Dear Friends,

Muchas veces hemos tocado el tema de la puntualidad, que sin duda es uno de los atributos más importantes para una línea aérea. Ser puntual no solo significa llegar a tiempo o según lo programado, sino que es una filosofía que debe estar en el ADN de las personas que conforman una organización.

I have often mentioned punctuality in my letters, and without doubt it is one of the most important issues for an airline. Being punctual does not only mean arriving according to schedule, but it is also a philosophy that must be ingrained into the DNA of all the workers in an organisation.

En 2015 iniciamos un proceso de transformación sustentada en una meta ambiciosa: tener indicadores de puntualidad por sobre la media de la industria en la región. Para ello, comenzamos realizando una exhaustiva revisión de nuestros procesos en tierra y aire, tarea que nos permitió identificar pequeñas acciones que entorpecían una operación más rápida y, por consecuencia, más puntual.

In 2015, we began a process of transformation underpinned by one ambitious goal: to consistently achieve punctuality scores that are above the industry average. To achieve this goal, we began to undertake an exhaustive revision of our land and air processes, meaning we were able to identify small gains that would make our service swifter, more efficient and, as a result, more punctual.

Con la firme convicción de ser los mejores, iniciamos un camino de transformación que al poco andar rindió sus primeros frutos. En los primeros meses subimos sustancialmente nuestra puntualidad, dejando atrás los promedios regionales para comenzar a mirar las mejores prácticas a nivel mundial. Y lo hicimos también con excelentes resultados.

With the firm conviction to be the very best, we started out on a journey of transformation that little by little has been bearing its first fruits. Within the first few months we increased our punctuality figures significantly, leaving regional averages behind and beginning to adopt best practices at an international level. All of this was achieved with excellent results.

Elaborado por OAG, el principal indicador de este tipo a nivel global, el estudio se elaboró monitoreando cerca de 26 mil vuelos de SKY durante un año, dando como resultado un promedio de puntualidad de un 91,13 por ciento.

Today I can proudly tell you that SKY, the first low-cost airline in the Southern Cone of South America, is also the most punctual company in the world according to the study "On-Time Performance (OTP) Results for Airlines and Airports". The study was drawn up by the OAG, the world’s leading air-travel intelligence company, and considered close to 26 thousand SKY flights over the course of a year. The result was a punctuality statistic of 91.13%.

En los últimos años, la emblemática calle Saelzer, en isla Teja, se ha transformado en el nuevo polo gastronómico de la ciudad, gracias a la aparición de una atractiva variedad de bares y restoranes. Entre ellos destaca Il Tano (Saelzer 11, tel. +56/63223 9477), una fábrica y tienda de pastas artesanales a cargo del chef argentino Ricardo Rodríguez, algunas rellenas con cordero, mariscos y vegetales. Otra buena opción es Lío Bar (Saelzer 60, tel. +56/63221 2808), que se ha transformada en uno de los

1 / The New Culinary Scene In recent years, Valdivia’s iconic Saelzer Street, on Teja Island, has become the city’s new hub for foodies thanks to the appearance of an attractive array of bars and restaurants. Among these, Il Tano is worth highlighting (Saelzer 11 +56/63223 9477). The emphasis is on good drinks, finger food and gourmet sandwiches, all in a welcoming yet surrealist environment, decorated with magazine and comic clippings. Beyond Saelzer Street, however, there are several other places to bear in mind, such as La Última Frontera (Vicente Pérez Rosales 787), a classic with great sandwiches and a wide range of beers that are brewed locally; or there’s the new Avellana Café and Boutique (Caupolicán 234), a tearoom that also works as a vintage clothes store.

Con 754 hectáreas de bosques donde florecen especies como ulmos, lumas, tepas, mañíos y canelos, además de gran variedad de insectos y anfibios, el Parque Oncol es un excelente lugar para los aficionados al trekking: tiene cinco senderos de diferente dificultad, el más largo de 2 kilómetros, que conducen a espectaculares miradores hacia el mar y la cordillera. También hay circuitos de canopy, áreas de camping y picnic.

3 / Por la vida universitaria Valdivia es esencialmente una ciudad universitaria, y el mejor lugar para sentir esta atmósfera es la isla Teja, donde está el Campus de la Universidad Austral. A la isla se llega cruzando el puente Pedro de Valdivia, y más allá de conocer las instalaciones de la universidad, en este sector también se encuentran una serie de hitos culturales que valen una visita. Entre ellos, el Jardín Botánico, el Museo de la Exploración Rudolph

Moreover, Parque Oncol is great for lovers of trekking: it has five circuits of different difficulties, the longest of which is 2km, which lead hikers up to spectacular lookout points facing sea and mountains. There are also canopy circuits, campsites and picnic areas.

3 / University Life Valdivia is, in essence, a university town, and the best place to get the feel for student life is on Teja Island, where the main campus for the Universidad Austral is located. Visitors can reach the island crossing the Pedro de Valdivia Bridge. But besides taking a close look at the university buildings, you can also find a number of cultural landmarks in the area. Among these are the Botanical Gardens, the Rudolph Amandus Philippi Exploration Museum, the Modern Art Museum, and the Mauricio Van de Maele Historical and Anthropological Museum. All of these places are must-sees if you really want to understand the history of a city that has enchanted scientists and foreign visitors for years.

Hacia el centro, por ejemplo, convergen tres ríos emblemáticos: el Calle Calle, el Cruces y el Valdivia, y el punto principal de zarpe está en el muelle Schuster, donde flotan las distintas embarcaciones turísticas, como el catamarán Marques de Mancera, que hace distintos recorridos,

4 / Cruising Around the Rivers Valdivia is rightly known as the capital of Chile’s Los Ríos Region, as its name in Spanish suggests: the city boasts over 250km of navigable rivers. And it shows. Towards the city centre, you can find the convergence of three iconic rivers: the Calle Calle, the Cruces and the Valdivia, and the main embarkation point is Schuster Pier, where tourist boats launch in their dozens. One iconic riverboat is the Marques de Mancera, which runs a range of trips with dinners included (Marquesdemancera.cl). You can take the classic nighttime tour of the Calle Calle and Valdivia Rivers, to appreciate the city lights by night. You can head to the Cruces River, on a trip that takes in visits to the Carlos Anwandter Nature Sanctuary –whose wetlands became the first Ramsar site in Chile,

También se puede bajar hacia el oeste para llegar a la isla Mancera, donde está el emblemático Castillo San Pedro Alcántara, y luego continuar hacia Niebla y su fuerte y hacia Corral, donde está el castillo San Sebastián de la Cruz. O incluso, explorar el menos conocido río Futa, bordeando la Isla del Rey. Es cosa de elegir.

