Phancy Pharm lives up to its name By LAURA SCATURRO Of the Edge Two years ago, after scouting the Midwest to find the perfect location for their full service equestrian facility, Phancy Pharm, Phil Layton and Nancy Prachar located the perfect 20 acres of property in Moro – a short distance from St. Louis which is a major market for horse and riding competitions in the country Layton and Prachar dubbed their acreage Phancy Pharm which is a combination of the partner ’s first names. The property’s signature building is the 250-by-81 foot insulated indoor arena with a climate-controlled observation room with kitchen facilities, comfortable seating and a television. The building, also known as the “barn,” also features individual turn-out areas and three stall sizes to accommodate any size horse and an owner’s needs. A spacious tack room has the capacity to handle an expert rider’s saddles and gear. “There’s not a facility like this at the A-circuit level,” Layton said. “We’re the only game in town if you want to be involved in the upper level courses and competitions. The way the weather is here, it’s too windy, too dark, too rainy, too cold, too something -- to ride outside very often. We concentrated on designing the indoor facility so we can train year round and to show and compete at the national level. We go to the open competitions where the best of the best can attend.” Layton, who is a trainer, judge and clinician, has more than 30 years experience. He knew he wanted to be involved with horses since the age of 6 when his father built a wood frame and placed a saddle on it for his young son to watch television in the living room. Growing up in New Jersey, Prachar had a neighbor who had several horses. She grew to love the horses so much that when she was 14 years old, she began working as the stable manager for the neighbor and bartered a portion of her pay for riding lessons. The business partners met 27 years ago in Indiana when Prachar needed a trainer for her horse. In 2004, Prachar was in a position where she needed assistance to get her 55-acre ranch in Oregon ready to sell. They teamed up and successfully sold the property. After selling the ranch they decided to relocate to the Midwest to open a state-of-art training and boarding facility. “We knew this area and we found this piece of property which

Instructor Nancy Prachar takes Shelly Jones through the steps to bridle Dina, a Phancy Pharm lesson horse. is in between the highways,” Layton said. “We have horses come in from all parts of the country. Twenty acres allows each horse to have an individual pasture for the safety of the horse. Everyone’s needs and wants are different, but everyone wants their horse treated the same and to get individual attention.” Layton points out the unique layout of the barn that was designed by him specifically for the care of horses. Although the barn was intended to accommodate 30 stalls, the partners decided to limit their census to 20 in an effort to continue the individual attention paid to each animal. They currently have openings for eight horses. “The windows in the stalls face south so the warm winter sun will hit the horses,” Layton said. “We have a heated wash area with warm water so the horses can be bathed throughout the winter. The hose is similar to a car wash so a horse won’t step on the hose and
get tangled up. Our horses don’t know it’s January. There isn’t anything that is regular here – everything was well thought out.” Ada Dittmer, who purchased lessons for her two grandchildren, Shelly Jones, 23 and Allie Skalisius, 9, wanted the girls to learn the basics about horses. Dittmer, who grew up on a farm, overheard Jones express interest in lessons after she visited the barn recently with a client. “I’m a personal caregiver and I brought one of my clients to the facility so she could inquire about taking riding lessons,” Jones said. “We were both just so impressed with the place. The viewing area was great and they also have a small viewing area inside the arena. We just stopped by with no appointment. Phil and Nancy were such nice people. They spent nearly an hour with us and gave us a tour of the facilities.” Rick Wickham, a teacher in Granite City, works on lesson plans
while he waits in the comfortable viewing area for his daughter, Hannah, to finish her lesson. Hannah is a member of the Pony Club in Edwardsville. The sixmember club meets regularly and attends horse shows, studies about the different types of horses and learns how to care for the animals. “The Pony Club had a meeting here at this barn,” Wickham said. “We live in the middle of town in Edwardsville so we can’t have a horse. After that meeting she wanted to take lessons and learn to jump. She’s been taking lessons for almost a year. She’s come a long way and has been in a couple of contests. Nancy and Phil, the owners, are great.” Phancy Pharm is also home to the Southern Illinois University Edwardsville Equestrian Team. The 28-member team competes against other universities in the region. Team founder and past president Leslie Harmon believes the excellent quality of the facility
contributes to the team’s success at competitions. “Phil Layton and Nancy Prachar have been exceptionally helpful and encouraging to our students during lessons and in the show ring,” Harmon said. “They provide the university’s students a place to come and ride quality horses in a beautiful, classic riding facility. The equestrian team and coaches were able to enjoy their hard work after every student rider placed in our first collegiate fall show in Carbondale.” Layton adds that to train someone else to think and speak horse is the hard part. That’s where you get the horse whispering from – the little subtle things going on between horse and rider, whether your competing or not. Phancy Pharm is located at 5994 State Route 140 in Moro. To contact Phil Layton or Nancy Prachar, call 618-917-6995 or visit their Web site www. phancypharm. com.

