A poco más de dos horas de Santiago, Santa Cruz es la puerta de entrada al valle vitivinícola más importante de Chile: Colchagua. Un destino que une tradiciones campestres con una sofisticada oferta gourmet, museos y actividades para todas las edades.

Just over two hours from Santiago, Santa Cruz is the doorway to the most important winegrowing area in Chile: Colchagua Valley. A destination that unites country tradition with sophisticated gourmet restaurants, museums and activities for all ages.

i la famosa película Entre copas –esa donde dos amigos recorrían el valle de Napa, en California, y paseaban de viña en viña degustando algunos de los vinos más emblemáticos del mundo– tuviera que filmarse en Chile, a ojos cerrados el lugar escogido sería el valle de Colchagua. Sin duda, el epicentro vitivinícola de Chile. Aquí se producen algunos de los vinos más famosos y premiados del país, y existe una completa y moderna infraestructura hotelera y gastronómica capaz de satisfacer a los paladares más exigentes.

En rigor, Colchagua cuenta con distintas áreas vitivinícolas, algunas en la zona de la precordillera, otras en los sectores más cercanos a la costa y también en el valle interior. Justamente, en este último destaca la ciudad de Santa Cruz.

Con alrededor de 35 mil habitantes y un siempre agradable clima mediterráneo, Santa Cruz es una mezcla de arquitectura y tradiciones campestres con la sofisticación de un destino turístico de nivel mundial. n the famous film Sideways, two friends travel around Napa valley in California, going from vineyard to vineyard tasting the best wines in the world. If it had been filmed in Chile, the location would undoubtedly have been Colchagua. It is unarguably the wine-growing epicentre of the country. It produces some of the most famous and most award-winning wines in the country and has a complete and modern hotel and culinary infrastructure that is able to satisfy the most demanding palates.

In truth, Colchagua has several different wine-growing areas, some in the foothills of the Andes mountain range, others closer to the coast, and still others deep in the heart of the valley. In this latter area is found the city of Santa Cruz.

With around 35 thousand inhabitants and a constantly pleasant Mediterranean climate, Santa Cruz is a mixture of country architecture and traditions with the sophistication of a world class tourist destination. This small city located a little over two hours from Santiago by car serves as an excellent base of operations for exploring not only the Colchagua Wine Road, which

base de operaciones para recorrer no sólo la Ruta del Vino de Colchagua –que agrupa a doce de las viñas más prestigiosas de Chile, como Casa Lapostolle, Viu Manent y Montes (www.rutadelvino.cl)–, sino también para quienes quieran explorar el corazón de la Zona Central con una serie de actividades y panoramas para todos los gustos y edades. En definitiva, un muy recomendable escape de fin de semana desde la capital que podría realizarse de la siguiente manera.

Viernes: viaje energético Precaución: éste será un viaje calórico. Por eso, lo ideal es programarse para estar a la hora de almuerzo en Santa Cruz.

Alternativas gastronómicas hay varias, pero podría elegir entre dos imperdibles del valle de Colchagua. Uno es el Panpan Vinovino (www.panpanvinovino.cl), en el kilómetro 31 de la carretera I-50, en la localidad de Cunaco, que ofrece gastronomía regional en una antigua panadería construida en 1830.

Otro, ya derechamente viñatero, es el restorán Rayuela de la

viña Viu Manent (Carretera del Vino km 37, tel. 2840 3180; www.viumanent.cl). Es decir, puede partir con alguna de las variadas actividades que ofrece esta viña –desde los clásicos recorridos por las bodegas hasta paseos en bicicleta y clases de equitación– y luego probar especialidades como el filete de cordero con verduras grilladas o el salmón con pastelera de choclo; todo en un comedor que funciona en una antigua casa de inquilinos restaurada. Ojo, pues junto a esta viña se encuentra el estudio gastronómico de la destacada chef Pilar Rodríguez, quien para este verano ofrece exclusivas sesiones de maridaje con las mejores etiquetas de Viu Manent y clases de gastronomía con recetas inspiradas en los productos típicos chilenos (cel. 09/ 6899 0441; www.pilarrodriguez.cl).

Tras el almuerzo, una buena alternativa sería caminar por la plaza de Santa Cruz, donde destaca su preciosa iglesia de estilo colonial, que fue reparada tras el terremoto por el Obispado de Rancagua y la Fundación Cardoen. Y luego, a partir de las cuatro (pues cierra a la hora de almuerzo), podría tomar el auto y manejar alrededor de 30 minutos hasta el Museo del Automóvil (tel. 72 / 2354 838), que destaca no sólo por su colección de

includes twelve of the most prestigious vineyards in Chile, like Casa Lapostolle, Viu Manent and Montes (www.rutadelvino.cl), but also for those who want to explore the heart of central Chile with a series of activities and excursions for all tastes and ages.

It is definitely a recommendable weekend escape from the capital which could be organised like this:

Friday: frenetic journey Warning: it can get hot on the road. It is therefore a good idea to arrange your journey so that you arrive in Santa Cruz at around lunch time. There are many lunch options, but you could choose between two of the most unmissable in the Colchagua Valley.

One is Panpan Vinovino (www.panpanvinovino.cl) at kilometre 31 on highway I-50, near the town of Cunaco, which offers regional cuisine in an old bakery built in 1830. The other is more wine-oriented, the Rayuela restaurant, at the Viu Manent vineyard (Carretera del Vino km 37, tel. 2840 3180; www.viumanent. cl). Then you can start with any of the different activities offered by the vineyard, from classic walks around the cellars to bicycle rides and horse riding, and then try the house speciality of lamb fillet with grilled vegetables or salmon with sweet-corn pie. All of this is offered in the dining hall of a restored old mansion.

Right next door to this vineyard is the gastronomic studio of renowned chef Pilar Rodríguez, who this summer is offering exclusive wine-pairing sessions with the best Viu Manent labels and culinary classes with recipes inspired by typical Chilean products (tel. 09/ 6899 0441; www.pilarrodriguez.cl).

After lunch, a good option is to walk around the main square in Santa Cruz, with its beautiful colonial church, which was repaired after the recent earthquake by the Bishopric of Rancagua and the Cardoen Foundation. Later on, from four o’clock onwards (it closes for lunch) you can take the car and drive for about 30 minutes to the Automobile Museum (tel. 72 / 2354 838), which has a notable collection of old cars, as well as a replica of the DeLorean used in the film Back to the Future.

Si no se anima a manejar más, en la misma ciudad está el Museo Mapuche Ruka-Mani (Maida Contreras 458, Villa Magisterio, cel. 09 / 9783 7791), a cargo de la recopiladora mapuche Elisa Navarro Cofré, quien juntó una gran muestra de objetos tradicionales, instrumentos de caza y telares, entre otros.

Atención: el museo solo abre con reserva previa.

Hacia la noche, convendría agendar una visita a la viña Laura Hartwig, que también opera en una casa colonial restaurada y que destaca especialmente por su restorán, Vino Bello (tel. 72 / 2822 755; www.vino-bello.com): cocina de inspiración italiana a cargo de la chef Giovanna Vanni, con distintas pizzas, pastas rellenas de la casa, variedad de postres y tragos bien particulares, como el pisco sour con pepperoni.

Sábado: tradición, joyas y estrellas Tras el desayuno, la sugerencia es ir a Lolol, situado a unos 30 kilómetros de Santa Cruz. ¿La gracia? Es un pueblo considerado Zona Típica chilena, con casas históricas y adoquinadas que, en su mayoría, ya han sido arregladas tras el terremoto de 2010.

Tras este paseo, debería estar de regreso en la ciudad para conocer el Museo de Colchagua (tel. 72 / 282 10 50; www.museocolchagua.cl), visita que perfectamente le puede tomar tres horas. Aquí hay desde arte precolombino y antiguas maquinarias de campo hasta carruajes y una sala dedicada a los mineros de San José. Al lado del museo funciona una pequeña tienda promovida por la joyera Marta Morrison (www.martamorrison.cl),

donde se venden y exhiben diversas artesanías hechas de materiales como plata, teatina y trigo de paja.