Or you can also head west downstream to Mancera Island, and its iconic hillfort Castillo San Pedro Alcántara, and then on to Niebla and another fort, then Corral and its San Sebastián de la Cruz fortress. You can even head to the lesser-known Futa River, which flows by Del Rey Island. The choice is yours.

A classic trip is to follow the Arturo Prat coastal road to watch the rowers along the Calle Calle River, and absorb the old town’s well-preserved architecture. A mandatory stop off here is the colourful River Market, with its

Un paseo clásico consiste en caminar por la Costanera Arturo Prat para observar los botecitos sobre el río Calle Calle y la bien conservada arquitectura del centro histórico. Allí, además, una escala obligada es el colorido Mercado Fluvial, donde hay una serie de puestos que ofrecen una gran variedad de pescados y mariscos frescos, además de puestos de artesanías. Por la costanera también se llega a otro gran hito cultural, el Museo Submarino O’Brien (Avda. Prat con San Carlos; tel. +56/63223 6906; ccm-valdivia.cl), un museo naval dentro de esta histórica nave, considerada el último sumergible de la clase Oberon que queda en el mundo. Finalmente, otra posibilidad es llegar a la esquina de las calles General Lagos y Yungay, donde se encuentran varias de las casonas más representativas de la historia valdiviana, muchas de ellas construidas

Finally, another option is to take a stroll down the General Lagos and Yungay Streets, where there are several historical Valdivian townhouses, many of which were built at the turn of the XX century, such as the Thater-Hoffmann house (General Lagos 701), which dates back to 1870.

Today it houses the El Austral Cultural Centre, which is also a museum.

6 / Por la reserva costera Otro sitio de gran valor ecológico y belleza natural que justifica con creces el viaje, es la Reserva Costera Valdiviana (ReservaCosteraValdiviana.cl), un parque natural que protege nada menos que 50 mil hectáreas de bosques, con los alerces milenarios como estrella principal. El acceso quizá es un poco más complicado: desde Valdivia hay que llegar primero a Niebla, luego cruzar en transbordador hacia Corral y dese ahí continuar por el camino al sur, hasta la localidad de Chaihuín. Cruzando el puente se llega a la administración. El viaje, por cierto, debe hacerse en un vehículo todoterreno, para evitar cualquier inconveniente en el

Getting here is a little trickier, though: you first have to reach Niebla and then take a ferry to Corral before getting on the highway south to the town of Chaihuín. Here you cross the bridge to reach the park administration office. The trip, by the way, has to be undertaken in a 4x4, as the roads are unpredictable. There are a number of trails to try out, from Los Colmillos de Chaihuín (which is apt for everyone, and even has disabled access) to Lobería de Huiro, which will take you to see sea lions, or Sendero Alerces.

7 / Steak Tartare and Beer The area’s German heritage is visible not only in Valdivia’s historical townhouses, but also in its rich brewing and culinary traditions, kept alive and well in the city to this day. A classic eatery is the Café Hausmann (CafeHausmann.cl),

7 / Por los crudos y cervezas El pasado alemán es visible no solo en las casas históricas de Valdivia, sino en su notable tradición cervecera –y culinaria– que aún permanece viva en la ciudad. Un clásico es el Café Hausmann (CafeHausmann.cl), cuyo local tradicional se encuentra en Avenida O’Higgins 364 y el nuevo en Los Robles 202, en la Isla Teja. En ambas direcciones, además de buenas cervezas, preparan los mejores crudos de Chile, perniles de cerdo, chuletas y lomo relleno. Pero ahora también hay otro imperdible: se trata del nuevo restorán El Growler (Saelzer 41, Isla Teja; tel. +56/63222 9545), que cuenta con su propia fábrica de cerveza artesanal: tiene 15 variedades y las sirven en “growlers” o baldes en los que antiguamente se transportaba la cerveza. Sus dueños son una valdiviana y un estadounidense de Oregon, que suele estar en la barra.

Both addresses serve up great beer, the best steak tartare in Chile, cured ham, pork chops and stuffed pork roll. But now there’s another unmissable highlight: the new El Growler restaurant (Saelzer 41, Isla Teja; tel. +56/63222 9545), which has its own microbrewery: there are 15 varieties of beer served in “growlers”, or glass jugs that were used to transport the amber nectar back in the day.

The owners here are a local Valdivian lass and an American from Oregon, who can often be found at the bar.

Besides plenty of restaurants serving up delicious grub at bargain prices, there is also a wide range of local produce on offer, from fruit to fish, and also a great deal of handicrafts brought in from the inland areas of the Tarapacá Region. A tip? The llama wool clothing.

Símbolo dulce de Iquique, el origen de los tradicionales chumbeques hay que buscarlo en el cantonés Koupolin Koo Tau, quien después de casarse con una repostera de Pozo Almonte, en la década de 1920, adaptó una receta china a los alfajores de Pica. Con una decena de sabores –como mango, guayaba y hasta una versión light–, cómprelos en el local de Ramírez 949, en pleno centro.

CHUMBEQUES / Chumbeques are an

iconic example of Iquique’s sweeter side, and their history can be traced back to the Cantonese immigrant Koupolin Koo Tau. After marrying a pastry cook from Pozo Almonte in the 1920s, he crossed a Chinese recipe with the traditional Pica “alfajores”. There are a dozen or so flavours -including mango, guava and even a diet version- available at the store at Ramírez 949, in the city centre.

3 ⁄ PERFUMES DE LA ZOFRI

No se conoce Iquique si nunca visitó la famosa Zona Franca de la ciudad, popularmente conocida como Zofri.

