Floating on air Keen to nurture their connection with nature, Neil and Tracy Mulder asked architect Dal Venables of DMV Architecture to design their home at St Francis Links Golf Estate with this intention in mind. “A lot of inspiration was drawn from the site,” explains Dal. “The house was positioned as far forwards to the north as possible to maximise the link to a nearby greenbelt, while still creating privacy from neighbours and protection from the wind.” The central part of the building between the east and west wings is made up almost entirely of glass, creating a seamless feel between the interior and the outdoors. Steel columns and glass sliding doors, as opposed to the brick walls used in the bedroom (left) and living room (right) on either side of the pool, make the house feel light and airy. There’s a view of the outdoors from every part of the house, even when the doors are closed. When the doors are open, there is an easy flow from the inside out and the home and its surrounds form a delightful whole. The house was built on a brick plinth that contrasts beautifully with the white textured walls; this makes it seem as if the building is floating above the ground. >>

fresh ideas

A sensational shower The main en-suite bathroom in Sam and AJ Corbett’s home in East London is a feast for the senses. It’s situated on the upper level of the house, overlooking the pool and garden as well as a greenbelt and the Nahoon River; stack-away doors open onto a private deck. “We have a stunning 360° view and since there are no homes in front of or next to us, privacy isn’t an issue – we look directly into the treetops,” explains Sam. The decorative glass panels in the shower were designed by AJ, an architect at TCN Architects. He used an image of exotic fauna and flora purchased from Timorous Beasties in London. AJ also designed a Perspex baobab tree used to hang towels; it was laser-cut by Zenith Laser Cutting East London. “Originally, we used it as a Christmas tree but now we enjoy it all year round,” says Sam. The windows boast laminated SolarVue glass to cut down on UV radiation. In addition, roller blinds are used to shade the bathroom in the late afternoon.

what’s new PUT A RING ON IT Flower Ring is the latest design from Skinny laMinx. It’s a two-tone floral screen-print on an upholstery-weight 100% cotton slub, and it’s available in two colourways. Designer Heather Moore was inspired by the common roadside weed Ribwort Plantin’s ring-like flowering pattern. “I hope the design will open people’s eyes to the ordinary treasures all around them. Even roadside weeds can add beauty and enjoyment to an everyday moment,” says Heather. Flower Ring cushions are available in all shapes and sizes (R630–R795 each, skinnylaminx.com) and the fabric can be bought as running metres, too (R765/m).

Mr Price Home has taken its most popular patterns and prints and made them available as 1m, 2m or 5m loose fabric pieces (from R179.99) so you can customise table runners, laundry bags or scatters – be as creative as you like! Available in selected stores and online (mrphome.com).

The Tangent heated towel rail range by Jeeves incorporates several unique cutting-edge designs and with six finish options (pictured here: Tangent L Ladder in Antique Rose Gold R8 535, jeeves.co.za), there’s something to suit every style!

WHO LIVES HERE? Derick and Renette Opperman WHERE Napier in the Overberg, Western Cape SIZE house and stoep 185m², outside building 60m²

The Oppermans fell in love with the blue gum trees. “The dappled light they create on the stone walls is very peaceful, while the breeze whispering gently through the branches is also very soothing,” says Renette. The couple made the shutters for their home’s façade from old floorboards.

“The central double-volume living space accommodates a library high up against one wall,” explains Renette. She and Derick single-handedly built the mezzanine level on two reinforced blue gum beams.

The family portraits are original charcoal sketches from Renette’s Terblanche grandparents’ house. The built-in bookshelves were anchored to the walls.

rangely interesting” is how Renette Opperman sums up her and hubby Derick’s first impression of the barn-shaped stone house they bought in 2017. The house might ook as if it has always been here on the outskirts of Napier but, in g in the shade of an avenue of blue

Renette’s story starts with a stoep discussion that took place in Middelburg, where Derick worked as an engineer and she ran her own graphic design studio. These days, they are “semiretired”. Renette has an online store, The Album Company, which sells traditional photo albums and journals, while Derick says he “does what Renette tells him to do”. “One evening during loadshedding, we were sitting on our stoep gazing at the stars when we realised that there are so many places in our country where the stars shine so much brighter,” says Derick. “On our next holiday, we took a road trip through the Karoo, looking for a small town that would give us the opportunity to live closer to nature.” Back in Middelburg, Derick saw an advert for a property that Renette describes as “a square stone prison”. Nevertheless, on their next trip, they took a detour via Napier to see the house. The previous owner had meanwhile moved to a retirement home and the unfinished house was being rented out. “There was only one light in working order,” Derick recalls.

“And only two of the doors could open. The wind whistled through the broken windows.” Back in Mpumalanga, it wasn’t long before they were dreaming of the double-volume space. “We began to warm to the idea of becoming resident-renovators,” says Renette. By August 2017, the house was in their name, with the understanding that the tenant could stay on until they moved to Napier two years later. “When we arrived in town at the end of September 2019 with all our earthly possessions and very few concrete plans, the furniture removal guys thought the stone structure was in fact a storage space, and not our house,” says Renette, laughing. “They got a kick out of us telling them to put a piece of furniture in the ‘kitchen’ or ‘bedroom’ – merely different corners of the same dusty hall.” A blue painted floor indicated where the kitchen, equipped only with a single stopcock and a rusty steel sink, was located. The bathroom, at least, was functional with a rusty bath and a basin on an inadequate wooden structure, while the sun peeped through a number of holes in the corrugated iron roof. Cloth draped over the blue gum beams created a makeshift bedroom. That same evening, they dragged themselves to a guesthouse and Renette remembers how their initial excitement about a brand-new beginning was dampened. “We couldn’t move without falling over furniture and boxes, and there wasn’t a single cupboard or shelf in which to pack our things away...” But this couple – category winners in our 2021 Fix it with Flair competition – are not easily deterred. >>

A space mind shift The stoep was initially open but once the roof had been put up, the space became liveable. “For starters, we were able to move the 4m-long stoep table out of the house,” says Renette with a sigh of relief, even now after all these years. As work progressed, the Oppermans realised they needed professional help and called on Hermanus architect Luke van der Westhuizen. “Luke enhanced our home’s Cape Georgian style by making a few external changes. His vision, knowledge and enthusiasm were invaluable, although we sometimes deviated from his plans.” For more than a year, a temporary bedroom was set up in the spacious living area. “The stock for my online store, Derick’s tools, 12 boxes of books and everything that had previously filled nine double-door built-in cupboards was stacked in our future bedroom,” recalls Renette. Luke had a solution for this: a storeroom for Renette’s stock, a workshop for Derick and a guestroom – 60m² in total – were added on the northern side, creating a courtyard between the house and the new building. >>

Luke, the architect, suggested that they use an old kiaat front door (a second-hand find) to create a pantry cupboard. et amidst the leafy country lanes and lush paddocks of Noordhoek, a sleepy suburb in the farthest reaches of Cape Town’s Deep South, a contemporary barn-style home that Francien van Eck and Casey Bertie share with their children, Freya and Felix, is the perfect expression of their desire for simplicity. As a commercial photographer and the owner of a stills production company respectively, Casey and Francien fell in love with the rural atmosphere of this horsey neighbourhood and its incredible 8km-long beach a decade ago. “I was born in Holland and grew up in London,” says Francien. “But when I arrived in Cape Town for work about 15 years ago, Noordhoek was the first place I stayed. Of course, in contrast to Europe, the generosity of space, the proximity and instant access to nature and the ‘gezelligheid’ of the English, Afrikaans mix made me feel right at home.” A few years later when Francien, who had by then moved to the city centre, met South African Casey and discovered that he too loved Noordhoek, the seed was sown to move there one day. >>

“I remember the first time we came to look at this property,” says Casey of the 1 256m2 plot. “It had been unoccupied for a while, so it was wild with tall grasses and overgrown vegetation but as soon as I set foot on the land and saw the well-established trees and views of the mountain, I knew that this was where we would make our home.” A chance meeting with husband-and-wife architects Saskia Vermeiren and Matthew Beatty, who also live in Noordhoek, led to them working together on the design of their new home. “Unfortunately, our initial brief for a contemporary black timberclad barn with large windows had to be shelved as it would have totally blown our budget,” says Francien. “Luckily, Saskia and Matthew took on the challenge of coming up with a beautiful U-shaped design that was within our means.” Oriented towards Chapman’s Peak with privacy from the road, it was the perfect realisation of Francien and Casey’s brief. But the builders had no sooner started laying foundations when they realised that in order to execute the design, they’d have to chop down an old oak tree. “The four mature oaks on the plot were a major drawcard when we bought the property and we couldn’t get our heads around removing any of them,” says Casey. “So, in the end, as much as we loved the concept for the original layout, we decided to go for an L-shaped design, which not only saved the tree but allowed for more light to enter all of the living spaces too.” >>

reader home Decked areas, a pergola and a courtyard ensure that there’s an outdoor space to suit every season.