Si se le abrió el apetito, podría probar las especialidades peruanas de La Casita de Barreales (tel. 72 / 282 4468; www.lacasitadebarreales.cl), en el centro de la ciudad, para luego enfilar hacia la viña Santa Cruz, que cuenta con la mayor infraestructura turística de la zona. Las opciones en esta viña son múltiples: desde los tradicionales recorridos guiados por sus bodegas hasta rutas de trekking, en bicicleta e incluso en un tren que viaja entre las parras y que lo deja en un teleférico que conduce a una réplicas de aldeas aymara, pascuense y mapuche. Si lo pilla la noche, mejor aún: otra buena alternativa en la viña Santa Cruz son los tours astronómicos que se realizan en la cima del cerro Chamán, y que permiten no sólo conocer las principales constelaciones del universo, sino también algo de la cosmología de los pueblos ancestrales. Todo, por cierto, siempre con una copa de vino en la mano.

Saturday: tradition, jewellery and stars After breakfast, the suggestion is to go to Lolol, located 30 kilometres from Santa Cruz. The reason is that it is considered a very typically Chilean town, with historical houses and cobbled streets that were mostly repaired after the 2010 earthquake.

After this, you should return to the city to visit the Colchagua Museum (tel. 72 / 282 10 50; www.museocolchagua.cl), which can easily take three hours. The collection ranges from pre-Columbian art and antique farming machinery to carriages and one room dedicated to the San Jose miners. Next to the museum is a small shop owned by jewellery maker Marta Morrison (www.martamorrison.cl), where different handmade pieces are displayed and sold; they are made from different materials like silver, teatina and straw.

If this gives you can appetite, you could try the Peruvian delights of La Casita de Barreales (tel. 72 / 282 4468; www.lacasitadebarreales.cl), in the centre of the city, and later head to the Santa Cruz vineyard, which has the biggest tourist infrastructure in the region. There are many options in this vineyard: from traditional guided tours of the warehouses to hiking trails, bicycle paths and even a train that travels around the fields, leaving the passengers at a cable car that leads to replicas of Aymara, Pascuense and Mapuche villages. If you go at night it is better still: a good option in the Santa Cruz vineyard is the astronomy tour to the peak of the Chamán hill, giving a great view of the constellations, and offering a taste of the cosmology of our ancestral people. All of this, of course, with a glass of wine in hand.

Sunday: make your own wine

If you travel with children, the last day in the valley could start at around eleven in the morning at the Los Maitenes dairy farm (www.lechemaitenes.cl). Located 38 kilometres from Santa Cruz, close to the area of Las Pataguas, you can learn about how to make dulce de leche and cheese, and even milk a cow or give a milk to a calf. All this is in a country setting with ducks, pheasants, peacocks and ostriches.

Another possibility is to go horse riding with the excursions organised by American Ian Garret, on a three-hour route to the El Estuche and Las Ovejas hills, which offer a beautiful view of the Apalta and Santa Cruz valley (tel. 09 / 7667 2595; www. cabalgatasantacruz.com).

But if you are looking for something a bit more relaxed but just as educational, try an hour at the Mont Gras Vineyard (tel. 72 / 282 2855; www.montgras.cl), where visitors get the chance to create their own wine (even children). They provide the materials, an apron and of course, your creation, which you can have bottled and take home as a souvenir of your visit to the valley.

Domingo: haga su propio vino Si va con niños, el último día en el valle podría partir a eso de las once de la mañana en la lechería Los Maitenes (www.lechemaitenes.cl). Ubicada a 38 kilómetros de Santa Cruz, cerca del sector de Las Pataguas, aquí se puede aprender desde cómo funciona la producción de manjar y quesos, hasta ordeñar una vaca y darle mamadera a los terneros; todo en un entorno campestre junto a patos, faisanes, pavos reales y avestruces.

También está la posibilidad de hacer un paseo a caballo con las excursiones que organiza el estadounidense Ian Garret, como la que va en tres horas hacia los cerros El Estuche y Las Ovejas, y desde donde se consigue una gran vista del valle de Apalta y de Santa Cruz (cel. 09 / 7667 2595; www.cabalgatasantacruz.com).

Pero si quiere algo más relajado e igual de lúdico, convendría entonces una hora en la Viña Mont Gras (tel. 72 / 282 2855; www.montgras.cl), donde los visitantes pueden crear su propio vino (incluso los niños). En la viña entregan los materiales, el delantal y, desde luego, su propia creación, que puede llevarse embotellada como recuerdo de su visita al valle.

Catalejos OREOADICTOS Crocantes por fuera y cremosas por dentro, las famosas galletas Oreo son las más consumidas en Estados Unidos. Y de acuerdo a un estudio de la Universidad de Connecticut, las más adictivas también.

Eso arrojaron los resultados de una investigación con ratas de laboratorio, las que aumentaron el nivel de neuronas en el “centro del placer” del cerebro al consumir estas galletas, al mismo nivel que la cocaína. ¿Conclusión? Los alimentos altos en grasas y azúcares estimulan el cerebro de la misma forma que las drogas. Otro curioso descubrimiento del experimento es que –al igual que la mayoría de los humanos– las ratas también comen el relleno de la galleta primero.

According to a study at the University of Connecticut, they are also the most addictive. A study with lab rats found that more neurones in the pleasure centre of their brain were activated when they ate these biscuits, as many as when consuming cocaine. They concluded that foods high in fats and sugar stimulate the brain in the same way that drugs do. Another interesting finding from the study is that –just like most humans- rats also eat the filling first.

¿El país más literario del mundo? No, no es Francia, Rusia, ni Estados Unidos. Aunque no lo crea es Islandia, el país de la cantante Björk, que con su pequeña población de poco más de 300.000 habitantes cuenta con más escritores, más obras publicadas y más libros leídos por cápita que cualquier otra nación del planeta. Tanto así, que uno de cada diez islandeses publica algún escrito y las ventas de novelas policiales duplican en número a la de sus países vecinos. No por nada la Unesco designó a Reikiavik, su capital, como Ciudad de la Literatura.

Ya no sólo son en dos o tres dimensiones; los nuevos cines de hoy son en 4D: las películas se ven más reales, ya que incluyen movimientos de butacas de acuerdo a lo que se ve en pantalla, aromas, vapor, agua, destellos de luces y hasta efectos de viento; todo para hacer de la experiencia cinematográfica lo más cercano posible a la realidad. Aunque tecnología similar existe desde la década de los ochenta en parques temáticos del mundo entero, sólo desde 2009 se aplica a una sala de cine. En Chile, desde este año hay una sala funcionando en el Cine Hoyts de La Reina y se llama 4DX, a la que pronto se sumarán otras siete salas.

as cifras hablan por sí solas. Casi 20 millones de habitantes, 7 millones de autos, unos 400 helicópteros, 272 helipuertos –cantidad únicamente comparable con Nueva York– y más de 12.500 restoranes. Para qué seguir: Sao Paulo no sólo es la mayor ciudad de Brasil, sino también la gran metrópolis de Sudamérica. “Es por lejos el mercado más grande de tránsito aéreo en la región. Una ciudad enorme que concentra mucha industria, conecta todo el resto de Brasil y además conecta a Europa”, dice Holger Paulmann, Director Ejecutivo de Sky Airline, que anuncia para 2014 la apertura de su nueva ruta aérea desde Santiago, concretando así un esperado proyecto de la compañía. “Esperamos poder empezar a volar entre marzo y abril de 2014 para poder ofrecer nuestros vuelos diarios a los clientes que quieran visitar Brasil para el Mundial. Nuestra entrada a esta ruta dará más dinamismo a los precios y permitirá que las tarifas medias bajen cerca de 25%, tal como ha sucedido en otros destinos luego de nuestra entrada. Además, podremos llevar pasajeros a distintas ciudades en Brasil con nuestros socios comerciales GOL y Avianca Brasil, y además podremos conectar Chile con Europa, Medio Oriente, África y Asia desde Sao Paulo”.

he figures speak for themselves. Almost 20 million inhabitants, 7 million cars, 400 helicopters, 272 heliports, an amount comparable only with New York, and more than 12,500 restaurants. Why go on: Sao Paulo is not only the biggest city in Brazil but the greatest metropolis in South America. “It is by far the biggest market for air transport in the region. An enormous city that concentrates industry, connects to the rest of Brazil and also connects to Europe”, says Holger Paulmann, CEO of Sky Airline, which has announced that in 2014 it will open up a new route from Santiago, thus finalising one of the company’s most eagerly awaited projects. “We are expecting to begin flights in March or April of 2014, so that we can offer daily flights to clients who want to visit Brazil for the World Cup. Our entry into this route will give more mobility to prices and average fares should fall by around 25%, as we have seen with other destinations after we open up new routes. We will also be able to take passengers to other cities in Brazil with our commercial partners GOL and Avianca Brasil, and we will be able to connect Chile to Europe, the Middle East, Africa and Asia, all from Sao Paulo”.

