In the week between Christmas and New Year, I settle down with a notebook and make lists of my goals, plans and dreams for the coming year. Some of them come to nothing (one of last year’s was to learn to drive, but I only managed 10 lessons…), but others fly and suddenly I’m moving forward in life! One list is all about home, with a mixture of unsexy jobs (buy a new vacuum cleaner), fun stuff (learn how to make a soufflé), and downright scary projects (redo the bathroom). ABOUT ME I’m Suzie Williams, 47, and I live with my husband Spencer, 53, and sons Louis, 13, and Xavier, 11. MY HOME A Seventies four-bedroom link-detached house in Oxfordshire, which we bought in January 2016. WHEN I MOVED IN The interior had dingy carpets and dated wallpaper and, except for the kitchen, hadn’t been updated in nearly 40 years. AND NOW We’ve given every room a cosmetic overhaul and restored original features like the beautiful parquet flooring. The decor has a Scandi-inspired edge and colourful art that makes it personal to us. STYLE TIP Choose a cohesive set of colours to run through your home and help tie the different spaces together. was 40YEARS AGO’ Faced with reviving a tired Seventies house, Suzie wasted no time turning it into a modern and stylish family home

W

hen it came to selecting a location to buy our next house, it was quite simply a case of putting a pin on the map,’ says Suzie. ‘The area had to have good secondary schools for our two boys Louis and Xavier, and a mainline station into London for my husband Spencer’s commute to work. A village northwest of Oxford ticked all the boxes and offered beautiful countryside on the doorstep as a bonus. But when the sale of our old house fell through on the day of exchange, we had no choice but to rent in the area, as the boys’ schooling was already in place. We moved into a picturesque, 300-year-old cottage just outside the village, and ended up renting there for nearly five years while still keeping an eye on the housing market. When we first saw this Seventies property we dismissed it, as it was nothing like the pretty cottage we had grown to love – yet something kept drawing us back to it. When we eventually viewed it in person, we put an offer in straight away, as the space and location were too good to pass up. The previous owners had lived there for 40 years and the interior needed a complete overhaul – it had tired carpets, an ancient air heating system and garish wallpaper, but it had fantastic scope for a project.

As soon as we were handed the keys, I asked friends over to help rip out the tatty carpets. We were lucky enough to discover original parquet flooring throughout the downstairs, which I absolutely love – even though it’s a little worn in places, I think it adds to the character. Within the first week, I had painstakingly stripped layer upon layer of floral wallpaper from the hall and

Check for any protruding nails, hammer them down, and level any dips or holes with filler. Use stripper to remove old paint or sand any varnish with fine sandpaper to prep for painting. Remove dust and mask off areas that don’t require painting. Start with a coat of wood primer. Once dry, paint the stairs, starting from the top and going with the grain of the wood. Once fully dry, paint another coat for complete coverage.

A few issues arose during the redecorating – the air heating system and hot water weren’t working properly and we had a huge plumbing leak coming down from the bathroom into the sitting room, which set back the work by a couple of weeks. In November 2017, we took on a bigger project and converted the garage into a snug to create a fourth bedroom, shower room and utility area, and this addition has ended up being very well-used by us all. The garage was previously just dead space, so it makes much more sense to now have it incorporated as a usable part of the house. The previous owners had

fitted a new kitchen in 2011 so, luckily, we haven’t had to change anything structurally or replace the units. Find a suitable branch and strip using a wallpaper scraper, then sand off any remaining bark. Wrap twine around each end of the branch and knot to secure. You could also add beads before knotting the twine. Create a twine loop to hang small vases or jars. Take the loop behind the branch, holding the string ends, then feed the ends up and through the loop, puling tight. Then wrap the ends around the vase, and knot. Hang on a secure hook and fill vases with stems and water.

MY HOME A three-bedroom Victorian terraced house in Gosport, Hampshire, which we bought in August 2016. WHEN WE BOUGHT IT The house had multi-coloured kitchen tiles, a yellow living room and purple main bedroom that weren’t my taste. The dark bathroom needed a refresh. in just 48 HOURS!’ Lucy planned her home well ahead of moving day, and by enlisting some help, her makeover was done in a flash

I

’m a real home bird, so when I started house-hunting with my partner Toby, I knew the type of property was more important to me than the location,’ says Lucy. 'We’d outgrown our rented flat and we also wanted a garden, as we were desperate to get a dog. I looked at hundreds of options online, but when I spotted this house, I was sure it was “the one”. When we walked in, it felt like a well-loved home. ‘I really liked the period fireplaces, the ceiling mouldings and the quirky steps, nooks and crannies. Some of the colourful decor wasn’t really me, but I knew that could be changed. We didn’t even bother viewing any other places as nothing else had the character, the space or the unique vibe of this house.