Making the connection Today, the house comprises two pitched-roof barn structures that sit perpendicular to one another. The front ‘public’ barn accommodates the living and dining areas, kitchen and scullery, all flanked by a pool and al fresco dining area. The second more ‘private’ barn is home to the main en-suite bedroom on the lower level and the children’s bedrooms on the upper loft level. Saskia and Matthew cleverly connected the two barns by way of a single-level bridge building that houses a home office and an indoor/outdoor bathroom. “Often, connector areas tend to become nothing more than corridors; it was important that it have a life and distinct function of its own too,” says Saskia. And in response to Francien and Casey’s request for a connection between every room and the outdoors, a veranda that runs around the entire house was integrated into the design. When it came to materials, the couple went with what they liked in a price bracket they could afford – with great results. Namely, bagged brick that fitted in with their contemporary aesthetic while also fulfilling their desire for texture. At the same time, floor-to-ceiling industrial-style windows further enhanced the connection between indoors and out. >>

On a budget “We put money into those elements we knew we couldn’t change easily and then gave ourselves flexibility in areas where we could,” explains Francien. For example, while many would consider melamine the material of choice for a budget kitchen, Francien and Casey opted for birch plywood as it was within budget but also because it has a warm, textural aesthetic. They also knew that down the line they could upgrade the countertops to marble. “We work in a trend-led industry where we’re exposed to new ideas all the time, so we get bored quickly,” says Francien. “Seeing our kitchen as an evolving space allowed us to experiment without feeling guilty about wasting money and materials.” Using ply in the kitchen was Saskia and Matthew’s idea and one they have used not only in their own home but in numerous other design projects too. “Birchwood ply is sustainable, inexpensive and virtually bullet-proof – and we love how it looks when used in new and contemporary ways,” says Francien. Here, stained dark with the counter wrapped in black melamine with a bull-nose edge, it’s simple yet stylish. “We were warned against a black kitchen because it chips and wears easily. And it has, but it’s so easy to touch up that I’d do it all over again.” That Francien and Casey perfected the art of finding stylish fixtures to suit their aesthetic without blowing their budget goes without saying. “It felt good to put simplicity and affordability above all else – it made me a lot more decisive,” says Francien. And when you consider that they spent just R15 000 on their kitchen cupboards and another R22 000 on sanitary ware for the entire house, you can’t help but be impressed.

Designed as a wet room, the bathroom and shower located in the bridge between the barns are inspired by Japanese saunas with industrial sandblasted doors in place of walls to allow light to filter through.

[ GOING FORWARD ]

Upfront, the couple devised a master plan with Saskia and Matthew that maps out a holistic view of how they’d like to live going forward. “The current layout was tweaked to ensure that those things we want to add later can be easily accommodated without having to undo anything,” says Casey. Armed with a plan for the various additions they’d like to incorporate such as a garage, a proper entrance hall with a boot room, a studio and a guest flat, they can tackle the various projects as and when their budget allows. “We love what we’ve created,” says Francien. “A simple home uniquely suited to us as a family.”

group of hens scurry off into the wild garlic while a cheeky rooster – whose path we’ll cross again in the early hours of the morning – watches us suspiciously from behind the purple blooms. But other than this, there are no signs of life here on Illze and Wouter Muller’s dairy farm outside Herbertsdale, 42km inland from Mossel Bay. The climate, landscape and two sleek cypresses standing guard over a historic white barn all hint strongly at the Karoo, which lies just a half-hour’s drive away over the Langeberg mountains. Wouter is the sixth generation Muller to farm here. The 172-yearold barn right next to his milking shed stood empty before opening its doors last year as Langskuur, a stylish self-catering overnight stay for tourists keen to take a detour off the N2 on their way to or from the Garden Route. But the ramshackle building had to take a backseat when it came to being fixed up, as Illze first waved her magic wand over the farm garden (Home, November 2015) and then the homestead (Home, April 2015). It was Langskuur’s turn when the Muller twins, Hendrik-Wahl and Anet, announced that they wanted to live and work on the farm. With her flair for décor and love of architecture, and ably assisted by long-time friend Hannes Oosthuizen, Illze began renovating the unused old barn, all the while keeping its historical value firmly in mind. Her inspiration? The building itself.

46 home April 2022

Between 1850 and 2021, Langskuur had many incarnations: as a storeroom for animal feed, a sheep-shearing shed, the home of an enormous milk tank, a workshop (complete with a pit for repairing farm vehicles), and even a farm shop. Throughout its now elegant interior, there are elements that pay homage to this history, from antique farm equipment to an old workbench. Illze emphasises that she did not regard this as a renovation project, but rather as a preservation project. “I was guided by the historical value, the architecture, the space, building materials and all the uses the structure has had over the years. “Wouter and I wanted to preserve the beautiful building and integrate it with the garden. We wanted to restore it to the original structure that his great-grandfather’s brother George Frederik built in 1850. It had to be historically accurate as well as practical.” The raw clay brick structure had undergone all manner of unappealing additions over the past 170 years, such as an afdak and interior walls that divided the spacious barn into three sections. These were all demolished. Closed-up windows were reopened and a wooden ceiling above the middle section was removed. “Wouter was so supportive throughout the project,” says Illze with a serious face, but then she bursts out laughing: “Even when the bulldozer’s ‘teeth’ broke off after I insisted that the cement dams in front be demolished.” >>

Illze painted the checkerboard pattern on the floor to create graphic contrast with the other areas. The pit in which mechanical repairs were carried out on farm vehicles lies beneath the kitchen; Illze dreams of creating a wine cellar there. April 2022

So much soul As one would expect from a farmer’s wife who doesn’t let a cement dam stand in the way of her vision, Illze personally made sure that each and every finish and décor element stayed true to Langskuur’s original character as a barn. “It was a time-consuming process. Hannes and I made everything by hand: window frames, hinges, latches, shutters, sliders, pendant lamps, chandeliers, the steelframed screen for the bathroom, shelves and tables, to name but a few. It was great to see the building slowly coming into its own. “The story behind each piece of furniture was also important to me. Using a mix of old and new handmade elements, I wanted to give people a sense of permanence and timelessness, and make them aware of the tranquillity and spaciousness inherent in a structure with so much soul. “I wanted to pay tribute to the building by transforming its beautiful features into focal points. I deliberately left the two open attics at each end of the barn as is in order to create a loft feel.” The simple white colour scheme – Illze’s favourite palette – perfectly complements the wooden furniture, which mostly consists of pieces she already had on the farm. “White keeps the space light and peaceful, with clean lines. A few black elements create balance and the steel is a nod to the industrial activities that previously took place in the barn,” Illze explains. >> April 2022

reader home Illze inherited the three-quarter beds in the separate bedroom (formerly the milking shed) from her grandmother, Elize Dohle; these were given a coat of white paint. The wall-mounted concertina lamps (right) are Hannes and Illze’s handiwork.

