IIf my role as project manager ffor the Young house rrenovations was subject tto an annual performance rreview, I think it’s safe to say tthat h I would ld not be getting a bonus this year. O Output is well below target, deadlines have been missed, and team communication has been poor. But that does leave room for improvement in 2022! We’ve had planning approval through for a new kitchen extension, but as work on that is looking unlikely to happen anytime before the summer (we’re still stuck on a fruitless hunt for a builder), I’m determined that we will make progress by decorating other rooms in the meantime. The one advantage of multiple periods of self-isolation at the end of last year? Lots of headspace for planning. That bad performance review may actually be the kickstart I needed!

ABOUT ME I’m Charlie Gooch, 43, a freelance nutritionist, and I live here with my husband Andy, an engineer, and our children, twins Beatrice and Alice, 10, and William, seven. MY HOME A five-bedroom, Grade II-listed detached house encompassing the old village forge, near Tunbridge Wells, Kent. WHEN WE MOVED IN The layout was unusual and the configuration of rooms didn’t suit us, but we loved the house’s connection to history. AND NOW We brought in builders and an architect to help transform the property into a unique family home we can continue to grow into. Doing up a quirky house partly built in 1710 was a challenge, but Charlie and her husband Andy were confident they could turn it into their forever home
W
e’d lived in military accommodation for years, as Andy had been in the army,’ says Charlie. ‘So one of the things we were most excited about in this next stage of our lives was owning our own house and putting our stamp on it. We couldn’t wait to get the search started and were determined to find the right property to turn into our dream family home.
Sense of history
FRESH TOUCH
‘Green is a key colour in the scheme. It makes the room feel fresh and balances the cosy textures to create a contemporary feel’
Scouring the villages near Tunbridge Wells in Kent, we came across this house and were drawn in at once by its historical feel and original features. The enormous sitting room had once been the village forge, where the horses would have been brought in to be shod many years ago. It still had the remains of a huge fireplace, beautiful beams and incredibly high ceilings. While we loved all the historical elements, we knew we’d have to contend with its unusual layout. The original cottage part of the house, which dates back to 1710, had three small bedrooms on the first floor. The previous owners had added a kitchen extension and renovated the basement underneath. You had to walk through the kitchen to get to a further two bedrooms. It was unlike any other house we’d seen and not really suitable for us and our three young children, so we put together a plan to update the space.
Changing the layout
To make the space work for family living, we decided to reconfigure the three first-floor bedrooms into two

bigger bedrooms, as well as a large shower room. We turned the loft space into a bedroom with an en suite for Andy and myself. We left the basement extension as it was, for guests, as there was already a modern bathroom down there, which makes it nice and private, away from the main house. When the children are teenagers, I imagine they’ll probably take it over, so it’s a house with plenty of options.

. a challenge to establish our role with the builders, and to manage the awkward conversations that inevitably happen on a project like this, but I’m so happy with how it turned out. They completely understood how to work with a house like ours.
Finding my style
I could see it was going to be a delicate job coming up with a decorating scheme that blended the old and new parts of the house, and I soon realised I needed

Do it! GET BUILDING CONSENT To carry out renovations on a listed building that may change the building’s character, architecture or historic value, you’ll need to get written building consent from your local planning authority.
To apply, you’ll need a completed application form, site plans, and detailed drawings for specific items of work. The full list of documents can be found on your local authority’s website.
First, check with your local authority conservation officer as to what type of consent is needed for your project. This is important for buildings with a Grade I or II.
Carrying out unauthorised works to a listed building is a criminal offence and can result in heavy penalties, so it’s not worth taking the risk!

TILE A FIREPLACE SURROUND Starting at the centre, apply mortar to the bottom of the surround and carve notches with a trowel. Set the first tile against the centre line and work your way out to the right. Use ¼in spacers between each tile. Work in small sections at a time so the mortar doesn’t dry out. Repeat the process on the left side.

For the second row, place the first tile straddling the centre line. Work your way to the right and left as before. Continue staggering the tile placement all the way up the surround. Remove spacers once the mortar is dry, then wipe the tiles with a damp sponge. Apply grout to fill the joints. Remove excess with a damp sponge.

