1 / Iglesias de Guañacagua, Timar y Ticnamar

LA FE DEL ALTIPLANO Situadas en lugares que desafían toda lógica urbana, las iglesias del Altiplano subsisten como testigos históricos del desarrollo de una serie de pequeños pueblos que ahora parecen a punto de desaparecer, pues cada vez viven menos personas allí. Esto puede comprobarse en sitios

como Guañacagua, Timar y Ticnamar: tres caseríos cercanos a Codpa (pueblo que está 113 kilómetros al sureste de Arica), y cuyo mayor símbolo son precisamente sus blancas iglesias coloniales, muestras notables del estilo barroco andino. Están hechas principalmente de adobe y madera, y datan del siglo 17 y 18. No hay una zona mejor para entender la importancia de la fe en la historia del Altiplano. 1 /The Churches of GuaĂąacagua, Timar and Ticnamar

FAITH IN THE ALTIPLANO Located in places that defy all town planning logic, the churches of the Andean high plain have long stood as stoic witnesses to the development of a series of small villages that currently seem to be on the point of disappearing as their inhabitants slowly trickle away. GuaĂąacagua, Timar and Tic-

namar are perfect examples: Three hamlets near Codpa (a town that is 113km to the south east of Arica), and whose most iconic buildings are their white colonial churches, excellent examples of the Andean Baroque architectural style.

They are built out of adobe and wood, and date from the 17th and 18th centuries. There is no better place to contemplate the importance of faith to the history of the high plains.

2 /Zapahuira and Socoroma

BEYOND PUTRE Before arriving in Putre, the famous gateway to Lake Chungará, there are two unmissable stop offs. The first is 107km from Arica, along the Ruta 11: Tambo de Zapahuira, a little-visited Incan archaeological site –the region’s biggest-, which at the time it was built was used as a store for weapons, food and fabrics. The second is about 20km further up the road: the town of Socoroma, originally used by the Spanish as a waystation before entering the high plain, which still retains most of its original urban architecture, as well has the traditional agricultural terraces for growing oregano and alfalfa. The Church of San Francisco de Asís, built in 1560 and restored in 1883, is a highlight.

MÁS ALLÁ DE PUTRE Antes de llegar a Putre, la puerta de entrada al famoso lago Chungará, hay dos detenciones fundamentales.

La primera está a 107 kilómetros de Arica, por la Ruta 11: es el Tambo de Zapahuira, un poco visitado sitio arqueológico incaico –el mayor de la región–, que en su momento se utilizó como bodega para guardar armas, alimentos y tejidos. La segunda está unos 20 kilómetros más arriba: el pueblo de Socoroma, ocupado antiguamente por los españoles como detención antes de internarse en el altiplano y que aún conserva gran parte de su arquitectura urbana original, además de terrazas de cultivo de orégano y alfalfa. Destaca la gran iglesia de San Francisco de Asís, construida en 1560 y restaurada en 1883.

The road that links Huara with Colchane, in the Chilean Region of Tarapacá, is one of the north’s best scenic drives. And one of the road's highlights comes almost at the end, 276km northeast of Iquique: this is the village of Isluga, 3,780 metres above sea level. Isluga is a “ceremonial” village which only comes to life for religious festivals, such as the celebration of Saint Thomas the Apostle, which takes place each 20th December. The town’s symbol is the church of Isluga, whose white colour (it was painted with slaked lime, and declared a National Monument in 1975) and arched walls made of volcanic stone make it one of the most stunning photo opportunities in the high plains.

3 / Aldea ceremonial de Isluga

POSTAL ALTIPLÁNICA El camino que une Huara con Colchane, en la Región de Tarapacá, es una de las rutas escénicas más destacadas del norte. Y uno de sus mayores hitos está casi al final, 276 kilómetros al noreste de Iquique: se trata de la aldea de Isluga, ubicada a 3.780 metros de altitud. Es un pueblo “ceremonial” que solo revive para las fiestas religiosas, como la de Santo Tomás Apóstol, que se realiza cada 20 de diciembre. Su símbolo es la iglesia de Isluga, cuyo color blanco (pintado a la cal, declarada Monumento Nacional en 1975) y sus muros arqueados de piedra volcánica conforman una de las postales más bellas del Altiplano.