Paraíso de compras Sao Paulo es un paraíso de la moda, el estilo y las compras. Irse de shopping es, sin duda, una de las actividades más notables de los paulistanos: la ciudad está llena de sitios para abrir la billetera, o al menos para vitrinear, pues los precios en algunos sitios suelen ser bastante elevados.

Uno de los epicentros comerciales está en la Rua Oscar Freire, algo así como la Ocean Drive paulistana, donde día y noche desfilan lindas mujeres en taco alto, con carteras y bolsas como sacadas de la serie Sex & The City, por las vitrinas de tiendas como Osklen o Havaianas, dos taquilleras marcas. La escena la complementan los frecuentes avistamientos de Bentleys, Ferraris o Lamborghinis, cuyas tiendas están cerca de ahí, en el exclusivo barrio de Jardins.

Esta calle –donde caminar es muy agradable– es sólo una pequeña muestra del espíritu comercial de Sao Paulo, que complementan la serie de shoppings centers en los alrededores, como el famoso Cidade Jardim (www.shoppingcidadejardim.com.br), situado en una de las principales avenidas de la Zona Sur de la ciudad, o el súper exclusivo Daslu (www.daslu.com.br), que vale la pena conocer más allá de sus inalcanzables precios.

Pero no todo se trata de compras caras. Otro sitio imperdible es la feria de las pulgas –similar a la de San Telmo, en Buenos Aires, aunque más pequeña– que se instala los sábados en la Plaza Benedito Calixto, en el barrio de Pinheiros. Una opción

One of the main commercial epicentres is the Rua Oscar Freire, something of a Sao Paulo Ocean Drive, where day and night beautiful women in high heels, with purses and bags, looking like they stepped out of an episode of Sex & The City, pass by the windows of shops like Osklen or Havaianas, two famous brands. Algo así como nuestro Persa Biobío, que los fines de semana se repleta de gente buscando buenos precios en carteras, zapatos, bikinis y todo tipo de accesorios; algunos de marca, otros claramente imitaciones. Lo mejor es comprar al por mayor para conseguir mejores precios.

Cultura y bohemia Los museos de Sao Paulo también merecen nota aparte. Es más: uno podría armar un recorrido de uno o dos días para ir sólo tras sus museos. Partiendo por la Pinacoteca (www.pinacoteca.org. br), el museo de arte más bonito de la ciudad –que está en la llamada Estacao da Luz, en el centro–, junto al Museo da Lïngua Portuguesa y el Museo de Arte Sacra.

También está el famosísimo MASP, el Museo de Arte Contemporáneo de Sao Paulo (www.masp.art.br). Ubicado en plena Avenida Paulista, mezcla una colección permanente con obras de Botticceli, Cézanne, Rembrandt, Velásquez o Van Gogh, con frecuentes muestras temporales, como la dedicada a los retratos del artista Lucian Freud que estará hasta mediados de diciembre.

Los museos de Sao Paulo también merecen nota aparte.

Y desde luego, un imperdible para cualquier fanático de la pelotita: el Museo do Futebol (www.museudofutebol.org.br), una notable e interactiva muestra sobre la historia del fútbol brasileño y mundial, que está en el Estadio Pacaembú, donde juega Corinthians, uno de los equipos más populares de Sao Paulo.

Si tanto paseo por museos le abre al apetito, conviene saber que en Sao Paulo hay tantos restoranes que daría para llenar una revista completa (al mismo tiempo que se vacía su billetera). But the city has more than just expensive shops. Another similar option is the market in Plaza Dom Orione, in the Italian neighbourhood of Bixiga, where every Sunday, you can find anything from antiques to good quality LPs of Brazilian music, as well as varied and picturesque crowds.

And of course, there is the famous Rua 25 de Março in the centre of the city. Something similar to the Biobio markets in Santiago, it fills every weekend with people looking for the best prices on handbags, shoes, bikinis and all kinds of accessories; some top brands and others clearly imitations. It’s best to buy in bulk to get the best prices.

O desde los formidables sushis de Jun Sakamoto (Lisboa 55, Pinheiros) hasta las notables churrasquerías de Fogo de Chao (varios locales en la ciudad) o las pizzas de Bráz (Rua Vupabussu 271, Pinheiros): comer pizza es una gran tradición en la ciudad. ¿Para la noche? La oferta también es variada, pero conviene estar atento a la movida nocturna de Vila Madalena, con mucho MPB –música popular brasileña–, clubes y bares no necesariamente sofisticados, pero muy frecuentados por paulistanos, como el Dolores Bar (Fradique Coutinho 1007) o el Salve Simpatia (Mourato Coelho 1329), dos sitios para beber y bailar con grato ambiente y mucho jolgorio.

Un domingo en Sampa Si está un domingo en Sampa –como también se le llama a la ciudad por la canción de Caetano Veloso–, puede ser buen momento para darse una vuelta por el barrio japonés de Liberdade, donde vive la mayor colonia japonesa fuera de Japón, con tiendas, restoranes, un museo y algunas construcciones que recuerdan un poco a la isla asiática. Ojo, pues el domingo va muchísima gente, pero aún así es una visita que vale la pena.

El domingo también es ideal para recorrer el Parque do Ibirapuera, algo así como el Central Park de Sao Paulo –guardando las proporciones, por supuesto–: una gran área verde en medio de la ciudad, donde está el edificio de Oscar Niemeyer que cobija a la famosa Bienal de Arte de Sao Paulo y la Sao Paulo Fashion Week. Ahí, de pronto, se pierden de vista los edificios y el cemento, y sólo se ve gente caminando, haciendo deporte, andando en bicicleta o descansando bajo la sombra de los árboles.

Un sitio que es un panorama en sí mismo y que permite entender que Sao Paulo, la gran metrópolis de Sudamérica, también tiene escala humana.

Abrió sus puertas hace cinco años en Concepción, en medio de cuestionamientos por la locura de instalar un restorán de 700 metros cuadrados en dicha ciudad. Y a pesar de todo, les fue bien. Tan bien, que hoy no solamente es el más famoso de la zona, sino que en enero de este año sus dueños decidieron abrir una nueva sede en pleno centro de Santiago, tratando de replicar la fórmula, pero con toques más gourmet: porciones generosas, buena comida y buen ambiente.

he Quijote Restaurant has a rather unique story. It immediately caused a stir after opening its doors five years ago in Concepción, where many questioned the logic of installing a seven hundred square metre restaurant.

Despite the furore, it was a success. So much so, that these days it is not just one of the most famous restaurants in the area, but now also in Santiago where the owners decided to open a new branch in January 2013, replicating the successful formula from the south, but with some gourmet touches: generous helpings, good food and a great atmosphere.

famoso Cancato sureño (6.990), que aquí preparan con una suave y al punto merluza austral gratinada con queso y longaniza, con espinacas, tomates, chips de papas y un toque de crema: un plato rico y untuoso, perfecto para sopear. El Atún fusión (11.000) es otra buena opción, con trozos de atún apenas sellados, con un cremoso risotto de azafrán y verduras salteadas: sabrosísimo.

La misma senda siguen las pastas que, hay que decirlo, son las mejores del centro de Santiago –los delgadísimos Linguinis Cervantes (6.900), con lomo saltado y crema, son un hit, al igual que las enormes ensaladas y entradas, entre las que destacan los Locos con salsa verde, directamente traídos de Antofagasta (10.900): tres enormes moluscos del porte de una mano, tan blandos que se parten con el tenedor, bañados en una salsa de mayonesa, limón, cebolla y cilantro.

Al igual que todos los platos anteriores, las porciones de los postres también son de temer: comen dos o tres felices. ¿El mejor? La Torta Quijote (2.990), una engendro maravilloso que une capas de milhojas, suspiro limeño, bizcocho de vainilla, trozos de chocolate, manjar y merengue. ¿Alguien dijo dieta?

Sebastian Gamboni was a key figure in the process; a talented chef from the kitchen of top restaurants such as Puerto Fuy and the now-defunct Zinnia, he created a broad and diverse menu, drawing on the flavours, succulence and generosity that made the Concepcion branch such a success, only this time the dishes are a little more up-market. The result is portions fit for southern stomachs, but with creative combinations and plenty of flavour.

