Más tarde, un lugar imperdible en el centro es el Mercado de la Recova, que reúne diversos locales de artesanía y productos locales como las tradicionales papayas en conserva, entre otros productos provenientes de los valles agrícolas cercanos. Ideal para comprar un souvenir, en el segundo piso del edificio, además, encontrará una decena de restoranes y picadas dedicadas sobre todo a los pescados y mariscos.

Of course, the best place to start is with its history. Founded in 1544, La Serena is Chile’s second-oldest city, and you can live and breathe that history in the beautiful historical quarter, which is home to some stunning examples of neo-colonial architecture: some of the churches date back at least a couple of centuries, and the picturesque squares will transport you back in time to the city’s quiet provincial past. You can start, for example, on Avenida

Por último, otra gran escala en la ciudad es el Museo Arqueológico (Cordovez esquina Cienfuegos s/n; museoarqueologicolaserena.cl), que cuenta con una colección de 25 mil objetos precolombinos, con destacadas piezas de cerámica diaguita, uno de los pueblos originarios que habitaron zona.

Puro Elqui

Sinónimo de aire puro y tranquilidad, el Valle del Elqui es, con justa razón, uno de los destinos más famosos del país.

Y un gran lugar para entender de qué se trata esa mentada paz es la hermosa plaza de Pisco Elqui, el pueblo más fotogénico del valle. El mismo que en verano es invadido por mochileros, pero que en otoño e invierno es un apacible y soleado oasis.

Si está abierta, entre a su centenaria iglesia levantada junto a la plaza. Más tarde, tome unos minutos para pasear por las calles del centro, mirando tiendas esotéricas y de artesanías y, más tarde, coma un bocado natural en sus saludables restoranes y cafés. Cerca de Pisco Elqui, vaya también a Montegrande, el epicentro cultural de la zona debido a que aquí se encuentra la casa-escuela –hoy convertida en museo– de Gabriela Mistral. Se trata de una tradicional casa de adobe de la

Then, lose yourself in the cobbled streets of the city centre, and take a peak in any one of the stone-built churches. Perhaps try the cathedral -built in 1844 and home to the largest functional organ in the north of Chile- or the Santo Domingo, La Merced and San Francisco churches, where you can really appreciate the importance of the Catholic faith to the city’s past.

Moving on, another unmissable highlight is the La Recova Market, which houses a wide range of handicraft stalls and locally sourced agricultural produce such as the famous papayas in syrup and other products from the nearby fertile valleys. It’s the perfect spot for a souvenir, and the second floor is also home to a dozen or so restaurants and cheap eats that serve up delicious ocean-inspired dishes.

Finally, the city’s other big historical draw is the Archaeological Museum (on the corner of Cordovez and Cienfuegos s/n; museoarqueologicolaserena.cl), which has over 25 thousand pre-Colombian pieces in its permanent exhibition, with priceless examples of ceramics from the Diaguita culture, one of the first groups of humans to settle in the area.

Pure Elqui Synonymous with fresh air, the Elqui Valley is, with good reason, one of the jewels in Chile’s crown. And perhaps the best place to get a feel for the peace and quiet is in the beautiful village of Pisco Elqui, surely the most photogenic in the valley. In summer, the place is crawling with backpackers, but in autumn and winter it’s a veritable oasis of calm and relaxation.

zona, donde se pueden apreciar muebles y otros objetos que sobre todo pertenecieron a Emelina, hermana de la Premio Nobel, quien trabajó como profesora y funcionaria del correo del pueblo.

Por último, recuerde que no se puede ir del valle sin pasar a conocer alguna de sus tantas plantas pisqueras, o las bodegas de vinos y fábricas de cerveza que cada temporada aparecen en el sector.

Parque marino

Muy pocos sabían de Punta de Choros hace quince años. Acorralado entre el Pacífico y el desierto de atacama, 120

kilómetros al norte de la Serena, hasta fines de los años 80 no era más que un caserío polvoriento donde una decena de familias sobrevivían en construcciones precarias, de cartón, lata y madera. Muy atrás había quedado la época de bonanza de los años 70, cuando gracias a los locos, esos codiciados y deliciosos moluscos, la caleta se convirtió en un imán para pescadores en busca de fortuna que llegaron de todo Chile.

Después, como ya decíamos, en los 80 y comienzos de lo años 90, Punta de Choros permaneció en el olvido. Y su suerte cambió solo cuando un grupo de

Your final stop in the valley has to be one of the many pisco distilleries, wineries or vineyards that are dotted throughout the area.

Marine Park Not many people knew about Punta de Choros fifteen years ago. Standing where the Pacific meets the Atacama Desert, some 120km north-east of La Serena, until the end of the 80s it wasn’t much more than a dusty

Tras Isla de Pascua y Juan Fernández, según los expertos, aquí están las mejores aguas del país para el buceo, pues son tranquilas, muy claras y abundantes en sinuosos bosques de algas y una variada fauna marina; que –además de delfines– incluye, por ejemplo, a la gran ballena azul. Tan espectacular y rica es esa flora y fauna marina que en 2005 hicieron posible que se decretara que las aguas que bañan Punta de Choros se convirtieran en la primera reserva marina de Chile.

backwater where a dozen or so families eked out an existence in shacks made of cardboard, tin and flotsam. The town’s golden age in the 70s was long in the past when, thanks to the delicious abalone, the fishing village had served as a magnet for adventurous fishermen from around Chile looking to make a fortune in shellfish.

Later on, as we mentioned, in the 80s and early 90s, Punta de Choros was lost to memory. The town’s luck only turned after a group of bottlenose dolphins decided to establish a colony just off shore.

That was when the tourists began arriving en masse in the summer months. The place was changed completely, and today the village is filled with pretty little cabins for lodging, restaurants and, of course, diving schools where you can take classes to explore the rich waters of the Pacific.

