True confession: our annual look at decorating with colour is one of my favourite issues of the year. I’m always astounded by how the designers expertly wield colour like artists, which is really what they are, their canvases being their clients’ homes. If you are at all colour shy but secretly want to break out of beige, look closely at the lessons these designers use. Cori Halpern is a big believer in how colour makes us happy. In “Bye-Bye Beige” (page 34), she uses pinks and blues and even a touch of yellow to enliven a century-old home. Jean Stéphane Beauchamp was also tasked with reviving a turn-of-the-20th-century home (“True to Character,” page 80). He used four shades of blue in the kitchen alone! Both designers know the value of artwork to spark a palette or at least enforce it. Reena Sotropa and Alanna Dunn had quite the art collection to work with when they designed an extraordinary space for a Calgary client (“Vegan Verve,” page 52). Besides creating a seamless, luxurious, boldly colourful home, they worked only with vegan-friendly materials – in the entire 10,000-square-foot space. It’s such an inspiring story! Now you see why I love the colour issue. Page after page is a feast for colour-starved eyes! As usual, design lessons abound. In our interview with Montreal design darlings Les Ensembliers (page 40), for instance, we hear their solution for those still a bit colour shy – wallpaper on panels. If it’s too much, change the pattern, colour, or take them down completely. But I have a feeling we’re all ready for colour. So be bold and have fun. It won’t just change your rooms, it’ll change your mood. Who’s ready for a walk on the wild side?

Mango Cream 2 cups cubed fresh mango ½ cup granulated sugar 1 tbsp cornstarch 4 large egg yolks 1½ tsp grated lime zest 2 tbsp lime juice ¼ cup cold unsalted butter, cubed Shortbread Cookies 1 cup unsalted butter, softened ¾ cup icing sugar ½ tsp vanilla ¼ tsp salt 2 cups all-purpose ﬂour

DIRECTIONS Mango Cream In food processor or blender, purée mango. In heatproof bowl, whisk together sugar and cornstarch. Add mango purée, egg yolks, lime zest and juice; whisk to combine. Set bowl over saucepan of hot (not boiling) water; whisk mango mixture constantly until thick enough to coat back of spoon, 10 to 12 minutes. Remove from heat. Add butter, 1 cube at a time, whisking after each addition, until melted. Strain mango mixture through ﬁne sieve placed over bowl; discard pulp. Place plastic wrap directly on surface of mixture and refrigerate until mango cream is cold, about 2 hours. (Make-ahead: Can be stored in airtight container and refrigerated for up to 1 week or frozen for up to 1 month.)

Shortbread Cookies Meanwhile, beat together butter, icing sugar, vanilla and salt using electric mixer on medium speed until light and fluffy. Beat in flour until mixture comes together to form dough. Roll out dough between parchment or waxed paper to Ð-inch thickness (if dough is too crumbly, add water, 1 tbsp at a time). Freeze until dough is firm, about 10 minutes. Preheat oven to 350°F. Line 2 rimless baking sheets with parchment paper. Using 2- to 4-inch-long egg-shaped or oval cookie cutter, cut out shapes, rerolling scraps as necessary. Using 1-inch round cookie cutter, cut holes in centres of half the cookies, rerolling cutouts as necessary. Arrange shapes 2 inches apart on prepared baking sheets. Bake 1 sheet at a time, until edges of cookies are lightly browned, 10 to 12 minutes. Let cool on baking sheets for 10 minutes; transfer cookies directly to rack to cool completely. (Makeahead: Can be stored in airtight container and frozen for up to 2 weeks. Thaw completely before continuing with recipe.) Flip cookies without holes and spread with an even layer of Mango Cream. Sprinkle icing sugar on cookies with holes and place on cream-topped cookies, pressing lightly to adhere.

Love colour, but feel overwhelmed or a bit commitmentphobic at the thought of bringing it home? No worries! Here’s how to experiment with colour and pattern for rooms that excite, surprise and energize. TEXT KATHLEEN DORE

TEST PATTERNS Wallpaper has had a good run. It’s said to have originated in China’s Qin dynasty (approximately 221 to 206 BC). Although it has had its ups and downs over the last 50 years, wallpaper’s popularity has thankfully rebounded. It gives you the chance to test out living with more pattern and colour without making a long-term commitment to either. Applying a bold pattern above neutral-painted wainscotting (opposite) allows you to experiment without overwhelming a space. As well, leaving some white space is a fresher, more modern application than papering all four walls.

• WHY TRY IT? Wallpaper transforms a room in an instant. For those accustomed to living in neutral spaces, peelable wall decals let you test the waters. A thick paper also hides defects in the wall’s ﬁnish.

• HOW TO USE IT? Bring in colour and pattern by papering panels (above). Create “frames” with trim and apply sections of a mural within the frames; think of it as similar to how an artist paints a diptych or triptych. STYLEATHOME.COM APRIL/MAY 2022

PATTERN PLAY Scrutinize the work of any designer whose colourful rooms you admire and you’ll likely ﬁnd a conﬁdent expertise in the way they combine patterns. They’ll use textiles – upholstery, window dressings, area rugs and more – to build interest. Often a tight palette will keep things cohesive, but look closely and you might notice that layers are built by combining patterns of different scales in tandem with blocks of solid colour. The solids are as much a part of the overall effect as the patterns. Elements like white walls or a blue chair are foundational colours upon which to build pattern.

• WHY TRY IT? Patterns are designed by textile artists, so each one (whether a fabric or a rug) is a successful colour combo. That makes them a failsafe way to add colours that look great together.

