Caídos del cielo Si este lugar fuera escenario de una película de ciencia ficción, podríamos imaginarnos una lluvia de enormes piedras puntiagudas cayendo del cielo y enterrándose en medio del desierto. Así son los llamados Monjes de la Pacana, unas formaciones rocosas de unos 20 metros de alto que parecen haber sido clavadas por alguna fuerza sobrehumana. Pero resulta que no: su particular fisonomía, como la de una estaca –o un moai– fue tallada por el viento, cuyas ráfagas aquí suelen ser muy poderosas. A 4.000 metros de altura, el sitio está a unos

150 kilómetros de San Pedro de Atacama, por el camino hacia el paso internacional Jama, muy cerca de otro imponente paraje natural: el salar de Tara. Diversas agencias llevan hasta acá desde San Pedro, como Turismo Layana. Más información en turismolayana.cl

La tierra de los cactus gigantes Muy cerca de Colchane, en la frontera con Bolivia, el remoto sector de Ancovinto es otro de los lugares extraños de Chile. Allí, sobre una ladera del cerro se encuentra un auténtico bosque de cactus gigantes,

de la especie Echinopsis atacamensis. Lo de gigantes no es un decir: algunos miden más de tres metros de altura. Ahora bien, si Ancovinto le resulta muy remoto, en el pueblo de Cariquima, al que se accede por la Ruta Internacional hacia Colchane y Bolivia, hay algunos ejemplares que adornan las calles. Fallen from the sky If this place were used in a sci-fi movie, we might imagine a storm of giant pointed rocks plummeting to the ground and embedding themselves in the desert floor. These are the socalled Monjes de la Pacana, a formation of rocks measuring 20 metres in height that seem to have been driven into the ground with super-human strength. But they weren’t: Their unique features, reminiscent of stacks -or even Moai statues- were carved out by the wind, whose gusts can be very strong in these parts. Standing at 4,000 metres above sea level, the site is located some 150km from San Pedro de

Atacama along the road towards the Jama border crossing, close to another imposing natural feature: the Tara salt flat. Several agencies run trips out from San Pedro, such as Turismo Layana. For more information, visit turismolayana.cl

Land of the giant cacti

Very close to Colchane, on the border with Bolivia, the remote area of Ancovinto is another of the strangest spots in Chile. There, on the sweeping hillsides, you can see a veritable forest of giant cacti, from the species Echinopsis atacamensis. And giant isn’t just in a

name: some of them measure more than three metres in height. Now, if Ancovinto is too remote, there are examples adorning the streets in Cariquima, a town that can be reached along the Ruta Internacional towards Colchane and Bolivia. Scientific data suggests that this crater, located 200km to the south east of Antofagasta and 3,000 metres above sea level, in the foothills of the Ataca-

sureste de Antofagasta y a 3.000 metros de altitud, en la precordillera al sur del Salar de Atacama, representa la única estructura de impacto de un meteorito confirmada en el territorio chileno y una de las pocas reconocidas en Sudamérica. Se trata de un agujero de más de 350 metros de diámetro y 34 de profundidad, cuya datación se estima en, mínimo, 100 mil años. Este cráter es un lugar fuera del circuito turístico general de San Pedro, pero hay algunas empresas que lo ofrecen como parte de sus recorridos, como On Safari Atacama, que organiza a pedido viajes en moto a este y otros lugares de la región. Norte psicodélico

El que no crea que en el norte los cerros son multicolores, debe ir a sectores como Suriplaza, un remoto lugar, rodeado de volcanes de 5 mil metros de altura, donde se puede vivir una experiencia que algunos expertos de la zona describen como psicodélica. Por lo general, Suriplaza es parte de los recorridos en auto que exploran los caminos interiores entre Putre y Visviri, es decir, por donde no anda prácticamente nadie. El sitio apenas sale en los mapas, por eso vaya con guías.