Cosy in a barn Illze clearly has the necessary creative mindset and understanding of space and proportions to create a cosy atmosphere in a long, narrow 150m² building. Langskuur is now an open-plan living space in which different functional areas have been clearly demarcated, but without using walls. The northern end houses a kitchen, the living area is in the middle, and a sleeping area and bathroom are located at the southern end. A back door opens onto a courtyard that leads to a second 58m² building. This was the dairy decades ago and Illze converted it into a second bedroom with its own entrance and bathroom. The old feeding trough now forms part of the en-suite bathroom. “The size of the barn was a bonus because I like the luxurious atmosphere created by an open space,” Illze explains. “I used a variety of visual elements to create different ‘rooms’ in the open-plan barn. I painted squares on the floor in the dining area,

used plants as partitions, and put down rugs to demarcate the various areas. “The handmade doors and windows and original building materials such as the wooden beams, corrugated iron roof, cement floor and rough walls created plenty of warmth. Rattan and wooden furniture offers loads of texture, while natural textiles such as linen, wool and animal hides play off against a neutral palette.” Herbs and fruit from the lush secret garden – so named due to all the nooks, crannies and winding paths it contains – form part of the seasonal décor accessories. Juicy summer fruit such as figs, pomegranates and prickly pears are stacked high in white ceramic bowls, while baskets and vases overflow with huge spinach leaves and fresh herbs. But the real magic comes with the golden afternoon light that gives the ripe pomegranates an even deeper rosy hue, with Langskuur forming a stately structure in the twilight.

Before WHO Kirsten Lloyd WHERE Johannesburg

Full of personality!

W

hen interior designer Kirsten Lloyd of Lo-Ki Interiors was asked to update an old-school Johannesburg kitchen, her main aim was to find a beautiful feature tile and introduce lots of unique pieces to set the space apart. “The old kitchen was dark and dated, the layout wasn’t as practical as it could be and it lacked character,” explains Kirsten. “The homeowner wanted to create a light and airy atmosphere with whites and creams, and add quirky touches to show her bold personality. The colours had to complement the existing blinds and the layout needed to be more practical. Gold accents were a must!” Kirsten and her team set out to open the space up as much as they could to make it feel light and bright. A dividing archway wall that prevented the bottom floor from having an open-plan design was demolished. A false ceiling was added to allow space for new lighting, and the floor was retiled. “We worked closely with our carpenter to get the most out of the kitchen layout; we moved the pantry cupboard and added open shelving to create a modern kitchen,” explains Kirsten. “The cabinetry was kept simple so as not to distract from the splashback and handmade pendants.” Kirsten describes the style of the kitchen as feminine with a twist. “I love the splashback and the impact it makes without being too ‘in your face’,” she says. “For me, the mustard accents really make this kitchen unique; they also tie all the spaces together.” >> E X PERT A DVI CE HAVE FUN! Kirsten Lloyd, interior designer at Lo-Ki Interiors, shares her tips on kitchen renovations: • Don’t shy away from colour or some kind of wow factor – let your personality shine through! • Consider your current kitchen and what annoys you about the layout; make a note of any issues in as much detail as possible so your designer can solve them for you. • Identify one or two features that you’d like to spend money on and cut back elsewhere. • When trying to decide on an aesthetic, look at a wide variety of spaces to identify a common theme and go from there. • Add complementary textures such as wood and woven textiles to make your space feel warm and inviting. WHO Andrew and Liz Milne WHERE Paarl

An urban work of art

uying the house right across the street from them meant that Andrew and Liz Milne didn’t have to travel to a building site everyday – plus they had all their tools nearby. “Proximity aside, this early-1950s house was pretty much untouched; it was like a time capsule,” says Andrew. “From the outset, we decided to preserve much of the original structure, from the fenestration to period light fittings. We made a clear distinction

between the design style of the new additions and the retained original character.” The entire external load-bearing wall of the old kitchen was demolished and an extension of 8 x 6m added to form the new open-plan kitchen and dining area. “We had a long list of objectives for this project but two of the most important were that the original house merge seamlessly with

the new addition and the entire house be on one level once you enter the front door. To achieve this, the back garden was excavated to about 1m deep to match the level of the original house,” says Andrew. “After removing the external wall of the old kitchen, we created a ‘transition zone’ which allows the 70-yearold space to merge into the new kitchen addition, which has even higher ceilings. This solution was a eureka moment for us.”

The Milnes wanted lots of natural light, high ceilings and a design style that has an urban loft/art gallery look and feel. “To achieve this, we used lots of natural elements such as oak countertops, slate floor tiles, steel ‘school windows’ and exposed brick. We wanted something that not only looked good but could function as a hard-working kitchen, where any chef would feel at home.” >>

E X P ERT A DV IC E THE MILNES’ RENOVATION TIPS • Start with a wish list of what you want to achieve and base your design around these goals. • Don’t rush the design process; you need to develop a feel for the space. We started with various design concepts and in the end, we modified our plans to achieve our goals. • Being an owner-builder isn’t for everyone; decide if you have the time available to tackle a big project. If you don’t want to be handson, the selection of a good building contractor with references is key. • When doing your costings, don’t overcommit on your budget. Allow for contingencies, supply delays and extras; these can easily add 20% to your initial budget. >>

Andrew mixed lime powder with water and applied this to the walls with a brush. He says the trick is to make it look random and irregular, so he would rub down certain bricks to remove lime and further develop the weathered aesthetic. enovating while renting is often not possible. So Dirkie and Nikkie were thrilled when given free rein to update their current kitchen. “Freddie and Thia Kirsten are the best landlords one could hope for,” says Nikkie. “Their only request was that we include terracotta tiles, a reed ceiling and wooden window frames to complement the farm-style look of the cottage as well as the main homestead on the property.” When the couple started renovating in 2021, the plan was to make a “tiny hole” in the exterior wall to incorporate a small outside room into the kitchen, so they could have a separate scullery. But this soon turned into a full-blown renovation and the kitchen was gutted. Luckily, Dirkie is a builder in partnership with his brother, which meant they could do everything on a tight budget with the help of their own team. Inside, Dirkie built a fireplace and installed a wooden spiral staircase to the loft above, while Nikkie was responsible for the finishing touches. “We painted murals, made photo ledges, stencilled the floor and photographed alpacas and camels to serve as art in our home,” says Nikkie. “We spent lots of evenings painting late into the night. Dirkie also kept a close eye on Facebook Marketplace and online auctions for the right furniture, which came from as far as Knysna.” In the end, it was totally worth it. “Our home is cosy and spacious and guests no longer have to stand around or sit outside in the cold when we have a braai!” >>

E X PE RT A DVI CE BRICK-BUILT FIREPLACES “Ensure that your indoor braai matches the style of your home, or it could be an eyesore,” says Dirkie Kotze of DKR Builders in Wellington. Follow his tips: • A fireplace that is intended only for generating heat can have a smaller opening that is closer to floor level. It would be best to invest in a cast-iron stove as it will be more efficient for this purpose. • For a hearth used as a fireplace, braai, pizza oven and for making potjies, the ideal opening is 1200mm wide and 725mm high. A depth of 800mm will prevent the cook from getting too hot. Our fireplace is 780mm from the floor, which is a comfortable height for a braai grid. • The most important aspect of a brick-built indoor fireplace is that it shouldn’t smoke. To avoid this, the ratio of the fireplace opening to the chimney opening is of utmost importance. A general rule of thumb is a ratio of 1:10. Our fireplace opening is 1200 x 725mm, which relates to 0.87m². Hence, the chimney’s opening surface should be a tenth of the fireplace opening, which is 0.087m². • It’s also important that the chimney is higher than the tallest point of the roof to ensure that the warm air is extracted by the chimney. The chimney must be built as smooth as possible on the inside to help with the extraction of the smoke. • Add a fireproof light to the inside of the fireplace so you can see what you’re doing when cooking. • If you use klompie bricks or any other fired clay bricks on the inside, it’s advisable that the base bricks are laid on a bed of sand on top of the lintels. Use cement only for the front row to prevent it from cracking. • Before taking on a DIY project like this, talk to a professional to find out what kind of foundation is required, and which design will best suit your home. ou certainly have a lot of trust in your friends if you hand over the keys to your house and give them free rein to renovate it, but that’s precisely what Aleit Swanepoel, founder and chairman of the Aleit Group, did when he moved into his new home in Somerset West three years ago. “Fifteen years ago, I took care of Corlene Fenwick and Flip van Rooyen’s wedding plans. These days, Corlene is my family doctor and Flip is a master builder and owner of DB Spaces,” says Aleit. “My only brief to them was that the exterior of the house must be black. I left the rest of the revamp to them.”

