How do you hue? Decorating with colour doesn’t have to mean slathering it all over the walls – layering furniture and accessories is a more noncommittal way of doing it. See more of this home on p68.
I’LL BE HONEST, my home is quite neutral. Walls, kitchen, bathrooms – they’re all white. The flooring consists of tiles, timber and carpet in shades of grey. And my furnishings, well… apart from art and the occasional cushion, let’s just say I prefer a pared-back palette there, too. But all that is about to change. Sort of. I’m getting a new sofa and I’m 99 per cent committed to the idea of navy blue. Sure, it’s not in-your-face colour, but it’s a start, right? What’s your relationship with colour? Do you use it with confidence? Or do you need a little guidance? Our cover story (p24) demonstrates how to work the new-season colour combos, whether you want to amp it up or tone it down. For anyone feeling adventurous, take it to the next level with pattern (p96). If you’re more colour cautious, my best tip is to start with a pastel. Barely there hues will add interest to your space, but won’t freak you out. Another story I love from this issue is our styling DIY feature on colour without commitment. There are so many temporary ways to brighten up your home (hello, renters!), and if you happen to tire of the look, you can change it up in an instant. Check it out on p132. Speaking of changing up looks, we’ve also compiled a great list of must-haves, including glasses, bedlinen, cutlery, lighting and more (p108). We’ve arranged them in order from minimalist to maximalist style, so there really is something for everyone. a cool change Colour trends are a bit like ex-boyfriends – as one comes to an end, we gravitate towards the polar opposite. After a long love affair with millennial pink, the seesaw is leaning towards dreamy blues and soft greens. They’re calming and easy to live with, so what better colour to paint a quarter feature wall with than cool mint (opposite)? Note how the darker green creates an extended skirting board that doesn’t line up with the panelling, making the room seem taller than it is.

make an entrance There’s lots of hype around Ultra Violet, 2018’s Pantone Colour of the Year. So how do you use purple in your home without it all going aubergine-shaped? A bold colour can feel overwhelming in a room you spend a lot of time in, but will add new life to the walls of a hallway. Using colour is also an opportunity to experiment so here, we painted a border around the doorway slightly off-centre. The result is instant visual dimension. A

THE EXTREMELY RARE “TABLE IKB” – RELEASED FOLLOWING CREATOR YVES KLEIN’S DEATH IN 1962 – IS FILLED WITH RICH BLUE PIGMENT Basking on a beach in the summer of 1947, Yves Klein (right) declared he would turn the blue sky into his first artwork. He went on to lead the French Nouveau Réalisme art movement.
1961 THE WORLD HAS LONG BEEN BEGUILED BY the colour blue, or more specifically, ultramarine. A bright, brilliant hue, ultramarine is the sort of blue all others wish they had been. The pigment was once considered more precious than gold and legend has it Michelangelo left an artwork unfinished because he couldn’t afford to buy enough. Centuries later, a young French artist named Yves Klein patented his own version of ultramarine and called it International Klein Blue (IKB). The thing is, IKB isn’t a colour per se because colour can’t be owned – it’s a paint-making process. With the help of Edouard Adam, a paint supplier, Yves developed a resin binder that, when combined with raw ultramarine pigment, formed a paint that retained the colour’s luminous intensity. While other binders dull the pigment, this process created a rich, velvety texture with hypnotising depth. From then on, Yves used IKB on everything from sea sponge sculptures to blue monochromes on canvas. Should you gaze at one, you’ll notice the absence of paint strokes – Yves preferred rollers, which eliminate hand gestures. IKB’s most infamous moment in its history was the making of the Anthropometry paintings. In front of an audience, naked women covered in ultramarine paint acted as human paint brushes while Yves directed them to imprint their bodies onto canvas. IKB has since been both imitated and celebrated in architecture and fashion. Today, you can buy a jar of the ultramarine pigment – now called Le Medium Adam25 – in Paris, at the very art supply shop founded by Edouard Adam’s grandfather. R
Around 1961, Yves created the Venus Bleue, a torso painted in IKB. An exhibition featuring his blue pigment, titled Pigment pur bleu, was held this year in London’s Lévy Gorvy gallery.