Careful planning

COOL AND CALM

‘As this room doesn’t get much light, I’ve gone for pale greys and dark accessories, like the tripod lamp from Made.com’

Although the interior was in pretty good condition, I couldn’t wait to put my own stamp on it. I’m so impatient that I’d actually started planning from the online photos, before I’d even been inside. On our second viewing, I took loads more pictures and checked measurements. I’m very organised and I created spreadsheets to keep track of my spending. Once I’d chosen something, I’d trawl the internet to find the best deal. I do nearly all my shopping online, especially on budget-friendly sites like eBay and Gumtree, and I’ve always got my eyes open for sales and discount codes. I’d also think about whether I could upcycle or make a similar item myself. By the time we moved in, I knew how each room would look and I had the paint, tiles and wallpapers all lined up. I wanted to get the bulk of the decorating finished as quickly as possible as it’s so much easier to do before you’ve got

I don’t stick to one particular style, instead I’ve got quite a few favourites. I adore the country look, but I’ve included glamorous hotel-chic, rustic and Scandi elements in my home, too. I like my surroundings to feel calm and relaxing, so I use lots of neutrals, especially greys, which I love, with touches of colour on top. I tend to go for soft, pretty accents and nothing too bright or distracting. I don’t

We swapped the narrow mantel for a chunky piece of oak from a reclamation yard. It’s a small alteration but the natural feel is a nice bonus and it gives the fireplace much more impact. The kitchen is one of my favourite spaces because it’s so light and airy. The

cream cabinets were already here. They’re not what I would have chosen, but luckily they’ve grown on me, as replacing them would have been a massive expense. We took one large wall unit down though, and put up open shelves instead, which makes the room feel brighter and bigger. My other changes were fairly small and didn’t cost that much, but they all make a difference, like repainting the walls and panelling in Farrow & Ball’s Green Blue, fitting new tiles around the

sink area and swapping the black work surfaces for wooden ones to create a country kitchen feel.

Pitching in

In an old house that’s been added to and altered over the years, nothing is straightforward. All our walls and floors are crooked, but I’ve stopped stressing if something’s at a bit of an angle, as it’s part of the charm. When we’ve moved furniture and shelves, we’ve sometimes

Trace the template by drawing a line vertically down the shade. Place the lampshade, with the line facing downwards, on a sheet of paper and trace along the top and bottom edges as you roll the shade over the paper until you reach the original line again. Cut out the template, doublechecking it fits the shade.

Lay your fabric pattern side down on a flat surface, place the template on top and trace the shape, leaving 1cm hem allowance top and bottom, and cut out. Attach the fabric to the shade using strong double-sided tape or fabric glue (both available from Hobbycraft). Fold over the surplus fabric to make a neat hem.

Use a piece of plywood or MDF as the base of the board. Lay out rolled wadding or batting and place the board on top, leaving about a 5cm border. Pull the wadding tightly over the edges and use a staple gun to secure all the way around the border. Repeat the process with your chosen fabric, neatly folding the corners. Turn over and, using ribbon or elastic, criss-cross over the board, securing at the back with a staple gun. Use decorative or upholstery nails to pin at the crossing points of the ribbon. Finally, add picture frame hangers to the back of the board.

Getting involved in the process has been really worthwhile for me, as I’ve picked up skills and found out so much about how the house actually functions. I try to keep some money aside so we can fix small problems as they arise, and we’re extremely lucky as we’ve had masses of DIY help from family and friends. They’ve saved us a fortune.

Bargain hunting

Our biggest project has been updating the bathroom, which we didn’t tackle immediately. The original suite was fine for quite a few months, but I wasn’t keen on the white tiles and dark green walls. ABOUT ME I’m Jayne Stonely, 43. I live with my younger son Harry, 20, and cavapoos, Margot and Dolly. MY HOME A three-bedroom Nineties terrace in West Thurrock, Essex. We moved here in February 2003. WHEN WE MOVED IN The kitchen was dark and the units were coated in grease. There was an old archway through to the dining room and a little porch cutting into the living room. The carpets were dated and most of the walls were magnolia. AND NOW The ground floor is now open plan, so it feels much bigger and brighter. I’ve replaced the bathroom and kitchen and changed the decor more than once! STYLE TIP Avoid a cluttered feel by grouping accessories in threes or fives, with tall items at the back.