Experts say that after Easter Island and Juan Fernández, this is the best place in Chile for scuba diving: the waters are calm, crystal clear and teeming

with kelp forests and sea life including, besides the dolphins, the great blue whale. The area is so spectacular that in 2005 the ocean immediately around Punta de Choros was made the very first marine reserve in Chile.

Difícil encontrar un mejor souvenir que chocolates y, por eso, Mendoza también es un gran destino. Con buenas chocolaterías por toda la ciudad, gran dato para comprar estos productos, además de alfajores, es la clásica La Cabaña (chocolatelacabana.com), fábrica con más de 40 años de historia y dos locales en la ciudad. En pleno centro, otro dato seguro es Chocolezza (chocolezza. com.ar), donde también ofrecen tures para conocer la fabricación de sus productos.

It’s tough to find a better souvenir than chocolate, and Mendoza is an excellent destination for chocoholics. There are wonderful chocolate shops all over town, but perhaps the best bet is to visit the iconic La Cabaña (chocolatelacabana. com), a chocolate factory that has been around for 40 years and has two branches. Right in the city centre, meanwhile, you’ll find Chocolezza (chocolezza.com.ar), where there are also tours showing how the products are made.

With a long-standing agricultural tradition, Mendoza far more than Malbec. For example, its farm produce, like potatoes and fruit, are among the most sought-after in the country.

So don’t forget to buy a couple of jars of preserves, such as sun-dried tomatoes, or, of course, olive oil, which is now a star product of the region. For olive oil and preserves try Pasrai (pasrai.com.ar), in Maipú.

Con más de 1.200 bodegas en toda la región, Mendoza es la provincia vinícola más importante de Argentina. Alrededor de cien viñas cuentan con servicios para turistas, desde hoteles y restoranes hasta los tradicionales tures para conocer el proceso de fabricación del vino. Buen dato para pasear y comer es la bodega Familia Zuccardi (familiazuccardi.com), en Maipú, mientras que para comprar vinos en el centro de la ciudad considere Winery (Chile 898), donde encontrará buena variedad y ofertas.

With more than 1,200 wineries throughout the region, Mendoza is surely the most important winegrowing province in Argentina. Around 100 vineyards lay on services for tourists, from hotels and restaurants to traditional tasting tours that help you better understand the production process. A great option for a day out and a bite to eat is the Familia Zuccardi winery (familiazuccardi.com), in Maipú. If you are looking for a few bottles whilst in town, however, consider Winery (Chile 898), which has an excellent range and some great offers.

la vida es tranquila y quitada de bulla en Montevideo, la capital de Uruguay, en Colonia del Sacramente, un precioso pueblo de calles adoquinadas ubicado a menos de dos horas en auto (177 kilómetros), lo es aún más. Por años, este lugar se ha alzado como uno los más emblemáticos paseos para hacer por el día en esta parte del río de La Plata.

La mayoría de los turistas llegan en barco desde Puerto Madero, en Buenos Aires, donde están los terminales de las empresas Buquebús y Colonia Express, en una navegación de una hora por el río. Pero también se puede llegar desde Montevideo, en un viaje que, como escala previa, permite conocer otras colonias históricas, como Colonia Suiza y Valdense, famosas por sus quesos y chocolates artesanales.

If you think things are laid back in Montevideo, Uruguay’s capital, you’ll find Colonia del Sacramento, a beautiful little village with cobbled streets just two hours and 177km away, positively horizontal. For years, Colonia has been lauded as one of the most iconic day trips to take on for anyone visiting the River Plate region.

The majority of tourists here arrive by ferry from Puerto Madero, in Buenos Aires, where there are offices for the Buquebús and Colonia Express ferry companies, in a trip that takes around an hour. But you can also drive here from Montevideo and stop off on the way at other colonial landmarks such as Colonia Suiza and Colonia Valdense, both famed for their handmade chocolates and cheeses.

Colonia es la ciudad principal del departamento uruguayo del mismo nombre, una zona de 6.106 kilómetros cuadrados donde se vive de la agricultura, los frutales, los viñedos, olivares, granjas lecheras y, por cierto, del turismo.

El inicio

El casco histórico de Colonia fue nombrado Patrimonio de la Humanidad por la Unesco en 1995 y, por cierto, es el punto de partida para cualquier visitante. Durante el siglo 17, Colonia formó parte de un territorio que era disputado entre España y Portugal, ya que se encontraba justo en el límite de ambos imperios. Este lugar era un punto estratégico que había que dominar si se quería tener el control del tráfico comercial por los ríos de la Plata y Paraná.

The Beginning The old town of Colonia was named a UNESCO World Heritage Site in 1995 and, of course, is the starting point for any visit to the village. During the 17th century, given its position right on the border of the Spanish and Portuguese colonies, Colonia was part of a disputed area that changed hands several times.

The town was a strategic vantage point that one had to hold in order to control commercial traffic up the River Plate and River Paraná.

As such, the town became a fortress that was invaded and re-negotiated for centuries by the Spanish and Portuguese vassals. Indeed, these changes are still apparent: the historical

El epicentro de todo está en la llamada Calle de los Suspiros, un pintoresco y romántico pasadizo adoquinado y flanqueado por casas de colores y buganvilias. Allí funciona un bar y restorán emblemático, Buen Suspiro (BuenSuspiro.com), donde tienen buenos picoteos con quesos locales, y donde venden conservas e incluso libros de autores uruguayos. La puerta de entrada es muy pequeña, tanto como el lugar, que se llena: la mayoría de las mesas son para dos personas.

El paseo por la zona colonial debe incluir un recorrido a lo largo de la calle De España, por donde se llega al Muelle Viejo, y desde ahí observar el Bastión del Carmen, un antiguo fuerte que se ocupó para defender la ciudad. Hoy allí funciona un centro cultural.