Jeepear como en Mad Max

Otro lugar cinematográfico, donde sin problemas podrían haberse fi lmado las escenas futuristas de la película Mad Max. Consideradas las dunas más altas de Chile, con casi 1.700 metros, este lugar ha sido

varias veces una de las escalas del rally Dakar, porque es ideal para jeepear (también se hace sandboard).

La duna está cerca de Copiapó, por el camino que va hacia la mina Galleguillos, aunque para encontrarla se recomienda ir con alguien que conozca y que tenga buen manejo de navegación con GPS, sobre todo si se pretende desafiarla en vehículo. Lo ideal, además, es ir al atardecer, cuando por la luz del sol se logran las mejores fotografías. Ercio Mettifogo, de Puna de Atacama, es experto en recorridos por Copiapó y la región. Psychedelic north

Whoever doesn’t believe that there are multi-coloured hills in the north should head out to Suriplaza. At this remote location, surrounded by 5,000 metre tall volcanoes, you can experience something that experts in the area have described as psychedelic. In general, Suriplaza is part of the car tours that explore the interior trails between Putre and Visviri, or in other words, where there is basically no one else about.

The site is barely recorded on maps, so you have to go with a guide. The

Mad Max-style Jeeping

This is another film set landscape which could easily have been taken from the dystopian future of the Mad Max universe. Considered some of the tallest in Chile, at almost 1,700m tall,

the Medanoso Dunes have frequently been included in the climbing stages of the Dakar Rally and make for some perfect jeep (or sandboard) terrain.

The dune is close to Copiapó, along the road out to the Galleguillos mine, although to find it you should probably go with a guide who knows the area and has a good GPS system, especially if you want to drive there. Ideally, besides, you should go at dusk, when the low sunlight lets you capture the best photos. Ercio Mettifogo, from Puna de Atacama, is an expert in tours in and around Copiapó. SAN MIGUEL DE AZAPA MUSEUM. Just 20 minutes from the centre of Arica, at the heart of the Azapa Valley, stands the San Miguel de Azapa Museum, one of the best in Chile for archaeology buffs.

There are vestiges of the Chinchorro culture on show here, which was the dominant civilisation in the region between 7,020 and 1,500 BC. Under the care of the Universidad de Tarapacá, the museum has a valuable collection of Andean fabrics.

EL OTRO GRAN CAÑÓN Hace tiempo se viene diciendo que Putre tiene todo para convertirse en algo así como “un nuevo San Pedro de Atacama”.

Pues bien, esto se justifica con lugares como la Quebrada de Allane, un enorme cañón situado a dos horas en auto de Putre que recuerda en cierto modo al Gran Cañón del Colorado, por sus colores terracota e infi nita soledad. Desde Putre puede ir con el hotel Terrace Lodge (terraceLodge.com). / THE OTHER GRAND CANYON. For some time now, people have been saying that Putre has everything it needs to become the “next San Pedro de Atacama”. And you can understand why when you see places like the Allane Canyon, a huge gorge located some 2 hours by car from Putre, which is reminiscent of the Grand Canyon of the Colorado River thanks to its terracotta tones and infinite sunshine. HUMEDAL DE LLUTA Con más de 140 especies de aves –la mayoría de ellas migratorias–, el humedal de Lluta es uno de los mejores panoramas de la ciudad para los amantes de la naturaleza. El salar de Llamara es un auténtico tesoro prehistórico. This museum has exhibits highlighting the history and the flora and fauna of the region. If you want to take a closer look at the singular rock formation, there is a path that goes down to the beach.

La laguna Inca Coya –también conocida como laguna de Chiu Chiu, debido a su proximidad con el poblado– es uno de los rincones más hermosos del Desierto de Atacama.

De aguas saladas, es hábitat de una variada fauna y flora y, además, cuna de mitos como que no tiene fondo y la famosa leyenda de la princesa inca Colque-Coillur, quien, tras sufrir una desilusión amorosa, se sumergió en sus aguas junto a su hijo.