• HOW TO USE IT? Pick one or more coordina-

BLOCK PARTY Colour blocking has a ﬁne pedigree. Pioneering abstract artist Piet Mondrian (1872–1944) was reaching for a way to express high ideals beyond the realm of realism with his now-familiar works of red, yellow, blue and white blocks of colour. Painting our bookcases is hardly high art, but there’s an undeniable energy and power in bold, graphic blocks of colour. A century after Mondrian’s groundbreaking work emerged, it still feels modern and edgy. Any colours you love could be blocked on a wall or portion of a wall, in a niche area, on an architectural feature – almost anywhere, really! – but contrasting colours make the most impact and are truer to historical colour-block applications.

very home should have at least one room with wallpaper. A design superhero, wallpaper can completely transform the mood of a space and bring a ho-hum spot and its furnishings to life. Follow along, and I’ll show you tips and tricks on how to use wallpaper to layer piles of personal style into any space.

Fun with Wallpaper For me, wallpaper is the most fun and sophisticated decorating device around. If you want to add colour, pattern, movement, depth and texture (all that good design stuff!) to a space, wallpaper it. In a large living

room or entry, wallpaper makes a bold statement. Plus, neutral furniture will take on an entirely different personality depending on what pattern you choose. For example, the teal Farrow & Ball floral wallpaper (above) makes the wood floors and concrete fireplace feel vibrant and summery fresh. Tone-on-tone neutral wallpapers, on the other hand, will feel relaxed and soothing. If wallpaper in a big space makes your palms sweat, have no fear. You can still enjoy wallpaper’s power. I find there’s something so delightfully surprising about opening a door or rounding a corner to find wallpaper in an unexpected small space like a powder room, laundry room or walk-in closet. For an even smaller dose of fun, paper a tiny nook or niche like a bookcase or the interior of a glass-door cabinet – the beautiful pattern will elevate white dishes, unify random collections and make sparse shelves feel full.

Fab & Functional More than just a decorative element, wallpaper can solve design challenges, too. Use it behind a bench or desk to deﬁne an entry or ofﬁce nook in an open-concept home. Wallpaper can also be used to customize furniture. For a luxurious look, wrap the tabletop and legs of an off-the-rack console or coffee table in a textured grasscloth or fabric wallcovering. As far as advancements in wallpaper go, there have been major ones that are both practical and pretty. High-performance wallcoverings stand up to scrubbing and are waterproof (great for bathrooms!), while acoustical wallpapers will dampen noise. Check out yorkwallcoverings.com. DECORATING TIPS • No matter how busy the wallpaper, furniture and accessories in solid colours will always work with it. • The higher the contrast, the greater the pop – white accessories will especially stand out against a saturated colour. • What to do with baseboards and trim? Unless you have white in your wallpaper, bright white trim can have a racing-stripe effect, so consider painting baseboards and trim in off-white, beige or grey. • Don’t be afraid to mix patterns. Repeat shades of the same colour and you won’t go wrong.

DOS & DON’TS • Do use the right paper for the right room: metallics will reflect light and are great for moody spaces, while vibrant colour and pattern work well in spaces with plenty of natural light. • Don’t overestimate your wallpapering skills, as complex patterns can be hard to match, especially on uneven walls. Consider hiring a skilled installer.

Pink Power! When you walk into the dining room, it’s kapow! The vibrancy of the artwork sets a tone of delight. At mealtime, chairs in black performance fabric are drawn up to a silky-smooth walnut table. “You can see that the rug has some of the same hues as the carpet in the living room, so there’s visual continuity from room to room, but it’s subtle,” says Cori. The chandelier is sculptural but airy. “I didn’t want to block the deep pinks in that incredible painting.”

Tonal Value Cori selected a two-tone wallpaper for the dining room and finished the custom millwork in two coordinating shades of stone grey. “The contrast is quiet, but it brings a real lift to the displayed objects, including the client’s pottery,” she says. Above the counter – so handy for mealtime serving – a pair of handsome sconces flank the striking painting and echo the brass accents in the room. “You’re probably wondering about that row of brass knobs [shown below],” says Cori. “I didn’t want to disrupt the beauty of the wallpaper, so my intrepid contractor installed these brass light switches that I sourced. They’re so beautiful and so well suited to the age of the house.”

ave I always loved colour? Well, I did grow up in the ’80s, so…yes!” laughs designer Cori Halpern. Which explains why, upon taking on a top-to-bottom, beginning-to-end renovation of a heritage Arts and Crafts family home, she said sayonara to its 16-year-old beige interior. “Let’s face it. Nobody ever says their favourite colour is beige,” says Cori. “I truly believe that deep down everyone loves colour.” That includes these clients, whose home now radiates joy with its brilliant pinks, rich ochres and layers of blue. “And what’s really great is that the jumping-off point for the palette was a painting and a rug, both owned by the clients,” says Cori, who ﬁrmly believes that if you’re looking for a reason to bring colour home, you probably already have a pillow or piece of art that speaks to you. And if you’re looking for a second reason, there’s this: “Colour isn’t just something we see. Maxime Vandal & Richard Ouellette The duo behind Les Ensembliers share the secrets to their timeless signature style. TEXT KARL LOHNES

Designer Richard Ouellette (above, right) and architect Maxime Vandal are the principals behind Quebec-based Les Ensembliers – a multidisciplinary ﬁrm with architectural, design and construction services. Their work around the world is characteristic of a contemporary style that incorporates timeless elements for homes that feel fresh and new. We caught up with them to ﬁnd out more about their design philosophy and share tips on how to bring their lively, on-point style into our homes.

KL: What would you say are your biggest design influences?

