Bring new life to turkey with stew By The Culinary Institute of America

Raise your hand if you make certain dishes for Thanksgiving just so you’ll have them for leftovers. Yes, buying a huge turkey to feed six counts. Guilty as charged. But even if you live for leftover turkey sandwiches and carrot pudding, you’ve probably faced that Thanksgiving fatigue that hits a few days in, where you just reach your limit — even for Mom’s stuffing. But here at The Culinary Institute of America, we hate thinking about good food going to waste, so hang on to the rest of that turkey, and let’s talk. One of the primary reasons we get sick of those leftovers is because no matter how you shape it, you’re still just eating turkey, mashed potatoes, and cranberry sauce. On a sandwich, in a bowl, stacked on a fork straight from the fridge_it’s all the same. The key to enjoying that Thanksgiving bounty for days (or weeks!) is to make each dish fresh. (After you eat one good sandwich, of course). Don’t just make turkey soup with leftover turkey bones. Make turkey tortilla soup, loaded with tomatoes, cilantro, and creamy queso fresco. And sure, roasted vegetables are a great leftover side dish, but chop them up with some leftover giblets (you did save the giblets, right!?) and a runny egg for a new take on brunch hash. Even stuffing can take on a new life. Form it into a patty and griddle it, then_you guessed it_put an egg on it! And your mashed potatoes, veggies, and gravy come together with some ground lamb for a 10-minute shepherd’s pie. But what about the turkey? This recipe for Cajun-Style Stew with Andouille and Turkey is the perfect way to bring some fresh life into that poultry, especially if it’s beginning to get dry. There’s no roux to keep an eye on, and after just a bit of chopping, it comes together in about half an hour. It’s the perfect weeknight meal for post-Thanksgiving, not-quite-December holiday mania. Whether or not to get up before the crack of dawn to go shopping isn’t the only question to be answered on Black Friday. If you overcooked like most Americans, you’ll also be wondering what to do with all those Thanksgiving leftovers. There’s turkey sandwiches, of course. But admit it — that’s boring. Why not shake things up this year and opt for a taste of the sunny Southwest instead, with this easy, cheesy turkey tamale pie? It only requires one pot, and it’s the type of dish that warms you up from the inside. TURKEY TAMALE PIE PG tested For polenta 2 cups chicken broth 2 cups milk 1 cup polenta or cornmeal 4 ounces sharp white cheddar cheese shredded, plus 4 ounces more for topping 1/4 teaspoon each salt and pepper 2 to 4 tablespoons butter For turkey 2 cups leftover turkey, shredded 1 cup leftover gravy 1 1/2 cups red enchilada sauce 2 tablespoons chili powder 2 teaspoons smoked paprika 1/2 teaspoon cayenne pepper 1 teaspoon cumin 1 teaspoon salt 1 teaspoon pepper 1 red pepper, diced 1 1/2 cups canned black beans, rinsed and drained For garnish Diced avocado Fresh cilantro Salsa Pomegranate arils 4 ounces queso fresco or cotija cheese, crumbled Crushed tortilla chips Start by making the polenta. Pour chicken broth and milk into a high-sided skillet and bring to a boil. Lower heat to medium and slowly whisk in the polenta. Cook, stirring frequently, until polenta is soft and thick, about 15 to 20 minutes. Keep warm and then just before serving, stir in cheddar cheese and butter. Season with salt and pepper. If the polenta seems a little thick you can add a tablespoon of butter or extra milk. Preheat oven to 375 degrees. While polenta is cooking, mix together turkey, gravy, red enchilada sauce, chili powder, smoked paprika, cayenne pepper, cumin, salt and pepper in mixing bowl. Stir in red pepper and black beans. Once the polenta is done cooking, smooth it out into a single layer and then pour the turkey tamale mixture over, spreading it in an even layer. Top with remaining 4 ounces shredded cheese. Bake for 25 to 30 minutes or until the pie is bubbling and the cheese is melted. Allow to sit 5 to 10 minutes, and then serve with cilantro, salsa, pomegranate arils, queso fresco or cotija cheese and tortilla chips. Serves 6 to 8.

Every blend is a bit different, so use your gut. To accompany the turkey, we’ve added tasso ham and andouille sausage, both of which are classic Cajun and Creole ingredients. Tasso ham is uniquely seasoned, but it can also be tough to find, so feel free to replace it with your favorite garden-variety smoked ham. A lot of familiar sausage brands carry an andouille variety, but you can use whatever spicy or mild sausage you like best. And don’t worry. If you get

Since most people don’t generally have leftover turkey in the fridge year-round, use shredded meat from a rotisserie chicken, cooked chicken breast, or even shrimp. Luckily, you won’t have to worry about how to use leftovers from this tasty stew, since there will be none! CAJUN-STYLE STEW WITH ANDOUILLE AND TURKEY Servings: 8 Start to finish: 45 minutes (Active time: 25 minutes) 1 tablespoon vegetable oil 8 ounces tasso ham or other smoked ham, cut into 3/4-inch pieces