THE WORD “CULT” IS THROWN AROUND A LOT IN BEAUTY, but when it comes to Le Labo, any other word just seems… unworthy. Launched in 2006 by French co-founders Edouard (Eddie) Roschi and Fabrice Penot – in New York, no less – the artisanal fragrance brand disrupted the perfume industry back when it was still dominated by big-name designers and celebrities (Britney Spears’ Fantasy, anyone?). Le Labo’s points of difference? No advertising, no mass distribution and no assigned genders. There isn’t a “for him” or “la femme”, just a tight edit of beautiful fragrances to be enjoyed by all. “The gender thing never resonated for me,” Eddie says. “I know we’re all familiar with it and think of it as normal, but for someone who loves perfumery, it’s hard to understand why a fragrance would be specifically for men or women.” The Le Labo ethos translates to the brand’s design aesthetic, from the glass bottles to the custom labels and brown paper packaging. The boutiques are also designed to resemble laboratories rather than stuffy perfumeries. Take the Le Labo Williamsburg store, with its rows of labelled jars, hand basin and filing drawers. Encompassing an office space and cafe, the rough-hewn facade and interiors feel at home in the neighbourhood, which was scouted by the founders who like to choose locations they connect with. 5 questions with Fabrice Penot and Eddie Roschi 1. When it comes to design, what philosophy resonates with you? Eddie: Having been to Japan quite a few times, we’re sensitive to the wabi-sabi philosophy, which revolves around inding beauty in the art of eternal movement, in nature and in imperfection. 2. So, would you say you have a Japanese style? Eddie: No, but when you walk into the lab, all of the authentic, vintage, lived-in, soulful objects are there for meaning. They speak to us. 3. How do you choose the locations for your stores? Fabrice: They always have to accurately share our story, inside and out. It all starts with inding a spot that feels right and resonates with our lifestyle. Most of the time we have this gut feeling on side streets off the beaten path, where there are small shops, good restaurants, kind locals, a low-key vibe in the air and a certain je ne sais quoi. 4. How do you create unique fragrances in such a looded market? Fabrice: We leave a part of ourselves in every perfume we create – I think people can feel that. There is a mystical element to that, which the “smart, reasonable business people” in charge of traditional brands can’t really grasp. This soul is our competitive advantage. 5. You’ve said that the purpose of Le Labo is “to make life more beautiful”. How do you still do that ater 12 years? Fabrice: With a reverence for handmade products. All our perfumes are made one by one, our candles are hand-poured in Mississippi and our concrete candle vessels are made by cratsmen in California. THE SAYING OPPOSITES ATTRACT certainly rings true for Belgian creative couple Fien Muller and Hannes Van Severen. Fien is a photographer from a family of antique collectors. Hannes, a sculptor, comes from a prestigious line of painters and designers. She has a knack for making odd elements feel harmonious; he turns the familiar into the absurd. Together, they are Muller Van Severen, a furniture collection of multi-use bookcases, chairs, tables and lamps that tread the line between functional design and art. Made from industrial materials in shades inspired by colour-coded chopping boards, the furniture began as an experiment, but has cemented their place in both the design and art worlds. Hannes admits there’s a hint of wit about their minimalist collections. “I like giving everyday objects a little twist so they become strange. Our work has straight lines, but what happens within those lines is playful.” Their home, just outside of Ghent in Belgium, has lots of space for their two daughters, along with a shed that they turned into a workshop. “We’ve managed to create our own little world,” Hannes says. “It’s the perfect combination of the studio and house. Of work and life. A place to sketch out and test ideas and grow as a family.” The couple relish the process of welding the prototypes (it’s just like sculpting) and past designs furnish their home, which Hannes renovated before they moved in. Each room is decorated with artworks made by loved ones, like a visual history of the couple’s family and friendships, and is further evidence that great design runs through their DNA. Not limited to large furniture pieces, they’re setting their sights on creating new objects – a cutlery set and salt and pepper mills that marry the everyday with the sculptural. A perfect match, you might say. A