Entre decenas de tiendas que venden cachivaches y utensilios del más variado uso, éste es un buen lugar para adquirir artículos tecnológicos como computadores, tablets y cámaras fotográficas, pero sobre todo es excelente para comprar perfumes a precios mucho más baratos que en tiendas de Santiago y otras ciudades del país.

Iquique without visiting the famous tax free area of the city, known colloquially as the “Zofri”. Among dozens of stores selling bric-a-brac and the most incredible range of utensils you can imagine, there are also shops selling top-of-the-range technology such as computers, tablets and cameras.

The best tip, however, is to head to the perfume stores, where you’ll find prices that are much cheaper than in Santiago and elsewhere in Chile.

PUNTA SAL / LA PRÓXIMA ESTRELLA En el departamento de Tumbes, Punta Sal se ha transformado en uno de los destinos playeros emergentes de la costa norte de Perú. Zorritos también tiene buenas olas para el surf, principalmente en el verano, y además es una de las playas más cálidas del litoral norte, gracias a la corriente del Niño. distancia se encuentra la frontera con Ecuador. Con agua tibia y arena suave, la playa está tapizada por restos de fogatas y sedales de pesca, cuestión que explica su vivir alejado del turismo. Por lo general, a Punta Capones se llega como escala de la excursión hacia uno de los grandes atractivos naturales de esta región, el Santuario Nacional los Manglares de Tumbes: un sitio verde, caluroso y húmedo, que se suele recorrer en canoa.

Durante el viaje se pueden apreciar las particularidades de este ecosistema que se forma en torno a la desembocadura de un río habitado por garzas y peces voladores, entre otras especies. Además,

PUNTA CAPONES / On the border This wild and lonely beach, also in Tumbes, is the northernmost beach in the Peruvian territory: Just under 1km from the Ecuadorian border. The waters are warm here and the beach is dotted with the scars of old campfires and fishing line, proof of its life away from tourism.

CABO BLANCO / Hemingway’s beach Located in the region of Piura, this beach was made famous in the 50s as one of the getaways of US writer Ernest Hemingway, who made his way out here in search of a location for the film version of his iconic novella The Old Man and the Sea, as well as to practice a little marlin fishing in the open ocean.

Hemingway, though, was not the only Hollywood star to visit Cabo Blanco. After him came Marilyn Monroe, John Wayne, Gregory Peck and James Stewart, who came

COLÁN / Big beach Located some 65km from the city of Piura and 17km from Paita, Colán is considered one of the largest beaches on the Peruvian coastline, and boasts greenish-blue waters and fine sands. It’s the perfect spot to try out some water sports, and is also known for its large Art Nouveau beach houses that date back to the 50s, and the buildings on stilts that are surrounded by water at high tide. Another of Colán’s attractions is in the hamlet of La Esmeralda, a little way inland. The village is home to the San Lucas church, among the first to be built by the Spanish in the South Pacific (it dates back to 1535). The building

is baroque in style and is now a National Historical Monument.

VICHAYITO and ÓRGANOS / Good neighbours These two beaches can in fact be destinations in themselves, but we have chosen to combine them here because they are very near to one another and work well as a good alternative to the famous –and much busier- Máncora. Vichayito is the perfect beach for kitesurfing and scuba diving, as there is always wind here, with few rocks and great visibility in the water. l poco tiempo salta a la vista una de las principales características de Puerto Viejo: en el mejor sentido de la palabra, se trata de un hotel “familiar”. Con un servicio cálido y amable, la clave parece estar en la constante preocupación de la familia curicana dueña del hotel, la que dirige y supervisa el funcionamiento in situ, para que sus huéspedes siempre se sientan como en casa. Y, pese a que son debutantes en el negocio hotelero, al parecer, los Toral tienen el buen servicio en su ADN.

It isn’t long before you get the feel of the place: Puerto Viejo is, in every sense of the word, a “family hotel”. Service here is warm and friendly, and the key appears to be that the family from Curicó who own the establishment also run it and oversee the daily comings and goings, meaning guests will always feel at home. And, despite this being their first venture in the hotel industry, the Toral family seem to be born for it.

The story of Puerto Viejo begins back in 2011, when the family found out that the land was up for sale and couldn’t resist buying.

La historia de Puerto Viejo nació a fines de 2011, cuando la familia supo que el terreno estaba a la venta y no pudo resistir comprarlo porque –de largos veraneos en Llico y el lago Vichuquén–, desde hace años conocían la zona y siempre soñaron con desarrollar un proyecto en ese emplazamiento. “Es un lugar único”, dice María Paz Toral, quien explica que tras la compra del terreno la idea de concretar un hotel surgió luego de descartar diversas opciones y que, finalmente, se decidieron por un hotel pues rememoran uno que funcionó ahí mismo hasta los años 80.

“El lugar es incomparable. En una punta con una vista imponente sobre el Pacífico y los bosques protegidos por Conaf, nos dan un entorno único en donde nunca habrá otras construcciones. Además, siempre habíamos pensado que en el pueblo de Llico faltaba un

After having spent long summers holidaying in Llico and Vichuquén, they’d always dreamed of starting up a business in the area.

“This place is unique”, says María Paz Toral, who explains that after buying the land there was a long brainstorming process of what to do with it. Once several other options had been ruled out, they settled on a hotel as they remembered that there had been one in the area in the 80s.

“This place is incomparable. It’s got an amazing view of the Pacific, and the forests here are protected by the CONAF (Chilean forestry service). They provide this unique environment and also guarantee that there’ll never be more buildings. Besides, we had always thought that Llico needed a hotel to allow visitors to enjoy the great mix of sea and countryside here”, says María Paz.

Architecturally speaking, the aim was always to build a hotel in harmony with the environment, with as little effect on the landscape as possible. That’s why the family chose wood as the main building material and for the decor inside, where there’s a blend of countryside and ocean influences, and the region’s roots are on show.

María Paz Toral explains it this way: “What we really wanted to do was to build Hotel Puerto Viejo in harmony with the landscape, so that visitors could enjoy the ocean views and the countryside of the Maule Region”. What’s more, the hotel stands out for its use of biodegradable

In other words, the restaurant turns out delicious dishes with just a few tasty ingredients on the plate, prizing produce and flavour above all else. Some examples? Dishes such as the Puerto Viejo Crab, made with freshly caught crustaceans; or the fish –grilled or as cebiche- that’s brought in every morning by local fishermen.