También es recomendable subir hasta el faro de Colonia, que regala una vista muy bonita desde su mirador, a 35 metros de altura (incluso se ve Buenos Aires). Y conocer alguno de sus múltiples museos, como el Museo Municipal, que está al lado de la Plaza Mayor. Funciona dentro de una preciosa casona de estilo portugués del siglo 18, y exhibe una interesante colección sobre la cultura indígena local, restos paleontológicos de la zona e incluso material sobre la cultura torera de este lugar:

The epicentre of all this is Calle de los Suspiros, a picturesque and romantic cobbled street flanked by colourful houses and bougainvillea. The street is home to an iconic bar and restaurant, Buen Suspiro (BuenSuspiro. com), which has great sharing platters with local cheeses, and sells a variety of curiosities from preserves to books by Uruguayan authors. The entrance is small, as is the restaurant itself, which soon fills up (most of the tables are for 2).

Your trip around the colonial area should include a walk along the length of De España street, which leads to Muelle Viejo, a dock where there’s a great view of the Bastión del Carmen, an old fort once used to defend the city. These days it’s a cultural centre.

It’s also worth taking the time to explore the Colonia lighthouse, whose top level has a superb view over the town and river from 35m up (you can even see Buenos Aires). You should also take the time to explore some of the many museums in the town, such as the Municipal Museum, found on Plaza Mayor. The museum is set up inside a beautiful Portuguese-style townhouse from the 18th century, and exhibits a fascinating collection of local indigenous culture, regional prehistoric fossils and even artefacts from the town’s bullfighting past. You can also try a “chivito” -a traditional Uruguayan sandwich combining beef, cheese, ham, pancetta, eggs, lettuce, tomato and mayonnaise- or some great homemade pastas such as the mouth-watering gnocchi with scarparo sauce.

uando habla suele rematar sus reflexiones con una risa corta algo nerviosa, a veces como búsqueda de aprobación, en otras como señal de ironía. Intercala palabrotas en dosis precisa. Tiene muletillas. Repite “¿cachai?” cuando quiere asegurarse de que le sigue el hilo. Natalia Valdebenito (38), la actriz dramática convertida en la comediante de stand up más famosa de Chile tras su paso por el Festival de Viña del Mar en 2016, hoy disfruta el presente.

“Estoy pasándola demasiado bien”, resume. Y tiene motivos. En Netflix hay dos especiales suyos, aunque dice que no le quita el sueño figurar en la plataforma de entretenimiento del momento. “Soy bien poco romántica en ese sentido. Siento que es el resultado de un trabajo. Eso sí es emocionante, el camino que se hace para llegar a ciertas cosas. Pero, como simbólicamente, no sé… (ríe). No entro en esa volada más mística. Soy súper concreta y me siento orgullosa ¿cachai?”, explica.

Natalia llegó a Netflix por una especie de carambola del billar. Viajó a Estados Unidos para reunirse con Comedy Dinamics, una productora que se especializa en stand up, para concretar un álbum titulado “Gritona”, que ya está disponible en las plataformas iTunes y Spotify. Para ese encuentro llevaba consigo el show que había filmado en el teatro Caupolicán repleto en 2016, y fue Comedy Dinamics quien hizo el puente.

When she talks, she tends to end a sentence with a short, almost nervous giggle. At times as if seeking approval, at others, ironically.

She speaks with just the right amount of swear words. She has comfort words. She repeats “You get me?” a lot, when she needs to know that you’re following her. Natalia Valdebenito (38), the actress who became Chile’s most famous stand-up comedian following a star turn at the Viña del Mar Festival in 2016, is really enjoying her life.

“I’ve just been having the greatest time”, she says. And there’s good reason. She has two Netflix specials, although she says she doesn’t feel the pressure of being on the hottest entertainment platform in the world. “I’m not very emotional in that sense. I just feel like it’s the end product of some hard work. That part is exciting, the journey that takes you to that level. But, symbolically, I don’t know... (laughs) I’m not going to get all mystical about it. I’m very down to earth and I feel proud, you get me?”, she explains.

Natalia arrived on Netflix thanks to a little bit of luck. She travelled to the USA to meet with Comedy Dinamics, a production company that specialises in stand-up, to nail down an album called “Gritona”, that is now available on iTunes and Spotify. She took a copy of the show she had filmed in front of a packed-out Teatro Caupolicán in 2016, and Comedy Dinamics passed it on to the streaming company.

—And Netflix approached me– she says, brimming with pride.

The actress says she doesn’t watch many specials like that, to try to keep her distance:

—I feel like if you watch a lot of comedy, and maybe it’s just me, because like a lot of people I’m self-taught, you start to copy, and to steal.

I see it and feel it.

—Copying is a common thing in art.

—I feel like stand-up is all about personal style, but in any case, if you like something, before you know it you can be copying it. I don’t think it’s like “mmm... I’m going to start to watch this so I can copy it”, but you do start to repeat things you like. On my end, I feel like I’m still a work in progress, even though I’ve achieved certain goals already. I’m a comedian who’s constantly in the making. I don’t think I’m home and dry yet. I’m fighting my way through just like everyone else.

—Y Netflix se acercó a mí –dice sin ocultar su orgullo.

La actriz cuenta que no ve muchos especiales de ese tipo, por un asunto de distancia: —Siento que cuando las personas ven mucha comedia, y esta puede ser mi percepción, porque soy autodidacta igual que varios, empiezas a copiar, a robar. Eso lo veo, y lo siento.

—Copiar es habitual en el arte.