1. What are the beneits of working as a duo? Having the ability to enter into a dialogue at any given time. 2. What trait do you most admire in each other? Creativity. 3. How do you inspire each other creatively? By living together. 4. What is your most treasured possession? Our children, although we can’t really claim them as our property. 5. What do you always need with you in the studio? A pencil and paper. 6. What music do you listen to when you work? The local radio. 7. What part of the design process do you enjoy most? Creating 3D representations of our objects for the irst time. 8. Which of your collections are you most proud of? Future Primitives. It’s become a translation of how we would like to encourage the “users” to communicate with one another. We consider it to be a poetic wink. 9. What designers do you admire? German-based industrial designer Konstantin Grcic. His approach to furniture design is different and innovative. The end result may not always align with our vision, but the way he creates is extremely interesting. 10. What’s the best advice you’ve received? start with a hero piece

It took travel photographer Kara Rosenlund a year to transform what began as an empty concrete shell into the warm and inviting creative space you see before you today. Following the same rules that she uses when decorating at home, Kara first chose her hero pieces – one show-stopping item for each room that catches the eye as soon as you enter – followed by the “secondary” items in complementary tones and textures. In this room, the hero is the vintage chair salvaged from an op-shop. “This piece has been in my life for a long time,” she says. “I had been eyeing off expensive chairs with woven elements, then I remembered I had this chair! I stained it, had it upholstered and asked a local craftsman to weave the back of the chair in cane.” A

add an abundance of natural elements To soften all the hard surfaces – porcelain tiles on the floors (laid by her dad), timber and travertine tabletops and raw concrete walls – Kara introduced natural elements in every room. “The imperfect textures of nature bring a sense of comfort to man-made interiors,” she says. “You’re essentially bringing life indoors.” Vases of seasonal flowers and foliage add visual interest to the space, while shells and coral are a personal source of fascination. “Recently, I’ve become obsessed with Australian seashells,” she says. “All the colours, shapes and patterns – so simple, yet so complex in their beauty.”

Soft touch In Kara’s office upstairs, heavy flax linen curtains filter the light while a cowhide rug adds softness underfoot and helps define the space. “I love cowhide because it’s a natural by-product and long-lasting when you have lots of foot traffic.” A

Simple forms “I wanted to have something special on the wall near where I sit,” Kara says of this limited-edition print, titled Seashell Still Life. “It makes me feel happy and calm when I glance at it throughout the day.”
mix texture and tone When working with a neutral colour palette, it’s important to use a range of textures to create layers of warmth. In Kara’s case, woven baskets, linen furnishings and timber accents all tick this box. “I love using Tasmanian oak when framing my photography pieces,” she says, “as timber lends itself to so many different scenarios and colour schemes.” In the entryway (opposite), the touchable linen RD sofa by Douglas & Bec, wicker basket and metallic lamp base balance out the coolness of the tiles and blunt lines of the travertine table, while elsewhere, little vignettes of curiosities collected during Kara’s travels conjure up happy memories, and specially selected artworks bring endless enjoyment while she works away at her desk.

All in harmony Kara chose hexagonal tiles from Beaumont Tiles to make the entry space feel larger than it is. Early riser “I love coming here every day,” Kara says of her light-filled second home. “I usually arrive early, turn up the music and head straight upstairs to get things happening for the day ahead.”
everything in its place Part of Kara’s morning ritual is to head upstairs to the studio kitchen and make herself a pot of herbal tea, and she’s made certain that she’ll never have to hunt around for a cup. “I brought in lots of favourite pieces from home to help the kitchen feel familiar,” Kara says. “They’re all things that I source from antique shops and second-hand stores.” Every item is made from traditional materials, like ceramic jugs, vintage cutlery, enamel mugs and wooden cutting boards, and they all work together thanks to a simple formula. “It looks abundant, but when you break it down, I’m just using the same shape or colour over and over again,” she explains. Simple shelving, wall hooks and a charming linen skirt under the bench also keep the space neat and orderly. R