Proof of this can be found in one of the house specialties: Flank steak with gnocchi a la parmesana (CLP 9,900), a huge slice of steak which is tender and juicy enough to cut with a spoon, alongside creamy gnocchi. Or how about his new take on the southern classic Cancato (a fish dish priced at CLP 6,990), which is prepared with a tender and perfectly cooked fillet of southern hake with grated cheese and chorizo, with spinach, tomatoes, fried potatoes and a dash of cream: a tasty, luxurious dish, which will leave you licking the plate. The fusion tuna (CLP 11,000) is another great option, with slices of seared tuna alongside a creamy saffron risotto and sautéed vegetables: A real treat.

The pasta dishes follow suit and, it must be said, they are the best the city centre has to offer –the skinny Linguine Cervantes (CLP 6,900), with sautéed beef and cream are a popular choice-; as are the huge salads and starters, among which the abalones with mayonnaise, lemon, onion and coriander are a must, brought straight from Antofagasta (CLP 10,900): three enormous mollusks as big as your fist and soft enough to melt in your mouth.

Like all the previous dishes, the servings of the puddings are to be feared: two or three people can happily share. The best one has to be the Torta Quijote (CLP 2,990): a wonderful creation uniting pastry layers, suspiro limeño (a Peruvian blancmange), vanilla sponge, chocolate chunks, caramel and meringue.

Una elaboración diferente

A Diff erent Method

Muchos nos saben qué es exactamente un rosado. No es la mezcla de un vino tinto con uno blanco –aunque en contadas ocasiones hay quienes realizan esta mala práctica–, sino uno elaborado de manera especial. Hay dos métodos. Una es dejar a los vinos tintos menos tiempo en contacto con sus hollejos o pieles en el proceso de maceración, justo después de cosechada la uva. ¿La razón? Los hollejos son los que le dan los taninos, color y aroma a los vinos; mientras más tiempo se dejen, más concentración se puede obtener. Generalmente este proceso dura unas dos semanas, pero al momento de hacer un rosado, es de solo 36 a 48 horas. Otra forma de obtener un rosado es a través del sangrado de grandes tintos, es decir, cuando liberan jugo del estanque para que el vino se concentre aún más. Cualquiera de estos dos sistemas, bien efectuado, da como resultado un vino fresco, amable, con algo de estructura, buena acidez y rica fruta roja, de esas veraniegas, como frambuesas, guindas y frutillas.

Las cepas más utilizadas en Chile para elaborar este tipo de vinos son cabernet sauvignon, merlot, syrah e incluso malbec; pero hoy también hay quienes utilizan cinsault, carignan e incluso país.

Con respecto al maridaje, dependiendo de su cuerpo y frescura, funcionan para servirlos solos, como aperitivos o como complemento de pescados grasos, ensaladas, quesos y también platos tan difíciles de maridar como las paellas: para muchos, el match perfecto.

Not many people know exactly what Rosé is. It isn’t a mix of white and red wine, although there are many who undertake this barbaric practice, but rather a diff erent production method. There are two ways of producing Rosé.

One is to leave red wines for less time with the pulp and skins during the crushing process, just after harvesting the grapes. Why? The skins are the source of a wine’s tannins, colour and aroma, so the longer you leave the wine in contact with the skins, the more concentrated it becomes. Generally this process lasts for around two weeks, but in Rosé production the process lasts no more than thirty-six to forty-eight hours. Another way of producing a Rosé is by bleeding a great red wine: when juice is released from a red wine must to further concentrate its colour. Either of these systems, if properly executed, produces wine that is fresh, pleasant, sturdy, nicely acidic and has notes of summer berries such as raspberries, cherries and strawberries.

The grape varieties most commonly used in Chile are Cabernet Sauvignon, Merlot, Shiraz and even Malbec; however, these days some producers also use Cinsault, Carignan and even País.

In terms of pairing, depending on the body and freshness of a particular label, Rosés can be served alone, as an aperitif or alongside fatty fish, salads, cheese and even difficult to accompany dishes like paella. For many, this is the perfect match.

Tinto o blanco? Esa es la cuestión. Rara vez se piensa en un rosado al momento de acompañar una comida o tomar un aperitivo. Pero lo cierto es que muchos de estos vinos tienen muy buena fama al otro lado del hemisferio, sobre todo en países como Francia, y funcionan perfecto para ambas ocasiones: tienen la frescura y ligereza de un blanco, pero con la estructura –mucho más leve, por cierto– de un tinto. ¿Y por qué en Chile siempre han sido mal mirados? Fácil: porque son pocas las bodegas que realmente se la han jugado por elaborar rosados de calidad. En cambio, son más los que producen rosados dulces –con el fin de tapar defectos con azúcar– y con uvas de mala calidad. Hasta ahora.

Porque hoy son cada vez más los productores que elaboran excelentes rosados, pensados desde el viñedo: la uva es cultivada exclusivamente para que en un futuro se transforme en un buen rosé.

Rarely do people think pink when selecting a dinner wine or aperitif. But these wines are highly regarded in the Northern Hemisphere, especially in countries such as France, and can be the perfect option for either occasion: They have the freshness and delicacy of a white wine, but with the body, much lighter obviously, of a red. So why have they always been frowned upon in Chile? That’s easy to answer as few vineyards have actually taken the gamble and tried to make a quality Rosé. Instead, many have produced sweet Rosés, in an attempt to mask deficiencies, and used poor quality grapes. Until now. These days there is an increasing number of producers who are prepared to create stunning Rosés, planned meticulously from day one: Grapes are grown with the exclusive purpose of one day producing a fine Rosé.

Hace siete años que Nicole volvió a Chile. Se casó, tuvo dos hijos, creó su propio sello discográfico, volvió a las listas de éxitos con la canción Hoy, y vivió la enfermedad y muerte de su madre. Todos esos cambios son el contexto de su nuevo disco, Panal, con el que la cantante continúa el viaje musical que inició a los diez años, y que en los noventa le hizo vender más de 120 mil discos y ser una referente del pop en español.

Nicole came back to Chile seven years ago. She married, had two children, started her own record label, had a hit single with the song Hoy, and accompanied her mother during her illness and final days. All these changes provide the context for her latest album, Panal, with which the singer aims to continue her musical journey which began at the age of ten. Since then she has become a superstar of Spanishlanguage pop, selling 120 million albums in the 90s.

n 1985, Denisse Laval, alias Nicole, apareció por primera vez en las pantallas de TV. Fue en la sección llamada El Clan Infantil de Sábado Gigante, en el que las cámaras la mostraron cuando tenía ocho años dando opiniones vestida con una polera que decía Rock and Roll. Esos fueron sus primeros minutos de fama nacional. Un presagio de lo que sería una larga carrera de música y éxito.

Su primer disco, "Tal vez me estoy enamorando" lo lanzó a los doce años y luego de una pausa para terminar sus estudios secundarios lanzó a los diecisiete "Esperando nada", que fue triple disco de platino con el mega éxito "Dame luz".

Desde ahí Nicole se convirtió en una referente del pop-rock latino. Lo que vendría después suma a su consolidación: Se afianzó como compositora y sacó el exitoso disco "Sueños en tránsito", producido por Gustavo Cerati. La misma Madonna la escogió para ser parte de su sello Maverick Records. Hizo carrera en Estados Unidos hasta el cierre de la discográfica de la reina del pop. Creó su propio sello, Chika Entretainment, y volvió a Chile con el disco APT recién grabado. Y luego de siete años en los que retomó su carrera televisiva en Chile, formó una familia junto al animador de TV Sergio Lagos, y compuso el exitoso tema central de la teleserie "Soltera otra vez" llamado Hoy, está de vuelta con una nuevo disco de temas inéditos llamado Panal.

I

n 1985, Denisse Laval, aka Nicole, appeared for the first time on TV screens. On the El Clan Infantil segment of Sábado Gigante (a Latin American variety show), the cameras showed her at the tender age of eight giving opinions in a t-shirt that read Rock and Roll. Those were her first minutes of fame in Chile. Just a hint of what was to be a long and successful career in the music industry.

She released her first album, Tal Vez Me Estoy Enamorando, at age twelve and after a break to end high school came back with a second offering Esperando Nada, which went triple platinum thanks to megahits like Dame Luz. Since then, Nicole has become one of Latin Pop-Rock’s leading lights. What happened next really cemented her place as a legend: She established herself as a composer and released another album Sueños en Tránsito, which was produced by Gustavo Cerati (of Soda Stereo). Madonna herself handpicked Nicole to join her Maverick Records label. She enjoyed fame in the States until the Queen of Pop’s label closed down. After that Nicole set up her own label, Chika Entretainment, and came back to Chile having just recorded another album, APT. After seven years in which she has re-established herself as a TV celebrity, started a family with presenter Sergio Lagos and composed the successful theme tune, Hoy, from the soap opera Soltera Otra Vez, she’s back with yet another album, Panal.