When it came to accessories, I picked the theme of wild animals and it’s

Learning curve
We definitely encountered a few hurdles along the way, which is to be expected during a project this big. One crucial thing I’ve picked up is how important it is to measure fixtures! We had a couple of disasters where we bought things without measuring properly and found they didn’t fit. Also, taking the time to

research what look you want and not rushing into things is key. I found that pulling together mood boards really helped me imagine the look and colour palette of each room. I spent hours online, searching through magazines and window shopping for inspiration.

With everything finally finished, we can now enjoy having a house that’s our very own. I love every room we’ve renovated, but I think my favourite would have to

fter having our son Woody, we soon outgrew our two-bedroom terraced home in Linthwaite near Huddersfield,’ says Sarah. ‘It was on a main road but we wanted a semi or detached house on a quieter street with parking and a garden. While searching for other properties online, I’d scrolled past this house a few times but it was too expensive at £245,000. Our initial budget was £200,000, but it soon crept up to £220,000. We took a chance and decided to view it, even though it was over budget. The couple had seven children and when I saw their daughters baking together in the kitchen, their son playing violin in the living room and another upstairs reading a book, I knew it would be a lovely family home. Although the decor was very beige, the big kitchen and garden clinched it. Having overpaid on our mortgage, we could stretch ourselves to £239,000 and our offer was accepted.
Tackling the bathroom
My least favourite room was the dated 1980s bathroom which got ripped out a year after moving in. It had a carpet, bath panel and separate shower cubicle so felt a bit cramped and grotty. I hated spending any time in there. It’s not a massive space so needed careful planning before proceeding with a refit. We did consider a bath under the window, but it would have been costly to move all the pipes. In the end we kept the loo in the same spot and installed a freestanding bath with a shower and curtain, which meant we could fit some storage at the end. Getting rid of the separate shower made the

Kitchen revamp
There wasn’t much storage in the kitchen when we first moved in. It’s a big room but there was one pine wall cupboard, which looked more like a bathroom cabinet, and a peg rail all around the room. With no blinds, it felt very bare and we wanted to make it more of an entertaining space. Lockdown was the perfect opportunity to rethink the space. Rather than rip out the kitchen and start again, we bought an island unit, repainted the existing base

units in blue, swapped the handles and added new shelves. To make it feel like new, we also sanded down the worktops and revarnished them. Mustard splashback tiles and some blinds made by my grandma make it feel cosy and warm. It was time-consuming but so worth it.
Style wars
I’ve definitely got a bigger voice than Darryl when it comes to decorating ideas. He struggles to see a finished product, whereas I can. As a result, every room has been a battle and I have to ease him into my way of thinking slowly and gently! I think certain rooms should be kept

light and airy, but you can experiment with dark colours to make others rooms more cosy, like I have done with my living room and master bedroom. The living room has a really big window so I knew it could take darker colours. I initially painted it pale grey, which wasn’t different enough from the original colour. Next I chose navy blue, which was too dark for Daz but not dark enough for me. Eventually I told Darryl I’d ordered some paint but didn’t say what colour and sent him out for the day while I got decorating with an off-black colour. Luckily he liked it when I’d put all the furniture back. I’d
love to wallpaper the ceiling too, but I’d probably be crossing a line there!
Adding colour
Even though there are lots of dark walls in my house, I love a pop of colour too. For instance when I started painting Woody’s bedroom dark green, he was scared it was a bit too dark. But when we added the wall mural and adhesive vinyl on the wardrobes, it really broke things up. The hallway was a naturally dark space so I didn’t want to go totally black in there. Instead I painted it dark green and the bannister black with some