NEVER UNDERESTIMATE THE POWER OF PERSUASION. While homeowner Cathrine de Lichtenberg was instantly sold on this somewhat tired old villa in the heart of Frederiksberg, Denmark, her husband Anders took some convincing. But armed with plans for a complete layout overhaul and some modern updates, she quickly made her case for what would become the contemporary home of their dreams, and the couple bought the property in 2017. OLD MEETS NEW A massive conversion saw the kitchen become the bathroom, and living areas morph into the kitchen and bedroom. Original features, such as built-in corner cabinets, parquet flooring and marble windowsills all serve as a reminder of the home’s stately past, whereas new windows, doors and a minimal, symmetrical kitchen by Unoform provide a contemporary contrast. “There’s a certain beauty in keeping some of the bygone elements,” Cathrine says. “Our challenge was to build a bridge between old and new.” KEEP IT FRESH For the interiors, Cathrine’s carefully chosen colour palette of pale pink, coral, yellow, orange and deep blue can be seen in the walls, curtains, furniture and decorative accents. Modern artworks sit alongside vintage chairs and shaggy Moroccan boucherouite rugs. And with new finds and impulses, this picture is always evolving. “I’m easily excited, constantly change my mind and am forever looking to new trends,” Cathrine smiles. R

Worth the wait During the renovation, Cathrine and Anders lived without windows for eight whole months! The new ones have been framed with curtains from &Drape, with the blue Eilersen sofa and ricepaper lamp by Isamu Noguchi adding some designer air.

who lives here? Lisa Barnett, her husband Neil, their sons Will, 18, and Sam, 15, and Maisy the staffordshire bull terrier.
WHETHER OR NOT YOU BELIEVE IN FATE, the story of how Lisa Barnett came to buy her Sydney home on the Northern Beaches seems predetermined. “I grew up only a street away from the house. In fact, my parents’ friends owned it for many years,” Lisa says. As a young girl, she’d admired the property’s architecture and front garden, so when it came up for sale four years ago, she had to see it. Having lived in London for 20 years, Lisa couldn’t resist the distant views of the Central Coast, not to mention the visits by previous owners who spoke of happy memories made there. “That’s why the house feels like it does,” she explains. “I think it’s full of the love of all its past owners.” IT’S ONLY NATURAL Wattyl Interior Design i.d “White” paint was used throughout to create a blank canvas for colourful pieces. “The crisp freshness of white brightens any space,” Lisa adds. Large windows offer glimpses of the gardens, and mirrors are placed to bounce sunlight around. To add warmth, carpet woven from New Zealand wool was used in the bedrooms, while rugs are layered on top of the original wood flooring. Oceanic shades of green and blue, which Lisa loves in the Australian light, are present in the upholstered furniture and art, and many of the materials used are natural, recycled or vintage. DREAM TEAM Lisa worked with interior designer Kate Manning to make the home her own, knocking down a wall, redesigning the kitchen and lovingly decorating each room. “I think you can tell when someone has taken their time,” Lisa says. “It’s taken me three years to get this far and it’s still evolving.” This patience is what gives her home soul – she waits for pieces she feels connected to, much like the home itself. “It would be great if one day in the future, my boys bring their grandchildren to this place and tell of their memories here.” R Pièce de résistance The Arabescato marble in the kitchen was chosen for its warmth. This depth is complemented by the island’s Treasury Bronze cabinets and doors painted in Murobond “Raw Earth”. The tapware is from the Brodware “Yokato” range and there’s plenty of space to pull up a Thonet cane seat and eat in. A

how to use accent colour If you’re drawn to a particular hue but don’t want to fully commit, do as Lisa has and layer the colour over a neutral palette. “I love green and have used green as a neutral in every house we have owned over the years. I find it a really relaxing colour,” she says. Using accent pieces to introduce colour makes it easy to change the look of a room whenever you feel like it. As a starting point, she selected artworks and vintage fabrics, like this headboard and picture on the wall.