INCA COYA LAGOON. Inca Coya Lagoon, also known as Chiu Chiu Lagoon, as it is close to the town of the same name, is one of the most beautiful corners of the Atacama Desert. It is a salt-water lake that is home to a variety of flora and fauna, and is also the origin of several myths, such as the idea that it has no bottom, and the famous legend of the Inca Princess, Colque-Coillur, who suffered a broken heart and drowned herself in the water together with her son.

Erigida en 1906 por el obispo de Antofagasta Monseñor Luis Silva Lezaeta, la Catedral San Juan Bautista de Calama es uno de los principales hitos patrimoniales de una ciudad donde la mayoría de los vestigios del pasado parecen haber sido olvidados. Está en pleno centro y tiene entre sus detalles que la techumbre fue recubierta en el año 2000 con planchas de cobre extraído de la mina de Chuquicamata. Erected in 1906 by the bishop of Antofagasta Monseñor Luis Silva Lezaeta, Calama’s San Juan Bautista Cathedral is one of the main heritage landmarks in a city where the majority of the remnants of past times have long been forgotten. The building stands at the heart of the town, and has among its details a roof that was renovated in 2000 with panels made of copper taken from the Chuquicamata mine. The restoration work was carried out by architect Amaya Irarrázaval Zegers.

Desde marzo del año pasado, el Centro de Operaciones del observatorio ALMA (almaobservatory.org) abrió sus puertas al público. Es decir, ahora se puede ver en vivo y en directo cómo funciona uno de los observatorios científicos más importantes del mundo. Las visitas públicas se realizan cada sábado y domingo, previa inscripción obligatoria en la página web del observatorio. El traslado se hace desde San Pedro de Atacama a bordo de un bus de ALMA en forma gratuita para quienes se les haya confirmado su inscripción. / WATCHING THE SKIES. Since last March, the ALMA Observatory’s (almaobservatory.org) operation centre has been open to the public. That is to say, you can see in real time how a real scientific observatory works, and one of the most important ones in the world at that. Public tours are taken every Saturday and Sunday, but you have to sign up beforehand on the observatory’s website. Free transfers run from San Pedro de Atacama on an ALMA bus for all tourists who confirm their interest.

Paraíso de la escalada

En el norte de Chile existe un paraíso de la escalada deportiva y ese lugar es la Quebrada Nacimiento, en Socaire, pueblo ubicado a unas dos horas en auto de Calama.

Hay más de 100 rutas para todos los niveles y casi todas están equipadas. La recomendación es ir bien preparado para el clima pues Socaire se encuentra a 3.600 metros de altitud. The north of Chile is a paradise for recreational climbers and the best spot is Quebrada Nacimiento, in Socaire, a town about a two-hour drive from Calama. en la región de Arica? › Me gusta la isla El alacrán, que igual es una playa, un lugar para ir a bañarse. Prácticamente me crié ahí y se hace mucho surf. Pero si me preguntas por balnearios para bañarse, tengo el corazón dividido entre Chinchorro y El Laucho.

• What is your favourite beach

in and around Arica? › I like El Alacrán Island, which is just like a beach, where you can go and swim. I was pretty much raised there, and people go there to surf a lot. But if you really want a swimming beach, I’m split between Chinchorro and El Laucho.

• ¿Qué recomiendas hacer una noche de viernes en Arica? › Ir a acampar a la playa, es algo que se puede hacer en cualquier época del año. También hay un local nuevo que se llama Mojito, se hacen unas fiestas bien buenas los viernes y es donde toco.

• What do you recommend

for a Friday night in Arica? › Go camping on the beach; it’s something you can do pretty much any time of the year. There’s also a place called Mojito, where they put on some awesome parties on Fridays and I play there.

• ¿Cuales son tus lugares favoritos hacia el interior de la región? › Definitivamente Putre, aunque hay otras localidades como Belén, sitios más chicos.

spots inland from Iquique? › Definitely Putre, although there are other places like Belén, which are smaller. There are schools, tours to see different kinds of building, little churches, stuff like that. It’s pretty.

• ¿Qué recomendarías como panorama cultural en Arica? › El carnaval “Con la fuerza del sol”, es impresionantemente lindo.