C 19 —En estos siete años que han pasado desde tu último disco volviste a Chile, te casaste, tuviste hijos, perdiste a tu madre, ¿cómo influyó esto en la composición de las canciones de Panal?

—La verdad es que todas esas cosas se reflejan en este disco.

Se llama Panal porque justamente habla de la comunidad familiar, de valorar la gente que te rodea, la familia, los amigos, de alimentarse, cuidarse, recibir los nacimientos, las despedidas. Es bien personal en ese sentido.

—In the seven years since you last released an album you have come back to Chile, got married, had children and lost your mother. How have these events shaped the songs on Panal?

—In truth, all of the things you mentioned are dealt with in the album. It’s called Panal because it’s all about the family experience, about valuing the people you have around you, family, friends, eating, staying healthy, births, and farewells. It’s very personal in that way.

—¿Y en el sentido más doméstico? ¿Cómo ha sido la creación de un disco considerando que antes eras independiente y ahora estás casada y tienes dos hijos?

—Bueno, como muchas mamás que trabajamos hay que repartirse. Cuando hice el disco estaba embarazada, mi hijo mayor León cumplía 5 años y tenía mucha energía y además mi madre estaba enferma. Entonces la grabación del disco me ayudó a canalizar muchas emociones. Necesitaba esos espacios de música, de escribir, de componer. Se corre mucho, pero una de las enseñanzas que quiero darles a mis hijos es que si uno tiene una pasión como la música, hay que ser constante.

—And how about your homelife? How different has it been to launch an album now that you are no longer independent and are married with two children?

—Well, as many working mums do, I have to learn to organise my responsibilities. When I recorded the album I was pregnant, my eldest son was turning five and was very energetic, and my mother was ill. So, recording the album allowed me to channel my feelings somehow. I needed that musical space, to write and to compose. You rush around a lot, but I want to show my children that you have to follow through with your passions, like music in my case.

—Tu marido, Sergio Lagos, también tiene una carrera musical. ¿Le mostraste las canciones cuando estabas en proceso de composición?

—Él suele ser más abierto con su propia música y me muestra todo lo que está haciendo. Yo soy más reservada y en la fase de composición me gusta estar sola. Entonces me dice no, pero por qué, muéstrame más. Pero claro, cuando la canción está más o menos lista, se la muestro y me da su opinión y compartimos harto.

Siempre sentí que cantar era algo que tenía que hacer, tuve esa certeza desde muy chica y mis papás me apoyaron siempre.

I always felt that singing was something that I had to do, I had been certain from a young age and my parents had always supported me.

—El primer single de tu disco, Baila, habla sobre una niña que baila en la noche luego de despertar de una pesadilla. ¿Esa letra es autobiográfica?

—Sí. Esa canción habla del momento en que vencí por primera vez el miedo. Cuando tenía ocho años vivía en una casa muy antigua de esas que crujen enteras, y tenía mucho miedo a los monstruos y a la oscuridad. Un día desperté de una pesadilla como a las cuatro de la mañana. Y en vez de irme a la cama de mis papas, porque ya me sentía grande, me fui al living, que era el lugar más tenebroso de la casa. Y me puse a bailar en la oscuridad. Ahí comprendí que vencí el miedo.

—Your husband, Sergio Lagos, also has a music career. Did you show him any songs as you were composing the album?

—He is usually more open with his music and shows me everything he is doing. I’m a little more private and when I’m writing, I prefer to do it alone. So he always says “No! Why? Show me more!”

But of course, when the song is more or less done, I show him what I have and he gives me his opinion; we share a lot in that way.

—The album’s first single, Baila, is about a girl who dances in the night after she wakes up from a nightmare. Is there an autobiographical element to it?

—Yes. That song is about the first time I truly overcame fear.

When I was eight years old I lived in a very old house, the kind of house that creaks a lot, and I was afraid of monsters in the dark. One night I woke up from a nightmare at around four in the morning. Instead of going to my parents’ bed, because I felt like a big girl, I went to the living room, the darkest place in the house. And I just started dancing in the darkness. That’s when I realised I had overcome my fear.

—En esa época estabas partiendo tu carrera en la televisión. ¿Tenías algo de miedo con lo que podía pasar si te hacías famosa? ¿O te tomabas las cosas como un juego?

—Nunca tomé nada como un juego. Siempre sentí que cantar era algo que tenía que hacer, tuve esa certeza desde muy chica y mis papás me apoyaron siempre. Hubo muchos momentos complicados, sobre todo porque soy muy tímida. Y eso a veces me confundía porque pensaba: ¿serviré para esto si mi personalidad es así? Pero cuando me subía al escenario la timidez se me pasaba.

—¿Qué cosas te gustaba cantar en esa época?

—Me gustaban las cosas que escuchaban las niñas de mi edad, como Madonna y Cindy Lauper. Pero por mi hermano mayor, también escuchaba a The Cure, Charly García, Soda Stereo, Rolling Stones. Me acuerdo que nos disfrazábamos de Kiss y nos pintábamos la cara con tempera. El era el baterista y yo actuaba como el cantante.

Escuchábamos mucha música.

—A los diecinueve grabaste con uno de tus ídolos, Gustavo Cerati. ¿Qué recuerdas de esa experiencia?

—Fue increíble, yo recién me había ido de la casa de mis papás y vivía en mi propio departamento. Y él, que en esa época estaba en Chile y había aceptado producir mi disco, iba a mi casa, típica con colchón en el piso, casi vacía, y le ofrecía una taza de café sin azúcar porque había olvidado comprarla. Pero le daba lo mismo, y estaba con él en el living mostrándole las canciones con mi guitarra. Me llegaban a tiritar los dedos. Me decía que tuviera más confianza en lo que hacía. Él fue muy importante para darme seguridad como compositora. Porque siempre me auto censuraba.

—¿Con este nuevo disco, en qué etapa musical crees que te encuentras?

—Yo creo que sigo en una búsqueda. Uno cuando es chico está aprendiendo cosas, luego como adolescente también, y así siempre. Algunos de mis mejores amigos tienen 70 años y siguen en una búsqueda constante. Con la música es lo mismo. Tengo más herramientas que antes, pero mientras la vida siga en curso uno siempre estará explorando en la música.

—Como tu canción del viaje infinito.

—Exactamente. Como un viaje infinito.

—At that time you were just starting out on TV. Were you afraid of what would happen if you became famous?

Or was everything just a game to you back then?

—It was never just a game. I always felt that singing was something that I had to do, I had been certain from a young age and my parents had always supported me. There were some tricky moments, mostly due to my shyness. That used to confuse me a lot. I would think: Can I really be a singer if I’m as shy as this?

But when I got on stage the shyness melted away.

—What kind of songs did you enjoy singing back then?

He was the drummer and I was the singer. We listened to a lot of music.

—When you were nineteen you recorded an album with one of your heroes, Gustavo Cerati. What do you remember about that?

—It was incredible. I had just left my parents’ house to live in my own apartment. ¿El fin de la Unión Europea? Quienes apostaban por esta idea se equivocaron, así como quienes creyeron que este sería el año de la recuperación de Latinoamérica. A doce meses de comenzado el año, ya es tiempo de sacar cuentas de lo que fue este turbulento año económico.

urante todo este año, según el diario El Mercurio, se emitieron 278 recomendaciones sobre acciones que cotizan en la Bolsa de Santiago, de las cuales 127 ordenaban comprar y 115 mantener, es decir un 87% del total. ¿Cómo le ha ido a la bolsa Chilena? Hasta el momento ha perdido un 11,46%, con sectores que han caído incluso más de un 25% de su valor bursátil, como es el caso del sector industrial y el de construcción. Hasta la fecha, tenemos un solo sector con números azules en el IPSA, el de servicios básicos, que obviamente es el más defensivo de la plaza local, con una rentabilidad de 0,55% a la fecha. No ha sido una buena recomendación comprar en Chile y no vemos que tampoco lo sea en el corto plazo.