There are advantages to staying here at any time of the year, but bear in mind that spring-summer is the best time for enjoying the open-air swimming pool (where there are often yoga classes), and for trying out some water sports (a favourite of the area is windsurfing). Moreover, throughout the year guests can go trekking through

La animadora enfrenta su cuarto festival de Viña, prepara un nuevo programa y desde ya piensa en nuevos desafíos. “Me gusta tomar decisiones que sé que me van a costar e implicar más trabajo. orren días en que Carolina de Moras (35) funciona como esos artistas de variedades que hacen girar varios platillos sobre largas varillas, cuidando que ninguno caiga. En su rol de animadora del Festival de Viña del Mar tiene que participar en conferencias, reuniones, revisar y memorizar libretos, chequear vestuario y responder entrevistas sin dejar de conducir de lunes a viernes “La Mañana de Chilevisión”.

Por si fuera poco, a contar de marzo animará “Fuego”, un estelar de baile cuyos detalles también debe atender. La versión 58 del evento viñamarino, entre el 20 y 25 de febrero, la tendrá por cuarta vez en el escenario de la Quinta Vergara.

—Al comienzo había cosas que me resultaban desconocidas y me preocupaban mucho más. Abarqué aspectos innecesariamente, y ahora ese tiempo lo aprovecho de invertir en otros detalles. Todos los festivales son diferentes. Cambia la parrilla, los artistas, el público varía cada noche. Hay que estar preparado con mucha información, mucha práctica –dice.

Carolina no demora ni medio segundo en declararse “feliz” cuando enfrenta al “monstruo”, y resumir como “muy buena” y “fácil” la relación con Rafael Araneda, su compañero en la animación. También se relaciona con los artistas y ha logrado advertir la vulnerabilidad propia de las estrellas.

Right now, Carolina De Moras (35) is working like a plate spinner, trying furiously to make sure none of them fall from their place at the top of the poles. As the presenter of the Viña del Mar Festival, she has to take part in press conferences, meetings, script readings, wardrobe fittings, and interviews, all the while keeping up with her Monday to Friday day job on the “La Mañana de Chilevisión” breakfast show. As if that wasn’t enough, starting in March, she’ll become the face of “Fuego”, a celebrity dance show. The 58th Festival, which runs from 20th to 25th February, will be her fourth as presenter at the famous Quinta Vergara concert hall.

—At first, there were things I was unsure about, and they worried me a lot more. I got bogged down in things that were unnecessary, but now I try to spend my time on other details. Every festival is different. The lineup changes, as do the artists and the audience changes every night. You have to do your homework, and practice a lot - she says.

Carolina doesn’t hesitate to say that she is “happy” to face the “monster” (as the often fickle Festival crowd is known), and says her relationship with Rafael Araneda, her co-presenter, is “very good” and “easy”. She also has to get to know the artists, and says that even the stars have their vulnerabilities.

—It’s important to tell them: “Look, we are the on-stage presenters and we’ll be welcoming you up there”, so that it looks like we know each other. Some artists are easier to work with, while others have quite a rigid routine.

—Del Festival de Viña todo el mundo tiene una opinión y para esta versión los dardos apuntan a una parrilla más modesta, ¿cuál es tu impresión del cartel?

—Siempre sucede lo mismo, que es muy fome, que mucho reggaetón, que es muy viejo, que no me gusta como canta. La crítica es parte del festival, y así también

—Everybody has an opinion about the Viña Festival, and this time round the daggers have been aimed at the modest line-up, what do you think about the programme?

—It’s always like that. They say it’s boring, that there’s too much Reggaeton, that there are too many oldies, that they don’t like suchand-such a person’s voice. Criticism is part of the Festival, just one of many things that become fossilised over time. This is the 58th year, and that is almost unprecedented worldwide. I would love to see some of my favourite artists come, but it’s a six-night festival for all tastes.

There are perhaps some artists who could come but who don’t like to share the limelight, or they know that the audience isn’t going to be 100% behind them. So it isn’t easy to put the Festival together. It’s not Lollapalooza, where people go for the experience, but it is an event that brings people together.

The ex-model, from Osorno, made a name for herself in 2010, on TVN’s breakfast show “Buenos Días a Todos”. Since then, a word often used to describe her career has been “meteoric”.

Y voy sacando la pega que tengo ahora” TVN, y desde entonces uno de los términos socorridos para definir su carrera es “meteórica”. La animadora reconoce haber llegado a un espacio para el cual requería más experiencia. A la vez, considera que esa ventaja inicial le exigió mayores esfuerzos.

—Si, tuve fortuna, y lo demás ha sido trabajo que quizá ha sido más rápido que el de otras, pero yo he tenido que demostrar mucho más porque se me ha exigido por lo mismo –dice.

—“Me lanzo a lo desconocido con facilidad” es una declaración tuya de 2013, ¿sigues con la misma filosofía?

—Sí, me gusta experimentar cosas y, en mi área, intentar diferentes formatos televisivos. Me gusta estar probándome. No me agrada lo que resulta demasiado conocido, se pierde esa sensación adrenalínica. Me gusta tomar decisiones que sé que me van a costar e implicar más trabajo. Es parte de mi personalidad.

—Entonces, ¿de qué manera abordas un formato como el matinal, que parece absolutamente establecido?

—No te aburres porque estás con lo cotidiano, con lo contingente. Hoy estamos hablando de alguna emergencia, mañana quizá de una ironía lanzada por Trump.

Los temas varían, no es rutinario.

Según una encuesta Adimark publicada a fines de 2016, De Moras saltó del séptimo al tercer puesto en

—Yes, I was lucky, and the rest has been work that was maybe a little faster than other people’s work, but I have had to prove so much more because people were doubting me for the same reason –she says.

—“I’m quick to jump into the unknown” is a quote of yours from back in 2013, is that still your philosophy?

—Yes, I like to experience things and, in my field, try out new TV formats. I like to test myself. I don’t like it when things are too familiar, because you lose that sense of adrenaline. I like to take decisions that I know will be tough and that will require a lot of work. It’s part of my personality.