gorgeous wallpaper up the stairs. Since I work as an eBay manager for the RSPCA, I’ve saved money by upcycling charity shop furniture. I can then justify the odd splurge, like the mustard kitchen tiles or botanical wallpaper in the hall.
Bedroom blitz
The one room that never really got that loving touch was the master bedroom. Initially I just painted a chest of drawers and left it at that. However, lockdown changed all that. We’ve both always liked panelling so decided to create a feature wall behind the bed. I’d been told you’ve got to get your maths right first and since Daz is a design engineer, we have the software to make it easier. The pieces of wood were cut to size at B&Q, fixed to the wall and painted in a colour match of Farrow & Ball’s Blue Black. The starting point for the colour scheme was a gorgeous pink velvet bedspread with an Art Deco feel, which led to me choosing pastel accessories
UPHOLSTER A HEADBOARD
You’ll need: MDF frame cut to your bed width (or existing headboard to recover), spray adhesive, pencil, tape measure, scissors, staple gun, fabric, batting, 5cm thick foam. Use scissors or an electric knife to cut foam to the same size as the MDF or headboard, then attach with spray-on upholstery adhesive. Add a larger layer of batting on top with enough to bend around and staple to the back of the MDF. Start stapling from the centre, alternating between opposite sides so the fabric tension is even. Do the same with your chosen fabric, taking care to cut out a small piece when folding over the corners to create a clean pleat that’s not too bulky. Use heavy-duty flush mount interlocking brackets (try Amazon) to attach your finished headboard securely to the wall.

Adhesive vinyl, also known as contact paper or sticky back plastic, is a self-adhesive covering that comes in rolls or sheets with a peel-off backing. It’s an easy way to transform furniture, worktops, shelves and walls. When it comes to furniture makeover projects the possibilities are endless. Try a geometric coffee table

Future plans
Next we’re saving up for an amazing utility room. When the house was extended in the 1980s, the old kitchen became a makeshift utility but it’s a narrow room with a boiler and exposed pipes. I’d also love to add a summerhouse, which could be an office for Darryl or a kids’ TV room. I’m pleased that doing up the house has taught me several new skills like tiling, wallpapering and reupholstery. With patience and hard work Rachel and JJ transformed a dated and unloved student rental into a cool and contemporary family apartment
M
y partner JJ and I had moved to a village on the outskirts of Brighton when our daughters Edie and Minnie were little, for a change of pace and a home with much more space compared to our previous property in nearby Hove,’ says Rachel. ‘It was supposed to be a short-term change, but in the blink of an eye, six years had passed, and our eldest daughter Edie was now a teenager! ‘She was beginning to struggle with living in the country, spending more time with friends in town. As we were keen to get back on the Brighton property ladder, we decided a move back into the city was our next step. Elsewhere in the country we might have afforded a grand, family home. In Brighton, however, we could only stretch to a two-bed apartment. But you have to start somewhere!
Sound investment
We wanted to be savvy and find something that would work for us financially, a property that could be rented out, giving us an income to then rent something bigger for ourselves. We found a run-down two-bedroom apartment in a converted Victorian bank. The location was perfect, right in the heart of Brighton and only one block from the sea, but it had been let to students and hadn’t been updated since the 1990s. It felt very unloved. Most people would have been put off, but I instantly saw the potential. The two double bedrooms were on the small side, but the open-plan kitchen and living area was huge and there was a glimpse of the sea from the front windows. I felt an instant connection and knew this

was the property for us. We exchanged contracts at the beginning of March 2020. I’m no stranger to renovation work, so I started to get stuck in immediately, removing plaster and demolishing the existing kitchen and bathroom. However, two weeks later the entire country went into lockdown. It was a tricky time. As we couldn’t leave our homes, apart from for essential travel, we decided to take a mortgage break and stay put, in our rented home in the country. It was also becoming increasingly difficult to source even basic things like plaster, let alone go and look at a new kitchen and bathroom suite, so we hunkered down for a few months until lockdown began to ease. On the plus
side, I had plenty of time to focus on the apartment’s look and feel, spending hours on the internet finding inspiration and putting together mood boards. So, when restrictions lifted, I hit the ground running! Apart from help with some plumbing and carpentry, I did all the work myself!
Kitchen plans
There was nothing wrong with the layout of the original kitchen, so I simply extended it out by a metre with a stud wall to accommodate a freestanding fridge, and to give us some extra storage space. It was then fitted out with new black cabinetry from Magnet and a laminate worktop which had an overhang for a breakfast bar along the length of