A program participant has blood glucose level tested at the 2009 Diabetes Education Program at SIUE.
The battle against diabetes SIUE plans patient education day By DEBBIE SETTLE Of The Edge Obesity and diabetes are on the rise. Although you don’t have to be obese to have diabetes, as is generally the case with Type I, Type II diabetes is much more likely to occur in individuals with an increased body weight. Type I diabetes is usually diagnosed in children and young adults and is what was previously titled as juvenile diabetes. In this type of diabetes, the body does not produce insulin, a hormone that is needed to convert sugar, starches and other food into energy needed for daily life. Only 5 to 10 percent of people have this form of diabetes. Type II, however, is a whole different ball game. Being the most common form of diabetes, millions of Americans have been and continue to be diagnosed with this form of the disease. Many more are completely unaware that they are at high risk, Although weight and health issues are a big factor for obtaining Type II diabetes, a persons ethnicity can also be a big factor. AfricanAmericans, Latinos, Native Americans, AsianAmericans, Native Hawaiians and other Pacific Islanders are more susceptible than other nationalities. The aged population also is at a higher risk. With Type II diabetes, either the body does not produce enough insulin or the cells ignore the insulin, causing glucose to build up in the blood instead of going into cells. This leads to diabetes complications such as vision problems, neuropathy in feet (numbness occurs), skin infections and skin disorders, increased risk of heart disease and stroke and the list continues. Although medication can be a key factor
February 11, 2010
in controlling glucose levels in the blood, probably the two most important factors in getting levels under control are eating a wellbalanced diet and exercise. The loud sigh is usually heard at this point, as diet and exercise seem to be the answer for prevention and even cure for so many diseases. Yet, we all tend to not want to hear it and want to continue in our old habits. Although the suggestions of diet and exercise are not popular, they are the answer for so much that ails society today. Moderation is the key word when thinking about food choices when faced with diabetes, or even in the prevention of diabetes. The American Diabetes Association has so much information about food selections available for everyone to use. Their Web site, www.diabetes. org not only gives a complete description of the symptoms, the complications and how to get help with controlling diabetes, it also offers a huge selection of menu choices, recipes and even a personalized area entitled “MyFoodAdvisor” where anyone can track what they eat and keep a record to help stay on track. Because diabetes can be a “silent” disease, many people are unaware that they have it. The symptoms may be slight enough that people pass them off as nothing, when they are actually red flags that need to be addressed. In order to help people become more aware of everything involved with diabetes, what one can do to prevent or treat it, or how you can help someone with the disease, there is an upcoming patient education day on Saturday, Feb. 27, from 9 am. to 1:30 p.m. that is sponsored by the Madison County American Diabetes Association, and is supported by SIUE student activities fees and the SIUE
School of Pharmacy. The event will take place in The Morris University Center on the SIUE campus. The purpose of this event is to provide quality patient education in an informal setting for people living with diabetes or caring for someone with the disease. Included in the education day will be free A1C testing – a blood test that shows average blood glucose control over the past three months, foot inspections and blood pressure checks. These services will be performed by student pharmacists that are active in the local American Pharmacy Association of Student Pharmacists (APhA-ASP) chapter. Dr. Jessica Kerr, a faculty member within the school of pharmacy, serves as the mentor to this group and as the President of the Madison County Community Leadership Board of the ADA. Chris Lynch, professor and Southern Regional Coordinator at SIUE’s School of Pharmacy, is hoping that people will come out and take advantage of this entirely free event that will bring vital information about a very important topic. “ The day a person is diagnosed with diabetes is often shattering. The changes that occur in a person’s life from that day forward – the diet and other lifestyle issues, the medications, the emotional and financial costs of the disease – all of it can add up to a huge burden. The goal of this event is to serve as a resource to those with diabetes and the people who care for them. We can’t solve all the problems with a one-day education program, but we can provide valuable information from some of the area’s top diabetes experts. Our goal from the first year until now has been to be an educational resource and to be a place where people with diabetes
can meet each other and share their own stories and experiences,” said Lynch. “In 15 years of caring for patients with diabetes, I have learned that the only advocates who can really enact change are the patient themselves. We want to empower people to make the right choices in their own lives.” Lynch is also the Director of the SIUE East St. Louis Diabetes Program. His areas of scholarship include translational research in diabetes, women’s health and coronary risk reduction. The education day will begin with a k e y n o t e a d d r e s s f r o m D r. M a r t i n a Ritchhart with a presentation entitled “Accept, Adopt, Adapt: Principles for Coping with Diabetes.” Other speakers include Dr. Kevin Blinder, a Washington University physician specializing in retinal disease and Birgit Sterzl, RD, chief clinical dietitian for Southern Illinois Healthcare Foundation. Participants are able to choose to attend two break-out sessions during the program. There will also be many local vendors who specialize in products or services for patients living with diabetes. These vendors will be happy to describe their services and many offer free samples or give-away items. A free lunch is also provided. So there really is no excuse not to participate. The entire event is no charge, plus free food! They only ask that people wishing to participate in the event register in advance so adequate supplies and food are available. To register, call Cathy at 888-342-2383, ext. 6823 or email her at chartmann@ diabetes.org.

People People planner Butterfly House to host March Morpho Mania Throughout the month of March, the Sophia M. Sachs Butterfly House in Chesterfield offers visitors an experience not to be missed: be surrounded by more than 3,000 tropical blue morpho butterflies in free flight, ten times the usual number! Don’t miss the March Morpho Mania total immersion experience from 9 a.m. to 4 p.m. Tuesdays through Sundays, Mar. 2 through 31 (closed Mondays). Admission is $6 for adults, $4 for children ages three to 12 and free for children ages two and under. For more information, visit http:// www.butterflyhouse.org/mmm. aspx. The 8,000-square-foot indoor tropical conservatory is usually home to roughly 300 Common Blue Morpho (Morpho peleides) butterflies at any one time. The tropical butterflies, native to Central and South America, are a visitor favorite at the Butterfly House, easily identified by their iridescent, bright blue wings. At roost, the mottled brown underside of the butterflies’ closed wings helps them to blend in with their surroundings, fooling predators who mistake their spots for animal eyes. When open, the wingspan of a blue morpho can reach up to eight inches. The Common Blue Morpho butterflies on display during March Morpho Mania come from El Bosque Nuevo, a butterfly farming operation in Costa Rica. Throughout the month of March, visitors will learn about the critical role butterflies play in nature, and how the Butterfly House is participating in this particular conservation effort in Costa Rica. Every Saturday and Sunday from 10 a.m. to 3 p.m., engaging activities designed for all ages will focus on a different aspect of the country: • Mar. 6 and 7: Learn about the mysterious stone sculptures of Costa Rica’s eastern Caribbean coast. • Mar. 13 and 14: Explore the significant global loss of amphibians and how it has impacted the frog populations of Costa Rica’s Pacific coast. • Mar. 20 and 21: Discover the Guanacaste Region and the “jewels” of Costa Rica, its blue morpho butterflies. • Mar. 27 and 28: Play games that originate from the Central Valley. The 3,000 Common Blue Morphos aren’t the only living creatures that visitors will encounter at the Butterfly House! Approximately 1,000 other tropical butterflies representing over 60 of the world’s species are also on display daily. The exhibit hall features dozens of other living insect and arachnid displays, from scorpions and beetles