I can give other people’s houses a makeover but I’m totally at a loss when it comes to my own! – Aleit

The mastermind behind the kitchen was Gerrie van Dyk of Galactic Kitchens & Cupboards, who used MDF with black Maxximatt polyester laminate for the outside of the cabinets. It has a durable finish that retains its colourfastness and has also been treated to resist scratches and chemical stains – ideal for use in a kitchen! WHO Aleit Swanepoel WHERE Somerset West

Once his friends were done, the old kitchen with its white melamine cabinets was a thing of the past. In the process, an adjoining office was incorporated into the new openplan kitchen, increasing the space by a third. Deep brown bamboo cabinets create a warm and earthy feel in combination with the new cement floor, while large marble tiles form the stove splashback. The showstopper is the black I-beam and metal grid on the ceiling. This serves a dual purpose: it’s a support structure for the garage above the kitchen and it adds aesthetic value. “I think it frames the kitchen beautifully,” says Aleit.

The island slab, like the cabinets, is made of oak to add warmth to the space; the other countertops are made of leathered granite, which has a slightly rough texture.

hen Sariaan Weich, an anaesthetist and ardent chef, moved into her new home two years ago, she soon realised that the kitchen wasn’t going to work. “I come from a large family of foodies and everyone always hangs out in the kitchen – Sunday lunch together is an institution,” she says. “In this kitchen, there definitely wasn’t enough workspace to prepare food for 20 people; nor for guests to gather around.” Initially, Sariaan simply bought a new stove, but later she was ready for a brand-new kitchen. Drawing up plans was merely a formality as she knew exactly what she wanted and what needed to change. “My search for a builder was a challenge and the first quote left me feeling as if I’d had ice water thrown in my face!” she says, laughing. Fortunately, she was able to approach renovation guru Ulrich Koster, who has helped her with previous projects. He hired the necessary subcontractors and completed the new kitchen within six weeks. Firstly, the exterior wall was demolished, the kitchen enlarged and a new roof installed over about half of the house. “We moved some interior walls to make the kitchen more spacious,” says Sariaan. Then came the fun part. “Louise Malherbe of Designed by Louise immediately understood what I wanted and was as excited as I was about my ideas. I like the combination of oak cabinets and granite worktops. It’s beautiful but also practical, as my kitchen has to work hard,” explains Sariaan. “I wanted a sociable kitchen and that’s exactly what it is. It’s one big happy place!”

DESIGN TIPS

U-shaped kitchen

L-shaped kitchen

The idea of designing your own layout might feel a little daunting, but don’t stress! Here are a few tips from the Milestone team, Silvia and Sabrina Miles: • The working triangle The three key elements in any kitchen are the stove, sink and fridge. For a smooth workflow, movement between these should not be obstructed. If you have a separate scullery, it’s a good idea to have a prep sink in your cooking area. • Work areas Allocate space near the stove for food preparation and storing ingredients. Either side of the stove is an ideal spot for pot and cutlery drawers, while the wall above is perfect for an easy-toreach Milestone Kitchens Spice Rack or Wall Unit. Sufficient space next to the sink to drain washed dishes and stack dirty ones is essential, unless you have a dishwasher, in which case be sure to position it near the sink so you only have to plumb one area. A surface near the fridge and pantry cupboard where you can unpack groceries is a good idea.

Island floor plan

• A central island with an overhead light is very popular in a modern kitchen. If you have space for one, it’s a good idea to position it near the stove and not too far from the dining area so you can use it to prepare and serve meals. But make sure that it doesn’t interfere with your working triangle. • Good task lighting is very important – and if you can install more windows, do it! • Think carefully about surfaces and finishes. With freestanding kitchens, you can mix and match a variety of worktops. For example, you could use stone around your sink area, wood on your island and stainless-steel for a pastry table. • Create symmetry with shapes, colour and spacing. For example, you could put your tall units (such as the Grocery Cupboard and fridge) on opposite ends of a wall with a stove in the centre. • When it comes to colour, choose a palette and stick to it. Use bold shades to create features and neutral tones for a more uniform look.

* Winner’s order must be placed by 31 March 2023; Biddulphs International will do free delivery of the kitchen anywhere in RSA. See our competition rules on page 136. milestonekitchens2010

Quick questions

Q: My cement floors are sealed with TFC Top Seal; I add a layer every now and again, but they look a bit dull. What is the best product to use for a gloss finish as well as ease of application and maintenance? – Anton and Jenni Els, Port Edward A: Woodoc 45 is the recommended sealant for cement and tiles; however, I wouldn’t use Woodoc 45 over an existing sealant, advises Frikkie Greeff of Woodoc (woodoc.com). Your best option would be to continue with TFC Top Seal to avoid any problems with bonding.

Q: Where can I buy the wooden bar stools featured in your October/ November 2021 issue? – Annamarie James, Noordhoek A: They’re from online furniture store Cielo (cielo.co.za).

Q: How do I get ink off the marble top of a washing table? – Suzette Venter, Brits A: Pour enough rubbing alcohol on the spot to cover it completely, advises Bibette Prins of Plan B Vintage second-hand store (facebook. com/PlanBDecor/). Leave it on for a couple of minutes and rub with a nylon sponge. Use paper towel to absorb the rest of the alcohol.

Q: I love the ceramic swans featured on your December/January 2022 cover; where can I get them? – Sonet Barnard, Somerset West A: They were custom made by Ceramic Matters (021 864 1722, ceramicm@mweb.co.za) for A.A. Badenhorst Family Wines for the launch of their Swan Tonic range. >>

STOEP

The cane patio set boasts a contemporary coat of black paint, while a variety of plants and a combination of wood and rattan accessories complete the picture.

Overall, the house was in good condition, but the bathrooms had to be completely redone. Beyers’ dad Johan took the photographs on the wall.

A few small changes Jolindi and Beyers moved into their old Cape Dutch house in Arcadia, the oldest suburb in Pretoria, in 2016. The building dates back to 1902. “The character of the house, its beautiful wooden floors, pressed ceilings and interesting nooks were all amazing,” says Jolindi. “The huge trees on the property and the historic surroundings sealed the deal and we signed the purchase contract.” Fortunately, the house had been very well looked after over the years and needed only a few small changes. They replaced the lights and some of the built-in cupboards, sanded and sealed the floors, and did minor repairs. Jolindi’s love of beautiful décor stems from her childhood. “My mom was always busy with a creative project to beautify the house and garden, while my dad loved doing carpentry,” she says. “My granny also loved antiques, flowers and décor. My fondest memory was being allowed to redo my own bedroom when I was nine or 10 years old. I picked out the wallpaper myself, as well as the paint colours and new bedding. Every cash gift I received was used to buy décor accessories for my bedroom.” Beyers also comes from a family where everyone was always busy decorating a room or repainting a piece of furniture. Both of his grandfathers liked to make furniture and today there are numerous examples of their handiwork in the house. MAIN BEDROOM

A navy-blue, almost black, focal wall creates drama in the main bedroom. Steel rings with Edison light bulbs serve as reading lamps above the bedside cabinets. Most of the decorative carved furniture pieces are heirlooms.

