Con los campos y praderas comenzando a florecer, y con base en la siempre renovada Puerto Varas, este es un recorrido de tres días y más de 200 kilómetros por sus pueblos y atractivos principales.

Spring is on its way and for many that means it’s the perfect time to head back south to Lake Llanquihue. In the midst of fields and meadows beginning to bloom, with Puerto Varas as your base camp, this three day 200+ kilometre trip takes you round the area’s main villages and attractions.

os días comienzan bien en Puerto Varas, y mucho mejor si están acompañados por alguna de sus dulces delicias. Si no lo pidió la noche anterior, levántese temprano y pregunte por un buen kuchen de frambuesa o arándanos en el Café Danés (Del Salvador 441, Puerto Varas), uno de los máximos referentes culinarios de la ciudad. De auténtica tradición alemana –toda la cuenca del Llanquihue fue poblada desde mediados del siglo XIX por colonos alemanes y suizos–, los kuchenes aquí nunca fallan, como tampoco lo hacen sus suculentos sándwiches o su atención siempre cálida.

Si hiciera frío, esta buena dosis de calorías será muy reconfortante y lo animará a seguir el día recorriendo los principales hitos de la ciudad. Partiendo por su bella costanera, en un paseo que

Days begin well in Puerto Varas, and much better if they're accompanied by some of the traditional sweet pastries. If you didn’t get your order in the night before, get up early and ask for a raspberry or blueberry “kuchen” at Café Danés (Del Salvador 441, Puerto Varas), one of the city’s culinary highlights. Following authentic German traditions –Lake Llanquihue was colonised in the mid-19th century by Germans and Swiss--, the “kuchen” are to die for, as are the succulent sandwiches and the ever-warm welcome.

If it's chilly, then this hearty dose of calories will be a comfort, and will provide the perfect pick-me-up for a day trip round the town. Starting with its beautiful coast road, we recommend heading north towards the area around cerro Phillipi; you can climb the hill on foot or go by car. If you just follow the shoreline road, make sure you reach the end of Klener Street,

where you’ll find a large metal sculpture of a woman with her hair and dress blowing in the breeze. From there, the view of the lake and the Osorno and Calbuco volcanoes is spectacular.

You could spend the rest of the day waking around the city centre, admiring the exquisite German townhouses, using San Francisco Street as your starting point. Or if you'd like to learn more about how the area was colonised, the best museum is in the nearby town of Nueva Braunau –11km to the west of Puerto Varas--: this is the Museo Antonio Felmer (Camino Río Frío km 9, Nueva Braunau), which holds a large collection of exhibits used by the immigrants of the period.

Now, if history isn’t your thing and you’d rather just while away the afternoon by the lake, the best option is just 8km from the town centre, towards Ensenada:

Ahora, si quisiera evitar la clase de historia y simplemente pasar la tarde frente al lago, la mejor opción es salir sólo 8 kilómetros de la ciudad, camino a Ensenada, y llegar hasta la playa Niklitschek (playanik.cl), la mejor de Puerto Varas, pues tiene más arena que piedras y un fondo mucho menos abrupto. El acceso, eso sí, es privado, pues en rigor se trata de una zona de camping que cuenta con lindos sitios para hacer picnic, juegos infantiles y otras instalaciones. ¿Para comer? Las opciones son múltiples. Por algo, dicen, Puerto Varas es la capital gastronómica del sur. Un clásico que no falla, sobre todo para ir en familia, es La Olla, con los mejores pescados y mariscos frescos de la ciudad. Aunque

ya no tiene los precios de antes, los platos son gigantescos y alcanzan perfectamente para dos personas. Pero si quiere algo nuevo y quizás más sencillo, el dato es conocer La Campestre (Colón 0300, tel. 99225 7005), la primera sandwichería gourmet de la ciudad, que a veces se instala al lado del muelle de la ciudad como food truck para ofrecer excelentes hamburguesas caseras y precios amigables. Acompáñelas con una cerveza Chester, la nueva estrella de la ciudad.

DÍA 2 / VOLCANES Y TERMAS La carretera que rodea al Llanquihue está pavimentada prácticamente completa. Por eso, recorrerla en auto es un agrado. Hágalo en dirección a Ensenada

Niklitschek Beach (playanik.cl), the best in the region, as it has more sand than stones and a much less pronounced underwater slope. Access is, unfortunately, private, as it is actually a campsite with some picturesque picnic spots, a kid's playground and other facilities.

Something to eat? There are plenty of options. There’s a reason Puerto Varas is known as the culinary capital of the south. A classic that never disappoints, especially for families, is La Olla, with the best fresh fish and seafood in the city.

Although the prices aren’t as low as they once were, the portions are generous and are perfect for two people. But if you want to try something new and perhaps simpler, the tip is La Campestre (Colón 0300, tel. +569 9225 7005), the town’s

(47 kilómetros) o a Petrohué (66). La ondulante y sinuosa ruta regala preciosos paisajes de campo, varios miradores en el camino y, desde luego, muchos sitios para comer. El mejor, aunque esto debiera considerarlo al regreso, es Onces Bellavista (Camino Ensenada km. 342, oncesbellavista.cl), donde preparan las mejores onces sureñas de la región a un precio fijo y con las repeticiones de té, café, leche o chocolate que se deseen. Todo en una granja familiar con animales, juegos para los niños y una vista absolutamente despejada hacia el volcán Osorno.