HAVE YOU EVER WALKED INTO YOUR local Priceline and thought, “Wow, this has the potential to be my dream house”? Didn’t think so. But that’s exactly what architects Mar Vicens Fuster and Ask Anker Aistrup did when they turned an old pharmacy into a minimalist’s mecca. A PLACE TO RETREAT Located in the heart of Kreuzberg, Berlin, a district renowned for its vibrancy, night life and achingly cool factor, the 180-square-metre space lived its former life as a pharmaceutical supermarket. But where others would just see harsh fluoro lights and ageing lino, the creative couple behind the studio Mar Plus Ask saw potential in the impressive four metre-high ceilings, the central location and the private garden. With the intention of creating a calming space in what can be described as an intense city, they began a radical transformation. TEXTURE AND TONE Capturing serenity with a neutral palette of grey, beige and white, Mar and Ask created interest with the use of textural elements in natural tones, such as copper, brass, leather, oak and even a hint of marble. In this space, it’s precisely the lack of colour that makes it so interesting, proving that bold interiors choices needn’t always mean a coloured feature wall. “We believe that you should only stand out when you have something important to say – otherwise you produce noise,” Mar says. Polished concrete floors sprawl through the home, complemented by walls in a stucco-style render that gives a cloudy, warm texture despite the colourway. The decor throughout is considered and minimal, with clean lines and a focus on natural textures and lasting design – a nod to Mar’s Spanish and Ask’s Danish backgrounds. R

A wood idea The oak windows were designed by the duo and made in Denmark; the table was crafted from leftover wood from the construction. Family ties In the living area (opposite), a pair of vintage safari chairs, a gift from Ask’s father, provide contrast yet sit in harmony with a velvet Arne Jacobsen & Flemming Lassen “Mayor” sofa, the couple’s first furniture purchase. Room with a view Maximising the available space, the couple used the window niche to affix a small desk – the perfect place to enjoy a view of the lush urban garden while reading or writing. Curtains, which hang flush from the ceiling, blend seamlessly with the neutral walls.

Buy all of the cushions! Seriously, this is one of the cheapest and simplest ways to brighten up a room, and they’re comfortable too. And if you happen to spill coffee on one, or just see one that you like better, it’s easy enough to buy new covers to slip over the existing inserts.
Treat yourself to a bunch of flowers. You can change them as often as the inclination strikes and they come with numerous moodboosting benefits. Choose seasonal varieties to get more bang for your buck and use greenery from the garden to bulk out your arrangements.

All about the timing Before you make a start, it’s important to research the weather in your area. Paint won’t adhere to moist surfaces, so be sure to select a dry time of year when there is little chance of rain and low humidity. Preparation is key When it comes to DIY projects, a little prep goes a long way to creating a far better outcome. Paint doesn’t adhere very well to dirty or rough surfaces, so use a broom to get rid of cobwebs and leaves around gutters and windowsills, then wash all surfaces with a pressure hose. Repair any damaged areas, scrape off flaking paint and use exterior caulk to fill any gaps between the house and trim, and around doors and windows.
Protect the surrounds Cover the ground and any surrounding grass or plants with a drop sheet, and use plastic sheets and painter’s tape to seal doors, windows and light fixtures. Move or cover any outdoor furniture, barbecues, sports equipment, etc. Start from the top Paint drips are inevitable, but if you start at the top and work your way down, you can cover up any mishaps as you go, resulting in a much more seamless finish. Start by painting the gutters, then the fascias, eaves and walls. Finish with the smaller details, like the trims, window frames and doors. Leave windows and doors open when painting so they’re not painted shut. Safety note Buy or hire a ladder with a platform, so you can stand safely while painting up high. A tool belt will free your hands for climbing. R