I collect inspirational pictures and keep an eye on online stores for items that will complement the look. • Then I make two lists: one of what I already have and want to use, and a second list of things I need to save up to buy. • I also take note of the following: the colours in the room, the type of wood that is repeated and any metallic accents such as gold, bronze or rose-gold. For example, the wall in our living room is painted green because it is repeated only twice in the space: in the tiles by the fireplace and on the sofa. • Frames for the artworks were chosen to match the wood of the existing furniture pieces; they were supplemented by others in black or with a metallic accent such as gold in instances where some of the other décor items in the room were gold in colour. For the artworks themselves, I opted for modern botanical sketches, pen illustrations and artworks with ochre, black, grey and green to match the style of the space. • Elements are arranged from large to small and always repeated in multiples of three to ensure that the look is balanced in terms of colour and design. • I always keep the number of old-world and modern elements in balance so that the look still has sentimental value but creates a whole new aesthetic. >>

Décor and colour Jolindi describes her décor style as eclectic, romantic and artistic with “a bit of drama”. Although the house is built in a Cape Dutch style, the interior finishes tend to be more Victorian. “We decided to stick to a classic style that would suit the house but with a contemporary twist,” she explains. “We believe in combining old and new elements and wanted to bring in art and sentimental pieces that bring us joy. The most important consideration was that everything should be practical and comfortable.” Jolindi doesn’t hold back when it comes to painting either, as evidenced by the variety of colours on the walls throughout the house.

“My palette is more on the cool and dark side, featuring blue, green, white, grey and black, with accents in ochre. These hues have a calming effect. Only a few walls were painted in dark colours – this still creates an open feel but with contrast.” A variety of plants and flowers completes the picture. “I feel that each plant has its own personality and adds warmth to a home,” says Jolindi. “Plants work especially well in our house with its high ceilings, as many of them can be placed on shelves. The greenery creates life and makes a home feel friendly and welcoming.”

EN-SUITE BATHROOM

White metro tiles create a timeless look that blends well with the Victorian-style elements in the house; patterned floor tiles keep the look interesting.

This bathroom was refurbished with 1920s-style tiles, while new wooden panels painted in a deep olive add depth. Jolindi’s dad custom made the vanity to fit the space. Don’t move, improve! A run-down garden shed is now a comfy and convenient home office.

ith three boisterous kids in the house, Harold Verster found that online meetings and working from home presented a few challenges. He urgently needed to come up with another plan. An old corrugated iron shed in the garden that served as storage space for tools and building materials presented the ideal solution. “Years ago, we bought the panels from Builders and erected it ourselves. After eight years, it had become dilapidated and nobody wanted to set foot in it anymore,” says Roné. “But when we started clearing it, we realised that the 3 x 3m space would make the perfect home office.” Thanks to Harold’s qualification as a quantity surveyor and experience as a project manager with a developer, he was able to tackle the project himself. >>

THE GROUNDWORK

A foundation and floor were laid first, after which five workers helped to lift the garden shed and move it about 4m to its new spot. Pavers with greenery in-between and a new lawn transformed the former eyesore into a modern asset.

WINDOWS

A dark home office is never a good idea, so a contemporary A-shaped opening was cut in a side panel and a new custommade window installed. The smaller window at the entrance was replaced with a more elegant version. “We installed the wooden frames for the windows ourselves, after which Glasfit fitted the aluminium-framed windows,” explains Roné. “They initially struggled with the A-shaped window as it wasn’t entirely symmetrical, but now it is definitely my favourite design element of the office.”

ELECTRICITY AND INSULATION

Parquet tiles that had been purchased on Facebook Marketplace a few months earlier came in handy in the new home office. Harold and Roné laid the floor themselves, sanded it down and sealed it with Woodoc 25 Water-Borne Floor. The skirtings were then installed and painted white.

The wiring was done by an electrician; the office has its own distribution board and circuit breakers. With fibre installed in the house, a WiFi repeater ensures that there are no internet problems. Ecofriendly Isotherm polyester panels were fitted on the walls and ceiling to provide the necessary insulation and then clad with RhinoBoard; Rhinolite ensures a seamless join between the boards. “The office sits under deciduous trees, so it gets enough sun in winter and shade in summer,” says Roné. “In winter, the office is kept warm with a small fan heater, while a small desk fan is sufficient in summer.”

A LICK OF PAINT

The exterior of the garden shed as well as the boundary walls boast a fresh coat of Plascon Tradepro Roof in a trendy dark grey. Inside, the walls were painted white to reflect as much natural light as possible, but with a striking dark grey strip behind the desk and on the ceiling.

My cat grooms himself excessively and my vet suggested that it might be allergies. How do allergy tests for animals work and do they help? Dr Lizahn von Zeuner of Tygerberg Animal Hospital (TAH) Sitari replies When it comes to diagnosing allergies, the symptoms differ vastly between pets. Dogs, for example, will often develop a rash or red discolouration of the skin. The skin also becomes very itchy, which leads to the animal scratching, rubbing or shaking its body or head. Cats, on the other hand, often don’t scratch when they have itchy skin but will groom excessively, which leads to hair loss. Cats with flea bite allergies can also develop secondary crusty lesions all over the body. Most allergies occur in spring and summer, but it depends on what allergen your pet is sensitive to. This can include anything from pollen, mould spores, agricultural chemicals and detergents to fleas, food and grass. Allergen tests require testing the skin itself or blood tests to determine the number of antibodies produced against the allergen. Thereafter, an allergen-specific vaccine can be formulated. The principle behind these vaccines is to induce tolerance and decrease sensitivity to the allergen. Treatment for allergies is done on an individual basis and depends on the allergy and your pet. The animal’s body will remain sensitive to the allergen and one needs to ensure avoidance, which is possible with certain food and flea allergies. An immune reaction can also be counteracted or reduced with the use of medication. In certain cases, pets will require chronic medication to ensure that symptoms are managed. People often ask if they can give a pet Allergex. Antihistamine (such as Allergex) can reduce the effects and in certain cases be sufficient treatment, but it would be best to phone your vet and discuss the dosage options with him or her as you should never give pets human medicine without consulting your vet first. It should be noted that allergy testing in pets has its limitations and the accuracy can be influenced by the region that you live in. Consult your veterinarian about whether an allergy test is feasible for your pet. CONTACT tah.co.za April 2022

of four NB Publishers books worth R280 could be yours. WIN! One After a string of police blunders, Captain Ben Bliksem Booysen took on the Krugersdorp Killers’ case in 2016. The state had failed to make any arrests since the killing spree began in the West Rand town in 2012. By the time Booysen took over, 11 people had been brutally murdered by a group called Electus Per Deus. Nothing about Booysen’s bleak upbringing set him up to crack one of SA’s biggest murder cases. Yet, driven by a deep sense of justice, he made headlines when he arrested mastermind Cecilia Steyn and her five accomplices. Booysen, in collaboration with Sunday Times journo Nicki Gules, divulges shocking details of police incompetence and new information on the killers and their crimes. The first four readers whose correctly completed crosswords are drawn will each win a copy of On the Devil’s Trail: How I hunted the Krugersdorp Killers worth R280. The spiral pattern formed by the dune crowberry hedge complements the curvature of the house and adds structure to the spacious front garden. Karin du Plessis and her team from In & Outdoor Gardens planted the low hedge and are responsible for maintaining and pruning it (turn to page 117 to see how she created this design).