—So, how do you deal with the breakfast show format, which appears to be pretty much set in stone?

—You don’t get bored because you’re talking about current affairs, relevant stuff. Today we might speak about some emergency, tomorrow maybe an ironic statement from Trump. The content changes, so it’s not routine.

According to an ADIMARK survey published in late 2016, De Moras has risen to seventh place in the public celebrity approval ratings. Among other qualities, people think she is “warm and caring”, and a fashion icon. She believes the key to transmitting

la valoración del público. Entre otras cualidades, se le considera “acogedora o cariñosa”, y como un referente en tendencias. Ella cree que la clave para transmitir tales rasgos se resume en una palabra: “honestidad”.

—Uno tiene que ser un aporte porque en la televisión no puedes estar solo por simpática –dice–. Para mantenerse hay que trabajar, manejar información, estar atenta a las corrientes que se marcan en el mundo y nuestro país. Y eso hay que vivirlo y proyectarlo. Soy una mujer curiosa y me gusta ver de todo.

—¿Te imaginas en diez años más en pantalla?

—No lo sé. Nunca me proyecto a largo plazo, no pienso mucho en estrategias.

Al contrario, soy bien del día a día. Y voy sacando la pega que tengo ahora.

—Como figura pública, ¿cuál es tu relación con las redes sociales y cuan pendiente estás del teléfono?

—Lo tengo todo el día en silencio porque siento que pierdes libertad. Si bien siempre estoy pendiente de las redes sociales e interactúo, no estoy el día entero opinando o poniendo “tengo ganas de un café” o “voy al baño” (risas). Trato de atender lo realmente importante o responder a la gente por el cariño demostrado. Pero así como adicta a las redes sociales, no, me cuesta. Incluso muchas veces he pensado en emigrar, porque siento que si al final no tienes mucho que aportar o no vives de ellas, terminan siendo más molestas.

I’m a curious girl, and I like to see everything.

—Can you see yourself spending the next 10 years on TV? —I don’t know. I don’t like to think about the long term, and I don’t have a strategy. I’m more of a day-to-day person. And I get the jobs done that I have in front of me.

—As a public figure, how do you manage your social networks and how often are you on your phone?

—I have it on silent all day, because I think it can take away some of your freedom. Although I am always aware of social networks, and I interact with people, I don’t spend all day on them giving opinions or saying “I want a coffee”, or “I’m going to the toilet” (laughs). I try to stick to the important things or to respond to my fans who show me so much love. But to be one of those social network addicts, no, I couldn’t. I have even thought about leaving them a couple of times, because in the end if you have nothing to contribute, or you don’t make a living from them, then social networks can be a pain.

That’s the guiding concept behind this recently inaugurated bar on Nueva Costanera Avenue in Vitacura, which effectively works as a two-in-one: on the one hand, it’s a wine bar; on the other, it’s a locally sourced fine dining restaurant. Lambrusco Frutti di Bosco

Dubonnet Cocktail

Este cóctel es una creación del bartender Cristián Peredó, del exitoso restorán Tiramisú (Isidora Goyenechea 3141, Las Condes) del barrio El Golf.

Su elaboración destaca por estar hecho en base a Lambrusco, vino tinto frizzante característico de la Emilia Romagna en Italia. La receta consiste en macerar arándanos, frambuesas y frutillas en apricot –licor dulce en base a brandy y damasco–, y luego en una copa balón colocar la mezcla, verter el vino frizzante, agregar hielo y ornamentar con pequeños trozos de fruta. Ideal para compartir en grupo junto a un veraniego plato de melón con prosciutto.

This cocktail was invented by bartender Cristián Peredó, of the successful restaurant Tiramisú (Isidora Goyenechea 3141) in Santiago’s El Golf district. It stands out somewhat for being based on Lambrusco, a sparkling red wine that’s typical of Italy’s Emilia Romagna Region. To make it, first you have to steep blueberries, raspberries and strawberries in an apricot liqueur, and then pour everything into a wine glass, top it up with the bubbly, add ice and decorate with small slices of fruit. It’s perfect for making a batch to drink with friends, perhaps with a melon and prosciutto platter.

Tuvo su aparición en el año 1846, cuando Joseph Dubonnet intentaba crear una bebida con quinina que tuviera un sabor agradable para los soldados franceses y, a la vez, que los protegiera de la malaria. El resultado fue asombroso y con el pasar de los años ha sido replicado por diversas barras en el mundo.

Esta versión lleva 30 ml de Dubonnet, 30 ml de ginebra y un chorrito de bitter de naranja. Hay que verter todos los ingredientes en un vaso mezclador con hielo partido, removerlos bien y colar en una copa de espumoso.

This beauty first appeared in 1846, when Joseph Dubonnet was trying to create a tasty drink including quinine to protect French soldiers from malaria. The result was astonishing and over the years the drink has become popular in thousands of bars around the world. This version includes 30ml of Dubonnet, 30ml of gin and a squirt of orange bitters. Everything is poured into a cocktail shaker with crushed ice, then strained into a champagne flute.

Sherry Cobbler El Cobbler desciende de las bebidas elaboradas con agua y vino preparadas desde la época del Renacimiento.

Actualmente se hace con diversas mezclas en base a Vermut rosso o bianco, y la receta que presentamos es del barman italiano Darío Gentile. En una coctelera macerar frutos rojos y dos rebanadas de naranja con 30 ml de goma. Agregar 90 ml de Jerez y agitar con hielo. Servir en un vaso largo.

El secreto está en rociar bitter Peychaud –un amargo de New Orleans en base a especias y raíces– al finalizar el cóctel, y decorar con frutos rojos. Un infaltable de las terrazas veraniegas, lo sirven muy bien en el Bar Red Luxer (Pío Nono 79, local 73, Patio Bellavista) de Providencia.

The Cobbler is a descendant of the drinks made with water and wine that date back to the Renaissance. Currently they are prepared in a variety of styles based on vermouth rosso or bianco, but the recipe given here comes from Italian barman Darío Gentile. In a cocktail shaker, steep red berries and two slices of orange in 30ml of cocktail syrup. Add 90ml of sherry with ice and shake. Serve in a tall glass.