A 1920s home is given a sympathetic makeover in just four months, thanks to a clear vision and a stroke of luck with timing IT WAS AN INSTANT ATTRACTION when Gillian and Joel first saw their home on auction day. “My husband had only seen two of the rooms when we agreed to buy it!” Gillian says. Wooed by the location and Edwardian features of the 1920s home, the couple knew they had to have it. “While it clearly needed some love, the fairytale front, stained-glass windows, skylights and large interior spaces were impossible not to fall in love with,” Gillian explains. “We knew we could grow a very happy family here.” Settling on the house in March 2017, and now with a two-month-old baby on the scene, Gillian and Joel knew they had to hit the ground running and begin their renovations. They managed to lock in their trades, who, fortuitously, all had openings and were ready to start straightaway. They also engaged interior architect Georgia Ezra to help bring their vision to life. “We wanted to create a style that reflected our personalities and a home that couldn’t be confused with any other,” Gillian says. “Georgia enabled us to be bold and adventurous when we would have otherwise been afraid to.” Like any renovation, the project had its challenges. Here, they share the valuable lessons they learnt through their experience. A

MIX OLD WITH NEW Whether it’s high-end pieces or secondhand finds on Gumtree, mixing old with new creates a more unique and homely feel. “We decided on the things that were important to splurge on and the items that weren’t,” Gillian explains. “For example, our beautiful mahogany table was purchased on Gumtree and restored, and we found a fabulous wood furniture maker who made our visions of an entry bench and coffee table a reality. So that meant we could then splurge on some key pieces of furniture, lighting and tiles.”
SOME THINGS CAN WAIT Two become one The bathroom was originally two rooms, so a wall was removed and the ceilings raised. Everything was custom-designed by Studio Ezra.
After months – often years – of waiting for your dream house, it can be so tempting to go out and buy the best of everything to fill your new home, but don’t do it at the
expense of your finishings. “Many things, such as furniture and some fixtures and fittings, can be bought later, but things like tiles and plumbing are not so easily changed,” Gillian says. “It’s often best to bite the bullet and make the choice now, even if it hurts the wallet!”
KEEP ON GOOD TERMS “Our amazing team of trades and interior architect are the real reason we had such a fantastic result,” Gillian admits. And it really does pay to choose trades you get along with. “Older houses will continue to shift after the renovation, so make sure you have a good relationship with your builder, painter and cabinetmaker so they can come back after a month or two to touch up any areas that need fixing following any movement.” A real living

DON’T BE AFRAID TO SPEAK UP When dealing with the experts, have the confidence to voice any concerns you might have. “Don’t forget that you will be the one living in the house for years to come, so you need to be happy,” Gillian advises. “There were some things we were told we could not do that we insisted on, and I thank myself every day for standing my ground. However, there are also some things that we trusted the experts on and I now regret – sometimes your gut just knows best.” And when it comes to the design decisions between you and your partner? Gillian has some sage advice: “Your wife knows best so just say yes!” Wise words, indeed.

When did you meet Hugo? My parents’ neighbours have always had golden retrievers. When they had puppies I went over every day to play with the pups. The littlest had to be fed with a bottle – that was Hugo. I fell in love instantly. How has his companionship improved your wellbeing? Everything is better with Hugo around. He is a sweetheart, he’s very cuddly and loves the beach almost more than I do, so we spend a lot of time there together. What is a day in the life of Hugo like? It’s very simple – eat, beach, sleep and repeat. And he’s always by my side, whether at the beach or at my feet in the studio. Who would Hugo represent if he were an art form? I think he’d be a sculpture of the Greek god of wine, Dionysus. He is just so handsome. I really should have tried to get him into toilet paper ads or modelling dog accessories. Why the love of the beach? Neither of us can live without it. He is a total puppy at the beach. It’s so wild. He gets crazy eyes and catches waves over and over and swims out to all the surfers. What is Hugo’s oddest habit? He sleeps in yoga poses – on his back with his front legs twisted to one side and his back legs to the other. It looks so uncomfortable. R real living