4 / Tamentica

PETROGLIFOS ANCESTRALES Ubicados a unos 195 kilómetros al sureste de Iquique, saliendo por la Ruta 5, los petroglifos de Tamentica se encuentran en la quebrada de Guatacondo: un reseco paraje donde aún pueden verse las huellas de antiguos cursos de agua. Se trata de un notable conjunto de dibujos de hombres y mujeres, balseros, aves marinas, caravanas de llamas y motivos geométricos que habrían sido trazados entre los años 100 y 1.500 después de Cristo. De hecho, esas mismas investigaciones dicen que Tamentica habría sido un lugar de detención obligada para quienes cubrían la ruta entre la costa y las tierras altas, pues allí encontraban agua, vegetación y refugio para continuar la travesía.

5 / Quebrada de Tulán

HUELLAS DEL PASADO Es uno de los sitios arqueológicos menos conocidos de San Pedro. A 140 kilómetros del turístico pueblo, por la carretera internacional CH-23, se pasa por Toconao y Peine, y luego se debe llegar en vehículo hasta el pequeño oasis de Tilomonte, donde existió un antiguo asentamiento humano. Allí comienza un trekking

de 7 kilómetros en subida, sobre piedras volcánicas, que conduce hasta Tulán: una serie de construcciones de piedra que formaron parte del antiguo Camino del Inca, y que según estudios datarían de –por lo menos– 1.760 años antes de Cristo. Además están los Corrales de Tulán, grandes cuevas repletas de petroglifos dibujados por los atacameños, que representan chamanes, llamas, pumas y escenas de caza.

6 / Iglesia de Ayquina

FIESTA NORTINA Situada 75 kilómetros al noreste de Calama, el poblado de Ayquina es una de los hitos de la emergente zona de Alto El Loa, que busca posicionarse como alternativa al ya clásico San Pedro de Atacama. Con solo cien habitantes, Ayquina se transforma cada 8 de septiembre, cuando en su santuario se realiza la fiesta patronal de Nuestra Señora de Guadalupe, y el pueblo recibe 40 mil visitantes. Es una celebración llena de color, con trajes y máscaras, y personas bailando danzas típicas nortinas de día y de noche, salvo cuando se celebra la misa. A la medianoche se lanzan fuegos artificiales, en uno de los ritos más auténticos que subsisten en el norte chileno.

LA ÚLTIMA SALITRERA María Elena es la última oficina salitrera en funcionamiento del mundo. Ubicada a unos 90 kilómetros al sureste de Tocopilla, su campamento minero aún existe, por lo que su visita implica aprender de primera mano uno de los capítulos más desconocidos de la historia de esta célebre industria. Junto a la plaza funciona un pequeño museo que cuenta las huellas del pasado glorioso y en el departamento de turismo de la Municipalidad de María Elena (tel. +56/5555 7789) se pueden contactar guías locales para el recorrido.

6 / Church of Ayquina tacondo Canyon: a parched area where old watercourses are still carved deep into the rocky ground. There is a fascinating collection of drawings of men and women, rafts, marine birds, llama caravans and geometric shapes that were carved between 100 and 1500AD. In fact, the researchers that dated the drawings also propose that Tamentica was a mandatory stop off for anyone making the journey from the coast to the high plain, as water, vegetation and shelter can be found here.

5 / Tulán Canyon

FOOTPRINTS OF THE PAST This is one of the lesser-known archaeological sites around San Pedro. Some 140km from the tourist village along the CH-23 international highway, beyond Toconao and Peine, you come to the small oasis of Tilomonte, where there was once a human settlement. From there, a 7km uphill trek, over volcanic stone, will lead you to Tulán: a number of stone structures that were at one time part of the original Inca Trail, and that scientists believe date back to –at least- 1760 BC. There are also the Corrales de Tulán, large caves covered with petroglyphs carved by the Atacama people, representing shamans, llamas, pumas and hunting scenes.