Brick beauty
In the living/dining area of our open-plan space, we exposed the brickwork along the whole length of the wall. It really gives character to the room and was a look I had saved many times on Pinterest. What I didn’t anticipate however, was how messy and time-consuming it would be. It felt like I was swimming in dust for days,

but I couldn’t be happier with the result. It looks beautiful. The rest of the room unfurled from there. All the other walls were given a fresh lick of paint and the floorboards fixed up and painted with a hardwearing floor paint.
Mid-century style
I had already started to collect some mid-century furniture: two Ercol sofas, a Scandinavian dresser and a drinks cabinet, which I rescued from a garage and then restored. These all found perfect spots in the redecorated space. We bought two large Berber rugs for the dining and living areas to help define each space, and displayed bright, colourful artwork on the walls. The pièce de résistance is the large disco ball, which added to the New York loft feel that

Do it! ZONE AN OPEN-PLAN SPACE Add partitions or raised platforms, or incorporate a kitchen island to create a clear divide between the cooking, eating and relaxing areas. Use rugs to visually separate the space. They can be different sizes and shapes, textured or a simple woven design. Contrasting paint colours on door frames or arches subtly signify the
different zones in the open space. Decorate walls in contrasting ways, from simple white to exposed brickwork, and tiles or painted cabinetry in the kitchen. Lighting is key to create different vibes in each area – you could opt for a large pendant light over the dining table, wall lights in the kitchen, and floor and table lamps in the living area.

Find a vintage cabinet or table that you love and that will fit nicely into the space. Paint it in a fun colour or varnish it in a natural wood shade. Add a marble or stone top to create a different look if you like. Find a counter-top basin that will sit on it, with space either side. Measure and make a hole in the top of the piece of furniture to accommodate the plumbing and secure the basin in place on top. Fit your new vanity unit into position and have the washbasin professionally plumbed in.

ABOUT ME I’m Jane Neil, a graphic designer, and I live here with my husband Guy, a town planner, and our daughter Ellen, nine, in an extended five-bedroom semi-detached 1900 house in Beckenham, southeast London. MY CHALLENGE Although it was in good condition, our ’90s kitchen was dated and felt dark. We never really used the garden properly as it was a dead area, so we wanted a bigger, sunnier kitchen-diner that linked to the outside space. MY WISH LIST I wanted a sociable kitchen with a contemporary style and industrial touches. A long island where I could cook and chat to people sitting at stools was a must.

Jane and Guy have added bespoke doors and industrial touches to give their budget kitchen a designer look
W
ith a brown wooden kitchen, little light coming through the west-facing window and an unused side garden, our house needed a major rethink,’ says Jane. ‘When we asked architect Simon Skeffington for ideas, we expected him to square off the back to give us a bigger kitchen. Instead he surprised us with his creative ideas – literally sketched on the back of an envelope – which made use of the unusual wedgeshaped plot that’s narrower at the rear. We loved his suggestion for an internal courtyard of frameless glass with a Corten steel and glass extension wrapped around, which cleverly brought in the south light. The 50sq m extension gave us four extra rooms – a kitchen-diner, utility, guest bedroom and shower room – and finally made use of the side garden.

‘Go for large-scale floor tiles with minimal grout lines for a designer concrete floor effect’
To transform our existing kitchen and dining room, Simon’s team from Architecturall (architecturall.co.uk) gutted the singlestorey kitchen, removed the dividing wall between the kitchen and dining room and added a glass roof. Over four months a new, bigger window was fitted, then they rewired, replastered, put in a new ceiling and laid a new tiled floor with underfloor heating throughout both spaces. The old oak kitchen flooring was cleaned and re-used in the new bedroom so it wasn’t wasted and they reclaimed the York stone from the house and re-laid it to create the garden terrace which is accessed by new sliding doors. I’ve worked with Simon in the past and his attention to detail is fantastic. It all came in on budget too.