The original clock from the Lincoln-Herndon Law Offices will also be displayed, and visitors can see where Lincoln-era mice chewed a hole in the back and can listen to the ticking clock – this is the first public display in recent history when the clock
will be wound up and keep time. Museum admission is required to view these items. T h e s e i t e m s c a m e f ro m t h e world’s most significant collection of Lincoln artifacts ever compiled by a private collector – The Taper Collection. The Abraham Lincoln Presidential Library Foundation received a $2 million in-kind gift of select items from the Barry and Louise Taper Family Foundation and purchased an additional 1,500 Taper Collection artifacts and documents. The Foundation’s $27 million Permanent Home Campaign was launched in 2009 to retire the debt related to this purchase. The success of the campaign will ensure that the Ta p e r C o l l e c t i o n w i l l f o re v e r remain with the Museum. Several other artifacts will be added for a special one-night viewing vigil from 5:30 to 10 p . m . o n T h u r s d a y, F e b r u a r y 11, the night before Lincoln’s 201st birthday. These include a rare copy of the Emancipation Proclamation bearing Lincoln’s original signature; the inkwell used by Lincoln when he wrote his First Inaugural Address and a printer ’s galley proof of the address; an ornate walking stick owned by Lincoln and earlier involved in an 1859 California duel over the issue of slavery; a December 11, 1860 letter written b y P re s i d e n t - e l e c t L i n c o l n t o
Illinois Representative William Kellogg in which he states “the tug has to come” over slavery; and The Union is Dissolved! a December 20, 1860 broadside from the Charleston Mercury. The items placed on display in the Museum from February 10 - 15 may be viewed that evening as well. The February 11 evening vigil is free and open to the public. A group of local actors will perform a program of readings twice that evening, which will include a selection from Team of Rivals, at 6:30 and 8:15 p.m. in the Museum’s Union Theatre. The next new exhibit at the P re s i d e n t i a l M u s e u m w i l l b e “Team of Rivals” that opens in October 2010. Taken from the title of the Doris Kearns Goodwin book of the same name, “Team of Rivals” will examine President Lincoln’s controversial choices for his Cabinet and the tumultuous events leading to the firing on Fort Sumter that ignited the Civil War. “Team of Rivals” will open just prior to the 150th anniversary of Lincoln’s election as President in November 2010, his Farewell Address to Springfield as President-elect in February 2011, and the start of the Civil War in April 2011. Mamma Mia! The smash returns to The Fox By DEBBIE SETTLE Of The Edge
Those ABBA songs still make you tap your toes when they come on your favorite radio station. They are still played often after 30 years after their debut. Maybe the familiarity and the popularity of ABBA’s music is why people flock to the Broadway hit musical “Mamma Mia!” Beginning on Tuesday, Feb. 16, and continuing for eight performances only, Benny Andersson and Björn Ulvaeus will be starring in “Mamma Mia!” the smash hit musical based on the songs of ABBA, at the Fabulous Fox Theatre in St. Louis. Seen by over 40 million people around the world, Benny Andersson and Björn Ulvaeus’ global smash hit musical “Mamma Mia” is celebrating seven sold-out years at the Winter Garden Theatre on Broadway, and is currently playing a record-breaking engagement on its National Tour in the United States. The original West End production has played more than 4,000 performances, an international tour has played in more than 40 foreign cities, and the blockbuster feature film adaptation, produced by Judy Craymer and Gary Goetzman, is the most successful movie musical of all time grossing $600 million worldwide. The premise of the musical is about an independent, single mother, Donna, who owns a small hotel on an idyllic Greek island and is about to let go of Sophie, the spirited daughter she’s raised alone. For Sophie’s wedding, Donna has invited her two lifelong best girlfriends – practical and no-nonsense Rosie and wealthy, multi-divorcee Tanya –

A scene from “Mamma Mia!” from her one-time backing band, Donna and the Dynamos. But Sophie has secretly invited three guests of her own. On a quest to find the identity of her father to walk her down the aisle, she brings back three men from Donna’s past to the Mediterranean paradise they visited 20 years earlier. Over 24 chaotic, magical hours, new love will bloom and old romances
will be rekindled on this lush island full of possibilities. Inspired by the storytelling magic of ABBA’s songs from “Dancing Queen” and “S.O.S.” to “Money, Money, Money” and “Take a Chance on Me,” the musical is a celebration of mothers and daughters, old friends and new family found. Produced by Judy Craymer, Richard East
and Björn Ulvaeus for Littlestar in association with Universal, the creative team responsible for bringing “Mamma Mia!” to theatrical life includes some of the most gifted and celebrated talents of musical theatre and opera. With music and lyrics by Benny Andersson and Björn Ulvaeus, “Mamma Mia!” is written by Catherine Johnson and directed by Phyllida Lloyd. “Mamma Mia!” has choreography by Anthony Van Laast, production design by Mark Thompson, lighting design by Howard Harrison, sound design by Andrew Bruce and Bobby Aitken, and musical supervision, additional material and arrangements by Martin Koch. The special edition cast recording of “Mamma Mia!” is available on Decca Broadway. For information about “Mamma Mia!” around the world, go to www.mamma.mia. com. Marsalis to appear at Touhill The Touhill Performing Arts Center presents An Evening with Branford Marsalis on Friday, Feb. 12. Marsalis and his venerable band will take the stage of the Anheuser-Busch Performance Hall at 8 p.m.
After releasing the “dynamic” and “passionate” (Jazz Times) Braggtown in 2006, the multiple Grammy-nominated Branford Marsalis Quartet toured worldwide for two years before returning to the recording studio. The result is the nine-track recording Metamorphosen, which the band considers one of its strongest and most broadly appealing albums to date. Marsalis said he chose the title, which is German for metamorphoses, to emphasize the evolution of both his quartet and each individual member. Metamorphosen is another milestone from an ensemble that continues to set the pace regarding jazz creativity. “Hearing the Branford Marsalis Quartet up close is like experiencing a force of nature,” noted The Seattle Times. And The Detroit News raves, “What a doozy of a show these guys put on.” A New Orleans native, Marsalis was born into one of the city’s most distinguished musical families, which includes patriarch/pianist/educator Ellis and Branford’s siblings Wynton, Delfeayo and Jason. Marsalis gained initial acclaim through his work with Art Blakey’s Jazz Messengers and his brother Wynton’s quintet in the early 1980s before forming his own ensemble. He has
also performed and recorded with a who’s-who of jazz giants including Miles Davis, Dizzy Gillespie, Herbie Hancock and Sonny Rollins. Marsalis’ broad musical scope and innovative spirit has led to diverse interests and activities. He spent two years touring and recording with Sting, and was the musical director of The Tonight Show with Jay Leno for two years in the 1990s. He also has collaborated with the Grateful Dead and Bruce Hornsby, acted in films including Throw Mama from the Train and School Daze, provided music for Mo’ Better Blues and other films and hosted National Public Radio’s syndicated program Jazz Set. In recent years, Branford also has become increasingly active as a featured soloist with such acclaimed orchestras as the Chicago, Detroit, Düsseldorf and North Carolina Symphonies and the Boston Pops, in a growing repertoire that includes compositions by Copland, Debussy, Glazunov, Ibert, Mahler, Mihaud, Rorem and Vaughan Williams. Tickets for Branford Marsalis are $65 (Gold Circle), $45 and $30. They are available now at the Touhill Performing Arts Center Ticket Office; online at www.touhill.org; or by phone at 314.516.4949. The Touhill’s Ticket Office is located at One University Blvd., St. Louis, Mo. 63121.