NORTHERN FESTIVAL Located 75km northeast of Calama, the village of Ayquina is a highlight of the up-and-coming Alto El Loa area, which is looking to establish itself as an alternative to the classic tourist landmark of San Pedro de Atacama. The town has just 100 inhabitants, but comes alive every 8th September for the festival of Our Lady of Guadalupe when 40 thousand visitors flock there. It is a celebration that's full of colour, with outfits and masks, and people dancing traditional northern dances morning, noon and night, only stopping to celebrate mass. Midnight sees fireworks burst over the town, in one of the most authentic traditional festivals in the north.

THE LAST SALTPETRE WORKS María Elena is the last functioning saltpetre works in the world.

It stands some 90km to the south east of Tocopilla, and its mining operations are still running, so a visit here will help you learn first-hand about one of the most unknown chapters of the famous industry's history. There is a small museum by the main square which tells of the glory days of saltpetre, and the tourist information office is just next door (tel. +56/5555 7789). You can hire local guides for a tour.

The small physical exertion is worth it, as the lookout point stands 130 metres above the city and gives you a bird’s eye view of the whole town. What’s more, you can visit the War of the Pacific Museum, and see uniforms, weapons and other artefacts from the period.

Situated in the Azapa Valley, the Santuario del Picaflor (Km 14 towards San Miguel de Azapa; tel. +56/58222 5391) is a small private park working out of the lands of a local family. The owners decided to open the hummingbird sanctuary to the public so that visitors could help with the conservation of this beautiful species.

PEDALEAR EL DESIERTO Desde el kilómetro cero del valle de Azapa, esta aventura tiene como primer objetivo el gran mirador panorámico del valle.

Luego, empieza el esfuerzo para remontar una cuesta justo antes de pedalear por una extensa bajada por senderos que conducen otra vez al valle de Azapa. From kilometre zero in the Azapa Valley, this adventure will take you up to a great lookout point at the top of the valley. GATEWAY TO THE HIGH PLAIN. Almost on the border with Bolivia, along the road to Colchane, Chusmiza is the ideal spot to get to know the Altiplano.

At 3,100 metres above sea level, you can find some simple hot springs here that are run by the local Aymara community and, nearby, a number of archaeological ruins -including an Inca fort and petroglyphs, for example-, and age-old agricultural terraces maintained by irrigation channels that are just as old.

Chinese immigration is in full force in Iquique, and it is clear by the number of chifa restaurants. Chiman (Covadonga 886; tel. +56/97416 7623) is one of these, and one of the best. It is run by chef Chiman Chang, son of a Chinese father and Chilean mother, who works to revive his family’s favourites. Look out for the sweet and sour pork and steamed cape redfish. Chinese food is sold on Saturdays and Sundays (and to take away), and the rest of the week you can buy Chilean dishes.

One of Chile’s best-kept hot spring secrets is also surely one of the most spectacular. Taira is an archaeological site which is best known for its imposing wall decorated with rock art from the Atacama culture. It’s around 10km from Calama, and you can only get there with a guide who knows the area well because from Taira you need to walk for around an hour and a half along the Loa River and up the hillside before you reach the caves. You can take a tour from Calama with the Sol del Desierto company (soldeldesierto.cl).

The grasslands here are excellent, and are still used for rearing livestock. It’s a peaceful place, and you should head to Yalquincha at sunset to really enjoy the green and snap a picture postcard of the past.

Playas escarpadas, enormes acantilados, aguas de un color azul cobalto y pequeños pueblitos con limoneros y casas blanquecinas conforman una de las postales más clásicas que regala esta fotogénica zona del sur de Italia. It has been the setting of dozens of films including “Under the Tuscan Sun” or “The Talented Mr Ripley”, and for decades the Amalfi Coast has been one of the most popular tourist hotspots the world over - a magnet for superstars such as Greta Garbo and Sofía Loren. Steep beaches, imposing cliff faces, cobalt blue waters and tiny villages with lemon orchards and whitewashed houses make up one of the most famous picture postcards in this beautiful region of southern Italy.

Small wonder, then, that it was declared a UNESCO World Heritage site, and is today a refuge for wealthy families and glamourous film stars who seek, among the hidden villas (and luxurious hotels), a sense of tranquillity and relaxation.