The secret, however, is to squirt in some Peychaud bitters –from New Orleans, made with spicy roots- at the end, and to decorate with red berries. This one would be at home on any summer terrace, and is served to perfection at Bar Red Luxer (Pío Nono 79, Patio Bellavista) in Providencia.

Absolut Spritz El bartender Rodrigo Muñoz lidera la barra de Room 09 (Antonia López de Bello 40, local 73, Patio Bellavista), uno de los locales de alta coctelería más atractivos de la escena santiaguina actual, ubicado dentro del Hotel Tinto. Aquí, la nueva carta de verano propone un cóctel en base a vodka Absolut, Ramazzotti –bitter italiano compuesto de 33 hierbas–, jugo de limón, té negro y Cinzano Bianco. Un cóctel que viene en una llamativa ampolleta, con sabor a naranja, fresco y equilibrado amargor. Ideal para comenzar la tarde y compartir junto a unas olivas con anchoas.

Bartender Rodrigo Muñoz runs the bar at Room 09 (Antonio López de Bello 40, local 43, Patio Bellavista), which works out of Hotel Tinto and one of the best cocktail bars on the scene in Santiago at the moment. Sangría de Durazno Blanco Esta sangría es una creación del dúo Cuffs & Buttons, formado por Christy Pope y Chad Solomon, quienes han asesorado a varios de los principales bares y restoranes de Nueva York.

En una jarra grande colocar una botella de vino blanco, 60 ml de brandy y licor de durazno, 200 grs de piña trozada, 225 grs de durazno blanco en rodajas, 150 grs de pepino en rodajas, tres ramas de canela, cinco anises estrellados y hielo. Llevar a la nevera toda la noche y al día siguiente servir muy fría en un vaso largo con hielo junto a un ceviche de ostiones.

This sangria was invented by the Cuffs & Buttons beverage consulting company, run by Christy Pope and Chad Solomon, who critique bars and restaurants throughout New York. In a large jug, mix a bottle of white wine, 60ml brandy and peach liqueur, 200g of sliced pineapple, 225g of sliced white peach, 150g sliced cucumber, three sticks of cinnamon, five star anise and ice. Leave it in the fridge overnight and the next day serve it as cold as possible in a tall glass with ice alongside scallop ceviche.

Porque, más allá de su hermoso paisaje de montaña –libre de contaminación, por cierto– ofrece la posibilidad de desconectarse de la ciudad y ejercitarse mientras se recorre este lugar marcado por cumbres nevadas, fauna y flora cordillerana e, incluso, ver un glaciar al que se puede llegar caminando hasta el punto exacto en donde se convierte en un río.

Desde la administración de Conaf (la entrada cuesta 2.500 pesos para adultos), existe un solo sendero de 8 kilómetros, que, desde luego, remata en el glaciar.

Apto para principiantes, hay que destacar

Some 93km from Santiago, the El Morado National Monument is one of the most surprising natural beauty spots in the Metropolitan Region. Besides the stunning mountain landscapes –free of smog, of course- there's the chance to disconnect with the city and get some exercise whilst hiking through snowcapped peaks full of highland flora and fauna.

What's more, you can even walk up to see the exact spot where a glacier becomes a river.

From the CONAF administration point (entry to the park costs CLP 2,500 for adults), there is just one 8km trail that, of course, leads up to the glacier. It’s suitable for beginners, although the first kilometre is pretty steep; from there on, the slope is almost unnoticeable.

The first stretch of the trail leads up to Aguas Panimávidas (at 2.8km along the route), and takes around an hour. This area, which gets its name from the mineral waters that spring up

que solo el primer kilómetro de caminata presenta una inclinación importante, y que desde ahí en adelante la pendiente es prácticamente imperceptible.

El primer tramo de la caminata se podría marcar al llegar al sector de Aguas Panimávidas (ubicado en el kilómetro 2,8 de la ruta), y toma aproximadamente una hora. Este punto, que debe su nombre a las aguas minerales que brotan de manera natural en el sector, es ideal para un descanso antes de continuar hasta la Laguna El Morado. Este segundo tramo comprende casi 5 kilómetros de marcha, hasta alcanzar los 2.400 metros sobre el nivel del mar.

LA FLORA ANDINA DEL SECTOR ESTÁ COMPUESTA POR AL MENOS 300 ESPECIES NATIVAS Y EXÓTICAS, ENTRE LAS QUE DESTACAN EL OLIVILLO DE LA CORDILLERA, LA SIETE CAMISAS Y LA COLA DE ZORRO. naturally from the ground, is perfect for a rest before the next stretch up to the El Morado Lagoon. This second stretch is almost 5km long, and leads up to 2,400m above sea level.

There's grass to lie down on and a stunning view of the mountains, making the shores of the lagoon the favourite spot for lunch and a rest before hikers stride on to the last kilometre of the trail and the San Francisco glacier. This last leg, in the midst of blocks of ice even in summer, is doubtless the highlight of the trip. Wild flowers abound here, and hikers are accompanied all the way by the babbling of the crystalline waters of the nascent El Morado River. In

Ideal para visitar entre mediados de primavera y fines del verano, tenga en cuenta que en invierno el parque se cierra pues las temperaturas son bajo cero y la nieve puede fácilmente superar los dos metros de altura.

If there’s no rush, take the opportunity to rest and observe the amazing Andean plant life along the way. There are at least 300 species here –both native and exotic-, including the highland olivillo tree, hierba blanca, the “siete camisas” bush and foxtail fountaingrass, as well as plenty of Andean cacti (some of which are now endangered). In terms of animal life, as the area is well isolated, geographically speaking, it is full of the typical Andean highland wildlife, mostly represented by birds.

For example, there are lots of sierra-finches, white-sided hillstar hummingbirds, black siskins, Chilean mockingbirds, austral thrushes, Chilean swallows and, near the river, the striking crested duck.