NEW TRENDS’ Serial redecorator Jayne has mixed daring darks and quirky pieces for the latest look in her ever-changing home

I

love anything to do with interiors and ever since I moved here, I’ve hardly stopped decorating,’ says Jayne. ‘Magazines, Pinterest and Instagram help me keep up with new styles and ideas, and I’ve tried lots of different looks over the years. At the moment, I’m into moody darks with pops of bright colour, but I love vintage and upcycled pieces and I’ve always been a massive Orla Kiely fan. I just go with what I like at the time, and try not to overthink things. When I first bought the house, it was a bland, magnolia box. I didn’t have a lot of money to spend straight away, but as soon as I had the keys, I ripped out the grubby old carpets and my mum helped me paint the walls off-white, to freshen it all up. My dad took down the porch, which was blocking light and taking up space in the living room. Over the next couple of years, I put in a new bathroom, and a simple, pale wooden kitchen.

EASY UPDATE

‘I’ve had my big wall mirror for years and the frame has been both silver and black before now. I changed it to cream when I put up the wallpaper, which is classic Orla Kiely and a favourite design of mine.’

I’ve redecorated several times, so I’ve done black and white, brights, shabbychic and country-style looks. About five years ago, I decided to get rid of my separate kitchen and dining room. I went for a complete revamp, demolishing the dividing wall, so downstairs is completely open plan now. I chose a new kitchen at the same time. I wanted something striking and had a look online at black kitchens. My mum was really unsure, but I was confident it would work, as there’s plenty of light coming into that part of the house from the patio doors. The breakfast bar was a new element and I like how it separates the kitchen and dining zone although it still feels like one space. I already had my table and chairs, but there was room for more furniture once the wall had gone, so I bought

Brave choices

I had light colours through the rest of the house at that point, but I was definitely moving to a more dramatic eclectic look especially downstairs. The living areas were cream, but I’d put a large-scale, Orla Kiely wallpaper with a grey background on one wall, and had various accessories, framed photos, maps and

signs clustered around. Then I spotted an amazing home on Instagram. It had bright, zingy colours and quirky accessories popping out against black walls – as soon as I saw it I knew I’d be doing something similar here. I wasn’t brave enough to go totally black all over, so I went for a softer charcoal grey instead. Putting such a dark colour on for the first time was a bit scary and it did take a bit of getting used to, but I was confident that it would be OK. I left a couple of cream walls because, being open plan, it’s quite tricky to know where to stop. My living area isn’t huge,

Bang on budget

Although my home has changed several times I’ve always worked to a tight budget. I’ve accumulated lots of useful DIY tools and I’m happy to do my own decorating, furniture painting and small wallpapering jobs. I’ve laid laminate flooring in my bedroom and put flat-pack furniture together too. I even made the living room coffee table myself. Whatever the task, I’ll dig out information or a video online and then just have a go. I’m happy to shop anywhere on the high street, or online if something

MY CHALLENGE We needed to create a space that our young family could enjoy as it grew and where we could have room to entertain. It had to make best use of the space and be a place to prepare food, eat and relax. here’s nothing like having children to show up your house’s shortcomings,’ says Annie. ‘So when our son Frank and daughter Martha came along, it became clear our existing kitchen just wasn’t going to work. It was small, boring and beige, but because it was usable, we ended up living with it for years. My husband Harry and I could clearly see that no thought had been given to how a family would use it and this was, after all, a family home, so it really needed sorting once and for all.

The kitchen was just one element of the three-storey extension we wanted, which included a bedroom above the living/ dining area next to the kitchen, plus a loft conversion. We contacted an architect, applied for planning, and work began in July 2014. We started the kitchen part of the project in November 2016, but we had to complete the various stages as funds allowed. Harry project managed and did as much of the work himself as he could – no mean feat for a man who barely knew how to build flatpack furniture! The extension starts where the old kitchen ended and we demolished a conservatory, outside toilet and laundry shed to make room for it all. Taking out the back of the house meant we needed a huge RSJ across the span, giving us 500sq ft of new, open-plan space.

