INGREDIENTS SERVES 6

tsp finely grated tangerine zest cup freshly squeezed tangerine juice cups granulated sugar, divided large egg yolks tbsp unsalted butter cup water cup Cointreau tsp cinnamon
¼ tsp ground cloves 3 blood oranges, skin and pith removed, each sliced crosswise into 4 or 5 pieces 12 small ladyfinger biscuits 1 cup 35% whipping cream 2 tsp icing sugar ½ cup crème fraîche ¼ cup sliced almonds, toasted
DIRECTIONS In a stainless steel saucepan, whisk the tangerine zest with the juice, 1 cup of the sugar and the egg yolks until well blended. Cook gently over medium-low heat, stirring constantly with a rubber spatula, scraping along the bottom and sides of the saucepan, until the curd is thickened but still pourable, 7 to 8 minutes (to avoid splitting the curd, do not bring to a boil). Strain the mixture through a fine-mesh sieve into a medium bowl and stir in the butter, 1 tablespoon at a time, until incorporated. Press a piece of plastic wrap onto the surface of the curd and refrigerate until set, at least 2 hours. Meanwhile, place the remaining ½ cup sugar and the water in a large skillet over medium heat and stir until the sugar is dissolved, about 1 minute. Reduce the heat to medium-low. Whisk in the Cointreau, cinnamon and cloves, then add the orange pieces. Cook for 1 minute, then carefully turn the oranges and cook for another minute. Remove from the heat and leave the orange pieces to cool in the syrup. Once cooled, transfer the orange pieces to a plate; reserve the syrup. Soak the ladyfingers a few at a time in the syrup, turning to coat both sides. Cut each soaked ladyfinger into 1-inch pieces; set aside. Whip the cream and icing sugar together in a small bowl until soft peaks form. Stir in the crème fraîche. Refrigerate until ready to serve. To assemble, line up 6 small trifle dishes. Place a few landyfinger pieces (the equivalent of one biscuit) in the bottom of each dish. Top each with a dollop of curd and a few orange pieces. Repeat the layers until they almost reach the top of each dish, then cover with plastic wrap and refrigerate for at least 2 hours to soften the ladyfingers. To serve, top each trifle with a generous dollop of the cream mixture and sprinkle with toasted almonds. STYLEATHOME.COM DECEMBER 2018

brian gluckstein An interior style icon for decades, Canadian designer Brian Gluckstein creates luxe yet livable spaces anyone would be lucky to call home. PRODUCER SARA CATION
TOME TALES Internationally acclaimed interior and product designer, TV personality and Home Design Ambassador for Canada’s most iconic retailer, Hudson’s Bay, Brian Gluckstein is not only a lovable household celebrity known for interiors that are at once decadent and down to earth – he’s also a legend. Though he launched his design firm more than 30 years ago and has enough material to fill 20 tomes, he waited until now to release his first book, The Art of Home. But when Brian signs on to any project, he takes his time to consider every detail. So much so that he’s never felt the need to redesign his own abode. “I’ll refresh, add and remove pieces, and restyle surfaces,” he says. But he has never overhauled his whole house. “I get it right from the start.” And that’s exactly what he wanted to achieve with his book.

“Not every element has to be high impact. It’s always more interesting when it’s the culmination of everything that dazzles.”
Interested in design from a young age, Brian attended an open house on his own at around 16 years old, taking home the brochure. “It was a very grand place – I can’t believe they gave me the time!” he says, recalling the time in his life when he wanted to be either an interior designer or a pediatrician. Of course, decor edged out medicine, and Brian followed his sister’s footsteps to design school. “When I got there, I knew I’d made the right choice.” And that brochure? He’s held on to it for more than 40 years.

“A room for reading is not like a room for entertaining – it does not need a sofa, a coffee table and two chairs,” says Brian, who instead incorporated a pair of chaise longues for the ultimate in reclined reading pleasure.
The two-storey library in Brian’s house was inspired by one he saw on a trip to London in his 20s – he’d wanted one ever since.
IN WITH THE OLD You heard it from Brian first: Antiques are affordable right now. “Often, they’re less expensive than modern reproductions,” says the man who loves to mix eras. “It’s shocking!” Brian frequents the websites of dealers like Christie’s – the Interiors auction in particular. “It’s fabulous because the items are vetted but not valuable enough to be in their main auctions,” he explains. “The pieces aren’t period per se; you might see a reproduction of something from the 1600s, except it was made in the 1800s, so it’s still a great antique with a lovely patina.”

DECORATING Remove the cap from a clear glass ornament and carefully place a small piece of greenery inside. Replace the cap, thread a piece of twine through the top loop, knot and hang wherever you please.
Using a green marker, draw simple tree shapes on white kraft paper (a ruler helps achieve picture-perfect rows and spacing). Practice drawing a few trees on scrap paper to get the hang of your design.
Cut out tree shapes from green paper and stitch them together with a sewing machine using green thread. Drape the garland across a window, mirror or mantel to add a wintry touch.