Todos estos destinos están unidos por la sinuosa y angosta carretera Nastro Azurro –que en italiano significa “cinta azul”–, que ofrece espectaculares panorámicas del borde costero a los pasajeros y, por lo estrecho del camino, dolores de cabeza a los conductores.

A pesar de los miles de turistas que la visitan cada año, hoy aún es posible disfrutar el mismo encanto amalfitano de antaño y, mucho mejor aún, con opciones para todo tipo de bolsillos.

Situated some 50km from the city of Naples, the Amalfi Coast is made up of the cities lying between Salerno and Sorrento, including Amalfi, Ravello, Praiano and Positano. All of these cities are linked by the thin winding highway known as Nastro Azurro –“blue ribbon� in Italian-, which offers drivers the dichotomy of spectacular views of the coastline and, thanks to the narrowness of the road, some splitting headaches.

Despite the thousands of tourists that descend on the area each year, even today it is still possible to enjoy the same Amalfi charm of yesteryear and, better still, there are options for all budgets.

THE GLAMOUR OF THE COAST

Positano is, by far, the most visited city on this coastline.

With good reason. It's stunning architecture in pastel shades attract thousands of visitors every day, and the city also has great hotels, award-winning restaurants, high-end stores and, of course, lively nightlife. One of the most iconic hotels opened its doors in 1951: the elegant La Sirenuse (sirenuse.it), which offers the best views of the city and is home to the majority of the jet set when they're in town.

restoranes, elegantes tiendas y, desde luego, una animada vida nocturna. Uno de los hoteles más emblemáticos, que abrió sus puertas en 1951, es el elegante La Sirenuse (sirenuse.it), que ofrece una de las mejores panorámicas de la ciudad, y donde aloja buena parte del jet set que visita la zona.

Además, la que fuera una gloriosa república marítima entre los siglos IX y XII hoy es uno de los corazones turísticos y destinos imperdibles de este recorrido.

Hablamos, claro, de Amalfi, que cuenta con un bien conservado centro histórico; cuyo protagonista es la Piazza del Duomo, donde destaca una hermosa catedral de estilo árabe, con arcos intercalados y bellas puertas de bronce.

Con decenas de tiendas y restoranes –la mayoría destinado a los turistas–, si desea huir del bullicio de la

ciudad lo mejor es subir la colina y llegar a Atrani, una pequeña villa de pescadores que se asemeja a lo que era la zona antes de la llegada del turismo. O mejor aún: partir hacia Praiano. Ubicada a mitad de camino entre Amalfi y Positano, este pequeño pueblo es perfecto para disfrutar el encanto de esta costa, con mucho menos turistas y precios más amables para el bolsillo.

Con excelentes hoteles que ofrecen habitaciones dobles por menos de 100 dólares en temporada baja, un buen dato es el Open Gate (hotelopengate.it), que cuenta con acogedoras habitaciones con vista al mar. O, muy cerca de ahí, el Hotel Locanda Costa Diva (locandacostadiva.it) que además cuenta con un excelente restorán, especializado en fresquísimas preparaciones marinas, las que se disfrutan en una terraza cubierta por aromáticos limoneros. Al estar ubicada junto al mar Tirreno, las especialidades de esta zona son los pescados y mariscos frescos. ¿Un restorán imperdible? El sencillo pero famoso D’Adolfo (daadolfo.com), ubicado en la pequeña playa de Laurito –a unos 5 kilómetros de Positano–, que desde hace más de cuarenta años ofrece una pequeña carta con delicias recién extraídas del mar, como pulpo con perejil y ajo, pescados asados a la parrilla o el clásico spaguetti vongole; con pequeñas y sabrosas almejas. Otra joyita de la zona son los limones con los que preparan el célebre limoncello, un licor digestivo perfecto para beber después de las comidas. En Amalfi, Praiano y Positano hay decenas de tiendas donde puede comprar limoncellos que aún son elaborados de manera artesanal.

As it sits on the Tyrrhenian Sea, the area’s speciality is, of course, seafood, mainly fresh fish and shellfish. An unmissable restaurant? From there, you can take a bus direct to Amalfi –which connects with the rest of the cities- or take a ferry out to Amalfi, Praiano or Positano. Due to the size of the road and Italian driving, your best bet is to take buses and cabs and avoid renting a car.

now a huge tourist draw. We are talking, of course, about Amalfi, which has a well-preserved Old Town, including the Piazza del Duomo, with its spectacular Arabic-style cathedral with interlocking arches and beautiful bronze doors.

