Pre-slaughter logistics includes all of the steps in transport, management, and handling of an animal from the farm to the slaughterhouse. This book provides an updated analysis of pre-slaughter transport and logistics, with a view towards their particular impact on the pork, beef, lamb, and poultry sectors, and offers recommendations for obtaining the best quality products.


Presentation of the book Given the current trend towards longer transport time, intermediate stops (auction markets, pre-slaughter classification centres, checkpoints for disease control, stopovers), and mixed transport, tools and protocols are necessary for evaluation and decision-making that minimise the biological cost to the animals subject to these transport arrangements. In this sense, it is possible that the impact of pre-slaughter stress has been previously underestimated. Evidence supports the importance of investing in operational change at this time. That is why new national and international animal welfare regulations have come into force, which, together with society’s growing concern for animal welfare, have positively influenced transport conditions, vehicle design, and the training of supply chain workers. This book covers the myriad factors that may affect animal welfare during transport, with special attention to the factors that can be altered to improve animal welfare and thereby the quality of the resulting consumer product. It also provides scientific and technical elements for decision-making to help prevent, mitigate or control the factors that cause suffering and are detrimental to animal welfare during transport. This book has been inspired by Carlos Sañudo Astíz’s example and dedication, and is the result of many years of scientific and technical work, as well as of uncountable conversations with colleagues and animal welfare professionals in Europe, Africa, and America. The author Genaro C. Miranda de la Lama Degree in veterinary medicine (MVZ) from the Autonomous University of Tlaxcala (UAT), Mexico, in 2002 (degree recognised in Spain). Master’s of science in animal production and health from the National Autonomous University of Mexico (UNAM) in 2005. PhD from the University of Zaragoza (Spain) and European PhD with a thesis in English entitled “Effects of the pre-slaughter logistics chain on welfare and meat quality in commercial lamb” in 2009. Dr Miranda de la Lama is currently a tenured professor and the department chair of the Food Science Department, Biological Sciences and Health Division, Lerma Unit, Metropolitan Autonomous University (Mexico).

Dr Miranda de la Lama’s interests are centred on understanding the behavioural and physiological processes that underlie stress and affect animal welfare during breeding, handling, transport, and slaughter, with a particular emphasis on their impact on carcass quality and the instrumental and sensory quality of the meat. His current areas of research are pre-slaughter transport and logistics, the effects of stress on behaviour, physiology, and product quality, as well as the relationship between animal welfare and sustainable production systems that distinguish instrumental and sensory meat quality.