En general, a principios de año las recomendaciones estaban divididas entre los que creían y los que no creían

en una recuperación de Latinoamérica, después de haber ganado sólo un 5,43% durante el 2012, en contraste con Estados Unidos (13,41%), Asia Emergente (21.28%) y Europa Emergente (19,75%). Lamentablemente, la historia es la misma para los que apostaron por el IPSA. Hasta el momento, Latinoamérica ha caído un 12,4%, arrastrado por la delicada situación económica que vive Brasil.

¿Quiénes han sido los ganadores?

Uno de los temas sobre los que más se ha escrito, conversado y especulado en el último tiempo ha sido el del presente y futuro de la Unión Europea. Recordemos las palabras de George Soros, llamando al pánico, al declarar de forma

hroughout the year, according to Chile’s El Mercurio newspaper, 278 recommendations were made regarding shares on the Santiago Stock Exchange; 87% of those recommendations were to buy (127) or not to sell (115). How has the Chilean stock market performed? At the time of writing, it has fallen by 11.46% in value, and in some sectors such as industry and construction by more than 25%. To date, the IPSA (Santiago Exchange) has just one sector in the black, basic services, which is obviously the least likely to fluctuate on the local market, having made 0.55% profit. The recommendations made to buy shares in Chile were not wise and we don’t expect things to change in the short term.

Generally speaking, at the beginning of the year the recommendations we divided into those who believed and those who didn’t believe in a Latin American recovery, after making only 5.43% in 2012 compared with 13.41% in the USA, 21.28% in the emerging Asian markets and 19.75% in emerging European markets.

Unfortunately, the story is still the same for those who bet on the IPSA. To date, Latin America has fallen by 12.4%, dragged down by an unstable economic situation in Brazil.

Who are the winners?

One of the most written-about, discussed and speculated-upon topics in recent times has been the present and future condition of the European Union. Remember the words of George Soros, sparking panic as he authoritatively declared that the Euro would end up destroying the EU, or the respected weekly The Economist analysing the possible exit of Greece. People who believed that the world’s biggest monetary union would collapse like a house of cards have missed out on the 15.21% rise to date. That statistic gets larger still if we take the most vulnerable markets into account, such as Spain (18.28%), Greece (23.8%) and Portugal (14.77%).

The USA has also been a destination for investors, which has buoyed the analysts who predicted that the 13.41% rise of 2012 was not reaching the full potential of the optimism surrounding world’s largest economy. The S&P 500 has to date risen by 17.9% and has only been checked recently by talk of budget cuts and the debt ceiling debates raging on Capitol Hill.

Estados Unidos ha sido también un destino de inversiones, que ha dado alegría para aquellos que calcularon que la rentabilidad de 13,41% del 2012 no capitalizaba de forma íntegra las buenas expectativas para la primera economía del mundo. EL S&P 500 en lo que va del año ha rentado un 17,9% y ha sido frenado durante las últimas semanas por la discusión del presupuesto en el Capitolio, así como también por el tedioso tema del techo de la deuda.

¿Y ahora qué?

Nos sigue gustando Europa y Estados Unidos. No obstante, vemos una muy buena oportunidad en Japón, país que está haciendo enormes esfuerzos monetarios y fiscales para sacar a la economía de un letargo casi eterno, ese que se traduce en un crecimiento trimestral de 0,2% en promedio desde 1994, y en una inflación de 0,0% (promedio mensual) desde el mismo año. Las cifras hasta el momento han sido alentadoras y lo demuestra la bolsa, que ha ganado un 36% durante el año.

El gran desafío estará en cuándo entrar en Latinoamérica, específicamente en Brasil. Según nuestros cálculos, el déficit estructural de la economía estaría incorporado en los precios. En términos generales, la historia de Brasil es sabida por todos los agentes de mercado y es un asunto prácticamente vox populi. Incluso The Economist le dio una portada y una cobertura especial en uno de sus números de septiembre. Bajemos la ansiedad y entendamos que calcular el timing perfecto de entrada en una bolsa es imposible. Sin embargo, cuando las empresas del Bovespa comiencen a mostrar utilidades, podría ser una buena señal para comprar. Atentos.

So what now?

We still like the look of the USA and the EU. Nevertheless, we see some very good opportunities in Japan, which has been moving monetary and fiscal mountains to shake off its almost eternal lethargy of just 0.2% average quarterly growth since 1994, and an inflation rate of 0.0% (monthly average) over the same time period. The figures for now have been encouraging and this has translated to the stock Exchange, which has risen by 36% this year.

The great challenge will be deciding when to enter the Latin American markets, especially Brazil. By our estimates, the economy’s structural deficit is incorporated in its prices. Generally speaking, all the players in the market are aware of Brazil’s history, which is essentially a vox populi subject. Even The Economist featured Brazil on the cover of one of its September issues. But let’s not be too hasty and understand that trying to time the perfect entry to a market is impossible. However, when the Bovespa companies begin to return to profit, that could be your sign to buy.

En el mes de febrero y durante tres días, se realiza el Carnaval Andino en Arica, el cual congrega a más de 100.000 espectadores cada año. Con esta fiesta se busca promover y rescatar las raíces folclóricas del norte del país. La danza es la principal protagonista de esta festividad, llenando del color los paisajes nortinos, gracias al centenar de agrupaciones de baile, procedentes de la zona urbana y de los valles de Lluta y Azapa, así como de los pueblos rurales de la precordillera y el altiplano chileno. Además, participan grupos invitados provenientes de Perú y Bolivia. Se realizan diferentes danzas como la Tobas, que se caracterizan por su agilidad, sus saltos, los variados pasos y su vestimenta con plumajes de llamativos colores, o la conocida Zampoñada.

For three days in February the Andean Carnival takes place in Arica, bringing together a crowd of over 100,000 each year.

The aim of the festival is to promote and recover northern Chile’s folkloric roots. Dancing is central to the festival, painting the northern landscapes with vibrant colours. Hundreds of dance troupes gather from all around the Arica metropolitan area, the Lluta and Azapa valleys and the rural towns in the Andean foothills and plateau. There are also specially invited troupes from Peru and Bolivia. Several diff erent dances are included such as the Tobas -characterised by agile movements, jumps, varied steps and feathery brightly-coloured costumes- or the well-known Zampoñada.

VIRGEN DE ANDACOLLO VIRGEN DE ANDACOLLO En la pequeña localidad norteña de Andacollo – en la Región de Coquimbo– se realiza una de las más antiguas fiestas religiosas chilenas, que data del siglo XVII, en honor a una fi gura de la Virgen de Andacollo del Rosario.

Esta festividad mezcla el catolicismo con elementos de las culturas indígenas y se celebrará entre el 23 y el 27 de diciembre con bailes, música y comidas. La Virgen de Andacollo atrae a miles de peregrinos que acuden a agradecer los favores que ésta les ha cumplido. El pueblo cuenta con dos iglesias donde se le venera a la Virgen: la primera es el llamado “templo antiguo” –construido en 1789–, que es donde la imagen descansa durante todo el año, y la otra es el “templo grande”, que fue inaugurado en 1893.

One of Chile's oldest religious festivals takes place in the small northern village of Andacollo, in Chile’s Coquimbo Region. Dating back to the seventeenth century, the Virgin de Andacollo festival honours the Virgin Mary after a local found a statuette of the saint in the area during the conquest of Chile. The festival mixes Catholicism with elements of indigenous culture and is celebrated between 23rd and 27th December with dances, music and food. Our Lady of Andacollo draws together thousands of pilgrims, who wish to give thanks for the favours that the Virgin has granted them. The village has two churches where the Virgin is venerated: The first is called the “Old Temple” (templo antiguo), built in 1789, where the image of the Virgin is left for the whole year. The other is known as the “Big Temple” (templo grande), and was inaugurated in 1893.

Las fiestas de la vendimia celebran la cosecha de las uvas y se realizan principalmente en la zona central del país. Sin embargo, el Valle del Elqui también tiene la suya durante el mes de febrero. Algunas de las actividades se desarrollan en Vicuña, mientras que otras tienen lugar en Paihuano, un tradicional pueblo ubicado a 9 kilómetros de Rivadavia, donde además se puede disfrutar de bellos paisajes. En Paihuano se realizan fiestas típicas, como la pampilla de verano, la noche de estrellas y el Festival de la Voz de la Uva.

The wine harvest festivals celebrate the gathering of grapes and are principally held in the central regions of Chile. Nevertheless, the Elqui Valley also celebrates its own harvest during the month of February. Some of the activities take place in Vicuña, whilst others are held in Paihuano, a traditional village located about 9km from Rivadavia, where visitors can also enjoy the beautiful landscapes. Paihuano also plays host to several typically Chilean parties, such as the Pampilla (a Chilean summer fair), the Starry Night and the Voice of the Grapes Festivals.

