CHINCHORRO

Kilométrica. Así podría definirse en una palabra esta inmensa –y ventosa– playa ubicada en el sector norte de Arica. Ideal para las actividades deportivas en el mar, como surf y navegaciones en kayak, para espíritus menos aventureros hay que destacar que el sector se ha transformado en un pujante polo gastronómico –en el cual destaca el restorán Rayú (Ingeniero Raúl Pey 2590)– y que por las noches la zona es un paseo obligado para quienes quieran conocer a fondo la ciudad.

CHINCHORRO

Immense. That’s just one way to describe this extensive (and windy) beach located in the northern part of Arica.

It’s perfect for water sports like surfing and kayaking, but for the less adventurous it should be noted that the area has become something of a culinary hub in recent years (with stand-out restaurants like Rayú at Ingeniero Raúl Pey Street 2590), and that the area is a night time must-see for those who are looking to explore the city in more detail.

Ojo con su nutrida oferta culinaria, que incluye un amplio espectro de sabores como empanadas, excelentes jugos de frutas y delicias dulces como churros y las clásicas palmeras.

LA LISERA-EL LAUCHO

In the southern part of Arica, about 10 minutes apart on foot, the beaches El Laucho and La Lisera are safe for swimmers and perfect for whiling away a summer's afternoon. There are plenty of people, and music everywhere, but the best part is the food which includes homemade bread and hard-boiled eggs, “churros” and pasties, and even includes Bavarian cream and exotically flavoured homemade ice-cream. With guaranteed sun 365 days of the year, it’s the best place in the city to enjoy the sunset.

CAVANCHA

Iquique's tourist magnet, Cavancha is not only one of the best beaches in the north, but also in the whole of Chile. Flanked by palm trees and with a 100% urban atmosphere, in the morning it’s a meeting spot for surfers and later on families throng here to spend the afternoon on its golden sands. Look out for the generous culinary fare, including a wide range of options such as pasties, excellent fruit juices and sweet delicacies such as “churros” and the Chilean classic “palmeras” (large sweet pastry disks).

PLAYA BRAVA

Playa Brava es otra de las favoritas de Iquique. Tal como su nombre lo dice, su oleaje es fuerte y, por eso, es ideal para tomar sol o realizar actividades deportivas en el agua. De noche, eso sí, cambia de espíritu y atrae a cientos de iquiqueños y turistas gracias a sus movidos bares junto el mar. Es una de las pocas playas en Chile con casino y los más noctámbulos suelen terminar sus noches aquí apostando fichas con el sonido de las olas de fondo.

HORNITOS

80 kilómetros al norte de Antofagasta, Hornitos es una de las playas más fotogénicas de Chile y una de las que tiene las aguas más templadas de nuestras costas. Cada vez más codiciada, hoy es común ver lujosos yates en el agua y casas de varios cientos

de millones. Sin embargo, el lugar aún conserva un espíritu hippie gracias a su pequeña caleta de pescadores, donde es conveniente preguntar por congrios, pescados de roca y mariscos como locos y machas.

CIFUNCHO

En el límite sur de la Región de Antofagasta, Cifuncho está a 40 kilómetros de Taltal por un camino asfaltado en excelentes condiciones. Casi desconocida hace una década, hoy su caleta ya tiene un par de buenos restoranes para comer a precios irrisorios pescados ultra-frescos y, desde luego, jugosas empanadas de mariscos. Después del almuerzo hay espacio se sobra para tender la toalla a 100 metros de cualquier vecino bañista y luego, sólo meter los pies en el mar pues no es apta para el baño.

HORNITOS

PLAYA BRAVA

Playa Brava is another favourite in Iquique. As the name suggests (“wild beach” in English), the waves are strong here, and it's best for sunbathing or water sports. At night, the atmosphere changes and locals and tourists alike flock here by the hundreds thanks to the lively beachside bars. It’s one of the few beaches in Chile with a casino, and night owls usually end up here, placing bets against the sound of the crashing waves.