T
he view of Sophia Reay’s backyard in Salem, Ont., would inspire a landscape painter. Like an A.Y. Jackson canvas come to life, a clutch of cedar trees sits on a bluff overlooking the Irvine Creek, which cascades into a 30-foot waterfall. It’s spectacular and sonorous, especially in winter, when the snow settles on the branches and the backyard puts on a show. “Our home is right on the gorge. You can see the old Salem gristmill,” says Sophia, the principal designer behind LemonTree + Co. Interiors, which sells vintage furnishings and custom linen goods, such as drapery, aprons and toss cushion covers. “When the waterfall freezes over, it’s beautiful. Then when it thaws, you hear huge ice chunks fall and the whole house shakes.” The scene is stunningly captured from the designer’s many-windowed living room in the home she shares with her husband, Richard Frede (a builder who runs R. Frede Construction), and their dog,

Maggie. “We chose to build a modern home because it allowed us to get away with much more glass than a traditional design,” says Sophia of the light-filled 3,200-square-foot structure Richard’s company erected in 2016. “We love nature, which is why we wanted the entire back of our home to be one big window. That is our art, our colour. It revolves around cedar trees, the rocks and the gorge.” Simple Mid-Century Modern furniture in an earthy grey and white palette creates a serene interior. Yet the restrained rooms are undeniably cozy, offering many spots to lounge with a cup of tea and read a book or get lost in the forested view. It’s all about weaving in the right details, says Sophia. “Modern can feel stark unless you use texture and organic elements,” she says. That approach also plays into how Sophia decorates for the holidays. Seasonal touches take the form of a potted poinsettia on a side table, for instance, or an understated wreath pinned to a door. “I used to be over the top with sparkles and glitter during the holidays, but I’ve pared down completely, using only a few natural touches. Why would I want glittery branches when I can look out to see real ones?” says Sophia with a laugh. In a house like this, you really can’t compete with Mother Nature, she adds. “You’ll always lose!”
“Many people love modern openconcept homes, but that design takes away some coziness,” says Sophia, who layered the spare dining room with warmth in the form of worn, weathered and textured surfaces. ABOVE The simple butler’s pantry and, beyond it, the laundry room feature dark porcelain floors (slate was the obvious choice, but Sophia wanted everything to be low maintenance, so she decided against stone). “My mom made that wreath,” says Sophia. “It’s not her profession, but she’s amazing at it.” Its mix of pinecones, milkweed husks and dried pomegranates imparts a natural feel that suits the house. Think of it as holiday meets happy – a kaleidoscope of circles, stars and triangles in a parade of joyful colours. The look? Pure Lisa Lev. Every detail is precise. Every decision is clever. It’s an aesthetic that echoes the style of this Toronto house, which Lisa renovated and designed in 2016, taking the main level and basement (not shown) down to the studs. “She transformed what had been multiple dark rooms into one big space full of light,” says homeowner Leigh Ann Wayland, who lives here with her husband, Blair Brooks, and their two teenaged kids, Will and Elizabeth. “We loved Lisa’s style so much, we asked her back to help us get ready for Christmas.” She said yes. But instead of holiday classics, such as reindeer, mittens and red and green baubles, Lisa opted for a geometric theme of crisp lines and curves to suggest trees and snowballs, as well as an unconventional palette to reflect the home’s contemporary design. Lisa began with the white, orange and blue backdrop she’d created for the home’s redesign and then added a vivacious mix of new hues, including juicy fuchsia, vibrant turquoise and electric lime. The look is modern and fun, with simple unfussy lines, but it’s also unabashedly festive. The family loves that it’s perfectly suited to their style and a fresh alternative to hyperChristmasy decor.

2. Timeless Whimsy Lisa made clever use of Nepalese paper garlands to lend a dose of festive colour to a plain white wall. But homeowner Leigh Ann Wayland loves them so much she plans to keep them up all year long. “It’s such a happy sight to come home to,” she says. For homeowner Stephanie Kretzschmer, wrapping gifts is a personalized endeavour. “Each gift is diferent, and I spend all year collecting papers, ribbons and string for the occasion.” Her collection of vintage cameras, displayed in an heirloom wooden cabinet, is a year-round feature of the dining room. Apparently, what happens in Denmark doesn’t stay in Denmark.
As a child, photographer Stephanie Kretzschmer spent Christmases overseas amid a joyful group of rosy-cheeked cousins. “Although we didn’t speak the same language, we played together non-stop, and I always felt so welcome,” she says. “The decorations were simple, and the emphasis was on the feeling of coziness, not on gifts.” Now, decades later, Stephanie has made those traditions her own. Far from Denmark, they find expression in the industrial-cool home in Toronto’s Junction
neighbourhood that she shares with her husband, Andrew Tomkins, an image retoucher, and their three cats, Fargo, Koya and Oscar. The 850-square-foot space is on the upper level of a two-storey cinderblock commercial building that was built in the 1970s. For more than 10 years, Stephanie and Andrew waited to convert the dark nondescript space into a bright and airy Scandinavian-style home. In 2016, their vision was finally realized. Thanks to clerestory windows and skylights (not shown) that were tailored to the living area, the space is now flooded with natural light, and the STYLEATHOME.COM DECEMBER 2018

