We’ve now cut that down to between 5%-6%. We also work with small enterprises on precuring goods and services. We’ve gone to local companies for our ore haulage, for all of our bus services, and maintenance work on our mills – we really work hard to work with local companies to build up their skill set.” These efforts keep money moving through the communities Teranga works in, which provides a strong short-to-mid-term benefit. However, more than this, they are thinking long-term: “We have a local training programme on site, where we bring casual labour in to learn skills – bricklaying, carpentry, iron works etc. This

This has increased competition in the segment for the Kenyan middle class, which has been growing.” The bulk of Mc Frys’ walk-in clientele are middle class, with the quick-service restaurants strategically located for footfall and in easy reach to hungry shoppers. The company also receives regular business from corporate clients, to whom they offer a delivery service. We asked Aziz how Mc Frys keeps people coming back, and the answer was simple: consistency. “Consistent quality and affordable products are essential, as is the consistency of outlets: all of our outlets are branded with similar colours, and service delivery is consistent across the board. Clients have the same feel at whichever outlet they go to. This has created client loyalty to the brand.” It’s the time-tested key to running a successful chain. Of course, such consistency isn’t possible to achieve through policy and design alone – for it to be successful, it must be reflected in the staff: “Staff undergo regular in-house training and exposure. There are also a number of the major drilling companies operating here. We’re also often called upon to do quite deep drilling, so a lot of the drilling here can be quite technically challenging. We specialise in both reverse circulation drilling and diamond drilling and we see those kinds of ground conditions in both types of drilling. We wondered how to get this across to a prospective customer, and so we developed Special Branch.” Special Branch is a list of around 100 products that Wellocks have developed in collaboration with their manufacturers. “For example, we worked really closely with a supplier who told us that she wanted to create the world’s best olive oil, and we backed her. Over a six-year period, she’s put some ground-breaking new procedures in place, and her product’s actually been named the best organic olive oil in the world.” Thanks to their involvement, Wellocks now have exclusivity for this top-tier olive oil in the UK. “We’re always developing more products like this – they improve our product range and set us apart.”

But, as Shakespeare wrote, “there are more things in heaven and earth” than we can possibly imagine, and sometimes even the fires of a childhood fantasy like treasurehunting can be kept burning. Into this frame comes Oak Island, a 140-acre piece of land off the south coast of Nova Scotia, Canada; the epicentre of a centuries-old mystery that continues to fascinate those who dare attempt to solve it. Originally established as a community by European settlers in the mid-18th Century, it was first dubbed ‘Smith’s Island’ after British settler Edward Smith, but was subsequently renamed twice: first as ‘Gloucester Isle’ and shortly thereafter ‘Oak Island’. Originating from Italy, the pizza has taken the world

by storm. Flatbreads in various forms have been prepared since the Neolithic age, but although this was a global practice, the pizza as we know it can be traced back to Europe, with various cultures coming close to its creation.

T

he first garlic bread seems to have developed in Ancient Greece, whilst the Persians were potentially the first to start adding toppings (the soldiers of King Darius I armies baked the

The word “pizza” itself is believed to be derived from pizzarelle, a kosher Jewish cookie eaten by Roman Jews, but the true pizza as we regonise it today evolved far later in Italy’s history. In 16th Century Naples, a flatbread by that name was a common food amongst the poor. However, sailors reaching the Americas introduced tomatoes to the mix, and suddenly the possibilities for this meal began to evolve. By the 1800s, pizzas had a tomatoes base and bore not only cheese, but a whole range of toppings, and in 1889, the Margarita was officially named. Travelling with Italian immigrants, the food became a hit in the countries it reached – particularly the United States. This love was only strengthened for soldiers posted in Italy in WW2, and thus it worked its way in as a go-to for much of the western world. However, the Caribbean was less enthralled – that is, until the 1970s changed the game. This decade is where the Mario’s Pizzeria story begins: upon his return to Trinidad after working abroad in Canada, Richard Harford decided it was time to realise his dream of becoming an entrepreneur. At this time, Trinidad & Tobago was on the up, and opportunity was everywhere. Eventually, Richard and a small group of his closest friends came up with the idea to open a restaurant