Eighty kilometres north of Antofagasta, Hornitos is one of Chile's most photogenic beaches and one with the warmest waters on our coasts. The area is becoming more and more famous, and it's common to see luxury yachts in the water, and mansions costing hundreds of millions of pesos. However, there is still a somewhat hippie vibe here thanks to the little fishing port, where you can find conger, rock fish and shellfish like abalone and clams.

CIFUNCHO

At the southern edge of the Antofagasta Region, Cifuncho is 40km from Taltal, along an impeccable asphalt road. It was almost unheard of ten years ago, but now this small fishing port has a couple of good restaurants where the prices are ridiculously low and the fish are ultra-fresh; of course, you should try the shellfish pasties. After lunch, there is more than enough space for you to be able to lay down a towel 100m from the next bather, but you can only dip your toes in the sea here, as it isn't safe for swimmers.

LOS PIQUEROS

Media hora al norte de Chañaral, en el extremo norte de la Región de Atacama, se encuentra el Parque Nacional Pan de Azúcar, uno de los más populares del norte durante el verano. Más allá de sus paisajes y rica fauna –que incluye guanacos en tierra y lobos marinos en el agua–, el principal imán de Pan de Azúcar es su playa Los Piqueros, perfecta para pasar una tarde de sol. LOS PIQUEROS

Half an hour north of Chañaral, in the far north of the Atacama Region, you’ll find Pan de Azúcar National Park, one of the north’s most popular summer destinations. Beyond the landscapes and wildlife (including guanacos on land and sea lions in the water), Pan de Azúcar’s main draw is Los Piqueros beach, a great spot to while away a summer’s afternoon. There are campsites and comfortable cabins next to the sea and, of course, a fishing port with kitchens that will whip up seaside classics for paying visitors. S

With year-round sun, Arica offers an infinite range of activities such as the Morro de Arica by the sea and Lake Chungará on the border. With some of the best beaches in the north and a cuisine that’s marked by the influence of Peru and the Andean altiplano, here are the best ways to enjoy your summer in the “City of the Eternal Spring”.

Aunque puede hacerlo en auto, lo mejor es subir caminando a la cima del Morro de Arica por el sendero que parte desde la calle Colón. Hito histórico de la ciudad, no se puede decir que se estuvo en la ciudad sino visita su mirador ubicado a 130 metros de altura, desde donde se tiene la mejor panorámica de la ciudad. Ojo que, además, arriba encontrará un entretenido museo dedicado a la Guerra del Pacífico, con fotografías, uniformes y otros objetos de la época.

Although you can go by car, the best way to climb the Morro is by foot along the path that starts where Colon Street ends. This is one of the city’s historical monuments, and no visit to Arica would be complete without taking in its 130m lookout point, which provides the best panoramic views of the city. Look out for the excellent War of the Pacific museum, which has photographs, uniforms and other artefacts from the period.

EL CENTRO A PIE El denominado “Walking Tour Arica” es una ruta guiada a pie gratuita que pasa por 11 hitos turísticos de la ciudad, enfocándose en los edificios históricos y patrimoniales. Entre ellos, la Catedral de San Marcos, la Casa Bolognesi –que remite a la historia de la Guerra del Pacífico–, el Museo Arqueológico Colón 10 –donde se exhiben restos de momias Chinchorro- y la ex Aduana.

The Walking Tour of Arica is a free guided walk around the 11 tourist highlights of the city, taking in buildings with different historical heritage. Among them are the San Marcos cathedral, Casa Bolognesi (that dates back to the War of the Pacific), the Colon 10 Archaeological Museum (where you can see the remains of Chinchorro mummies) and the old customs office. You can sign up at the Sernatur tourist information office at San Marcos 101.