Try rust or concrete-effect paint or wallpaper to add texture. Slip bricks are a great way to create an industrial feature wall. Try concrete-look porcelain tiles as a cheaper alternative to a polished concrete floor. Pick stools with metal legs and either wooden or leather seats to tie into your scheme. Factory-style pendants are available in an array of colours, so you can match the shade to your accent colour. Look out for old weighing scales, vintage clocks, bar carts and wooden printer trays to accessorise the room.

Challenges faced
We’ve incorporated an extra-long island, which gives enough space to contain the ovens, hob and extractor fan at one end with a breakfast bar at the other end. I also love the industrial touches like the pendant lights that are made from concrete – we had new cords and ceiling roses fitted to them all so that they matched – and bronze porcelain splashback tiles that look like rusted steel. Simon has totally transformed the space in conjunction with my interior designer friend, Andy Holt of Boonholt Design

Getting a smart kitchen needn’t be pricey – just switch up your doors and fascias 720mm high (not including legs) x 500mm wide the door front size would be 715mm high x 496mm wide.
Are all kitchens suitable for door replacement?
Just like complete kitchens, replacement doors are available in off-the-peg (standard sizes) and made-to-measure formats. Some companies offer both options. Expect to pay more for made-to-measure as it’s more labour-intensive to make doors in one-off sizes. And you’ll need to wait a little longer for delivery, too.
Check your existing carcasses are in good condition first. It is a false economy to fit new doors to cupboards that are on their last legs – anything under eight years’ old should be a safe bet but check for structural damage, particularly around the sink area.
How do I order the right door sizes?
The easiest way to replace doors like-forlike is to measure what’s in situ. Measure from the back, as this is always the squarest part of the door/drawer front. Measure the height first and then the width, in millimetres. Generally a door front is 5mm less in height than the cabinet and 4mm less in width, so if your cabinet is

What if my cabinets are not standard sizes?
Will the hinges line up?
Whether you are drilling the hinge holes in your new doors yourself, or ordering pre-drilled doors, you will need to measure carefully. With your existing doors still on, measure from the top edge of the door to the centre of the top hinge hole for the top hinge position. Then measure up from the bottom edge of the door to the centre of the bottom hinge hole for the bottom hinge position. Do measure each door as hinge positions can vary, and be sure to note if the hinges are on the left or right!
Who will fit them?
A simple like-for-like project is definitely within the skill-set of anyone who can handle an electric screwdriver. Don’t be afraid to ask your supplier for advice.

ABOUT ME I’m Tracey Yeoh, 39, a retail store manager and I live here with my husband, Scott Kelly, 41, a firefighter, in a three-bedroom 1930s semi in Ryton, Tyne and Wear (@1930s_ryton_reno). We got the keys in August 2020. MY CHALLENGE Turning a bedroom into an en suite bathroom with an Asian feel, while sourcing all the components on a tight budget. MY WISH LIST We wanted it all – a supersized bath, walk-in shower and double vanity unit. I also wanted to find perfect jade green tiles that matched my vision.

uying this 1930s semi in Ryton was my 21st home move,’ says Tracey. ‘Hopefully it’ll be my last as plans were approved for a two-storey rear extension before the sale went through. Previously my job had taken me all over the UK and even to America. However, when I started managing a store in Newcastle nearer to Scott’s workplace, we could finally buy our forever house.
Planning the space
The four-bedroom property only had one small bathroom so we decided to convert a bedroom into a spacious en suite. A friend helped me mark out key pieces on the floor with masking tape, which led to us forgoing the walk-in wardrobe section, where the shower is now, to make the room even bigger. It meant we could supersize everything and have a large walk-in shower, double vanity unit and an extra-long bath. I now use another bedroom as my dressing room instead.
Nailing the design

A trip to Japan inspired the design. We stayed in a traditional ryokan guesthouse where the bathroom window opened into the garden and it was so tranquil. Luckily we have beautiful views across fields and we wanted to be able to soak in the bath while enjoying them – so a raised platform was a must. I also found a gorgeous Asian-style unit and upcycled it to create his-and-hers basins. It took me ages to find the perfect jade coloured tiles for the shower but I managed it after an epic search. To save money, we opted for cheap white metro tiles around the bath, but laid in a more interesting formation with black grout. We did a lot of the work ourselves, including laying the electric matting for the underfloor