Continuando hacia el este se llega al famoso Parque Nacional Vicente Pérez Rosales, los saltos del río Petrohué y el lago Todos Los Santos. Aquí las posibilidades son múltiples, desde una simple

DAY 2 / VOLCANOES AND HOT SPRINGS The highway that encircles Llanquihue is paved almost in its entirety. So driving is a real pleasure. Head out towards Ensenada (47 kilometres) or Petrohué (66). The undulating, windy road provides some stunning countryside views, a number of lookout points and, of course, plenty of places to eat. The best, although the stop should be made on the way back, is Onces Bellavista (Camino Ensenada km 34.2; oncesbellavista.cl), where the hosts prepare the best

It's set back in a family farm with animals, a playground for kids and a crystal clear view of the Osorno volcano.

caminata hacia el mirador de los saltos hasta la navegación por el lago, pasando por cabalgatas, mountain bike, canopy y trekkings más exigentes.

Pero si esto le parece un panorama muy clásico, sugerimos hacer una de las rutas en auto más bonitas de la cuenca, consiste en ir desde Puerto Varas, pero con el objetivo de llegar a Puyehue. Es una ruta de unas tres horas que sugerimos hacerla “por dentro”, es decir, de Puerto Varas a Ensenada, luego hacia Las Cascadas, ya en las faldas misma del volcán Osorno (aquí queda un pequeño tramo sin pavimentar, pero fácil para cualquier auto). Luego, tomar el desvío señalizado hacia Entre Lagos –en vez de seguir hacia Puerto Octay–, bordear el lago Rupanco y llegar hasta la Ruta Internacional 215 que va hacia Bariloche.

Continúe entonces y decida si pasa el día en las exclusivas Termas de Puyehue (puyehue.cl) o bien opta por una alternativa más económica, pero igualmente atractiva: las Termas de Aguas Calientes (termasaguascalientes.cl), que tiene una piscina techada en medio del bosque y otra al aire libre, con vista al río Anticura.

El regreso, para que no resulte tan largo, hágalo por la carretera 5 Sur, yéndose de Puyehue en dirección a Osorno. No demorará más de dos horas.

DÍA 3 / LA RIBERA NOROESTE Finalmente, queda recorrer los otros hitos de la cuenca. Salga de Puerto Varas en dirección a Llanquihue: la ciudad en sí no tiene mucho atractivo, pero a medida que el camino se va acercando al lago, en

Here the possibilities are endless; you can take a simple stroll around the falls to the lookout point or take a boat out on Lake Todos Los Santos, or even horse ride, mountain bike, canopy run or trek.

But if this path is too well trodden for you, we suggest you head for one of the more picturesque car journeys in the area: heading from Puerto Varas out towards Puyehue. It’s a three hour journey that, to our tastes, should be done on the “interior” road: that is, from Puerto Varas to Ensenada and from there to Las Cascadas on the slopes of the Osorno volcano (where there is a short section of dirt track, but that shouldn't pose a problem for any car).

Frutillar mismo ya es una belleza y allí hay alternativas que van desde el histórico Museo Colonial Alemán (museoaustral.cl) hasta el famoso Teatro del Lago (teatrodellago.cl), que debiera conocerse por dentro. Si lo pillara la tarde, un buen lugar para tomar once es la Hostería y Salón de Té Trayén (Av. Philippi 963), que tiene excelentes

–instead of heading to Puerto Octay-, and skirt around Lake Rupanco to the Ruta Internacional 215 that leads to Bariloche. As you drive along, make the choice: spend the day at the exclusive Puyehue Hot Springs (puyehue.cl) or, opt for the more affordable but equally attractive Aguas Calientes Hot Springs (termasaguascalientes.cl), which have a roofed swimming pool in the middle of a forest and one in the open overlooking the River Anticura.

On the way back, to break the journey up

a little, head south along carretera 5 sur from Puyehue towards Osorno. It won’t take more than two hours.

DAY 3 / THE NORTHEASTERN SHORES Finally, there is one more highlight in the region not to be missed. Leave Puerto Varas in the direction of Llanquihue: the city itself is nothing special, but as the trail gets closer to the lake, near Frutillar, the landscapes become breathtaking, with beautiful meadows, German townhouses and views of the Osorno volcano.

Frutillar itself is a beauty, and there are sights including the German Colonial Museum (museoaustral.cl) and the Teatro del Lago Theatre (teatrodellago.cl), which you should venture in to see. If evening should creep up on you, a god spot for tea is the Té Trayén Tea Rooms (Av. Philippi

El recorrido total por la cuenca del Llanquihue no está completo sin su última joyita: el histórico pueblo de Puerto Octay, que curiosamente es uno de los menos visitados de la región, pero que conserva una de las mejores muestras de arquitectura patrimonial, con su iglesia de madera como gran símbolo. De hecho, justamente por este valor histórico, Puerto Octay fue declarada Zona Típica en 2010.

And the trip around Lake Llanquihue wouldn’t be complete without a visit to this last gem: The historic town of Puerto Octay, which strangely is among the least visited in the area, but which has preserved some of the best national heritage architecture with its wooden church being the focal point.

In fact, just for its historical significance, Puerto Octay was declared a “Typical Zone” by the Chilean Government in 2010.

Tras someterse a un riguroso proceso de evaluación y control de todos los sistemas de seguridad de la compañía, la aerolínea logró obtener la re-certificación IOSA, una de las más prestigiosas de la industria aérea mundial otorgada por la Asociación de Transporte Aéreo Internacional (IATA).

After completing a rigorous evaluation process regarding all the company’s operational management and control systems, SKY managed to gain IOSA recertification. This is one of the most prestigious airline certifications in the world awarded by the International Air Transport Association (IATA).