La ruta de los Chinchorros Esta nueva aventura en kayak permite explorar Arica de una forma diferente, esta vez desde el mar. Se trata de un circuito de tres horas ida y vuelta que comienza en la playa La Capilla, 10 kilómetros al sur del Morro, donde esperan los kayaks de mar. MUSEO ARQUEOLÓGICO SAN MIGUEL DE AZAPA. En el Valle de Azapa, ubicado a 20 minutos del centro de Arica, funciona el Museo Arqueológico San Miguel de Azapa, donde se exhiben vestigios de la cultura Chinchorro, que se desarrolló en la zona entre los años 7.020 y 1.500 a.C. Domando olas

La ex isla Alacrán es, en rigor, una península artificial frente al Morro de Arica. Allí se forman El Buey y El Gringo, dos de las olas más famosas de Chile, donde llegan surfistas de todo del planeta, sobre todo en verano.

Verlos es inspirador. Si se anima, puede tomar clases con una experta como la ariqueña Sofía Bórquez, campeona latinoamericana de surf que dicta sus clases en aguas más tranquilas, como la playa de Chinchorro.

It’s perfect for a day trip, and besides seeing the town you can ask for the valley’s famous Pintatani wine, a homemade liquor made with age-old methods, or how to get to the Ofragía petroglyphs that are about 6km from the town.

Famosas por su tamaño, su color violeta y su particular sabor, las aceitunas del Valle de Azapa son un producto único. Allí funciona la olivícola Bezma, del croata Tomislav Bezmalinovic, que además de aceitunas produce aceites de oliva de distintos sabores, pasta de aceitunas y aceto balsámico. La casa matriz está en la ruta A-133, en el kilómetro 5,7 del Valle de Azapa, pero también los productos se pueden encontrar en distintos puestos del Terminal Asoagro. QUEBRADA DE CAMARONES A poco más de 100 kilómetros al sur de Arica, este es uno de los lugares más importantes para la arqueología en Chile. Por eso, cada cierto tiempo aquí aparecen momias y otros vestigios de la cultura Chinchorro. Más allá de su valor patrimonial, el lugar es de una belleza natural única. Lo ideal es visitar la zona acompañado de un guía experto como Julio Grez, de Turismo Belén (ver recuadro “Pasear”). / A little over 100km south of Arica, this is one of the most important archaeological sites in Chile. Every so often a mummy will be found here, which are relics of the ancient Chinchorro culture. Beyond its value to the country’s heritage, the area has outstanding natural beauty. Ideally, you should visit the area with an expert guide such as Julio Grez of Turismo Belén (see the Tours section).

PUTRE.

Aunque está casi a poco más de dos horas de Arica, vaya que vale la pena llegar –aunque sea por el día– a Putre: uno de los pueblo más bonitos del norte y, para muchos, el futuro San Pedro de Atacama. Ubicado a 3.500 metros de altura –¡ojo con la puna!–, Putre es la puerta de entrada al altiplano, ideal para visitar sitios como el lago Chungará, el salar de Surire o el bucólico pueblito de Parinacota.

Although Putre is just over two hours from Arica, it is well worth the trip (even if only for the day): it is one of the prettiest towns in the north and, for many, is the next San Pedro de Atacama.

Located around 3,500m above sea level (careful with altitude sickness!), Putre is the gateway to the Andean altiplano, and is the perfect stop off for a visit to Lake Chungará, the Surire salt flats or the bucolic town of Parinacota.

Growing by the day, Iquique’s range of tourist activities and culinary delights now includes its excellent beaches and archaeological heritage and, of course, picturesque nitrate mines.

HUMBERSTONE Y SANTA LAURA Son las oficinas salitreras más turísticas de Chile. Muy bien conservadas, se encuentran a poco más de media hora del centro de la ciudad, saliendo por la carretera A-16. Santa Laura funcionó entre 1872 y 1860 y destaca su antigua Casa de Administración. These are the most visited nitrate mining ghost towns in Chile. They are very well preserved, and just over half an hour from the city centre, along the A-16 Highway. Santa Laura worked between 1872 and 1860, and the main highlight here is the central administration office.