The platform should extend at least 30cm wider and longer than your bath. Building the frame and platform from timber and plywood is a fairly easy job for a joiner, but requires accurate measuring and cutting. Make sure your joiner leaves a removable opening in the front panel for access to pipework. Victorian Plumbing sells a 1000mm ready-to-tile bath step for £209. Use a waterproof floor covering, such as tile backer board with ceramic tiles or waterproof vinyl.

New sanctuary
The wall colour – Tranquil Dawn – was the Dulux Colour of the Year in 2020. I also love the black Venetian blinds which set off the space. Even though we’ve lost a bedroom, it’s worth it for such a wow bathroom. It’s so nice having one finished room to escape to while the rest of the extension is still ongoing. My favourite part of the room is standing in front of the vanity unit – whether you look left or right, you can be happy with either view.’

MAKING SPACE WORK A savvy approach to spatial planning can turn tricky features into great assets
Can I improve the shape? The more you spend on building work, the less you’ll have for fittings. Stealing space from an adjacent bedroom or relocating a water tank might provide extra inches but do get costings in advance. Moving an external window is usually far pricier than an internal doorway, for example.
How do I plan the layout? By prioritising. Compromise is often inevitable so start by listing your must-haves and work out the impact

Can I move the loo?
If this is a solution to improving your bathroom’s layout, then taking professional plumbing advice is critical. Firstly, find out where the soil pipe enters the bathroom from outside – the less distance the waste needs to travel, then the better the performance. Soil pipes can often be extended behind stud walls and under the flooring, as long as the flow can be maintained.
What about odd angles?
Experts use distraction techniques to draw the eye away from unsightly features. This can be a lovely vanity unit, a statement bath or boldly patterned tiles, used as a focal point. Visible immediately upon entering, this can help you overlook a multitude of sins. For a complete cover-up, consider commissioning fitted furniture and turn alcoves or corners into storage.
Which colours work?
There are no firm rules but sticking to the same shade for the ceiling and walls is a great way to iron out any awkwardness. Darker colours can look amazing but avoid on seriously sloping walls, or they may feel like they are closing in on you. ‘Soothing pastel shades or off-whites will ensure the room feels relaxing and spacious,’ adds Helen Shaw, director, Benjamin Moore UK.

Heat the oven to 170C/Gas 3. For the cakes, mix the dry ingredients together, then mix in the oil, grated carrot and eggs. Spoon into the tins and bake for 30 mins. Remove from the tins and cool.

For the filling, whisk the cream cheese, double cream, icing sugar and zest. Set aside in a piping bag. Once the cakes are cool, cut a deep slit into the centre of each, leaving 2cm uncut at each end. Snip a small end off the piping bag, insert into the gap and squeeze until full of cream. Melt the chocolate and spoon over the cakes. Scatter over the almonds.

How to reseal
YOUR BATHTUB
I
Got an afternoon to spare? Give your bath a makeover by replacing discoloured, split or mouldy sealant
f you love a nice hot soak in the bath but the sealant around the edge is looking a bit worse for wear, it’s easier to sort out than you might think. You don’t need to shell out for a professional to do it – this is a DIY job that you can take on yourself. Invest in some sealant remover, sealant and a cartridge gun, and do it in an afternoon.
Replacing bath sealant is a quick, cheap job you can do yourself

PREP YOUR BATH
Apply sealant remover to the old sealant around the bath and leave it to dry for 10-15 minutes. Remove the sealant with a plastic scraper (be gentle so as not to damage the bath). Scrub the area using a bathroom cleaner and leave it to dry thoroughly.
APPLY THE SEALANT
Fill the bath with water (the weight of the water will ensure that the sealant won’t crack when the bath is used later). Insert the sealant cartridge into your sealant gun and cut the nozzle off the end of the cartridge so that its size corresponds with the gap to be filled (it’s best to start small and then you can cut further down for a wider hole if you need it). Perch yourself on the edge of the bath, press the trigger and apply the sealant to the gap in one smooth movement. Take care not to overfill.