RO: My background is fashion, so I take my inﬂuences from a texture, colour, fabric and pattern point of view. MV: As an architect, I see things from a scale, proportion and style point of view. Once those are down and right, anything can work!

KL: What are signature decor elements we can add to our home to make it look like Les Ensembliers has helped us decorate?

RO: There are a few decorating applications that consistently show up in our clients’ homes. First is wallpaper. You can never go wrong using a grasscloth wallpaper in a bedroom for subtle warmth and texture. If more adventurous, choose a favourite wild printed paper and put it on all four walls – it will wrap you in pattern and make the room feel more intimate. If in a rental or you don’t want to commit to adhering wallpaper to your walls,

KL: You mix and match modern and traditional very well. Is there an equation in that mix that helps balance a room?

RO: We love the whole spectrum of design

hang large ﬂoor-to-ceiling panels of your favourite wallpaper. They can easily be removed when you get tired of the print, or you can take them with you if you move. Another element is mixing old and new. We love to use something our client has (like an old dining table) and pair it with something new (like chairs) to add a sense of history to a client’s home. Very modern chairs are a great way to give an old table new design life. You can also replace an old chandelier with a modern Noguchi paper lantern or a clean-lined, modern light ﬁxture. Use the older chandelier in a stairwell for unexpected impact. Finally, large sisal rugs. Place a large sisal rug – a large one, never a small rug – in your room. You should see 12 to 15 inches of wood around the perimeter of the room. Rugs should be big to make an impact and anchor your room. If you have an antique rug that’s tucked away in the attic, take it out and place it on an angle in your living room over the sisal. Sisal rugs are always in style. They are summer home favourites in all our projects and are amazing to layer other rugs on all year round, too.

I would say I love the unexpected mix in a room, and I can’t imagine living in a room without a balance of those elements. A successful room requires a mix of clean-lined furniture, heirloom pieces, bold fabric, soft textures, unexpected pieces, and most deﬁnitely a contemporary piece of art! To make a room sing, it needs to look like it’s been decorated over time, it needs patina and soul, and that soul usually comes from meaningful elements like time-worn pieces and the odd antique. I would say you need at least 60 per cent modern, [which makes] the traditional elements come out stronger and louder.

KL: How can someone personalize a basicKL: Is there a new paint colour you hope

Light fixtures are an easy way to create a unique decorating detail in each room, while the fireplace will make an architectural statement that is all your own.

that matter, in Benjamin Moore Oxford White. It is the best ﬁrst layer of a house…timeless and always beautiful. But I also ﬁnd myself drawn to hues of red, from paprika to blush. It is the warmth and natural earthy tones of these colours that attracts me. One of the inspirations for our new wallpaper collection came from these colours. We created a series of warm tones in different patterns, from neutrals to bold graphics.

KL: If you had only one room to wallpaper, what would it be? And is wallpapering a ceiling a fast-fading trend?

RO: I love a wallpapered dining room. It can be bold or subtle, but a four-walls wallpapered dining room also makes a wonderful statement. Because dining rooms are used mostly in the evening, don’t be shy to go for a bold or deep-toned paper! As for wallpaper on the ceiling, I try to shy away from trends, but I think ceiling finishes have always been part of the conversation, like gold-leafed ceilings or plaster finishes. Treating the ceiling like a fifth

A designer and her daughters opt for pink and pattern in a kid-friendly space that’s pretty playful.

“I love to use bright and cheerful wallpaper,” says designer Jo Smeeth of INDA Interiors in Clear Lake, Ont. Her daughters’ playroom was the perfect place for it. The girls (ages five and six) helped pick the pattern and the palette; then Jo made clever choices for fun and function. “Kids are typically very wiggly, so we chose poufs to provide comfy seats they can tussle around in while at the table,” she says. A round table offsets the squareness of the room and eliminates corners for fewer bumps and bruises during indoor tag. Shelving contains the clutter, and a big flamingo is just pure plush fun. A Calgary new-build shows that vegan-friendly design can be colourful, luxurious and just plain fun.

urnishing a 10,000-square-foot custom home is a tall enough order. Throw in the directive that the owner wants to be completely surprised by the decor – all of which must be vegan – and, well, the design plot thickens. “It was easily the most exciting and nerveracking thing a client has ever asked us!” says Reena Sotropa, who worked in tandem with Alanna Dunn. The designers immersed themselves in fibre content research (read: find alternatives to silk and wool) and set about making the new abode come alive. It had to feel inviting and contemporary while reflecting the owner, a young professional who craves colour, collects art and is committed to fitness (his home gym is off the charts!). By implementing a bevy of carefully sourced materials, perky hues and high-spirited artwork, the designers transformed the new-build into a high-impact and wholly vegan home. LEFT While the owner wanted to be surprised by the decor, he did have one request: yellow in the breakfast nook. The designers dialed up the sunshiny hue with a custom-made banquette upholstered in vegan-friendly cotton velvet. A tulip-base table works nicely with the built-in seating, and its marble top references the waterfall island. OPPOSITE “Walnut has an elegant yet contemporary feel that was a natural fit for the kitchen cabinetry,” says designer Alanna Dunn. Integrated design keeps the fridge from becoming a focal point, and handsomely harbors small appliances and pantry items, as well as dishes. An eight-foot-long pendant light illuminates the 12-footlong island, which is topped in natural quartzite and has an oversized sink with two faucets.

BELOW & RIGHT The designers tucked a butler’s pantry behind the kitchen, a nice feature for the homeowner, who loves to entertain. They didn’t scrimp on its finishes. “It’s the same walnut as in the kitchen because even a hidden space should be a reflection of the rest of the home,” says Alanna. White floor-toceiling cabinets define the mud room, and a cool, minimal-pivot door leads to the backyard.