creamy mozzarella, tomatoes and pickled melon Serves 4 Prep time + cooking time 45 mins, plus cooling and standing time You’ll need to make the pickled melon at least 4 hours ahead. Store tomatoes in a fruit bowl, or on a sunny windowsill if they need further ripening, rather than in the fridge which will dull the flavour. 1¼ cups (275g) white (granulated) sugar 2¼ cups (560ml) water ¾ cup (180ml) white wine vinegar 1½ tsp sea salt flakes 1 tsp dried chilli flakes
½ large honeydew melon (850g) 1 cup fresh basil leaves 2 tsp olive oil, plus 4 tbsp extra 8 red and yellow heirloom tomatoes (1.2kg), sliced thickly 2 x 110g balls buffalo mozzarella, torn
30 Combine sugar, water, vinegar, 1 tsp salt and chilli in a small saucepan. Bring to the boil over medium-high heat, stirring to dissolve sugar and salt. Cool until just warm. 2 Scoop seeds from melon; reserve. Cut skin away from flesh and discard; cut melon into 5mm slices. 3 Place melon and three-quarters of the basil in a 1.5L (6 cup) capacity jar. Pour over the just warm pickling liquid, ensuring melon is completely submerged. Seal and refrigerate for at least 4 hours or overnight to pickle. 4 Preheat oven to 220°C/425°F. Grease and line a small oven tray. 5 Place reserved melon seeds in a fine sieve, rinse under warm, running tap water and rub seeds against sieve mesh to loosen and separate stringy fibres. Pop the seeds in a saucepan and cover with water. Bring to the boil; cook for 10 minutes. Drain, pat dry and cool. 6 Combine seeds, olive oil and remaining salt on the oven tray. Bake for 20 minutes or until golden. 7 To serve, divide tomato slices among four small plates. Drizzle each plate with 1 tbsp extra virgin olive oil and season to taste. Top with the drained pickled melon, mozzarella, remaining basil leaves and toasted melon seeds.

TIPS Melon seeds are rich in B vitamins, like thiamine, niacin, folate and the minerals magnesium, potassium, iron, zinc, phosphorus and copper. Add the seeds to the salad at the very last minute to ensure they keep their crunch. FOOD SWAPS Substitute any of the following cheeses for buffalo mozzarella: cow’s milk mozzarella; soft goat’s cheese; or firm ricotta. KEEPS Leftover seeds will keep in an airtight container for up to one week. Pickled melon will keep, refrigerated, for up to one month.

lentil, pear and pickled fennel salad with goat’s cheese Serves 4 Prep time + cooking time 30 minutes Good flavour combinations never go out of fashion. Earthy lentils are a fabulous base for sweet pears and walnuts, all cut by the lactic tang of goat’s cheese and herby freshness. 1 cup (200g) French-style green lentils 3 cups (750ml) cold water cup (80ml) extra virgin olive oil ¼ cup fresh flat-leaf parsley, chopped coarsely 2 medium beurre bosc pears (480g), sliced thinly lengthways 1 cup (100g) walnuts, roasted 150g soft goat’s cheese, crumbled ¼ cup fresh mint leaves, chopped coarsely ½ tsp dried chilli flakes PICKLED FENNEL 1 large fennel bulb (550g) 1 tbsp sea salt flakes cup (80ml) white wine vinegar 2 tsp caster (superfine) sugar Place lentils and water in a medium saucepan; bring to the boil. Reduce heat to low; cook, partially covered, 1
for 12 minutes or until lentils are tender and water is absorbed. Remove from heat. Add 1 tbsp oil; season and cool. Stir in parsley. 2 PICKLED FENNEL Trim ends from fennel, reserving 2 tbsp of the fronds. Cut fennel bulb in half lengthways. Using a mandoline, V-slicer or sharp knife, slice very thinly. Place in a colander with 2 tsp sea salt; stand for 10 minutes. Rinse off the salt, then squeeze out excess water. Transfer to a large bowl. Combine remaining salt, vinegar and sugar in a jug, stirring to dissolve the salt and sugar. Pour over fennel; toss gently. Cover and refrigerate until needed. 3 Preheat a frying pan over high heat. Toss pear slices with 1 tbsp of the olive oil in a large bowl; season with freshly ground black pepper. Cook pear slices for 3 minutes each side, or until browned. 4 Drain pickled fennel and reserve pickling liquid. To serve, layer pear slices, lentils and pickled fennel on a platter. Sprinkle with walnuts, cheese, mint, chilli flakes and reserved fennel fronds. Drizzle with pickling liquid and remaining oil. Season to taste. A real living