El proceso de certificación es una estricta auditoria a todos los sistemas de seguridad operacional en 360 grados que monitorea la tecnología tanto en tierra como en aire, las capacitaciones del personal y tripulaciones.

The certification process consists of a strict audit of all aspects of operational management and control systems, monitoring technology on the ground and in the air, and the training of staff and crew.

La certificación IOSA, no es casualidad, ya en 2014 la compañía logró posicionarse como la segunda aerolínea chilena en obtenerla sorprendiendo al mercado local. Sin embargo, SKY comenzó en 2013 un intenso proceso de transformación que la llevó a mejorar en todos los indicadores aceptados por la industria, a renovar la totalidad de su flota y recientemente a hacer ajustes comerciales a través de su política de precios accesibles estrenada este 2015.

The IOSA certification is not a fortuitous event; in 2014, SKY was the second Chilean airline to be recertified, taking the local market by surprise. However, in 2013 SKY began an intense transformation process which led to improvements in all industry-accepted indicators, to a fleet renewal and recently to a change in business strategy through its affordable price policy launched in 2015.

Un sistema de evaluaciones mundialmente reconocido y respetado por la industria aérea y que ha sido diseñado para auditar los sistemas de operación y control de forma estandarizada que garantiza los procesos de Safety como Security de una compañía aérea.

It is an operational safety audit conducted by the International Air Transport Association. This evaluation system is globally recognized and respected by the airline industry, and is designed to audit the operation and control systems in a standardized way so as to ensure an airline’s safety and security processes.

No deje de probar los postres, donde encontrará una leche asada de antología –no apta para quienes están a dieta–, colegiales, dulces chilenos y churros.

QUEBRADA DE ALVARADO Partió hace más de tres décadas como una pequeña picada para camioneros en la Quebrada de Alvarado, cerca de Olmué, y hoy es un enorme local con capacidad para más de 400 personas, sencillo y con piso de tierra, que sigue manteniendo sus precios y preparaciones de siempre. Con enormes platos de los que fácil comen dos personas, hay tres imperdibles entre los parroquianos: las contundentes empanadas de pino de masa perfecta, las enjundiosas cazuelas y el costillar de cerdo al horno. The story began three decades ago when a small greasy spoon for truckers opened up in the Quebrada de Alvarado canyon near Olmué. Today, the premises are huge and can seat 400 diners. The décor is simple and there is no floor, but the prices and menu have remained the same. The servings are enormous and can easily be shared, but there are three excellent dishes that should be sampled: the huge meat and onion pasties with perfect pastry, the generous cazuela stews and the roast pork ribs. Be aware that at weekends the place fills up and the waiting list, which is first come, first served, is usually at least 30 minutes long.

Y este pequeño restorán de Patronato es uno de los buenos. Abierto hace dos años, aquí podrá encontrar el adictivo Pollo Frito taiwanés con salsa tamarindo, de fritura seca y crujiente; los famosos Gua Bao, clásicos buns o bollos de arroz al vapor rellenos de un sabroso cerdo agridulce con repollo encurtido, polvo de maní y cilantro; y contundentes sopas como la Nio Rou: un suculento caldo de asado de tira, fideos y buenas dosis de cebollín. También hay orejitas de chancho, tofu salteado y guisos de bambú. ¿Lo mejor? Los precios, que van entre 1.500 y 4.500 pesos.

There are few exponents of Taiwanese cooking in Chile. And this small restaurant in the Patronato district is one of the best. It opened just two years ago and serves dishes including the addictive Taiwanese fried chicken with tamarind sauce, in dry and crispy batter; the famous Gua Bao, classic steamed rice balls filled with a delicious sweet and sour pork with pickled cabbage, peanut powder and coriander; and generous soups such as the Nio Rou: a succulent short rib broth, with noodles and a healthy dose of spring onion. There are also pig’s ears, stir-fried tofu and bamboo stews. The best part? The prices, that range from CLP 1,500 to 4,500.

TARA ATACAMA, WHITE 1 Chardonnay 2014, Valle del Huasco La línea de vinos del grupo Ventisquero viene apostando hace tiempo ya por la diversidad. Han buscado lo extremo y el

origen desarrollando un proyecto único en el desierto de Atacama. La identidad de estos suelos calcáreos y las dificultades que entrega su entorno han concebido vinos únicos e irrepetibles. El resultado, en este caso, es un Chardonnay prensado con los pies a racimo entero y fermentado naturalmente en cubas de acero inoxidable. Con tan sólo 409 botellas –que pasaron 15 meses de crianza antes de ser embotelladas–, se trata de un Chardonnay hijo del desierto, del sol y la sal, con aromas tan particulares que transitan entre el pepino de fruta y flores de yuyo, pero que también cuentan con la estructura de un salar que recién comienza a crecer. The wines in the Ventisquero group’s range are the embodiment of diversity.

They have sought the extreme and the ancestral, developing a unique project at the heart of the Atacama Desert. The characteristics of these limestone rocks and the harshness of the environment have produced a truly inimitable wine.