A canopy-style bed anchors the airy space that’s punctuated with shots of blue, including on the sofa and in the drapery’s details. “It felt like a restful colour that would help create a relaxing refuge within the home,” says Alanna. A plush rug serves as a soft foil to the walnut panelling. “One of our main challenges was that most rugs feature animal-based glue on the backings, but it’s something that’s easy to avoid just by asking. Almost all of our suppliers had access to vegan options available by order.” The burnished gold stool echoes the gold of the owner’s floor lamp.

Every wall in the primary bathroom is tiled, and this area features tiny elongated Thassos marble that adds interest. “I love the way the white marble reflects natural light around the space,” says Reena. The art, which sits on a quartzite ledge, adds colour while the brass chandelier imparts a vintage feel. “Its crystals are actually quartz stones. “We wanted the natural stone behind the vanity to be the real star of the show, so we chose to hang pendant lights rather than wall sconces,” says Reena. The expansive space feels seamless thanks to the oversized floor tiles that extend smoothly into the curbless shower. RIGHT & OPPOSITE The library, which boasts 15-foot-high ceilings, features white oak millwork with a custom-designed niche for the holographic piece of art. “We chose oak over walnut to keep the look lighter,” says Reena. “It provides the perfect bright background to the owner’s books and art, which may have been lost on a darker background.” Playful bunnyprint drapery is hung at the same height as the ladder rail, and the striking blue rug is made of vegan-friendly Tencel. “It looks and acts so much like silk by bringing a shimmery, almost watery depth to the space,” says Reena. Yes, it’s stunning – but this new-build by Toronto’s Urban Blueprint has given its owners something that truly turns a house into a home.

ome of the most important design details in Jessica and Kyle Gorassi’s home in Toronto’s West Rouge neighbourhood aren’t obvious. When the couple started working with brother-sister design-build duo Natasha and Luca Penzo of Urban Blueprint, their goal was to build a warm, chic transitional home tailored to their family (they have two young daughters). They wanted a place where they could entertain their extended families and one that would take full advantage of their east-end property and its views of the city and Lake Ontario. They got that, and a whole lot more.

ABOVE While the great room epitomizes the sophisticated transitional look Jessica and designer Natasha Penzo sought for the house, it’s also cozy and inviting. “It was built to be their playground – to chill out, relax and have fun!” Natasha says. The 20-foot ceilings and reﬁned traditional built-ins and mantel are balanced by a rugged coffee table and pillowy seating for a crowd (often used to appreciate “stunning sunsets” visible out the tall windows). Most important, though, is its openness, a welcome change from the family’s previous home, a side-split with small, chopped-up living spaces. “Here, I can be in

the kitchen, someone else can be watching TV, someone can be at the kitchen table, and the baby can be in her little ExerSaucer, and we’re all still together. Their new home – which incorporates spacious familygathering zones, guest bedrooms, plus fun extras like a rainbow-themed playroom – capitalizes on the unique site, offering spectacular views from the double-height great room, as well as Kyle and Jessica’s bedroom and ensuite. “On a clear day, from the top of our staircase, we can see right to the CN Tower,” Jessica says. But there’s more to the house than what meets the eye. The picture-perfect kitchen is, of course, kitted out with the latest amenities, and its family-friendly layout works wonders. But the blue-painted kitchen island wasn’t only an aesthetic choice. It’s the exact shade of the siding on the house that previously stood on the property – Kyle’s beloved childhood home, where Jess, who grew up nearby, visited as a teen. Another example: the elegant Ralph Lauren wallpaper in the powder room reminds Jessica of Delftware, which harkens to her family’s Dutch heritage. Most special of all is Lynnie’s Pub, the welcoming entertaining space in the basement that’s a nod to Kyle’s late mother, who always had an open-door policy, including for neighbourhood kids, who could expect snacks waiting on the kitchen counter. Lynn’s ideal of ﬁlling a home with friends and family anchored Kyle and Jessica’s hopes for their own home and is one way they plan to carry on her legacy. “We cannot wait to have a party!” Jessica says. “It’s the ﬁrst thing we’re doing when restrictions allow.” STYLEATHOME.COM APRIL/MAY 2022

A graphic mirror by Mermelada Estudio pulls the guest room’s glam dresser and side tables in an edgy, modern direction. “Jess and Kyle love style and fashion. Kyle has a huge sneaker collection,” says Natasha. “So, from the get-go, it was clear they’d be willing to take some risks with design.” Because of the pandemic, many pieces were purchased online, sight unseen. “It was the craziest thing. BELOW Jessica and Kyle wanted their ensuite to feel like a sanctuary. “In our old house, we all shared one bathroom. Here, we ﬁnally had the opportunity to have our own bathroom, so we definitely ran with it,” Jessica says. Natasha washed the room in warm white and had twin vanities (the second is on the same wall, but separated by a door) custom-made by Altima Kitchens and topped with thick slabs of quartz. RIGHT By outfitting the ensuite with a separate shower and soaker tub, plus two vanities, Natasha amped up function and headed off morning traffic jams. With rain shower and hand-held heads, the shower is the height of luxury. (There’s a steam room in the basement for a total spa experience.) The mosaic flooring in Calacatta marble with a brass inlay – chosen to echo the jewellery-like look of the chandelier – adds quiet geometric pattern. OPPOSITE “We wanted to create a chic oasis with Parisian touches like the gold and the chandelier,” Jessica says of the ensuite. “A soaker tub was on my must-have list, so we made it the focal point.” While the tub is an artful keynote, the view is the real masterpiece. “It’s the best in the house,” says Jessica. “The old house was a bungalow, so it didn’t go up this high. A Fine Balance “It’s all about ﬁnding the right pieces, and for me the most important is ﬁnding a great sofa,” says designer Jean Stéphane Beauchamp (shown left). he lovely 1915 triplex in Montreal’s chic downtown Plateau-Mont-Royal neighbourhood had some truly wonderful assets – high ceilings, plenty of light, lots of period character – but, says designer Jean Stéphane Beauchamp, there was work to do. “Many of the original mouldings and decorations were still there, but sadly, some of them were in sorry condition,” he says. “So we tried to keep as many elements as we could, and then reproduced the rest exactly.” Repurposing the grand rooms to make them work better for a modern-day couple was also key. The biggest change, says Jean Stéphane, was switching the kitchen and dining room, which gave new life to both rooms. But the pièce de résistance was the clients’ openness to combining a carefully curated mix of traditional and contemporary furnishings with a free-spirited approach to colour. The result: a comfortable, artistic interior that pays homage to the past, but with an exuberant charm that’s thoroughly 21st century.