Humberstone, meanwhile, was a thriving town founded in 1862 and had its own school, theatre, grocer’s, hospital, smelter and armoury. A must-see.

GEOGLIFOS DE PINTADOS. Cerrados tras el último gran temblor que afectó a la zona a comienzos de año, hoy ya es posible visitar los Geoglifos de Pintados. Ubicados a 94 kilómetros de Iquique, saliendo por la ruta 16 y tomando la 5 Norte hacia la Pampa del Tamarugal, se trata de unos 400 dibujos –flechas, llamas, objetos y figuras antropomorfas– hechos en las laderas de los cerros por los pueblos indígenas que habitaron la región.

The Atacama Desert is the world’s driest, and the climate and silence here make it an attractive destination on its own. It is difficult to imagine, then, that for more than a century it has been the setting for so many life stories, many of which revolve around saltpeter: a much sought-after mineral that became legendary thanks to the Pampas culture that sprang up in the region. Today, cooperation between SQM and the Huanchaca Ruins Foundation, through a project sponsored by the government’s Cultural Donations programme, has brought about the “The Industrial Life of Saltpeter; inheriting culture and development” exhibit, that offers visitors the chance to uncover this story. TOCONCE HOT SPRINGS. Another new tourist attraction for the region, this recently inaugurated complex of thermal springs in Toconce, a town located some 130km from Calama, famous for its terraced farming methods that have earned it the nickname of “Chile’s little Machu Picchu”.

Close to the Tatio geothermal area, the complex is managed by the town’s Atacama community (there are only 50 inhabitants), and has three pools with hot water, campsites and footpaths.

Along the same street, among shops and handicraft stalls, head to the greenery of Plaza 23 de Mayo, the square considered the city’s meeting point, and stick your head around the door of the San Juan Bautista Cathedral that was built in 1906.

A poco menos de una hora desde Calama, vale la pena subir hasta los 3.305 metros de altitud donde se encuentra Caspana, uno de los pueblos más bonitos de todo el desierto. Con alrededor de 400 habitantes, aquí podrá conocer a los artesanos expertos en trabajos con cactus y lana de alpaca y a los agricultores responsables de las verdes terrazas con hortalizas. Ojo con su iglesia de San Lucas, Monumento Nacional construido a mediados del siglo 17 en la cima de un peñón. / A little over an hour from Calama, it’s worth the journey up 3,305m to the town of Caspana, one of the most beautiful in the desert. Among the 400 inhabitants, you’ll find expert artisans working with cactus and alpaca wool, and the farmers who are responsible for the area’s green terraces. Look out for the San Lucas church, a National Monument built midway through the 17th century at the top of a desert crag.

A unos 50 kilómetros de Calama por el camino que va a San Pedro, en la cuenca del río Grande, se encuentra el llamado Valle del Arcoíris. Famoso por su gran variedad de tonalidades producto de las diferentes concentraciones de arcilla, sales y minerales, se trata de una visita obligada para los fanáticos de la fotografía. Cerca de allí están los petroglifos de Yerba Buena: una notable colección de arte rupestre pintado sobre las rocas. El camino a este lugar está completamente asfaltado. / Some 50km from Calama along the road to San Pedro, in the Rio Grande basin, there is a valley known as the Valley of the Rainbow.

It’s famous for its varied and colourful patterns due to the different concentrations of clay, salts and minerals in the rock, and is a must-see for budding photographers. Close by are the Yerba Buena petroglyphs: a remarkable collection of rock art. The road here is paved all the way.

De niño iba con primos y hermanos.

No tiene exactamente una balsa cerca de la orilla, sino una construcción de piedra y cemento, y uno puede llegar nadando fácilmente hasta ahí.

• Which is your favourite beach in Arica? › La Lisera. It’s popular, safe and very good for swimming. As a child, I used to go there with my cousins and brothers.