The result in this case is a Chardonnay which is foot-pressed in full bunches and naturally fermented in stainless steel drums. Only 409 bottles were produced – with the wine matured for 15 months before bottling--, and this Chardonnay is a true son of the desert, the sun and the salt. Its aromas are so unique that they fluctuate from cucumber to fruit and wild flowers, but still retain the structure of

MIGUEL TORRES, ESCALERAS DE EMPEDRADO Pinot Noir 2012, Valle del Maule Es la cepa más difícil que le ha tocado producir a la viña, que lleva casi 20 años de trabajo invertido en este viñedo que está emplazado en suelos de piedra pizarra y terrazas de mucha inclinación. El paisaje recuerda al del Priorato (Cataluña) y la cualidad del suelo hace trabajar al 100 por ciento la cepa. Su facultad es acumular calor y durante la noche transferirlo paulatinamente al viñedo, beneficiando su equilibrio. This is the most difficult wine that the vineyard has produced, and has 20 years of hard work invested in it, planting in slate soil on steep terraces. The landscapes here hark back to the Priorato area of Catalonia, and the ground quality makes the vine work as hard as possible. Its best characteristic is the accumulation of heat during the day, which is then gradually transferred to the plant overnight, striking a great balance. This

Un gran ejemplo de aquello es Macho Anciano: un Malbec de casi ochenta años de edad, que lleva el nombre del canto del poeta Pablo de Rokha.

The recovery work carried out by oenologist Leo Erazo in the Itata Valley is worthy of note, as he has managed to revive some of the oldest vineyards and vines that are yielding delicious fruits. El chef y conductor de televisión ha tenido un giro en su carrera: de trabajar en reconocidos restoranes pasó a ser jurado de la versión local de MasterChef, que por estos días estrena segunda temporada en Canal 13 y que tendrá una versión infantil durante el verano.

Tras ello, el cocinero tiene planes en el extranjero y dice que quiere aprovechar esta buena racha.

The chef and TV host has seen his career take a big turn: from working in famous restaurants, he went on to be a judge on the Chilean version of MasterChef which is gearing up for its second season on Canal 13 and will launch a kid's version in the summer. After that, Carpentier plans to travel abroad to take full advantage of this hot streak.

hristopher Carpentier (42) tiene una personalidad fuerte. Habla con seguridad de sí mismo, como esos compañeros de colegio que siempre levantan la mano porque saben la respuesta a lo que está preguntando el profesor. Y hoy vive un segundo tiempo en su vida: luego de estudiar cocina en Washington DC, de trabajar con Coco Pacheco, de abrir con éxito su restorán Agua, de trabajar en el canal de cable Gourmet y de convertirse en uno de los chef más reputados de Chile con tan sólo 26 años, vino una caída. Fuerte y aparatosa: su restorán C fracasó, tuvo problemas económicos, se divorció de su mujer y le vino una parálisis que lo mantuvo internado por varias semanas en una clínica. “Fui arrogante, me creí el cuento, me porté mal

And today he is experiencing a breath of fresh air in his life: after studying gastronomy in Washington DC, working with Coco Pacheco, successfully opening his Agua restaurant, working on the Gourmet cable TV channel and becoming one of Chile's most famous chefs, at just 26 years of age, a fall was on its way. It was a big one, and dramatic: his C restaurant was a failure, he had money trouble, he got divorced from his wife and was paralysed and hospitalised for several weeks. “I was arrogant and I believed the hype; I treated a lot of people badly. It was a period in which I learned a lot and it isn‘t really worth remembering", he says.

—¿Por qué cree que MasterChef funcionó tan bien en Chile, tomando en cuenta que la cocina parece ser de “nicho”?

—Porque es un programa distinto, para toda la familia, donde no hay farándula, agresividad, sólo entretención y educación gourmet, un proyecto que logra rescatar algo que se ha perdido en la televisión: los personajes anónimos más nobles, que van desde un chico de 25 años hasta una abuela que supera los 80 años y que no tendría cabida en la pantalla de hoy, pero acá sí la tienen.

—Why do you think MasterChef worked so well in Chile, taking into account that cooking here is a “niche” interest?

—Because it’s a different programme, it’s for all the family, there’s no showbiz, aggressiveness, just gourmet entertainment and education, it’s a project that has revived something that TV had lost: the noble, anonymous contestant, with participants ranging from a 25 year-old man to an octogenarian grandmother, people who would never normally be on Chilean TV, they have a space here.

—This summer will see the launch of Junior MasterChef, how are the judges going to soften their comments so as not to frighten the children?

—I have four kids, and I cook with them

—Este verano se hará MasterChef Junior, ¿cómo lo harán para equilibrar juicios sin que los niños se sientan amedrentados por ustedes?

—Tengo cuatro hijos con los cuales cocino a menudo y cuando estudiaba hacía clases a adolescentes, así es que no creo que me vaya a costar mucho. El formato trata de buscarle el lado bueno a todo y cómo mejorar en la cocina. Puede que mi accionar en la versión adulta sea más apasionada, si quieres, pero siempre les digo a los concursantes qué hacer para superarse. Con los niños será desde una vereda más amable, pero enseñándoles y que para ellos el programa sea un juego.

—Gracias a la exposición del programa, tu nombre se ha masificado. ¿Cómo te sientes con ese reconocimiento?

—Siempre trabajé en restoranes muy de nicho, exclusivos, de cocina muy pulcra.

Funcionaba para la elite de Chile, pero de a poco he ido cambiando mi imagen, con dos restoranes de comida más cercana a la gente –Maldito chef y El Barrio–, para demostrar que no sólo me muevo entre productos sofisticados en la cocina. Con MasterChef la gente me conoció más y en programas como Vértigo –donde ganó uno de los capítulos– se pudieron sacar los prejuicios, porque yo soy así,

Puede que crean que soy estricto, pero trato de aportar no más. Al final, lo más importante es el juicio de la gente, vale más que cualquier premio.