QuickGlance Movie Reviews
“Avatar”
James Cameron’s 3-D epic has all the smack of a Film Not To Miss — a movie whose effects are clearly re v o l u t i o n a r y, a s p e c t a c l e t h a t m i l l i o n s w i l l f i n d adventure in. But it nevertheless feels unsatisfying and somehow lacks the pulse of a truly alive film. The plot is a little like the American frontier circa the 1800s, only transposed to the year 2154 on the faraway moon Pandora, the home of Native American-like, aqua blue, 10-foot tall creatures called the Na’vi. Arriving are imperialistic humans to plunder, and scientists to study. Dr. Grace Augustine (Sigourney Weaver) leads a team that explores in Na’vi bodies, avatars, controlled remotely. A sense of discovery — of Cameron’s digital world of Pandora, of the impressive techno-filmmaking — makes “Avatar” often thrilling. The environmentalist and anti-war messages resonate with contemporary troubles, but they also seem odd coming from such a swaggering behemoth of a movie. One senses Cameron’s zest lies in the battle, not in peace. With Sam Worthington and Zoe Saldana. RATED: PG-13 for intense epic battle sequences and warfare, sensuality, language and some smoking. RUNNING TIME: 161 minutes. ASSOCIATED PRESS RANKING: Two and half stars out of four.
“The Book of Eli”
In the future, according to “The Book of Eli,” we’ll all dress like we’re in a Nine Inch Nails video. A meteorite and a subsequent war 30 years earlier has scorched the earth and the population, who outfit themselves in goggles and leather. Across this charred land strides our Christian cowboy, Eli (Denzel Washington), a mysterious, solitary man who carries the last remaining Bible in his backpack, along with a knife and a shotgun. Eli is a prophet carrying The Word, and “The Book of Eli” suggests mankind will be saved by it. The Christian theme notwithstanding, “The Book of Eli” is really only a sepia-colored, shoot-’em-up Western. The Hughes brothers (“Menace II Society”) let nary a bullet or arrow fly without sending their cameras behind to track it in slowmotion. Washington and Gary Oldman (as a frustrated dictator trying to steal the Bible) create sparks and help drive the film forward. With Mila Kunis in post-apocalyptic chic and Tom Waits as a paranoid shopkeeper. RATED: R for some brutal violence and language. RUNNING TIME: 118 minutes. ASSOCIATED PRESS RANKING: Two stars out of four.

“Extraordinary Measures”
This medical drama has been marketed as another “Blind Side,” a true story about quiet heroism, doing the right thing and overcoming great odds. But imagine if “The Blind Side” had focused on the legal processes necessary for Michael Oher’s adoption instead of the football and spunky Sandra Bullock and you have an idea of the strange path “Extraordinary Measures” takes on its road to inspiration. The movie tells the fictionalized story of the Crowley family, whose two youngest children are afflicted with Pompe disease, a metabolic disorder that leads to muscle degeneration and short life expectancy. The dad (Brendan Fraser) decides to fight for a cure, partnering with an eccentric scientist (Harrison Ford) to beat the clock and save his kids’ lives. The filmmakers strangely focus on funding and paperwork instead of the human drama with a lot of time spent watching Ford and Fraser bicker and make investor presentations. The debut feature of CBS Films, who, next time, might want to deliver a film that veers a little farther from the kind of fare people can watch at home for free. RATED: PG for thematic material, language and a mild suggestive moment. RUNNING TIME: 104 minutes. ASSOCIATED PRESS RANKING: Two stars out of four.
“Tooth Fairy”
Following the big-screen exploits of elves and bedroom monsters, tooth fairies were inevitably ready for their close-up. “Tooth Fairy” steals liberally from “Monsters Inc.” and “Elf,” among many others. It’s very much what you’d expect: a tale of optimism overcoming disbelief; family fare with comical casting (Julie Andrews as a Fairy Godmother); The Rock in a tutu. But despite its predictability and pat Hollywood cliche, “Tooth Fairy” is mostly charming, thanks largely to the toothy grins of Dwayne Johnson (aka The Rock) and Stephen Merchant, the British comedian and Ricky Gervais sidekick. Johnson plays a minor league hockey player who’s summoned to Tooth Fairy duty (Merchant plays his guide) to penalize his dream-dashing ways. Obvious puns (some from Billy Crystal in a cameo as a veteran fairy) and fully expected redemption follow. Johnson, a human Buzz Lightyear, and the spindly Merchant make the obvious material surprisingly winning. RATED: PG for mild language, some rude humor and sports action. RUNNING TIME: 101 minutes. ASSOCIATED PRESS RANKING: Two stars out of four.
“Edge of Darkness”
It’s been seven years since his last film, but Mel Gibson is still playing martyr. After righteously battling injustice in “Lethal Weapon,” “The Patriot,” “Payback” and others, Gibson plays Thomas Craven, a humble Boston police detective and single father to a 24-year-old daughter, Emma (Bojana Novakovic). When Emma is killed, Craven sets out to find the killer, a journey that leads him into a complex web of corporate and political cover-up. Hellbent in a beige raincoat, he attacks with little self-regard. Now 54, Gibson is grayer and grimmer. The wildness and fire that once exploded unpredictably from Gibson is dimmed after several hard years for the actor. But he fits well in “Darkness.” Some might reasonably swear off films with Gibson, but there aren’t a lot of actors making movies that try to bring contemporary rage to the multiplexes. Perhaps, though, crusades needn’t always be a bloodbath. With Ray Winstone as a weary, philosophical government operative and Danny Huston as a slick CEO. RATED: R for strong bloody violence and language. RUNNING TIME: 117 minutes. ASSOCIATED PRESS RANKING: Two and a half stars out of four.
“Saint John of Las Vegas”
This deadpan comedy has Steve Buscemi playing John, an insurance man sent to look into a dubious car accident just outside Vegas. John doesn’t want to go — Vegas did a number on him — but he doesn’t resist too hard, either. Maybe he knows it’s time he faced his demons. But first-time writer-director Hue Rhodes never tries to fill in the blanks about John’s past or compulsions. He’s too busy echoing Dante’s “Inferno” and sending John on a superficial road trip through Oddsville, USA. Buscemi can do droll desperation with the best of them, but the underdeveloped John remains a cipher. Sarah Silverman is wasted as the sweet contrast to John’s weary fatalism. As a portrait of one man’s journey toward dignity, “Saint John” isn’t bad enough to create its own special circle of hell. As a comedy, though, it’s anything but divine. RATED: R for language and some nudity. RUNNING TIME: 85 minutes. ASSOCIATED PRESS RANKING: Two stars out of four.