Se hace en el centro de Arica, desfilan por dos días. Son varias comparsas que están 24 horas dándole. Es increíble, hay banda de bronces, bailarines, trajes.

• What would you recommend

in terms of culture in Arica? › Carnival “Con la fuerza del sol” (With the Power of the Sun), is really something special. It takes place in the city centre, and there are parades every day. There are several dance troupes going at it 24 hours a day. It’s amazing, there is a brass band, dancers, suits.

• ¿Dónde crees que está la mejor música en vivo en Arica? ¿A qué artistas hay que ponerle atención? › Hay unos cabros nuevos que se llaman Macondo que hacen una mezcla de música andina y electrónica actual tipo Major Lazer. Es quizá un poco frívolo, pero me ha llamado la atención.

Lamentablemente la pachanga se ha comido la música en vivo en Arica.

• Where do you think is the best place to see live music in Arica? Who should we look out for? › There’s a new group out called Macondo who do a mix of Andean music and electronic stuff, like Major Lazer. Perhaps it’s a bit superficial, but it caught my attention. Unfortunately, “pachanga” (a kind of Cumbia) has taken over live music in Arica.

Jugo de guayaba. Y de plato soy bien de pescado y mariscos. Hoy todo se peruanizó por allá. Bueno, siempre fue peruano en realidad en todo caso, pero ahora como que no encuentras muchas cosas “nativas”.

The Chilean singer-songwriter is currently experiencing the most popularity she has ever had. “Otra era”, her latest release, got her a first Latin Grammy nomination and she stole the show at this year’s Viña del Mar Festival.

ací con una fijación por la música”. Eso dice Javiera Mena, que desde el 3 de junio de 1983 que trae esa adherencia a las melodías, a los sonidos, a los ritmos. Hoy, 32 años después, eso que ella llama “fijación”, es su principal ocupación. Es una cantante –compositora y autora–, consolidada, con 10 años de trayectoria profesional, tres discos de estudio en su catálogo y una proyección aún más sugerente.

“Mi último disco es el más maduro y los que vengan después serán más adultos aún. Pero mi idea es seguir adelante, haciendo discos y demorándome lo que me tenga que demorar para que sean discos buenos, que es lo que realmente me importa”, dice hoy.

“I was born with a fascination for music”. So says Javiera Mena, who since 3rd June, 1983, has been transfixed by melodies, sounds and rhythms. Today, at 32, what she calls a “fascination”, is now her job. She's a singer –composer and songwriter-, established, with a 10-year career behind her, three studio albums in her back catalogue and even more success on the horizon.

“My latest album is my most mature, and the ones that come next will be even more grown up. But my plan is to keep going forward, making albums and taking the time I need to make good ones, which is what really matters", she says.

“Otra era”, her latest album and the third of her career, has taken her to another level in what is today quite a fickle music industry, where projects such as hers are becoming more and

“Otra era”, su nueva producción y la tercera de su carrera, la ha elevado un peldaño más en la cambiante industria musical actual, donde proyectos como el suyo cobran a cada momento mayor poder de seducción. Y aunque la chilena sigue aún trabajando como artista independiente, sus constantes coqueteos con la masividad parecen señalar que su carrera no podría continuar en otra ruta que no fuera la del pop. Su estilo es electrónico y también indie, pero pop al fin y al cabo.

“Cada vez se abren más espacios en Latinoamérica para la música independiente. Por el momento estoy bien trabajando así, aunque también he pensado en otras formas…”, dice en Santiago, su ciudad natal, donde se refugió por una temporada para preparar su debut en el Festival de Viña del Mar. Su participación en el evento fue un golpe para su carrera, que vino acompañado, hace unos meses, de su primera nominación a los Grammy Latinos, donde compitió en la categoría Mejor Canción Alternativa. Aunque no ganó, su visita a la ceremonia en Las Vegas le mostró un panorama más amplio sobre el futuro.