12 ounces andouille sausage, sliced 1/4-inch thick 1 green bell pepper, cored and thinly sliced 1/2 medium yellow onion, thinly sliced 2 stalks celery, thinly sliced on the bias 4 cloves garlic, minced 2 tablespoons tomato paste 1 1/2 cups amber beer 2 cups chicken broth 3/4 teaspoon dry thyme 3/4 teaspoon dry oregano 1/2 teaspoon cayenne pepper 1/2 teaspoon ground cumin 1 1/2 teaspoons chili powder 1 teaspoon kosher salt 1/4 teaspoon freshly ground black pepper 2 cups roughly shredded turkey meat 4 cups cooked long-grain white rice, for serving 4 tablespoons chopped flatleaf parsley, for garnish Heat the oil in a large pot over medium-high heat. Add the ham and sausage and cook, stirring occasionally, until browned around the edges, about 5 minutes. Add the pepper, onion, and celery and cook until translucent, about 4 minutes. Add the garlic and cook until fragrant, about 1 minute. Add the tomato paste and stir to coat the meat and vegetables. Cook until the paste deepens to a rust color, about 4 minutes. Add the beer and broth, and stir to combine, scraping up any brown bits from the bottom of the pot. Add the thyme, oregano, cayenne, cumin, chili powder, salt, pepper, and turkey meat, and stir to combine. Reduce to a simmer and cook, covered, until the flavors have blended and the sauce is flavorful, about 20 minutes. Serve over cooked rice, garnished with parsley. Nutrition information per serving: 343 calories; 104 calories from fat; 12 g fat (4 g saturated; 0 g trans fats); 68 mg cholesterol; 1212 mg sodium; 30 g carbohydrate; 2 g fiber; 2 g sugar; 26 g protein.

Digging into the Thanksgiving Day feast is a joy, but preparing it takes work. This Green Salad with Pear Dressing is a simple but elegant first course, and it will take some of the stress out of the gig. And — bonus! — it’s lighter than the usual holiday recipe. How did we do it? By swapping out some of the oil in favor of a very flavorful pear puree. Indeed, this salad is an ode to pears, teamed up with a couple of their best buddies: walnuts and blue cheese. (Cheese!? So much for lightness, right? Not really. There’s only half-an-ounce per person.) You’ll need one very ripe pear for the dressing and two firm ripe pears to slice and add to the salad, so planning ahead is key. Most pears in the supermarket are rock hard when you buy them and need several days to ripen. You can speed up the process by placing them in a brown paper bag alongside a bunch of bananas. Walnut oil is our oil of choice because it complements the pear ’s sweetness. (It also happens to be wonderful drizzled on vegetables, raw or cooked, and on all sorts of cheeses.) My favorite brand is La Tourangelle from France, but there are many other brands, both domestic and imported, that will do the job. Just be sure to store it in the refrigerator once you’ve opened it because walnut oil — like any other nut or seed oil — can go rancid easily if left at room temperature too long. Still, if you don’t want to invest in a bottle — it’s a little pricey — use safflower or sunflower oil instead. Likewise, you’re welcome to swap in a different nut for the walnuts and a different cheese

Green Salad with Pear Dressing, Gorgonzola and Toasted Walnuts Start to finish: 40 minutes (20 active) Servings: 8 1 very ripe small pear, peeled, cored and sliced 1/2-inch thick (it should measure 2/3-3/4 cup sliced), plus 2 firm ripe pears (preferably red) 1/3 cup distilled white vinegar 2 teaspoons honey

1/4 teaspoon kosher salt 2 1/2 tablespoons walnut oil 1/8 teaspoon ground black pepper 8 cups loosely packed watercress, arugula or greens of your choice 1/2 cup chopped toasted walnuts 4 ounces crumbled Gorgonzola Dolce, Roquefort, or blue cheese of your choice In a small saucepan combine the sliced pear, vinegar, honey and salt; bring to a boil. Simmer until the mixture is reduced to 2/3 cup. Let cool slightly, transfer the mixture to a blender and blend until smooth. Add the oil and pepper; pulse one or two times. Taste and add additional salt and pepper if desired. Core the remaining pears and slice thin. In

a large bowl drizzle the watercress with some of the pear dressing and toss well. Mound oneeighth of the salad on each of eight plates and top each portion with the walnuts, Gorgonzola Dolce and sliced pears. 91st Macy’s Thanksgiving Day Parade set NEW YORK--(BUSINESS WIRE) This Thanksgiving, a magical march returns to the streets of New York City and to homes across the United States as the 91 st Annual Macy’s Thanksgiving Day Parade ® kicks off the holiday season with its signature spectacle of wonder. “A Bad Moms Christmas” a decent holiday treat By MICHAEL PHILLIPS Chicago Tribune