“Avatar,” “The Hurt Locker” lead field By DAVID GERMAIN Associated Press BEVERLY HILLS, Calif. (AP) — “Avatar” is a dreamy space fantasy that has made more money than any movie in history. “The Hurt Locker” is a ground-level dose of war-onterror reality and one of the lowestgrossing best-picture contenders ever. With a leading nine Oscar nominations each and ex-spouses James Cameron and Kathryn Bigelow as directors, the films are a study in extremes. They’re also the only two movies that really matter in the expanded race for Hollywood’s top prize March 7. “Avatar,” about the human invasion of a faraway moon populated by blue-hued creatures, won best drama and director at the Golden Globes. “The Hurt Locker,” a disturbingly close and claustrophobic look at the strains of disabling bombs in Iraq, earned the top prizes from guilds representing directors and producers, and was chosen as the year ’s best film by many key critics groups. “It’s a true David and Goliath kind of story, isn’t it?” said Jeremy Renner, a best-actor nominee for his performance as a bomb-disposal expert in “The Hurt Locker.” “You know what? I love being David. ... It’s like ‘The Bad News Bears’ or something, or Rocky Balboa.” In between the two films in the Academy Award best-picture nominations announced Tuesday is a range of mainstream hits and critical darlings that deliver just what Oscar overseers wanted when they expanded the category from five films to 10 — something for everyone. “Extraordinary company. Every film is a masterpiece in and of itself,” said Bigelow, whose best-

She richly deserves it,” Cameron said last month as he accepted his Golden Globe. Along with Cameron’s behemoth
“Avatar,” which has surpassed his own “Titanic” as the biggest modern blockbuster, four other huge hits earned best-picture nominations: the animated comedy “Up,” the football drama “The Blind Side,” the World War II saga “Inglourious Basterds” and the sci-fi tale “District 9.” Two other nominees, the recession tale “Up in the Air” and the Harlem drama “Precious: Based on the Novel ‘Push’ By Sapphire,” have been solid moneymakers. Then there’s “The Hurt Locker,” the teen drama “An Education”
and the offbeat academia story “A Serious Man,” little arthouse triumphs whose domestic grosses — ranging from $9 million to $12.7 million — amount to popcorn money compared with the $600 million in the U.S. and more than $2 billionplus worldwide “Avatar” has made. “What a great day for film when you have the biggest film ever made in the same grouping as a little film like ’Precious.’ And ’Hurt Locker.’ And how fantastic I think that is for this environment,” said Sarah SiegelMagness, a producer on “Precious.”
Diversity rules the directing category, traditionally a white men’s club. Bigelow has a good shot to become the first woman to win the directing Oscar, while “Precious” filmmaker Lee Daniels is only the second black director ever nominated. “It’s always the first black something-or-other,” Daniels said. “After 82 years, it’s the first film nominated for best picture directed by an African-American. Isn’t that great? It’s so exciting. How can you lose? You can’t lose!”
“When in Rome” gets a little dopey By ROBERT GRUBAUGH Of The Edge I have always known that Kristen Bell has a singular talent. I frequently tout my love of her 2004-2007 UPN series “Veronica Mars”, in which she played the titular teen detective. No other series combined sarcasm, mystery, and the seedy underbelly of a wealthy high school so well. It’s easily the best series of the last ten years. I was so in love with the show that, despite a shift in network, its ultimate cancellation, and seemingly botched plans for a feature follow-up, I still contend we aren’t done with the goings on in Neptune, California. When someone is so perfect in a role, say, as a spiky-haired, pint-sized gumshoe, you don’t hold out much hope for their future. But Kristen Bell isn’t going quietly into the good night. In 2008, Kristen made a major splash as the girlfriend at the center of Judd Apatow’s heartbreak comedy “Forgetting
February 11, 2010
“When in Rome” RATED: PG-13 for some suggestive content. ROBERT’S RANKING: one star out of four. Sarah Marshall. “ As an actress dumping her musician boyfriend, Sarah Marshall was the antagonist we all hated. How could she do that to poor Jason Segel, king of the wounded hound dog look? The role did prove, however, that she is also a deft comedienne and I rejoiced. Surely she was the next Lucille Ball. Put my plucky Kristen into a comedy and she will thrive like a hothouse flower. But I was overzealous. An Apatow comedy? Sure, but that’s a goldmine. There are plenty of other pretenders to the throne out there, but they don’t always yield prize results. Witness “When in Rome”, her foray into
the mainstream romantic comedy jungle. The formulaic new film from Buena Vista tells the same story of girl (Beth, played by Bell) falls for boy (Nick, played by the impossibly handsome Josh Duhamel, the star of many rom-coms) that we’ve seen a thousand times. A chance encounter is misinterpreted and the guy seems to really be a jerk, so the girl gives up on love. Been there, done that. In their “inventive” twist, When in Rome decides that in the ambling road back to getting together, they should be separated by many other suitors that literally stalk Beth around Rome and New York City after being cursed into it by a magic wishing well. She shouldn’t have taken those coins out of the famous fountain at her sister ’s (Alexis Dziena) wedding, but we all knew that by the time we’d seen the commercial for the movie. The suitors are famous comedy actors, thank goodness, though they all play to sickening comedy s t e re o t y p e s , t o o . T h e g o o f y I t a l i a n
street artist (Will Arnett), the darklypained street magician (Jon Heder), the cluelessly self-absorbed male model (Dax Shepard, Bell’s real life fiancée), and the diminutive sausage mogul (Danny DeVito) spend time following her around, making outrageous displays of their love for Beth in grandiose settings. It gets a little dopey by the midpoint. By then the people who willingly bought tickets were starting to look at their watches. They were getting exactly what they were expecting and still didn’t much care for it. Angelica Huston has a small part and Don Johnson goes uncredited as Beth’s father. SNL’s loudest scene-stealer, Bobby M o y n i h a n , p l a y s N i c k ’ s b e s t b u d d y, proving that you can in fact have too many comedians in a comedy. The best stunt casting, though, was Efren Ramirez as Jon Heder ’s character ’s assistant/ videographer. I still crack up every time I see Pedro Sanchez up on screen with “Napoleon Dynamite.”