There are dozens of shops and restaurants –mostly for tourists-, and if you want to escape the hustle and bustle of the city, head up the hill to Atrani, a tiny fishing village which harks back to the way the area used to be before the tourists took over. Or better still: head to Praiano. Situated halfway between Amalfi and Positano, this small town is ideal for enjoying the delights of the coast, with fewer tourists and more affordable prices. There are some excellent hotels with double rooms for under USD 100 per night, and a good tip is the Open Gate (hotelopengate.it), which has cosy rooms overlooking the sea. Or, close by, the Hotel Locanda Costa Diva (locandacostadiva.it) is also great, and has an excellent restaurant specialising in fresh seafood dishes that can be enjoyed on an aromatic lemon tree-covered terrace. NO BASTA” “EL TALENTO “TALENT ISN’T ENOUGH” Uno de los rostros claves de Canal 13 es también un trabajador en las sombras en el mundo del cine. Ingeniero que nunca ejerció y animador de vocación temprana, Martín Cárcamo dice que –aunque mucha gente piensa que animar es una tarea sencilla–, su trabajo implica mucha lectura, estudio y disciplina. / He’s one of the key presenters on Canal 13, and also works in the shadows of the world of cinema. He’s an engineer that never worked in the industry and always knew he was born to be a presenter. Of course, this is Martín Cárcamo, who says that -although a lot of people think presenting is easy-, his work means a lot of studying, reading and discipline.

un porcentaje muy reducido de niños le sucedía y Martín Cárcamo (Viña del Mar, 1975) era un de ellos: el Ritalín, en vez de mantener a raya su hiperactividad, la estimulaba. El consejo médico entonces fue inscribirlo en todas las actividades extraprogramáticas posibles en el colegio.

Martín tocaba teclado, pintaba, jugaba tenis, hockey, rugby, fútbol y era miembro de un taller de teatro.

También animaba café concerts y cuanta fiesta estuviera a su alcance.

Tanto le gustaba el escenario que, a punto de egresar del colegio, a sus padres les anunció su intención de convertirse en actor.

–Mis viejos me dijeron que no me veían como actor, sino más bien que a mí me gustaba el escenario –dice.

El acuerdo fue que, sin dejar la animación, estudiaría ingeniería comercial. Y así lo hizo. Entonces, en la segunda mitad de los años noventas, Martín Cárcamo pasó en Santiago más tiempo intentando abrirse paso en televisión que en clases.

It doesn't happen to many young boys, but Martín Cárcamo (Viña del Mar, 1975) was one of them: instead of keeping his ADHD under wraps, Ritalin perked him up. The doctors’ advice, then, was to get him into as many extracurricular activities as possible at school. Martín played the keyboard, painted, played tennis, hockey, rugby, football and was a member of the theatre troupe. He also loved café concerts and as many parties as he could go to. He loved the stage so much that, when he was about to leave school, he announced to his parents that he was to become an actor.

Cuento corto: demoró siete años en terminar la carrera, pero a esas alturas ya conducía “Extra jóvenes” en Chilevisión.

–¿Qué es lo que sientes cuando estás animando?

–Para mí es mucho más fácil y placentero estar ante 10 mil personas, que con alguien cara a cara. Siento que hay una vocación particular con comunicar, hablarle a las masas, con poder cambiar el ánimo de la gente, poner temas, acompañar, divertir.

Es como un doctor que busca sanar el cuerpo. A mí me gusta alimentar y entretener el alma de las personas.

–Pero también hay un lado b tuyo, como productor de cine.

–Partí produciendo teatro en la época universitaria. Luego, cuando me vine a Santiago y empecé a ganar un poco más de plata, produje a la compañía del fallecido Rodrigo Achondo. Partí en el cine con “Gloria” (2013) de Sebastián Lelio. Luego produje “(09)”, en 2014, una película experimental que hice con un compañero de colegio, con quien ahora estamos en un nuevo proyecto que se llama “Una mujer fantástica”, que se estrenará el próximo año en Berlín.