Sky, Light The kitchen turned dining room retained a beautiful old cupboard (unfortunately, the only one from the original kitchen that was salvageable), which Jean Stéphane treated to a new coat of ochre paint. Inside, there’s plenty of room for servingware. A collection of pretty plates and a “murmuration” of birds ﬂying up an ombré-painted side wall serve as decoration. Because this is the powder room as well as the main bath, a ﬂuted glass wall lends a sense of separation between the sink area and the rest of the bath. The wall and ﬂoor tiles perfectly straddle the line between contemporary sleekness and what might have been here originally.

and herb sachet to the saucepan and reduce the wine by two-thirds. Stir in the tomatoes and cucumber and cook for another 5 minutes. Remove from the heat and allow to cool. Remove the herb sachet and squeeze as much liquid as possible back into the saucepan. Discard the herb sachet. Strain the liquid into another container, reserving it for adjusting the consistency of the soup. In a high-speed blender, purée the vegetables, adding enough of the liquid in a slow, steady stream while blending to achieve a smooth, velvety consistency.

When processed, adjust the seasoning with a splash of jalapeno Tabasco sauce and more salt, if required. Strain through a ﬁne-mesh sieve into a medium bowl and chill over ice. The soup can be stored, covered, in the refrigerator for up to 4 days. Serving Pour the soup into chilled soup bowls. Gently place the prepared potatoes, beets, squash, ground cherries and golden cherry tomatoes into the soup. Finish with basil ﬂowers or leaves, a drizzle of olive oil and a sprinkle of sea salt.

Ricotta Cheese 2 cups whole milk 1 cup whipping (35%) cream ¼ cup white vinegar 2 tbsp fresh lemon juice 1 tbsp kosher salt Roasted Zucchini 2 medium yellow zucchini 1 tbsp kosher salt 2 tbsp vegetable oil ½ tbsp minced garlic ½ cup Shallot Vinaigrette (see below) Garnishes Red currants Crushed peeled and toasted hazelnuts Lemon verbena leaves Zucchini ﬂowers Chives Shaved raw zucchini

brown and lightly caramelized, 1 to 2 minutes. Turn the zucchini halves over and spread the minced garlic on them evenly to coat. Transfer to the oven and bake until the zucchini is cooked and tender, about 4 minutes. Transfer the zucchini to a plate to cool.

Raspberry Purée Serving Place a zucchini half in the centre of each plate, then drizzle with some of the Shallot Vinaigrette. Spread a generous amount of ricotta evenly over the surface of the zucchini. Sprinkle a few currants over the ricotta, letting them fall naturally into the crevices of the cheese. Sprinkle with the hazelnuts and scatter the lemon verbena, zucchini ﬂowers and chives from one end to the other. In a small bowl, toss the shaved zucchini with a little salt and Shallot Vinaigrette and arrange on top to ﬁnish the dish.

SHALLOT VINAIGRETTE MAKES 2 CUPS

Ricotta Cheese Place a colander or ﬁne-mesh sieve over a large bowl and line it with 3 layers of cheesecloth. In a medium saucepan over medium heat, bring the milk and cream to just under a simmer. Stir in the vinegar, lemon juice and salt and continue to simmer for 1 minute. You should see a clear separation of the liquid (whey) and solids (curd). Remove from the heat and let cool to room temperature. Pour the whey and curds through the cheesecloth-lined colander. Transfer to the refrigerator and let the whey strain out of the cheese overnight. The next day, spoon the ricotta out of the colander into a small bowl and season with more lemon juice and salt, if desired. Store in a covered container in the refrigerator for up to 3 days.

Roasted Zucchini Preheat the oven to 350°F. With a sharp knife, cut each zucchini in half lengthwise. Lay the zucchini halves cut side up on a cutting board and, using a paring knife, lightly score the ﬂesh in a crisscross pattern. Season the scored side of the zucchini with the salt. In a large cast-iron skillet, heat the vegetable oil over mediumhigh heat until the oil starts to smoke lightly. Carefully lay the zucchini cut side down in the pan and fry until the ﬂesh is golden

In a blender, purée the raspberries until smooth. Press the purée through a ﬁne-mesh sieve into a small bowl to remove any seeds. Keep covered in the refrigerator until ready to use.