En la región del Maule se realiza la fiesta de la trilla en Pelluhue, una de las tradiciones más antiguas de Chile. Este clásico evento, que se realiza en febrero, comienza con el consumo de ñachi –una preparación culinaria de origen mapuche, a base de sangre fresca de animales y aliños– que es hecho por los mismos campesinos del sector, y luego se saca leche al pie de la vaca. Además, hay música típica –a cargo de cantoras y payadores del club de huaso de la comuna–, bailes, juegos y actividades como domaduras de caballos y cueca.

También se instala una feria gastronómica para que turistas y visitantes puedan degustar platos de la costa maulina. Cada año esta festividad reúne a más de cinco mil personas entre lugareños y turistas.

In Pelluhue, in Chile’s Maule Region, one of the country’s oldest traditions takes place: La Trilla, a threshing festival. This classic event, held every February, begins with the traditional drinking of Ñachi –a traditional Mapuche food, made from fresh animal blood and spices- which is prepared by the region’s locals, and fresh milk from the cow. Then there’s traditional music – left in the hands of local huaso (Chilean cowboy) singers and minstrels-, dances, games and activities such as horse taming and Cueca, Chile’s national dance. Furthermore, a large culinary market is set up for tourists and visitors to sample the best dishes from Maule’s coastline. Each year there are more than five thousand visitors including locals and tourists.

FESTIVAL COSTUMBRISTA CHILOTE Todos los años en la Isla Grande de Chiloé, específicamente en Castro, se lleva a cabo el Festival Costumbrista Chilote, que se realiza desde 1979. Esta festividad atrae cada año a más de 30.000 visitantes cautivados tanto por las muestras típicas de artesanía tradicional en madera, lanas, conchas y fibras, como por los suculentos platos típicos isleños que se ofrecen. ¿Por ejemplo? Curantos, milcaos, chochoca, las tortillas de rescoldo, las cazuelas de cordero y ave, siempre acompañadas de mistelas de toda clase o chicha de manzana. Toda la muestra de artesanía y gastronomía de la zona es amenizada por presentaciones de canto, música y bailes chilotes. Además, se presentan trabajos campesinos autóctonos como la aserradura de brazos, la trilla a brazos y minga de manzana a vara.

FESTIVAL COSTUMBRISTA CHILOTE Each year, Chiloe’s Big Island, specifically the city of Castro, plays host to the Chiloé Cultural Festival, which has taken place since 1979. This party attracts more than thirty thousand visitors each year who are attracted by both the local handicrafts in wood, wool, seashells, and fibres, and the succulent local island delicacies on offer. An example is the Curanto (a dish cooked underground with hot stones), milcaos and chochocas (potato pancakes), tortillas de rescoldo (bread loaves baked in embers) and lamb or poultry stews, always accompanied by Mistela (homemade grape liquor) or Chicha de Manzana (Chilean apple cider). All the handicrafts and culinary specialties on show are presented alongside singing, music and local dancing.

What’s more, visitors can see some traditional rural work methods such as sawing, threshing and apple mashing.

NAZARENO DE CAGUACH

JESUS OF NAZARETH PARADE, CAGUACH ISLAND

A cuatro horas de navegación de Castro, se encuentra Caguach, una de las islas pequeñas más conocidas del Archipiélago de Chiloé. Es en este lugar donde se realiza la ceremonia anual de la peregrinación del Jesús Nazareno, que consiste en la transportación de la figura del Nazareno de Caguach por la explanada de la isla. Esta festividad religiosa –realizada el tercer domingo de enero– es una de las más importantes del sur de Chile y congrega a cerca de 8 mil personas. La procesión se inicia en la iglesia de la isla –que fue declarada Patrimonio de la Humanidad por la Unesco en 2000–, y después de la misa se realiza la procesión de las banderas acompañada de sonidos alegres de distintos instrumentos musicales típicos en la zona. Los alrededores del santuario se transforman en una fiesta costumbrista llena de comida típica, música y juegos.

Four hour’s sail from Castro is the small island of Caguach, one of the Chiloé Archipelago’s best known islets. This is the place where the annual Jesus of Nazareth parade takes place, where locals carry an image of Jesus along the island’s coast. This religious festival –held on the third Sunday of January- is among the most important in southern Chile and brings together around eight thousand people. The procession starts in the island’s church –which was declared a UNESCO World Heritage Site in 2000, and after mass, proceeds with band waving and upbeat local music. The area around the church becomes a kind of cultural festival full of typical food, music and games.

Con el fin de rescatar y revivir las costumbres de los primeros colonos que llegaron a habitar la cuenca del Baker, el segundo fin de semana de febrero se realiza la Fiesta Costumbrista de Cochrane. Para conmemorar a los primeros colonos, se realiza un desfile que recorre las calles de la ciudad pasando por el cementerio municipal, donde se lleva a cabo una romería en homenaje a todos los pioneros de la comuna. En esta actividad es posible ver a más de un centenar de personas desfilando a caballo y carretas tiradas con bueyes, vestidos con atuendos típicos. La celebración, además, ofrece durante dos días muestras de esquila, jineteadas de ovejas para los niños, y para los adultos jineteadas de potros, juegos tradicionales, ensillados de pilcheros, presentaciones con músicos locales y regionales, y una gran variedad de gastronomía típica donde destaca el asado de vaquilla y la torta frita.

In order to commemorate the first settlers, a parade runs through the city’s streets past the municipal cemetery, where a rural religious ceremony pays homage to the community’s pioneers. Here, visitors can see hundreds of people parading on horseback or in ox-drawn carts, all dressed in traditional attire. The celebration also off ers two days of demonstrations of shearing, sheep riding for kids and colt riding for adults, traditional games, pack horse saddling, local and regional music, and a wide variety of culinary specialities among which the barbecued veal and fritters stand out.

Los expertos coinciden en que la carne puede ser reemplazada por otras proteínas, pero no así elementos tan fundamentales como la leche, por eso no recomiendan dietas veganas para niños. Y aunque no coinciden 100%, aseguran que una dieta ovo lacto vegetariana, guiada por profesionales, no presenta riesgos para el crecimiento.

Experts agree that meat can be replaced by other proteins, but this is not true of other fundamental elements like milk; this is why they don’t recommend vegan diets for children.

Cuándo comemos animales, ellos mueren? No me gusta que ellos mueran. Me gustan que sigan de pie, felices. Hay que cuidarlos, no comerlos”. Así Luiz Antonio, un niño brasileño de tres años, le explicaba a su madre por qué no quería comer pulpo. El video, subido a YouTube a mediados del año pasado, fue reproducido más de un millón de veces en quince días y terminó convirtiéndose en un viral subtitulado en distintos idiomas.

Los "principios morales o animalistas" suelen ser la principal razón por la que los vegetarianos deciden no comer carne.

Así lo declaró un 74% de los encuestados en un estudio de la Escuela de Nutrición y Dietética de la Universidad del Desarrollo (UDD) – Clínica Alemana, mientras que sólo un 8,6% dijo hacerlo por los beneficios para la salud. Pero, ¿qué pasa cuando estos principios son traspasados a los hijos y estos se convierten en niños vegetarianos?

“No es indispensable consumir carne”, dice el doctor Sergio Weisstaub, médico pediatra y magíster en Nutrición del Instituto de Nutrición y Tecnología de los Alimentos (INTA) de la Universidad de Chile. “Un niño puede reemplazar eso con leche, huevos, quesos, yogures y otras proteínas”.

Así también lo asegura la nutricionista Jeursa Brignardello, una de las autoras del estudio de la UDD, quien explica que lo peligroso para los niños es no consumir los nutrientes adecuados durante las diferentes etapas de crecimiento y desarrollo durante la primera infancia. Sin embargo, sostiene que si ellos al crecer quieren probar alimentos de origen animal deben ser respetados por sus padres.

Marcela Cosentino, nutricionista de la Clínica Santa María, no está de acuerdo con someter a los niños a dietas vegetarianas por los déficit que puedan tener: “Los hábitos se forman desde muy pequeños, es bueno que aprendan a comer de todo y evitarles enfermedades causadas por esto”. Pero asegura que si se decide hacerlo, lo primero que hay que hacer es consultar a su pediatra, para “poder seguir algunos consejos nutritivos y asegurarse de que el cambio no afectará de forma negativa a su crecimiento y desarrollo”.