Building tension We couldn’t afford to move out during the work, so we ended up living on a building site for a long time. Dust aside, the main thing we struggled with was delivery. We’d ordered the kitchen in October 2016, for delivery in the

Decide first whether you’ll hang your plates with adhesive discs or wire hangers. Measure the back of your chosen plates to ensure you have the corresponding hanger size. When you’re happy, position the hanger on the plates. To perfect the layout, make paper templates by drawing around each plate and cutting out the circle. Position them on the wall with masking tape until you’re satisfied with the layout. Using a drill, make a hole through the template into the wall, around 2cm below the top of the plate. Insert a rawlplug and screw, leaving the screw standing out a little from the wall. Remove the paper templates and hang your plates in place.

‘The flooring is maple from an old tobacco factory – it had 130 years worth of dirt ingrained and took ages to clean!’

January and took out the old units before Christmas. Then delivery was put back a month and on the day the fitters finally arrived, nothing went to plan. We even had some units installed upside down! Another low was me splitting my lip when I tripped over planks from the wooden floor as it was being installed. In all, the work on the kitchen took six months, and with the builders finally out of the house, I was able to start focusing on the finishing details. I didn’t want wall units but I did want a wall of floor-toceiling cupboards to maximise storage. Before, when it came to decorating, I’d just gone with whatever colours and furnishings were in fashion, but by this stage, I had the confidence to follow my own tastes. I love colour and I wanted the

kitchen to be a fun space. If something doesn’t work, I can always repaint it. Sometimes I see a shade and obsess about how to make it work somewhere. I’d already used a deep green paint to upcycle a sideboard and loved it so much, I used it on the dining area walls, too.

Worth the while Now we’ve had a chance to use the space, it works really well. No-one’s stuck cooking on their own in the kitchen when we’ve got friends over and we can keep an eye on the kids doing their homework when we’re making dinner. Yes, there were bumps along the way but it was all resolved in the end and now we have the social space we wanted. In fact, it’s become the new heart of our home.’

Throw off the covers and turn ugly kitchen ducting into a decorative feature

Does my cooker hood need ducting? Cooker hoods can be set up in two ways: either to extract air from your kitchen and expel it outside, or to recirculate it. Extraction is a more effective way of removing steam and cooking smells especially if you have a large cooker, but requires the hood to be mounted on an external wall (or where a ventilation hose can be run to the outside), while a recirculating hood can be installed anywhere, such as above an island.

Why would I leave ducting exposed? Generally, when installing an extractor hood in a regular kitchen, the ventilation ducting would be concealed either in a

Exposed ductwork will attract more dust and grease from cooking than if it were concealed, so needs regular cleaning to prevent grime build-up. Ductless cooker hoods also have an advantage in that they’re much easier to install and can be fitted just about anywhere.

Are there any variations style-wise? Although its utility-style is its big appeal, ductwork can be painted if you fancy a variation on the silver colouring, using latex paint. Go for the same colour as your ceiling for a subtle look or choose black or a bright colour to make it more of a feature. Copper ductwork is a great statement choice, but will cost more.

ABOUT ME I’m Amy McLeod, 38, and I’m a midwife. I live in a Georgian townhouse in Kent, with my husband and daughter Ruby, 13. We bought the property in November 2004. MY CHALLENGE To give our chintzy, outdated bathroom a dramatic overhaul more in line with my style, using a deep colour scheme and industrial accents. Amy swapped her bland bathroom for an industrial-style look that’s brimming with character

F

or years, my bathroom had been at the bottom of my to-do list, with every other room in the house taking priority,’ says Amy. ‘Before I got around to giving it a makeover at last, it had a shabby-chic look, with a grey tiled floor, cream walls and duckegg blue accents. It was characterless, and not my cup of tea at all. When we moved here in 2004, the scheme was tolerable, but my tastes have evolved dramatically since. Now, I favour dark hues and an eclectic mix of furnishings, so I made it my mission to infuse the bathroom with those elements.

Function first Before I could begin giving the room a new look, I had to think about how the space would function. We already had a freestanding bath, but I wasn’t keen on its position, so we had the plumbing rerouted to allow our new, more modern bath to face toward the fireplace. We also took the time to replaster walls and repair original features, such as the coving, to give us a high-quality finish. Prior to starting the project, I made a long wish list, which featured a concrete floor and old copper taps, among other pricey finishes. However, after having redecorated the rest of the house, I found that our funds didn’t stretch quite as far as I’d have liked, so I made a few small compromises. I went for lino flooring, as I’m not a fan of tiles, and altered some copper garden taps to get the look I was after. This actually worked in my favour, as they have the most beautiful patina.

sure they work properly. It’s worth weighing up the costs first – you may be able to pick up unrestored taps cheaply, but it can cost several hundred pounds to have them reconditioned. If you buy from a specialist dealer, they will have been refurbished and tested, but cost more.