“Estuve conversando con gente que trabaja en nuevas maneras de promoción, y aunque creo que hoy me

acomoda ser independiente, no sé lo que pueda pasar en el futuro, porque también encuentro que las compañías grandes trabajan de buena manera, y hay muchos artistas que admiro que han firmado con ellos”, afirma.

–¿Cómo te impactó la nominación al Grammy Latino y la invitación al Festival de Viña del Mar? –Son dos marcas power que aparecieron en el mismo momento y me encanta estar ahí. Fue fruto de mucho esfuerzo, de varios años. Después de mucho plantar, vino una cosecha que tiene que ver con esta cosa mainstream que tiene el Festival, más televisiva, que abarca medios más tradicionales de la industria. Y llegar así, a mi manera, fue algo muy bonito y preciado.

–Tu manera siempre ha sido trabajar de forma independiente. ¿Como lo ves hoy?

–Como todo en la vida tiene sus pros y sus contras. Los pros son que tienes el 100 por ciento del control, tienes libertad en las decisiones artísticas. En mi caso, soy totalmente independiente, mi estructura son pocas personas que me rodean y eso me da mucha libertad. Los contras es que todos los espacios están ocupados por la industria

more seductive to the public. And although the Chilean is still working as an independent artist, her constant flirtation with mass appeal seems to imply that her only destiny is down the path of pop. Her style is electronic, with indie influences, but when all's said and done, it’s still pop.

“There are more and more opportunities in Latin America for independent music. Right now I am fine working like this, although I have thought about other things…”, she says in Santiago, her hometown, where she holed up to prepare for her big debut at the Viña del Mar Festival. Her participation was a big boost for her career, and came just after, a few months back, her first nomination at the Latin Grammys, in

decisions. In my case, I am totally independent, I don't have many people around me, and that means I am free to do as I please. The cons are that the important opportunities are taken by the industry powerhouses, who are only interested in getting the highest number of listeners. But I think that working independently, despite all that, has lots of benefits.

“I was talking with people who work with new publicity media, and although I think right now I am best off as an independent artist, I don't know what will happen in the future, because I also think that the big companies work well, and there are loads of artists I admire signed to big labels", she says.

–How did you feel about your Latin Grammy nomination and the invitation to play Viña del Mar? –Those are two really massive things that came along together, and I love it. It came after a lot of hard work, over several years. After sowing a lot of seeds, I was able to reap a decent harvest in the mainstream exposure that comes with the Festival, the TV time, and publicity in the traditional industry-related media. And to get there, my way, was really great and special for me.

–Your way has always been to work independently. How do you see that today?

–Like everything in life it has its pros and cons. The pros are that you have 100% control; you are free to make artistic

“I am in Spain most of the time. I recorded my last two videos there, because I love it. I love the cultural exchange you get there. In general, I feel really loved and valued outside of Chile… People like the fact that I sing in Spanish and come from Chile, and for the same reason they go to my concerts and I get invited to festivals”, she says.

“Otra era”, her third album, launched at the back end of October 2014, has made an impact. The first single, “Espada”, got plenty of airtime on Chilean radio and climbed to 24 on the local charts. The second single, “Joya” (Jewell), won a nomination at the MTV Millennial Awards 2015 for its video. They were followed in order by “Otra era”, the catchy “Que me tome la noche”, and most recently “Sincoria, pegaso", which features Chilean musicians Gepe and Andrés Nusser (Astro).

Producer Cristián Heyne came back to work with the singer-songwriter on “Otra era”, just as he had on her previous two albums. It's a partnership that continues to bear fruit. “Besides having a long relationship with Cristián, this time we were able to experience some aspects of music in a more professional way, and with more time than we had before.

His way of opening up the sound is really amazing", she says.

La independencia definitivamente le sienta bien a la cantautora Javiera Mena. Su trabajo ha gozado de una cálida recepción no solo en su país natal. Con México y España como sus principales mercados en el extranjero, la artista ha conformado un triángulo en el que se mueve constantemente, viviendo un estilo nómada que le acomoda.