A movie can be unreasonably formulaic and still be reasonably diverting, and “A Bad Moms Christmas” is the proof. Some sequels take time to come together. This one took a mere 15 months to reunite Mila Kunis, Kristen Bell and the extraordinarily valuable Kathryn Hahn as the suburban Chicago pals perennially under the gun of peer pressure and familial expectation. (The movie was shot in Atlanta, with some fake-looking snowmachine snow in tidy little piles here and there.) Screenwriters and directors Jon Lucas and Scott Moore return and, while their staging, and setups

and what the old folks call “moviemaking” remain functional at best, a fair number of the jokes hit their targets. Gone is the tedious narrative machinery of the first “Bad Moms” that involved the Kunis character’s brutal rivalry with her fiercest PTA enemy, played by Christina Applegate. In its place, Lucas and Moore steal their own opening from “The Hangover,” with a stunned Amy (Kunis) sitting amid the wreckage of a rough Christmas Eve, complete with roving camel and broken glass. Flashback: We go back a few days to meet our heroines’ unexpected-drop-in mothers, played by Susan Sarandon, Cheryl Hines and Christine Baranski. Hines portrays the Klingon who can’t let go, to the

point of not leaving the bedroom where her daughter (Bell) is having sex with her husband. Baranski’s controlling, imperious, demanding character is the reason why, we’re told, narrator Amy finds Christmas so hard on the ego and the spirit. “You have to do (everything) perfectly or you’ll never forgive yourself,” Amy says. While the Baranski character bigfoots her daughter’s attempts at ramping down and mellowing out the holiday, Sarandon’s hard-living exroadie hits town to ask daughter Carla (Hahn) for money. “A Bad Moms Christmas” rotates through exercises in confrontation, evasion, bonding, letting off steam and building the steam back up again for the next round.

The sequel accommodates some genial beefcake in the form of Justin Hartley’s firefighter/male stripper, the love interest for Carla. They meet over a testicle waxing (she works in a spa) and, against all odds, the scene starts funny and stays funny. Baranski, who has played these sorts of women before, brings rapier comic timing to scenes such as a Christmas Eve chapel quasiapology to Kunis, where she can’t quite say the words “I’m sorry.” It’s Hahn, though, who kills throughout. Even when the movie confines the audience to the inside of a mall for a distressing length of time, she energizes the formula. Comedy is so damn hard. In order for performers to fly, the material — which is both the

trapeze and the net — must be in place, supporting the riffs. Nobody goes to a movie like “A Bad Moms Christmas” for fresh plotting; they just want a few dirty laughs, a little heart and a pretense, anyway, of relatability (though Kunis, who glides through unruffled even when her character’s supposed to be frazzled, isn’t everyone’s idea of relatable). Moviemakers take so few chances with sequels because there’s no money in it; risking overfamiliarity is a better bet than disorienting the pre-sold customer. On the other hand, 2017 has been laden with sequels of varying quality performing below expectations. This one’s not bad. These days, that means more than it should.

Florist selected to decorate White House COLUMBUS, Miss. (AP) — West Point florist Scott Reed never thought his first trip to Washington, D.C. would be for such an esteemed reason — to decorate The White House for Christmas. Reed, owner of Petal Pushers, which provides an “out of the ordinary” shopping experience in floral arrangements, gifts and antiques, received official correspondence from The White House that he was accepted into the 2017 holiday volunteer program. “I’ve always worked with design,” Reed said. “And I just remember hearing about this program years ago and thinking ‘how neat would it be to be a part of something like this?’” The program, he said, is divided between two teams — a preparation team that volunteers the week before Thanksgiving and a decoration team that volunteers the week after Thanksgiving to prepare the interior of the White House for the holidays. His desire to be a part of the decoration process is bipartisan. Reed first applied to the volunteer program, unsuccessfully, during George W. Bush’s last term in office and reapplied during Barack Obama’s two terms. At the time he sent his application during Obama’s administration, he said, the holiday volunteer team was already selected. “I just made a promise to myself, that no matter who won the last election, I would start the application process early,” Reed said. “I started as soon as the election ended.” Although Reed recently received correspondence about being selected, he said he noticed things started to fall into place during the months

But when he found out, he was filled with both excitement and nervousness. “It was really exciting to see something that I’ve wanted to do for so long come to be,” Reed said. “But I was automatically a little bit nervous because, well, I’m decorating the White House.” Reed leaves for D.C. the day after Thanksgiving and will stay for four days as he completes his decorative duties, in hopes to ensure a success-

ful White House Christmas. Background and early career When Reed was in high school, he spent a lot of his free time working at The West Point Flower Shop, he said. Originally starting out as a delivery driver, Reed quickly began learning how to craft floral arrangements and has since been involved in floral design. Reed graduated from Mississippi State University with a degree in ornamental horticul-

ture with plans to open a retail nursery business in West Point. However, in 2002, he opened Petal Pushers instead. His shop, located at 651 Commerce St., now specializes in flowers, jewelry, gifts, interiors and garden. It serves a variety of clients — including brides and bridal parties — and creates arrangements for different events as well. Although Reed is ready to take on his role on the White House holiday volunteer team,

he said he’s experiencing a little bit of “owner’s guilt,” as he prepares to leave his store for D.C. However, he said, he is grateful for a staff of 15 he knows will step up during his time away and make sure business operates smoothly. “I’m just so honored to be chosen to do this, especially after trying unsuccessfully a few times,” Reed said. “I know my staff is just as excited as I am too.”