A journey to the Red Planet Steven Squyres to present Mars lecture as part of Arts & Issues series By JULIA BIGGS Of The Edge The SIUE Arts & Issues 25th anniversary season continues Feb. 17 as The William C. Shaw Lecture Series presents Steven Squyres – “Roving Mars: Spirit, Opportunity and the Exploration of the Red Planet.” Squyres is the scientist responsible for overseeing the creation of Spirit and Opportunity, the two rovers that have been exploring Mars since 2004. During his presentation, Squyres will talk about his passion for the red planet and the amazing journey to build and launch the rovers and show never before seen photos. He will discuss the risks taken, the mistakes made and how the project’s goals were ultimately achieved. Working with a team of more than 3,000 and a budget of $800 million, Squyres served on the management team and was the Athena Science
February 11, 2010
Payload Principal Investigator of NASA’s Mars Exploration Rover Project (MER). He turned what seemed like an improbable dream into a reality by overseeing the creation of the two rovers. Designed to last 90 days and designed to drive just 600 meters over their lifetime, the robots dubbed Spirit and Opportunity were launched towards Mars in the summer of 2003 and landed on Mars in January 2004. Days into their mission, the rovers began sending images and data back to Earth providing critical information regarding Mars’ geographical history and composition. Spirit and Opportunity have been exploring Mars for the past six years, far surpassing their original 90-day mission. In 2009, one of the Spirit rover’s wheels became stuck in sand on the planet’s surface. After nearly nine months of effort to dislodge Spirit’s wheel, NASA announced just weeks
Steven Squyres ago that Spirit would continue to explore but from a stationary science platform. Yet Opportunity continues along its mobile investigative journey across Mars. According to a NASA
press release from a week ago, “The robot (Opportunity) currently is driving toward a large crater called Endeavor and continues to make scientific discoveries. It has driven approximately 12 miles and returned more than 133,000 images.” You won’t want to miss this firsthand account of the behind the scenes planning and implementation of NASA’s MER project as Squyres’ walks us through this amazing adventure. Squyres is a Goldwin Smith Professor of Astronomy at Cornell University, and is the Principal Investigator for the science payload on the Mars Exploration Rover Project. He received his Ph.D. from Cornell in 1981 and spent five years as a postdoctoral associate and research scientist at NASA’s Ames Research Center before returning to Cornell as a faculty member. Squyres has participated in numerous planetary spaceflight missions and in 2005 published
the book, “Roving Mars: Spirit, Opportunity and Exploration of the Red Planet.” A Disney IMAX documentary film, “Roving Mars” was made from the book. The Arts & Issues presentation, sponsored by the Shaw Memorial Fund and the SIUE Physics Department, is scheduled to begin at 7:30 p.m. on Feb. 17 on the SIUE campus in Morris University Center’s Meridian Ballroom. Tickets for the “Steven Squyres - Roving Mars: Spirit, Opportunity and the Exploration of the Red Planet” presentation and the remaining Arts & Issues anniversary season may be purchased online at www.siue.edu/ artsandissues/ General admission is $27, SIUE staff, retirees, alumni or seniors 65 and older are $25 and student tickets are $13. The Arts Artistic adventures ALT to present “Audacityâ€? Alton Little Theater will present the witty and darkly funny adventure “Audacityâ€? by Simon Mawdsley February 12 through February 21 at the Showplace, 2450 N. Henry Street, Alton.  The British comedy is directed by Mark Hilgert and features a talented ensemble cast of Barry Thornell, Ian Hardin, Tonya Nix, Warren Frank and Elaine Myers.  The timely production takes a stab at unemployment, marital strife, living beyond one’s means, age discrimination, much like the popular movie “Fun with Dick and Janeâ€?. In “Audacity,â€? a trio of three very-unlikely, first-time crooks try to improve their lots in life by robbing a London Department Store. When their wives catch on, hilarity and plot twists ensue.  Director Mark Hilgert likes the “edge and gritâ€? of the production and has conceived a new format of staging for the show, which deals with adult themes and language that is not recommended for children. Adult audiences will surely identify with the economic frustrations the players face, and will undoubtedly get a cathartic release from the clever plan three men devise to “get even.â€? “A little honesty about greed never hurt anyone,â€? says Hilgert.  The production will run from Friday, February 12 through Sunday, February 21, with matinees on Sunday, February 14 and Sunday, February 21 at 2 p.m. Evening performances are at 7:30 p.m. No performance on Monday, February 15. Tickets are $14 for adults and $6 for students. For information about reservations, season tickets and group sales, call (618) 462-6562.Â
Allison Smith: Needle Work at Mildred Lane Kemper Art Museum Allison Smith creates largescale multimedia installations that critically engage popular forms of historical reenactment — including sculpture, fabrics, ceramics and other traditional crafts — to redo, restage and refigure our sense of collective m e m o r y. F re q u e n t l y d r a w i n g on “living history museums, battlegrounds and, most recently, the Internet, Smith explores notions of gender, culture and authenticity through craft and performance and the connections of both to war, violence and the construction of national identity. In February the Mildred Lane Kemper Art Museum will showcase the artist’s most recent project, Allison Smith: Needle Work. The installation centers on the recreation of European and American gas masks from World War I and World

