz Alpine Express, a scenic train from Christchurch to Arthur’s Pass for the most beautiful portion of the journey. Otahuna offers hands on cooking classes as well, and since most of the produce is from the property, it’s a treat! Fresh is fresh.

Experiencing Milford Sound from Blanket Bay is brilliant. The drive from the lodge to Milford Sound would be about five hours each way, so they provide a two-hour helicopter experience that gives you a bird’s eye view of the sound and the waterfalls. You land on a glacier at one point, and have the opportunity to get out and experience the ancient ice. They also offer an excursion that gets you there by helicopter, allows you to do the public boat cruise and then helicopter back. I prefer the helicopter only experience because I saw so much more. The Main Lodge houses all the public areas, and then there are five Lodge rooms, as well as seven Lodge and Chalet Suites. The Great Room is resplendent with antiques and high-beamed ceilings. The accommodations are lavish, comfortable and spacious. Spectacular views to the lake and the mountains. No children under 10.

But the draw of this property is the gardens. After abundant research, the 118year old garden was restored to the vision and beauty of the original owner. There are several other amazing gardens to tour in the region. Christchurch has the nickname “Garden City” because there are so many. There are helicopter tours that are spectacular; the Kaikoura Whale Watch by helicopter is breathtaking. Seeing sperm whales from the air gives you a sense of their size differently than viewing them from the boat. The boat trip is amazing but can be choppy, and since there are so many people on the boat, you do have to jockey for position. The helicopter limits how many people are with you, and everyone has an exceptional view. The property opened for guests in 2006. In the 10 years it has been open, it continues to glow. Wild Flowers & Wild Ideas Don’t feel the need to stick with the traditional idea of a large vase in the center of your table. Spring is all about relaxed entertaining, so feel free to experiment. Here are some ideas to get you started. Go Rustic. Buy a gorgeous bouquet and have your florist wrap it with brown paper and twine. Instead of taking it apart when you get home, just lay the bouquet on the table instead! The brown paper adds a rustic, country chic element to your table and, when your meal is over, you can take it apart for a whole new look. Brighten Up. Play around with color combos this season! Winter is for crisp white florals and deep red roses, while spring is for playful pinks and yellows, reds and fuchsias, purples and greens. This is the time to mix and match, and have some fun. Fruit & Herbs. Springtime to me means fresh fruit and herbs … and I hate to limit that to just my food. I use fresh fruit in all of my décor—especially my flowers. Try putting heaping plates of bright lemons and limes on a table for color, placing fresh blackberries and rosemary by your place settings, or adding sliced fruit to the bottom of a clear vase of flowers.

I am loving these adorable and easy ways to make each guest’s place feel special. Napkin Rings. Don’t have anything to match your spring décor? Be creative. A gorgeous silk ribbon or a bit of twine can work wonders! Flowers & Herbs. Nothing says outdoor entertaining like putting the outdoors on your plate. A sprig of rosemary or a flower slipped through a napkin ring can brighten up your place setting and also means you don’t have to have a huge arrangement in the middle of your table. Place Cards. Have fun with your name cards this season! Why not buy a second hand Scrabble board and spell out your guests’ names? One of my absolute favorite place card ideas is to use tiny vintage frames and write my guests’ names inside (or even use a picture of them, if you know them well enough!).

hen Aspen interior designers Maggi Whitmer and Carrie Wolfer of Della + Zella Interiors were approached by their clients who were moving full time to their new Montecito home, it was

a dream. Working with a blank canvas, their mission was to create a family home perfect for three children under six and a new puppy.