Los nutrientes necesarios Los expertos coinciden en que una dieta vegetariana puede ser sana y tener ventajas para la salud si ésta se planifica adecuadamente. Para ello es necesario consultar con profesionales:

“Moral or animalist principles” are often the main reason why vegetarians decide to not eat meat. This was the answer of 74% of the people surveyed by the School of Nutrition and Dietetics of the Universidad de Desarrollo (UDD) together with Clinica Alemana, while only 8.6% said that it was to benefit their health. But what happens when these principles are passed on to our children and they become child vegetarians?

“It is not indispensible to consume meat”, says doctor Sergio Weisstaub, paediatric doctor with a Masters’ degree in Nutrition from the Institute of Nutrition and Food Technology (INTA) of the University of Chile. “A child can replace it with milk, eggs, cheese, yoghurt and other proteins”.

Nutritionist Jeursa Brignardello, one of the authors of the UDD study, is in agreement. She says that the danger for children is in not consuming the right nutrients at different stages of growth and development during infancy. However, she adds that if they want to try foods that come from animals as they grow older, their parents should respect their decision.

Marcela Cosentino, nutritionist at Clinica Santa Maria, does not agree with subjecting children to a vegetarian diet, because of the deficits it can lead to: “Habits form from a young age; it is good to learn to eat everything and avoid illnesses resulting from bad habits”. But she goes on to say that if you decide to do it, the first thing to do is consult your paediatrician, so that you “can follow nutritional advice and ensure that the change will not have a negative effect on the child’s growth and development”.

En una dieta vegetariana mal planificada, los micronutrientes que pueden ser deficientes son el hierro –su carencia se asocia estados de anemia– y el zinc, que influye en el sistema inmune y en el crecimiento de los niños. También puede verse disminuido el calcio, lo que puede ser un factor para el desarrollo de osteoporosis, mientras que bajos niveles de la vitamina B12 aumentan el riesgo de anemia megaloblástica y enfermedades cardiovasculares. Esto último también puede ser elevado por no consumir una adecuada cantidad de ácidos omega 3.

“La dieta vegetariana es absolutamente contraindicada para niños, debido a que se trata de una dieta incompatible con las necesidades de cualquier persona en desarrollo”, explica Cosentino, y asegura que una dieta que no incluya alguna fuente de proteína animal puede ser “muy peligrosa para un niño e incluso para un adolescente, ya que le causa atraso en el crecimiento, alteraciones graves de varios órganos, como el intestino, deficiencia inmunológica, anemia, entre otras”.

Esto no es compartido por Brignardello, aunque asegura que es importante destacar que según algunos estudios, las proteínas de origen animal tienen un mejor impacto en el crecimiento de un niño en comparación a las de origen vegetal. Pero sostiene que otra cosa son las dietas veganas. “No comparto que un niño sea vegano durante los primeros cinco años de vida, por las deficiencias nutricionales que se pueden producir si no es bien suplementado. El aumento de requerimientos nutricionales durante esta etapa y las consecuencias de las deficiencias nutricionales que se pueden producir son irreversibles”, dice.

Esto también es respaldado por el doctor Weisstaub, quien sostiene que si son veganos por alguna decisión de los padres, “lo mejor es que concurran a una nutricionista para organizar una dieta adecuada porque probablemente tendría que tener suplementación de vitaminas”.

According to the conclusions of the UDD study, there is a high percentage of vegans and mainly vegetarians who have insufficient knowledge to be able to plan a balanced diet and avoid a lack of certain nutrients.

“The vegetarian diet is absolutely contraindicated for children, as it is a diet that is incompatible with the needs of anyone in the stage of development”, explains Cosentino, adding that a diet that does not contain a source of animal protein can be “very dangerous for a child and even for an adolescent, as it limits growth, causes serious alterations in various organs, such as the intestine, as well as immunological deficiency, anaemia, etc.”.

This view is not shared by Brignardello, though she says that it is important to note that according to some studies animal proteins have a better impact on a child’s growth in comparison to vegetable proteins. But she adds that vegan diets are something else. “I don’t believe that a child should be vegan in the first five years of life, due to the nutrient deficiencies that can arise. The increase in nutrient requirements during this stage and the consequences of any lack of these nutrients are irreversible”, she says.

This is supported by doctor Weisstaub, who states that if the parents decide that their child is to be vegan “the best thing to do is go to a nutritionist to organize an adequate diet, because there will probably be a need for vitamin supplements”.

The importance of breastfeeding Experts agree that breastfeeding is fundamental for children, and for them to move on to a healthy diet. According to Weisstaub, children of mothers who eat a lot of fruit and vegetables during the period of breastfeeding will find it easier to eat these foods later because they will recognise the flavours from their mother’s breast milk.

Brignardello highlights the fact that if the mother is vegetarian or vegan, she should take omega 3 supplements (especially

La importancia de la lactancia Los expertos coinciden en que la lactancia materna es fundamental para los niños, para incorporarles después una dieta sana. Según Weisstaub, los niños de madres que consumen muchas frutas y verduras durante el período de lactancia tendrían a futuro mayor facilidad para comenzar a consumir esos elementos, porque reconocen los sabores que tenía la leche materna.

Por su parte, Brignardello resalta que si la madre es vegetariana o vegana ella debe suplementarse con omega 3 (especialmente DHA) porque su leche tiene menor cantidad de este ácido graso que es vital para el desarrollo del cerebro del bebé. Adicionalmente, la alimentación de la madre debe ser muy completa para que entregue las proteínas, carbohidratos, ácidos grasos, vitaminas y minerales apropiados para su hijo durante el periodo de lactancia. “La mayoría de las veces deben utilizar suplementos de micronutrientes durante esta etapa”, explica.

Según la nutricionista, a los seis meses del lactante, cuando se inicia la alimentación sólida, se pueden utilizar alimentos como el tofu, legumbres, cereales y claras de huevos como fuentes de proteínas.

Respecto a la ingesta de leche de vaca, explica que en la actualidad existen fórmulas infantiles diseñadas para niños vegetarianos en base a soya, que poseen una buena calidad proteica para reemplazar la leche de vaca.

La carne puede ser reemplazada por otros alimentos, ya que no es la única fuente de proteínas. “Existen muchos alimentos vegetarianos que son ricos en proteínas, incluidos los lácteos y huevos, que tienen todos los aminoácidos esenciales y suplen los de la carne”, explica Cosentino.

En ese sentido, Weisstaub, del INTA, recalca que “si un niño vegetariano toma leche, come huevos y proteínas de ese tipo, junto con consumir frutas y vegetales no tendría por qué tener ningún problema para crecer”.

Along these lines, Weisstaub, from the INTA, underlines that “if a vegetarian child drinks milk, eats eggs and consumes proteins of this type, as well as fruit and vegetables, there is no reason to expect the child to have any growth problems”.

THE DIVING BOARD Estamos en el año 2013 y un ex integrante de los Beatles lanza su disco de estudio número 16 con 71 años de edad. Es un hecho. Paul McCartney no se detiene y “New” es prueba de su vigencia.

El álbum de 12 temas está increíblemente bien hecho, pero no se podía esperar menos de él, una veterana superestrella del pop con todos los recursos posibles a su

alcance. Esa es su base, que puede grabar con quien le dé la soberana gana. Y así, eligió a los dos prodigios británicos del pop actual tras las voces femeninas del siglo: Mark Ronson (Amy Winehouse) y Paul Epworth (Adele).

El material expuesto por McCartney aquí denota el lenguaje habitual que ha mostrado en la última década, las mismas ideas siguen saliendo de su mente, pero gracias a la producción logran diferenciarse del resto. El reciclaje musical existe. La innovación viene por el lado de las decisiones tomadas en la producción, en el sonido, pero del viejo McCartney no queda mucho más para exprimir. Destacable labor, bien por él.

The 12 track album is incredibly well made, but we would expect nothing less from a veteran superstar of pop with all possible resources at his fingertips. That is the basis, that he can record with anyone he wishes. He has therefore chosen two British pop prodigies behind the female voices of the century: Mark Ronson (Amy Winehouse) and Paul Epworth (Adele).

The material McCartney shows off here denotes his usual language from the last decade, the same ideas coming from his mind, but thanks to the production, they manage to differentiate themselves from the rest. There is some musical recycling.

The innovation comes from the decisions taken in production, in the sound, but the old McCartney has little left to squeeze out. An honourable effort, good for him.