Carefully remove any excess sealant with white spirit before it dries. Leave the sealant to dry according to the instructions on the cartridge, and then you can empty the bath.

Place the strawberries in a saucepan with the caster sugar and heat gently. Lightly mash to release some juice. Add the Pimm’s and simmer for 2 mins. Stir in half the shredded mint leaves, then blitz in a food processor until smooth.

Strain through a sieve, then stir in the rest of the mint leaves. Toast the crumpets, then layer up with a spoonful of the coulis between each. Top with Greek yogurt, more coulis and the extra strawberries.

TAKES 30 MINS SERVES 4 3 medium eggs 50ml whole milk 100g gluten-free oats 1tsp glutenfree baking powder 15g dill, plus extra to serve 3 spring onions, washed, trimmed and cut into chunks 200g frozen petits pois 5g unsalted butter 200g smoked salmon Tzatziki dip, sprigs of dill and lemon wedges, to serve

In a food processor, blitz the eggs, milk, oats, baking powder and 15g dill with ¼tsp sea salt and a grind of black pepper. Once the mix is smooth, add the spring onions and blitz again. Put the petits pois in a bowl and pour over boiling water to thaw them. Drain, add to the mixture and blitz again. Melt the butter in a frying pan and use a small ladle to add a spoonful of mixture. Cook for about 3 mins, then flip and cook on the other side for 3 mins. The mixture should make 8 fritters. Top each fritter with a slice of smoked salmon and a dollop of tzatziki, then sprinkle with dill and a squeeze of lemon.

Heat the oven to 190C/Gas 5. Cook the chorizo for 15 mins, until crispy. Meanwhile, in a saucepan of gently simmering water poach the eggs for 3 mins or until cooked to your liking. To make the Hollandaise sauce, whizz the egg yolks in a food processor for 1 min. In a small pan heat the lemon juice and white wine vinegar until steaming. With the processor running, gradually pour in the hot lemon juice and vinegar, then slowly pour in the melted butter until the sauce is thick. Season and keep warm over a pan of warm water. To assemble, slice the muffins in half and toast. Put 2 halves on each plate, and top each with chorizo, egg and Hollandaise sauce, sprinkled with paprika.

TAKES 10 MINS SERVES 6 250g ricotta cheese 1tbsp icing sugar ½tsp cinnamon 1tsp lemon juice 100g walnut halves 12 slices sourdough bread 40ml honey Micro herbs, to garnish (optional)

Add the ricotta cheese, icing sugar, cinnamon and lemon juice to a bowl. Whisk together until the mixture is light and fluffy. Place a dry frying pan over a medium heat. Gently toast the walnuts, shaking the pan from time to time, until fragrant. Toast the bread to your liking, then spread each slice with the spiced ricotta mixture. Sprinkle over some walnuts and a drizzle of honey. Garnish with micro herbs, if using.

FRENCH TOAST BERRY LOAF TAKES 1 HR, PLUS SOAKING SERVES 6 500g sourdough loaf 2 large eggs, plus 1 egg yolk (save the white for glazing) 100ml double cream 250ml whole milk 1tbsp vanilla bean paste 1tsp cinnamon 150g blueberries 100g raspberries 15g demerara sugar 2tbsp maple syrup, plus more to serve Icing sugar, to dust

Heat the oven to 180C/Gas 4. Use a sharp knife to make deep slices across the loaf in both directions, ensuring you don’t go all the way through, to create a grid pattern.

Mix the eggs and egg yolk, cream, milk, vanilla and cinnamon in a jug. Place the bread in an ovenproof dish and pour the egg mix over. Leave to soak for at least 20 mins. Sprinkle half the fruit over the bread, pushing it into the grooves. Spoon over any remaining liquid. Brush with egg white, sprinkle over the demerara sugar and bake for 45-50 mins, until set. Top with the remaining fruit, drizzle over the maple syrup and dust with icing sugar. Serve warm.