The best time to visit is between midspring and the end of summer. The park closes in winter due to low temperatures and the fact that near the top there can be as much as two metres of snow.

solo 58 kilómetros de la ciudad de Castro, sobre la costa chilota que enfrenta al turbulento Océano Pacífico, la apacible localidad de Cucao parece vivir a un ritmo distinto al del resto del archipiélago. Y todo parte con el viaje –en auto o en los buses que salen regularmente desde el Terminal Municipal de Castro– que tarda una hora y que se disfruta como una buena sinopsis de lo que espera: a través de una escénica ruta (completamente asfaltada) pasan postales de bosques y lagos. Ya en Cucao, en tanto, de inmediato se respira el aire fresco del mar y el fragante de los bosques que marcan estos paisajes.

Luego de exitosas experiencias hoteleras en Castro, con el Palafito Hostel y el Hotel Boutique Palafito 1326, sus creadores cuentan que se vieron prácticamente obligados a crear una nueva alternativa de alojamiento para sus pasajeros. ¿La razón? La mayoría de ellos, sobre todo los extranjeros, les comentaban que querían visitar Cucao. Así, el verano de 2012 fue la primera temporada de este nuevo proyecto, captando de inmediato la atención de turistas que valoran su innovadora apuesta en la

Some 58km from the city of Castro, perched on the coast of Chiloé overlooking the tempestuous Pacific Ocean, the friendly town of Cucao seems to move at a different rhythm to the rest of the archipelago. It all starts with the journey there –by car or on one of the buses that leave regularly from the Castro Municipal Terminal-, which takes around an hour and gives travellers a taste of things to come: winding along a scenic (but tarmacked) road, you'll pass stunning backdrops of woodland and lakes. Upon arrival in Cucao, there’s an immediate blast of fresh sea air that blends with the woodland fragrances that hang over the town.

After establishing the successful Palafito Hostel and Hotel Boutique Palafito 1326 in Castro, the owners of this new project say they were almost obliged to set up another new accommodation alternative for their visitors.

Why? The majority, especially the foreigners, wanted to visit Cucao.

So, in 2012, the project began and immediately caught the attention of tourists who enjoyed its innovative approach for the area: the hostel stands out for being built entirely of native wood and in the traditional Chiloé architectural style.

Quintay

/ REGIÓN DE VALPARAÍSO A 122 kilómetros de Santiago y 47 de Valparaíso, este pueblo de pescadores tiene una rica historia, marcada por su pasado como pueblo ballenero. Porque aquí, a comienzos de la década del 40, se instaló la ballenera más importante de Chile, que funcionó hasta 1967 cuando el país firmó un tratado que prohibió la caza de estos cetáceos. Desde entonces esta apacible caleta –famosa hoy también por su gastronomía–, se ha convertido en un lugar preciado por los hombrerranas, pues –además de una rica vida acuática– en el fondo marino hay variados restos de embarcaciones hundidas. Con siete puntos marcados como “imperdibles” para el buceo, el más importante es el llamado El Falucho, donde se encuentra el naufragio de una embarcación de gran calado hundida a 15 metros de profundidad. Además, está La Caldera, un sitio perfecto para principiantes donde se conserva un barco hundido en buenas condiciones; Los Jardines, donde con suerte aún se pueden encontrar restos de loza japonesa; y Bajos de Playa Chica, punto famoso por su gran biodiversidad y abundancia de especies marinas.

/ REGIÓN DE COQUIMBO Delfines, ballenas, pingüinos, lobos marinos, chungungos y un largo etcétera de especies es lo que se puede ver en esta pequeña caleta ubicada 80 kilómetros al norte de La Serena. Nacida en la década de los 70 gracias a la fiebre del loco, que se apoderó de este lugar hasta

Al contrario de lo que podría pensarse, la mejor época para bucear en Punta de Choros es durante el invierno, cuando el agua más fría inhibe la presencia de fitoplancton, dando como resultado aguas más prístinas. que se exterminó con este recurso en la zona –los interminables conchales junto a la playa son la mejor prueba de la sobreexplotación–, hoy la caleta vive del turismo gracias a su rica vida marina –producto de las aguas frías de la corriente de Humboldt– alojada en la Reserva Nacional Pingüino de Humboldt, que también abarca la vecina Isla Damas y la caleta Chañaral de Aceituno. Más allá de los populares paseos en lancha para observar la biodiversidad de la zona, el consejo es aprovechar la tranquilidad y claridad de estas aguas que brindan una visibilidad de hasta 10 metros; factor por el cual desde hace una década Punta de Choros es reconocido como uno de los mejores sitios en Chile para la práctica del buceo. Por último, tenga en cuenta que –al contrario de lo que podría pensarse–, según los expertos, la mejor época para sumergirse aquí es durante el invierno, pues el agua más fría inhibe la presencia de fitoplancton, bajando la tonalidad verdosa del agua y dando como resultado aguas aún más prístinas.

QUINTAY / Valparaíso Region 122km from Santiago and 47km from Valparaíso, this small fishing village has a rich history marked by the whaling industry.

Here, at the beginning of the 1940s, the largest whaling country in Chile was established and worked up until 1967 when the country signed a treaty outlawing the industry. Since then, this friendly little town –famous these days for food-, has become a highly valued site for frogmen thanks to the abundant local sea life and the many shipwrecks to be found on the seabed. There are seven “unmissable” sites for diving here, with the most famous being El Falucho, which is the final resting place of a large ship that now sits 15m below the waves. Furthermore, there's La Caldera, the perfect site for beginners which also has

a well preserved shipwreck; Los Jardines, where, if you're lucky, you can find Japanese ceramics; and Bajos de Playa Chica, a famous spot thanks to its rich biodiversity and abundant sea life. Who to dive with? Buceo Quintay (buceoquintay.com).

PUNTA CHOROS / Coquimbo Region Dolphins, whales, penguins, sea lions, sea otters and a long list of other species can be found at this small coastal village that’s 80km north of La Serena. The town was established in the 70s during the “abalone rush” that took over the region until the shellfish stocks were exhausted in the region (the seemingly endless shell piles that line the beaches are proof of this overexploitation). These days, the town

lives from tourism thanks to its rich marine life -thanks to the cold Humboldt Currentthat is these days protected by the Humboldt Penguin National Reserve that also takes in Damas Island and the town of Chañaral de Aceituno. Besides the popular boat trips that take tourists out to spot wildlife, this is an excellent place to take advantage of the clarity of the water that allows for up to 10m visibility; indeed, Punta de Choros has been renowned for more than a decade as one of the best diving spots in Chile. Finally, bear in mind that –despite what you might think-, according to experts, the best time to jump in is during winter. At this time of year, the cold temperatures inhibit the growth of phytoplankton, meaning the waters become bluer and clearer.

