This manual will be a useful tool for the production of quality beef. Obtaining and analysing production and economic indicators makes it possible to ensure the profitability of production, which, in turn, must be in line with society’s current standards in terms of animal welfare and environmental sustainability.


Presentation of the book Cattle production today is entirely client-centred within the context of society. The client is not only the person who consumes beef directly, but rather any potential user on the market who may voice an opinion on the matter. Thus, beef not only needs to be of the highest organoleptic quality and produced in an economically sustainable way, but it must also be produced with animal welfare, the environment and food safety in mind. This publication is intended as a guide for veterinary practitioners and cattle farmers who aim to produce quality meat, ensuring at all times the best conditions for an economically sustainable and environmentally-friendly outcome, and animal welfare. Its content is simple but it offers a global view of beef production, and provides key information that will serve as a basis for anyone wishing to delve deeper into the topics addressed. The work incorporates QR codes that link to the necessary tools (Excel spreadsheets) for guaranteeing beef production that meets the aforementioned criteria. The ultimate goal is a profitable farm in impeccable conditions.


Production Parameters in Beef Cattle

The authors Lucía Reguillo Granados Degree in veterinary medicine from the University of Córdoba (Spain) in 2010 and master’s degree in animal medicine, health, and improvement in 2011. Since then, she has worked in the fields of research and public health. In 2012, she formed part of the University of Córdoba PAIDI 256 Disease Diagnosis and Control Research Group, participating in different R&D projects related to animal health, with a focus on zoonoses. She has been part of the R&D team of CICAP (centre for research and agrifood quality of Valle de los Pedroches), participating in projects on the improvement and safety of Iberian meat and dairy products and on animal health and welfare. She has spoken and presented posters at different national scientific events, and she has been published both in Spanish and international journals. She is currently completing a PhD on actions in primary production for the improvement of bovine milk quality, and her veterinary work is focused on health and reproductive efficiency on large beef cattle farms.

Francisco García García Degree in veterinary medicine from the University of Córdoba (Spain) (2006–2011) and master’s degree in agri-food science in 2014 (UCO), for which he completed a research study in 2015 on the influence of preslaughter stress on final beef quality. Francisco García was awarded the university’s extraordinary master’s prize in 2015 for his work, and presented a poster on the topic at the ICOMST (International Congress of Meat Science and Technology) in Dublin in 2017. From 2015 to 2016, he worked in the meat product R&D department of COVAP (cattle cooperative of Valle de los Pedroches), conducting research studies on the quality of fresh meat and prepared products in different species. He is currently a beef cattle veterinary practitioner at COVAP. In 2017, he participated in technical training and innovation sessions organised by the CONFEVAP consortium in Pozoblanco.