Raspberry Milk Chocolate Ganache In a medium bowl, combine the milk chocolate and salt. In a small saucepan, heat the raspberry purée with the glucose syrup over medium heat until it boils. Pour the raspberry purée mixture over the milk chocolate and stir with a rubber spatula until the chocolate melts and the mixture is smooth and cohesive, with no lumps. Add the butter and stir until the butter is melted and fully incorporated. Strain into a container with a lid. Cool to room temperature, then cover and chill overnight in the refrigerator.

In a high-speed blender, combine the shallots, honey, mustard, red wine vinegar and white wine vinegar. Process to purée. With the blender running, add the vegetable oil in a slow, steady stream until fully emulsiﬁed and smooth. Season with the salt. Keep covered in the refrigerator for up to a week.

HONEY CROISSANT WITH RASPBERRY MILK CHOCOLATE GANACHE, GARDEN FLOWERS & HERBS SERVES 4

Raspberry Purée (makes about 1 cup) 2 cups fresh ripe raspberries Raspberry Milk Chocolate Ganache 4 oz (130 g) milk chocolate, chopped (about ¾ cup) ⅛ tsp kosher salt Raspberry Purée (see above) 1 tbsp glucose syrup 2 tbsp unsalted butter, at room temperature Honey Croissants 3 day-old croissants

Serving

Preheat the oven to 325°F. Line a baking sheet with parchment paper. With a serrated bread knife, cut 8 crosswise inch-thick slices from the larger middles of the croissants. In a small saucepan, melt the honey and butter together over low heat and whisk to mix well. With a pastry brush, brush the honey-butter mixture onto both sides of the croissant slices. Arrange the slices on the prepared baking sheet, top with another sheet of parchment, and weigh them down with a second baking sheet to keep the slices ﬂat while baking. Bake for 10 minutes, until the slices start to caramelize and are golden brown. Remove the pans from the oven, remove the top baking sheet and parchment, and turn the croissant slices over. Bake, uncovered, for another 5 minutes or until the croissants are deep golden brown. Remove from the oven and allow to cool on the baking sheet. Store in an airtight container at room temperature for up to 2 days.

Bring the raspberry milk chocolate ganache to room temperature. Transfer the ganache to a piping bag fitted with a small star tip. Just before serving (to prevent making the croissants soggy), pipe ganache onto 1 croissant slice, then place another slice on top to make a sandwich. Press the sandwich gently to expose the ganache along the seam of the croissants. Using a little ganache as glue, stand the croissant upright on a plate. Decorate the seam of the Honey Croissants with edible flowers and fine fresh herbs.

I know one lesson I’m taking home from this issue is the importance of separating your outdoor space into zones based on function. pie-shaped city lot is not always sweet. This large urban backyard in Montreal posed a challenge. “It was important to organize the space properly and make sure there was a certain ﬂuidity to it, despite the angularity,” says landscape architect and horticulturalist Jocelyn Lussier of Montreal-based Topia. “We wanted to avoid creating dead space.” His solution? Create focused zones based on function: a patio adjacent to the house with a living room and dining area; a lawn where the kids can play freely; and the star attraction, the inﬁnity pool. “We positioned the pool at the very back of the backyard so that we could fence it off nicely and give the yard some structure,” says Jocelyn. “Plus, it’s on higher ground, so you can see it from the house. All this means that the pool has become the focal point of the backyard, not just a place to take a dip.”

OPPOSITE Two large concrete patios poured on-site provide a solid, clean-lined foundation to the design of the yard. “They needed to be as smooth as possible,” says landscape architect Jocelyn Lussier. The owners have three children and love to host friends and family, so a large table was a necessity. An artful combo of smart landscaping and statement-making black and white turn an urban backyard into a chic retreat.

“

he yard was a mud pit,” says designer Megan Baker. “There was no landscaping, no grass – there weren’t even stairs up to the house!” The heritage home in New Westminster, B.C., had gone through many renovations before the current owners bought it. “Original details had been stripped away inside,” says Megan, “but I saw this as the jumping-off point to do something more modern outside for the young couple who lives here.” A black and white palette, dedicated lounging spots, a dining zone demarcated by a custom pergola, and plenty of grasses, shrubs and trees transformed the space into a cool, modern oasis. LEFT The wrought-iron sofa and chair impart an airiness that Megan loves. “The metal bases work so well and, from a distance, make the cloud-like seat cushions look like they’re ﬂoating,” she says. A mix of black-andwhite toss cushions continues the palette with pops of pattern, while the brass side table factors in a warm ﬁnish and ups the style factor. “It simply adds an element of chic,” says Megan. “I like to include pieces that don’t make sense for any other reason than being an object of interest.”

RIGHT A small round table between the lounging and dining areas is perfect for serving up drinks and dessert. Gold and woven accessories are a nice foil to the black, white and grey palette, and dress up the otherwise plain surface. “I advocated for spending the available funds on the elements of design, like landscaping and paving, which would truly build the space and create a foundation for decorative vignettes like this,” says Megan. A luxuriant and romantic Vancouver garden delights with a heady mix of old-world inspiration and lush blooms.

nglish gardens and Italian landscapes – that was the vision for my garden,” says designer Francesca Albertazzi, who transformed the yard of her childhood home when she and husband Sandy moved in to be close to her mother. The romance of such settings informed almost every aspect, from a palette replete with lyrical pinks and purples to fragrant cascades of frilly ﬂowers, including riotous roses. “Roses are the focus of the garden,” she says, citing supporting players like dahlias, perennials, annuals and small trees. Together, the lush plantings create not only exuberant layers, but also a verdant spot where Francesca and family can escape for a cup of tea or sip of Prosecco.