—Hace algunos meses vendió su productora de TV Oink. ¿Por qué?

a lot. When I was studying, I gave classes to teenagers, so I don’t think it will be too hard. The format tries to find some good in everything and focuses on how to improve.

Perhaps my character in the adult version is more passionate, if you will, but I always say how participants can improve. With the kids, I will approach it from a more friendly direction, but I will teach them and hopefully they will see the show as a game.

—Thanks to the show’s success, you are a big name now. How do you feel about that kind of recognition?

—I have always worked in niche restaurants, exclusive ones, with very high standards. I was working for the Chilean elite, but I have begun to change my image, with two restaurants that are much closer to the people –Maldito Chef and El Barrio-, in order to show that I am not only about the most sophisticated products in the kitchen. MasterChef brought me closer to the people and in programmes such as Vertigo –a celebrity chat show with guests voted off, where Carpentier won two episodes—they could see me for who I am, what you see is what you get, there is no act, I am the most down to earth guy around. Perhaps they think I am strict, but I am just trying to contribute. In the end, the most important thing is what people think of you, it’s bigger than any prize.

CEMENTERIO DE PUNTA ARENAS PATRIMONIO HISTÓRICO MUNDIAL

Como todos los cementerios, el de Punta Arenas recibe miles de visitantes el 1 de Noviembre. Pero a diferencia de otros, la afluencia de público es constante, especialmente en temporada alta, porque es lugar imperdible de los circuitos turísticos de quienes llegan a Punta Arenas por primera vez.

El Cementerio “Sara Braun…donde descansa la Historia” como reza su presentación, es un ícono de la ciudad, declarado Monumento Nacional y elegido en una encuesta de la cadena de televisión CNN como uno de los diez más hermosos del mundo, ocupando el sexto lugar.

Eso explica la afluencia de turistas que junto con admirar la belleza de sus mausoleos, cipreses y jardines, pueden conocer la historia de una ciudad que trasciende su límite urbano y es la historia de Magallanes, de Tierra del Fuego, de Ultima Esperanza, de la Antártica, del Cabo de Hornos, de las primera expediciones al continente blanco, de los pioneros que forjaron la región y de los marinos de diversas nacionalidades que hicieron historia en el cono sur de América.

En fin, motivos hay de sobra para que el cementerio de Punta Arenas sea un punto imperdible de atracción para visitantes extranjeros y nacionales.

—Me quedé como conductor del (programa) C Cocina solamente porque tras ocho años con la productora decidí que quiero ir hacia otro lado con mi carrera. Sé hasta dónde quiero llegar y quiero priorizar mis tiempos, entonces no me daba para estar en tantas partes.

—¿Y hacia dónde quiere ir?

—Tengo un par de proyectos que estoy evaluando para 2016, está la posibilidad de que vaya a la versión colombiana de MasterChef que harán allá. Gracias a este programa se me están abriendo muchas puertas que nunca las imaginé, y quiero aprovechar para darle un giro a mi carrera. Estoy en proyectos distintos, me están llamando de algunas marcas, me están ofreciendo algunos programas que me motivan y quiero ir hacia allá.

Sé que tengo que aprovechar bien todo lo que me está pasando ahora y sé que esta vez soy capaz de hacerlo.

—Some months ago you sold Oink, your TV production company. Why? —I became the host of the C Cocina programme because after 8 years with the company I wanted to take my career elsewhere. I know where I want to be, and I want to prioritise things, so I couldn’t be everywhere at once.

—I have a couple of projects lined up for 2016, I might take on the Colombian version of MasterChef. Thanks to this programme, a lot of doors are opening up, doors I never would have imagined, and I want to take advantage of them and get ahead with my career. I am involved in a number of different projects, and a few brands are calling me up, offering me really exciting ideas, and that's the way I want to go. I know that I have to take advantage of all this and I know that this time I will be able to do it.

oportunidades de inversión en la bolsa de la mayor economía del mundo, no pensamos que la magnitud de los retornos se repetirá en el futuro próximo, ni será tan fácil escoger una inversión con buen desempeño. Así las cosas, la selectividad a la hora de ver qué comprar hoy toma mayor relevancia.

En términos generales, es posible pensar que la renta variable debería tener un mejor desempeño que otras clases de activos – como commodities o bonos–, debido a que existe mucha liquidez en el mundo gracias a significativas medidas de estímulo que han tomado los principales bancos centrales. A lo anterior se le puede sumar el hecho de que las tasas siguen muy bajas, incentivando la toma de riesgo y, por tanto, la renta variable.

ECONOMÍA, TASAS Y DÓLAR La economía estadounidense se contrajo un -0,2 por ciento durante el primer trimestre del año, a lo cual se aducen factores temporales, como el paro portuario en la Costa Oeste, recortes en el gasto de compañías en la industria petrolera –producto del desplome en los precios internacionales del crudo– y un racha de mal clima. Dejando atrás este bache, las expectativas de crecimiento para el país han mejorado significativamente.

La Reserva Federal de Atlanta tiene un modelo que proyecta el PIB en tiempo real, el cual –a mediados de julio pasado– mostraba un crecimiento de 2,4 por ciento.

In general terms, we can assume that equity should outperform other kinds of assets —such as commodities or bonds—, as there is a great deal of liquidity out there thanks to stimulus initiatives taken by central banks.

You could add to that the fact that rates are still very low, incentivising risk taking and, consequently, the purchase of equity.

With that hiccough out of the way, growth expectations have improved significantly. The Federal Reserve in Atlanta has a model to project GDP growth in real time, which —in mid-June— showed figures of 2.4 percent.