“Donde permanezco más tiempo es en España. Allí he hecho mis videoclips más recientes, porque es un lugar donde me encanta estar. Me gusta ese intercambio cultural que se produce. En general, me siento super querida y valorada fuera de Chile… Al público le

encanta que yo cante en español y que venga de Chile, y por eso mismo van a mis conciertos y me piden en sus festivales”, comenta.

“Otra era”, su tercer álbum, que lanzó a fines de octubre de 2014, ha hecho ruido. El primer sencillo, “Espada”, tuvo una fuerte rotación radial en Chile, trepando hasta el puesto 24 del listado de singles local.

El segundo, “Joya”, logró por su video una nominación a los MTV Millennial Awards 2015. Le siguieron en orden el onírico “Otra era”, el bailable “Que me tome la noche”, y más recientemente “Sincronía, pegaso”, que cuenta con las colaboraciones de los músicos chilenos Gepe y Andrés Nusser (Astro).

–La música house, el techno, lo electro, también el pop japonés me inspiró un montón, el kizomba y cosas más instrumentales.

–¿Consideras “Otra era” como la consagración de tu carrera?

–Es el resultado del pasado, de mucho masticar y de tener muchas cosas en la cabeza. Que también haya tenido buena recepción ha sido súper bueno. El primero fue fresco, el segundo es como la prueba y el tercero es entrar en la consagración. Puede ser. S

–It's an introspective work, but extroverted at the same time.

Both things work really powerfully together. It talks a lot about desire, looking for something when you aren't sure what it is. It’s a really human theme, and there’s plenty to talk about there. Desire, passion, stuff that has been approached again and again, but for a reason.

–What was your musical inspiration?

–House, techno, electro, also Japanese pop really inspired me, Kizomba (Angolan electro), and instrumental stuff.

–Do you see “Otra era” as the coming together of your career?

–It’s the result of what has gone before, a lot of chewing the fat and having loads of ideas in my head. That it was well received is fantastic too. The first album was fresh, the second is like a test, and the third is really maturing as an artist. So maybe. S

Popularizado en las películas de James Bond, este es un cocktail que no pasa de moda. Elegante y de marcado carácter seco, hay varias historias que rodean su origen: que fue inventado por el legendario bartender estadounidense Jerry Thomas, que la ciudad donde se creó se llama Martínez, y que sus creadores son los italianos Alessandro Martini y Luigi Rossi, los mismos del clásico vermouth italiano Martini. Lo único cierto es que solo lleva dos ingredientes: gin y vermouth extra seco.

The drink made popular by James Bond films is a cocktail that will never go out of fashion. It’s elegant and dry, and there are a number of myths surrounding its creation: that it was invented by legendary US bartender Jerry Thomas, that the city where it was created is called Martinez, and that the real creators are Italians Alessandro Martini and Luigi Rossi, the same men behind the classic Italian Martini vermouth.

The only thing that’s certain is that there are just two ingredients: gin and extra dry vermouth.

• ¿Cómo prepararlo? En una coctelera con abundante hielo mezcle 60 ml de gin, 10 ml de vermouth y agítela por 10 segundos. Después de filtrar la mezcla con un colador, vierta el contenido en una copa de Martini y agregue dos aceitunas verdes.

2 NEGRONI Creado en Florencia hace casi cien años en el desaparecido Cafe Casoni, en realidad fue el excéntrico conde Camillo Negroni –un habitué del lugar– quien ayudó a crearlo, al pedirle al bartender Fosco Scarselli una versión más potente del Americano, un cocktail que lleva gin, vermouth y soda, que estaba de moda en esa época. ¿El resultado? Se reemplazó la soda por el gin y nació el famoso Negroni.

• ¿Cómo prepararlo? Vierta tres partes iguales de Campari, gin y vermouth rosso en un vaso corto, agregue cuatro hielos, una rodaja de naranja y revuelva suavemente.