Los que saben dicen que una de las razones detrás de este fenómeno se debe a que Los Molles está ubicado justo en el límite geográfico entre el norte y el sur de Chile, lo que implica que en su fondo marino se mezclan gran cantidad de especies. ¿Por ejemplo?

Estrellas de mar, peces como bilagays, trombollitos de tres aletas, lobos marinos; además de hermosos bosques de

huiros donde abundan esponjas de mar amarillas, azules y naranjas. Con una decena de puntos para practicar buceo –todos a una profundidad que no supera los 15 metros–, no olvide visitar el parque Puquén: una reserva ecológica de flora esclerófila, hogar de una variada avifauna marina, famosa por una entrada de agua entre roqueríos por donde el agua del mar sale expulsada como si se tratara de la respiración de una ballena.

LOS MOLLES / Valparaíso Region In the far north of Chile's Valparaíso Region, right on the border with the Coquimbo Region, this touristy little fishing town near La Ligua (192km from Santiago) has a long beached that attracts thousands of visitors throughout the year. The food here is great, too, with fresh seafood brought in every morning to the local market from nearby towns such as Chigualoco and Pichidangui.

But this is also an excellent spot to learn how to dive thanks to the variety of sea life to be found at just 10m below the surface. Those in the know say that one of the reasons behind this blooming ecosystem is that Los

Molles sits right on Chile’s north-south dividing line, meaning the sea floor is awash with a mixture of many different species.

Some examples? Starfish, bilagay rockfish, Cunningham’s triplefins, sea lions, and underwater giant kelp forests that shelter yellow, blue and orange sea sponges. There are a dozen places to go diving here –all under 15m in depth-, but don’t miss Puquén Park: an ecological reserve for desert plants, that’s home to a host of sea birds and is famous for its blow hole, where sea water bursts into the air as if there’s a whale trapped beneath the rocks. MONUMENTO NATURAL PICHASCA A 113 kilómetros de La Serena, en la comuna de Río Hurtado, Región de Coquimbo, este Monumento Natural es parte de la llamada ruta Antakari, que une la ciudad de Vicuña con la localidad de Río Hurtado, por donde transitaban los antiguos pueblos originarios de la Región de Coquimbo. En este lugar se descubrió el primer fósil de un dinosaurio de Chile, cuestión que marcó un hito para la historia de la ciencia en nuestro país. Chug Chug Geoglyphs Located some 20km from the María Elena saltpetre works, and 60km from Calama in Chile’s Antofagasta Region, the Chug Chug geoglyphs are the largest in the north of Chile, and among the most important in the world.

This is a restoration project in an archaeological park that houses relics from the Quechua, Aymara and Atacama peoples, headed by archaeologists from the Desierto de Atacama Foundation. The tour highlights the signposts that the site’s ancient inhabitants used to guide themselves along the desert caravan routes.

There are more than 500 figures in total, including geometric shapes such as concentric rhombuses and circles, and zoomorphic depictions of lizards, birds and fish. This is the site where the first dinosaur fossil was discovered in Chile, a scientific landmark for the country. CAJÓN DEL MAIPO En la Cordillera de los Andes, 50 kilómetros al sureste de la ciudad de Santiago, en la Región Metropolitana, este bucólico valle estuvo cubierto por mar hasta que hace 20 millones de años comenzó a formarse esta cordillera. Cuando el agua se retiró, quedaron los restos de lo que fue fondo marino. De entonces, uno 126

de los mayores secretos se esconden en el Valle de las Arenas, donde se pueden encontrar huellas de saurópodo, una especie de dinosaurio herbívoro. RESERVA BIOLÓGICA HUILO HUILO En los Andes patagónicos de la Región de los Ríos, 150 kilómetros al este de Valdivia, Huilo Huilo es una reserva ecológica privada, abalada por la Unesco, donde se implementan variados proyectos de conservación de especies que están en peligro de extinción, como la ranita de Darwin y el huemul del sur.

La primera fue descubierta por Charles Darwin en 1834 y se trata de un diminuto anfibio que tiene una curiosa forma de reproducción, llamada “noemelia”.

Consiste en que es el macho quien guarda los huevos en la boca, hasta que se convierten en renacuajos. Por otra parte, para proteger al huemul, especie que cuenta con solamente 1.500 ejemplares en el mundo, se instaló infraestructura adecuada para reproducirlos en cautiverio, y así poder aumentar su población.

—The last time I went on holiday with my sister, last summer: we went to Guatemala with its rich culture. It was an incredible and very enriching experience.

—¿Norte o sur de Chile?

—Me gustan los dos. Estoy enamorada de Isla Damas, Punta de Choros, Pan de Azúcar, el desierto de Atacama. Mi familia es de Traiguén, en el sur, donde también hay lugares increíbles, como Huilo Huilo, Los Lagos, Puerto Varas.

—North or south of Chile?

—I like both. I really love Isla Damas, Punta Choros, Pan de Azúcar, and the Atacama Desert. My family is from Traiguén, in the south, where there are also some great locations, such as Huilo Huilo, Los Lagos, Puerto Varas.

—¿Ciudades o naturaleza?

—Naturaleza, sin duda.

—Cities or nature?

—Nature, no question.

—¿Museos o parques?

—Depende del museo y del parque, pero creo que prefiero los museos. De todos modos, siempre hay que encontrar un buen equilibrio.

—¿Mantel largo o comida callejera?

—La comida más tradicional de los lugares que visitas.

—¿Viajar solo o acompañado?

—Soy pésima para estos cuestionarios, jajaja. Creo que los dos formatos tienen sus ventajas, aunque todo depende del proceso vital en el que estés.

—¿Qué es lo primero que echas a tu maleta?

—Mi cámara fotográfica, ropa interior y el bikini.