—Siento que el stand up tiene que ver con el estilo propio, pero igual, cuando algo te gusta, no te das ni cuenta cuando lo estás copiando. No creo que sea así onda “mmm… voy a empezar a ver esto para copiarlo”, pero se da eso de repetir algo que te gusta. Por mi parte, siento que todavía estoy en proceso, por más que tenga algunas metas cumplidas. Soy una comediante en construcción constante. Para nada siento que llegué a un puerto. Estoy peleándola igual que todos.

—What needs to happen before more Chilean comics get on Netflix or Comedy Central?

—I don’t know, haven’t the foggiest. Maybe it’s about what people like, or that Argentina has a bigger scene, with more comedians, and they have more weight behind them. I hope it’s just part of a process and that soon they’ll start paying attention to everyone. I really hope so.

The actress writes her own material, but confesses that she isn’t clear on the time it takes to go from having an idea, to getting a script together and then to the live show. For Natalia, the creative and productive process is never ending.

—I’m immersed in it all the time, trying to break up the routine of whatever I’m doing. I also ask myself how long it takes me to write something. I could say maybe a week to sit down and get the idea out. But that would be a lie because I’m always walking around, staring into space, taking notes, re-thinking, and that’s also part of the process. While I’m

—¿Qué falta para que más comediantes chilenos lleguen a Netflix o Comedy Central?

—No sé, no cacho. A lo mejor tiene que ver con los gustos, con que Argentina entró más fuerte, son más y así también hacen más fuerza. Yo espero que sea parte de un proceso y se empiecen a fijar en todos. De verdad, lo espero.

La actriz trabaja sus propios guiones pero confiesa que no tiene muy claro cuánto demora entre el nacimiento de una idea, el libreto y el show en vivo. Para Natalia, la cadena creativa y productiva nunca se detiene.

—Estoy todo el tiempo en esta volada, tratando de cambiar la rutina que estoy haciendo. Yo también me pregunto cuánto me demoro en escribir. Podría decir una semana en sentarme y concretar. Pero sería mentira porque

—I would love to be cooler but I can’t –she says–. I think the casting was really interesting. The character building is great, and the twists in the script were fun.

—It’s a classic, although the characters and the situations became more and more exaggerated.

—Yes. And the themes. They are quite sexist.

—Those were different times.

—But I think it’s that we are looking at things in a new light now: music, writers. It’s fun to look at things under the surface. I liked “Friends”, but I think it’s because I actually liked that kind of humour. And you’re right, in the end they became caricatures of themselves.

Despite being a graduate of an acting academy, Natalia doesn’t miss drama: —Is the actress inside me yearning to get out? Not at all. I feel like comedy is just as powerful, beautiful and valuable. I don’t feel like I’m wasting my time with it. I have no idea if I’ll ever go back to doing drama. I won’t do it soon. It seems boring.

—You’re very active on social networks and you get caught up in debates, doesn’t it tire you out?

Siento que hay una elección de actores súper interesante. El trabajo de personajes me gusta mucho, las vueltas que se fue dando el guion.

—Un clásico, aunque los personajes y las situaciones se hicieron cada vez más caricaturescos.

—Sí. Y las temáticas. Son machistas.

—Era otro el contexto también.

—Pero creo que es la vuelta que le estamos dando a todo: a la música, los escritores. Es interesante ver las cosas debajo del agua. Me gustaba (“Friends”), pero me

—Yes, but when you put the phone down it all disappears. I don’t take it that seriously. I think that it’s just another place where I can speak my mind; I think everyone sees it that way in the end. I don’t want to fight people who are just looking for a fight. I think there’s room for everyone, especially on social networks. I’ve learned to block and to differentiate, and to interact as little as possible with hateful people.

—Can you joke about anything or are some things off limits?

—Mmm, yes. But you use your intelligence to choose what to joke about. You can joke about anything, but your point of view, and the way you talk about the subject or even the way you ignore it, speaks volumes of your intelligence as a comic.

—If it were up to you, which comedian should definitely be at the next Viña Festival?

—Nathalie Nicloux. I’d love there to be more variety in the type of comedy there. It would be great. To see diversity in that respect, too. There are some awesome trans, gay, lesbian and feminist comedians. You can find talent everywhere in Chile and Latin America.

Graduada de una academia como actriz, Natalia dice que no extraña el drama: —¿Si la actriz que habita en mí está insatisfecha? Para nada. Siento que la comedia es igual de poderosa, hermosa y valiosa. No siento que esté perdiendo el tiempo situada en este lugar. No tengo idea de si alguna vez volveré a hacer drama. Por ahora no. Me parece fome.

—Eres muy activa en redes sociales y te enfrascas en discusiones, ¿no te agota?

—Sí, pero dejas el teléfono a un lado y desaparecen. No me lo tomo tan en serio. Siento que es una de tantas tribunas para manifestarse y la gente las utiliza del mismo modo. Yo no podría estar en contra de los que están en contra. Creo que cabemos todos, sobre todo en una red social. Aprendí a bloquear y a diferenciar, así que me comunico lo menos posible con gente odiosa.

—¿Se puede hacer humor de todo o hay temas vedados?

—Mmm, sí. Pero con tu inteligencia eliges de qué hacer comedia. Se puede hacer de todo, pero tu punto de vista, tu forma de abordar el tema o de, incluso, no usarlo, habla mucho de tu inteligencia como comediante.

—Si de ti dependiera, ¿qué figura del humor debiera llegar al próximo Festival de Viña?

—Nathalie Nicloux. Igual me encantaría que hubiera variedad de tipos de comedia, sería muy bonito. La diversidad también va con eso. Hay comediantes trans, gays, lebianas, feministas cuáticas. Hay harto donde buscar tanto en Chile como en Latinoamérica.

La mediática chef Narda Lepes abrió hace apenas unos meses su primer restorán. Eligió un amplio local ubicado en el sector de Bajo Belgrano, donde los vegetales, la pesca del día y los mejores productos de pequeños productores son los protagonistas.