mango cheesecake tart Serves 6 Prep time + cooking time 1 hour, plus refrigeration time 1½ cups (225g) plain (all-purpose) flour 2 tbsp caster (superfine) sugar, plus ¼ cup extra 75g butter 500g cream cheese cup (80ml) milk 2 medium mangoes (860g) ¼ cup (20g) coconut flakes, toasted (see tips) PALM SUGAR SYRUP ½ cup (135g) shaved palm sugar 2 tbsp lime juice Process flour, sugar, butter and 125g cream cheese until a dough starts to form. Knead dough on a lightly floured surface until just combined. Wrap in plastic wrap; refrigerate for 30 minutes. 2 Roll pastry between two lightly floured sheets of baking paper until large enough to line an 11cm x 35cm loosebased rectangular tart tin. Lift pastry into pan, ease into base and sides and trim edges. Prick base with a fork. Refrigerate for 30 minutes. 3 Line tart case with baking paper, fill with dried beans or rice and bake for 15 minutes. Remove paper and beans; bake for a further 15 minutes or until pastry is golden. Cool. 4 Meanwhile, process milk, extra sugar and remaining cream cheese until smooth. Fill cooled tart case with cream cheese mixture, spreading evenly. 5 PALM SUGAR SYRUP Combine palm sugar and juice in a small saucepan over low heat and stir until sugar dissolves. Cool. 6 Cut cheeks from mangoes and slice into thin wedges, leaving the skin on if edible. Arrange mango slices on the tart. Serve tart sprinkled with coconut and drizzled with palm sugar syrup. 1

TIPS Some varieties of mangoes, such as Honey Gold, have been bred to have edible skins. Cut flesh from around the mango stone and freeze for smoothies. Place coconut flakes in the cold oven while it’s preheating and toast for 6 minutes, stirring occasionally, until tender.

SAN ANTONIO BAY’S SKYLINE IS AN UNFORGETTABLE MIRAGE of tourist-packed terrace bars, bronzed bodies on sunbeds and show-stopping sunsets. But strolling past the Paradiso Ibiza Art Hotel in the heart of the city, you’d be forgiven for thinking you were in Miami. Designed by Spanish studio Ilmiodesign and opened in June this year, the hotel is a stylistic homage to the Miami Modern ‘MiMo’ architecture movement, from the pastel pink sails to the neon-lit balconies. Art is the hotel’s middle name and within its fancy flamingo-hued facade, a creative revolution is brewing. More than a place to stay, Paradiso is a curator of events and exhibitions, an artists’ residence, a patron and gallery with a revolving program, which means every guest’s visit is a unique cultural experience. ART DECO-DENT Each of the hotel’s 60 rooms – which sleep up to five people – are decorated with neon lighting, colourful furniture reminiscent of the ’70s and carpet tiles in turquoise, yellow and pink. Mosaic tiles in custom colours made by Vitrogres are featured throughout the hotel and pool. Inspired by their Italian heritage and the Italian design firm Archizoom, Ilmiodesign architect Michele Corbani and industrial designer Andrea Spada worked with furniture manufacturer iSimar to create the sofas, armchairs and tables. CULTURE CLUB While there’s plenty to do around San Antonio – nestled on the south west coast of Ibiza, it’s famous for its calm beaches, natural harbour, palm-lined promenade and nightlife – Paradiso is a buzzing hub of activity you may never want to leave. As well as the Adda Gallery, the venue has a tattoo parlour, live music and during summer, it runs Cinerama Dorado, an outdoor cinema showing cult films. Hungry for more? Dine poolside at the hotel’s restaurant, Andy’s, with a cocktail in hand. After all, this is Ibiza. A