War II. Appearing crudely fashioned — from textiles such as canvas and twill tape as opposed to the more familiar industrial black rubber — these early masks, which Smith first encountered while visiting the MusÊe de l’ArmÊe in Paris, struck her as meticulously, even lovingly, crafted, yet also functionally inadequate to their task. Allison Smith: Needle Work will open Feb. 5, and will remain on view through April 19. In preparing her replicas, Smith studied the history and evolution of gas masks, often sketching from primary sources or using a cell phone to take photographs. She also scoured the Web for archival images, many of which (like the cell phone photos) proved blurry, pixelated or otherwise difficult to decipher, leaving the artist to guess at fabrics and construction details. But this sense of
approximation is central to Smith’s project, underscoring the unreliability of historical memory as well as the ultimate impossibility of “authentic reproduction. Indeed, the gap between artifact and reproduction reinforces Smith’s conception of the mask as both uniform and costume, at once signifying the invisibility of the individual and the freedom to not “be oneself at moments of one’s choosing. This sense of performance is further emphasized by a series of staged photographs in which masks are worn, held or otherwise positioned as props, variously evoking survival, cruelty, modesty, camouflage and disguise. For Smith, the very activity of making masks is itself a performative gesture. One striking photo shows hands in the act of sewing a mask. Others depict finished masks juxtaposed with the

Are you feeling as great as you would like? Do you have stiness and pain that keeps you from enjoying life? Is your balance less than it should be? Many older people, and even those as young as 45 or 50 years old, say “I’m just getting oldâ€? or “I have arthritis, I just have to live with it.â€? We all desire, as we age, to live in our homes, remain independent, and be able to enjoy life with a good mind and a body that will allow us to do the activities we want to do. Staying active physically, mentally and socially are key factors in maintaining the life style you want to enjoy. Chiropractic attempts to improve and to restore normal function and mobility of the spine, hips, knees, and shoulders. In doing so, the pain and stiness are many times alleviated and an enhanced quality of life is once again enjoyed when no help was thought to be available, except to take drugs, which is not always the best choice. Family Focus Technology use up for kids, down for parents NEW YORK (AP) – Like many working parents, Beverly Flaxington armed her daughter with a cell phone in fifth grade, when the time came for her to venture out alone. At first, it was a great way to stay in touch. That was then. Now 13, Samantha’s grades have slipped drastically and she’s obsessed with texting, Facebook and her laptop, sometimes falling asleep in her clothes clutching her phone. When her texting exceeded 2,000 messages a day, her parents shut off the function from 9 p.m. to 6 a.m. on school nights, and Sam “just went nuts.” “She slammed doors. She accused us of being overly conservative when all of her friends are able to do things at night,” said the mom in Walpole, Mass. “She didn’t speak to me for three days. She broke things. You’re left with the choice of do I make her a leper because she’s not a part of this or do I just spend all of my time fighting.” Smart phones, MP3 players, laptops and other devices are the air kids breathe — perhaps too deeply, judging from a new study that shows children ages 8 to 18 devote an average of seven hours and 38 minutes a day consuming some form of media for fun. That’s an hour and 17 minutes more than they
did five years ago, said the study’s sponsor, the Henry J. Kaiser Family Foundation. And they’re champion multitaskers, packing content on top of content for an even heavier onslaught. “This is a game changer,” coauthor Donald Roberts said during a panel discussion when the survey of 2,002 young people was released Wednesday. “We’re really close to kids being online 24/7.” Kids, the survey showed, now spend more time listening to music, playing games and watching TV on their cell phones than talking on them. Perhaps more surprising: Only about three in 10 said their parents have rules about how much time they can spend watching TV or playing video games. Not all parents consider all that time spent on technology a bad thing. Craig Kaminer ’s 19-year-old and 16-year-old boys have laptops, highspeed Internet connections, Xbox, HDTV, iPhones, video chat, iPods, GPSes, DirectTV with DVR, Kindles and digital cameras. “They’re connected to the Internet, each other and us from the second they wake up until they go to sleep,” said Kaminer, of St. Louis. “In general, they’re very grounded and handle the balance well.” Others, though, find balance

elusive. Things changed for Betsy Tant in Knoxville, Tenn., when her 11year-old daughter received an iTouch for Christmas. “She’s obsessed with it all of a sudden,” said Tant, 40. “That really caught me off guard. She’s had a computer for a while, but now she wants to check her e-mail all the time. We’ve had to set limits.” Tant considers herself an exception in the limit-setting department, refusing to provide her daughter text service, for instance. Many parents she knows don’t bother.
“It gets them out of their hair, I think,” she said. With so much temptation — Internet-equipped mobile devices, better home connectivity, video gaming online and off, social media and TV-like content on any device — many parents say schoolwork is suffering. The researchers warned that further study is required to link media use with any impact on the health of young people or their grades. But 47 percent of heavy media users among those surveyed said they earn
mostly Cs or lower, compared with 23 percent of light users. The study classified heavy users as consuming more than 16 hours a day and light users as less than three hours. Flaxington, 49, learned in November that her teen went weeks without turning in homework in math and other subjects, so they arranged for her to complete assignments at the end of the day at school, where cell phones are banned and computers weren’t available. “It was impossible to get her to focus at home,” Flaxington said.

Little Italy Satisfying Italian cravings in Fairview Heights By BILL TUCKER Of The Edge Little Italy has risen, quite literally, from the ashes in Fairview Heights. The Italian eatery occupies the site once home to Carlos O’Kelly’s, a restaurant that burned to the ground a couple of years ago. And, continuing the ashes theme, Little Italy fills an Italian void in the area around St. Clair Square as another fire, several years ago, burned Pasta House to the ground. So if you’re the mood for pasta – and don’t feel like driving to The Hill in St. Louis – then Little Italy will satisfy your craving. The decor is typical mid-range, Midwest restaurant. There’s a fountain just inside the front door, it’s a bit on the dark side and Dean Martin provides the background music. The big-screen TVs hanging in most corner ssubtract points as they give the restaurant a bit of a sports-bar feel. Little Italy’s Web site states that the eatery has its roots in New York and uses “original family recipes that have been passed down for generations.” The menu is loaded with
selections, although there’s nothing that really jumps out and says, “You have to try me.” Auntie Lisa’s white lasagna is billed as a fan favorite, but it didn’t appeal to anyone in our party. There is a wide range of appetizers including Italian nachos, toasted ravioli, mozzarella fritti and bagna cauda, a creamy Italian anchovy and garlic dip that was fair at best. Most dinners come with a choice of soup or salad. Again, nothing special. Italian wedding soup and minestrone are everyday choices and have everyday tastes. The pasta selections are what you’d expect and include spaghetti, fettuccini alfredo, lasagna, tortellini, ravioli,
mannicotti and cannelloni. Little Italy gets points for its pasta as most selections are available with either marinara or alfredo sauce. There are a handful of steak choices and five seafood offerings. (Seafood should only be eaten, or more appropriately prepared, in seafood restaurants.) Chicken parmesan, chicken florentine, veal marsala and veal picatta are other offerings for those who want more than a plate of pasta. Little Italy also offers pizza and calozone. There are 14 different toppings and you can create your own. There’s a kids’ menu and a a half-dozen dessert selections including cannoli and spumoni cheesecake. A full bar makes any drink possible – from a glass of wine to a pina colada. If you get the impression we’re not real enthusiastic about Little Italy, you are correct. It has an assembly-line feel to it and the food lacks imagination. You can have the same experience at any Pasta House. But if you want the real deal, head to The Hill. You won’t be disappointed. Little Italy is located at 120 Ludwig Dr., in front of Gordman’s and behind Red Lobster. For more information call 394-8922 or visit www.littleitalyfairview.com.