En esta línea, Janet Yellen, la presidenta de la Reserva Federal de Estados Unidos (Fed) dijo en su última declaración ante el congreso que seguía viendo probable un alza de tasas antes de fin de año, producto de las mejoras en el mercado laboral. unto con la llegada de la primavera, septiembre marca la temporada más popular de los circos en el país. Malabares, acrobacias y payasos repletan la cartelera para sumarse con sus llamativos colores y vistosas prendas a las celebraciones de las Fiestas Patrias, en una muestra más del patrimonio cultural chileno.

“El circo ha sido parte de la cultura popular en Chile desde hace más de 200 años y el rol más evidente que ha jugado tiene que ver con su alcance territorial”, dice el ministro de Cultura, Ernesto Ottone, quien destaca que en su condición de “manifestación intrínsecamente itinerante, el circo ha recorrido el accidentado mapa de Chile de punta a punta”.

Es precisamente ese recorrido, el que hoy cada vez está más presente durante distintos meses del año, de la mano también del nuevo circo que ha ampliado el público y los lugares del circo tradicional, cautivando a nuevas audiencias.

“No podemos sino reconocer al circo tradicional chileno como un patrimonio vivo de nuestra cultura y nuestra identidad”, sostiene el secretario de Estado, quien añade que como toda renovación y como toda relectura de una disciplina artística, “el nuevo circo viene a enriquecer la paleta de manifestaciones escénicas que contamos como país”.

Along with the arrival of spring, September is the most popular time for circuses in Chile. Jugglers, acrobats and clowns fill up the programmes and are the perfect colourful backdrop to the Chilean Independence celebrations, representing another side of the country's cultural heritage.

“The circus has been part of Chilean popular culture for more than 200 years, and the clearest evidence of this is the territorial extent of circuses across the country", says Culture Minister, Ernesto Ottone, who points out that the “wholly nomadic nature of circuses means that they have covered the entirety of Chile’s varied landscapes from tip to tip”.

It is exactly this wandering existence that means that circuses are more present at different times of year, including the new wave of circuses that has broadened their target audience and is captivating more of the traditional sector.

“We must recognise that the traditional Chilean circus is a living example of our heritage, culture and identity”, says the minister, also adding that as with any reinvention or re-reading of an artistic discipline, "the new wave is enriching the palate of stage art that we are able to enjoy in this country".

The history of Chilean circuses begins – according to the investigation taken up

by Memoria Chilena—around about 1885, when the family of the Pacheco Brothers arrived in Valparaíso from abroad and began the first truly Chilean circus. Since then, the long tradition of different families has extended over decades.

Then, in the mid-90s, Chile saw the arrival of what is now known as the new wave of circuses. “In a similar line to the way circuses were originally defined, the new wave is multidisciplinary and is also a fertile ground for innovation, crossing language barriers, and questioning and going beyond our preconceived ideas and conceptions,” explains Minister Ottone.

For Alejandra Jiménez, founder and director of the NGO Circo del Mundo, “the

lenguajes y cuestionando lo conocido para descubrir y conocer más allá”, explica el ministro Ottone.

Para Alejandra Jiménez, fundadora y directora de la ONG Circo del Mundo, “el nuevo circo no se contrapone con el tradicional, nosotros lo reconocemos como parte de nuestro patrimonio, lo valoramos y tenemos varias acciones en común y en conjunto donde nos transferimos capacidades y, sobre todo, convivimos de una buena manera”. “El nuevo circo está ligado al arte escénico, y el circo tradicional está ligado al patrimonio”, asegura.

A su juicio, la gran diferencia entre ambos, es que los espectáculos del

nuevo circo siempre tienen una historia que contar o un mensaje que se trata de transmitir, y destaca que poco a poco han ido ocupando otros espacios, como gimnasios municipales o salas de teatro. Asimismo, sostiene que la técnica pura del circo se estiliza y se mezcla con otras artes como la danza, el teatro y la música, generando así una estética diferente.

EL CIRCO COMO HERRAMIENTA Circo del Mundo, que este año celebró sus 20 años de historia, se originó a partir de la iniciativa del Cirque du Soleil y

Jeunesse du Monde, los que en 1995 en un proyecto de colaboración internacional con la corporación El Canelo de Nos capacitaron en técnicas de circo a artistas, con la condición de que esa experiencia fuese replicada posteriormente con niños y jóvenes vulnerables.

Tras esto, los artistas chilenos suscribieron un convenio con el Sename y trabajaron con varios centros abiertos diurnos en distintas comunas de Santiago y produjeron el primer encuentro de circo social en el país.

“Vimos a más de 150 niños en escena haciendo cosas increíbles, pero lo que más nos sorprendió fue las casi mil personas que llegaron a acompañarlos. Eso

In her eyes, the big difference between the two is that the new wave circus shows always have a story to tell or a message to send out. And she highlights the fact that little by little they have moved on to occupy other spaces, such as municipal gyms or theatres. Likewise, she believes that they stylise and blend the pure

technical aspect of the circus with other arts such as dance, theatre and music, creating a new aesthetic concept.

generó un impacto en nosotros, y a partir de ese minuto nos dimos cuenta de que lo que teníamos en nuestras manos era una tremenda herramienta con la que podíamos generar cambios”, recuerda Jiménez.

Así, fue en 2000 que se independizaron y en 2004 cuando decidieron crear la primera escuela profesional de circo.

“Estos niños con que nosotros habíamos partido el año 95 crecieron, salieron de cuarto medio y querían ser artistas.