The era of white walls, highly orchestrated service and silver platters is now a thing of the past, as Mandiola has taken the restaurant through a full 180 and opted to refresh the entire concept. How? By changing the menu. Yes, it's still elegant and cutting edge, but Europe is no longer the focus. Instead, it's Chile and the superb local ingredients. Besides, the whole premises have been remodelled: some walls have been knocked down to make the dining room appear larger, and there are pictures on the walls, music -something taboo here in past times-, and even a new closed terrace.

Another new feature at this restaurant that reflects the new youthful energy that Mandiola wants to inject into the menu is the new bar Jardín Secreto, which can be found at the back of the premises. It opens on the last Wednesday of each month and serves up unique cocktails and tasty, more relaxed, dishes at prices that are much kinder on the wallet than the main restaurant.

The bar is run by bartender Michelle Lacoste, a specialist in the use of herbs and roots in cocktails, which means that the drinks available are fresh, fine and delicately balanced.

Este Cognac Grand Champagne es la expresión más pura y fina del terruño de los grandes cognacs franceses, responsabilidad de una de las casas que aún mantienen una tradición artesanal. A pesar de esto, hay que aclarar que la familia no cultiva viñedos propios, no fermenta sus vinos, no destila: son négociants: compran el mejor alcohol de la Grande Champagne de entre 10 a 15 años, el considerado de excelencia en la zona. El arte de la Casa Delamain corresponde al trabajo en la crianza y envejecimiento de estos alcoholes. Utilizan barriles de la zona de Lomousin y Tronçais, curados de al menos seis años, envejeciendo su cogñac con una graduación natural y mezcla final de los alcoholes.

El tipo Pale Ale & Dry es la mezcla más joven –a pesar de tener una edad media de 25 años– con un grado de 50% vol., que en lugar de añadir agua destilada –la que destruiría su delicadeza–, se añade un coñac muy añejo y suave, conocido como vieilles faibles, por 24 meses. However, it should be noted that the family doesn't have its own vineyards, nor does it ferment 84

wine or distil spirits: they are négociants, meaning they buy and bottle the best Grande Champagne aged between 10 and 15 years, which is regionally considered to be the best. The true art of Casa Delamain lies in the maturation and aging of these delicate alcohols. They use regionally sourced barrels from the Lomousin and Tronçais Region, each cured for at least six years, and age their cognac naturally to achieve a natural alcohol percentage and a fine final blend. The Pale Ale & Dry is the youngest of them all -despite having an average age of 25 years- and comes in at 50% vol. Instead of using distilled water to soften the kick -which would wreck the balance of flavours-, very old and smooth cognac, known as vieilles faibles, is added for 24 months. Although, to be fair, it was the colonials who brought over the fine art and science of distillation. All the indigenous American peoples had their own fermented drinks, with the most famous being the Aztec "pulque". Credit for creating and developing the worldwide popularity of tequila goes to the Spaniards, who took the agave plant -the base ingredient for distillation- to the next level to ensure it would be accepted by both Europeans and Americans alike. José Cuervo was the first to throw his full confidence behind the new spirit, at the end of the 18th century, and made huge contributions to distribution both in México and abroad. Rocado Tequila Reposado is the result of the union of two families that both have long histories in the distillation business: the Mexican family of Don Rodolfo González –master distillers for over 125 years– and the Torres family, which has been in the wine trade since 1870. Evelyn Leyton and Eric Caballero are the people responsible for the first whisky made with grains from Chile’s La Araucanía Region. After a period of experimentation with different spirits, they decided in 2012 to turn their attention to whisky with denomination of origin in the Biobío Valley.

The spirit has three unique ingredients: regional grains, Patagonian peat –the organic material used as fuel to dry the mash and infuse it with a smoky flavour-, and water from the coastal mountains. It is double distilled in 300l copper stills, and aged for four years in oak barrels in the area around Talcamávida. uy cerca del centro de Santiago, el Parque Natural Aguas de Ramón es una de las áreas verdes más sorprendentes de la ciudad, ideal para quienes gustan de caminar en familia en medio de la naturaleza. Inaugurado a fines de 2010, el parque cuenta con tres circuitos principales, pensados para todos los estados físicos.

El más sencillo de todos es el sendero “Canto del Agua” –nombre que proviene del sonido que producen las aguas del Estero de Ramón, que corre junto al camino–, perfecto para ir con niños pues está especialmente diseñado para la educación ambiental de los más pequeños. Con bosques de litres y quillayes, este

circuito destaca por su señalética detallada, miradores y sitios de picnic. Deteniéndose para tomar un par de fotos y un breve descanso, calcule unas dos horas para completar este recorrido.

Algo más exigente, el circuito Los Peumos –de dificultad media-baja–, toma alrededor de cuatro horas. Se trata de algo más de 6 kilómetros que recorren las cara sur y norte de la Quebrada de Ramón. Con excelentes panorámicas de la cordillera en el camino de ida y, si el esmog lo permite, hermosas postales de Santiago de regreso. En este punto, vale la pena destacar que durante el invierno, por seguridad, el parque cierra el acceso los días más lluviosos –o cuando hay amenazas de tormentas–, pues en la zona pueden caer grandes cantidades de agua en pocos minutos e, incluso, nieve.

A short drive from the centre of Santiago, the Aguas de Ramón Nature Reserve is among the city’s most beautiful green areas, and is perfect for a family outing into the wilds. The park was inaugurated towards the end of 2010, and has three main footpaths aimed at different levels of physical fitness.

The most straightforward is called “Canto del Agua” –”Water Song” named after the babbling of the Estero de Ramón River that the path follows–, and is great for kids as it has special areas designed to encourage environmental education. The route is lined with litre and quillay trees and detailed signposts; there are also lookout points and picnic areas. Taking into account some time to take photos and a short break, it should take around two hours to complete the round trip.