Dining Delights OK, we admit these are our opinions and you certainly should form your own, but it is nice to have a guide of places to eat when you are undecided or want to try something new or different. To send us a suggestion of a restaurant to try, e-mail theedge@ edwpub.net 54th Street Bar and Grill Edwardsville 4 stars Great menu selection, something for everyone. Prices are very reasonable and have not had a bad selection yet. Remember to get your frequent diner card stamped when ordering an entree so you can get one free when your card is full. Red Robin Edwardsville 2 1/2 stars The bottomless french fries are fantastic, but it basically is a pricey burger place. Service is not super speedy, but food was good and hot. Good group setting.
4 1/2 Stars OK men, don’t scoff at the rating, but embrace it! Although men look at it as “chick food,” there is something for every taste on their menu. Fantastic soups, sandwiches, bakery items, coffees, teas, salads, and more. Great place to take a laptop or a book and just kick back and sip a cup of java. Bully’s Smokehouse Edwardsville 3 1/2 stars The food is good at Bully’s, but a little foo-foo for a barbecue place. The prices are a little more than typical barbecue fare. Good for business lunch or dinner and nice servings. Pantera’s Pizza Edwardsville 2 1/2 stars Still some of the best pizza around, but the decor needs a bit of updating, along with the
dinner ware. The buffet is good if they keep it full, but that can be an issue at times. You better put on your running shoes to get that hot selection before everyone else beats you to it! Jimmy John’s Sandwich Shop Edwardsville 4 stars Where sandwiches are concerned, you can hardly beat a good Jimmy John’s. Their Bootlegger Club and The Big John are some of the favorites around here. Their cookies are great also, ask them to heat it up. They really are “freaky fast!”
bit slow when they are busy. Bella Milano Edwardsville 4 stars Quickly becoming a legend in Edwardsville, Bella Milano is a favorite for many. Great dining atmosphere and lots of good Italian food and drink. Come hungry with loose fitting clothing. Bull and Bear Edwardsville 3 1/2 stars A sports bar and grill with that offers bar side and dining room
seating. A selection of appetizers, sandwiches, steaks, baby back ribs, chicken, seafood, pizza, and a kid’s menu make it family friendly, yet a great hangout for friends. Buffalo Wild Wings Edwardsville 2 1/2 stars If you like wings, this is a great place for you. Other selections of appetizers, sandwiches and mostly bar fare round out the menu. A little pricey for wings, but if you gotta havem’ you gotta havem’. Service is kind of a toss up. Has been good, has been slow.
Big Daddy’s Edwardsville 3 stars Typical bar fare of appetizers, sandwiches, salads, and wraps round out Big Daddy’s menu. They offer specials on certain days that are a real value. Service can be a
Cold Stone Creamery Edwardsville 5 stars I really would give this more stars if we had them, but all we can give is five. I LOVE their ice cream concoctions, particularly the Cheesecake Fantasy or the Apple Pie A La Cold Stone. I really could put more selections here, but use your imagination! Red Apple Maryville 4 stars The Red Apple is another favorite of our family, whether it is breakfast, lunch or dinner. There is a huge menu selection, including Italian, broasted chicken, gyros, sandwiches of all kinds, plate specials, fish selections – fried and broiled, and much more. Service is always impeccable and prices can’t be beat. La Fonda Edwardsville 3 1/2 stars Good food, good service. All you can eat chips and salsa are great complement to their abundant menu. Their rice and beans are excellent also. Bigelo’s Bistro Edwardsville 4 stars Great menu selection of gourmet sandwiches, soups, salads, pastas and more. Great downtown Edwardsville location where you are sure to see someone you know. St. Louis Bread Company Edwardsville/Collinsville

Dining Delights No trick plays needed for great football snacks NEW YORK (AP) – There’s not a whole lot of high-end culinary wizardry involved in typical Super Bowl party foods. But since it’s easy to end up with a bland batch of chili, soggy nachos and brown guacamole, we wondered if there were simple tricks to avoiding these common problems. So we reached out to Chris Kimball, publisher of Cook’s Illustrated magazine, and food scientist Harold McGee for advice on how to improve our culinary gameplay for the big day. Here’s what we learned. CHICKEN WINGS You’ll find plenty of mediocre wings in the grocer ’s freezers. Forget them, says Kimball. Instead, make your own and start with topquality chicken for a juicier wing. “A lot of problems with chicken is that you are getting things that are mass produced stuff,” he said. “Definitely look at the brand.” Chicken wings usually are deepfried. “Fried foods are easy to get wrong,” says McGee said. “If you cook them at too low a temperature they absorb a lot of grease,” he says. “The same sort of thing happens if you don’t shake or blot them after, because the oil is at its least viscous when it is hot.” To get it right, be sure to dry the wings with paper towels before frying (dry chicken equals crispy chicken), and be sure to let them come to room temperature. Cold wings will cool the oil, which results in poor frying. The goal is to maintain a constant oil temperature of 350 F, says McGee. When they are done, pull the wings out using a slotted spoon and give them a good shake over the pan to remove as much of the oil as possible before transferring them to a paper towellined plate.
NACHOS Kimball says the main problems with nachos rest with ratio and the way the cheese is applied. Don’t just dump ingredients on, he says. Think about the ratio of cheese to chips to jalapenos to sour cream to diced tomato to guacamole to... You get the idea.
Consider how much of each flavor your want and how they work together before adding anything. As for the cheese, just sprinkling the cheese on top leaves you with what Kimball calls a “cheese hat” while the other ingredients pile up underneath and make your chips soggy.
Back on her feet... And better than ever!
The solution: layering the chips, c h e e s e a n d o t h e r i n g re d i e n t s
instead of carpet-bombing the top.