SITTING PRETTY A pergola sits at the end of the garden and has wire mesh supports for clematis and Akebia vines. The antique metal table and chairs are more than a place to perch. “Even if no one sits in this area, having the vignette there draws attention, provides a place to wander toward and makes the garden feel bigger,” says Francesca (shown left). FINDING SPACE Green metal chairs and a garden stool sit on a patio crafted from reclaimed bricks; the fence behind teems with ivy. “This spot offers a view we never had before,” says Francesca. “By moving large rhododendrons that were here farther back into the garden, I gained this ‘instant’ space behind our kitchen garden. It’s shaded by an old chestnut tree and looks out to dahlias, roses and our home beyond.”

“I try to select ﬂowers that are right for the climate and are as pollinator friendly as possible.”

YEAR-ROUND BEAUTY The greenhouse heats up in the summer and is the perfect spot for succulents and pepper plants, such as ‘Bishop’s Crown’. In the winter, Francesca turns on the heater and keeps geraniums, lantanas, agapanthus, lewisias and a Sicilian lemon tree here. “I also store all my dahlia tubers here in straw and cardboard; it works like magic!” she says. “Last year, I didn’t buy a single new geranium, as they all survived – thrived, in fact – over the winter.” Fresh herbs, such as basil, and dahlias, a favourite of Francesca’s, round out the mix. hen it came to decorating this Vancouver condo’s whopping 2,000-square-foot terrace, designer Megan Baker was inspired by the French formality of its limestone walls, but wanted to factor in some casual Provençal ﬂair. She relied on a mélange of soft colours, natural materials and greenery to evoke laid-back Gallic elegance while creating designated zones for eating, entertaining and more.

After designing the condo’s interior, designer Megan Baker was keen to continue its pale colour scheme outside. “I repeated the principal bedroom’s soft hues on the terrace for easy ﬂow,” she says. “The palette feels serene inside and refreshing outside. ARTFUL TOUCHES

Breaking the space into different zones was paramount, but not only for practical reasons. “I wanted an area for visual impact use only,” says Megan. “There’s nothing more luxurious than using square footage solely for the enjoyment of art or, in this case, a sculptural urn.” Its grand effect, and the rigid row of cedars behind it, is softened by a scattering of potted plants. “The mix of plants and containers is so speciﬁc to a European terrace that it instantly feels like Provence,” she says. When outdoor dining table options didn’t strike gold, Megan decided to go with an indoor one. “The homeowners agreed that it was perfect, and since the dining area is covered, we didn’t have to worry about weather conditions,” she says. Lots of pillows, a pretty vase and a scented candle are important to making the terrace as inviting as the interior. In the terrace’s living area, a casual woven sofa channels southern French style. “It’s got great scale and its visual weight makes it as comfortable and inviting as a sofa you might ﬁnd inside,” says Megan. reserving the breathtaking views from this Beaconsﬁeld, Que., home was a priority for these owners, as was creating a space where their tight-knit, sports-loving family could gather. Designer Mario Januario and Groupe Houde started off by levelling and stabilizing the site, and then creating multiple levels, each of which has a patio with a secluded feel that’s also wide open to the view. Furnishings blend in with the house so that from both inside and out, they won’t detract from the spectacular surroundings. Mario even used glass barriers to keep the connection seamless, so wherever his clients stand, their point of view is crystal clear.

Designer Kate Davidson, working with International Landscaping, did just that for homeowners in Oakville, Ont., by creating a variety of distinct “rooms.” Some are ideal for entertaining a crowd; others are perfectly scaled for spending time with family. ome backyards are naturally magnets for family and friends; this one was designed to be. The clients of landscape designer Yan Martel knew they wanted a place for their family to gather, as well as where their four older teens could hang out with friends. The new pool is an obvious focal point for fun, but the upper terrace is also key. Not only does it function as an outdoor family room with its roomy wood-frame sectional, but it also satisﬁes the homeowners’ need to see all the outdoor spaces from one vantage point. Its standout cedar ceiling is stunning, adding a tropical touch and providing shelter from the weather. “We enjoy it a lot because it’s covered and includes the spa,” says one homeowner. That and the warmth of family and friends are guaranteed to keep the party going long after summer temperatures dip.

Elements of Design Landscape designer Yan Martel added a waterfall at one end of the pool. It’s matched in height and material (a handsome grey stone) to the terrace’s foundation wall for visual unity. The cabana also relates in style and materials to the main house for a greater sense of harmony. For the pool, Yan designed a wide recess of steps that acts to visually widen the pool’s narrow dimensions without detracting from the visual pull of the waterfall and the woods beyond.

Spa & Ahhhh! The terrace is the family’s relaxing hangout zone, accessible from indoors and offering a view through glass railings to the entire backyard. The cedar ceiling shelters the spa for all-weather soaking and gives a tropical vibe to the contemporary setting, as do the exotic plants. A huge sectional with upholstery and pillows in shades of grey relates in colour to the stones of the pool deck, and keeps the mood cool and sophisticated. ALL DECKED OUT This leafy backyard in St-Bruno, Que., already had the ultimate tool for beating summer heat: an in-ground pool. But the yard’s single patio didn’t capitalize on the large lot. To maximize the space, designer Jacinthe Leroux added a series of ﬂoating decks around the pool. She replaced the existing pool deck with gravel for a Zenlike feel, and used rectangular stepping stones to connect the decks. On this deck, a chaise beckons for max lounging pleasure, and a table provides a spot for serving cold drinks. The tiled panel adds style and a sense of privacy.

heltered by one of the two barns on designer Cynthia Weber’s Huron County, Ont., property and a stone’s throw from the back door, this little spot was tailor-made for an herb garden. Cynthia and her husband, Kent, both avid cooks, wanted the garden to be easy to tend – hence the raised beds. But since it’s also clearly visible from the back porch and road (and because it’s Cynthia’s!), the garden is as pretty as it is practical. BELOW A vintage gathering basket sits at the ready, soon to be ﬁlled with whatever is needed for dinner.