For something a little more demanding, try Los Peumos –a medium to low difficulty trail–, which takes around 4 hours to complete.

It’s a 6km run along the north- and south-facing slopes of the Quebrada de Ramón canyon. There are some breath-taking views of the mountains on the way up and, smog permitting, of Santiago on the way down. It’s worth noting, however, that the park closes on rainy winter days for safety reasons -or even if there is the threat of a storm in the hills-, as the area

Finally, the most demanding and adventurous of the trails is the one that leads up to the Salto de Apoquindo waterfall: an almost 30m high cascade that is surely one of the most beautiful natural attractions in the Metropolitan Region. The trail covers a little over 17km of medium to high difficultly terrain, and the round trip takes approximately 8 hours of hiking to complete.

From the office where all visitors have to sign in and pay (see “Walking” below), the trail starts with a demanding climb. After just 20 minutes, you can turn around and take in one of the best views of Santiago you’re likely to find in the region.

Por último, el más exigente y aventurero de los senderos es el que lleva al Salto de Apoquindo: una caída de agua de casi 30 metros, que sin duda se encuentra entre uno de los atractivos naturales más destacados de la Región Metropolitana. En resumen, se trata de poco más de 17 kilómetros, de dificultad alta a media, que, de ida y vuelta, toman unas ocho horas de exigente caminata.

Desde la oficina donde todos los caminantes deben inscribirse y pagar su entrada (ver recuadro “Caminar”), el sendero comienza con una subida exigente, y tras solo 20 minutos de marcha, al dar media vuelta, ya es posible disfrutar una gran panorámica de la ciudad.

Desde ese punto en adelante, el camino avanza entre el bosque esclerófilo compuesto por pastizales, quillayes y litres: la flora nativa típica de la zona, cada día más amenazada.

Con el Estero de Ramón a la izquierda del camino, después de pasar bajo unos cables de alta tensión –que corren en sentido norte-sur–, el ruido de la ciudad desaparece por completo y los únicos sonidos son el viento y canto de pájaros como turcas y queltehues.

La primera parte del sendero “Salto de Apoquindo” es la misma que la de “Los Peumos”, y se separan en una zona boscosa, ideal para descansar unos minutos bajo la sombra de los árboles, antes de seguir la marcha hacia la cascada.

Más adelante, aparece un puente que atraviesa un estero turbulento y la vegetación cambia: con coloridas cactáceas de flores amarillas, rojas y celestes, sobre todo en primavera. Desde este punto, el sendero presenta una subida empinada de unos 250 metros, punto donde hay que evaluar la energía y fuerzas restantes para llegar hasta el Salto Apoquindo o, mejor, empezar el regreso, pues aún quedan los dos kilómetros más duros de la caminata.

Como sea, más o menos cansado, el esfuerzo final vale la pena y al llegar frente al Salto Apoquindo, el cansancio se olvida por completo.

De regreso, el camino es el mismo que el de ida, pero vale pena, en el sector de El Peumo, tomar el desvío hacia la derecha para cruzar un puente colgante y bajar mirando Santiago por la ladera norte del Estero de Ramón.

With the Estero de Ramon stream to your left as you climb, after passing under some power lines -that run from north to south- the sounds of the city fade into nothing, and you are left with the wind and the birdcalls of turcas and queltehues.

The first part of the trail follows the same path as “Los Peumos”, and later diverges in a wooded area that’s great for a break in the shade.

Take some time to rest here before heading up to the waterfall.

Further on, you’ll reach a bridge that crosses a turbulent part of the river and marks a change in the vegetation: colourful cacti with yellow, red and sky blue flowers, especially in spring. From there, the trail takes on a sharp climb for 250m or so, which is a good moment to take stock of how much gas is left in the tank and to decide whether to turn back, as the hardest

UNO / LA DISCIPLINA El randoné se originó hace unos cien años en los Alpes, Europa, donde las nevazones eran tan frecuentes que sus habitantes debían reemplazar los zapatos por esquís para moverse en la nieve. Pero como esto también era un deporte, la gente le encontró el gusto al hecho de remontar un desnivel a pie y luego deslizarse cerro abajo, sin depender de los andariveles. Para caminar hacia arriba, los esquís debían tener una piel que permitiera adherirse a la superficie nevada. En un principio se utilizaron pieles de foca, pero hoy son sintéticas. ¿La mayor gracia de todo esto? Se puede estar completamente solo en la montaña y acceder a sitios a los que de otra forma sería imposible, usando nada más que la propia fuerza de tus piernas. Así, el randoné permite acceder a un mundo sin límites. De hecho, mucha gente compara este deporte con el running, pues es un entrenamiento muy completo y aeróbico.

DOS / LA TÉCNICA El randoné es una disciplina que implica saber esquiar, y hacerlo muy bien. Es decir, no se puede partir por el randoné: primero hay que dominar la técnica del esquí tradicional, pues la idea básica es deslizarse por zonas de nieve virgen, no por pistas aplanadas, lo que dificulta aún más el descenso. Además, hay que tener en cuenta que, por el hecho de internarse en zonas montañosas salvajes, existe la posibilidad cierta de que ocurra una avalancha durante la bajada, para lo cual hay que estar bien preparado. Quien hace randoné necesariamente debe conocer muy bien la montaña, ojalá haber

ONE / The Discipline Ski touring, or randonnée, dates back around 100 years, and began in the Alps, where blizzards were so frequent that locals decided to replace their shoes with skis in order to get about in the snow. But because of skiing's popularity as a sport, people began to spend their spare time walking up hills on skis and then skiing back down again, negating the need for a lift. For the uphill stretch, the skis had to have

a skin that would grip the surface of the snow. At first, seal skins were used, but today they are mostly synthetic. So where's the fun in it? You can be completely alone on a mountain and get to areas that would otherwise be impossible using no more than your own legs and stamina.