Esto hizo un nuevo giro en nosotros y saltamos desde lo socio-cultural a lo profesional”, agrega.

initiative of the Cirque du Soleil and Jeunesse du Monde, which in 1995 collaborated internationally with El Canelo de Nos, training artists in circus techniques so that they could go on to do the same with disadvantaged young people and children.

Afterwards, Chilean artists enrolled in a programme with the SENAME (Chilean National Children’s Service) and worked around Santiago to produce the country's first social circus experience. “We saw more than 150 kids on the stage doing incredible things, but the most surprising part was that almost 1,000 people came to

cheer them on. We thought it was incredible, and from then on we realised that what we had on our hands was a great tool for creating change", remembers Jiménez.

It was in 2000 that the company became independent, and in 2004 when they decided to set up the first professional circus school. “The kids we began with back in 95 grew up, graduated from high school, and wanted to be artists. This was really significant for us in that we went from socio-cultural to professional”, she adds.

So far there have been six graduating years, and alongside this academic

Para Jiménez aún hay mucho por hacer, pero destaca que en 2007 hubo un hecho que marcó un antes y un después, cuando el Fondart abrió el concurso para el circo: por primera vez la política cultural reconocía el circo como arte escénico.

A esto se suma que en 2011, el Consejo Nacional de la Cultura y las Artes creó el Área de Artes Circenses, que ha permitido la instalación de éste en la discusión pública y lo ha validado en los ámbitos académicos y en las instituciones.

“Esto nos abre la posibilidad de valorar esta disciplina y de comenzar a trabajar sistemáticamente en su desarrollo y preservación desde lo público”, afirma Ottone, quien destaca que se ha generado “un puente de diálogo”, un puente que sigue creciendo.

Which is why he highlights the importance of continued work in the area.

Jiménez believes there is still much to be done, but points out that in 2007 there was something of a turning point, when the Fondart funds programme sought a tender for circuses: for the first time, cultural politics was recognising the circus as an art form.

Add to this the fact that in 2011, the National Council for Culture and Art created the Circus Arts Branch, which has allowed for the installation of circuses in public policy and has validated them in academic and institutional circles. “This opens up the possibility of really valuing the discipline and beginning to work systematically with the government towards the development and preservation of circuses”, says Ottone, who also points out that the "bridge of dialogue" with the government continues to grow.

1. CUIDE SU ALIMENTACIÓN Algunos alimentos suben el colesterol, por lo que su consumo se debe reducir o evitar. Entre ellos están las grasas saturadas, presentes en productos de origen animal como lácteos, embutidos e interiores, y en algunos de origen vegetal, como los aceites de palma y coco. Según la Sociedad Española de Arteriosclerosis, el azúcar tiene poca repercusión directa en el nivel de colesterol, pero los alimentos con un alto contenido de ésta, en general, contienen grasas que perjudican la salud. También es importante no consumir grasas trans añadidas, que se encuentran en productos precocinados –como papas fritas o salsas– y para ello es importante fijarse en el etiquetado.

2. HAGA EJERCICIO Según la Sociedad Española de Arteriosclerosis, el ejercicio físico es imprescindible para mantener el colesterol a raya: realizar ejercicio aeróbico 3 a 5 veces a la semana ayuda a aumentar los niveles de colesterol HDL, disminuir el colesterol LDL y triglicéridos, y controla el peso. Por otra parte, la Organización Mundial de la Salud recomienda realizar 300 minutos semanales de actividad física. Pero para tener una salud cardiaca óptima y, de paso, para perder peso, el ejercicio debe ser cardiovascular: caminar, correr, bicicleta, natación.

En palabras simples, es importante convertir el ejercicio en un hábito.

But in order to enjoy optimal heart health and, at the same time, lose a little weight, you ought to do cardiovascular exercise: walking, running, biking, and swimming. Cholesterol is a fatty substance that plays a role in a number of bodily functions such as the formation of membranes and the production of hormones. There are two types: HDL, also called “good cholesterol”, which is eliminated naturally, and LDL or “bad cholesterol”.

When levels of LDL cholesterol are high, it builds up inside the arteries, getting stuck to the walls and forming plaque, explains Dr Bruce Miller in his book “7 Keys to Normalize Your Cholesterol Level”. This means the arteries do not function as well and harden, reducing the amount of oxygen and nutrients delivered to organs including the heart and the brain.

This increases the risk of cardiovascular problems such as heart attacks or strokes, which in Chile are the leading cause of death according to the National Institute of Statistics.

Como ésta es una condición crónica, los fármacos suelen tomarse de por vida. En general, los que se utilizan son las estatinas, que interfieren con la producción de colesterol en el hígado, disminuyendo los niveles del malo y aumentando los del bueno. Las estatinas son relativamente seguras para la mayoría de los pacientes y cada vez tienen menos efectos secundarios. Por último, se debe recordar que el primer paso para tratar ésta y otras enfermedades es la prevención, tal como indica la Sociedad Española de Cardiología, por lo que es importante realizarse chequeos en forma periódica y seguir los consejos indicados por el médico.

FRANZ FERDINAND + SPARKS / FFS Para el grupo glam-synth-rock estadounidense Sparks, grabar un disco en conjunto con la célebre banda escocesa Franz Ferdinand podría significarle un homenaje tardío de los más jóvenes. La generación intermedia, entre ellos Morrissey y Fatih No More, ya le habían rendido tributo, pero resultaba insólito que no le hubiesen erigido una estatua algunos de sus auto declarados seguidores actuales, como Arcade Fire o MGMT. Sencillamente porque lo que suena hoy le debe mucho a Sparks.