WHO LIVES HERE? Marti Foster, her housekeeper Margaret Mpendu, Garçon the Beagle and two cats WHERE Franschhoek SIZE 1 200m² TYPE OF SOIL Clay

“I felt that since the front garden is so big, it needs an impressive element,” says Marti. Her house is located quite far back on the property behind large trees. As the shape of the house wasn’t really to her liking, she wanted it to ‘disappear’. “The black on the exterior makes it recede and enhances the greenery in the garden,” she says. “It almost gives the garden a dark forest feel.”

hen Marti Foster was on the hunt for a house to buy in Franschhoek, the two statuesque coral trees and two huge white stinkwood trees growing in this front garden immediately caught her eye. “The garden was in a sad state when I moved in here 23 years ago but the trees in front were amazing,” she says. “There were lots of clivias and hydrangeas growing in the shade of the trees, but I took all of them out. I’m not crazy about the colour orange, so I donated the clivias to someone living on a farm in the area. And although the hydrangeas were gorgeous, they are such thirsty plants.” Marti, with the help of Karin du Plessis of In & Outdoor Gardens, planned and altered the front garden over a period of time. The shape of the house determined the curves of the beds and Marti initially started gardening with roses, shrubs and a lawn. “But as my life became busier, and especially during the drought a few years ago, I realised my garden needed to be adapted accordingly. I took out everything that need too much attention and water, and replaced the lawn with a specific type of stone as I wanted it to resemble the pebbles in a typical French garden. After a long search, we found the perfect stones at a quarry near Villiersdorp. “The roses and shrubs mostly made way for star jasmine and agapanthus. I’ve always loved a green and white garden, so they were the perfect choice.”

Two mini gargoyles flank the garden gate.

reader garden Tall Viburnum sinensis hedges provide privacy in the front garden. Arums, a yellow clivia and ivy are planted in front of the hedge, while potted topiaries add an architectural element.

Front and back A visit to the gardens in the Loire Valley in France was the inspiration behind the spiral design in Marti’s front garden. “I stayed in a chateau where they’d used lime to draw a spiral pattern in the front garden. André-Carl van der Merwe, a designer friend who accompanied me, did a freehand drawing of the design, which I then emulated in my front garden three years ago,” she says. “This area was too stark with just the stones, especially during the hot summer months, but the design with its green curves adds structure and a sense of drama.” The back garden mainly consists of shrubs trimmed into topiaries, a small pool and two covered entertainment areas. “Initially, all that was here was vibracrete walls, a big old fig tree and sand. Garden designer Tirzah Stubbs helped me plan that part of the garden and as it evolved, I increasingly realised what I wanted to do here. Karin then came up with a list of plants and where to put them. “My garden is an extension of my house so it is important to me that it looks beautiful. It should also provide shade and be lush. After losing nearly all my plants during the drought, I took the plunge and had a borehole sunk so that my garden could live again. It means the world to me; I would never be able to live without coolness and greenery.” When asked if she works in the garden herself, Marti replies: “I enjoy my garden but I’m too busy to work in it. I have a gardener who comes in twice a week and Karin regularly offers advice on pruning and how to control harmful insects. One day when I retire, I’ll take up gardening again, like those days when I was pregnant.” >>

A boxwood shrub (in the pot) and salt bushes pruned into a ball shape stand out beautifully against the colour of the house.

[ PLANT LIST ]

Turn to page 114 to see which plants Karin recommends for shaping into topiaries. Marti chose these filler plants for in-between the topiaries: • Agapanthus* • Euphorbia ‘Diamond Frost’ • Fleabane (Erigeron karvinskianus) • Heliotrope (Heliotropium arborescens) • Ivy (Hedera helix) • Star jasmine (Trachelospermum jasminoides) * indigenous

A plunge pool is just what is needed for the scorching Franschhoek summers. Ball-shaped topiaries and an arch add interest here, while a tall hedge forms a lush green backdrop.

[ MARTI’S FAVOURITE ]

“Strictly speaking, my favourite plant, the asparagus fern (Asparagus plumosus), doesn’t really belong in my garden as it tends to grow too rampantly. But Karin conceded to my request, as long as I keep it under control! It’s indigenous and what’s interesting is that it’s not really a fern, even though it looks like one. The plant does very well in my garden and grows everywhere, and although it looks delicate, it is actually very hardy,” says Marti. “It also reminds me of my childhood. My mother was a florist and back then the plant was often used in floral arrangements, corsages and boutonnières. She always had some in her ‘flower fridge’. I love picking it and using it for table centrepieces.” >>

“To me, flowers and shrubs are like the soft furnishings of a garden; they are like cushions, curtains and rugs. They add colour, softness and variety. But when you prune a plant into a shape or a hedge – like here in my back garden – it’s like a statue, painting or pillar. It has structure and is more permanent. This is my way of arranging the garden and giving it aesthetic appeal. Although my garden is mostly green, the shapes provide interest in an otherwise seemingly monotonous space,” Marti explains.

Euphorbia ‘Diamond Frost’, with its masses of tiny white flowers, adds a whimsical touch to the garden.

“I often refer to the ornaments in my garden as the non-growing inhabitants. I like having interesting inanimate items among the living plants. They add a bit of humour and I love seeing how they weather over the years and become part of the garden. Many of the ornaments come from my shop Masquerade in Franschhoek, but I’ve also imported a few items.” Marti’s favourite ornaments are the statues she imported from France (below). “They are apparently a replica of the gargoyles at the Notre-Dame. I adore them – and they also keep watch over me!”

On the Rustenberg Wine Estate outside Stellenbosch, hedges and ‘tables’ of privet (Ligustrum ibota) create a serene atmosphere in the white garden where the plants grow free and wild in the beds. In another bed on the estate (opposite), neatly trimmed balls of Australian rosemary (Westringia fruticosa) provide structure, texture and a playful element.

gardens

opiaries are not only pleasing to look at, they also add structure, interest and focal points to a garden. “The advantage of clipping plants into topiaries is that they work well in both formal and informal gardens. In a more formal garden, such as that of Marti Forster in Franschhoek (see page 102), topiaries are the main element,” explains Karin du Plessis, owner of landscaping business In & Outdoor Gardens. “Even though the garden mainly consists of topiaries, the different shapes and shades of green still provide plenty of variety. “In a more informal garden, topiaries add structure to mixed borders. And in winter, when gardens have been pruned to their bare bones and the trees are without leaves, these plants are still striking and beautiful.” Karin says it is also essential that the shapes and size of the shrubs complement the architecture of the house and the size of the garden. “Topiaries suit modern homes as well as those with an old-world look. In a large garden, there may be a garden room or section specifically set aside for topiaries, or they can be used throughout mixed borders. In smaller gardens they can serve as a focal point and provide structure to the beds in a smaller format.” According to Karin, an entire garden can also be designed with a topiary theme, but she says it’s best to use other plants with long, strappy leaves – such as agapanthus – in-between to soften the formal shapes.” >> There is a fine line between shapes that look natural and those that look forced, says Karin. “In my opinion, weird designs such as faces, animals and too many layers don’t work. They are too far removed from a natural look.” This privet (left) was trimmed to form a parterre, a formal bed with knee-high hedges shaped into a pattern.

Plant selection When Karin considers plants for topiaries, she prefers those that can be easily pruned and don’t need attention on a weekly basis. As gardeners become more proficient, she is happy to suggest a greater variety that will need more dedication. “Plants with grey foliage and others in different shades of green can be used in a garden, provided they are not planted together. Choose one type of plant for a group of ball-shaped shrubs and repeat it elsewhere,” she says. “Variety makes the garden interesting, but repetition brings in a sense of tranquillity and orderliness.”