Randonnée really is a world without limits. In fact, many people compare the sport to running, as it is a fully aerobic type of exercise.

EL RANDONÉ ES UNA DISCIPLINA QUE IMPLICA SABER ESQUIAR, Y HACERLO MUY BIEN. ES DECIR, NO SE PUEDE PARTIR POR EL RANDONÉ: PRIMERO HAY QUE DOMINAR LA TÉCNICA DEL ESQUÍ TRADICIONAL

TRES / EL EQUIPO Dicho todo lo anterior, el randoné exige contar con un equipo especial. Además de la ropa de nieve, los guantes y las antiparras, es necesario tener unas botas con fijaciones especiales. La diferencia con las botas normales de esquí es que las de randoné cuentan con una fijación que permite desenganchar fácilmente el talón de los esquís, para poder caminar. También se necesita un buen par de pieles sintéticas, las que se ponen en la base de los esquís e impiden que uno se resbale hacia atrás en la pendiente. Cuando se alcanza el punto desde donde se inicia el descenso, hay que despegar las pieles, cambiar la fijación de las botas a “modo esquí” y lanzarse cerro abajo.

Debido a la posibilidad de avalanchas, el equipo básico debe incluir además una pala, una sonda y arva: una suerte de transmisor que emite una señal por radio para facilitar un eventual rescate, en caso de quedar enterrado en la nieve. ¿Dónde equiparse? Tiendas especializadas en randoné y equipos de montaña son Volkanica Outdoors (Suecia 0119, Providencia; Volkanica.cl), Sherpalife (Santa Beatriz 100, Providencia; Sherpalife.cl) y Andes Gear (Varios locales, AndesGear.cl).

CUATRO / EL MOMENTO El randoné está ganando cada vez más adeptos en Chile. La razón principal es que muchos esquiadores se han cansado de la monotonía de las pistas tradicionales en los centros y rehúyen de las muchedumbres. Los expertos suelen decir que nuestro país es un lugar privilegiado para este deporte, pues existen decenas de lugares donde practicarlo, desde Santiago a Punta Arenas.

TWO / The Technique Randonnée requires a background in skiing, and quite a bit of skill.

That is to say, it isn't for beginners.

Firstly, you have to perfect the technique of traditional skiing as you will be spending the entire time off-piste and not on prepared runs, meaning the downhills are more challenging.

Besides, you have to bear in mind that as you'll be taking on areas of almost complete mountain wilderness, the chance of an avalanche increases during the descent, so being prepared could save your life. People embarking on a randonnée trip must know the mountain well, have all the right equipment and ideally have done courses in the discipline.

Randonnée is not for the faint-hearted. With regards to the technique, imaging walking on a cross trainer: you have to slide a leg forward without lifting your foot and coordinate your opposite arm to move in the same motion. It's as if you were ice-skating, but on snow.

THREE / The Equipment With all that in mind, don't forget that randonnée requires some special equipment. Besides mountain clothing, gloves and goggles, you'll need boots with special bindings. The difference with normal ski boots is that ski touring boots allow you to easily lift up your heel to make walking easier. You'll also need to have a good set of synthetic skins to put on the base of your skis to stop you slipping back down the

hill. When you reach the spot where you want to start the descent, you have to slip off the skins and change the bindings on the boots to "ski mode" before shooting away.

Due to the possibility of an avalanche, the basic equipment you take must include a shovel, a probe and an A.R.V.A.: a kind of transmitter that sends a radio signal to search parties attempting a rescue, should you be trapped under the snow.

Where to get the gear? There are a few randonnée and mountain specialists in Chile, such as Volkanica Outdoors (Suecia 0119, Providencia; Volkanica.cl), Sherpalife (Santa Beatriz 100, Providencia; Sherpalife. cl) and Andes Gear (several stores, AndesGear.cl).

FOUR / When to Go Randonnée is growing in popularity in Chile. The main reason is that many skiers have become sick of the monotony of the usual ski centres and want to get away from the crowds. The experts say that our country is a special spot for ski touring, as there are dozens of places to try it out from Santiago to Punta Arenas. Haven't you noticed all the mountains?

In any case, you should always be well prepared, have the right skill set and know how to read the mountain.

There are several companies in Chile who are now specialists in this kind of trip, and run guided tours. Among the best known are Into The Andes (es.intotheandes.com), a specialist in

FIVE / Where to Go Very close to Santiago, the Cajón del Maipo valley seems tailor made for

randonnée. One of the most famous spots is the Valle de las Arenas, which is reached after passing the town of Baños Morales. It's home to Cerro Arenas (4,366m), which has a descent of almost 1000m. There's also the area around the El Morado glacier. Cerro La Union and the San José Volcano also offer great runs, but involve trips of several days.

Another nearby alternative is behind Cerro La Parva, where there is a spot known as La Chimenea, which is only for experts: the descent passes by rocks and through narrow crevasses. Portillo is another option, with its famous "Super C": an area of virgin snow that starts on the mountain's ridge and extends to

Uno de los lugares más famosos es el Valle de las Arenas, al que se llega pasando el pueblo de Baños Morales. Allí está la canaleta del cerro Arenas (4.366 m), que regala un descenso con casi mil metros de desnivel. También está la zona del glaciar colgante de El Morado. El cerro La Unión e incluso el volcán San José, que se sube en varios días de expedición.

Otra alternativa es detrás del cerro La Parva, donde se encuentra un lugar conocido como La Chimenea, solo para expertos: la bajada se hace entre rocas, con pasadizos angostos. Igual que en Portillo, donde destaca la llamada “Súper C”, una zona de nieve virgen que comienza en el filo que se extiende al sur del cerro Ojos del Agua, y que tiene una canaleta en curva de 1.200 metros de desnivel.