Quizás demasiado excéntricos o, a veces, dislocados con las expectativas del público radial, Sparks cuenta con una trayectoria impecable, una que nunca ha tenido otra guía más que la honesta intuición artística de los hermanos Mael.

Y el cuarteto Franz Ferdinand lo sabía.

Es más, venían trabajando juntos desde 2000, colaboración que recién materializaron hace unas semanas en FFS: su primer álbum. ¿El resultado? Disfrutable. Un puñado de canciones donde se logra distinguir el 118

sello de cada una de las partes –aunque a veces la balanza se incline en una u otra dirección–, en el cual los escoceses logran crecer en creatividad y los estadounidenses calibran su sonido y entran en sintonía con una audiencia joven que probablemente no tenía idea de su existencia.

La mezcla es efectiva, grácil y contundente. El factor bailable de Franz Ferdinand se amalgama con elegancia a la sonoridad exquisita de Sparks. Dos actores que, de sus puntos en común, sacaron grandes conclusiones musicales.

For US glam-synth rockers Sparks, recording an album with renowned Scottish noiseniks Franz Ferdinand could be seen as a kind of late coming tribute from the younger band. The generation between these two groups, which includes Morrissey and Faith No More, has already paid homage several times over, but until now it seemed strange that none of their current admirers, such as Arcade Fire or MGMT, have so much as nodded their way. Strange, because a lot of what we

hear now is thanks to Sparks.

Perhaps they are a little too eccentric or, at times, out of touch with the mainstream, but Sparks have an impeccable track record under the down-to-earth musical guidance of the Mael brothers.

And the foursome of Franz Ferdinand knows it. What’s more, they have been working together since 2000, all to launch their new FFS collaboration: their first joint album.

And the result? It’s enjoyable. It’s a fistful of songs that successfully represent the different styles of each musician –with the balance sometimes shifting one way or the other-, where the Scots seem to grow creatively and the Americans fine tune their sound, engaging with a younger audience that may not even have been aware of their existence.

The blend is an effective one, graceful yet strong. Franz Ferdinand’s catchy tunes are melded elegantly into Sparks’ exquisite wall of sound. These are two groups that, starting from common ground, have produced some great musical results.

Muchas preguntas y apenas algunas respuestas. En pocas palabras así podría describirse Para que no te pierdas en el barrio, el último y quizá el mejor libro del popular premio Nobel Patrick Modiano. El libro cuenta la historia de un escritor que recibe una llamada telefónica de un desconocido, quien le dice que ha encontrado una vieja libreta de direcciones que probablemente perdió en un tren. Pronto, el desconocido aparece acompañado de una enigmática joven, y es ese encuentro el que lleva al escritor a rastrear en su pasado hasta llegar a un episodio de su infancia que, quizá, explica toda su vida.

Ambientada en París y sus suburbios, es una obra maestra del francés, reconocido como un gran detective de la memoria.

In a few words, that is how you could describe “So you don’t Get Lost in the Neighbourhood,” the latest and perhaps the best book by Nobel laureate Patrick Modiano. Soon, the unknown caller appears – alongside an enigmatic young lady--, and it is this encounter that leads the writer to trace his past to find out about an episode in his childhood that, just maybe, will explain his whole life. Set against a suburban Parisian backdrop, this is a masterpiece by the Frenchman, renowned for the genre of investigating memories.

PURO VICIO Mezcla de comedia, drama y thriller, “Inherent vice” –el título original– es la último trabajo de Paul Thomas Anderson, uno de los directores más importantes de los últimos años. Luego de éxitos de crítica y taquilla, como Boogie Nights (1997), Magnolia (1999) y Embriagado de amor (2002), desde hacía tiempo ya que el estadounidense de 45 años no nos mostraba un filme tan contundente como Puro vicio.

Basada en la novela homónima del novelista neoyorquino Thomas Pynchon, la película –escrita y dirigida por Anderson– cuenta la historia de el investigador privado Larry “Doc” Sportello, encarnado por Joaquin Phoenix, quien investiga la desaparición del novio de su ex-novia. Así de simple. Aunque, claro, se trata de Anderson, un experto en complicar al extremo las tramas, hasta agotar a muchos espectadores, y así dar un amplio espacio a las incoherencias.

Con las actuaciones de Josh Brolin, Owen Wilson, Reese Witherspoon y Benicio del Toro, entre otras súper estrellas hollywoodenses, se trata de una película ideal para iniciados en el trabajo de Anderson, aunque también un gran punto de partida para que quienes aún no la conocen, puedan adentrase en su rica filmografía.

It’s that simple. Although, of course, this is Anderson, an expert in complicating matters to the extreme, even to the point of annoying the viewers, and leaving ample room for inconsistencies.

With performances from Josh Brolin, Owen Wilson, Reese Witherspoon and Benicio del Toro, among other Hollywood heavyweights, the film will be loved by Anderson fans, although it also makes a good gateway for those who are unfamiliar with his work.

Géiseres del Tatio Tatio Geysers Del kunza “Tata-iu” –que significa “el abuelo que llora”–, los famosos géiseres del Tatio son visitados cada día por más de 200 turistas, quienes para verlos en todo su esplendor –como en la foto– deben salir antes de las seis de la mañana desde su hotel en San Pedro de Atacama y viajar poco más de una hora en la oscuridad del desierto. Pese a eso y al frío, la aventura, desde luego, vale pena.

Visitors flock to see them in all their glory, as you can see in this photo, and have to set off from their hotel in San Pedro de Atacama and travel for just over an hour in the darkness through the desert.