[ TOPS FOR TOPIARIES! ] Euphorbia ‘Diamond Frost’

Most of the plants below can be trimmed to any size or height. Many prefer full sun; for a shadier bed, opt for orange jasmine, star jasmine or yesterday, today and tomorrow. • Australian brush cherry (Syzygium paniculatum) • Australian rosemary (Westringia fruticosa) • Bay laurel (Laurus nobilis) • Common boxwood (Buxus sempervirens) • Common myrtle (Myrtus communis) • Dune crowberry (Searsia crenata)* • Eugenia globulus • Euphorbia ‘Diamond Frost’ • False olive (Buddleja saligna)* • Forest num-num (Carissa bispinosa ‘Storm’)* • Freylinia* • Glossy abelia (Abelia x grandiflora) • Orange jasmine (Murraya exotica) • Rosemary (Rosmarinus officinalis) • Solanum rantonnetii ‘Variegatum’ • Salt bush (Rhagodia hastata syn. Einadia hastata) • Small-leaved boxwood (Buxus microphylla ‘Faulkner’) • Spekboom (Portulacaria afra)* • Star jasmine (Trachelospermum jasminoides) • Tree-forget-me-not (Duranta erecta ‘Sheena’s Gold’) • Viburnum tinus ‘Compactum’ • Virburnum sinensis and V. lucidum • Yesterday, today and tomorrow (Brunfelsia pauciflora) * indigenous

With no formality, a garden tends to look like a messy fruit salad. – Karin

topiary

A large surface area with pebbles or paving can be softened with topiaries. In addition, the shrubs in-between make the area cooler. A checkerboard pattern with pavers looks lovely when interspersed with topiaries, while a row of trimmed shrubs between the gravel adds life to an otherwise monotonous surface. White pebbles are beautiful but tend to show up dirt sooner, cautions Karin.

Karin’s pruning tips START SMALL • Plant small shrubs so that you can manipulate them into the desired shape from the get-go. A large plant can be used if it is isolated and suitable for clipping into the required shape. • Repeat one type of plant in groups or rows, preferably in uneven numbers. Then it will look like a more natural grouping from all sides and not like a row of plants. • The distance between plants is determined by how quickly they grow, their growth habits and the look you’re ultimately going for. A group of slow-growing plants that need to form a tight shape should be planted closer together than a fast-growing plant such as dune crowberry. SHAPES • Keep it interesting by using different shapes. Ball shapes are popular but also consider spirals, columns, tortoise shapes and circular discs for a bit of variety. • Tortoise shapes are easier on the eye and not as formal as ball shapes. Star jasmine works well for this purpose. Push the plant’s long stems into the ground using wire bent into a hairpin shape and prune regularly – the sides into the shape of the shell and the top into a convex shape. • Prune the tips of cones, spirals and columns into a rounded shape, otherwise they’ll look too hard and formal.

PRUNING • Use the right equipment. A small battery-powered hedge trimmer is a good investment. A large pair of garden shears also works well; just make sure they are always sharp. Pruning topiaries with ordinary secateurs is not recommended. • Prune regularly so that the shrub stays in the desired shape and to prevent it from getting bare stems and woody growth at the bottom. I start pruning as soon as the shrub is planted, unless it already has a naturally rounded shape; the slow-growing forest num-num is a good example of this and needs very little pruning. • Prune more often in summer. The more you prune, the smaller the leaves and the sturdier and denser the shrub. • View the plant from all sides. I walk around it and trim all over until the shape is symmetrical. Perfect forms don’t happen overnight; it takes time to master the art. Keep practising – the plant will grow back if you make a mistake! Use wire mesh as a guide to help you prune neatly. Adjust the size of the wire as the shrub grows. As you become more proficient, the wire won’t be as necessary. For a softer look, cut the edges rounder rather than in a box shape. • While pruning, place a tarpaulin under the shrub – this saves you a lot of time and effort as you don’t have to pick up the trimmed leaves afterwards. Simply tip the trimmings onto the compost heap afterwards.

Extravagant caramel cake This impressive four-layer cake is a showstopper. I adapted the recipe from a dolce de leche cake recipe on letthebakingbegin.com. If you don’t want such a tall cake, feel free to garnish a two-layer rectangular cake and serve it in squares instead of slices. Makes 1 large cake • Preparation: 1 hour • Baking time: 12 minutes • Oven temperature: 180°C CAKE • 4 extra-large eggs, at room temperature • a pinch of salt • 250ml light brown sugar • 500ml cake flour

1 Line two 22 x 34cm* rectangular roasting pans with baking paper and spray well with non-stick cooking spray. Preheat the oven. 2 Beat the eggs, salt and sugar together with an electric beater or mixer until light and fluffy (it usually takes about 10 minutes to get good volume). Sift the cake flour and baking powder together in a separate bowl. Also mix the yoghurt, condensed milk and bicarb in a third bowl until just smooth. 3 Fold the egg mixture, dry ingredients and condensed milk mixture together until just mixed. The trick is to bring the batter together without mixing out all the air – so use a thin spatula or metal spoon and work carefully. I’d rather miss a few lumps than overmix the batter. 4 Divide the batter between the two pans and smooth each one evenly. Bake immediately for 10–12 minutes or until a test skewer comes out clean. Because the batter is so thin, it cooks very quickly and you don’t want this cake to bake too dry. Remove from the oven and allow to cool for 10 minutes before turning out onto a wire rack to cool completely.

• 10ml baking powder • 250ml double-cream yoghurt • 1 tin (385g) caramel condensed milk (Caramel Treat or homemade) • 5ml bicarbonate of soda

GARNISH AND EXTRAS • 200g butter, at room temperature • 1 tub (230g) creamed cottage cheese • 1 tin (385g) caramel condensed milk • 250ml cream, stiffly whipped • 125ml chocolate sauce, store-bought or homemade • Easter eggs and caramel

5 Make the icing Beat the butter and cottage cheese together until smooth. First beat the caramel on its own until smooth and then beat it into the butter mixture – this ensures that this decadent icing is completely lump-free. Finally, fold in the cream until just mixed. 6 Assemble the cake Cut both rectangular cakes in half so you have 4 more-or-less square pieces. Spread each layer generously with the icing and stack them on top of each other. Cover the rest of the cake with the remaining icing. Refrigerate for about 1 hour so the icing can set.

Tip If you struggle to work with the tall cake, stick one or two wooden skewers through the layers to hold everything together; the icing will set in the fridge and you can remove the sticks before cutting the cake. 7 To finish, simply grate chocolate on top or, as we did, drizzle chocolate sauce all over the cake, then arrange Easter eggs on top and give it a final flourish with a few dollops of piped caramel. * For a traditional round cake, divide the batter between two 22cm cake tins and simply cut the cooled cakes horizontally to get four layers.

Easy chocolate flan The delicious silky texture of this ridiculously easy dessert will steal hearts. Makes 12 slices Preparation: 15 minutes Cooking time: 45 minutes to 1 hour Oven temperature: 180°C • 2 tins (385g each) condensed milk • 250ml milk • 200ml cocoa powder • 7ml cornflour • 5ml brandy, vanilla essence or instant coffee powder • 4 extra-large eggs, at room temperature • melted chocolate, chocolate chips and berries, to serve 1 Preheat the oven and spray a bundt cake tin with a capacity of at least 1.2L with non-stick cooking spray; then place in an ovenproof dish in which it fits snugly. 2 Mix all the ingredients with a stick blender until just smooth, then pour into the prepared tin. Carefully fill the oven dish with hot water until the bottom half of the bundt tin is lying in water. Bake for about 45 minutes or until the flan just wobbles when you gently shake the tin. Immediately remove from the oven and the water, and allow to cool. Refrigerate until completely cold and set. 3 Carefully loosen the dessert around the edge with a small palette knife before turning it out. Place a plate over the top of the bundt tin and turn it over in one quick motion. Carefully lift off the tin. The flan is delicious as is, but looks even better with melted chocolate drizzled over and finished off with chocolate sprinkles. Serve with berries for a bit of colour.