De lunes a viernes el animador pasa cinco horas y media al aire junto a Tonka Tomicic en el matinal “Bienvenidos” de Canal 13. Y cuando es temporada de “Vértigo”, suma otras tres horas los jueves por la noche. Según el animador, la manera de enfrentar esa carga se parece a las condiciones que enfrenta un deportista de alto rendimiento.

–El talento no basta para trabajar en una pega como esta. Hay mu-

cha gente que piensa que animar es muy fácil. El tema es que cuando profesionalizas este trabajo implica estudio, disciplina, información, mucha lectura.

–¿Qué restarías y sumarías en la pauta de los matinales?

–Restar, nada. Los matinales deben tener la mayor cantidad de contenidos posibles. Debes acompañar, entretener, informar y pasar por todas las emociones posibles en una mañana. –Ese análisis tiene algo de verdad y de error. La televisión va a mutar. Con la aparición de Netflix y otros canales de información y entretención, va a provocar más competencia para la televisión, se va a segmentar más y va a ganar el telespectador. Pero el contenido local, y sobre todo la actualidad y la contingencia, no tiene rival.

–My folks told me they couldn’t see me as an actor, even though I loved the stage –he says.

The deal was that, without leaving presenting, he would study Business Administration. And that was that. So, in the latter half of the 90s, Martín Cárcamo spent more time in Santiago trying to muscle his way onto TV screens than going to classes.

Then I produced “(09)”, in 2014, which was an experimental picture I made with a school friend. Now we are working together on a new project called “Una mujer fantástica”, which will be premiered next year in Berlin.

Long story short: it took him seven years to finish his studies, but by that time, he was already presenting “Extra jóvenes” on Chilevisión.

From Monday to Friday, the presenter spends five and a half hours on air with Tonka Tomicic on the “Bienvenidos” matinee on Canal 13. And when "Vertigo" is in season, he adds another three hours in the evening. In his own words, the way he deals with this workload is similar to an elite sportsman.

–How do you manage your free time?

–I like to get out, to enjoy a nice glass of wine at a restaurant or a bar.

–How do you feel when you are presenting?

–I find it much easier and calming to be in front of 10 thousand people than to work face to face with someone. I think that there is a special calling to communicate, speak to the masses, and to be able to change someone’s mood, discuss issues, to be with people, to have fun. It's like a doctor who wants to heal a body.

I like to feed and entertain people's souls.

–But you also have a B side, as a cinema producer.

–I began by producing theatre productions at university. Then, when I came to Santiago and started to earn

–What would you add or take away from the content of Chile's matinees?

–Take away, nothing. Matinees have to have as much content as possible. You have to accompany people, entertain them, inform them, and go through all the emotions you can in one morning. It's

–The top boss of Netflix has predicted that TV as we know it will soon disappear, what do you think?

–I think there is some truth, but also some error to that. TV will mutate. The appearance of Netflix and other information and entertainment channels will mean more competition on TV, and that the supply will become more segmented and the winners will be the viewers. But local content, and above all the current affairs and possibilities we have, has no rival. No Netflix or packaged timeless product can compete with a wildfire, an earthquake or a live court decision.

With all those hours on air and his producing side, Martín Cárcamo is also a figure in marketing and has a number of private businesses. He also has three kids and a partner.

–You are a public figure, and as DJ Méndez is running for mayor of Valparaíso, could Martín Cárcamo be the next mayor of Viña del Mar? –I don’t know. I like the social side of things, but I think that today my path is in media. I am interested in making TV shows, not just presenting them, but being behind the camera and I want to carry on with theatre and film. I have more to give in this area than I do in politics. I am not the kind of person to believe too much in politics. I think it is a good thing, but the way it is structured these days in Chile is not sustainable. If the system changes, we'll see. But right now, I have absolutely no plans to get into politics.S

Hace cinco años, encontrar un lugar donde pedir un cóctel bien preparado en Chile era tarea difícil. Salvo honrosas excepciones, como el Hotel Ritz por ejemplo, en la mayoría de los bares no sabían preparar como corresponde clásicos como un Martini Dry o un Old Fashion. Hoy, afortunadamente, eso ha cambiado. En Santiago y lentamente en otras ciudades, existen decenas de bares con bartenders calificados tras el mesón y excelentes cartas con cocteles clásicos y de autor. Y es más: solo en los últimos años han aparecido nuevas etiquetas de piscos premium –como Kappa o Waqar–, y a los supermercados han llegado destacados destilados extranjeros –como el gin Martin Millers o el whisky Maker’s Mark–, mientras que en Santiago se realizan importantes competencias mundiales de coctelería, como el Mixollogy Challenge o el World Class de Diageo.