Will old taps work with modern plumbing? If you plan to fit the taps onto existing sanitaryware, check that the hole sizes correspond with the taps and that there’s enough clearance for spouts and the fixings underneath. When it comes to the pipe work, threaded parts of plumbing fittings are made to a British Standard pipe thread size, and while older taps may have larger thread sizes, reducer fittings can be used to adapt them.

What style do I go for? Standard paired pillar taps that are mounted onto a basin or bath surface are easy to pick up in reclamation yards, while bib taps are also popular – utilitystyle taps that are wall-mounted or mounted on upstands, more traditionally used with butler or Belfast sinks.

Are they easy to install? While fitting shouldn’t pose a problem for any good plumber, hiring one with prior experience of working with older fixtures and fittings is always a good idea to avoid problems and unforeseen costs later on.

hings have come a long way since engineer Hubert Cecil Booth invented the vacuum cleaner in 1901. Puffing Billy was a petrol-powered beast of a machine, but it was hugely popular, although you did need to book an appointment to get your carpet cleaned. Heat 1tbsp oil in a pan and gently fry the onion and garlic until soft. Add the nigella seeds, turn up the heat and cook until just golden. Meanwhile, microwave the potatoes for 6-8min, until soft. Allow to cool slightly, then scoop out the flesh and put it in a food processor. Blitz until smooth. Then, add the beetroot, breadcrumbs, grains and onion mixture. Pulse to a coarse crumb.

Divide the burger mix into 6 and shape each portion into a patty. Coat each one in quinoa and then brush over a little oil. Cook under a preheated grill for around 15min, or until golden, crisp and piping hot. To serve, slice the buns in half and fill each with a little mayo, some rocket, a burger, some mashed avocado, a few sun-dried tomatoes and 1tsp of the crispy fried onions.

AVOCADO & PEPPER WHOLEMEAL PIZZAS TAKES 35MIN SERVES 6

2 packs of vegan pizza dough base mix 2tbsp olive oil 227g tin chopped tomatoes 2 red onions, sliced 1 red pepper, deseeded and sliced 2 garlic cloves, crushed 2 ripe avocados, sliced 2tbsp pine nuts Handful of fresh basil leaves

Preheat the oven to 240°C/Fan 220°C/Gas 9. Make two 20x30cm pizza bases using the dough mix, following packet instructions. Place on greased baking trays and drizzle a little olive oil over them. Leave to rise for 15min. Meanwhile, sieve the tomatoes so the juice drains out. Fry the onion and pepper in a little oil for 5min, until soft. Then, spread the tomatoes over the pizza bases. Sprinkle over the garlic, onion and pepper. Bake for 15min, until the base is crisp and the toppings are cooked through. Top with the avocado slices, pine nuts and basil leaves to serve.

Preheat the oven to 180°C/Fan 160°C/ Gas 4. Fry the onions in oil for 5min. Add the beetroot, chickpeas and Ras el Hanout, and cook for 10min. Add the spinach and tomato paste and cook for a further 5min. Allow to cool, divide into 4, roll into balls and chill for 30min. For the duxelles, fry the mushrooms for 5min, then add the garlic, soy and lentils, and cook for a further 5min. Blitz with the parsley and leave to cool. Roll out the pastry and cut out 8 x 12cm circles. Spread a layer of duxelles on each circle, then put a ball of filling onto 4. Layer the other 4 circles on top. Crimp the edges and decorate with extra pastry. Chill for 30min. Bake for 40min.

Heat the oil and fry the onion for 2-3min, to soften. Add the peppers and cook for another 2-3min, until soft. To make the spicy salsa, stir the sriracha, tomato and celery through the ready-made tomato salsa. Chill in the fridge until needed. Heat the hot dogs under a hot grill for 3-4min, turning, until warmed. Split open the hot dog rolls and pop a hot dog in each. Spoon a few dollops of the salsa onto each, and top with the peppers and onion mix. Drizzle over a little of the ketchup or American mustard to serve.