It doesn’t have a life-saving raft near the shore, but a stone and cement structure, which is within easy reach.

• ¿Qué hacer una noche de fin de semana en la ciudad? › Recomiendo el casino, que lleva mucho tiempo, o discotecas como la Soho y el Drake. En el balneario Chinchorro también hay pubs, una gelatería que es un verdadero clásico: Dimango. Pero lo mejor que ofrece Arica es que tiene locales de comida abiertos hasta muy tarde.

• Which is the best cultural attraction in Arica? › The Morro de Arica is a must; it has a very good museum and offers an impressive view. Another must is a trip inland, to Lake Chungará, Parinacota, which is really beautiful.

The view of the lake is spectacular with the volcano as a backdrop.

• What is your favourite dish and drink in Arica and its surroundings? › My favourite dish is the picante, which is something like a very spicy stew, and can be made with chicken, tripe or shellfish. It also has semi-mashed potatoes in it, and of course, it is hot and spicy, which gives it its name. It is served with rice, which is a staple in the north of Chile. As for drinks, I like “Carnaval” which is a soda pop with different flavours, something like Inca Kola, but made in Arica.

de La Florida y de las inmediaciones del neurálgico sector del paradero 14 donde creció y el relato parece la descripción de un paisaje campesino: “mi calle de tierra, el panadero que pasaba en carreta todas las tardes sagradamente; cada verano subir a los árboles para sacar los damascos con que luego mi nona y mi mamá harían mermelada”. Tonka Tomicic tiene esa cualidad. A pesar de su desbordante belleza que la convirtió en Miss Mundo Chile en 1995 y en profesional de las pasarelas tras ser descubierta a los 14 años mientras veraneaba, sumado al ostracismo en torno a su vida privada e incluso la distancia que puede provocar su nombre de origen croata, se ha convertido en una figura familiar y recurrente en la pantalla abierta desde 2002, cuando debutó en pequeños espacios dedicados a la publicidad y la moda.

Despite her stunning beauty that made her Miss Mundo Chile 1995 and a professional catwalk model after being discovered at the age of 14 whilst on holiday, the fact that her private life is very private, and even the distance generated by her Croatian name, she has still managed to become a family favourite and small screen icon since 2002 when she began to appear on short adverts and fashion spots.

“Bienvenidos”, the daytime show she co-hosts with Martín Cárcamo on Canal 13, is shown Monday to Friday from 8 a.m. until the afternoon, which is an epic undertaking for this kind of show. Although in 2014 Mega dominated the genre, the presenter stresses that her team made the moves that finally overcame "Buenos días a todos”, that had seemed unbeatable for years.

“Competition in daytime TV has always been tough and tasty. Since “Bienvenidos” entered the fray, we have upset the scheduling balance.

We won first place in the ratings in 2013, beating the programme that had been No.1 for twenty years”.

Tácitamente, Tonka tampoco le da particular crédito al éxito de Mucho gusto de Mega, la estación que en 2014 gozó del favoritismo del público gracias al fenómeno de las teleseries turcas.

“Todos los programas en cada horario se enfrentaron a un fenómeno que tiñó la parrilla de un canal completo. Frente a ese panorama, estamos contentos como equipo con lo que seguimos haciendo y cómo nos reinventamos diariamente. El rating es muy importante, pero hay otra sintonía que no se mide con cifras: la de los lazos. La forma en que penetran los contenidos que entregas, la calidad de ese material y cómo se enlaza en un concepto sencillo, pero que para mí es muy importante, la compañía. Eso es más potente que un punto más o uno menos de rating”.

—Por estar diariamente varias horas al aire en un espacio nutrido de un público popular, ¿cuál es su impresión de la chilena y el chileno promedio? ¿Estamos contentos, enojados, satisfechos?