Five years ago, finding a place to get a good cocktail in Chile wasn’t easy. Barring a few honourable exceptions, such as the Ritz Hotel for example, the majority of bars didn’t know how to properly knock up a Dry Martini or an Old Fashioned. Today, luckily, all this has changed. In Santiago, and slowly in other cities, dozens of new bars have been popping up with qualified bartenders and excellent menus with both classic and original cocktails. But there's more: only in the past couple of years have we seen new premium pisco brands -such as Kappa or Waqar-, and have the supermarkets started to import outstanding foreign spirits –such as Martin Millers gin or Maker’s Mark whisky.

Meanwhile in Santiago, world-class cocktail competitions have taken place including the Mixology Challenge and Diageo’s World Class.

LOS PIONEROS

Uno de los primeros bares que comenzó con la tendencia fue el desenfadado Polluelo Amarillo, ubicado en Providencia, que sorprendió con su oferta de coctelería clásica y finger food (bocados para comer con las manos). Luego le siguió Ruca Bar, en el barrio Italia, que ganó fama con una propuesta de tapas gourmet y, por cierto, una gran variedad de gin tonics elaborados con más de diez etiquetas distintas. No por nada fue elegido por el diario inglés The Guardian como uno de los diez mejores bares de Santiago.

A mediados de 2015 abrió Red Luxury Bar, en un escondido segundo piso del Patio Bellavista. Con una decoración en la que las lámparas de lágrimas y sillones de cuero son protagonistas, cuenta con más de 300 licores, destilados y bitters –muchos de ellos únicos en Chile–, además de antiguas copas biseladas, frascos de cristal y hermosos artefactos vintage. Por lo mismo, y por su excelente coctelería clásica que incluye imbatibles negronis, rápidamente ganó fama. El siguiente en abrir fue Room 09, otro bar escondido en Bellavista, el primero en comenzar la tendencia de los bares speakeasy: es decir, aquellos locales clandestinos, populares en la época de la Ley Seca en Estados Unidos, a los que solo se puede entrar dando una contraseña en la

puerta. Con entrenados bartenders tras la barra, su especialidad es la coctelería clásica, con sólidas versiones de cocteles como el Sazerac o el Old Fashion.

BARTENDERS DE MODA

Con todas estas aperturas, el papel del bartender cobró importancia y hoy son varios los nombres que suenan fuerte en la escena coctelera local. Uno de ellos es Julio Palestro, el hombre tras la premiada coctelería del restorán Sarita Colonia, quien fue ganador en 2015 del campeonato de coctelería Mixollogy Challenge en Santiago. Él es el autor de los originales cócteles que despachan desde las tres barras de este colorido y ondero local.

Miguel Larraguibelm –más conocido como Maldito Barman– es otro de los nombres que suena fuerte entre los bartenders nacionales, sobre todo por su Deshuesado: una original creación en base a pisco y mote con huesillo.

El último en sumarse a este listado es Nicolás Farías, quien comanda la barra de Hidden Bar: un local ubicado en el subterráneo del Hotel Nippon, donde ofrecen impecables cocteles de autor (y a muy buenos precios).

Farías ganó recientemente la versión local del campeonato de coctelería World Class Chile, superando a varias lumbreras locales, y también el campeonato La Ruta del Negroni, organizado por Campari, que premiaba la mejor reversión de este clásico y célebre cóctel. S

THE PIONEERS

One of the first bars to begin this new trend was the laid-back Polluelo Amarillo, in Providencia, which burst on the scene with a range of classic cocktails and finger food. Ruca Bar soon followed suit, in the Barrio Italia district, and became famous for its top-end tapas and great variety of gin and tonics made with over ten different brands of gin. Not for nothing was it chosen

by The Guardian as one of the top ten bars in Santiago.