Preheat the oven to 200°C/Fan 180°C/ Gas 6. Put the onions, peppers and carrots in a large roasting tin, drizzle with 1tbsp oil and roast for 20min. Add the squash ribbons and cook for 10min. Add the chickpeas to one end of the tin, season with a pinch of sea salt, the coriander and 1tbsp oil. Add the cavolo nero to the other end, sprinkle with the garlic and 1tbsp oil. Roast for 4min. Put the quinoa in a pan with the hot vegetable stock and bring to the boil, then simmer for 15min, until tender. It’s fine if the liquid becomes absorbed – or you can strain any excess liquid. Fill four bowls with all the veggies and quinoa. Sprinkle over the sesame seeds to serve, and squeeze over the juice of a lemon for extra flavour.

JACKFRUIT TACOS TAKES 20MIN SERVES 4 2 x 400g tins jackfruit 200ml barbecue sauce ½ red cabbage, shredded 2 carrots, julienned 1 red onion, finely sliced 2tbsp egg-free mayonnaise 1tsp Dijon mustard Juice of 1 lime 12 soft corn tacos 1 avocado, sliced 1 red chilli, sliced Coriander leaves Lime wedges

Drain and rinse the jackfruit, then use two forks to shred the fruit to resemble pulled pork. Put the jackfruit and most of the barbecue sauce in a small pan over a medium heat to warm through. Stir often to ensure the jackfruit is well coated in the sauce. Once hot, set aside and keep warm until needed. To make a crunchy slaw, toss the veg through the mayo, mustard and lime juice. Season well. Toast the tacos for 1 min on either side in a frying pan. Then, spoon some slaw into the centre of each, and top with a good helping of jackfruit. Serve the warm tacos with the sliced avocado, fresh chilli, coriander leaves, the remaining barbecue sauce, and a couple of lime wedges on the side.

Preheat the oven to 180°C/Fan 160°C/Gas 4. Sift the flour and cocoa powder together in a bowl and stir in the sugars and baking powder.

Stir the vinegar and vanilla together with 500ml water. Then, slowly beat the wet mix into the flour to make a batter. Grease and line 3 x 20cm sponge tins with baking paper. Pour ⅓ of the batter into each tin and bake all three sponges for 25-30min, until firm but springy in the centre. Leave the cakes to cool in the tins. To make the ganache, pour half the coconut milk in a pan and heat until almost boiling. Take off the heat and stir in the chocolate until melted. Stir in the rest of the coconut milk. Divide the ganache between 2 bowls

and chill in the fridge. Leave one bowl for 8hr or overnight to set very firmly; remove the other bowl 2hr before needed, so it’s at room temperature. To assemble, spread the cakes thinly with a little jam and then a little of the softer ganache. Lay the cakes on top of each other, and spread the remaining ganache over the top and sides with a palette knife. To make the truffles, scoop up 1tsp of firm ganache at a time, drop it into some cocoa powder and roll into a ball. Repeat. Decorate the cake with the truffles and gold leaf, if using.

TAKES 30MIN, PLUS 5HR STEAMING MAKES 6-8 Coconut oil, for greasing 90g plain flour 1tsp cinnamon 1tsp ground nutmeg 1tsp mixed spice 90g muscovado sugar 45g dry breadcrumbs 100g vegan suet ½tsp baking powder 2tbsp black treacle 8tbsp rum Grated zest and juice of 1 orange and 1 lemon 2tbsp beetroot powder 1 apple, grated 250g dried fruit 200g dried figs, chopped 5tbsp maple syrup 1 fresh fig, sliced

Grease and line the bases of 6-8 individual pudding basins. Combine the flour, cinnamon, spices, sugar, breadcrumbs, suet, baking powder, treacle, 6tbsp of the rum, citrus zest and juice, beetroot, apple and dried fruit. Spoon the mix into the basins. Cover with baking paper and foil, pleated in the middle. Secure with string. Place in a pan, fill with boiling water to two-thirds the height of the basins. Steam for 4hr, topping up with water as needed. Turn the puddings out. Heat the syrup with 2tbsp rum, and drizzle over the puds. Serve with fig slices.

Divide the mix into 6 and roll into circles just larger than the tins. Top with baking paper and baking beans. Bake for 10min, remove paper and beans and bake for 5min more. Cool. Meanwhile, dissolve the caster sugar in a pan with 1tbsp water. Cook until golden. Remove from the heat and stir in 75ml cream, until smooth. Whip the remaining cream, spoon into the pastry cases, top with bananas, caramel, the sugary cream and the grated chocolate.