—El programa se nutre de todos los chilenos. No creo que sea sano y positivo abordar sólo a un tipo de público. Los matinales son un rotativo y caben distintos segmentos. Tratamos de abordar

I don’t think it is healthy to focus on just one section of the audience. The content rotates and there is room for many different segments. We try to talk about things that are interesting for the majority. But the key is in how to cover those topics to draw in as many people as possible.

—Would you like to present the Viña Festival again, or was once enough? What is it like to be on stage at the Quinta Vergara?

—It’s a great experience, especially because I was able to do it when Canal 13 and TVN were in charge.

It was great; I was full of adrenaline, and as I am a very demanding woman, it was a platform for me to grow as a professional almost immeasurably.

Just as Cecilia Bolocco became known as a designer for a department store, in 2015 Tonka Tomicic will roll out her first clothing line in a similar move. “With París department store, I am going to launch a women’s autumn-winter collection. It was an invitation that had me hooked

de hacerlo cuando Canal 13 y TVN lo tenían a cargo. Fue genial, lleno de adrenalina, y como soy muy exigente conmigo, fue una plataforma de crecimiento profesional inconmensurable.

Así como Cecilia Bolocco asoció su nombre como diseñadora para una multitienda, en 2015 Tonka Tomicic debutará en una jugada similar. “Lanzaremos junto a París una línea de ropa femenina otoño-invierno. Es una invitación que me encantó desde el primer momento, algo nuevo y por lo mismo muy seductor. No puedo revelar muchos detalles, sí adelantar que será para todas. Las prendas me encantan: ¡usaría cada una! Nos veremos femeninas y nos sentarán de maravilla”.

—¿Existe un sello en el vestir de la mujer chilena? ¿Qué le falta? ¿Qué le sobra?

—Creo que buscamos comodidad, moda y buen calce. La moda nos importa y queremos vernos con prendas que se están usando. También hemos comprendido que no todo lo que está súper actual es lo que mejor nos queda.

Buscamos ese equilibrio que nos hace sentir seguras y atractivas.

Con 38 años y la belleza intacta, Tonka Tomicic siente que la cercanía del umbral de las cuatro décadas, al menos en este país, arrastra connotaciones poco favorables.

“En Chile ocurre una obsesión por el tema de la edad, no sé por qué.

Cada decenio que uno suma, hay gente que le pone una carga negativa, inexistente para mí. Eso pasa

por querer encasillar a las personas: las treintonas, las cuarentonas, las cincuentonas, suma y sigue. No me gustan las clasificaciones, especialmente las que nos tocan a las mujeres. Nos coartan cada vez más”.

—Fuera del mundo profesional, ¿qué hace en sus tiempos de ocio? ¿Hogareña? ¿Sale?

—Soy casera 100%. Disfruto del jardín, sobre todo en esta época.

Me gusta pasar mi tiempo en la casa, lo que amo está ahí. Lo más importante en mi vida pasa entre esas cuatro paredes y me encanta que sea así.

—Está recientemente casada tras años de convivencia, ¿siente que cambió en algo la cotidianidad de pareja, o la vida sigue igual?

—¡Fantástico! Lo recomiendo absolutamente. ¡El matrimonio es lo mejor! El concubinato puede ser atractivo por un tiempo, pero en el matrimonio hay algo único, especial. Me encanta. S

about fashion and we want to wear clothes that are currently trending.

We have also understood that not all the hottest new things are the best things for us. We look for the balance between feeling confident and attractive.

At 38, with her beauty intact, Tonka Tomicic feels that closing in on 40, at least in Chile, brings some unwanted baggage with it. “In Chile we have an unhealthy obsession with age, I don’t know why. Every ten years you add on, there are people taking a pessimistic view on things, but I don’t see it. It happens because people want to classify you: the thirty-somethings, forty-somethings, fifty-somethings, etc. I don’t like classifications, especially those directed at women. We become more and more restricted".

—Away from your professional life, what do you do in your free time? Stay at home? Go out?

—I am 100% a stay-at-home girl. I love the garden, especially at this time of year. I love to spend time in my house, everything I love is there.