320g ready-rolled puff pastry 150g chestnut mushrooms, halved 100g smoked streaky bacon, 3 rashers reserved, the remainder cut into chunks 1 small leek, halved and finely sliced 10g parsley, finely chopped 50ml full-fat milk 150g half-fat creme fraiche 2 large eggs 1tsp nutmeg 4 quails’ eggs YOU WILL NEED 25cm fluted tart case Baking beans

Heat the oven to 200C/Gas 6. Unroll the pastry and use to line the tart case. Use a serrated knife to trim the
excess. Prick the base all over with a fork, line with foil and baking beans, and blind bake for 40 mins; remove the beans and cook for a further 5 mins. Meanwhile, fry the mushrooms in a pan, tossing for 5-10 mins until golden. Remove and set aside. Next, fry the bacon until crispy. Add the cut bacon to the mushrooms and set the full rashers to one side. Wipe the pan and gently sweat the leek for 10 mins. Once soft, mix into the mushroom and bacon mixture along with the parsley.

In a bowl, mix the milk, creme fraiche, eggs, nutmeg and ¼tsp salt. Press the bacon mixture into the tart base. Pour over the milk mixture and lay the whole cooked bacon rashers on top, leaving space for the quails’ eggs, which you will add later. Reduce the oven temperature to 170C/Gas 3 and cook the quiche for 25 mins. Use a spoon to press 4 shallow holes on top, and crack a quail’s egg into each cavity. Return to the oven for 20 mins until the quiche is set in the middle. Allow to rest before serving.

TAKES 2 HRS 20 MINS SERVES 4 1tbsp oil 120g chorizo, diced 1 onion, finely sliced 2 x 400g cans mixed beans, drained 50g brown sugar 1tbsp black treacle 1tbsp English mustard ½tsp smoked paprika 400g can chopped tomatoes 500ml beef stock Crusty bread, toasted, to serve Parsley and sliced green chilli, to serve

Heat the oven to 180C/Gas 4. Heat the oil in a large ovenproof pan and cook the chorizo and onion for 5 mins. Stir through the beans, sugar, treacle, mustard, paprika and tomatoes. Pour over the stock then cover with a lid. Transfer to the oven and cook for 2 hrs until the beans are soft and the sauce has thickened. Serve the beans on slices of toast. Sprinkle over a little parsley and green chilli.
MAPLE-GAMMON, EGGS AND RÖSTI TAKES 40 MINS SERVES 4 4 medium waxy potatoes, peeled 1tbsp olive oil, plus 1tbsp 1tbsp goose fat or butter 4 x 200g gammon steaks 2tbsp maple syrup 4 eggs Watercress, to serve

To make the rösti, add the potatoes to a pan of boiling water and cook for 6 mins. Drain, then when cool enough to handle, grate coarsely. Season generously. Add half the oil and goose fat or butter to a large frying pan, add the grated potato in 4 little circles and cook for 10 mins, until crisp. Flip onto a plate and add the remaining oil and goose

fat or butter to the pan. Slide the rösti back into the pan, uncooked side down, and cook for another 10 mins, until crisp. While the rösti is cooking, bring another pan to a medium heat with the remaining 1tbsp oil. Fry the gammon steaks for 3 mins on each side, until cooked through. Pour over the maple syrup and let it bubble for 1 min until glazed. Meanwhile, poach the eggs in a saucepan of gently simmering water for 3 mins or until cooked to your liking. Serve with the rösti and gammon, with some watercress on the side.

Mix the beans, tomato puree and vinegar with 3tbsp water. Arrange on the baking tray in 4 blobs, along with the mushrooms, sausages, onion and tomatoes. Cook for 5 mins. Mix the oil and dried herbs; add the bagel chunks and toss to coat. After 5 mins add the spinach to the tray in 4 small nests. Crack an egg into each one and season with sea salt and pepper. Place the bagel on top and return to the oven for 15 mins. It’s ready when the whites of the eggs are cooked. Drizzle over the sriracha to serve.