open kitchen and dining area makes the most of a long bank of east-facing windows. “For a photographer, the light in here is a dream come true,” says Stephanie. How fitting, then, that the couple’s holiday season is a celebration of light. Drawing on Danish simplicity, they turn to the twinkle of tiny white lights and the simple serenity of candlelight for decoration. Time is spent creating handmade gift wrap and getting together with friends. “Everyone’s encouraged to drop in at any time. It’s very relaxed,” she says. “We hang out at the island as Andrew cooks, and then we gather at the dining table. Wine is plentiful, and curling up in the living room for hours of good conversation is one of our favourite things to do here.” Stephanie describes her decorating style, both during the holidays and year-round, as spare yet inviting. “I call

Stephanie grew up with the copper Hans Hoyrup pendant light that now hangs above her dining table. “It’s my most treasured piece,” she says. The holidays here are all about easy times and fuss-free decorating. “Nobody should end the holidays feeling exhausted,” Stephanie says. “That’s why, for example, we have a faux white tree, as opposed to a real fir. SPINACH & GORGONZOLA– STUFFED BAKED POTATOES
OVEN FRIES WITH OREGANO & FETA
SERVES 4

2 large russet potatoes (about 1½ lbs) 1½ tbsp unsalted butter, divided 3 tbsp 35% whipping cream 2¼ oz Gorgonzola Salt and freshly ground black pepper 7 oz baby spinach leaves 2 tbsp walnut halves, lightly toasted and broken up into ½-inch pieces (optional)
4½ lbs yellow potatoes, unpeeled, cut into ¾-inch fries 6 tbsp sunflower oil 1 tbsp flaked sea salt ¼ cup extra-virgin olive oil 6 cloves garlic, thinly sliced 2 tsp dried oregano 5¼ oz feta, roughly crumbled
Preheat the oven to 450°F. Poke the potatoes a few times with a fork and then place them on a parchment paper-lined baking sheet. Bake until the flesh is soft all the way through, 1 hour or just over. Remove from the oven and, when cool, slice in half lengthwise. Scoop the flesh out into a medium bowl, setting the skins aside on the sheet for later. Roughly mash the flesh with 1 tablespoon of the butter, the cream, Gorgonzola, ½ teaspoon salt and a generous grind of pepper; set aside. Divide the remaining ½ tablespoon butter among the potato skin cavities. Sprinkle with a generous pinch of salt and bake for 8 minutes, until the skin begins to crisp up. Remove from the oven and set aside. Place a medium saucepan filled halfway with salted water to boil over high heat. Add the spinach and stir until wilted, 10 to 15 seconds. Drain, squeezing as much water out of the spinach as possible. Stir into the potato mixture until combined, then scrape the mixture into the skins, piling it high. Bake until the top of the mash is crisp and browned, about 15 minutes. Remove from the oven, sprinkle with the walnuts and serve.
Preheat the oven to 450°F. Place a large pot filled with salted water over high heat; bring to a boil. Add the potatoes and cook until they start to soften at the edges but still hold their shape, 7 to 8 minutes. Drain and set aside to dry for 5 minutes, then transfer to a large bowl. Add the sunflower oil and salt and mix well. Tip the potatoes onto two large parchment paper-lined baking sheets (don’t overcrowd) and bake until golden brown and crisp, stirring a few times during cooking, 40 to 50 minutes. About 5 minutes before the fries are ready, heat the olive oil and garlic in a small saucepan over medium-high heat. Fry the garlic gently until pale golden brown, 3 to 4 minutes. Remove the fries from the oven and pour the olive oil and garlic overtop; bake for 4 more minutes. Remove from the oven and, while piping hot, sprinkle with the oregano and feta. Serve immediately.

lbs red-skinned potatoes, peeled, cut into 1¼-inch pieces 6 sprigs thyme 3 sprigs mint 4 cloves garlic, peeled 5 strips fresh lemon peel 2 tsp salt 7 tbsp extra-virgin olive oil Freshly ground black pepper Topping ¼ cup extra-virgin olive oil 1 clove garlic, minced 2 tsp finely chopped fresh thyme 8 mint leaves, finely chopped 1 tsp freshly grated lemon zest 1 tbsp freshly squeezed lemon juice Salt and freshly ground black pepper to taste Place the potatoes, thyme, mint, garlic, lemon peel and salt in a large pot. Cover with enough boiling water to rise ¾ inch over the potatoes. Set the pot over a low heat and allow the potatoes to simmer gently for about 25 minutes, or until soft enough to mash. Meanwhile, make the topping: Stir together all the ingredients in a small bowl; set aside. Drain the potatoes, reserving 2/3 cup of the cooking water; discard the thyme and mint sprigs. Return the potatoes, garlic and lemon peel to the pot and mash, adding the oil and the cooking water slowly as you go, until the potatoes are smooth. Transfer the mash to a serving bowl and use the back of a spoon to create divots in the surface. Drizzle the topping evenly over the potatoes, finish with a good grind of black pepper and serve.
