This young man found that he had Type 1 Diabetes, and hasn’t skipped a beat in getting used to his newest challenge. We’re pretty much in awe of this and pretty proud, as well. Mason has also gotten involved in what we think is an amazing project, Be Edmond. Mason joined filmmaker Bunee Tomlinson, Mayor Charles Lamb, Ty Hensley (former Santa Fe student and NY Yankee), and all of the amazing people at Edmond Family Counseling, to put together an app for Edmond teens to help eliminate the stigmatism of the what an “Edmond” teen is considered to be, and help stamp out the growing feeling of isolation among teens in our town. I really like this trend, and hope to see more businesses in town doing something for the community this year! Four Ways to Stick to Your Workout Plan Melissa Cox, M.S. (The Shape Project)
You have the right to remain weak. You have the right to hit snooze instead of making it to
your workout. You have the right to remain content with your current weight. But you should know that every workout you choose to miss would be used against you in one way or another whether it is a bigger belly, smaller muscles, or your life expectancy cut shorter.
A recent study found that only 19% of the population engages in high levels of physical
activity (three intense 20-minute workouts) per week. On top of that, the majority of the population believes that this type of investment in working out is invaluable to their health. But it’s just not getting done. What is at the root of this problem? Motivation.
Here are a few motivational strategies to hopefully not just inspire you to get moving, but
to stick with it.
1. Relate exercise to your health. Get your cholesterol checked. Then make a goal of lowering
your LDL by 20 points and increasing your HDL by 5 points. Not only does this give you a tangible goal, but decreases your risk of heart disease.
2. Perform a daily gut check. To do this, place your fingers on your stomach and inhale
deeply so that it expands. As you exhale, contract your abdominal muscles and push your fingertips against your hard abdominal wall. Then, pinch. You are left holding pure fat between your fingers. Do this next time you’re thinking about skipping a workout.
3. Make a bet. Challenge a family member or coworker to a friendly competition, such as
who can run an 8-minute mile at the end of four weeks. You could also create a mini-Biggest Loser challenge in a group of friends to see who loses the highest percentage of body fat over a span of two months. Make it fun and include rewards! Hello, Thunder tickets.
4. Avoid what you hate. If you despise the treadmill, then simply don’t do it. Experiment, if
needed, to find out what kind of workouts you enjoy and stick to those.
If all else fails, remember that accountability is key. Find a workout buddy or friend that will
show up to boot camp with you at 5:30am or meet you at the gym. Goals are achieved one day at a time and that day starts today.

DIY Heart-Shaped Ravioli Making Ravioli turned out to be easier than we thought it would be. In fact, making homemade pasta was pretty easy in itself. We started out looking for pasta that would work for homemade ravioli, but came up empty handed. So we turned to the internet for a recipe. It’s pretty basic, really. All you need is 2 cups of flour, a half teaspoon of salt and 3 eggs. Mix the salt into the flour, then make a bowl out of the flower. Crack the eggs into the flour bowl then start whisking the eggs into the flour. Once the gets firm you can start to knead it for about 10 minutes. The wrap the ball of dough in plastic wrap for about an hour. After an hour, cut the ball in half and roll one half into a thin sheet on a
cutting board covered with flour. Once you think the sheet is thin enough, make it a little thinner. Place that sheet on another cutting board or a baking pan. Repeat that step with the other half of the dough ball. For the filling we mixed mozzarella, Parmesan and ricotta cheese together and put balls of it on one of the pasta sheets. The we covered it with the other pasta sheet and used a heart-shaped cookie cutter to cut out our ravioli’s. Once you have your ravioli’s cut out, pinch around the edges to seal them together. Then place them in boiling water for 5-6 minutes and serve them with a sauce of your choice. We went with Marinara and they were very tasty.

Refunk My Junk’s Allison Griffith In previous months, we’ve had designers write to you, we’ve highlighted local home
builders, and in recent months, we’ve thrown in our own diy home projects addressing issues that we’ve all faced at some point, whether in an apartment, first home, etc.
In December, a local resident, Amy Urbach, posted an amazing project involving a
dated wooden hutch from a local DIY Maven and owner of Refunk My Junk, Allison Griffith. What I saw was simply amazing. (I thought the before was ok, but the after photos blew me away).
Allison started Refunk My Junk in 2010, after working in the corporate world of
banking, as she found her love of furniture refinishing in the redecoration of her own
home. Soon after she incorporated this hobby into a working business model, and it
took off very, very quickly. Luckily for Allison, and after being VP of Small Business Administration loans, she understood the importance of a great business plan after seeing mistakes made by other small business owners.

The following Allison has received throughout the southwest is no accident, as every
one of us loves to diy in some fashion, and Allison is so personable and down to earth,
and isn’t afraid to experiment or even makes mistakes. In other words, she’s just like the rest of us, and that is one of my favorite things about her.

collaborating with Allison, and I will tackle a few things in my home that are ready for some new paint.