ABOVE Three sizes of tin watering troughs – large ones under the barn windows, and a row of smaller ones perpendicular to them – are ideal herb beds, since their raised height makes weeding and snipping so easy.

GAZPACHO WITH CUCUMBER & RADISH SALSA

WATERMELON MARGARITA PUNCH SERVES 10 TO 12

4 1 ½ ⅔ ⅓

cups frozen seeded watermelon cubes cup orange juice cup lime juice cup tequila cup orange-flavoured liqueur (such as Cointreau) 3 tbsp agave syrup 1 (750 ml) bottle chilled rosé wine 1 (750 ml) bottle chilled carbonated water Ice cubes Lime and watermelon slices Thyme sprigs (optional) In a food processor or blender, purée watermelon cubes with orange and lime juices, tequila, liqueur and agave syrup until smooth. Pour mixture into large pitcher or punch bowl. Add wine and carbonated water; stir gently to mix. Pour punch into glasses and add ice cubes. Garnish drinks with lime and watermelon slices, and thyme sprigs, if desired.

In large bowl, gently mix cantaloupe, watermelon, cucumbers and tomatoes. Add crab, lemon zest and juice, and mix; season with salt and pepper. Add half of the Smoked Ranch Dressing and mix gently to coat well. Divide lettuce wedges among plates. Top with crab salad. Garnish with fresh herbs, if desired. Serve with remaining dressing.

SMOKED RANCH DRESSING MAKES ABOUT 1/2 CUP

⅓ cup mayonnaise 4 tsp sour cream (or 2% Greek yogurt) 2 tsp fresh chives, chopped

2 tsp flat-leaf parsley 2 tsp dill 1 tsp smoked paprika 2 tsp lemon zest 2 tsp lemon juice ½ tsp dry mustard ½ tsp garlic powder ½ tsp onion powder Salt and pepper In small bowl, combine all ingredients. Season with salt and pepper, if desired. (Make-ahead: can be stored in airtight container and refrigerated for up to 3 days.)

ripe avocado, cubed cucumber, cubed cups cubed green or yellow tomatoes cup seeded, cubed poblano or sweet green pepper ½ cup chopped green onions ½ fresh jalapeno pepper, seeded and chopped 1 cup coarsely chopped fresh cilantro ¼ cup avocado or olive oil 2 tbsp lime juice Salt and pepper ¼ cup sour cream Cucumber & Radish Salsa (see below) Fresh mint leaves In a food processor or blender, purée avocado, cucumber, tomatoes, poblano pepper, green onions, jalapeno pepper, cilantro, avocado oil and lime juice until smooth. Strain, if desired. Season with salt and pepper. Cover and refrigerate for at least 1 hour. (Make-ahead: can be refrigerated overnight.) Divide gazpacho among bowls, top with dollop of sour cream, Cucumber & Radish Salsa, and sprinkle with fresh mint leaves.

CUCUMBER & RADISH SALSA MAKES ABOUT 1 CUP

1 cup cucumber, diced 3 radishes, diced 2 tbsp avocado oil 2 tbsp fresh cilantro, chopped 1 tbsp fresh mint, chopped 1 tsp grated lime zest 1 tbsp lime juice 3 dashes hot pepper sauce (optional) Salt and pepper In bowl, mix all ingredients. Stir in hot pepper sauce, if desired. Season with salt and pepper. (Make-ahead: can be stored in airtight container and refrigerated for up to 2 days.)

PIZZAS WITH GRILLED VEGETABLES & BURRATA ON THE BARBECUE SERVES 4

tbsp olive oil tsp lemon zest red onion, sliced small zucchini, sliced lengthwise, about ¼-inch thick 2 bunches cherry tomatoes on vine Salt and pepper 1 lb (500 g) pizza dough 1 cup basil pesto 1 (250 g) ball burrata or fresh mozzarella 2 cups arugula ½ cup toasted pine nuts Hot pepper flakes (optional) Fresh herbs (optional) In a small bowl, combine the oil and lemon zest. Place the onion and zucchini on a plate and brush with oil mixutre; put tomatoes in a bowl and toss gently with remaining oil mixture. Season vegetables with salt and pepper. Set the barbecue grill to medium-high heat (about 450°F). Place onions and zucchini on oiled grill. Place a perforated griddle or castiron skillet on grill, beside onions and zucchini, and place tomatoes on it. Close cover and cook

for 4 to 6 minutes or until the vegetables are tender and marked, turning the onion and zucchini halfway through cooking. Remove the vegetables from the grill. Coarsely chop the onions. (Make-ahead: grilled vegetables can be stored overnight in the refrigerator.) Separate the pizza dough into two portions. On a lightly floured surface, roll out each portion into a circle 8 to 10 inches in diameter. Place the dough circles on the oiled grill of the barbecue and close the lid. Cook for 1 to 2 minutes or until the crusts have swollen and are starting to firm up. Using a spatula, transfer each pizza crust to a plate. Brush grilled side of crusts with pesto. Top each with reserved grilled vegetables. Return the pizzas to the grill, close the lid and cook for an additional 3 to 5 minutes, or until crusts are golden and crispy (if necessary, rotate the pizzas to prevent crust from burning). When ready to serve, tear burrata into pieces and scatter on the pizzas. Garnish with arugula and pine nuts. Sprinkle with hot pepper flakes and herbs, if desired.