The most important things in my life happen between those four walls, and I love that.

—You have just got married after living with your recent husband for years, did anything change between you, or are things as they always have been?

—It is fantastic! I´d recommend it for sure. Marriage is just the best! Living together is great for a time, but there is something unique and special about marriage. I just love it. S

La receta consiste en verter 30 ml de Campari y Vermut dulce en un vaso con hielo y remover. Agregar agua gasificada, exprimir por el borde del vaso la cáscara del limón y decorar con media rodaja de naranja. Servir en vaso bajo y disfrutar con un plato de prosciutto.

NEGRONI / ITALIA

Uno de los cócteles más equilibrados y transversales de la historia. Se desconoce cómo el Negroni acabó preparándose con ginebra y quién fue el responsable del cambio y creó un cóctel que ofrece una capa final de complejidad a la mezcla de Campari y vermut. Solo debe colocar en un vaso bajo 30 ml de ginebra, Campari, vermut dulce y unos cubitos de hielo, revolver y decorar con una rodaja de naranja.

Acompañar de embutidos como prosciutto, mortadela y trozos de parmesano.

ADONIS / ESTADOS UNIDOS

Este cóctel fue creado en 1880 para celebrar el éxito de un musical de Broadway y aún sigue tan vigente como contemporáneo. Servir en una copa de Martini 30 ml de fino jerez, 3 cucharaditas de vermut dulce y vermut seco, dos chorritos de bitter de naranja y hielo. Originally known as the Milano-Torino for its mix of Campari from Milan and vermouth from Turin, but thanks to its popularity with American tourists, this new name soon stuck. The recipe consists of 30 ml of Campari and sweet vermouth mixed in a glass with ice and stirred.

Add sparkling water, and squeeze the rind of a lemon around the edge of the glass; finally, decorate with a slice of orange. Serve in a lowball glass and enjoy with a platter of prosciutto.

DIRTY MARTINI / UNITED STATES

The Martini’s history is an epic one, and perhaps the most debated fable in cocktail making. The drink’s composition is perfect, striking a unique balance between the botanical ingredients, their acidity and the fascinating herbal flavour. Martini is based on gin and vermouth, but it was the “dirty” variation (in the 1930s) made famous by President Franklin D. Roosevelt that really catapulted it to success, with a teaspoon of olive brine that adds depth and a truly exceptional flavour. To be drunk as an aperitif or alongside fish and shellfish.

NEGRONI / ITALY Provence is dry, perfect for the Dry Martini, then there’s Italian vermouth, the best red vermouth around with its delightful bitter orange flavour, and Savoy vermouth, which is delicate and ideal for variations on the Martini. Here are five of the most famous vermouth-based cocktails, complete with instructions for preparation and ideas for food pairing.

MARTÍNEZ / UNITED STATES

This is considered the predecessor to the Martini, and there are a number of theories regarding the name. It’s a combination of gin, sweet vermouth and a squirt of angostura bitters, curacao and syrup. These days the Martínez is continually evolving and changing, but essentially it’s a bitter-sweet balance that both refreshes you and helps build your appetite.

One of the most balanced and universally appreciated cocktails in history. It is not known why the Negroni ended up being made with gin (instead of soda water like the original Americano) and who was the person responsible for the change, adding a final layer of complexity to the mixture of Campari and vermouth. Just add 30ml of gin, Campari and sweet vermouth to a lowball glass with ice; stir and decorate with a slice of orange.

It’s the perfect partner for cured meats like prosciutto and mortadella, and for chunks of parmesan cheese.

ADONIS / UNITED STATES

This cocktail was created in 1880 to celebrate the success of a Broadway musical and is still popular in today’s cocktail bars. Serve 30ml of fine sherry, 3 teaspoons of sweet vermouth and dry vermouth, two squirts of orange bitters and ice in a Martini glass. Stir everything and serve cold alongside anchovy-stuffed olives.