Granadilla cheesecakes These fridge cupcakes melt in the mouth and just barely keep their shape due to the use of creamed cottage cheese instead of cream cheese, so serve them in cupcake cases or make them in individual ramekins. Makes 12 cupcakes Preparation: 20 minutes CRUST • 1 packet (200g) ginger or tennis biscuits, crumbled • 125ml melted butter FILLING • 100ml granadilla pulp • 30ml fresh lemon juice • 5ml lemon zest • 1 tin (385g) condensed milk • 1 x 230g tub creamed cottage cheese, at room temperature • 250ml cream, stiffly whipped 1 Line the cavities of a muffin pan with cupcake cases and spray them with non-stick cooking spray. Mix the crumbled biscuits with enough butter to allow the crumbs to stick together. Add a spoonful to each cupcake case, then press it onto the bottom to form a crust base. 2 Rub the granadilla pulp through a sieve to remove the seeds. Mix the pulp, lemon juice and zest with the condensed milk and beat until thick. Beat the cottage cheese separately to ensure it doesn’t make lumps, then gradually whisk the condensed milk mixture into the cottage cheese. Fold in the cream and divide the filling between the cupcake cases; refrigerate to set. 3 Garnish with granadilla pulp.

Litchi and rose ice lollies These easy-to-make ice lollies taste like Turkish delight! The rose water and pink food colouring are optional. Makes 8 ice lollies Preparation: 10 minutes, plus freezing time • • • • •

180ml litchi flesh 5ml rose water a few drops of pink food colouring 250ml cream 180ml condensed milk (or to taste)

1 Place all the ingredients in a juicer or use a stick blender and pulse until smooth. 2 Pour the mixture into ice lolly moulds* (about 50ml each). Freeze for at least 3 hours until hard. 3 To serve, dip the bottom of the moulds in hot water for just a few seconds and remove the ice lollies. Dip in melted chocolate and garnish with chopped pistachios; otherwise, roll them in nuts or even cake sprinkles. Enjoy immediately as they melt quickly! * If you don’t have ice lolly moulds, use clean yogurt tubs. Cover the top of the filled moulds with foil, cut a hole in the centre of the foil and press a stick into each lolly – this helps the stick to stay in the middle of the ice cream while it freezes.

Twice-fried chicken wings If you fry chicken wings twice in oil, they stay crispy on the outside when you dip them in a tangy sauce.

By Johané Neilson • Photographs Greg Cox

Makes 32 bite-sized snacks • Preparation: 35 minutes Cooking time: 30 minutes

126 home April 2022

• 16 chicken wings • salt and pepper • cornflour • vegetable oil for deep-frying GLAZE • 30ml Korean Gochujang paste • 30ml tomato sauce

• 30ml brown sugar (or honey) • 30ml low-sodium soy • 10ml sesame oil • 2cm fresh ginger, peeled and grated • 1 large garlic clove, finely grated

step by step

2

1 1 Using a sharp knife or kitchen scissors, trim off the tips of the wings (keep for stock); then cut each wing at the joint. Season the chicken with salt and pepper, rub in and leave to stand for 5 minutes.

2 Dip the seasoned wings in the cornflour, making sure each piece is well coated. Shake off any excess cornflour. 3 In a large saucepan of oil, deep-fry all the wings at the same time for about

5

4 4 Lift all the wings out of the oil, drain on paper towel and wait a few minutes. Then fry the chicken again until crispy; this time, work in batches instead of frying all the wings at once. Scoop the crispy wings out of the oil and drain on paper towel.

5 While the wings are frying, mix all the ingredients for the glaze in a small saucepan and heat until the sugar has dissolved. Remove from the heat and get ready to baste with a brush.

If you can’t find Gochujang paste, use sriracha sauce or your favourite chilli paste, such as sambal oelek.

3 15–20 minutes. Keep the heat at a moderate temperature: the first frying session is for cooking them slowly, the second is for colour and crunch.

6 6 Brush each wing with the glaze, then arrange the crispy bites on a serving platter. A sprinkle of toasted sesame seeds, chopped spring onions or a few small basil leaves are optional extras.

Jay’s innovative recipes reimagine all your favourite dishes from mac ’n cheese, chicken wings, burritos, bao buns and maki rolls to burgers and bunny chow. When it comes to sweet treats, he has adapted family favourites such as milk tart, pumpkin fritters and cheesecake, while his smoothies and plant-based milks mean less reliance on store-bought products. Jay Mac has mastered the art of turning mushrooms into chicken, carrots into lox, celeriac into fish and beetroot into burgers, as well as the even darker art of making meat from wheat. garden ancestors

was in the botanical gardens in town when I saw an elderly lady, kierie in hand, slowly moving down a shrub-lined footpath. She was tall, elegant, with ice-white hair swept up in a loose bun, cutting a picture of dignified poise. But suddenly the snowy bun disappeared from view. Then I noticed what she was doing – pulling a fast one like you’ve never seen. She was stooping to break off a shoot from one of the shrubs and sticking it in her bag, lightening fast. She was an old pro, I realised, a real-life ninja. Call her the Arsène Lupin of the botanical world. She reminded me a bit of my dear departed mom – old and stiff with arthritis until she spied a desired plant. All of a sudden, she was Speedy Gonzales on steroids. It’s a sin, I know, this kind of thieving. But is it bad? Isn’t this the way ‘story gardens’ are born? Green spaces where every sweet bloom has its own tale to tell – a high jinks adventure like the one I witnessed or a journey that began as a cutting bestowed by a special acquaintance or a long dead relative. My ouma, for instance, has been dead for more than 40 years, but some part of her life still thrives in my garden. She used to grow begonias in huge, painted syrup cans on her stoep in the Hantam Karoo. Mom got a few cuttings and, in turn, made some for me. And so my ouma quietly resides in a shady spot of the garden among a clump of ferns, one of which was a root cutting from a dear friend’s garden. Her cutting came from a famous author. He, in turn, got his from the household of the mysterious Rain Queen Modjadji, deep in the misty mountains of Limpopo. What a joy it is to visit people with ‘story gardens’. A kuier isn’t complete without a stroll through the garden. You feel special for being invited to enjoy a glimpse of the family treasures. This rare little vygie, the hostess will explain, comes from my Aunt Ada, who lived in a caravan on the beach outside Paternoster. She died there, alone, in a rocky pool filled with anemones, floating like Ophelia. Sometimes at night I see her ghost by the vygie. Would you like a piece, dear?

138 home April 2022

Of course! And Aunt Ada’s ghost is most welcome, too. She can meet the little zebra aloe grown from a cutting given to me by a dying artist – the subject of his very last painting. At times, I talk to it, sharing news of friends. I admire the courage of these brave little plants, surviving in the strange new soil of my yard, so utterly dependent on my care and gently nudged along by the throb of some unfathomable life force. It reminds me of the offspring of so many of my friends, with children all over the globe. Human cuttings doing their utmost to take root in new soil. As for me, I believe we all come from the same source – both man and plant. We are family. Consider the lovely daffodil, for instance; a quarter of its DNA floats around in us as well. And if the daffodil is a cousin twice removed, a tree is closer still. We share 50–60% of our DNA with trees. Maybe that’s why I feel such an affinity with trees, find solace among them. More and more people are reconnecting with nature these days – look at the comeback of house plants in interior design, for instance. And forest bathing has become quite a thing. Shinrin-yoku, the Japanese call it – to absorb the forest’s atmosphere, restoring body and soul. My mother loved coleus. In Afrikaans its name refers to the Biblical Joseph and his “amazing technicolour dreamcoat” – leaves ablaze with maroon and pink, crimson, yellow and purple-blue. Mom’s ashes lie buried in a dazzling array of them in the dappled shade of a wild almond tree. On days when I feel blue, I find comfort and cheer in their dizzying display. Come spring and the freesias are in fragrant bloom; my beloved late husband comes to me on the sweet breath of the evening air. I revel in it, my heart soft and open to the subtle truth of the eternity in us all. I close my eyes and hear the rustling sound of our brokenness being gathered, the whisper of delicate threads that mend us and bind us together, soothing the loneliness. For this blessing I give thanks to my garden, with its stories and memories, and to all old ladies and their nimble green fingers.