5 OLD FASHIONED Whisky, amargo de angostura, un terrón de azúcar y una rodaja de naranja. Esos son los ingredientes de este clásico cocktail que no tiene un origen definido, aunque se cree que ya en 1806 era consumido en Estados Unidos. Pese a que originalmente se preparaba con whiskey de centeno, de sabor más rústico, hoy comúnmente se elabora con whisky escocés.

• ¿Cómo prepararlo? Vierta en un vaso corto un terrón de azúcar, tres chorritos de amargo de angostura y 15 ml de agua mineral o soda. Disuelva bien el azúcar, luego añada 75 ml de whisky, cuatro cubos de hielo y revuelva. Decore con una rodaja de naranja y un marrasquino. S

3 GIN TONIC De origen holandés, el gin es un destilado elaborado a partir de las bayas de enebro y varios botánicos que, gracias a su gran versatilidad, se ha transformado en el espirituoso de moda por estos días. Sobre todo acompañado de agua tónica, combinación que –aunque no hay una historia oficial–, se cree que nació a fines del siglo XIX. Fresco y cítrico, funciona como estupendo aperitivo o digestivo.

• ¿Cómo prepararlo? En una copa globo con mucho hielo vierta una medida de gin y cuatro medidas de agua tónica. Al final, agregue un cítrico, como limón, pomelo o naranja.

4 MANHATTAN Aunque hay muchas historias sobre su origen, una cosa es segura: este cocktail fue inventado en Estados Unidos y está inspirado en la ciudad de Nueva York.

Famoso en películas hollywoodenses durante los años 30 y 40, en su versión original incluía, además de vermouth rosso y amargo de angostura, whiskey elaborado a base de centeno.

• ¿Cómo prepararlo? Añada en una coctelera 75 ml de whiskey o bourbon, 30 ml de vermouth rosso, dos chorritos de amargo de angostura y mucho hielo. Revuelva suavemente hasta que el líquido se enfríe y sirva con un colador en una copa Martini.

2 NEGRONI Invented in Florence almost 100 years ago in the now defunct Cafe Casoni, the Negroni seems to have been thought up by the eccentric Count Camillo Negroni –a regular-, who asked barman Fosco Scarselli for a stronger version of the Americano, a gin, vermouth and soda cocktail that was popular at the time. And the result? The soda was replaced with gin and the Negroni was born.

• How do I make it? Pour three equal measures of Campari, gin, and red vermouth into a lowball glass, add four ice cubes, a slice of orange and slowly stir.

3 GIN AND TONIC Dutch in origin, gin is distilled from juniper berries and a long list of botanical additives which, thanks to the versatility they provide, have made gin one of the most highly demanded spirits in modern bars. The most popular version is the gin and tonic, a combination that –although there is no official story-, was dreamt up in the 19th century. It’s fresh and citrusy, and works splendidly as an aperitif or digestif.

• How do I make it? In a brandy glass full of ice, pour a measure of gin and four measures of tonic water. As a finishing touch, add a slice of citrus such as lemon, grapefruit or orange.

Although there are plenty of stories regarding the birth of the Manhattan, one thing is certain: this cocktail was invented in the US and was inspired by New York City. It was made famous in Hollywood films from the 30s and 40s, and the original recipe included, besides red vermouth and Angostura bitters, a splash of rye whiskey.

Whisky, Angostura bitters, a sugar cube and a slice of orange. Those are the ingredients for this classic cocktail whose origins are a little hazy, although historians believe it was already around in the US in 1806. Despite probably being originally prepared with rye whiskey, and having a more rustic flavour, it is usually made these days with Scotch whisky.

• How do I make it? Pour 75ml of bourbon or rye whiskey into a cocktail shaker with 30ml red vermouth, two squirts of Angostura bitters and a lot of ice. Mix slowly until the liquid is chilled and then serve without ice in a Martini glass.

• How do I make it? In a lowball glass with a sugar cube, pour three squirts of Angostura bitters with 15ml of sparkling mineral water or soda. Make sure the sugar is well dissolved, then add 75ml or whisky, four ice cubes and stir. Decorate with a slice of orange and glacé cherry. S