El sur de Chile suele ser más amigable para el randoné, porque las pendientes son más suaves. Y allí destacan el valle salvaje de la Laguna del Maule, las zonas boscosas de Nevados de Chillán, los alrededores de Pucón y, especialmente, la zona de La Araucanía Andina, donde en invierno se pueden explorar sitios como la Reserva Nacional Malalcahuello, el volcán Lonquimay, los alrededores del centro de esquí Corralco y el volcán Tolhuaca. También es muy buena la zona del volcán Mocho Choshuenco, en la Reserva Biológica Huilo-Huilo.

La aventura en randoné puede ser incluso más extrema: solo hay dos lugares en Chile donde se puede esquiar en el interior de un volcán: en el cráter del Puyehue, en la Región de Los Lagos, y en el de Nevados de Sollipulli, en La Araucanía.

The south of Chile tends to be less extreme for ski touring, as the slopes are less steep. Among the best spots down south are the Laguna del Maule, the forests of Nevados de Chillán, the areas around Pucón and, especially, the Andes of the La Araucanía Region.

There you can explore sites such as the Malalcahuello National Reserve, the Lonquimay Volcano, the areas around the Corralco ski centre and even the Tolhuaca Volcano. There are also some excellent spots on the Mocho Choshuenco Volcano in the Huilo-Huilo Biological Reserve.

Your randonnée adventure can be even more extreme if you like: there are two places in Chile where you can ski inside a volcano. In the crater of the Puyehue Volcano in the Los Lagos Region, and inside Nevados de Sollipulli in La Araucanía.

A menos de una hora de Pucón, el parque El Cañi (santuariocani.cl) es uno de mis lugares favoritos para hacer trekking en La Araucanía. Para recorrer su sendero más transitado, lo mejor es llegar temprano para disfrutar la panorámica desde los miradores. Es perfecto para ir en familia.

Cerca de Miraflores, recomiendo ir al Mercado de Surquillo, para conocer y degustar los auténticos sabores peruanos. Muy popular, además es excelente para ir a comer, desde un jugo de fruta hasta un cebiche fresco en el famoso carrito Bam Bam, que funciona en la parte trasera del mercado.

Around an hour outside Pucón, the El Cañi park (santuariocani.cl) is one of my favourite places to go trekking in the La Araucanía Region. If you want to tackle the most popular trail, the best bet is to get there early so you get a peaceful moment at the lookout points.

The park is great for families.

If you're near Miraflores, I recommend the Surquillo Market. It's a great place to take in the atmosphere and try authentic Peruvian flavours. One really popular place, where you can find anything from fruit juice to fresh cebiche, is the famous Bam Bam food cart, which is in the back of the market.

#LA TIERRA DESDE SKY A mediados de abril pasado viajé a Puerto Montt y en la salida de Santiago me encontré con esta gran panorámica de los Altos de Cantillana: uno de los lugares más especiales de la Región Metropolitana, gracias a sus extensas planicies ubicadas a más de mil metros de altura; como se ven en la foto.

In mid-April last year, I was travelling to Puerto Montt and on the way out of Santiago I was treated to this stunning view of the Altos de Cantillana: one of the prettiest areas in the Metropolitan Region thanks to its immense plains at 1000 metres above sea level, as you can see here.

#MIDESTINOSKY Valle del Arcoíris A media hora de Calama está el sorprendente Valle del Arcoíris.

Famoso por su amplio espectro de colores –producidos por las diferentes concentraciones de arcilla, sales y minerales–, está muy cerca de los petroglifos de Yerba Buena: una sorprendente colección de arte rupestre.

The gorgeous Rainbow Valley is about half an hour from Calama.

It’s known for its wide range of colours -produced by different concentrations of clay, salt and minerals-, and is very close to the Yerba Buena petroglyphs: a mesmerising collection of ancient rock drawings.

—Sudáfrica, 2002. Estaba grabando La Cámara Viajera Extrema para “Sábados Gigantes”. El país resultó ser increíble, excelentes playas, podías bucear con tiburones. Ahí comenzó una fascinación por conocer destinos más exóticos.

—¿Norte o sur de Chile?

—Norte. El sur de Chile lo puedes encontrar en otras partes, pero el norte es irrepetible.

—¿Destinos urbanos o naturaleza?

—Naturaleza. Crecí en una ciudad y lo que busco al viajar es descubrir.

—¿Museos o parques?

—Claramente, los parques: porque me gusta la naturaleza y son un respiro dentro de las ciudades.

—La callejera, no. Me he enfermado dos veces por consumirla y eso te puede arruinar una expedición.

—What’s your first memory of travelling?

—South Africa, 2002. I was recording the Extreme Travel segment for “Sábados Gigantes”. It was such an incredible place, with great beaches where you could dive with sharks. That was where I first got the fever for exotic destinations.

—Northern or southern Chile?

—The north. You can find places like the south of Chile all over, but the north is truly unique.

—Cities or nature?

—Nature. I grew up in the city and when I travel, I want to discover new things.

—Museums or parks?

—Parks, of course: because I love nature and every city needs its lungs.

—Fine dining or street food?

—Not street food. I’ve fallen ill twice because of street food and that can ruin your holiday.

—¿Viajar solo o acompañado?

—Uf, difícil, pero diría que acompañado.

—Travelling alone or in company?

—That’s a tricky one, but I think travelling in company.

—¿Qué es lo primero que echas a tu maleta?

—Los equipos de fotografía.

—What’s the first thing you pack in your suitcase?

—My cameras.

—¿Traes encargos para los amigos?

—Sí, lo que más traigo son los magnetos para el refrigerador. No son caros, y puedes traer montones.

—Do you bring things back for friends?

—Yes. Mostly fridge magnets.

They aren’t expensive, and you can fit loads in your bags!