Around mid-2015, Red Luxury Bar opened in a tucked-away corner of Patio Bellavista. Its interior stands out for its tear-drop lamps and leather upholstery, and the bar itself stocks more than 300 liquors, spirits and bitters –many the only examples of their kind in Chile- and has stylish bevelled glasses, fine crystal tumblers and gorgeous vintage decoration. For this reason, and for the wonderful cocktails they make here, including an unbeatable Negroni, the bar has made a strong name for itself. The next to open was Room 09, another bar hidden away in Bellavista, and the first to revive the trend of the speakeasy.

That is to say, mimicking the style of the clandestine prohibition-era bars in the USA, where you could only get in with a password or secret knock. There are fully trained barmen here, and the speciality of the house is the classic cocktails, with admirable versions of the Sazerac and Old Fashioned.

FASHIONABLE BARTENDERS

After this string of openings, the job of professional bartender was thrust to the fore, and there are now a number of big names on the scene. One such name is Julio Palestro, the man behind the prize-winning cocktails at the Sarita Colonia restaurant, and who won the 2015 Mixology Challenge competition in Santiago. He also invents his own cocktails and can be found behind the bar at this colourful and cool eatery.

Miguel Larraguibelm –better known as Maldito Barman- is another big name among Chilean bartenders, especially for his “Deshuesado”: an original recipe made with pisco and “mote con huesillo” (wheat and peaches).

The latest barman to hit the big-time is Nicolás Farías, who runs the show at Hidden Bar: a bar in the basement of the Hotel Nippon, where they serve up impeccable original cocktails at very convenient prices. Farías recently won the local version of the World Class cocktail competition in Chile, beating a number of leading local lights, and also took home the La Ruta del Negroni trophy which was organised by Campari to find the best reworking of this celebrated classic.S

an immense amount of natural heritage in the island's forests and their dozens of endemic plant and animal species.

One of the best ways to get to know Chiloé is via Williche, the hotel's boat that follows the old canoe routes of the

Chonos people and Jesuit missionaries in order to take guests up close to the most attractive areas of the archipelago. ionero en su clase, el Ford Mustang dio origen a una nueva clase de vehículo: los coupé deportivos de largo capó delantero y parte trasera pequeña. Introducido al mercado el 17 de abril de 1964, se trata de uno de lo modelos más exitoso de la compañía estadounidense. Con una serie de transformaciones a lo largo de su más de medio siglo de historia, la actual es la sexta generación de este verdadero mito de cuatro ruedas.

Lanzado en 2015, el Mustang actual vuelve a sus orígenes y, con un diseño más dinámico, recuerda más que nunca al modelo original.

Además, otra de las principales características de esta versión es que

fue creado pensando no solo en el mercado estadounidense, sino que se tuvo en mente una visión más global de conductores.

t was a pioneer in its class, and the Ford Mustang broke ground for a new style of car: InIt burst onto the scene on 17th April, 1964, and has since become one of the most successful models in Ford's range. It has undergone a series of transformations throughout its fifty year history, and is now, in its sixth generation, a true legend on four wheels.

The current Mustang, launched in 2015, goes back to its roots and, with a more dynamic design, reminds us more than ever of the original model.

This helps to reduce leaning in the chassis and to achieve agile and precise handling; gone are the days of the rigid axles that characterised Mustangs of the past. The front suspension and brakes have also improved, while the exterior

exudes a sporty yet elegant spirit. The engine of this sixth-generation Mustang is still the powerful 5.0 litre V8 we know and love: the vocal chords that produce the car's unmistakable roar.

The new Mustang is aerodynamically designed, and behind the wheel the ride is smooth and comfortable.

The wheel itself, for example, is smaller and also covered in leather to increase the sporty feel, and includes controls for audio/sync and cruise control. Speaking of audio and entertainment, the central panel has controls for telephones, audio devices, climate control and GPS navigation via simple voice commands. All of this –along with the safety provided by the airbag system-, means that the drive is electrifying, and stands out for the sporty feel which is undoubtedly part of this model's DNA.S