February is the month of mushy, gushy, lovey, dovey craziness! Everywhere we look in stores, homes, and businesses the holiday trees and trimmings have been replaced with hearts and cupids. Love shows up in dinner reservations, flower deliveries, heartshaped boxes of chocolate, expectations, romance, and butterflies! It’s fun! It’s exciting! This is love, right? Hmmmm... maybe this is love. And, maybe, it’s just a glimpse. A very, very, VERY small sliver of a glimpse of love. I’m thinking somewhere around junior high, we took a turn for the worst when we quit giving every classmate a Valentine. What’s up with that? We just became so cool, right? So cool that we grew up and became selective of who gets our love. We became nervous about how others would see us if we gave out our love freely. We became fearful that our love might be misinterpreted or rejected or laughed at. Forget that. No more Valentines. Valentines aren’t cool. Love - cheesy, generous love that is freely given to all regardless of gender, culture or popularity, without fear of response or rejection suddenly became... uncool. An uncool, wise man once asked, “If you love only those who love you, what good is that?” As we get older, Valentines look much different (unless you’re still handing out the elementary cut-out cards). They can look more like forgiveness or picking up the tab, or holding the door open, or getting a kid out of a shelter and bringing him home. Maybe it’s as simple as not criticizing or not holding back what you know you could freely give. Maybe love is more about doing things in spite of fear instead of just when we feel butterflies. Love - the cheesy, generous, fearless kind, can take on many forms and can cost us some cool points. But, there’s no doubt, it’s worth it. At the end of all our toils and struggles, goals and identities, after all that we work for and strive to attain in this life... Love is all that matters. Nothing else, really. Just love. Not that easy love - but love that lets go of self and gives... and gives and gives and gives... the love that makes us lose ourselves - that’s what’s up. That’s the difference in just living - and living love. We sometimes think we’ve got it, but if we look deeper... if love is a little too easy for us - it’s probably also somewhat shallow deep and selective. If love doesn’t stretch you, challenge you, break you, change you and wake you - go harder. Go ahead, lose your cool self and love others like you’re back in 3rd grade giving out those Valentine’s. To everyone.

Dear Edmond Fire Department; My family and I would like to thank you for saving our Christmas. Around 11:30 p.m. on Christmas eve our dog Tessie, who we rescued from the Edmond shelter started barking and whining at us. So my son Noah and I got up to see what the problem was. She took us to the fireplace where a fire was still going. My husband had fallen asleep on the couch and didn’t put it out. So Noah did. Then we noticed a plastic burning smell coming from the Florida room behind the fireplace. We noticed the brick was so hot it was melting the Christmas tree and the surround sound wires on the brick. We moved the items and Noah went and splashed bucket after bucket of cold water on the brick fireplace to cool it down. We thought we had it under control. Later on, Tessie started barking and whining again. We realized the house was covered in smoke, so I woke my husband Jeb and called 911. The dispatcher was very nice. I didn’t even get my youngest daughter Nona dressed. I wrapped her up in her blanket and went outside with the others and called our dogs out. We put the kids and the dogs in the car and drove them across the street. Before we could even park the fire department was there. This was all within a minute and I was impressed. Jeb, my husband, stayed outside to watch. I handed my little girl over to my neighbor, Eric, who Nona adores; no need for a 3 year old to watch all this mess at such a late hour. The police officer at the end of the block offered his car, for warmth, to my son. I called my mother over and she took us to Denny’s while we waited for a call. About 2 am we went back, and I started crying when I got there. Not because our home was a mess, but because our Christmas presents carefully placed on the front lawn. Not only did they save our home, they saved Christmas. Bless the Edmond fire department. Thank You from the Swan family of Elmwood Dr. Jeb, Jennifer, Nona, Noah...and Tessie too.

With one 60 degree day in January, Chris and I decided to head north to the Woodward area to check out the Alabaster Caverns State Park. With Spring, and camping weather, soon on its way, this State Park, as suggested by TravelOK. com, was just a couple hours away and we set off to see it for ourselves. First thing we noted, the drive to this destination reminded us of exactly why we love Oklahoma, it was gorgeous, and truly relaxing. Once we arrived we sat down for lunch at the diner at the entrance of the state park, before heading into the cave for the 45 minute guided tour. The grounds are clean and well taken care of and the lower campgrounds are open for camping from April 1st to October 31st, however they do offer long term RV camping year round. This is a great destination for hiking. The guided tour was conducted by State Park Ranger Kim, who was fun and has been giving this tour for over 20 years. This cave has some fun history, such as signatures carved into the granite by travelers all the way back to the 20’s to the water containers left by the Federal Government in 1950 when they left food rations and enough water for 3,803 people to survive in this cave as a nuclear bomb shelter. It wouldn’t have been a good idea though, as there are 18 entrances to this cave, however it would make a great storm shelter! Wild caving, or spelunking, is a highly popular sport, and Alabaster Caverns offers 4 caves for this purpose. You must contact the front office to get a permit and these permits are available from April 1st to Oct. 31st. The Main Cavern offers daily guided tours that begin every hour from 9am-4pm promptly. The main office closes at 4:30pm November 1-February 28. The location is 6 miles south of Freedom on Hwy 50, 1/2 mile east on Hwy 50A, or 20 miles north of Mooreland on Hwy 50.
